The West County Talent Bash is produced by St. Louis Bash Productions and is presented by West News Magazine. All ages are welcome to participate. The BIGGEST and BEST fireworks show in the St. Louis metropolitan area is back for another great year! If It’s Summer It’s Beer Time! All About Kegs from Lukas Liquor

INGREDIENTS: (SERVING FOR 6) • 10 oz mozzarella cheese, cut 3/4” • 1 Lb - rigatoni • 1 Qt. - tomato paste • 1 Large eggplant • 2 Cloves Garlic • 2 Leaves basil • 4 Tbs - ricotta (salted seasoned) • Olive oil • Frying oil • Salt & pepper DIRECTIONS: • Cut the eggplant into round slices 1/2 thick. Do not remove the peel. • Deep fry the eggplant slices in oil. Once finished remove excess oil with paper towel. • In a saucepan add olive oil and chopped garlic. • Once the garlic turns blonde add the tomato paste and the basil. Salt and pepper to taste.

Summertime is almost here. This is the time of year for pool parties, backyard barbecues and kegs! In St. Louis there are approximately 250 beers available in kegs. Kegs come in three sizes: a half barrel contains about seven cases. A quarter barrel has three and a half cases. A sixth barrel has about two and a half cases. There are only a handful of beers that come in a quarter barrel including Bud Light. When serving beer from a keg make sure you serve it in a twelve ounce cup. A sixteen ounce cup is too big. The last four ounces will get warm and guests will throw it away. The keg needs to be iced down at all times. This will require three 20 lb. bags of ice for a half barrel. During the hot summer months, if your keg is not properly chilled you could lose 10% of your beer to foam. A tapper system is used to pump the beer through a hose to a dispensing valve. If the hose is not covered with ice it will get warm. Cold beer going through a warm hose will result in foam as well. You will save 10% of your beer if you keep the hose cold. Finally, if the beer is not consumed after your party, the beer will stay fresh for up to five days-so don’t throw it away! • Cook for 15 minutes. • Cut the fried eggplant into strips about 1 inch wide and add to the sauce. • Cook for an additional 10 minutes. • Cook the rigatoni and put in a large bowl.
