Hoverflies Hoverflies are remarkable. Deft & swift: able to reach speeds of 40km/hr, fly backwards and of course hover – keeping their head perfectly still at 120 wingbeats per second. But, the true wonder beyond all that, is their VARIETY due their extraordinary mimicry. They generally mimic bees and wasps including hornets (which not only taste bad but deliver a punishing sting to boot) to deter predators. This type of imitation is called Batesian – i.e. looking unpleasant without the cost of ‘arming’ themselves. Hoverflies neither bite nor sting. They are convincing mimics but can be distinguished from their ‘models’ by the fact that, like all flies, they only have one pair of wings. They are enormously helpful, the second-most important pollinators after wild bees. They are also hugely effective pest controllers. The adults eat pollen and nectar, over 110 species eat aphids and other soft bodied insects such as thrips. Indeed, for many, reproduction is prompted by the smell of aphids and their larvae go on to devour 70-100% of aphids in their vicinity. So, if you see hoverflies it probably means you need them! Gardeners often use companion plants to attract them, such as alyssum, statice, chamomile, parsley & yarrow. 6

The Marmalade Fly – the most common hoverfly. Wingspan 24mm, lifespan approximately 8 months May through November.

Inane Hoverflies - Up to 17mm long, wingspan 30mm, lifespan max 6 weeks. These hoverflies resemble wasps for a very good reason. The adults sneak in & lay their eggs in wasp nests so their larvae can feed on the larvae of the wasps. The scientific name ‘inanis’ is Latin for ‘inane’ or ‘empty’. Possibly a reference to the absence of stinging organ.

Narcissus – seen March to August. 15mm long, wingspan 20mm, lifespan 3-4 weeks. Not so popular with gardeners as they lay their eggs on daffodils and the like. After hatching the larvae drop down and burrow in to feed on the fleshy bulb beneath.

CHICKEN IN SPICY TOMATO SAUCE Seasonal Recipe by Valerie Hedgethorne

Valerie Hedgethorne taught cookery & cake decorating for many years in Brighton before becoming a Home Economist and writing for the national magazine CAKE for 20 years. Valerie is a past president of the British Sugarcraft Guild & is a member of the local Guild Branch, which meets monthly in Rottingdean for demonstrations of all types of cake decorating. The sauce gives chicken a really good flavour. Rice is a good accompaniment. Choose whole leg joints or drumsticks. You will need a casserole dish and a frying pan.

INGREDIENTS:

In a frying pan fry the chicken joints in the oil for a few minutes then transfer them to a casserole dish.

Chicken - 4 leg joints or 8 drumsticks 150ml (1/4 pint) sunflower oil 1 onion - finely chopped 3 level tablesp brown sugar 1 ½ teasp prepared mustard ½ teasp Worcestershire sauce 3 desertsp lemon juice 150 g (5oz) tomato purée 10 fl oz (1/2 pint) water Salt and black pepper

Remove some oil, leaving a small amount to fry the onion until it is golden. Add all the other ingredients, simmer five minutes then pour over the chicken. Cover with a lid or tightly with foil. Bake at 350 C / Gas 4 for 50-60 minutes. Serve with rice. This improves after a day’s refrigeration.

Hidden Stories: why we don’t talk about our invisible conditions At Brighton Fringe this May local arts charity Root Experience will be giving away their new book Hidden Stories which addresses the loneliness and stigma of living with an invisible condition. It’s a playfully illustrated book about what it’s like to live with an invisible condition whose symptoms aren’t easily identifiable to others. Conditions that range from anxiety to autism, diabetes to chronic fatigue syndrome.

Millions of people worldwide are affected day to day yet often face being isolated, misunderstood or stigmatised by society. Many are therefore discouraged from opening up, and even seeking the support they need, for fear of being judged. With Hidden Stories, Root Experience aims to inspire more people to speak out about their experiences – while also encouraging others to listen compassionately. That’s why the charity is giving away all 8,000 printed copies You can get your free copy at Jubilee Library on Saturday 25 May (between 10am and 3pm) as well as meet some of the contributors, join in conversations and find out more about the project. Take Shelter - Downs Junior School air raid shelter project needs you! Take Shelter - Come and relive wartime history in Brighton - take a trip down memory lane, back to the 1940s! It is the 4th year that the Air Shelter at Downs Junior School has been opened to the public and it has come to be at the heart of Brighton’s festival and wartime commemorations. We have launched a fundraising campaign for £50,000 to build an entrance to the shelter to enable more people of all ages & abilities to share the Take Shelter experience. Building work to improve the access starts in June, you can help support us reaching the £50,000 needed: • Experience an Air Raid Shelter Tour – 11th 12th 18th & 19th May. Book your visit to our underground, interactive museum where

Perhaps the most beautiful of all? Lily of the valley is an exquisitely scented woodland plant, native throughout the cool northern regions of Asia and Europe, flowering in late spring.

Try brushing each side with balsamic vinegar first for a lovely flavour.

It is also known as May bells, Our Lady’s Tears, and Mary’s Tears. The names Our Lady’s Tears and Mary’s Tears refer to the legend that it sprang from the weeping of the Virgin Mary during the crucifixion. The plant is also said to have sprung from Eve’s tears after she was driven with Adam from the Garden of Eden. In the “language of flowers”, the Lily of the Valley signifies the return of happiness. Importantly, despite its beauty, all parts of the plant are highly poisonous, including the red berries which may be attractive to children. If ingested—even in small amounts—the plant can cause abdominal pain, vomiting, reduced heart rate, blurred vision, drowsiness, and red skin rashes.

Shoe care – When

cleaning shoes, especially sandals, put a plastic bag over your hand to keep the polish at bay.

Fizzy Drinks – Keep the fizz by putting the cap back on and the bottle back in the fridge as soon as you have poured what you need – the higher the temperature the quicker the gas leaves the liquid. Bedding Plants – Remember to water the

A Walk in the Park By Jayne Shrimpton As the days grow longer and the outdoors beckons, we appreciate more than ever the beautiful public parks of Brighton & Hove. There is a fascinating history attached to city parks – open green spaces for the relaxation and enjoyment of all. An early example is St James’s Park in Westminster, open to the public since the 1660s. However, most municipal parks developed later, many becoming established in the Victorian age. Urban deprivation The 1830s witnessed the rise of a popular movement in response to the deprivations of the Industrial Revolution and to Enclosure Acts, which barred ordinary people from using many former areas of common land. Urban populations were soaring and workers had few opportunities to escape the clamour and pollution of overcrowded towns and cities. Streets and buildings were filthy, sanitation woefully inadequate and drinking water the bearer of fatal diseases, as demonstrated by the cholera epidemic of 1832. Yet, just when people needed fresh air and healthy exercise, fewer woods, open heaths and meadows were now accessible: even village greens where local residents traditionally enjoyed outdoor

Public gardens like London’s Vauxhall Pleasure Gardens, pictured here in the mid-1700s, pre-dated the opening of most city parks recreation were disappearing. For example, in 1798 the Prince of Wales (later Prince Regent) sold off hundreds of acres of royal lands, including playing fields in frequent use by the silk weavers of Coventry for football and cricket. The proceeds helped to fund his extravagant lifestyle, and might well have helped finance the transformation of his Brighton lodgings into the elegant Marine Pavilion, underway precisely at that time. need of somewhere pleasant and convenient to spend leisure time with their families. In London both Hyde Park and Green Park were open to all classes, while St James’s Park and Kensington Gardens welcomed ‘all persons well behaved and properly dressed’. However such places were sorely lacking in the industrial midlands and north, where eventually a combination of municipal funding, private philanthropy and charitable subscriptions facilitated their creation. The first of the new public parks was developed in Lancashire in 1834 when Preston Borough Council enclosed part of Preston Moor, draining moorland, planting trees and creating an ornamental lake. This was followed in Derby when wealthy industrialist Joseph Strutt donated to the city some 11 acres of land for an arboretum that opened in 1840.

the public raised £35,000 for the opening of three parks: Queen’s Park, Harpurphrey; Peel Park, Salford; and Philips Park on the Bradford Estate. All three officially opened in 1846 and were equipped with playgrounds, provision for popular sports including archery and quoits, skittle and ball alleys, as well as refreshment and retiring rooms. There were also ornamental ponds, fountains and flowerbeds and pedestrian footpaths. Not everybody approved of the new public parks: some were concerned that residents were visiting parks on Sundays instead of attending divine service at Church; others disagreed with the use of public money for their upkeep when towns still lacked decent sewerage systems and other basic amenities. parks opened and in Cheshire the 100-acre Birkenhead Park (1847) became the first to be funded entirely by a local authority. Designed by Joseph Caxton (the architect of Crystal Palace) Birkenhead Park was laid out with lakes, picturesque bridges, Italianate and Gothic-style cottages. Indeed architecture played an important role in the unique character of each of the earlyVictorian parks, represented by ornate drinking fountains, terraces, Chinese pagodas, temples and fashionable tea houses. Some parks provided formal walkways bordered with vibrant floral bedding schemes, while others

All public parks had one or more tea rooms or cafés offering refreshments, this postcard depicting a lively scene outside The Tea House in Harrogate’s Valley Gardens, c.1905 incorporated an arboretum or palm house with displays of exotic plants from across the globe. Recreational facilities were also important in parks and ranged from bowling greens and boating lakes to brass bands and fun fairs. The Victorians loved music and the first bandstands (or ‘band houses’) appeared in the 1860s.

The 1871 Public Parks, Schools and Museums Act encouraged and assisted those wanting to donate land for the creation of public spaces; consequently during the 1880s there was a great blossoming of public parks and pleasure grounds up and down the country. Besides providing much-needed outdoor recreational facilities for local people of all social classes, parks were also viewed as valuable assets that would appeal to visitors and advance tourism in the region. This would have been especially true of Brighton & Hove, already a hugely popular seaside destination attracting numerous day-trippers and holidaymakers every year.

It was first conceived in 1871, when William Davies, a Brighton bookmaker, bequeathed £70,000 to Brighton Corporation, his will stating that it must be used to purchase 67 acres of

meadow for £50,000 from Mr and Mrs Bennett-Stanford of Preston Manor. On 13th September 1883, the Brighton Herald announced the opening of Preston Park: “… now that the park is actually in the possession of the inhabitants [of Brighton] we think the town may fairly be congratulated.” Further landscaping of the park and creation of leisure

facilities followed, costing £22,868. Iron railings were constructed along the Preston Road boundary, bordered by an avenue of elm, chestnut, ash and poplar trees; within the park flowers and shrubs were planted and seats installed. The Tile House was built in 1883, originally as the ladies’ cloakroom, and the park was formally opened on 8th November 1884 by the Mayor, Alderman Alfred Cox. A cricket ground was laid out at the north end of the park in 1887 with openair seating and in the same year the Chalet Café opened. Another major landmark familiar today, the clock tower, designed by the Borough Engineer Francis May in redbrick and terracotta in the Flemish Renaissance style, was officially presented to Brighton Corporation on 17 June 1892. GUEST ARTISTS Vee Pease: Silver Jewellery - Vee lives in West Sussex and works from her studio at home. Her designs are inspired by natural forms, often found while walking on the Downs or by the sea. Vee collects leaves, flowers, seeds, pebbles and shells to draw and paint and from these she designs jewellery in sterling silver with semi-precious stones. Trisha Keith: Watercolour painting - Trisha enjoys experimenting with expressive and impressionist watercolour. She focuses on landscapes and the natural world, with a particular emphasis on light, shadow, colour and texture. Kate Wand: Textiles – Using the skills and techniques of lino cutting and printing, as well as experimenting and enhancing with machine embroidery Kate makes desirable homeware products, such as lampshades, cushions and wall prints. Throw to Fire: Pottery - Throw to Fire are two potters inspired by the natural world and a love for tactile design. Their work offers soft lines and shapes which are humble in form and true to the origins of the materials they are made from.

Till May is out By Lucinda Warner The old saying ‘Ne’er cast a clout till May be out’ (don’t discard any layers of clothing until the Hawthorn is in blossom) hasn’t proved such good advice this year with unexpectedly high temperatures occurring while the tree is still in bud. But now it has begun to bloom and soon everywhere from the top of the Downs, to the hedgerows and motorway edges will be festooned in white blossom. The May, Whitethorn and Quickthorn are all country names for this remarkable little tree that blooms so prolifically throughout much of this month. Hawthorn is the only plant I can think of that has the honour of being named for the month

it flowers in, so rooted is it in the collective imagination at this time of year. It was an integral part of the May Day or Beltane celebrations and thus developed a strong association with love and fertility. The smell of the blossom is earthy and sensual and interestingly is loved by some and hated by others. Hawthorns are generous trees, providing food for many insects, birds and small mammals throughout the year. The leaves are larval food plants for many caterpillars, the flowers much frequented by pollinators and the berries enjoyed by a wide variety of birds. With their dense spiky branches the trees also make an ideal shelter for many creatures.

The flowers and leaves, as well as the berries later in the year, are used by herbalists primarily to treat a range of cardiovascular symptoms, from angina to high blood pressure. This is partly due to their antioxidant content in the form of phenolic compounds which are found in the flowering tops as well as the berries. One of my favourite ways to use hawthorn blossom is as a tea, either fresh or dried in small sprigs. It tastes soft, earthy and honey-like and is very soothing and calming. I particularly like it to gently release feelings of overwhelm and anxiety. Though lovely by itself it also works well with

Special salt: Celery Salt

How to make it and use it, even if you buy it… It is easy to make your own: crush equal volumes, e.g. a cup, of celery seeds and sea salt in a mortar with pestle. (Keeps, so can make plenty) Use sparingly, strong flavour. Try it in mayo-based salads like potato/egg/ pasta/tuna/potato and coleslaw. It is a secret ingredient in Spaghetti Bolognese & in prawn cocktail sauce. Rub into chicken before roasting. Essential ingredient in Bloody Mary cocktails.

Fancier, healthier macaroni cheese

• Boil macaroni until al dente in usual way. Meanwhile, fry spring onions, sweetcorn, Chives, Celery Salt, White Pepper & Nutmeg for 3-4 minutes at low temperature

Assemble: • 275 gram (10oz) macaroni • 4 spring onions, sliced • 300 gram tin sweetcorn, drained • 2 tsp Chives; ½ tsp Celery Salt; ½ tsp Ground White Pepper; 1 pinch Ground Nutmeg • ¾ pint milk • 175 gram/6ozs light soft cheese • For the topping: 2 thinly sliced tomatoes; Garlic Pepper, as desired; 25 gram (1 ounce) mature cheddar cheese grated; Dash of Worcester sauce, if desired 34

To cook

• After draining the cooked pasta, add the sweetcorn mix & the milk to the pasta and heat through until bubbling. Mix in the soft cheese and stir until the cheese has melted and the sauce is reduced and creamy (roughly 5 mins). Pour into a lightly greased heat proof dish. • Place sliced tomatoes on top, season with Garlic Pepper to taste and sprinkle the cheese. If using, drizzle the Worcester sauce and grill under medium heat for 5-7 minutes, until golden brown.
