30 WAYS TO MAKE THE HOLIDAY SEASON MERRIER The holiday season is marked by various gatherings of friends and family, decadent foods, cocktails, traveling, and gift exchanges. The National Retail Federation says consumers will spend an average of $967 during the holiday season. However, the joy of the holidays also is about all of the memorable experiences that tend to make the season so beloved.

With that in mind, here are 30 ways to make the holiday season that much more merry: 1. Visit with an elderly or housebound neighbour and share conversation.

2. Donate toys to a children’s hospital.

3. Research the history of the holiday and share it with people you care about.

4. Make handmade Christmas tree ornaments.

5. Donate money to a charity or other good cause.

6. Encourage “pay it forward” movements in your community. Start by doing some thing simple like buying a coffee for a complete stranger.

7. Feed birds facing the cold, winter weather.

8. Take a ride or walk around the neighbourhood to look at decorated houses.

9. Make a fire in a fire pit in the yard and toast marshmallows while sipping hot chocolate.

10. Binge watch holiday movies.

11. Attend the concert of a children’s choir.

12. Help a friend decorate his or her home.

13. Host a tree-trimming party.

14. Schedule a day for baking cookies.

15. Sing Christmas carols at a nursing home.

16. Put together care packages of items and send them to troops overseas.

17. Share the holidays with a military family whose spouse is in service and can’t make it home.

18. Offer to shop for someone who is home bound due to age, a chronic illness or injury.

19. Visit a large city to look at Christmas window displays.

20. Buy and hang real mistletoe … and use it.

21. Make a new friend and invite him or her to a holiday party for the first time.

WRAP IT UP! GIFT-WRAPPING TIPS AND TRICKS

Much of the focus of each holiday season is on gift-giving, but all those gifts will eventually need to be wrapped. Stacks of presents just waiting to be covered with paper and ribbon can overwhelm gift givers, prompting them to put off wrapping gifts until the last minute. Hesitant wrappers with a pile of gifts to wrap can use these tricks to make the process go smoothly.

Find inspiration – Instead of looking at wrapping as yet another chore, try to envision how the recipient will feel peeling open the paper and finding the gift inside. Wrapping can be the prelude to the gift itself, and intensify the anticipation. The wrapping paper or style also may draw on aspects of the gift itself. For example, a knit scarf can be placed in a crocheted stocking.

Handle oddly-shaped items – Wrapping rectangular boxes can be a snap, but what about something that’s round or full of angles? Think about placing oddly-shaped items inside another item to make the shape

more uniform. Shoe boxes, coffee cans and even paper towel rolls can hold items. Then place the wrapping on these containers.

Cover prices – To enable easy exchanges or returns, do not cut off the price tags of gifts. Instead, place a festive sticker over the dollar amount, but leave the scan bar visible.

This way the gift recipient can return the gift with ease if necessary.

Keep supplies at the ready – Devote a bin or bins to wrapping supplies and tools. Having scissors, paper, tape, ribbon, and more in a designated spot will cut down on having to hunt and peck when it comes time to wrap.

Rotary cutters may be easier to use than scissors, especially when paired with a ruler.

Wrap on a firm surface – Devote a table or counter to wrapping gifts. This will keep the paper taut and neat and make it easier to cut and position. You risk tearing the paper or puncturing it when working on carpeting or bedding.

Colour-code gifts – It’s easy to visualize who gets what gift when each recipient has his or her own special wrapping paper. This is also a handy idea when wrapping gifts from Santa, as it will differentiate the Santa

gifts from the ones being given by Mom and Dad. And for those who prefer to skip the wrapping themselves, many malls and retailers offer complimentary wrapping for a small donation to charity. (MNS)

FAMILY’S LOVE OF CHRISTMAS INSPIRED SPARKLE TOUR

by Wendy Livingstone Saskatchewan has a richness of caring, artistic people who share their Christmas spirit with the community by adorning their homes’ exteriors with a multitude of lights and decorations each holiday season. A trip through many neighbourhoods provides a great experience of twinkling lights and delightful Christmas scenes. But, if you don’t happen to be driving on their street at that time of year, you might not even know the decorations exist.

In 2012, Regina resident Iann Gorrill and his wife, Shana, became aware of that issue when they wanted to take their two children out to view Regina residents’ Christmas displays. “[The children] were 8 and 6 then, so they were quite into the whole Christmas thing,” says Iann. The Gorrills found some newspaper articles and radio programs about some homes, but trying to guess where all the best decorations were was a bit of a hit-and-miss endeavour.

That’s when they decided to assemble a

compilation of the information that was available on residential Christmas displays.

“That first year, we combined all the lists and then built a website and social media,” says Iann. And thus SparkleTour.ca was born. Now, six years later, The Sparkle Tour Facebook page has approximately 2,000 visitors and the website has approximately 10,000 hits.

Each platform includes a map with a Christmas light bulb marking the location of a decorated home. The addresses are submitted by the homeowners themselves or by others who have noticed the decorations. A star denotes the “Best of the Best” decorations.

For the 2017 Christmas season, more than 500 addresses throughout the province were pinpointed on the Sparkle Tour maps.

With 373 of those addresses being in Regina, Iann hopes to see a broadening of the database to cover the entire province more thoroughly. “Even if it’s a single house in McLean, I’ll still add it,” he says. Each year, the previous year’s data is completely erased from the maps so that the informa-

tion is current, although many residents have their addresses added year after year.

There are no criteria to have one’s address placed on the maps. “The spirit of it is if you’re happy and you like your lights and want other people to see them, then we’ll put them on the map,” says Iann. “The only critiquing I do is the ‘Best of the Best.’ ” Two years ago, the Gorrills decided to offer a bus tour to eliminate driving for those who may have found that focusing on the road detracted from their enjoyment of the lights, so they chartered a school bus. Although it was a great success, one drawback of the school bus was that the windows tended to fog up in cold weather, obscuring the view. So, last year, they decided to hire a regular charter bus, and four evening tours of 40 passengers were completely booked up.

The fare is between $15 and $20 per rider to cover the cost of the bus, and the onehour-plus trip covers several of the best-decorated neighbourhoods in the city. Iann entertains riders with a Spotify playlist of

singalong Christmas carols, and some of the residences occasionally offer treats or hot chocolate, or Santa makes an appearance.

One of last year’s tours had an additional bonus: Amy Nelson, who was named the 2018 Entertainer of the Year at the Saskatchewan Country Music Awards, led the passengers in singalong Christmas carols, an experience she – and her fellow passengers – thoroughly enjoyed.

“It’s a fun family atmosphere – an affordable way to celebrate for all ages,” says Amy, who brought her five-year-old niece along on the tour. “You get to see the houses that are most-decorated – you don’t necessarily see them when you are driving on the main streets.”

COZY UP YOUR HOME FOR THE HOLIDAYS

by Wendy Livingstone Comfy chenille blankets, warm, glowing candles, and a touch of nature brought indoors: this year’s trend in Christmas décor reflects a desire for a cozy retreat from both the cold weather and the hectic pace of the holidays.

“It’s more about creating environments that are good for gathering and spending time together. Whether that be a homemade meal or just getting a group of friends together, there’s a much bigger focus on making an environment that you want to be in, and not just a tree,” says

Karen Van Duyvendyk, co-owner of Regina’s Dutch Growers. “People are helping to create memories with those items as opposed to a glittery tree that you don’t want to touch.”

She says that, often, when people decorate their homes for Christmas, they are choosing a palette based on the colours that make them happy rather than what someone else might think they should have.

“Pinks are really big in fashion for the winter, and they’re also really big for Christmas holiday decorating as well. It is a non-traditional colour, and I think that speaks more to people trying to create an environment that

they want to be in,” she says.

Dutch Growers Garden Centre includes a year-round ladies’ fashion department, so Van Duyvendyk has knowledge of trends in that industry also. She says styles and colour appear in home décor about 18 months after they are showcased by the fashion world.

“If people are looking to be on-trend, rose gold is really big. That’s one big trend that came right off the fashion runways, and certainly the use of coppers and rose gold in Christmas decorations is a definite reflection of the fashion items that we are seeing so popular in our boutique as

well,” says Van Duyvendyk. “That whole colour palette with little bits of iron and black – minimalist with those little pops of rose gold and pink – I love that. We’ve gone away from that shiny gold and shiny silver, and the metals have become very muted and more everyday. It’s taking ‘everyday’ and jazzing it up for the holidays.”

The Pantone Color of the Year also influences décor choices at Christmastime, and last year’s “Greenery” green has led to displays of beautiful tone-on-tone trees.

“You’ll see a green tree with greens and silver and gold. It gives that bringing-nature-inside kind of feel. The idea that winter

is stark and cold, and you can add life to it with greenery.”

Other inclinations this year include taking a step back in time by using traditional reds and greens and adding icy elements to trees to make them more sparkly. This can be done with acrylic items like icicles and snow flakes.

Van Duyvendyk has also observed that, regardless of other tendencies, blue decorations are always popular. “It seems we never have enough blue – every shade of blue. People seem to find that one difficult to find,” she says. To the delight of those with a fondness for blue, Dutch Growers is displaying a country-style tree that is a denim-blue colour, giving the effect of a blue jean tree.

This fun, colourful tree reflects a tendency for those who prefer artificial trees to select those that do not pretend to be real. “If they are looking at artificials, they are looking at tinsel trees or trees that are bright green or bright red, or that really step out of the box,” she adds.

But, during the past four or five years, fresh, live trees have been displacing their artificial cousins in many homes, as today’s

young householders display a strong appreciation for natural items. Even though live trees are often imperfect and asymmetrical, Van Duyvendyk believes these irregularities are what people like about live trees. “Those little elements of a live tree actually make them easier to decorate and they also add character. It allows you to be a little more creative – grouping ornaments together instead of just having them uniform throughout the tree. We do a lot more of that now than we ever did before,” she says.

This year, the cold, snowy weather made its first appearance in September. That could make this winter seem exceptionally long. “By the time Christmas comes, people will be cold and tired of the winter, so I think it’s going to be one of those years where they are really looking to entertain in their homes as opposed to going out, so creating an environment that’s cozy and inviting is sort of what the holidays are all about,” says Van Duyvendyk. “I think this should be the best year yet. There are just so many neat things coming in, so it should be a good holiday season.”

HOLIDAY DÉCOR TIPS Keeping special ornaments safe If you have precious Christmas ornaments that you are hesitant to put on the tree because you fear they may get broken, or if they just don’t match the colour scheme that you have planned for this year’s tree, display them in a piece of glassware, such as a vase or bowl, on the mantle or on the table. They can be on their own or with lights, and perhaps embellished with greenery and/or artificial snow, suggests Karen Van Duyvendyk of Dutch Growers.

Happy Hygge Hygge, which generally means creating a warm atmosphere and enjoying the good things in life with good people, is practiced in Denmark, where the winters can be long, dark and cold like as in Canada.

“There’s a huge focus on comfortable blankets, a warm fire, and candles, going all the time,” says Karen Van Duyvendyk of Dutch Growers. “It’s part of their culture that’s seeping into the rest of Europe. And, because of that, we are starting to get it over here in Canada now too.”

CRAFT YOUR OWN ORNAMENTS THIS SEASON Handmade gifts, trinkets and treats help make the holiday season special. Although cookies and other baked goods are some of the most popular homemade creations this time of year, gift-givers young and old can put their talents to use with various craft projects. Ornaments and decorations are one such idea. Here are some clever and, not-too-time-consuming craft projects to try this holiday season.

Mini sleighs: Create miniature replicas of Santa’s famous sleigh. Paint several popsicle sticks to form the main body of the sleigh and glue them together. Put one at the top perpendicular to the others to serve as the steering rudder. Two silver-painted popsicle sticks placed on their thin sides act as the blades of a sled.

Popcorn garland: Garland made of popcorn is a classic handmade holiday project.

For a new twist, toss the popcorn with food coloring and allow it to dry before stringing for some bright colour on the tree.

Photo ornaments: Print out several different photos that you love. Purchase round or

square thin wood pieces from a craft store and attach the photos with Mod Podge®.

When dry, drill a hole through the top and thread with twine.

Advent calendar: Make an Advent calendar to count down to Christmas by covering a foam board with fabric. Use paper tags or small ornaments and write a number on each for each day of the month. Hang these all from the board. As each day passes, move the tag or ornament to the tree.

Wooden snowflakes: Have children collect small twigs from outdoors, as well as holly leaves and some sprigs of evergreen.

Arrange similarly sized twigs in the shape of snowflakes and glue together, or tie with twine. Embellish with stickers, glitter, dried berries, and more.

Dough ornaments: Anyone can have fun molding their own ornaments, letting them dry and then painting them. Use cookie cutters to get perfect holiday shapes. Craft stores sell various types of modeling clays and lightweight modeling materials. Or,

make your own salt dough.

Reindeer bottle topper: Put to use any wine corks you have lying around. Attach googly eyes and a small fuzzy nose to the front of a cork. Insert twisted, brown pipe cleaners to make the antlers up top. Add

ribbons, small snippets of faux fur or any other extras you desire.

Sweet sentiments: Use old Scrabble® letter tiles to form a favourite holiday phrase, like “Joy to the World.” Glue the tiles together and hang from the tree on a piece of ribbon. (MNS)

HOLIDAY TRAIN RAISES MORE

THAN SPIRITS

Canadian Pacific Railway’s (CP) Holiday Train is the engine that not only could, but does, help feed communities across North America. This year, the program celebrates its 20th year.

Travelling more than 100,000 km each year, the two holiday trains – one in Canada and one in the United States – raise more than Christmas spirits as they chug across each country. At each stop, musical entertainment greets local residents and donations are gathered for area food banks.

Last year, it’s estimated that more than $1.5 million and 300,000 pounds of food were raised for local food banks and food shelves. Everything raised in each community stays in that community, and CP also makes donations at each stop.

In Regina, the CP Holiday Train will stop tonight (Dec. 5) from 7:30 to 8 p.m. at the old Mosaic Stadium parking lot.

On Saturday, Dec. 6, the train will proceed to Moose Jaw, at 3 Manitoba St. W., just west of the CP Station.

Entertainers on board for both days will include Terri Clark, Sierra Noble and Kelly Prescott.

Moose Jaw, with its long history as a railway centre, is still a major hub for CP, and the Holiday Train is an important contributor to the Moose Jaw and District Food Bank. Last year’s Holiday Train stop netted a total of more than 5,260 pounds of food, as well as more than $900 in cash donations, in addition to a $10,000 donation

from CP. “The attention the Holiday Train brings to the issue of hunger and the needs of food banks is almost as valuable as the money and food,” says Moose Jaw manager Terri Smith. “I can’t thank CP enough for them to be aware [of the issue]. In Canada, no kid should go hungry; no adult should go hungry, but they do.”

The Holiday Train program began 20 years ago as a CP employee initiative, and the two special trains have raised more than $14.5 million and 4.3 million pounds of food since their inaugural journeys back in 1999. “The momentum we see in the Holiday Train from year-to-year reinforces the good that we, and our partners at the food banks, are doing across North America,” Keith Creel, CP President and CEO said in a news release.

Each Holiday Train is about 1,000 feet long, and is made up of 14 rail cars decorated with hundreds of thousands of technology-leading LED lights and holiday designs. Each has one modified boxcar that has been transformed into a travelling stage for performers, this year featuring Terri Clark, Kelly Prescott and Sierra Noble.

The concerts are free, but attendees are encouraged to make a donation to the food bank — either a non-perishable food item or a cash donation.

The CP Holiday Train program is not the only way that CP gives back to food banks. CP also provides Food Banks Canada $250,000 worth of in-kind transportation services to support its National Food Sharing Service

program. Since 2011 CP’s contribution has helped transport over 17 million pounds of food and household goods to food organizations across Canada.

But, during the holiday season, it’s the brightly-lit Holiday Train that draws the crowds.

The arrival of the Holiday Train is eagerly awaited by everyone, including the Food Bank staff, volunteers and clients, says Smith.

“It’s something we look forward to every

year — bundling up and going down to the Holiday Train. It’s a sense of togetherness; a sense of teamwork, when everybody can get together and help your fellow neighbour or your fellow co-worker,” she says. “It’s nice to know that we have each other’s back.”

It’s the Christmas spirit and the Saskatchewan sense of community all wrapped up into a heartwarming bundle of Yuletide joy.

GO FOR THE GLAM THIS HOLIDAY SEASON!

by Wendy Livingstone The holidays will soon be here, and there’s no better time to look your most amazing than during the year’s biggest party season.

“We don’t get a chance to dress up all the time, so, when we get the opportunity, we should take it,” says Teagan Barnes, business partner of Nadia Williamson, owner of NWL Contemporary Dresses. The stylish boutique is located in the heart of downtown Regina.

Barnes says this year’s festive wear will include lots of jewel tones – like navy, burgundy and wine – lots of velvet, and “of course, lots of sparkles and sequins.”

She believes there’s no such thing as being “too dressy,” and feels that erring on the side of overdressing is much better than underdressing. “For us, honestly, overdressing is never a bad thing. Sometimes, you feel uncomfortable if you are not dressed to the level of everyone else, but if you are overdressed, it doesn’t seem like such a faux pas. You can kind of set the standard,” she says. “It’s also fun!”

Cocktail (knee-length) and full-length styles are both popular this year and, although Barnes expressed a preference for long dresses, she says either can work well, depending on individual preferences.

“There are a lot of dresses that are long that are versatile for the holiday season that you could dress down and wear to a different occasion, although, cocktail length is always a good option too,” she says. “NWL has options that are a little more fancy and others that can be dressed down.”

To create a different look for myriad occasions, Barnes suggests that a change in hairstyle can dress an outfit up or give it a more casual look. Also, adding an item such as a bolero or blazer, or pairing it with tights or accessories, can set a different tone or take it into the next season. Her jewelry of choice is often an earrings and bracelet combo. She usually shies away from necklaces, since the necklines of dresses can be quite embellished. “We are kind of minimal when it comes to jewellery here,” she says.

“Less is always more, but it’s all about the

person wearing the dress, too.”

The best time to shop for holiday dresses is early December, when the stock is at its peak: this season’s new dresses have all arrived and a few have already been snapped up.

When you are ready to make an appointment for a fitting, allow an hour to try on a variety of styles and colours. BAKE UP SOME SWEET HOLIDAY MEMORIES

by Wendy Livingstone One of the great pleasures of Christmas parties and get-togethers is the joy of sampling from an array of delightful, home-baked goodies that have been specially prepared for the occasion. But that tray of dainties, cookies, cakes and tarts and those delicious dessert pies don’t just magically appear as the holiday season rolls around – someone has likely spent hours in the kitchen, lovingly preparing them for family and friends that may stop by. Christmas is such a busy time – how does anyone ever find the time to bake, with everything else that’s going on, and not end up loathing the holidays?

Mila Vuckovic, who, along with her husband, Dragi, prepares dozens of pies, dainties, cookies, breads, cabbage rolls, perogies and meat pies each week for Regina’s Farmers’ Market, has offered some hints on how to get the most out of the time spent in the kitchen.

Although she works in a large, wellequipped, government-inspected kitchen in a building that’s attached to her home, and produces items on a much larger scale than does the average household cook, there are lessons to be learned from her organizational system.

The Vuckovics grew up in Serbia, and that’s where Mila learned her way around the kitchen. From her homeland, she brought memories, recipes, a desire to create a better life for her children and a strong, endearing Serbian accent.

She believes that all the baking should be fresh, not frozen, so she feels she must prepare all those items in the two days prior to the Farmers’ Market. “When I grew up, we didn’t even have a fridge, so we always make today what you are going to eat today. To me, it’s not right when you freeze,” she says.

“Everything changes when you freeze it.”

The only items that are prepared ahead of time and frozen are cabbage rolls, perogies and meat pies.

Everything is made from scratch, including pie crusts and fillings. Mila begins the day by preparing 30 to 60 (nine different varieties) pies for the oven. While they are being baked, she begins work on more than 60 dozen squares and dainties. They are next in line because they take some time to cool before they can be packaged. While she works on them, the eggs for her next project, 110 dozen cookies, rest on the counter to warm

to room temperature. Then, it’s time to make the cookies.

When Mila’s day is done, Dragi begins his workday in the kitchen at 1 a.m. and makes about 60 dozen cinnamon buns. He then delivers some of them to restaurants at 5 a.m. to fulfill their orders while the rest cool for packaging.

Mila wants the yeast breads, such as sourdough, white bread and poppy seed, to be as fresh as possible, so she waits for the day before market – once Dragi is finished working in the kitchen – to begin mixing and hand-kneading them, allowing them to rise, and then baking them. These items are also made according to a pre-planned schedule: “In the morning, when we start with the dough, I start with the sourdough, and then right away I go to poppy seeds, because poppy seeds take a long time to cool down and then I go with the rest of the breads,” she says.

Although she still works with recipes that she used in Serbia, she has had to make some adaptations, in particular because some ingredients are different in her adopted country. “Back home, our poppy seed is not hard like here. You can just pre-soak it and work with it, but here you have to grind it because I think it’s old, or something is different. It works very different with the recipes,” she says.

Her choice of work surface for the yeast breads, in fact all her baking, is a bamboo countertop. “It’s the best for the dough — the dough stretches nicely and evenly. I love it — it doesn’t soak up smells, and it’s easy to clean and look after,” she says. Because bamboo is a hardwood, it doesn’t gouge easily and therefore doesn’t easily harbour bacteria.

So, what is Christmas like in the Vuckovic household where Christmas-style baking is an everyday event? The family is Serbian Orthodox so, like others who abide by the Eastern Orthodox faith in Ukraine, Russia, Georgia, Macedonia, Montenegro and Jerusalem, they celebrate Christmas on January 7.

“Thanks to God, my family’s pretty big: I have three kids of my own and I have seven grandkids and five great grandchildren, and they all come here for Christmas Eve. We enjoy a traditional dish called pita (a hand stretched dough stuffed with a variety of filling options including feta cheese, ground beef and sour cabbage. Of course, there’s no room around the table,” she says. “On

Christmas Day we gather at my daughter Tina’s house where we eat, laugh and watch the small ones open gifts. I love the Christmas, don’t get me wrong, but it’s become too much. But we are together, so that’s what is important.”

Even if you don’t plan a Christmas get-together or baking project at the same scale as the Vuckovics, it’s worthwhile to make a logical plan of action for time spent working in the kitchen. Then, turn up your favourite tunes, tie on an apron, find a good recipe to

follow, and bake up some fantastic treats to serve at your next house party. Who knows, you might be baking up some precious memories.

Although Mila works with recipes that are mainly in Serbian and from memory, she has agreed to translate and share the directions for one of her most in-demand items. She says, “It’s very popular with people with diabetes because there’s barely any sugar. It has oats and dates, so it’s a very healthy recipe.”

Mix all together to form a soft dough. Do not mix the margarine and brown sugar together first, because that will create soft cookies.

You want it to be crunchy so that the cookies will stay firm when the date filling is inside.

Flour the table, roll out the dough with a rolling pin to ¼-inch thickness and cut with a two-inch circular cookie cutter. Bake at 350 F for 10 minutes.

When cool, spread with date filling: 500 g dates, chopped 2 Tbsp. white sugar 2 c. water Cook together on the stove until very soft (a little thicker/firmer than jam). Allow to cool, spread on half the cookies, and then top with the remainder of the cookies. You will have some dates leftover to use in another recipe.

TO EMBRACE

The holiday season is a special and spiritual time of year. It can sometimes be easy to get lost in the more commercial aspects of the holiday season. For those who want to focus back on the spiritual side of this special time of year, the following suggestions can help in those efforts.

Share the story of Christmas. The Gospels of Mark and Luke offer differing accounts of the birth of Jesus Christ. Both indicate that Jesus was born to Mary, who was engaged to Joseph, a carpenter. Mary became pregnant through immaculate conception, as she was a virgin when visited by an angel who informed her that she was to carry God’s son. At the time of Christ’s birth, all Jewish people had to be counted

by Roman soldiers for tax purposes. That required people to return to their places of birth. As a result, Mary and Joseph set out on an arduous journey to Bethlehem.

Upon arriving in Bethlehem, inns had no vacancies, but Mary and Joseph were

given shelter in a stable where Jesus was ultimately born.

Attend Mass. Churches traditionally hold religious services on Christmas Eve and Christmas. These services are joyful expressions of faith, music and community spirit.

But Christmas mass is not the only time to head to church. During Advent, the fourweek period preceding Christmas, Catholics prepare and repent. Advent calendars help count down the days until Christmas.

Set out a nativity scene. Make a nativity scene the primary focus of Christmas decorations and encourage children to play with the figures and act out the Christmas story.

Focus on gifts for good. Families can focus their energies on faithful endeavors and the spirit of giving that’s synonymous with the season. Do good deeds for others, embrace peace and love and share special time with others.

Sing carols. Spread the holiday spirit through song. Get together with a group of friends or neighbours and go door-to-door,

CHRISTMAS TREE

by Hilary Klassen This holiday season, a splendid Christmas tree in a pristine Saskatchewan winter landscape is waiting to be chosen by you.

Bundle up, grab your family and a thermos of hot chocolate, and head for the woods for an adventure you won’t soon forget!

Harvesting a real holiday tree to beautify your living room can be an eco-conscious way to celebrate the season. You can cut trees in designated areas that would soon be cut anyway.

Make a day trip to Prince Albert National Park (PANP) and combine your tree harvest with other activities like snowshoeing, cross-country skiing, skating, cooking food in a kitchen shelter or ice fishing, all while absorbing the beautiful landscapes of PANP. This year marks the third annual Christmas tree harvest in PANP. It’s an initiative that serves a greater purpose. “The Christmas tree harvest raises awareness of PANP’s wildfire risk reduction strategy. Cutting small trees from the fuel break helps maintain it,” says Lisa Risom, media officer with PANP. Fuel breaks are cleared swaths of land of varying widths that help keep forest fires from spreading. But young spruce and pine trees grow back and reduce the effectiveness of a fuel break.

“Many of these pretty coniferous trees would make great Christmas trees,” says Risom.

Permits are free and available at the Visitor Centre in the town of Waskesiu. Last year, 205 tree permits were given out and in 2016, 94 permits were issued. December 15, 2018 marks a free day to enter the park, which coincides with part of the three-day “O Christmas Tree Festival” hosted by the Waskesiu Wilderness Region.

Outside the parks, an additional alternative for responsible tree harvesting is to cut trees from various right-of-ways in the province.

“We suggest that people who want to cut a Christmas tree for their own use go along highway right-of-ways, road right-of-ways and power line right-of-ways,” says Bruce Walter, an area forester with the Saskatchewan Ministry of Environment Forest Service Branch.

No permit is required since those trees are likely to be chopped down at some point anyway as part of regular maintenance.

TREE HARVEST GUIDELINES Prince Albert National Park • A permit to harvest a Christmas tree must be acquired and displayed on the dash of the vehicle • Trees must be cut down within the Christmas tree harvest zone shown on the map provide with the permit.

• Trees must be accessed on foot • Trees must be cut down with a handsaw or axe; chainsaws are not permitted.

• All-terrain vehicles are not permitted. Bring a sleigh or toboggan to haul the tree to the road.

• Pack a first aid kit, extra mittens, dry socks, and a trail guide.

white spruce or the balsam fir trees. For a nice Charlie Brown Christmas tree, the jack pine could work out well, Walter says. “For balsam fir you definitely have to go into the northern provincial forest, north of Christina Lake, north of Prince Albert near Candle Lake and north of Big River. The forest that we have around Prince Albert doesn’t have any balsam fir in it.”

White spruce, however, can be found around Prince Albert as well as the northern provincial forest. There is some white spruce in the Nisbet Forest which includes the area past Duck Lake on the way to Prince Albert.

White spruce and jack pine are also found in the Fort Alacorne Forest east of Prince Albert and north of Melfort.

People who want to harvest trees from road, highway and power line easements for commercial purposes do need a permit and can contact the Ministry. Trees may not be cut in plantation areas where the Ministry is

growing future forests.

“These are areas scattered throughout all of our provincial forests that have been harvested over the years. Trees are quite young in these regenerating cut-overs and in many cases we have actually planted the trees,” says Walter.

The Ministry has a height restriction of four metres. Trees taller than that are not to be cut. That’s about 13 feet, and most people don’t need a tree that size. They also ask that people leave stumps as low as possible and leave any severed limbs or ‘slash’ in the forest on the edges of the right-of-way.

If you suffer from ‘nature deficit disorder’ a trip to harvest a tree should go a long way toward recovery. Find the wilderness, bask in the glistening sun, leave your footprints in the snow, charge up the memory banks and find that special tree with your name on it, that will mark some wonderful in your holiday season. Besides, the bears are hibernating.

TREE CARE TIPS Ministry of Environment • The cut tree will be frozen. Keep it frozen until you want to bring it in.

• When you’re ready to bring the tree in, slice about two inches off the bottom to get a nice fresh cut before it enters the warm house.

• Set the tree up away from heat sources, otherwise the heat is going to dry out your tree.

• Your tree stand should be able to hold about three to four litres of water – enough to keep the tree well hydrated for several days.

FINDING YOUR CHRISTMAS BUBBLY

by Darren Oleksyn With lights twinkling on the tree and snow glistening outside, Christmas is the perfect time to pour some sparkles into your glass with sparkling wine.

Bubblies – synonymous with celebration – pair perfectly with the festive season and its office parties, weekend gatherings and family get-togethers. There truly is something for everyone and every occasion.

While sparkling wines are a great aperitif and are the traditional choice for New Year’s toasts, they are also great food wines, especially the higher-acid, drier versions. A wine with a solid backbone of acid can hold its own with fatty, creamy dishes, a wide assortment of cheeses, fish and oysters and lighter cuts of meat such as pork or poultry.

Here are some bottles that would go well with a casual gathering, formal dinner and, of course, under the tree.

AMP UP THE INFORMAL OFFICE PARTY The Italian bubbly Proseccco, produced about an hour’s drive north of Venice, is a great party favour. Made predominantly from the grape known as Glera, Prosseco is light, fruity, and frothy in the mouth, with soft acid and often a kiss of sweetness. Flavours often include apple, pear and flowers like orange blossom.

The bubbles in Prosecco are made using what’s called the tank method. A still white wine is put into a large tank and then sugar and yeast are added. The yeast feeds on the sugar, starting what’s known as a secondary fermentation. The fermentation creates carbon dioxide.

Because the tank is sealed, the gas can’t escape — instead it becomes the beautiful bubbles in your glass.

Proseccos generally cost from $16 to $30. Some tasty brands to look for include LaMarca, Mionetto, Cinzano and Ruffino.

BE THE COOL CHRISTMAS DINNER HOST While Champagne is a premiere food wine, its cost can be prohibitive. But never fear, great sparkling wines are made all over the world in the same way as Champagne.

The thing that makes these wines special is the secondary fermentation. Instead of happening in a tank, like Prosecco, the bubbles of traditional-method wines are formed in individual bottles. This adds more complexity to the wines, making them a great choice for the family meal.

Spain produces outstanding traditional-method sparkling wines known as Cavas. Generally from vineyards around Barcelona, Cava relies in large part on Spanish grapes Macabeo, Xarel-lo and Parellada. The wines are dry, fresh and fruity, with

flavours of green apple, pear, light cherry and cantaloupe.

At prices similar to Prosecco, look for brands such as Freixenet, Villa Conchi, Pares Balta and Segura Viudas (the latter two are special orders at the Co-op).

Canada’s cool climate also makes it an ideal spot for sparkling wine. Generally more expensive than Cava, Canadian traditional-method bubblies often use the traditional grapes of Champagne — Chardonnay, Pinot Noir and Pinot Meunier — and feature zesty acidity. Lemon, green apple, chalky mineral, anise, blackcurrant leaf and cherry are flavours to look for.

Blue Mountain Vineyard and Cellars, Summerhill Pyramid Winery, Gray Monk Estate Winery and, from Nova Scotia, Benjamin Bridge, make great sparklers. Check with your nearest private liquor store about availability.

WOW THE WINE LOVER If you want to leave something really special under the tree for your significant other, you can’t go wrong with Champagne.

A traditional-method bubbly produced only in a small region east of Paris, topnotch Champagne delivers sublime depth, complexity and vibrant acidity, thanks in large part to the cool weather and chalky limestone soil.

Champagne houses generally produce two types of wine — a non-vintage sparkler that mixes wines from many years — and a vintage wine, where the grapes only come from one harvest. Both are very, very good.

Non-vintage Champagnes cost between $50 and $90, while vintage bottles start north of $100 and keep going up and up and up.

For a great gift without taking out a line of credit, look to wineries such as Taittinger, Veuve Clicquot, Moet & Chandon and Piper Heidsieck. The flavours include brisk lemon, tart green apple, flint, smoke, blackcurrant, light cherry, oyster shell, or fresh baked bread.

MANY CHRISTMAS TALES FEATURE GHOSTLY CHARACTERS

by Andrew Livingstone Christmas has long been a time of warmth and togetherness, an opportunity for us to reflect on feelings of love, charity, fraternity ... and spine-tingling terror? Strange as it may seem to us now, Christmas in the English tradition used to involve a generous helping of horror in the form of Yuletide ghost stories and seasonal spooks.

The hints of what was once a popular tradition are subtle and often missed. In “It’s the Most Wonderful Time of the Year” from 1963’s Andy Williams Christmas Album, we’re told that, after toasting marshmallows and caroling out in the snow, “There’ll be scary ghost stories/ And tales of the glories/ of Christmases long, long ago.”

So, if everyone is supposedly telling you to “Be of good cheer,” why would anyone associate such a light-hearted holiday with supernatural dread? It isn’t difficult to imagine why our ancestors might have felt a growing sense of unease with the approach

of the solstice. As autumn gives way to winter, the nights grow longer, the days grow shorter, glittering flakes begin to fall from grey skies, and cold gusts groan through skeletal trees.

The world seems weird and deathly, and we can forgive ourselves for wondering if the veil between the world of the living and the world of the dead is fraying in the frosty winter winds. Certainly, our ancestors believed just that: magical phenomena were expected to multiply as the solstice drew near, and that made stories of the supernatural chillingly plausible.

Hundreds of years ago, some of the greatest writers in the English tradition, such as Christopher Marlowe and William Shakespeare, called such stories of the supernatural “winter’s tales.” Shakespeare even wrote a “Winter’s Tale” of his own, though he couldn’t decide whether it was meant to be a sad story or a miraculous one. This conflict between the light and dark themes of winter’s tales survives even in the Christmas

tradition of gift-giving, which often pairs a friendly and generous spirit like St. Nicholas or Father Christmas with a hostile and punitive being like Krampus, Knecht Ruprecht, or the Whipping Father.

After many years of government opposition to the frivolity of Christmas, Charles Dickens entered the literary scene. Dickens, who lived through a mini-ice age during his childhood that culminated in “The Year without a Summer,” wanted to rekindle interest in Christmas not only by reviving its values of warmth and redemption in even the most frigid times, but also by resurrecting its supernatural traditions. So, in 1836, he published “The Story of the Goblins who Stole a Sexton,” a short story that featured a cantankerous and bitter man who is spirited away by goblins on Christmas Eve. The creatures show him a series of scenes that inspire him to change his ways and reconnect with his fellow man. Seven years later, Dickens expanded on that basic plot in “A Christmas Carol,” which swapped the

goblins of the previous story for a host of ghostly visitations.

“A Christmas Carol” was a success, and Dickens’ imitators, many of whom were competent and respected authors themselves, created a flood of Christmas ghost stories in the late 1800s and early 1900s.

Although those stories were typically read aloud at Christmas, many of the authors felt little need to otherwise link their tales to Christmas themes, and they didn’t necessarily understand that their ghosts were a continuation of a much older genre.

Now, as even the most engaging of the Victorian stories fades into obscurity, only “A Christmas Carol” remains as a shining example of a terrifying tradition that stretches back into time immemorial.

STAY SAFE WHEN STRINGING HOLIDAY LIGHTS Lighting displays are one of the many things that help make the holiday season a special time of year. Often awe-inspiring, holiday lighting displays present a perfect opportunity for communities and individuals to showcase their festive sides.

Safety should always be a priority when stringing holiday lights both inside and outside a home. The National Fire Protection Association notes that, between 2009 and 2014, fire departments in the United States responded to an average of 210 home fires that started with Christmas trees per year. Lighting displays strung on home exteriors also can pose safety risks if homeowners do not exercise caution.

Fortunately, various strategies can help homeowners safely decorate their homes’ interiors and exteriors this holiday season.

Choose a fresh tree. The NFPA recommends celebrants who prefer natural Christmas trees choose ones with fresh, green needles that do not fall off when touched. Dry trees are more likely to catch fire than freshly cut trees. Adding water to the tree stand each day will keep trees fresher longer. When placing the tree, avoid placing it too close to heat sources, making sure it is at least three feet away from fireplaces, radiators, candles, heat vents, or lights.

Check all lights before stringing them. All lights, including those going on trees inside a home and those being strung outside, should be inspected prior to being strung. Look for any worn or broken cords and replace any defected lights.

Use LED lights. LED lights use 90 per cent less energy and last ten times longer than traditional incandescent light bulbs. LED lights are perfect for indoor and outdoor decorating.

Employ the buddy system. When stringing lights, always work with at least one other person. This makes it safe for homeowners who must climb ladders to string lights on especially tall trees and/ or on their home exteriors.

Avoid working in inclement weather. The weather during the holiday season can sometimes be unpleasant or unpredictable. Check the forecast before stringing exterior lights to ensure Mother Nature won’t pose a threat. Avoid hanging lights if the forecast predicts wet, icy or windy conditions that can make ladders unstable.

by Renee Kohlman Some of my sweetest Christmas memories are of Mom bringing out butterhorns from the freezer at Christmastime. We’d enjoy them with our breakfast and a good coffee, and I could barely wait until they had lost their chill before biting into one. When I was a grown-up and living away from home, Mom would send me off with a container of butterhorns when I travelled back to my apartment in Edmonton, and I cherished each and every one until they were gone.

What makes butterhorns so special? The sweet yeast dough is rich and soft, and yes, it’s buttery and light. The vanilla drizzle complements the butterhorn ever so well, and once you eat one, you can’t wait to grab another. This recipe is a two-step process, with the dough needing to be refrigerated overnight.

The next morning, you’re good to roll! Mom says she clipped this recipe out of The Western Producer years ago, and over the years we’ve made adjustments. I’m so glad I’m able to pass it along to you now.

BUTTERHORNS WITH VANILLA DRIZZLE 3 cups all-purpose flour, plus more for dusting 1 tsp salt 1 cup unsalted butter, softened and cubed 1 cup whole milk 2 large eggs, at room temperature 1 Tbsp granulated sugar 1 pkg active dry yeast (about 2½ tsp) VANILLA GLAZE 2½ cups icing sugar 1/4 cup whole milk 2 tsp pure vanilla extract

1. To make the butterhorns, mix together the flour and salt in a large bowl. Cut in the butter using a pastry blender, mixing it well, but leaving some pea-sized bits of butter. Heat the milk in a medium saucepan over medium-high heat just until it begins to steam.

Remove the milk from the heat and let it cool just until it’s warm to the touch. Mix the eggs and sugar into the warm milk and stir in the yeast. Let this stand, uncovered, for 10 minutes. Stir the yeast mixture into the flour mixture and mix until a soft dough forms.

Cover with plastic wrap and refrigerate overnight.

2. The next day, remove the dough from the fridge and lightly dust your countertop with flour.

Line 3 baking sheets with parchment paper.

3. This dough is best rolled cold. Cut the dough into 3 evenly sized pieces and shape them into balls. Roll each ball into a disc about 1/8 inch thick and about 10 inches in diameter. Cut each disc into 8 triangles.

Roll each triangle tightly, from the wide end to the point. Place seam side down, about 3 inches apart, on the prepared baking sheets. Cover them lightly with wax paper and let them rise for 2 hours in a warm, draft-free spot.

4. Preheat the oven to 375°F. Place the rack in the lower third of the oven.

5. Bake each sheet, one at a time, for 15–20 minutes, until the butterhorns are a nice golden brown on the top and bottom. Remove the pans from the oven and let them cool on a wire rack for about 13 minutes while you make the glaze.

6. To make the glaze, whisk together the glaze ingredients in a medium bowl.

7. Once the butterhorns are barely warm, drizzle the glaze over them. I find a fork works really well for this.

8. The butterhorns will keep in an airtight container for up to 2 days at room temperature, or can be frozen after they are glazed for up to 1 month. Makes 24 butterhorns.

Note: Finely chopped toasted walnuts or pistachios can be sprinkled on top of the glaze for extra deliciousness.

IT’S THE MOST LAID BACK NEW YEAR’S EVE PARTY EVER

by Andrew Livingstone “You could bill it as our biggest non-event of the year,” Grant Frew says. He’s the bar manager of the Bushwakker Brewpub, and even he seems baffled by the success of the company’s “Nothing for New Year’s” tradition.

The upcoming New Year’s Eve will mark the 13th time that the Bushwakker has eschewed entertainment, noise-makers, escalated drink prices and loud music for a quiet and simple evening. “I told the band they have to stay home: we don’t want them, because it’s Nothing for New Year’s,” Frew said. “Actually, by midnight, a lot of people have gone home.”

That isn’t to say that the occasion isn’t popular. Indeed, the brewpub makes an exception to its usual policy against reservations during Nothing for New Year’s. “They have to be proactive in that they should make a reservation, because we’re quite busy between six and nine o’clock,” said Frew.

No one expected the idea to be a hit. “It was 14 years ago that the general manager said to me that she didn’t want me putting on medieval feasts, and hiring bands, and doing great, big, fancy buffets,” said Frew.

“She said it was too much work, and she just wanted to have a year where we did nothing.”

Fortunately, Frew knew how to frame the non-event. “I thought, ‘Well, I’ll sell it as being Nothing for New Year’s,’ and I had posters made up with balloons on them, and sparkles, and razzle-dazzle, and they listed all of the things that we were not going to be doing,” he said. “Much to my surprise, we were absolutely packed the first year we did it. So, given the fact that it was such a wonderful response, and it was so easy to do, we’ve just been continuing that tradition.”

That response has not prompted the Bushwakker to cancel the rest of its celebrations, and this December will be a typically eventful one for the brewpub. It has already held its Blackberry Mead release, and it plans to release its Christmas Barley Wine on Dec. 8 before diving into the Yuletide season with several holiday-themed concerts.

On Wednesday, Dec. 12 at 8 p.m., the Regina Male Voice Choir (Canada’s longest-continuously-operating male voice choir) will perform a one-hour Christmas concert that features a festive severed head. “They do something called the Boar’s Head Carol, which is an old English carol, and, when they sing that carol, they actually have a great,

The following Wednesday, Dec. 19, will trade taxidermy for period costume, as the Dickens Yuletide Singers perform from 8 to 9 p.m. “They appear in Victorian dress,

and they sing your classic sort of Christmas carols,” said Frew. “That’s something that people can sing along with and get into the Christmas spirit.

“Following that, we’re going to do a Boxing Day Blues Bash on the 26th, and that’s with a band called Call Me Mildy. They’ll be performing from 8 until 10:30.”

With all of the festive options available, why do people consistently make Nothing for

New Year’s a success? “They said that they just really appreciate the fact that there’s not a lot of pomp and circumstance,” Frew said. “They just want to have a more low-key, laid-back, relaxing, comfortable, quiet New Year’s Eve. “We’re big on tradition, so, if we find that something is working, we end up making it an annual event,” said Frew. “I almost feel guilty about how successful it is.”

by Andrew Livingstone If you feel like you’ve spent too much time indoors this holiday, eating turkey and sweets, then you may wish to get into the fresh air and participate in the Christmas Bird Count on Dec. 29. It’s an annual opportunity to connect with nature and even play a role in protecting it.

The tradition is over a century old. “The Christmas Bird Count is actually a count by the Audubon Society that began back in 1900, where they sent people out to count birds rather than the tradition that existed at the time, where they went out on Christmas Day and killed as many species of birds as they could,” said Brett Quiring, the compiler for the event. “So, it was trying to take that behaviour and make it a little different.”

In adjusting the existing tradition to make it more supportive of conservation, the bird count became a hit and eventually took hold in Saskatchewan. “That event grew,

and grew, and grew – I believe that we had a couple of attempts at a Christmas bird count in Regina in the 1940s, and we’ve been basically doing them solid at least from 1957,” Quiring said. “This would be our 61st one that we’ve completed.”

The event can be held any time between Dec. 14 and Jan. 5, and the Regina count organized by Quiring comprises three subcounts, which operate from Regina, Craven and Balgonie.

Although absolute population numbers are impossible to assess, the number of birds per party hour is used to track changes in bird populations. “This allows us to assess wintering habitat and how birds are doing on their wintering grounds,” said Quiring.

“Across Saskatchewan, we have between 90 and 100 counts per year, so this is part of a much larger one.”

By contacting Quiring, prospective participants can coordinate their efforts with the larger event or receive a group assignment.

“Generally speaking, we will get between 40 and 50 people participating,” he said. “Some of them are just watching their feeders and letting us know what comes in that day, but I would say we usually have 30, 35, maybe sometimes 40 people that will go out and walk parks or walk back lanes trying to find birds, or even drive around the rural areas around the city.”

Quiring himself accompanies the group that meets in front of the Legislature. “If you decided to show up that day, that’s where you go,” he said. “We walk around the Leg, and we walk around the park there, and we may go down to the U of R at some point … most people will come back to my house, we have a quick lunch, and then we go out again in the afternoon for those who want to.”

Though the weather is a variable, participants enjoy the opportunity to connect with nature in general and with birds in particular.

“Generally, you have some interest in birds, but the birding skill level will vary wildly,”

Quiring said. “There’s at least one [birder] that’s really good with each group.”

Participants feel additional satisfaction in contributing scientific data that can play a role in policy decisions. “I’m not a professional biologist, although some of the people that come out with us are,” said Quiring.

“These sort of projects I like because what I find gets submitted – it becomes part of the data collection of information about birds that can be used for a purpose – to assess population strength or whatever.

“At Christmas Bird Counts, we also count mammals, which makes us fairly unique …

Several years ago, when they were talking about coyote populations, and the government was talking about a bounty, the only data set they had to assess coyote population was our count. It’s both a way to produce information that’s valuable, and it’s a community-builder.”

MAKING NEW YEAR’S EVE A FAMILY EVENT

by Andrew Livingstone The traditional New Year’s Eve party can be attractive for parents, but it isn’t exactly kid-friendly. So, the Saskatchewan Science Centre is holding its annual Noon Year’s Eve event to allow parents to celebrate the New Year with their children before any late-night revelry begins.

Fun and education will be the focus of the festivities, but with a New Year’s flavour, said Ryan Holota, a spokesperson for the Science Centre: “We still do our countdown – we call it the Big Bang Stage Show – but we count down until noon instead of until midnight.”

The event will begin at 10 a.m. on December 31 and continue past the noon countdown until 4 p.m. “It’s considered a special event, so there is a special admission rate for the day, but it includes a whole bunch of extra stuff,” Holota said.

Central festivities will include the Big Bang Stage Show and other special stage shows throughout the day that aim to demonstrate fascinating scientific concepts interactively.

“So, in addition to being educational and entertaining, we also get the audience involved,” said Holota. “We’ll have people from the crowd come up and take part in the activities to enhance their learning.”

Numerous “make-and-take” activities will be available in between shows. “You could call them ‘Making’ activities,” Holota said. “Making has kind of become this subculture of people that build, and create, and explore with their hands, and it could be anything from painting, to robotics, to electronics, to creating some kind of sculpture out of found objects. It’s just this idea of being creative, and just expressing yourself in any sort of medium.”

Through Making, the Science Centre hopes to cultivate an interest in science, technology, engineering and math. “We treat everybody that comes here like they’re a future engineer, future scientist, future astronaut,” said Holota.

“We try to develop those skills in them even at a young age. Even if they don’t realize that they’re developing those interests in engineering when they’re three years old, the more that they get hands-on with things, and build things and explore, hopefully, the more they’ll lean in that direction as they’re getting older and start looking at extracurricular interests, and then education and future careers.”

The $15 cost of admission to Noon Year’s Eve will also include a free IMAX movie and a digital memento of the celebration. “We will

have a photo area where you’ll be able to have a professional photo taken of your family at the event,” Holota said.

Because Noon Year’s Eve is one of the Science Centre’s biggest events of the year, it is important to purchase tickets in advance.

“It’s a super-popular event,” said Holota. “It’s probably worth noting that tickets do sell out, and that people should reserve their spots as soon as they can.”

Traditional education can involve serious work and stressful tests, but the Science Centre prides itself on taking a different approach. “One of the great things about coming to the Science Centre any time is that there’s lots of things that you can do that are just entertaining for a day – and we think that we’re entertaining for a day when a kid comes here and has a lot of fun – but you get the added benefit of learning things while you’re here.”

So, although Noon Year’s Eve is the climax of the year, it’s just one example of the centre’s ongoing commitment to blending education, enjoyment and engagement. “It’s something that the parents can feel really good about,” Holota said. “They know that they’re not just having fun with their kids, they’re also helping to develop their child and help to develop a love of exploration and science in their child.”
