Whilst many of our other most common trees are currently bare of leaves and stark against the winter skyline, the evergreen Scots Pine (Pinus sylvestris) is in its element. Along with Juniper and Yew, Scots Pine is one of our only native needled evergreens and was prevalent after the end of the glacial period. These days virtually all the pine forests in England are planted but there are still small remnants of the once great Caledonian Forest in Scotland, where not so long ago wolves, bears and wild boar freely roamed. Many people don’t realise that Pine is also a wonderful healing tree which offers us a variety of different medicines throughout the year. In winter we can harvest the leaves and the resin and in spring the pollen makes a powerful tonic. The needles can be made into a lovely tea which is rich in vitamin C and healing to the respiratory system. Those who are prone to chest infections and coughs would benefit from having regular cups of pine needle tea during the colder months. To make the tea simply place a few pairs of needles in a cup, add just boiled water and leave to steep for 5 minutes before drinking. It is best not to simmer the needles if using for tea as that releases stronger chemicals which are not so pleasant tasting. A strong brew can be made for adding to the bath water however and this is a wonderful way to relax the chest and ease aching joints and muscles. Having a pine needle

bath is both relaxing and slightly stimulating and can leave you feeling refreshed after a long day. The needles are also great infused into apple cider vinegar for a delicious addition to winter salads. Just lightly fill a jar with needles and cover with vinegar then leave for a month to six weeks before straining off and using. A jar with a plastic lid is best as vinegar can erode metal. Pine needles can also be chewed up and used as a toothbrush if you are ever caught without whilst camping! The resin appears in little beads on the trunk around areas where branches have snapped or the tree has been damaged. They can be picked off very carefully then infused into olive oil to make a powerfully antiseptic salve which is great for healing grazes and helping to draw out splinters. As always, be sure to have the correct id when using any plant medicinally. Many conifers bear a superficial resemblance to pine and though lots are safe, some are also poisonous. Have a good tree identification book with you when you go out harvesting and look for pine’s distinctive needles. Lucinda Warner is a Brighton based herbalist and plant lover. Another Perspective on Love & Ways of Loving February is the month when people celebrate Valentine’s Day, love stories and love songs and sentiments of the heart. Most people are too restrictive in the way they think about love. It tends to be reserved primarily for, say, a romantic partner, a parent, child or longtime friend. Perhaps there is another way to celebrate the heart that involves listening to what it says and thereby appreciate love from a different angle. Scientific research into how the heart and body experiences love tells us the following: • Love can be defined as a tiny moment of connection shared with another person. So you can share the feeling of love with a number of people. • Love is a biological wave of good feeling and mutual care that rolls through two or more brains and bodies at once. So love connections can happen between soul mates and between strangers. • Our bodies have an in-built ability to “catch” the emotions of those around us as long as the two people make eye-contact. So meeting eyes is a key door keeper for experiencing harmony. • Love strengthens the connection between your brain and your heart, making you healthier. • The heart and body experience love and compassion as one and the same thing. So showing kindness, understanding and sympathy to others is another way for your heart and body to experience love. • The capacity to love is like a muscle and
whether it shrinks or grows depends on how much exercise it gets. So how can you increase your ability to love more often so that you can feel positive emotions and feelings of connection with others as well as improve your brain to heart connection to feel healthier? You might like to try the following two approaches: First Approach • Each night for several weeks, set aside a few minutes to review your day and consider chance meetings and interactions you had with others. • Focus on the three longest and ask yourself, Did I feel “in tune” with the other person? Did I feel a closeness to him/her? • Rate these statements from 1 (not true at all) to 10 (very true). • Record your self-ratings in a notebook or on your computer. Second Approach • For a more active approach, make it your intention to connect more fully with three people in the course of each day. You can’t force such moments to happen, but you can slow down, pay attention to those you meet and look for opportunities to share positive feelings even with a friendly ‘hello’ or ‘how are you?’ • In any situation where it seems natural, smile, make eye contact and really listen to the other person. History of Homelessness in Brighton & Hove By M Bance
Brighton and Hove authorities recognise homelessness is a serious problem in the city. They have committed “to make sure no-one has the need to sleep rough in Brighton & Hove by 2020”. Whichever way you look at it, “the history of homelessness” is a huge subject, both in terms of the number of years it spans and the devastating impact it has had (and still has) on people’s lives. The first recorded vagrancy statute is from 1349 - The Ordinance of Labourers which prohibited the giving of relief to able-bodied beggars, “that they may be compelled to labour for their necessary living”. This was followed by a catalogue of draconian legislation: • 1388, the Statute of Cambridge restricted the movements of labourers and beggars and made county “Hundreds” (geographical division of a county for administrative and judicial purposes) responsible for their own “impotent poor”.

In Lewes in 1617, John Taylor was whipped in accordance with the law which required that a beggar be “stripped naked from the middle upwards, and to be whipped until his body was bloody, and to be sent from parish to parish, the next straight way to the place of his birth”.

Brighton General Hospital, Elm Grove was once Brighton Workhouse. It was deliberately sited a long way out of town and a long way away from “polite” society. J O’Brien was arrested for “repeated acts of vagrancy” in Brighton in January 1782, and sentenced to three months in the House of Correction and, at the end of this period, to be “publicly whipped at the Market-place and then discharged”. The Brighton Herald reported that this ancient law was still being practised in July 1819, when three vagrants, apprehended for begging, were ordered by the magistrates to be flogged. An entry in the Brighton Parish Vestry Book, dated 31st March 1800, throws light on who it was that was doing the “apprehending”. The entry records the appointment of Mr Thomas Waring as Beadle and Cryer, his duties included implementation of the 1796 “Order 16

of the Vestry” (the Vestry was run by the town’s bigwigs, church leaders and ratepayers), whereby “All vagrants and beggars are to be apprehended by the Crier, who is to receive a shilling a head for their capture”. This was, I am sure, a welcome addition to Beadle Waring’s annual salary of £20 (plus clothing) and, as John Bishop commented in his 1892 A Peep into the Past, “As beggar hunting was profitable, doubtless the town enjoyed considerable immunity from vagrants”. Workhouses provided the only statutory shelter available for street homeless people. In Brighton, the first was completed in 1730 on

Brighton Workhouse, Church Hill from a plate published in Illustrated History of Brighton by John Ackerson Erredge, published 1862. Just before it closed, there was local outrage when one of the inmates died from a heart attack after being made to pull a cart of building shingle through the town and up to the workhouse on top of Church Hill. the St Bartholemew’s site in Market Street. As well as the workhouse, the new building included a two-storey Town Hall and a dungeon, known as ‘The Black Hole’. In 1820, a site was purchased on Church Hill, above the graveyard of St. Nicholas’ Church, for a new workhouse. The building had an ‘H’ shaped layout, dividing the workhouse into sections, “in order to class its inmates in the most regular manner”. On the 12th September 1867, the workhouse on Race Hill at Elm Grove opened. Soon afterwards, the inmates were transferred from Church Hill and that workhouse was demolished. In 1914, the Elm Grove workhouse became known as Brighton Poor Law Institution. The same year it was taken over by the War Office and operated as the Kitchener Indian Hospital, accommodating sick and wounded Indian soldiers. It reverted to a workhouse in 1921 and remained open until 1930, when the Poor Law officially abolished the ‘work-house test’ and the term ‘pauper’. Alternative shelter could be found at the Brighton YMCA which was founded in 1870 and, from its base in Steine House, provided accommodation for single people such as servicemen and apprentices. But, from this point until the mid-1960s, 18

BHT’s 2014 life history recordings expose the real hardships of life on the streets, where the average life expectancy is 43 years for women and 47 years for men. information on homelessness is sketchy. We do know, however, that the “problem” continued to be seen as a welfare issue rather than a lack of housing, and local authorities were only required to provide temporary help for homeless families. From the mid-1960s onwards, perceptions did change. Charities were established around the country in response to what was then recognised as the shocking plight of homeless people (remember Cathy Come Home?). In 1967 Brighton YMCA began to accommodate homeless families in Steine House and, in 1968, Brighton Hostel, the forerunner of

Brighton Housing Trust (BHT), was set up in a single house in Islingword Road, providing shelter for single homeless people. On a bitterly cold February night in 1986, the doors of St Patrick’s Church in Hove were opened by Father Alan Sharpe to two people, described at the time as “tramps and winos”, without somewhere safe to sleep. Two years later, part of the church was converted into a dedicated night shelter. First Base Day Centre, run by BHT, opened in 1984 to support people most in need in the city. In 2014, to celebrate their 30th anniversary, BHT Heritage

commissioned a report to look at homelessness in Brighton and Hove over the preceding 30 years. The report details changes in government policy, social action and the number of people sleeping rough or insecurely housed, but the key thing that makes this report different is that it provides the element missing from other, official documents – through the recording of oral histories the voices of people who have experienced homeless can be heard. It presents the voices, unique viewpoints and personal memories of people who may otherwise be ‘hidden from history’. In 2016, as welfare benefit

The Three Wise Monkeys: See no evil, hear no evil, speak no evil.
The earliest reference to the phrase is Confucius, 2nd to 4th century BC. It is thought the philosophy emerged in Japan via a Tendai-Buddhist legend from China during the 8th century. The teaching had nothing to do with monkeys but this pictorial representation originated by a simple play on words (The saying in Japanese is ‘mizaru, kikzaru, iwazaru’ – the part ‘zaru’ means ‘not’ against the three verbs. The similar word ‘saru’ means monkey. The three monkeys are Japanese macaques, a common species in Japan.) 22
The familiar visual representation of the saying was popularized by a 17th century carving over the door of the famous Tosho-gu Shrine in Nikko, Japan. The monkey is an important being in the Shinto religion and there are many festivals celebrating them especially during the Year of the Monkey. was a small statue of the three monkeys and there is a statue commemorating this at the Sabarmati Ashram in Gujarat, from where he set off on his famous salt march. The interpretation of the proverb varies somewhat: in Buddhism it is associated with being of good mind, speech and action whereas in the Western world it can be associated with ignoring ills/turning a blind eye/even gang culture.

ANSTON HOUSE Selma Montford has concerns about the proposal to build three towers of 15, 13 and 12 storeys, rising out around a base building of six storeys all coloured by terracotta cladding, on the important Anston House site at the peak of Preston Park. (Anston House is 9 Storeys) Her concerns are: their suitability as housing; the effects on the neighbouring rose garden and Preston Park & what approval probably heralds for the park in future…. No one, I imagine, disputes the fact that the ruin of Anston House is an eyesore, but it does not mean that any replacement, regardless of height, bulk, colour or impact on Preston Park is acceptable. The proposed replacement group of tall buildings appears to have been dropped from the sky in a haphazard way. There does not seem to be any sense of design in their arrangement or the spaces between blocks, which could provide uncomfortable wind tunnels. A tall building will hedge in the listed Preston Park; overshadowing both the Rose Garden and the Rotunda, both of which need sunshine to survive. Will the roses in the Rose Garden cease to bloom? The Brighton Society will also be checking the accuracy of the overshadowing graphs submitted by the developer, as on the previous proposal they proved to be inaccurate and underestimated the area of overshadowing at different times of the year. More thought should be given to materials to be used on any building on this site. Is terracotta is the answer next to the bulk of the Telecom terra cotta building next to the

Anston House site? I suggest a pale brick to cheer up the passer by. The Council’s Tall Buildings Policy regards a tall building as above 18m high - in other words about 6 storeys and above. It goes on to say that mid-rise buildings means 6-8 storeys, so 12 storeys would fall into the category of a tall building. A very tall building is defined as being over 15 storeys. A major concern is that if this scheme is given the go-ahead, development on other sites to the north on Preston Road would also try to maximise the development potential of up to 15 - 16 storey buildings - encouraged by the City’s Tall Buildings Policy - and the overshadowing of the length of Preston Park could then become an even bigger issue.

Perfect Steak & Posh Chips…. Special Romantic Meal?
Cooking steak can be a bit scary, they are hardly cheap! Also, it is nice to try and get a special treat right. Earlier in the day/evening: Get large potatoes (Maris Piper are rated) and cut finger sized chips, you can leave the skin on. Rinse under plenty of cold water to remove starch or leave to soak in cold water for an hour or so. Remove & pat dry thoroughly. Put 8cms deep of groundnut/sunflower oil in a good safe pan, it should never be more than half full. Heat to 130c or until a raw test-chip floats. Use metal sieve/slotted spoon to lower chips in – blanch for 8-10 mins until soft but not coloured. Remove, leave to cool and drain on paper towels. (They can then wait several hours). Keep oil for later.
Time to eat? Open the wine. Malbec, Shiraz, Bordeaux or Cabernet are heavily recommended. Let the steaks warm up outside the fridge beforehand. Frying is best. Use your best frying pan/griddle. Get it HOT. Some people add oil to the pan; others prefer to evenly smear or brush the steaks with oil and place in a dry pan. (Groundnut or sunflower oil) Just before placing the steaks in the pan, season with salt and pepper. Some people favour putting their seasonings on a plate and pressing the steak onto it. Medium-Rare
Do not overcrowd the pan –it will reduce the temperature too much. Do not put into a pan that isn’t hot. Take them out and let them rest. (The juices will return. They will remain hot for 10 minutes) Chips: Heat the oil up to 190c. Carefully put the cool, blanched chips back in the hot oil. (You can repeat the raw-chip test if no thermometer on hand.) Do not overcrowd. Fry for 4-5 minutes until good colour. Remove, put into a bowl lined with paper towels. Season with sea salt, plate & serve straight away.

ORANGE CAKE WITH ORANGE FILLING & ICING Seasonal Recipe by Valerie Hedgethorne
Oranges are at their best at the moment. This orange flavoured sponge cake has a complete orange flavour with the orange butter icing filling and orange glacé icing. You will need 2 straight sided sandwich cake tins 20cm (8”) diameter. Valerie Hedgethorne taught cookery & cake decorating for many years in Brighton before becoming a Home Economist and writing for the national magazine CAKE for 20 years. Valerie is a past president of the British Sugarcraft Guild & is a member of the local Guild Branch, which meets monthly in Rottingdean for demonstrations of all types of cake decorating. Cake • 1 large orange • 225g (8oz) butter or margarine • 225g (8oz) caster sugar • 4 large eggs • 225g (8oz) self raising flour • 75g (3oz) mixed candied peel • 1 tbsp juice of the orange (from above)
Make the cake: heat the oven to gas 4 / 180 C.
Orange Butter Icing • 50g (2oz) butter • 110g (4oz) icing sugar • finally grated zest of 1 orange • 1 tbsp orange juice
Divide between the tins and bake for approx. 25 mins or until golden brown and firm to the touch. Turn out onto a cooling rack. When cold sandwich together with the butter icing.
Orange Icing • 110g (4oz) icing sugar • 2 tbsp orange juice • 1 tbsp candied peel – to decorate. 30
Grease the tins and line with greaseproof paper or silicone paper. Grate the zest from the orange. Cream together the fat and sugar, gradually beat in the eggs and the grated orange zest. Fold in the flour and candied peel. If necessary add the orange juice to make a soft dropping consistency.
Butter Icing: Beat together the butter and icing sugar until soft and creamy, add the grated orange zest and the juice. Icing: Mix the icing sugar and just enough orange juice to coat the back of the spoon and it spread over the cake. Sprinkle a little chopped candied peel in the centre of the top.

As some of our readers also live near the railway, we thought this article might be of interest. Will there be similar proposals elsewhere? A number of residents in the Seven Dials Area have received letters from Network Rail about a project to remove all vegetation along the Hove cutting that runs between Dyke Road bridge and Montefiore Road bridge. The work is scheduled for 29th February and 5th March 2016. This project, if it is allowed to go ahead, represents a major change of our environment. Everyone is alarmed for a number of reasons not least because we have not been consulted, or sufficiently informed and because devegetation is associated with the use of herbicides. However, this and any other details were left out of the Network Rail letter. Ordinarily, in circumstances where we are stakeholders, we expect to be consulted and even listened to. As neighbourly communication goes, this letter is one of the worst. It is a stark announcement lacking of any details. What gives them the right to come and start changing our environment without any regard for anyone on the line or next to their land? The situation here is very depressing. There is a law that Network Rail should maintain safety on the track and because of this being a priority, if the rail and trains are at risk they have the authority to do what they need. This law gives them an almost free hand when it comes to boundaries, more than is allowed ordinarily between neighbours. Residents are trying to prevail with Network Rail to postpone the cutting and give us time

to discuss the options to include all stakeholders. Because while there is no question of endangering safety, Network Rail should not place themselves completely above the law. There is a need to respect other laws. One of these laws obliges businesses to maintain the quality of our immediate and surrounding environment. This is the Environmental Protection Act from 1990. The other law that works here is the Human Rights Act from 1998 Act incorporates the rights of any ordinary citizen to go about our day to day business without harassment and worry about what our neighbour would do next. Network Rail have already systematically destroyed many miles of vegetation along their tracks as a cost cutting exercise. But here, in Hove Cutting their general slash and poison strategy may turn out to be counterproductive. The unique nature of the Hove Cutting site – a wild-life corridor within the city, structurally it is a deep and steep rock face. This last point means that the trees and other vegetation cannot be separated from the rock. The two are integral. A preliminary risk assessment has been shared with Network Rail. It revealed the need to maintain the vegetation, coppice the trees and manage the tree height. In this way the integrity of the ground structure and the wild life habitat will be preserved while still achieving their objectives on safety. We feel that the ambition to return to Victorian times with grassed track side is unrealistic. Maybe trees should not have been allowed to grow here. But they are a fact with roots deep into the rock. Expert advice and common sense says that they should be maintained and left in place to protect the integrity of the rock

and ensure water run-off. The last point is worrying in these times when we hear of more and more frequent problems with flooding in UK. It is frustrating that Network Rail take full advantage of their rights and completely ignore their obligations. Their Guidelines on Vegetation Management have paragraphs entitled ‘Neighbourliness’ and ‘Conservation of wild life’ and ‘Preservation of landscape.’ In there they mention coppicing, high screening for neighbours, aesthetics…. Tests at Duke University found that Rhesus Macaque monkeys are as good at subtraction as the students. The monkeys were able to subtract by using an instantaneous ability researchers call ‘number sense’. In each session a monkey was presented with a number of dots. Next, a large square would hide all the dots. Then some of the dots would glide off the screen from “behind” the shape. Only the big square, with the remaining dots “hidden” behind it, would be left on screen. Finally, decision time for the macaques: two groups of dots would appear on screen—only one of them showing the correct number of remaining dots. The monkey indicated its answer to the maths problem by choosing one of the dot-groups. (Each correct answer was rewarded). The college students, used as controls in the study, had the same success rate as the macaques— and each group was able to choose the correct answer in a second. Psychologist Jessica Cantlon, who co-led the studies at Duke said: such similarities “suggest that these abilities are part of a primitive system for reasoning about numbers that has been passed down for millions of years of evolutionary time”

Seedy Sunday 7th February – Corn Exchange
Seedy Sunday, the UK’s largest and longest established community seed swap event, is returning to Brighton’s Corn Exchange on Sunday 7th February. Radio 4’s Gardeners’ Question Time team will be our special guests. This broadcasting institution features a panel of the best brains in horticulture answering questions from amateur gardeners across Britain. Our annual event is centred around the Seed Swap table, where gardeners can swap seeds they saved in 2015 for seeds to grow in 2016. Visitors without seeds to swap can make a donation of 50p per packet. At last year’s event over 10,000 packets of seeds, from rare vegetables to popular flowers, crossed the table. Experienced local growers are on hand to give advice on the practicalities of seed saving and growing from seed.

Produced by Christian Aid, the leaflets can be picked up in church or easily downloaded as a PDF from www.christianaid.org.uk/lent in versions for both adults and children, so whole families can get involved. (Myth Buster Alert! Christian Aid, which began in the aftermath of the Second World War, has a long history of working with local partner organisations, to deliver real and practical changes to poor communities all over the world, regardless of their faith – it’s purpose is not evangelism but to alleviate suffering! It’s also one of the thirteen member charities of the UK’s Disasters Emergency Committee.)
