Two Great Races, One Cowbell Region’s First BaseCamp Relay and Five Years of MO’ Cowbell

Cowbell Uncorked: OFF ROAD Saturday, May 9, 2015 Created by the same organization as MO’ Cowbell, this event is the region’s first, BaseCamp trail relay. It has taken everything runners love about a team relay race and thrown it for a loop, actually three loops! Teams of five will cover 100K (62 miles) on the scenic Katy Trail, around Klondike Park and through Augusta, MO. Each runner will tackle three loops: a 10K loop and two 5K loops totaling 12.4 miles. What really sets this race apart is the BaseCamp, an all-day tailgate! Klondike

Park will host – live music, wine tasting, camp games, food trucks, health and fitness vendors, foam rolling and yoga sessions and oh yeah…running! Wings of Hope - Serving Mankind

F

rom its humble beginnings in 1962,Wings of Hope has grown into a global charity reaching 47 countries around the world. From the jungles of the Amazon to the plains of Tanzania,Wings of Hope helps the poorest of the poor in remote areas of the world improve their quality of life. In a nutshell we find ways to help them help themselves.While these accomplishments are impressive, some of our most immediate and rewarding work takes place right here at home. Operating out of the Spirit of St. Louis airport in Chesterfield,Wings of Hope’s Medical Relief and Air Transport program helps hundreds of children and adults every year receive life-saving treatment at medical facilities across the Midwest. When a doctor delivers a diagnosis of a rare disorder or disease or when a child is born with a serious birth defect, families are often stunned and overwhelmed by the information.Wings of Hope steps in to do whatever is necessary to help alleviate the stress and worry. First, the staff will do extensive research to find the best place and best doctors to deliver treatment and coordinate with the family and medical specialists to put a plan in place.

Then Wings of Hope will transport the patient and family member (and medical assistant if needed) to the advanced treatment center, totally free of charge for as long as treatment is needed.This is possible because of the incredible dedication of volunteer pilots and mechanics and countless volunteers working behind the scenes to make the magic happen. One only has to see the look of relief in a grateful parent’s eyes or the twinkle of a smile from a child whose quality of life is being vastly improved to realize our efforts are supremely worth it. As word of our services spreads, so do the requests for help. Last year Wings of Hope flew hundreds of medical missions.This year we are already seeing an increase. One thing is certain; as long as there is a need,Wings of Hope will strive to meet it.

15th Annual “Walk with a Friend”

T

he buzz and excitement continues to grow as the 2015 ‘Walk with a Friend’ to benefit Friends of Kids with Cancer approaches on Saturday, April 25 at Maryville Centre in Chesterfield, MO. This annual 5k run/1-mile walk raises funds to help ‘Friends’ provide their Educational, Emotional and Recreational Programs to kids going through treatment for cancer and their families! The 5k fun run or 1-mile walk takes place on the campus of Maryville University.The course is mapped out for all runners and walkers who want to participate competitively or for fun! The entire morning is full of laughter

and fun with carnival-type games for kids of all ages. A delicious FREE breakfast provided by First Watch prepares all participants to wake up and get ready for the Walk/Run! Winter, spring, summer or fall; whichever season St. Louis decides to provide on this exciting Saturday morning, groups of families, co-workers and friends show their support as they walk in honor or memory of their loved ones. Participate in the Walk/Run as an individual or on a team! Any teams supporting a patient or any team representing a company can submit a logo to be printed on the event T-shirt. 9

One of the famous chef’s in St. Louis, Lou attended the University of MO then Mizzou and the Culinary Institute in NYC. He started working in the business at his father’s beer stand, then the family fine dining restaurant & catering company. He has been at Annie’s now for 22 years. His favorite Annies’s dish is the Roasted Chicken. Paul Manno’s is a fav night out.

Scott is from St. Louis. He has been in the business for 25 years and at Balaban’s for three. His family was in the food service industry. He graduated from DeSmet HS and Johnson and Wales University, RI. Scott was executive chef at Provisions. He loves the trout pancake and any of the flatbreads at Balaban’s. Tani Sushi Bistro & Il Bel Lago are his faves on nights off.

Steve was born and raised in St. Louis. He learned to cookwith a master of Italian cooking in Jesi Italy and other training schools. He has been a chef for 32 years and owns both restaurants with his brother Jamie. The shaved brussel salad and pastas & pizzas are his Favorite dishes. He likes dining at Cardwells and AnnieGunn’s.

Rodney was born and raised in Florrisant MO and has been a chef for 26 years. He joined Candicci’s in 1991. He has a degree in Restaurant management from Forest Park. His favorite dish at Candicii’s is Fettuccini Lobster Tail. He loves the pizza at Faracci’s where he and his wife Debbie have been going for 30 years!

Espino is from Michoacan Mexico. He worked for 20 years as a kosher chef in Chicago before moving to St. Louis. He and his wife Roseanne own Espino’s Mexican restaurant in Chesterfield Valley. His favorite dishes to cook at Espino’s are the ribs and sea bass. When dining out he likes BC Kitchen and Iron Barley.

Gerard was born in Brooklyn and raised in Baltimore. He learned to cook from his grandma & parents. He attended Baltimore International Culinary College. He has cheffed for 25 years & opened Villa Farotto with family in 2004. Favorite dish-the Lemon Rotisserie Chicken. Mia Sorella & Napoli 2 are faves on nights off.

Alex was born in Sacramento CA and raised in Troy MO. He has been a chef now for two years. Alex has worked at Ya Ya’s for nine years and for five years at another restaurant. He learned to cook at L’Ecole Culinaire. His favorite dish at Ya Ya’s is the Braised Pork Ravioli. On days off he likes to dine at The Crossing.

Rosario, born in Monreale Sicily, is owner and chef at Gianfabio’s and has been cheffing for more than 50 years-27 at Gianfabio’s. He learned his trade at the Danielle Excelsior in Venice Italy. The Veal Saltinbocca and Shrimp Oreganati are his two favorite dishes to cook. On Sunday he enjoys dinner at home with the family.

t’s a smell that is unmistakable and undeniable, especially to hundreds of BBQ enthusiasts that have taken that Sunday afternoon get-together to a whole new level. This group of diverse individuals includes caterers, restaurant owners, chefs, competitive cooking teams and weekend cooks. They bring their own grills and smokers, designated meats, secret rubs and sauces and valuable team members as they spend hours in the cold, rain and heat just to be part of the growing brotherhood of competition BBQ’ers! Teams are notified ahead of time as to what meats are required. Generally this includes pork butts, chicken, brisket and ribs but occasionally will include pork steaks, burgers or even dessert. Nothing is prepared ahead of time and has to be cooked with wood smoke. No electric or gas grills here! You can watch it on TV but nothing compares to smelling it and seeing it in person. Besides good food, you will find other options for your enjoyment such as live music, car shows, children's areas and crafts. Each event is unique. Mark your calendars to visit a competition this season. These guys love to talk BBQ so if your timing is right you just might be lucky enough to get a sample!

How is BBQ Judged? All entries are evaluated for appearance, tenderness/texture and taste but each variety of meat has specific criteria that a judge will look for. Entries are graded on a scale of 1 (the worst) to 9 (the best). 1. Chicken Can be white or dark meat, with or without bone, with or without skin With skin should ‘bite through’ meaning that only the part of the skin that is bitten comes off. The remainder should stay on the piece of chicken. All pieces should be uniform.

2. Ribs May be baby back or St. Louis style. May be presented with dry rub or sauce. When the rib is bitten, only the bite should come off the bone. Pieces should be uniform in size. 3. Pork Pork may be pulled, sliced, chopped or chunked. Meat sliced should show a smoke ring. Should be moist and tender, not mushy. 4. Beef Brisket Properly cooked brisket slice can be pulled and will have a slight stretch to it. Should be sliced pencil width. May include ‘burnt ends.’ 35

Personalities Each issue, we’ll be showcasing some of the many people who help Chesterfield & West County thrive as a community. Maybe you’ll recognize one or more of them during a shopping trip or other excursion. Be sure to say Hello!

Lori Kelling Lori has been President of the West County Chamber of Commerce for eight years. She has lived in Ballwin since 1995 with her husband Bradley ”Scott” who is a police officer for St. Louis County. They have three boys. Lori was born and raised in a small town in Missouri, Carrollton. She studied nursing at the University of Missouri Central and became an RN in St. Louis and worked as an LPN until her children were born. She was a stay-at-home mom for 11 years. She loves the great schools, shopping, trails and parks and all the wonderful things to do in the area and recommends it as a community you want to raise a family in- “its safe and has a small town atmosphere.” Visiting Castlewood State Park with her family and German Shepherd, and shopping, are two of her favorite pastimes. One of her favorite restaurants is Walnut Grill, a new place in town. Lori considers raising her family in West County a blessing. She is active on the Leadership board for Manchester United Methodist Church and the MSD Rate Commission.

Tom Shaw Sr. Owner, Tom Shaw Realty Tom is a Chesterfield legend. He was born and raised in Clayton where his dad was mayor and also in the real estate business. He attended Clayton High School and University College at Washington University then followed in his fathers footsteps in the real estate businses. He is co-founder of Progress 64 West and is a member and leader in various other area organizations. Tom had six children by his first wife and now has been married to Debbie for 27 years. They reside in St. Charles. The entire Shaw family is very close and all are active in the community. He loves the people, atmosphere and lifestyle in the Chesterfield area where he lived and worked for many years. He was an active force in making Chesterfield the City it is today and still remains a mover and shaker! He loves to hang out at Annie Gunn’s (‘which he says is his office’ and can be found making deals for various projects in the area over lunch or dinner there). Wine Country Gardens is his other favorite place to wine and dine.

Jane Cunnigham Jane was elected to the Board of Directors of the Monarch Fire Protection District in 2013. She lives in Chesterfield with her husband of 45 years, Gary, who is a prominent attorney. They have one son Bret and one grandson Jacoby who live in Austin. Jane was born in Columbia SC and raised in Ocala FL. She graduated from Florida State University with a Bachelors degree in Business. She is a member of the Chesterfield Chamber of Commerce and Progress 64 West. Jane served in both the Missouri House of Representatives for eight years and as State Senator from West and Northwest County for four years. She loves the Chesterfield area and the people who are close to her heart because they have treated her with such warmth while she was in office. She considers it a great privilege to represent them. She also loves the Chesterfield area for its terrific neighborhoods, housing, thriving business environment, retail shopping, restaurants and marvelous parks, recreation and entertainment. She considers it one of the best places to raise a family or retire.
