O

lga Lucia, CPCP, FAAM, CMI, is a specialist in micropigmentation. She serves as an esthetician and makeup artist with Olga Lucia Permanent Cosmetics. Olga Lucia began her career as an optometrist and became interested in permanent eye makeup to help her patients who wanted to look better but were unable to see to apply their own makeup due to poor eyesight, being visually impaired, and having lacrimal disorders such as dry or sensitive, watery eyes. This inspired her to study permanent cosmetics and begin a new career enhancing eyes, eyebrows, lips, camouflaging scars, and providing nipple areola repigmentation services. Permanent cosmetics, or cosmetic tattoos, are not only used to enhance eyebrows, eyeliner, and lips. Paramedical tattoos are now being used to provide services to cancer survivors with hair loss and to those who have undergone a mastectomy. Olga Lucia provides those who have fully lost both their eyebrows and eyelashes with confidence and beauty through the application of permanent cosmetics. She also provides a much needed service for breast cancer survivors. The breast reconstruction process can include areola tattooing to create the illusion of a natural nipple areola complex with appropriate skin tone, shape, size, position, and color. trist Doctor at La Salle University in Colombia, is a New York State Licensed Esthetician, and is a New York State Licensed Makeup Artist from the Christine Valmy International School of Aesthetics and Dariou’s Studio Academy. Why did you choose a career in aviation? When I was young girl, my parents took me to the Jones Beach air show every Memorial Day weekend. I was in awe of the sound and look of the fighter jets and imagined myself doing the same one day. From those early moments, I knew I wanted to pursue a career in this field. What are some of the biggest challenges/obstacles you faced in your career thus far? This is an expensive career to pursue. Not only do you have to pay for college tuition, but you also pay for every flight training lesson on top of each written and flight test. Being a pilot is not only about flying a planeit is about safety, aeromedical factors, regulations, and airplane systems.

Alexa is an ambassador for Republic Airways, representing Delta, United, and American Airlines and serves as a direct liaison between her students and the airlines. This past Memorial Day, Alexa, along with four other recent graduates, took part in the famous Bethpage Air Show at Jones Beach, flying together in single-engine aircrafts to kick off the show, which also featured the U.S. Navy Blue Angels, the U.S. Coast Guard, the U.S. Army Golden Knights Parachute Team, and many others. Being able to participate in an event she had observed her whole life was a dream come true. Obviously, Alexa loves to travel and can’t wait to continuously meet new people and see new places.

What do you do to escape and recharge, even for a few hours? I love what I do and don’t feel the need at this point to have to escape and recharge. But if I had to choose it would be taking a nice walk on the beach or hitting the gym. What does the word empowerment mean to you? Empowerment means working in

lexa Wahl is a 23-year-old from Deer Park, New York. She received her B.S. in Aeronautical Science - Professional Pilot from SUNY Farmingdale State College in 2021. Alexa has her private and commercial certificates along with her instrument rating. She also is a Certified Flight Instructor with an added instrument rating to that as well. During her time as a student, she was awarded a Safety Coin for safe practices, the Osprey Award for Outstanding Commercial Pilot, and the Outstanding Academic Excellence Award for the highest grade point average in her major. Alexa currently teaches students how to fly ‘single engine land’ at SUNY Farmingdale’s Aviation Center. She has about 500 hours of flight time and is halfway towards the time needed to be eligible as an airline transport pilot. Recently, she was

a male dominated field and knowing I’m inspiring other females to do the same. Never let anyone or anything hold you back from achieving your goals or dreams. Where do you see yourself in ten years? In ten years I hope to be a captain for one of the major airlines in the United States flying one the largest planes they have to offer and flying a fighter jet in the air show. www.farmingdale.edu

Janet is responsible for the overall operations of the company, management, new product development, and the sales of newborn and preemie bodysuits. She is also an interior designer. Janet attended West Valley College. She belongs to the I.A.W. Skadoosie has received Parents Magazine Editor Pick 2018, The National Parenting Seal of Approval and Mom’s Choice Award Gold. Janet enjoys traveling to historical cities.

Janet A. DeMaria How did you get started in your field/industry? I started babysitting after my husband passed from asbestos cancer, leaving me with a 13-yearold son to raise. My design sense kicked in after the first diaper change and inspired me to invent the Skadoosie. What are some of the biggest challenges/obstacles you faced in your career? Funding is always a factor. You have to fight to keep your idea forging forward and stay ahead of the competition with what you have to work with. What do you feel are some of the biggest challenges that women face today? Not being taken seriously. We’re still fighting the fight 102 years later. What does the word empowerment mean to you? Self-empowerment is your driving force, your ‘why.’ Without 6 | P.O.W.E.R. Magazine

you, there is no progress; you’re dead in the water. I also wanted to give back, so I donated a portion of every sale to the Mesothelioma Research Foundation, a nonprofit charity whose purpose is finding a cure for asbestos cancer. Asbestos is still legal in the U.S., and we are urging Congress to ban it. If that is accomplished, it would be the ultimate empowerment. What do you do to escape and recharge, even for a few hours? I walk my property with my dogs, taking in the sounds and all of nature around me. Sometimes I go to the gym or just take a nap and rest my brain from overload.

What advice has helped you get to the next level? Never give up. Have passion for your product or service. Don’t listen to negativity. Sometimes you need to take risks to be successful. What book is on your bedside table right now and why? I’m reading about the Museum of the American Revolution. I’m a lover of history and have spent hours there reading every little plaque. History is being made every day. It all depends on how we choose to record it. What advice would you give to your younger self? I always thought I knew more than my parents. Now that I’m their age, I would say to myself, “They really do have your best interest at heart. Don’t be so stubborn and rebellious. Embrace the life they provided for you.” skadoosie.com

ilma J. Brown-Foreman is the owner of Academic Initiatives for Biblical Literacy in Secondary Public Education, which is an educational service targeting biblical literacy. Wilma is a minister who provides a variety of community services and works with children being raised by single parents. She is responsible for the curriculum of the institution and specializes in literature. Wilma emphasizes the importance of adding biblical education to public schools. She earned her Ed.S. in Teaching and Learning from Liberty University in 2012. How did you get started in your field/industry? Fulfilling a lifelong dream, I began teaching secondary English at the age of 23. To equip myself academically, I have earned my B.A. in English and three graduate degrees, a M.Ed. in Curriculum and Instruction, a M.Ed. in Administration and Instruction, and an Ed.S. Educational Specialist degree.

What are some of the biggest challenges/obstacles you faced in your career? Teaching was most challenging when strengthening my students’ literacy skills by connecting Western literature to the wisdom, literary themes, techniques and history found in the Hebrew bible. Rampant biblical illiteracy problems exist among public high school students. What do you feel are some of the biggest challenges that women face today? I have discovered that the majority of administrators, teachers and parents do not understand, appreciate nor recognize First Amendment rights (religious liberties) on public school campuses. As a black Christian female, I was not able to impart this most valuable information. What does the word empowerment mean to you? Empowerment is the process of enabling someone to think, act, and control decision-making about their goals and purposes in life. Knowledge is a type of empowerment. tephanie L. Bailey is the owner of The House of Holistic Care, which is a nonprofit group home and child welfare agency based in San Tan Valley, Arizona. With seven years’ experience, Stephanie oversees the operations and staff. She teaches life skills to young girls through the Department of Child Safety and ensures that they have a safe haven. She promotes positive health behaviors, wellness, health education, and uses holistic interventions to promote wellness, manage illness, and reduce pain. Stephanie has over 20 years in healthcare services, 15 years in the criminal justice field assisting offenders in a variety of community correctional programs, 15 years in addictions treatment therapy, and over 15 years in the beauty supply industry. Stephanie and her husband are the owners of Royal Beauty Supply & Custom Wigs, a family-owned business. They sell a variety of skincare, body products, and custom wigs. Stephanie’s passion is customizing human hair wigs for children, women, and

Our cover girl, Christie Brinkley, is an icon of beauty and has proven that age is simply a number. Passionate about looking her best at any stage of life, Christie is still rocking a bikini in her 60’s and uses her influence as a model, actress, entrepreneur, spokesperson and author to encourage others to look and feel their best. She has authored two books that share her beauty secrets, and as a fitness guru, she is the spokesperson for Total Gym, which is the best-selling total body fitness equipment in the world and a major part of her wellness routine. She is also an owner of SBLA Beauty, a skincare company ‘where science meets beauty,’ offering revolutionary solutions for the renewal and restoration of youthful skin. atricia L. Blake joined the Los Angeles Police Departmment (LAPD) in May of 1983. Her career as a sworn LAPD officer spanned almost 34 years. Patricia was promoted through the ranks and held the positions of acting and assistant detective commanding officer, patrol watch commander, and acting patrol commanding officer. She was part of a leadership team at the Foothill Division that focused on crime analysis, developing crime strategies, and implementing cutting edge predictive policing. Upon retirement, Patricia continued as an active reserve officer as the officer in charge of a unique mounted volunteer cavalry unit, the Valley Community Cavalry Rough Riders (VCCRR). This cavalry unit was deployed in local parks, trails, and business malls throughout the city. The unit’s mission includes public outreach, crime prevention, education, mounted color guard for parades, evacuation, and search and rescue efforts. The unit enhances good will and fosters a partnership between police and the local community.

Patricia earned a B.A. from CSUN, a M.A. in Organizational Leadership from the University of Phoenix, and she completed the West Point Leadership Course with the LAPD in 2003. She was an affiliate of the Los Angeles Women Police Officer and Associates and the California Peace Officers Association. Patricia became one of two of the first female field patrol field training officers at the Rampart Division. She was also the first female senior lead officer at the same division in 1989. She received the Officer of the Year award at Rampart, and earned a Meritorious Unit Citiation at the Wilshire Division as the officer in charge of a hand chosen special problems unit. In her spare time, Patricia enjoys church activities, racquetball, horseback riding, and jogging. She participated over ten times in the annual international law enforcement 120-mile Baker-to-Vegas team relay run. Recently, Patricia wrote a factual book documenting her career and real life police work with the LAPD entitled “Touched by the Hand of God in the City of Angels.”


What do you do to escape and recharge, even for a few hours? I enjoy horse riding, jogging, racquetball, walking my dogs on the trails, and reading a book. What advice has helped you get to the next level? I believe that you should seek out excellence through continual improvement. I took advantage of all the opportunities given through the department including training courses to develop my leadership and mentoring skills. Getting a formal college higher education helps. Always try various challenging work assignments. What book is on your bedside table right now and why: I am currently reading “With All Due Respect – Defending America with Grit and Grace,” by Nikki R. Haley, former United States Ambassador to the United Nations. It is all about the concepts of professionalism, leadership, integrity, and inner strength. She is a true leader with integrity, values, and she is a successful career woman with a family. I find her inspiring. What advice would you give to your younger self? I would tell myself to surround myself with positive trusted family and friends, and to be more confident and self-assured in myself. Recognize and develop mentors for guidance, and to always keep my family as a priority over work.

Avoiding the Negative Effects of Social Media on Relationships

S

ocial media has influenced just about everything in our lives, including business, politics, and even our relationships. Whether you scroll and post regularly or just peek and comment on occasion, you have an online identity. It can be challenging to properly manage our individual online presence, yet we are responsible for what we share and how we engage online. Social media can be a great tool for keeping in touch with people and maintaining a sense of connectedness. However, it can also be especially harmful to our relationships. The human brain is wired to think negatively which can quickly wreak havoc on our relationships. If you’ve ever irrationally wondered what your partner was up to simply because you got their voicemail you are probably familiar with this phenomenon. We seek answers, predictability, pleasure, to avoid pain, we yearn to be accepted, liked, and supported. Social media can ease our minds, fuel our fears, or help us gauge our standing 20 | P.O.W.E.R. By Kimberly Meere, LCSW in relationships. However, we tend to compare our relationships to others and comparisons can be a social media relationship killer. A survey conducted in the fall of 2019 by the Pew Research Center found that eight in ten adults notice relationship-oriented posts and women are 7% more likely than men to notice them. Interestingly, age is a factor too. Women under 50 are more likely to notice and be affected by relationship posts compared to women over 50. Megan, 29, and Mike, 30, were dating for over two years and were considering marriage. They lived together, had a dog and wanted kids. Megan wanted to get married right away and was concerned about her biological clock. Mike was not ready to get married and wanted to ‘get his affairs in order’ before the big step. Soon Megan started noticing posts of engagements, weddings and births

on social media and began resenting Mike. She would compare her life to everyone else’s and somehow, she always came up short. Many of us compare our lives to what appears to be a better one from what we can see on social media. Comparing is a potential relationship killer. Everyone seems to have a happy life on social media. It looks like they have the perfect relationship, motivated kids, and a great job. Puh-leease! You can’t rely on a picture of people at the beach or on vacation three years and 25 pounds ago. Keep in mind, people post what they want you to see. Some people are excellent at painting an enhanced picture of the high points of their relationship- the extravagant vacations, the romantic dinners, the custom ring, the lengthy heartfelt birthday/ anniversary dedications. But what’s behind the curtain? It is most likely a very different picture of criticisms, insecurities, inconsistencies, etc. Do yourself and your relationship a favor and avoid comparing. If your


friend’s partner posts daily pictures of them together and yours doesn’t, it’s okay. Your relationship is not in trouble or any less special. Be mindful not to jump to conclusions and openly discuss the role of social media in the relationship. Establishing the role of social media in a relationship is vital to maintaining harmony and balance. Setting boundaries and outlining rules of engagement is necessary to build trust both on and offline. Consider drawing a road map for your partner as to what your concerns, expectations, and needs are as an opportunity for them to get to know you on a deeper, more intimate level. It’s important to communicate without pointing fingers and be open to compromise. This technique was helpful to Tammy and her boyfriend Paul. Tammy was concerned when she noticed Paul liked a picture which his ex posted of herself and her new dog. This is a classic example of what I refer to as ‘indiscriminate contact.’ This is the act of ‘liking’ a post or communicating with someone your partner would likely consider off limits. Tammy began to question the relationship and Paul’s level of commitment and wondered if he still had feelings for his ex. Paul insisted this was an innocent ‘like’ and reassured Tammy she was the only one for him. Over the next several weeks, Tammy began monitoring Paul’s social media activity, tracking his whereabouts and demanded he dissociate from all girls online. The suspicion and indiscriminate communication forged a wedge in their relationship, and they fought regularly. In therapy they were able to explore the feelings that were being triggered through some of their social media interactions (insecurity, low self-esteem, abandonment, commitment issues, trust) and they set clearly defined boundaries and rules of

engagement. Both would make a conscious effort to avoid indiscriminate contacts, overthinking, constant monitoring, and jumping to conclusions. On the other hand, sometimes we must face the possibility that this is not the right relationship for us. If you find yourself checking up on someone multiple times a day, you may want to tune in to what is driving this behavior. Status checking, or the act of checking your partner’s listed relationship status (single, single and looking, in a relationship, married, etc.) can be a sign that it’s time to have a conversation about it. Approximately half of social media users check up on their current or former partner’s relationship status. Based on this information, 30% report feeling jealous or begin to question their relationship. Many of my clients have expressed concerns over the lack of posts or pictures representing the relationship on their partner’s social media page. For instance, it can be off putting when you realize that your partner of nine months maintains the ‘single and looking’ status on their social media profile, along with 47 pictures of friends, 16 pictures of food and only one picture with you buried under everything else because it was from last Christmas. Social media is a great tool for the purpose of enlarging our social network, keeping in touch with each

other, and expanding opportunities. However, some opportunities can be potentially problematic, like cheating. Social media sites can be a petri dish for temptation and indiscretions. This is often a result of low relationship satisfaction levels, pre-existing trust issues, and lack of positive communication patterns. Fostering open lines of communication, understanding, and checking in with each other on a regular basis will lead to increased levels of satisfaction within the relationship and reduce the likelihood of infidelity both on and offline. Social media can be a blessing or a curse when it comes to relationships. The good news is we have a say in the matter. Initiating and maintaining ongoing, honest conversations and establishing rules of engagement are important parts of the process to successfully navigate the digital age we live in. Trust must be built in relationships, and it can be especially challenging when it comes to social media since the rules are often unclear. A good rule of thumb, and the sign of a healthy relationship is that there is no sign of it on social media.

s the owner of A World of Pink, I have 30 years of experience as a New York State Certified Dental Hygienist, which I continue to practice monthly. I became a Certified Mastectomy Fitter and a Licensed Lymphedema Fitter in 2015. I’ve spent my entire life on Long Island and the number of local women affected by breast cancer is staggering. To date, I have supplied post-operative bras for hospitals and the healthcare system and fit over 10,000 patients. Most women don’t receive proper mental and physical care resulting from the effects that a breast cancer diagnosis has on their bodies and minds. I started A World of Pink in order to provide medically supported products for all phases of breast surgery, designing top quality bras and expanding women’s wellness through education. A major goal of mine involves educating surgeons on the importance of supportive bras and prosthesis to restore a sense of self-pride, confidence, and balance. A World of Pink has had the honor of being featured on “The Drew Barrymore Show.” I was honored to be voted Brookhaven Businesswoman of the Year, 2015 -2016. Even before starting A World of Pink, I wrote a smoking cessation program that was approved by the Department of Health which was then turned into a fully accredited teaching course at Farmingdale College in 2014. I see the journey for breast cancer thrivers as an open door to transparency in each woman’s life. Breast cancer thrivers have the right to redefine their bodies on their own terms. Prosthetics have always been a part of the journey for women from the onset of surgical reconstruction to the final Picasso. For many, prosthetics are the ultimate decision, and that is ok too. Women have the right without shame to choose their own path to recovery, although that hardly goes without some unexpected obstacles. Obstacles, in my opinion, are the most important part of full recovery. That is where the changes are made, the transparency, the acceptance, and ultimately the renewed you are decided by you! Women are built to perfection, whatever that looks like. Reconstruction in one step is something that I find rare in my time as a prosthetist mastectomy fitter. Along my journey of fitting women with mastectomy specialized bras and prosthetics, I have had the honor to work closely with powerful women surgeons who have changed the views of what I see as engineered perfection. What do I love so much about these amazing women surgeons? Mostly, it’s their talent to restore women’s bodies and the power to create a better outcome, which includes the concerns of those that are affected by this tragic disease. I have watched these professionals work with our World of Pink thrivers together, ultimately creating a journey of healing and happiness with choices that are truly discussed and owned by the patients themselves. Dr. Cooper completed her residency in General Surgery, followed by a Head & Neck fellowship at Lenox Hill Hospital and a Burn fellowship at New York Medical College. She furthered her training in Plastic & Reconstructive Surgery at Downstate Medical Center and Kings County Hospital, where she remained as an assistant professor of plastic surgery for several years. She participated in The India Project and worked throughout India performing reconstructive surgery to correct a multitude of congenital anomalies. This project received a Nobel Prize nomination. I especially love taking on the cases that no one else would dare undertake. Breast reconstruction revision surgery holds a special place in my heart. I love puzzles. In patients who have unfortunately suffered untoward results, I am able to take their pieces apart and then reassemble the reconfigured parts in a more aesthetic and functional way. How did it feel to be nominated for a Nobel prize for your work on The India Project? I never really thought of tangible gain during my trips with The India Project. Patients and their families, ostracized and shunned in their villages, walked for days in order to come to one of our surgical sites. Through our life-changing surgeries, they

returned home and were able to lead normal lives. I operated on hundreds of patients during my medical missions. These trips were self-funded so upon finding out about our nomination, my first thought was how many more lives could we change with the prize money. What does the word power mean to you? Power is defined as the ability to create a wonderful, meaningful, and fulfilling life. After 23 years, I still find great joy in every patient encounter. r. Melissa Fana is a fellowship trained breast surgical oncologist who focuses on the delivery and coordination of multi-disciplinary care in the treatment of breast cancer. She is a hidden scar certified surgeon and specializes in oncoplastic techniques as well as skin/nipple sparing mastectomy. With almost eight years of experience, Dr. Fana is based on Long Island, New York and serves as an associate professor at Hofstra School of Medicine, the chief of breast surgery at South Shore University Hospital and the director of breast services at John T. Mather Hospital, at Northwell Health. Her passion to provide the highest quality of care for patients is coupled with a personalized approach to each individual she cares for.

What motivated you to become a breast surgical oncologist? From a young age I always wanted to become a surgeon, but it wasn’t until I got to know the women who faced breast cancer during my surgical residency that I concluded what my specialty would be. I realized that their fears, anxiety and worries could be resolved with education and empowerment, and my own desires to want to illuminate a path of recovery in the darkness made me choose to become a breast surgical oncologist. I have not yet met a problem that didn’t have a solution. Are there any lifestyle improvements that women can make to lessen the risk of developing breast cancer? There are several lifestyle changes that can reduce a woman’s lifetime risk of developing breast cancer, such as keeping a healthy diet, low in red meats, and avoiding excess alcoholic intake as well as exercising. Breastfeeding can reduce risk as well; however, I think the most important guidance I can give is that a woman should know her individual risk. We have many resources online and within Northwell that can assist our community in knowing exactly what their personal risk is of developing breast cancer.

How has breast cancer treatment and cure rates changed in the last ten years? We have made many advancements toward identifying breast cancer earlier with better screening/ diagnostic imaging tools, better treatment with targeted therapies and more opportunity to start chemotherapy or targeted therapy before surgery. In some cases, huge changes in the surgical approach have led to less surgery and more natural appearing outcomes with the offering of hidden scar and/or nipple sparing procedures. Tell us about the A World of Pink and why you decided to become a part of it? Treating someone facing breast cancer takes partnership between several experts in the field, but to be successful we also need to look at the whole individual and meet their physical and

emotional needs. We need to restore an individual’s body and self-esteem. Christine Guarino and A World of Pink go above and beyond to help accomplish this. The restoration of an individual’s body also helps empower them and A World of Pink accomplishes this by providing custom fit bras, prosthetics and a special dose of tender loving care. What is the word power mean to you? Power means a lot of things to different people and can shift in various settings. I started getting bored with that, so I just opened a taxation book and followed instructions from the Internal Revenue Service and Indiana Department of Revenue on preparing tax returns. I fully enjoyed it, and I knew that was the career I wanted. What does empowerment mean to you? Empowerment means I have increased my self-determination to enable me to present my interests in a responsible way. How does it feel to have broken so many barriers in your field as a female African-American? I did not originally set out to break barriers. It was not a conscious decision. I consider myself extremely fortunate to have found a field of practice that I am passionate about and a training program that embraced me and taught me how to be a proficient surgeon, not a female surgeon or a Black female surgeon, just a surgeon. My situation as a minority in this field became very real to me when I was approached by various casting directors from Los Angeles for reality television projects. One casting agent said that he contacted every practicing Black female plastic surgeon in the country, and, at that time, there were 17 of us, a terribly low number. That was in 2014. We are still very underrepresented in the field. I have always been proud of my heritage and have embraced the opportunity to reach a diverse patient population who 20 years ago may have believed that plastic surgery was not for them. From the earliest days of establishing my practice, I pushed for a diverse representation of patients from different ethnic backgrounds, different ages and genders. I am extremely grateful to each of my patients who trusted me, especially during the first ten years as I was building a name and perfecting my craft. If I have been able to pave the way and create opportunities for others, that is very humbling to me. What is the most rewarding part of your job? There is a certain reward that you have in the operating room when you are physically able to transform the patient’s body. It is more rewarding to see my patients’ confidence skyrocket afterwards – that shared excitement is unparalleled. Whether it’s getting selfies from a patient sharing the simple joy of wearing a two-piece bikini for the first time in their life, a mom crying tears of joy because she finally feels like herself again, a weight loss patient who can finally enjoy the newly trimmed figure they worked so hard for, or someone excited to attend a reunion because they look as great as they feel – these transformative changes, big and small, are why I went in to plastic surgery. You are a busy working mom and involved in so many important causes. How do you manage to balance it all? When I started my practice, I was the mother of three young children. I was deeply committed to the patients in

my practice and at the same time deeply committed to my family. The beauty of being in private practice and being your own boss is I could decide if I wanted to take the day off to go to the school play, the cheerleading competition, or field day. I structured my days so that I could be fully present for my patients and for my family. There were times when it did not balance as well as I might have liked, and it took an entire village of grandparents, nannies, aunts, uncles, friends, and parents to make it happen. I am really proud of the fact that I have always had a strong presence in each of my children’s lives and not at the expense of treating my patients. What does the word power mean to you? To me, power means understanding your unique strengths and skills and successfully applying them towards your passion. Traditionally, power and being powerful tends to imply influencing and inspiring others in the process – to me that’s a by-product as opposed to the goal but it’s a very rewarding facet of accumulating power or being perceived as having power. What makes me feel powerful in a more holistic sense is that I love my life outside of my career. My family and friends are a huge part of my life, and while I’d love to say, “Look, you can have it all.” Frankly, you can’t have it all, at least not all the time. There will be missed opportunities and events, times when meeting up for dinner feels like an even greater effort than the 15-hour day you are just wrapping up, and times where you wonder what could have been. FITNESS Short, Stackable Workouts

S

ometimes an hour-long workout seems nearly impossible to fit in to your already overscheduled day. When you are pressed for time or simply lacking motivation, “short, stackable” workouts are the new way to get in your exercise and keep your mental health in check. The idea is simple - if you commit to less, you can put in more. Ten, 15, 20, and 30-minute workouts are easy to squeeze in during your lunch break or in between Zoom calls. These short bursts of energy can release stress and shape specific areas of your body.

You don’t need to pay for a fancy subscription service to achieve good results. Short workouts of different lengths and for different muscle groups can be found on YouTube. My favorite YouTube trainer is Rebecca Louise. She

offers dozens of videos of varying length for all body parts. She is a great motivator and makes exercise almost painless!

SUMMER DRINKS “Almost” Guilt-Free Cocktails

There is nothing like a refreshing cocktail on a warm summer day but I am not a fan of the extra calories and sugar that come along with these sweet drinks. Below I have re-imagined a few of my favorites. These lighter and healthier versions are practically guilt-free!

Skinny Paloma

This sugar-free version calls for 2 oz. of tequila (my choice Casamigos Blanco), 6 oz. sugar-free grapefruit juice, and lime juice to taste. Pour all into a glass with ice and give a good stir. You can top it off with some sparkling water, if you like. For a beautiful presentation, add some Himalayan pink sea salt and a grapefruit slice on the rim of a rocks glass.

Cosmopolitan

To make this classic drink sugar-free, you need 2 oz. of vodka, ½ teaspoon of orange extract, ⅓ cup of sugar-free cranberry juice, and a teaspoon of freshly squeezed lime juice. Shake the ingredients together with ice until cold and pour into a martini glass. Garnish with a slice of lime.

This tart and sparkly drink is popular, delicious, and easy to make sugar-free. Simply put a few lime wedges and mint in a glass. Muddle them together and add 2 oz. of vodka, and 6 oz. of sugar-free cranberry juice. Add ice and some tonic water to finish. Give a nice stir and garnish with a few mint leaves and a slice of lime.

heart of palm salad is a great “go-to” summertime meal. Q&A with Christie Recently you have been speaking out about “ageism.” Why is it so important to you? Ageism is alive and well in the USA. We have all kinds of stereotypes and rules that need breaking, and we need more representation in beauty and fashion. We don’t want to be defined or marginalized by a number that does not represent our spirit, energy, hopes, or dreams. At 68, you can still rock a bikini and proudly post swimsuit pictures on Instagram. What message are you hoping to send to women who see these photos? The main reason I post them is that I have a home in Turks & Caicos, and I live in bathing suits when I am there. However, I noticed that whenever I posted the swimsuit pictures, women told me it inspired them to exercise- and that’s important, especially as we age. At my age, I find things start to rust if I don’t move them. It’s also a way of making the 60’s look fun and less daunting. I like to redefine the number, not allow it to define me. Women everywhere are defying the limitations that were once the standard. They are fit and fabulous, and many are starting new businesses and making lifelong dreams come true. Everyone is different. There is no one rule that fits everyone. We should be celebrating these wonderful vibrant women more. What is your secret to staying beautiful at any age? My best beauty secrets start with your spirit. My foundation is gratitude. I then build on that with good nutrition, an organic and vegetarian diet, and top it with friendship, laughter, curiosity about the world, and giving back. After that comes using great products, creams, and sunblock galore. I wish I were kinder to my skin earlier but alas. That is what SBLA Beauty is for! On an international level, I’m the vice president of the Radiation and Public Health Project, which has been instrumental in protecting the general public from the dangers of leaking radiation from old, troubled nuclear power plants. Most recently, we have been sounding the alarm and responding to the concerns raised by the war in Ukraine, which has the oldest and largest nuclear complexes in Europe. In addition to a host of professional accolades, Rosanna has received honors for her community service work. She works at Fresco as president of “Schmoozing.” Being that your whole family is in the restaurant business what made you pursue a career in journalism? I have always been interested in journalism. When I graduated college and moved to Atlanta, I worked for Ted Turner’s TV station. When my mom, my sister, and brother decided to open a restaurant, it was a side hustle for me. I always looked at it as fun. I didn’t do the heavy lifting that they were doing. What is the most exciting story you have covered? I am so lucky because I have had a front seat to history. I’ve covered so many interesting stories from Mia Farrow’s custody battle to the preppy murder killing in Central Park. Recently, during COVID, I talked to Dr. Fauci. I got to ask him all the questions that everyone was worried about. How did the family decide to first open up Fresco by Scotto? My mom wanted to open a restaurant to give the family a business that we can all work in together. And now, 30 years later, we realize it was a brilliant idea. What would you say is the most popular dish on the menu? There are so many popular dishes. Our potato and

How do you balance your television career, your restaurant and family life? Work and life balance is always a struggle. Some days I am totally exhausted. And others, I am having the time of my life. Where did you and your sister Elaina get the idea for the Scotto Sisters Instagram Live page? My sister and I started Instagram Live (4:30 p.m. EST, @scottosisters) during lockdown. It was a way to keep our family engaged, especially my parents who were afraid to even open up a window. It was also a way to grow our community, keep everybody calm, and find a way to laugh. We all needed a distraction. What does the word power mean to you? Power is confidence. We all have that within us.

Directions Once the chicken is tenderized, lightly dress it with olive oil, salt and pepper. Heat some oil in your frying pan on medium high and give the chicken a good sear on one side. When you see the pink turning to white on the side facing up you can flip it and turn the heat to low. While the chicken is staying warm in the pan, toss all of the ingredients you have together in a bowl, seasoning with salt and pepper and the dressing you are using. Lastly, shave the cheese over the salad and drizzle a little olive oil over the chicken. Plate and enjoy.

former PR fashion executive, Elaina Scotto has worked for such designers as Yves Saint Laurent and Bill Robinson. She runs both Fresco by Scotto Restaurant and Fresco on the Go. Elaina lives in New York City with her husband and children. How does your public relations background come into play as a restaurateur? As a restaurateur, PR plays a huge role. We are constantly strategically marketing Fresco by Scotto to remain relevant. Whether it be noteworthy new dishes or beautiful décor, the end game is portraying the most positive image for the restaurant. What are the positive aspects of working with family? I am blessed to work side by side with my mom. I look back to when we opened and she was my current age. I’ve learned so much from her and am thankful for this wonderful life she’s provided for us. In your opinion, what are the keys to running a successful restaurant? Knowing the customer is always right, working respectfully hand in hand with your employees, and constantly reinventing your concept to remain current. If you had to pick one favorite dish your mom makes what would it be? There are many, but her stuffed mushrooms are to die for. It’s an edible art, made with button mushrooms,

sautéed 4C breadcrumbs, and melted mozzarella. She has to hide them before dinner is served, or they will all be eaten before we sit down. Who is the best cook in your family? My beloved father was. He would wake up early on Sunday morning to start the sauce. It would slow simmer for hours. The sauce is the heart and soul of Italian cooking. He is missed every day. Tell us about selling your products on behalf of Fresco by Scotto on QVC? I sell products on behalf of the Scotto sisters. We began developing frozen food during the pandemic when the restaurant was shuttered. My sister Rosanna and I started an Instagram show called Scotto Schmoozing. It was a way to keep our mom engaged during very uncertain times. We would go live every day at 4:30 and simply discuss life. The show became a hit, and we were then approached by QVC. We’ve sold out of our lasagna, meatballs, and cheesecakes, but look forward to creating new dishes in the next quarter. When the whole Scotto family gets together for dinner do you prefer to go out or stay in for a home-cooked meal? We love our Sunday dinners at home - it brings the family together. How did you get started in your field/industry? With a degree in Communications and Broadcast Journalism, I’m not afraid to share my voice. When I got cancer and my doctor first told me to go home and get my affairs in order, I had two small children at home. My story needs to be told, and I recently wrote a book, titled “I AM THE ONE.” What do you feel are some of the biggest challenges that women face today? Ourselves! We are taught not to believe in ourselves. I find this in the medical world all the time. We think doctors are always right, so we just do whatever they say instead of following our gut or our intuition and we are dying because of it. We were raised to be “yes” people, not “no” people, and that must change. How did you get started in your field/industry? My background of broadcast journalism was the foundation I concentrated on as the best way to help women. All I want to do is help women, so I wanted to use my strengths so that I could reach as many people as I possibly can. What are some of the biggest challenges/obstacles you faced in your career? I love to motivate and speak to large crowds. COVID has made personal appearances quite difficult so as we go back to living pre-COVID lives, I would like more speaking opportunities. At the same time, her teaching skills and academic prowess lead her chemistry teacher to work with the school to adjust her schedule, so she could teach chemistry while the teacher was away. Ice Cream, You Scream for

ummer is here, and your freezer hopefully has a container or two of ice cream. Did you know that you can make more than just a sundae with that lovely cream, sugar, and goodness? Read on for some fun ideas to liven up your summer palate and show off for those backyard BBQ’s.

Berry Float

Pick a berry – blueberry, strawberry, raspberry, or blackberry. Grab a container of a similar flavored ice cream, a bottle of lemon/lime soda, and a bottle of fruit flavored or vanilla vodka. Add half a cup of berries, 3 oz. of vodka and 1 cup of soda to a blender and blend for about 15 seconds. Scoop 2 scoops of vanilla ice cream into each glass and pour half of the berry mixture over the ice cream. Garnish with more berries.

Berry Parfait

Summer Desserts

You’ll want some tall clear parfait glasses for this to show off the layers. Place a scoop of strawberry ice cream in between layers of crumbled angel food cake, a tablespoon of strawberry jam, and chopped fresh strawberries. Top with ice cream, whipped cream, and a strawberry.

You will need 2 lb. of strawberries washed and sliced (reserve 5 strawberries, halved), 1 pound of blueberries rinsed, 1 pound cake cut into slices and crumbled, 2 containers of Cool Whip, 8-10 tall clear glasses. Layer pound cake, fruit, then Cool Whip in each glass. Top with a strawberry half. Serve immediately. You can sprinkle a few splashes of Chambord raspberry liqueur over the pound cake before layering for an adult treat.

Iced Cream Cake

Bake a vanilla or chocolate cake in two round pans. Allow to cool. Take out a container of your favorite ice cream and allow to come to room temperature for about 30 - 45 minutes. Spoon out a layer of ice cream on top of one of the cake layers. Cover with the second layer of cake. Wrap in saran wrap and freeze overnight. You can top with whipped cream and sprinkles, or more iced cream when serving.

Strawberrry Shortcake Ice Cream Sundae

Bake or buy large chocolate chip or peanut butter cookies. Place a scoop of slightly softened ice cream in between two cookies and press till the iced cream meets the edges. Place on pan and freeze overnight. You can roll the edges in sprinkles or mini chocolate chips before freezing as well.

Ice Cream Bread

Yes, we said bread. Take two cups of your favorite flavor ice cream and allow to completely melt, sitting out for about an hour or microwave in short 30 second bursts. Add 1 ¼ cups self-rising flour. Mix well. Preheat oven to 350°. Line a loaf pan with parchment paper and spray with nonstick spray. Pour in batter and spread evenly. Bake for 35-40 minutes. Cool and enjoy.


Key Lime Pie

Jello Yogurt Pie

Cream together 1 8-oz. package of cream cheese, 1 14-oz. can of sweetened condensed milk, and ½ cup of key lime juice. Pour into a premade graham cracker crust. Refrigerate 4 hour or overnight. Top with 2 cups of Cool Whip before serving.

This is a very simple four ingredient dessert. You need a box of your favorite Jello flavor, an 8 oz. container of cool whip, 1 premade graham cracker crust, and 2 cups of like-flavored or vanilla yogurt. Make the Jello only with ¼ cup of hot water. Mix this with the yogurt and Pumpkin Pie Frozen Delight Take 1 store bought pumpkin pie and break it up in a large bowl. Using then fold in the Cool Whip. Pour into your hands, completely mix the pie and crust together. Make golf ball-sized the crust and refrigerate overnight or at least 6 hours. It works especially well balls and place on parchment paper. Make as many as you can and freeze with lime and lemon flavors. for 45 minutes. Melt chocolate and dip each ball in chocolate or swirl chocolate on top. Serve.

Death By Chocolate Trifle

This is decadent and quite easy to make. You’ll need two containers of pre-made brownies or bake a simple boxed chocolate cake, crumbled up, 2 containers of Cool Whip, 6 Skor candy bars broken into little pieces, 2 boxes of instant chocolate pudding (3.9 oz. box) and 4 cups of milk. Crumble up the brownies or cake into a large bowl and set aside. Place the Skor bars in a plastic bag and beat them till they are all broken up with a kitchen mallet. Prepare the instant pudding and set aside. In a large trifle bowl or very deep clear glass bowl, place a layer of brownies, top with a layer of pudding, Cool Whip, then a layer of Skor bars. Repeat layers until done. You can top with some chocolate chips as well. Refrigerate for at least three hours.

Grilled Desserts

Pineapple slices, pears, apples, and peach halves (fresh or canned) sprinkled with a little cinnamon and brown sugar are perfect on the grill.

Smores For A Crowd

You’ll need: 20 graham cracker squares, broken in half; 7 full-size milk chocolate bars; 10 marshmallows, cut in half. Lay the graham cracker halves on a large baking sheet lined with foil. Top each with 3 squares of chocolate and lay marshmallow halves on top. Broil for 2 minutes. Watch carefully.

Cannoli Dip

This is a crowd pleaser and very easy to make. You will need 2 cups ricotta cheese (if it seems very wet, drain in cheese cloth over a bowl overnight in the fridge), 1 8-oz. package cream cheese, 1 ½ cups confectioners’ sugar, 1 tspn. vanilla extract, 1 Tbsp. orange zest, and 1 cup mini chocolate chips. Beat the ricotta cheese and cream cheese together until smooth. Add sugar, orange zest and vanilla and mix until everything is incorporated. Fold in the chocolate chips. Cover and chill for 30 minutes. Serve with ice cream wafer cones broken up, strawberries, graham crackers, chocolate wafers, etc.

Peach Galette

Summertime means peaches! Keep it simple but impress your friends. You’ll need 6 – 8 fresh peaches sliced or a large can of sliced peaches drained, 1 pre-made pie crust, 3 Tbsp. of brown sugar, 2 Tbsp. flour, 1 Tbsp. of lemon juice, a pinch of salt, a ½ tspn. of cinnamon, and a few spoons of apricot jelly. Place your pie crust on parchment paper and gently roll out so it’s not so thick. In a bowl, mix all other ingredients except jelly. Spoon the peach filling onto the center of the pie crust or spread in an even layer or a decorative pattern, leaving about two inches free around the edge. Fold the pastry over the peaches, overlapping the dough as needed and pinching as you go. Brush the top with jelly. Preheat the oven to 375˚. Bake 45-50 minute until nicely browned. Serve with a scoop of vanilla ice cream. *You can make this with apples, strawberries, blueberries, and a mixture as well.

Watermelon Sorbet

Cut half a watermelon into 1” chunks and freeze overnight on a baking sheet. The next day, place the watermelon chunks, 2 tspn. of lime juice, 1 tspn. of honey and 2 Tbsp. of warm water in a blender. Allow to sit for a few minutes to slightly thaw. Blend till smooth. You can eat the sorbet immediately, or transfer to a container and freeze for three hours. P.O.W.E.R. Magazine | 63

indy J. Brockman is a packer at Manpower Procter & Gamble (P&G), a manufacturing facility that produces and distributes consumer goods. In her role, she is responsible for packaging Dawn dish soap products and has also served in other departments at the tabler station at P&G including Swiffer, Bounce, and beauty customization. Prior to working at P&G, Cindy was a recreation assistant at Harmony Senior Services, where she helped in the memory care unit leading activities including exercise for individuals with memory impairments such as dementia and Alzheimer’s disease. She led activities for assisted living residents, held trivia games and ice cream socials, and arranged family gatherings. Cindy is the president of People’s First of the Eastern Panhandle, a self-advocacy group for special populations for persons with disabilities. She also serves on the Disabilities Developmental Council, advocating for individuals with disabilities and promoting self-advocacy. She is passionate about speaking out about overcoming disabilities. She received her B.S. in Public Recreation, Park Administration and Sports Management from Shepherd University in 2015. In her spare time, Cindy enjoys music, bicycle riding, and going to the beach.

What are some of the biggest challenges/obstacles you faced in your career? The biggest challenge I have faced has been transportation. I started my driving journey by paying for driving lessons. I took the permit test many times and was unable to pass the driver’s test at DMV until 2018. Getting my license was a huge step for me. I am grateful for the opportunities to drive around the country. Hence, I am thankful to be able to drive to my job and the support I have received when my car has broken down. How did you get started in your field/industry? I started when I was 16 years old by volunteering in Castle Rock, Colorado at Rock Park behind my house. I was part of POST Partners. One day while I was in high school, I was looking at college scholarships and stumbled across the 9Kids Who Care Award. My efforts led to helping Castle Rock being recognized for its parks and recreation in 2008. Additionally, in 2012 I went back to college a second time after completing three semesters from 2010-2011. I am forever grateful for the letters of recommendations from my high school teachers who wrote about me making a difference in recreation. This led me to change my major and motivated me to finish my bachelor’s degree in 2015. What advice would you give to other women in your field or profession to help them succeed? I would advise them to have a strong faith in Jesus Christ, our savior. If there are bumps in the road along the way and you need help, always seek help from your support system. Keep looking ahead. One of my favorite quotes I have said has been, “You can walk on that trail and say, ‘Oh, I did that trail.’” What does the word empowerment mean to you? Empowerment is giving someone a word of encouragement. It means to help a person by lifting them up. It means giving others encouraging messages and motivating them to have strength and the energy to get through daily life. The best part is making it to the finish line after successfully completing a task you never thought you could accomplish.

L

ynn Calvo is the CEO of Hula Hut Spirits. As a teenager, Lynn waitressed and bartended in the summers on Long Island’s east end. She would then head to the tropics to escape the bitter winters. While doing so, she met many interesting people of all cultures who inspired her to expand her own horizons and try local food and drink spots as opposed to the tourist attractions. Lynn enjoyed the simplicity and clean way of life they embraced and made it her own lifestyle as well. Lynn began designing restaurant concepts out west and designed her own as well. She continued traveling and enjoying other cultures for many years until her mother developed Alzheimer’s disease, at which point she moved back to Montauk to take care of her. In order to support her mother and herself, she created a new business model inspired by her lifestyle and the things that she loved from her travels. Her first creation was a mobile tiki bar called Lynn’s Hula Hut. In Lynn’s Hula Hut, Lynn created custom infusions for her clientele and provided beverages for events throughout the Hamptons and Montauk. After having an event at the Montauk Marine Basin, she was able to lease a piece of the property from the owner. She then got a special use permit and opened a bar at a marina that never had one before. In 2013, Lynn opened Lynn’s Hula Hut, a converted office trailer adorned with bamboo, set in the middle of a gravel parking lot on the marina. She brought in white beach sand and palm trees and created an island-like oasis with live music daily. There’s also a Zen den in a hidden room off the back with a large Buddha. People can relax on daybeds surrounded by tropical shade palms and Lynn’s collection of tribal masks and totems which she has collected over the years. Many people lease the space out for private events. In addition to the infused cocktails Lynn creates, she started infusing vodkas, rums, and tequilas with fresh fruits, herbs, and botanicals. She has been doing so for almost a decade. This exciting infusion of cocktails became what she was known for. As a result, she was approached to collaborate on a cocktail book. In 2016, “Tiki With a Twist” was released in the U.S., U.K. and Australia. It offers 78 tropical cocktail recipes. Shortly after the book was released, Lynn’s attorney suggested

that since she was getting so many write ups and so much recognition, that she should probably bottle some of her craft spirits. Thus, Hula Hut Spirits was born and distributed in New York. Unfortunately, six months later, COVID hit, and branding and tastings had to be put on hold. Hula Hut Spirits includes two vodkas, made from American corn, making them gluten free. Marjorie A. Graf M

arjorie Graf is the president and chairman of the board of directors of Graf & Sons Inc. which is a wholesale sporting goods store based in Mexico, Missouri. They sell sporting goods, hunting products, ammunition, shooting, and reloading materials on a national scale. Graf & Sons, Inc. was founded in 1957 by Arnold Graf, his wife Velma, their two sons Bob and Howard, and their spouses. What has become known as “The Reloading Authority” first started as a gasoline service station in Mexico, Missouri that sold boats, motors, hunting, and fishing merchandise. Bob and Marjorie Graf became sole owners of the business after the passing of co-founder Arnold Graf in 1972 and the retirement of Howard Graf in 1981. In 1986, Bob and Marjorie started to advertise across the board and began to sell internationally. In the beginning they shipped just 1,000-2,000 products a year but with the creation of their website, www.grafs.com, in 2001, the product lines expanded to fit the need. Today, Graf & Sons stocks over 20,000 products and ships both nationally and internationally by mail order, phone sales, and internet sales. The company has many extremely competent employees including Marjorie’s two sons who are also involved with the business. Marjorie specializes in finance and the overall operations. She also oversees the exporting side of the business, customer service, and sales. Previously, Marjorie served in sales and service at Mexico Refractories and Kaiser Refractories for over 16 years. In 2013, Graf and Sons Inc. was recognized by the Mexico Chamber of Commerce for their leadership in business, their retail business, and their philanthropy, and was honored at the 29th annual Commerce & Industry Appreciation Dinner. In January 2019, Marjorie received the Mexico Chamber of Commerce Presidential Award. Recently, she was the 2019 inductee “as an individual” into the Missouri Trapshooting Association Hall of Fame on May 17, 2019 at Linn Creek, Missouri. This was quite an honor as she has always enjoyed the shooting and hunting sports. Sadly, Marjorie’s husband Bob passed away in 2018. In her spare time, she enjoys family activities with her four children, five grandchildren, and 19 great-grandchildren. Marjorie also enjoys shooting, camping, hunting, fishing, cooking, and church activities. www.grafs.com

After Carol M. Baldwin won her own struggle with breast cancer in the early ‘90s, she made a commitment to help and support others facing the disease. Carol, along with her family, friends, a group of Long Island-wide breast cancer support groups and health professionals, formed The Carol M. Baldwin Breast Cancer Research Fund, Inc. The mission of the Research Fund was to provide money for researchers to learn more about the disease, and to ultimately find a cure. Her efforts got the attention of people of all ages to become more aware of the disease and the importance of annual screenings. In 1996, Stony Brook Medicine’s Carol M. Baldwin Breast Care Center was named in her honor. The Long Island Hospitality Ball has been a proud supporter of The Carol M. Baldwin Breast Cancer Research Fund over the past several years and we’re honored to continue her legacy at this year’s event!
