…and a new one’s just begun It is such a relief to get to the other side of the solstice, the promise of longer days cheers me up no end. It is often possible to get a sneak preview of spring too by buying a naughty bunch of daffodils! Meanwhile, we can hunker down and enjoy woolly pullies and quiet times together. Normally, I’m in D.S. Mixell’s camp, who said: “Many years ago, I made a New Year’s resolution to never make New Year’s resolutions. Hell, it’s been the only resolution I’ve ever kept!”. But, we can probably all agree there is an interesting year in the offing…. So, I think this year I will make an exception and try to make sure I listen to other people as attentively and positively as I can. We all want the best for each other after all.

Fancy experimenting with popcorn? After all the bustle of Christmas, one of the joys of winter can be quiet, cosy nights watching the telly…. We’re talking popcorn territory. Luckily, Popcorn is a smart snack. It is a whole, unprocessed grain. Full of fibre, packed with polyphenols (same ones found in red wine) and more antioxidants than found in similar weight of fruits and vegetables. It seems to be suggested that we cook the popcorn on the hob (Single layer with hot oil – coconut oil comes recommended but is not vital - in a saucepan with a tight lid. Cook for 3-5 minutes, it is done when popping slows down). If that is too much hassle, there is always microwave popcorn these days, simplicity itself.

Dill Pickle Popcorn Prepare the flavouring first, so ready to go. For the Seasoning: • Tablespoon coriander seed • 1 Tablespoon kosher salt (sea salt also OK) • 1-1/2 teaspoons dried dill (can also add dill seeds for extra taste) • 1/2 teaspoon mustard seed • 1/2 teaspoon garlic powder • 1/2 teaspoon onion powder • 1/2 teaspoon celery seed (optional) For the popcorn • 1/2 cup popcorn kernels • 2 Tablespoons coconut or peanut oil • 1/2 cup butter, melted Place all ingredients for dill pickle 4

flavouring in a spice grinder and process until smooth. Set aside. Pop the popcorn. When ready, drizzle with melted butter, (you could mix some lemon juice into the butter for an extra zing.) Toss or stir through. Sprinkle with the dill pickle flavouring to taste. Stir/toss again to distribute. Save any unused mix for the next batch! If using microwave popcorn, just open the bag, sprinkle, close and shake. Dill and Parmesan. Variation, even easier: Chop fresh dill leaves or use dried, mix with powder parmesan. Stir through the hot buttered popcorn.

Sweet Idea? Brown sugar & cinnamon glazed popcorn. Serves 6-8 • • • •

50g light brown sugar 10g butter 3 tbsp double cream a sprinkle of ground cinnamon • 25g popcorn kernels Put the sugar in a small saucepan with 2 tbsp water and dissolve over a gentle heat. Bring to the boil, but don’t stir at all. When the sugar is a dark golden caramel colour, whisk in the butter. Remove from the heat and pour in the double cream (stand back as it may spit), stir vigorously, then add the ground cinnamon. Pop the popcorn kernels then remove from the heat and pour over the sugar glaze, tossing the popcorn until evenly coated.

CARROT & LENTIL SOUP METHOD: Heat the oil in a large pan over low heat and soften the shallots and garlic for 2-3 minutes.

simmer for approximately 30 minutes until the carrots and lentils are soft.

Add the chopped carrots and cook for a few minutes then add the lentils.

Process until smooth.

Pour in the hot stock bring to the boil then

Dieting and preoccupation with body image may have reached extremes in our modern world, yet such concerns are not new, for history reveals a catalogue of attempts at weight management, from alcohol, pills, cigarettes and soap to healthy eating programmes. The ancient Greek physician Hippocrates (c.460-c.375

Lord Byron (1788-1824) spent much of his tortured youth trialling bizarre diets, including hard biscuits with soda water and potatoes drenched in vinegar. During the Victorian era, a low carbohydrate diet became the most widely accepted method of losing excess weight. The first serious work on dieting is recognised as the booklet entitled Letter on Corpulence, Addressed to the Public published by eminent undertaker, William Banting in 1864, which began: ‘Of all the parasites that affect humanity I do not know of, nor can I imagine, any more distressing than that of Obesity.’ Banting (c.1796-1878), once obese and having tried in vain various spas, diets and exercise plans, now espoused a weight loss programme based on limiting consumption of carbohydrates, especially those high in starch and sugar. Making his dietary changes at the suggestion of London physician Dr William Harvey, Banting successfully replaced excessive intakes of beer, bread, sugar, potatoes, milk and butter with mainly meat, fish, vegetables, fruit and dry wine. The immense and enduring popularity of his pamphlet and diet plan ensured that the verb ‘banting’ (as in ‘Are you banting?’) remained a colloquialism for dieting well into the 20th century. An advertisement in Brittania & Eve magazine, c.1929, promotes the healthy rye-based Swedish crisp-bread that claimed to eliminate fat and restore youthful litheness and vigour

Great Masticator’, believed his method could help with weight loss and avoidance of disease and it made him a fortune. Rumours of another technique in the early-1900s concerned the ‘Tapeworm Diet’ by which, in theory, the dieter swallowed a tapeworm that would live in the stomach as a parasite, consuming a proportion of his/her food. While vintage advertisements survive, there is little evidence of the use of tapeworms, although urban legend has it that the opera singer Maria Callas used this repellent method in the 1950s to achieve substantial weight loss. During the 1920s the vogue was for a slender, boyish ‘garcon’ look, but some women struggled 16

to attain this image, using questionable medicines and pills that claimed to banish superfluous flesh or employed constricting corsetry and other underpinnings to flatten their natural curves. It was probably no coincidence that smoking was becoming highly fashionable, with – unbelievable today – many cigarette companies publicising the health benefits of their products. In 1929 one advert proclaimed: ‘Light a Lucky and you’ll never miss sweets that make you fat.’ A cult of health and fitness developed during the 1930s, as the great outdoors beckoned with lashings of fresh air, sunshine and physical exercise. Extreme fads including periods of starvation were fashionable, while the grapefruit diet first made its appearance, an eating programme advocating

protein- and fat-rich foods alongside the grapefruits that would miraculously burn fat, producing the perfect streamlined body. Some diets devised years ago are familiar today, yet the weight control activities of even relatively recent celebrities can seem decidedly strange. Reputedly artist Andy Warhol ordered foods that he disliked when in restaurants, asking for a doggy-bag upon leaving and promptly giving his meal away to a homeless person. Elvis Presley was said to be an advocate of the ‘Sleeping Beauty Diet’, that is, gorging on his favourite burgers then sedating himself with sleeping pills for days, to inhibit further eating. The Clock Tower Marooned by traffic and grime, it is all too easy to hurry past the Clock Tower and fail to see it properly. It was gifted to the town by a local business man, James Willing, to commemorate Victoria’s Golden Jubilee so is perhaps more properly called the Jubilee Clock Tower. Its placement marked a vital site in the bustling town, at the junction of the thriving North Street with Western Road, West Street and the newly built Queen Road, leading to the all-important Railway Station. It was a generous gift that enabled a lavish and distinctive design. Rising to 75 feet, the tower is constructed of elaborately carved Portland Stone embellished with pink and red highly polished Granite. At the base above the plinth there are four lifesize female statues. Above the figures there are portraits on each side evoking the past, present and future of the royal family: The Queen and her late husband Prince Albert with their son Edward,

Prince of Wales and wife Princess Alexandra. Above the portraits there are four ornate signposts in the shape of ships’ hulls carved ‘To The Sea’, ‘To Hove’, ‘To The Sea’ and ‘To Kemptown’. Above these are the four five-foot clock faces and the whole is topped by a scaled copper cupola. As can be imagined, such an extravagant and self-confident tower was expensive, only made possible by James Willing’s donation of £2000, equivalent now to £234,000. A Marvel of the Age Above the cupola is a 16-foot mast with a gilt-copper sphere at the base. This was a ‘Time Ball’ designed by our famous local inventor and telegraph expert Magnus Volk. The ball was designed to be raised up the mast hydraulically and at the hour – under the direct control of the Greenwich Observatory no less – it would drop. Despite being a thoroughly modern marvel, the time ball was

abandoned within a few years due to complaints about the noise it made. Key Issue? At the laying of the foundation stone ceremony on 20 January 1888, James Willing presented the Mayor with a gold-plated key to the tower. Surprisingly, the key now resides in Australia but at least twice the Mayor’s descendants have brought it back whilst travelling and discovered that it still opens the door at official greeting events.

Herbal Helpers for the Winter Blues By Lucinda Warner

The dark days of January are upon us and this feels for many people like the bleakest part of the year. The heady festivities of Christmas are over and the lights and holly boughs have been taken down. These ancient symbols speak to us of light and life during even the darkest part of the year when the days are shortest and the nights loom long. By January the days are getting longer, yet with the post-Christmas atmosphere of watching pennies and waistlines, coupled with often grey and chilly days, it can certainly seem a dreary time. The ‘winter blues’ is a term often used to describe anything from the mild sense of malaise experienced by many at this time of year to the more severe forms of S.A.D. (Seasonal Affective Disorder). Symptoms of

S.A.D. include depression, anxiety, difficulty concentrating, increased sleep and food cravings. It is best treated by a practitioner who can look at the individual’s full history, especially if it is severe. If on the other hand the symptoms are not too debilitating then these remedies can be incorporated into our daily routine to help lift our spirits until the Spring arrives. Low mood during winter is most likely related to decreased light levels so getting out for a walk, especially on a bright winter’s day, is one of the best things you can do. Also ensuring a nourishing diet, drinking plenty of water and getting gentle exercise can make a lot of difference. It is also important to honour the energy of the season and make time for rest and reflection. Using a daylight lamp has proved helpful for many who have to work indoors and therefore see little light at this time of year. There are many herbs which can help, depending on individual symptoms, but here are a few ideas to consider. St John’s Wort is a joyful herb of mid-summer, often called ‘herbal sunshine’. This makes it ideal for banishing low moods during the winter months. St John’s wort should not be taken with a variety of prescription medications however so please see a practitioner if you are taking any. Lemon Balm is another useful remedy that is both uplifting and soothing to the nervous system. It is lovely for calming anxiety and promoting a good night’s sleep and also helps to support the digestion.

New Archaeology Gallery Brighton Museum & Art Gallery Opens Saturday 26 January 2019 The brand-new Elaine Evans Archaeology Gallery in the Brighton Museum & Art Gallery, has been designed to appeal to families and children as well as students and people interested in archaeology and history. The exhibition will mean we will be able to get ‘up close and personal’ with compelling stories of some of the earliest residents of Brighton & Hove from the Ice Age to the Saxons. At the heart of the exhibition will be seven forensically accurate 3D facial reconstructions revealing the faces of people, some of whose remains were found in and around Brighton & Hove. Using modern scientific technology, research into their lives has discovered a wealth of mystery, drama and tragedy through childbirth, malnutrition, toothache and possibly murder.
