Valerie is a past president of the British Sugarcraft Guild & is a member of the local Guild Branch, which meets monthly in Rottingdean for demonstrations of all types of cake decorating. This is a very chocolately cake with both filling and icing of ganache. Because we have Valentine’s day this month I have added marzipan hearts but you can decorate it to your own choice or leave it plain. You will need a deep 20cm/8in round cake tin and if you are decorating with hearts you will need a small cutter.

RICH CHOCOLATE CAKE WITH CHOCOLATE GANACHE INGREDIENTS: Cake • • • • • •

200g (7oz) plain chocolate 110g (4oz) unsalted butter 3 large eggs 110g (4oz) golden caster sugar 110g (4oz) self-raising flour 75g (3oz) ground almonds

Filling • 25g (1oz) plain chocolate • 150ml (5fl oz) double cream Icing • • • • •

75g (3oz) plain chocolate 50ml (2fl oz) double cream Optional Decoration 110g (4oz) white marzipan Red food colouring

Whisk the egg yolks and sugar in a mixing bowl over the pan of hot water until thick and the whisk leaves a trail when lifted. Remove from the pan and stir in the melted chocolate. Mix together the flour and ground almonds and carefully fold them into the mixture. Wash and dry the whisk to whisk the egg whites until stiff then fold them into the mixture a quarter at a time, being careful not to over mix.

METHOD:

Pour into the tin and bake for approximately 45 minutes or until the centre is firm to a fingertip touch.

Line the tin with greaseproof paper and grease it. Heat the oven to Gas 4/180C.

Cool in the tin for a few minutes, then turn out onto a cooling rack.

In a bowl over a pan of hot water put the chocolate, butter and 1 tablespoon of hot water. Stir occasionally until they are melted, then remove the bowl from the pan.

Filling: place the 25g chocolate and 1 tablespoon of cream in a bowl and melt over hot water. In a separate bowl whip the

remaining cream just until soft and fold in the melting chocolate. Cut the cake across into two layers and sandwich them together with the filling. Icing: in a small pan very gently melt the 75g of chocolate and the 2 fl oz of cream. Stir until smooth and leave to cool until thick enough to spread over the cake. Mark lines with a palette knife. Decoration: this is completely optional for Valentine’s day. Colour the marzipan pink or red. Roll it out and cut out heart shapes. Place these around the edge of the top of the cake. I have made a small rose to put in the centre but this is your choice. Note: use chocolate which is 70% cocoa butter.

ANOTHER NEW YEAR

Chinese New Year celebrations take place between 5th to 19th February. This year is the Year of the Pig and as such is the final year of the 12-year cycle. Interestingly, the next year of the pig will fall after the peak population in China is predicted. As the final year in the cycle it is a time of repair, reflection and relaxation. It is associated with friendship, abundance and generosity. On a political level, it is expected the year will 6

see increasing harmony – with our common interests overcoming petty concerns. On a personal level, it is expected to be a loving period – in fact new lovers are urged to make sure the prevailing, perhaps overly carefree, attitude does not apply to them! It is also a good year for celebrations and for making and growing friendships. We are advised to avoid gluttony and also to embrace change, as the uncertainty change brings will benefit us. All in all, the year of the pig is a lucky year. Phew!

Birds, Bees & Squirrels! You may notice squirrels skittering across the tree tops, love is in the air! Squirrels usually mate once a year. When the female is in estrus she can attract many males. The presence of a male instigates ovulation and a female squirrel may mate with several males. After a gestation of about 6 weeks she will have one to four kits, in March or April. The young are tiny – just an inch long – and extremely vulnerable: born completely hairless, blind and deaf. The mother suckles them every 3 or 4 hours for several weeks. Only one in four will survive their first year. The kits wean between 6-10 weeks and leave the nest (drey) at 12-16 weeks. If the weather is too cold and the young perish, or food is especially plentiful, the female may mate again later in summer. These autumn juveniles often winter with their mother. Squirrels that reach adulthood have a lifespan of 3-5 years in the wild, (although they can reach 20 in captivity). Squirrels build their twiggy-looking dreys at least 20 feet above ground, usually on the fork of branches. They harvest twigs well before autumn as then the leaves adhere more tightly during winter, despite turning brown in the normal way. Finished dreys are spherical, about a foot in diameter, the inside lined with soft mosses and grasses. There is an entrance/exit at the bottom near a branch to keep the rain out, and constant work is needed to maintain water resistance. Shelter is obviously crucial and squirrels will often build several dreys in case of damage or infestation, necessitating a move.

Dreys can be in use for many years, by different families. Whilst squirrels are usually solitary, they do sometimes share them in cold weather. Their fluffy tails helping to keep them warm. We know that squirrels are smart. Each squirrel has several thousand food caches and they use near and distant landmarks to note the location for retrieval. If they feel they are being watched by another squirrel, they mime burying food by digging a cache as usual then pretend to place the food – whilst concealing it in their mouth – and covering the hiding place in the normal way. Squirrels, unlike most mammals, can descend a tree head-first. They can rotate their ankle 180 degrees enabling the hind paws to point backwards and grip the bark in the opposite direction. Their habit of hiding nuts and seeds plays an important role in renewal of the environment they are part of, indeed, once sprouted, they cannot eat them – as they cannot digest cellulose. Unfortunately, they do eat birds’ eggs when other food is scarce… Rather shockingly, the Vikings used to prize & trade the fur and meat of red squirrels – a practise now believed to have brought and spread leprosy in the Middle Ages…. So, however endearing red squirrels are, and small though the risk is, we are advised to keep our distance.

There is medical evidence that reminiscence is good for us, improving wellbeing and confidence. The Sporting Memories Network is an enterprise to develop reminiscence activities that improve the mental and physical well-being of all older people (50+) through tapping into their passion, knowledge and love of sport. Sporting Memories clubs have been sprouting up all over the country and we now have one in Hove at the Sussex County Cricket Ground, Eaton Road, Hove, BN3 3AN. It is open to anyone over the age of 50 who likes Sport, and enjoys reminiscing about their experiences of watching or playing any sport.

Getting to Know Ground Ivy By Lucinda Warner Though the weather is getting colder and the nights still seem long, we are starting to see many of the first signs of spring appearing. The snowdrops have been out in my garden for a couple of weeks already and we are passing the traditional festival of Imbolc on February 1st, which used to mark the beginning of spring. Most wild greens are only just starting to poke their heads above ground but there are plenty of young cleavers, nettles and chickweed to be had beneath the hedgerows. One plant that is not so well known but is particularly useful at this time of year is ground ivy. Though ground ivy has fallen out of fashion somewhat in modern herbal medicine, many of the older herbals speak highly of it and it has certainly earned its place in folk medicine for the treatment of a variety of ailments. Glechoma hederacea, as is its official title, was also known as ale-hoof due to its uses in brewing ale, or gill-go-by-the-ground, from the French, guiller - to ferment. In fact it was once one of the most popular ingredients for brewing beer until it was replaced by hops. Gerard, writing in the late sixteenth century, described it thus, “Ground Ivy is a low or base herb; it creeps and spreads along the ground hither and thither, all about, with many stalks of uncertain length, slender, and like those of the Vine, something cornered and something reddish.” Hilda Leyel, a herbalist writing in the early 20th Century, informs us that it was once

so popular and so widely on offer as a blood tonic “that it was one of the London street cries.” She also recommends it for tinnitus as well as for coughs and colds. Coughs, colds and sinusitis are the main conditions we use it for today, especially to help clear stuck phlegm or catarrh which can linger after the acute infection. It is mildly astringent which means it helps to tone the mucus membranes as well as helping to clear out congestion. It contains many of the constituents common in other Lamiaceae, or mint family, plants such volatile oils and triterpenes which are thought to be anti-inflammatory. The taste is pungent and a little musty but once you get used to it it’s quite pleasant, especially with a little rosemary or lemon. My favourite way to take ground ivy is as a tea of the fresh leaves and flowers. As the leaves are available almost year round, they can be easily picked fresh when you go out for a walk and added to a cup of hot water upon your return. Drunk regularly they will have a tonifying effect on the digestive tract and the kidneys as well as helping to keep the sinuses clear. If you prefer, a tincture can easily be made using either apple cider vinegar or vodka. This involves filling a jar with freshly picked and chopped leaves and flowers, then covering with the liquid of choice and leaving to steep for three weeks before straining out the plant material. Bottle the resulting potion and be sure to label with the date and ingredients.

A few Loving Words

Love

The word is a development of the Old English lufu. Originating in old German, it is a word with strong relations around Europe: the German equivalent is liebe, Dutch lof. We have been ‘falling in love’ since the 1500s. Making love was courtship then… our now more familiar meaning only emerged in 1950s. The groove in the upper lip is the ‘philtrum’. The name is derived from the Greek for love charm.

Firkytoodle

The wonderful 17th century word firkytoodle means to caress lovingly.

Aphrodisiacs

Aphrodisiacs are named after Aphrodite – the Greek goddess of love.

Darling

Perhaps surprisingly darling, is not an American word. The word comes from the Old English ‘deorling’ /’dyrling’ – meaning beloved/favourite. It is an affectionate double diminutive of dear.

Venom

Venom is thought to be related to Venus, the Roman goddess of love – it was probably a love potion first.

Republican Marriage!

This was a capital punishment during the French revolution, where a man and women would be tied together and thrown into the river.

Spoon

Spoon used to be a slang word for a silly person/simpleton – perhaps indicating shallowness. By 1831 the verb spooning had developed, meaning to court sentimentally.

Date

From the Latin word data meaning ‘given’, it was a Roman convention to end correspondence with the time and date it was handed to the messenger. Gradually, by the 1300s, the word data evolved to mean date and time instead. The term began to be assigned to future events/appointments in the 1800s and went on to gather its romantic sense by 1900.

Flirt

The verb flirt originally meant to sneer or move quickly, as in flit.. To flirt a fan in the 1600s was to snap it open and shut quickly – a coquettish skill. The more modern sense appears from 1777. It is also possible that the word has links to the Old French ‘fleureter’ – meaning ‘to talk sweet nonsense’ and ‘to touch in passing’ and, as a diminutive of fleur (flower), simultaneously evokes bees moving from flower to flower.

WHAT CAN PROPERTY MANAGEMENT OFFER YOU AS A LANDLORD? One of the major decisions you will make when you become a landlord is whether to manage the property yourself or have it managed on your behalf. There is no right answer, and it all depends on what you are willing to take on and the time you have available. The main reason many landlords choose management is so that they don’t have to be on call should something break and require repair. Your letting agent takes this responsibility away from you, although they will need your approval for any major works etc. Building a relationship and good rapport with your tenants is also something that a letting agent can do. This small touch can have great benefits, as tenants who feel that their needs are being catered

for are more likely to stay longer and also look after the property. There are some benefits that you may not have considered when choosing whether your portfolio should be managed. The vast amount of ever-changing regulations and legislation around lettings can be confusing, and it can be a continuous struggle to keep up to date. Lonely Hearts By Jayne Shrimpton We might be forgiven for thinking that today’s internet dating, introduction agencies and lonely hearts advertisements are a modern phenomenon, but the open search for love and marriage dates back centuries. The first known ‘lonely heart’ advertisement in the world (supported by firm evidence) appeared in England in 1695, in a weekly pamphlet. The Licensing of the Press Act restricting printing and publishing had recently lapsed, prompting a young man to place the following advertisement: ‘30 years old and in possession of a good estate and who desires to meet a young gentlewoman with a fortune of £300.’ Over the next half-century such notices became

opportunities to meet a suitable spouse, and ordinary country people generally married within their own small communities, the growing urban population did not necessarily have established social networks. Newspapers including The Times, Tatler and The Daily Courant frequently published entire pages of lonely heart advertisements and even a tax on adverts, imposed in 1712, did not deter the eager. Like today, advertisers promoted their physical qualities, with ‘sweetness of breath’ a common assurance of young men seeking prospective partners. Yet evidently economic status was more important: generally male

advertisers revealed their financial position, typically including annual income and, sometimes, even that they were in the beneficial situation of expecting a sick or elderly relative to pass away shortly, leaving them a fortune! Initially more men than women advertised, widowers often seeking a capable stepmother for their children, while traders generally indicated that their future wife would be expected to work in the family business. Sometimes widows sought a second husband, ideally one familiar with the trade established by their first, while occasionally ladies who felt ‘left on the shelf’ candidly expressed their hope of marrying quickly and starting a family almost immediately. Some women claimed not to be seeking a husband, but a position as housekeeper for a single or widowed gentleman – intimate domestic roles that more often than not led to a relationship.

Readers responding to advertisements often left a reply in the newspaper office, although many advertisers suggested an alternative venue through which to make contact, like a library, bookshop or coffee house. In the 18th and early-19th centuries many advertisements were London-focused, their large numbers suggesting that some people at least did

achieve marital success in this way. During the Victorian era, as the population soared and more people swarmed into the cities for work, lonely heart columns expanded. Newspapers also grew cheaper throughout the 1800s and periodicals devoted solely to husband- or wife-hunting began to be published, with explicit titles like Matrimonial Gazette and Cupid’s Cosmopolitan Carrier. Gradually the emphasis of the notices also changed: while some practical information was usually provided, the romantic love match of royal role-models Queen Victoria and Prince Albert prompted more advertisers to admit that they, too, hoped for a ‘partner of the heart’. By 1900 an incredible 25 publications in England alone were geared towards helping people to find a spouse. The average marriage age

for females was around 25 and many young working women began to advertise for a husband, while growing numbers of men sought prospective wives willing to live overseas in the colonies. Before long, grim stories began to circulate about women who responded to even the most innocentsounding notices, from terrifying tales of white slave traders to more general warnings about the risks involved when vulnerable women latched onto men about whom they and their families knew nothing. Some rumours of seduction and physical injury appeared to be true, with lurid descriptions making the headlines: it seemed as though the lonely heart craze was becoming uncontrollable, and from the early-1900s onwards the number of dedicated

the government became concerned that its armed forces might be sharing sensitive information with total strangers. A competition run by Pearson’s Weekly in 1916 inviting soldiers to submit personal details in hope of being shortlisted for a date with the popular actress Phyllis Monkman was too much for the authorities.

Women in Britain outnumbered men significantly during the Victorian period and early 20th century: large numbers never married and were mercilessly lampooned

The competition was halted and magazines were asked to do their patriotic duty and desist from carrying lonely heart advertisements on behalf of the military. After the war, due to the tragic loss of life, the already femaleheavy British population was boosted by even more women who would never have the chance to marry. Known unsympathetically as ‘surplus women’ they were often teased and lampooned in cartoons and, predictably, during the 1920s lonely hearts columns began to thrive again. Advertisements were not the only way of meeting members of the opposite sex: another option was the matrimonial or introduction agency. The earliest recorded agency was established in London 26

in 1650, the splendidlynamed Office of Addresses and Encounters, catering for those with ‘a desire to dispose of themselves in marriage’. This pioneering facility met with little success, but a century later others appeared, like the Dover Street Marriage Agency (1775), which required gentlemen to describe themselves and pay five guineas before being introduced to suitable ladies. Fifty years later the Imperial Matrimonial Association ran a suite of London rooms for the use of male and female subscribers, who could drop in, read, chat, attend bi-weekly concerts and enjoy light refreshments. The first serious national agency only became established in 1939 – The Marriage Bureau, launched by two ex-debutantes, Mary Oliver and Heather Jenner, who recognised a ready market among expats

returning from abroad. Clients completed cards stating their age, religion, income, social position and interests and the two entrepreneurs proved highly successful at finding appropriate matches. Fees were high - £5 on joining, then £20 to be paid if marriage followed: when the average weekly wage was about £3, this was chiefly an exclusive service, although reportedly satisfied clients ranged from lawyers to bus drivers. After WW2, Friendship Clubs opened up and down the country, providing young working people with a safe environment in which to meet male and female friends through various social activities. Old Toy trains help to build a new steam loco by Tony Funnell and John Hollands

23RD FEBRUARY Knoyle & Crowhurst Hall (Knoyle Road, beside St John’s Church BN1 6RP… opposite Sainsbury’s Local, London Road beyond northern end of Preston Park) Did you know that the Bluebell Railway is slowly but surely building a brandnew steam locomotive? It’s a recreation of Beachy Head, a classic “Atlantic” (4-4-2-wheel arrangement) constructed at Brighton Locomotive Works in 1911. Some components, including a re-conditioned boiler, are saved originals; others are being newly manufactured by outsourcing; all finishing and assembly is done by a small team at the railway’s Sheffield Park base. Google “Bluebell Railway Atlantic Project” to find out more. The Sussex Vintage Model Railway Collectors who exhibit preserved vintage toy and model trains – they will have another show at the Knoyle and Crowhurst Halls on February 23 – is a supporter of the “Atlantic Project”, whilst club member and Hornby enthusiast Tony Funnell, is a key member of the Sheffield Park team. Tony writes: I cannot remember a time when I was not thrilled by trains and railways. My first 28

home was about 5 minutes’ walk from Brighton Station and plenty of my relatives were only too pleased to cart me off to watch trains for my entertainment - and theirs as well, I suspect! We had a Hornby Dublo railway in the spare room at my grandparent’s home before I was two – there is always Hornby Dublo at our shows - and at school I was regularly disciplined for looking out of the window at the trains. At age ten I started volunteering at The Bluebell Railway, firstly on station duties, then progressing through carriage and wagon work to the locomotive department, flirting with signalling and guard duties on the way. By age fifteen I

was a regular volunteer in the locomotive workshop with basic skills in the use of the lathe, drill, shaper and most of the various hand tools. It was at this stage that I was old enough to start footplate work. I passed the test for fireman in 1974, and by 1980 I had become a driver, a grade I have held ever since. When I left Grammar School, I took up casual paid work in the Bluebell locomotive workshop, initially on a temporary basis for that summer. In due course I was invited to become an apprentice locomotive fitter and machinist with attendance at Technical College for an appropriate engineering course. I accepted, and by 1979 had completed my apprenticeship,

Examining Fitter for the working fleet of locomotives, (a paid position) carrying out or supervising all manner of maintenance, repairs and adjustments, whilst keeping proper records of such. Between times were spent in the loco works on tasks such as re-metalling and machining axle boxes, big ends, crossheads and all manner of locomotive parts. A spell in outside industry followed. Here I enhanced my boilersmith and toolmaking skills, and this spurred me into starting a cottage industry, making mainly tinplate parts for vintage toy trains. I began marketing these in 1990 and have built up this business to the point of carrying out a full parts, repair and restoration service for collectors of these delightful models. In 2000 I re-joined the Bluebell’s paid staff as Carriage and Wagon Works Manager at Horsted Keynes. For reasons beyond my control I was not at my happiest in this role, but then the opportunity arose to transfer to the Brighton Atlantic Project and work with a small group of people, all of whom I knew and most of whom I had worked with in days past, on building the new “Beachy Head”. As the last operational example of its type, the iconic and popular first “Beachy Head” had been scrapped in 1958 after a successful and useful career, despite serious protest by many railway enthusiasts at the time. So, in 2007 I joined the project as a selfemployed contractor and have spent the last twelve years on work I could only dream of as an apprentice. I have done most of the heavy

machining work involved on axle boxes, and other components, and I have applied the livery to the loco as it has progressed, having learned signwriting during my apprenticeship. A Love Remembered

According to legend, St Valentine was a priest in third century Rome. Emperor Claudius II had banned marriages, believing married men made bad soldiers. St Valentine is thought to have arranged marriages in secret, and was jailed and sentenced to death for his crimes. In jail, St Valentine apparently fell in love with the jailer’s daughter and sent her a love letter signed ‘from your Valentine’ on 14 February, the day of his execution, as a goodbye.
