WALKING WITH ANGELS Here at St John’s, we are busy preparing for our Advent and Christmas activities and church services. Advent is the four-week period before Christmas, when Christians all over the world reflect and prepare for Christmas and the birth of Jesus. This year we will be Walking with Angels around the parish in the first couple of weeks in December. You may see us, walking around the parish and pausing to pray for God’s blessings on the people who live and work here. We will be leaving small, colourful, knitted angels in public places along our prayer routes. Members of St John’s congregation have been busy knitting the small angels. We hope that you will find one and take it home as a reminder of the Joy of Christmas. Look out for the angels in the local parks, around the schools and near our local shopping areas. We hope they will make you smile! Continuing the festive theme, and following their very successful concert in the summer, the Brighton & Hove Arts Orchestra return on Saturday 8th December with a programme of seasonal music with audience carols and the

Amity Singers. Entry is free with all proceeds to Off the Fence, a local charity working with the homeless. Over the Christmas season, St. John’s has many informal and accessible services, from familiar carols and readings to the family-friendly Christmas Eve crib service (so popular we have to hold two!) A Visit from St. Nicholas by Clement Clarke Moore first published 23rd December 1823

Custard trick - Use demerara sugar when making custard to stop a skin forming. Add Baileys for a special taste. Frozen Pipes – Keep the bath and sinks plugs in during cold weather to stop drips getting into the pipes and freezing.

Keep the brandy burning – Heat the plate the pudding goes on as well

Pie Crust – When trimming pie edges, cut the pastry outwards on the

dish. This makes the pastry grip the edge of the dish and reduces shrinkage.

This is a Christmas twist on the usual shortbread biscuits. The chopped almonds give a slight crunchiness and the cranberries give added texture. Burning the Clocks Thursday 21st December Burning the Clocks is a free spectator event, a lively celebration at the turning of the year & a time to reflect.

It’s back!

The parade leaves from New Road at 6.30pm and arrives at Madeira Drive at approximately 7.15pm, when lanterns are passed onto the bonfire and the fireshow begins. The event finishes at around 8pm. The parade makes its way through North Street, Ship Street, East Street, onto the seafront and along to Madeira Drive for the finale. (Please do not wait in New Road to watch the parade as this is our assembly zone for 1,500 participants and there is no space for audience.) The fireshow will take place on the beach with viewing from Madeira Drive and the Upper Terrace on Marine Parade. The finale will contain loud music and pyrotechnics.

The Royal Pavilion Ice Rink is open daily until 13th January. Sessions must be booked (online royalpavilionicerink.co.uk) or through the onsite ticket office and are one hour long. Friends of Withdean Park Annual General Meeting - 6th December 2018 We are having this year’s Annual General Meeting from 7.30pm at St. Thomas More’s Church Hall, Braybon Avenue, Patcham BN1 8HG. We try not to make it too formal and we are continuing the tradition of having a talk by a specialist at the start of the meeting. Mark Nelson is a well-known local professional photographer and he will be talking about his work and giving some tips on how to get the best results from your own efforts. Mark is also the judge of our very first Photographic Competition and the results and award of prizes will take place at the end of the meeting, with the entries shown on our big screen!

Soothing Herbs For Stressful Times By Lucinda Warner There is no doubt that modern life can be very stressful. Balancing work, family, life admin and more without the support of a strong community can feel at times overwhelming. Thankfully our plant friends are here to help and can work wonders to restore, calm and regenerate an overworked nervous system. Integrating them into our habits and making them part of our daily life will reap many benefits for both mind and body as our physical and mental health can never really be separated, each being part of an intricate whole. Proper nourishment is vital for our nervous system. Calcium, magnesium, potassium and B vitamins are especially important, though many micronutrients play a key role in ensuring our nerves are able to function optimally. Vitamin E,

found in almonds, olives, sunflower seeds and leafy greens and Vitamin C, which is in many fruits and veggies, are also essential. Though good nutrition and adequate rest are the foundations for a healthy nervous system, healing herbs can be of great help in times of need. (If you are taking any prescription medications then please see a qualified herbalist before taking any of these remedies.) Oats (Avena sativa) are one of the very best remedies for nourishing the nervous system. Milky oat seed and oat straw are both wonderful herbal allies when taken everyday in teas or as tincture and the tea is also gentle enough for children who are undergoing stressful times Linden blossom (Tilia spp.) Is another wonderful soothing and relaxing herb that is gentle enough for children and breastfeeding mothers. It is great if nervous tension results in high blood pressure, as it also has a relaxing and steadying effect on the heart and circulation. It gently lifts the mood and can be taken as a tea an hour or so before bed to promote restful sleep. German Chamomile (Matricaria recutita) is one of the best known of all the relaxing herbs and is suitable for all ages. A few people are allergic to the plant family to which chamomile belongs but generally it is a safe and pleasant tasting remedy for all. Chamomile relaxes tense muscles which can help prevent cramps and tension headaches. It is also soothing

and anti-spasmodic to the digestive system which makes it a great herb to turn to when stress causes digestive pain, gas or IBS type symptoms. Lemon balm (Melissa officinalis) is another wonderful remedy to have on hand as it both relaxes and uplifts, making it particularly helpful for anxiety and low moods. Like chamomile it can also soothe the digestion being high in essential oils which have a relaxing and anti-spasmodic effect in the gut. Rose (Rosa spp.) is one of the true delights of herbal medicine. Cooling and uplifting it eases sorrow, calms irritability and opens the heart. Here are a couple of my favourite herbal tea blends for the nerves which are easy to make and try at home:

Hug in a Mug: For when you need a bit of nurturing. One part Oat straw One part Linden blossom A half part of Rose petals Bedtime Bliss Tea: A soothing and relaxing bedtime blend that is gentle enough for adults and children. One part Chamomile One part Linden Blossom One part Lemon balm Make each blend up in a small jar and store in a cool, dry place. Use about 1 tablespoon of herb mix per mug. Add a little honey to sweeten if desired.

Pimp That Mince Christmas Pies and contained suet and shredded meat, often mutton or, in the North, goose. More latterly, Mrs Beeton recommends a small quantity of finely shredded steak. The addition of fruits and exotic spices such as cinnamon, cloves and nutmeg were understood to refer to the Magi (the ‘wise men’), leading to their being banned as idolatrous by the Puritans during the English Civil War. The early pies were far larger and oblong shaped, the pastry being known as the coffin. British emigres took the recipe far and wide. In America they became associated with Thanksgiving instead, due to their connection with Catholicism. Mince Pies originated in Britain, although its ingredients – meat, fruits and spices – has been traced back to the return of the crusaders from the Middle East during the 13th century. The early pies were generally known as

These days there is no meat, apart from suet and we almost always buy ready-made mincemeat in jars. But we can experiment by adding some extra ingredients. Suggestions include: chopped satsuma segments, finely chopped apple, lemon zest, chopped almonds, rum/brandy/whisky, stem ginger, dried apricots…. Might be fun to try??

Mrs Beeton’s Christmas By Jayne Shrimpton

The first collections of recipes and hints for good kitchen practice were published in the late-1700s, followed by improved volumes in the early-1800s. However it was not until the mid-nineteenth century that the most famous of all domestic handbooks was published, the Victorian classic: Mrs Beeton’s Book of Household Management, also published as Mrs Beeton’s Cookery Book. When Isabella Mary Beeton (1836-1865) launched her comprehensive manual in 1861 it was the first book edition of what had originally appeared in parts - one of a series of guidebooks

Unlike earlier cookery and domestic books, the recipes were highly organised and the pages generously illustrated, raising it high above other titles. Although, sadly, Isabella died in 1865, aged only 28, her popular book remained a best-seller: indeed, after her death it was continually revised, reprinted and extended until it reached over 2000 pages in 1907! For decades it was the most frequently consulted cookery book, earning Mrs Beeton a reputation akin to that of more recent cooks Delia Smith and Mary Berry. Mrs Beeton’s Book of Household Management was intended

to educate and assist both ladies and their servants in the smooth running of the house. To an extent it was an aspirational work, providing helpful tips and setting standards for the instruction of those ascending the social ladder; for, as the middle classes expanded in industrial Britain, it was felt that the nouveaux riches might need guidance in how to conduct themselves in polite society. In addition, the new Victorian emphasis on the comforts of hearth and home elevated the lady of the house to angelic heights, an idealised charming, subservient wife and gentle, doting mother whose marital duty was to organise the running of the

Use turpentine and fine brick dust rubbed on with a flannel then polish with leather and dry fine brick dust for best results Such regimented procedures are summed up in one of Mrs Beeton’s oft-quoted statements: ‘As with the commander of an army, or the leader of any enterprise, so is it with the mistress of a house.’ In short, she advocated running the kitchen with the energy, efficiency and precision of a military manoeuvre. I doubt many of our kitchens would pass muster today…. Mrs Beeton wrote extensively about food preparation and meals, including the origins and characteristics of different produce, nutritional values, seasonal recipes, and tried and tested cooking methods. At the time of her writing, the concept of a festive Christmas with fir trees, decorations, cards and crackers was rapidly becoming established in Victorian Britain, influenced by the writings of Charles Dickens, royal practice, revival of ancient customs and a rising tide of consumerism.

Some seasonal dishes were already centuries old, such as Christmas pudding, while others were more recent innovations and Mrs Beeton published a number of dedicated recipes for enjoyment at Christmas: Christmas Cake; Sugar Icing for Cakes; Almond Icing for Cakes; Christmas Pudding, without suet – fruitarian Plum Pudding; Plum Pudding; Sauce for Plum Pudding; Chestnut Farce – Stuffing for Roast Turkey; Sausage Farce – for Stuffing Turkey; Bread Sauce; Giblet Soup; Turkey Soup; Parsnip Soup; Pickled Walnuts; Piccalilli; Spiced Vinegar; Mixed Pickles. Mrs Beeton wrote of turkey, popular at Christmas since the 16th century: ‘A noble dish is a turkey, roast or boiled. A Christmas dinner, with the middle classes of this empire, would scarcely be a Christmas dinner without its turkey; and 30

we can scarcely imagine an object of greater envy than is presented by a respected portly pater-familias carving, at the season devoted to good cheer and genial charity, his own fat turkey, and carving it well. The only art consists, as in the carving of a goose, in getting from the breast as many fine slices as possible…. The breast is the only part which is looked on as fine in a turkey, the legs being very seldom cut off and eaten at table; they are usually removed to the kitchen, where they are taken off, to appear only in a form which seems to have a special attraction at a bachelor’s supper-table, - we mean devilled: served in this way, they are especially liked and relished.’ Mrs Beeton’s recipe for Christmas plum pudding - a rich seasonal dish originating in the middle ages - used 15 ingredients: moist sugar; finely-chopped suet; sultanas

cleaned; raisins halved and stoned; currants washed and dried; shredded mixed candied peel; breadcrumbs; flour; almonds blanched and shredded; lemon rind grated; eggs; nutmeg grated; salt; milk; and a wineglassful of brandy. Essentially this was the prototype of the Christmas pudding recipe used by my grandmother (married in 1915 when every housewife had a copy of Mrs B), then handed down to my mother – a heavy, fragrant pudding blend that we heaved around the bowl as children in the 1960s/70s on ‘stir-up Sunday.’ It was all part of the lead-up to Christmas. Yet, how many ladies go to those lengths nowadays, or have time to follow many of Mrs B’s gloriously complex recipes? Some, but not many working women. Regretfully, it’s back on the shelf for Household Management and off to the shops… Merry Christmas!
