Shaking the Cold Weather Blues Grilling for Profits Shaun Mealy Category Manager - Center of the Plate Now that temperatures have risen, people are coming out of hibernation and now it is time to generate some extra profits from hot days and warm nights. Even those without the extra patio seating can still capture the audience of summertime customers by creating offerings that appeal to the season. However, those with a patio, a truly nice patio, have already won. You have a big advantage over those who don’t have outdoor seating. For those who have a patio, remember that a big part of the action on any patio is the food. If your kitchen is big enough to handle the additional seats that arise when the patio is open, you can simply offer the same menu outside. But that’s not how a lot of restaurants with patios do it, often you can offer a reduced version of the menu offering quicker to prepare items or just those that are more profitable. Whether cooking at home or going out to eat, more people are thinking “grilled food.” Offer specials on a table tent or add a few items to the menu if not currently offered. Make sure to capture the mood of the audience. Whether or not the main focus of your location is grilled food, offering a great grilled item will be remembered. Just focus on the customer experience, what they eat today is a meal that will make them want to come back and have the same experience a month from now. Consider going with a premium meat item to assure consistency each time your customer gets their meal. Beef is always the go to grill item. Braveheart Beef offers a great option for creating some sizzle in your grilled steaks. These steaks are created as consistent as you can get from a live animal. Being DNA tested, source verified, with all Black Angus Genetics, allows the consistency that other programs do not offer. All grades of meat are offered as well so that you are able to ensure you are keeping in line with the menu costs of your particular location. And being the highest yielding beef in the industry, means less dollars end up in the trash. Pork is the one meat left that is a true value. Utilizing a properly marketed pork entrée will lead to one of the more profitable dishes you offer. 1855 Pork will ensure that Grandma’s pork chop can’t hold a flame to your dish. All the muscles are hand selected from thou-


sands of pounds of meat. Each one being pH tested to ensure levels above 6.0, the highest pH level of any program out there. A high pH level ensures that the muscle maintains the iron and phosphates that give the muscle the flavor while also reducing the purge, leading to a more juicy and flavorful piece of meat. And being hand selected ensures that each piece is more consistent and contains the right amount of marbling for added flavor. Don’t forget those customers who may not eat meat. Consider some vegetarian options utilizing our fresh produce or high quality cheeses. Offering a veggie skewer or throwing a quesadilla on the grill will offer something to ensure you are able to captivate that audience. Offer a unique summer drink to cool off your customers. Refreshing drinks will not only generate profit, but will give them more reasons to return to your establishment. Try offering some freshly brewed iced tea made with some Herbthyme Herbs. Create a specialty adult beverage, or just market a limited time offering of a classic summertime favorite like a Mojito with fresh mint. Finally, don’t forget to generate excitement. Offering a dessert option like make your own s’mores always draws attention, marketing itself. If you do have a patio, don’t forget that half of the excitement can come from the ambiance. Ensure you are utilizing outdoor items to make your patio the one that everyone wants to go to. Offer a fire pit if you have enough room, be creative with the lighting, or just use the flame fire heaters that can draw people in off the street with their memorizing flames, and don’t forget to offer shade from the hot summer sun. Consider some of the great recipe ideas for side dishes on page eight.

Grilled Sweet Potatoes with Lime Cilantro Vinaigrette Item # 23944 951931 56291 56455 233302 907446

Description Sweet Potatoes Fresh Lime Juice Kosher Salt Black Pepper Olive Oil Fresh Cilantro, chopped

Portion Size 8 (preferrably long) 1/4 cup 1-1/2 tsp 1/4 tsp 1/2 cup 1/4 cup

• Cover potatoes with cold salted water in a large pot, then bring to a boil. Simmer until slightly resistant in center when pierced with a sharp small knife (25-30 minutes). • Transfer to a large bowl of cold water to stop cooking. Drain well. • When cool enough to handle, peel potatoes with a sharp small knife and quarter lengthwise. • Prepare grill for hot indirect cooking. • Whisk together lime juice, salt and pepper and add oil in a slow stream, whisking. Whisk in cilantro. • Grill potatoes in 2 or 3 batches on lightly oiled grill rack (over coals if using a charcoal grill), uncovered, turning until grill marks appear and potatoes are just tender (3 to 6 minutes total). • Serve potatoes warm or at room temperature, drizzled with vinaigrette.

Bring a 5 to 6 quart pot of water to a boil. While the water is heating, peel back the husks on the corn and remove silk. Place corn in boiling water until tender (10-15 minutes). Melt butter in saucepan. Add any combination of herbs and garlic. Stir and remove from heat. Remove corn from boiling water, let cool. Liberally coat corn with herbed butter. Reseal corn with attached husks. Place corn on grill on medium high heat. Cook until the husks are blackened and the kernels begin to brown (10-15 minutes). • Remove from heat, season with salt and pepper.

Martin’s Caterers has been in the business for almost 50 years and Jeff Post, VP of Purchasing has been with them for 34 of those years. I sat down with Jeff and his Performance Foodservice Roma rep, Corynne Courpas to see if I could uncover the secret to their success. I found that the longevity of their nearly 700 employees is but one thing that sets Martin’s apart from the competition. Martin’s Caterers has seven beautiful locations throughout the Baltimore Washington market. They are among the largest Catering venues in the area, hosting a wide variety of events. These include commercial events, such as meetings, seminars, banquets, and tradeshows, in addition to private events like weddings and birthday parties. This diversity has prevented them from feeling a big hit in the last few years like some other smaller caterers. Generous portions and improved options are part of the Martin’s way. They would never cut back on quality or quantity. Attention to changing tastes led to a decision to offer crab cakes as a dinner option, at the same cost as beef or chicken. This option and an improved recipe have received rave reviews from guests. They have gone from buying 13,000 pounds of crabmeat annually to 37,000 pounds

last year! Since November they have been purchasing most of that crabmeat from us at Performance Foodservice. Martin’s staff has a sincere desire to make every attendee at an event happy. This attention to detail ensures that events are rebooked year after year. When it comes to marketing and advertising, Jeff said that most of it is done just by being in front of the customer. From planning the event to the actual date, Martin’s makes sure that the host and every one of their guests has every need met. “Every guest that passes through one of our buildings is a potential customer!,” says Jeff. They could be planning an event of their own in the future and if Martin’s is able to impress them as a guest, they will book the future business! Employees at Martin’s take notes and complete reports after every event to help them with future planning. They look to see which items were preferred so they can have a better idea of what moves better at that particular event. When the group returns they can refer back to those notes. They also complete a party cost analysis sheet for every event held at their locations. Customers leave Martin’s events happy and the Martin’s team manages costs so they will be around for years to come. Martin’s started buying from Carroll County

Foods May 1, 1996, and Corynne has been their sales rep since that time. At first they were just buying a few things from Corynne, but in less than five years, Carroll County Foods was their primary distributor. Jeff admitted that when we became a Performance Food Group company, he was nervous about what would happen and what would change. But all went well and he said, “Corynne is the key to keeping it going – she takes care of it all – without her it would not happen!” One of the biggest challenges for Martin’s is the changing seasons. One month Crab Feasts are frequent; the next it could be Proms, Weddings or Business Conferences. Corynne keeps everyone in touch with what’s changing and when, in order to avoid out of stocks. Jeff explained that you can’t just rely on computers and reports. An additional challenge is pricing out events a year in advance because pricing is so volatile. Martin’s looks ahead to where the mar-

kets are trending. Jeff reviews our PFG Weekly Market updates as one tool to prepare for price changes and buy at the optimal time. Jeff also believes consistency in our management team and our inside sales team is important. He said that, from his point of view, the shift from Carroll County Foods and the Gorsuch family over to Mike Mattingly as President was a smooth transition and a good choice. In the 17 years Martin’s has been working with Performance Foodservice Carroll County, they have worked with only two different inside sales reps. Candi is their current inside rep, and she and Corynne have a great level of communication. Jeff said both Corynne and Candi are good at giving them a heads up and working through any issues such as product shortages. If an issue arises, Candi lets them know that she will talk to Corynne, and they are confident that it will be worked out. Jeff’s advice to anyone looking to get into catering is to be aware of what a tough business it is! You must be willing to work weekends and nights because that is when the customers are there. Careers in Foodservice and Catering are not just a job; they are a lifestyle.

Tony Brooks

Order Selector/Forklift Operator Tony Brooks has worked at Performance Foodservice Roma Carroll County for 10 years! He is an Order Selector, which means he works night shift and pulls product to fill customers orders. Tony also comes in before the selection shift begins to help with replenishments and staging. In 2007, Tony was named Warehouseman of the Year! Tony lives in Hampstead, Maryland with his wife and their three cats. In his spare time, he enjoys going bowling and playing tennis. He also likes to collect retro videogames. Tony likes his position at Performance Foodservice because it is a fast paced physical work environment in which he can excel.
