INTERVIEW WITH OLIVIER RUIZ EXECUTIVE CHEF AT PARK PLAZA WESTMINSTER BRIDGE LONDON How long have you been Executive Chef at Park Plaza Westminster Bridge London?

I’ve been Executive Chef here for six years. I look after eight kitchens that cook for PRIMO Bar, Ichi, Brasserie Joël, illy Caffè, room service, banqueting, and the Executive Lounge.

How did you get into this career?

I started training to be a chef aged 14 when I left school to do a one year apprenticeship. I returned to school to pass my exams and officially became a chef when I was 18. I travelled around the world a bit and then came to England when I was 21 from near Toulouse in France. I became an Executive Head Chef when I was 30. It’s all I’ve ever known.

Wow, eight kitchens! How do you manage?

I like to be challenged, the bigger the better!

November is our busiest month. We have 25 different dinner dance events with 600-1200 guests at each over the 30 days, plus 100150 covers a day in Brasserie Joël and up to 300 covers a day (450 on a weekend) in room

What can we expect from the menus and dining experiences at Park Plaza Westminster Bridge London?

We regularly change all our menus.

Brasserie Joel's French brasseriestyle menu changes once every three months with the focus on seasonal ingredients. We change our banqueting menu every year as our goal is to serve restaurant standard food at banqueting level (serving up to 1200 people at a time). This is a real challenge for us but one that we relish. Our Ichi Sushi menu also changes once a year.

We have five chefs there using the freshest and best ingredients on the market and making the sushi to order in front of the guests at the counter.

What would you say is the most interesting thing about your job?

Every single day is different, that’s for sure. We are creating things - today it is just ingredients, tomorrow it will be on your plate as something incredible.

What do you enjoy most about your job?

I find it really exciting and I get to connect with a lot of people. I don’t think I’d be good at anything else.

Is there anything about your job that you think people would be surprised to hear about?

I think there are too many TV programmes about chefs shouting, screaming, swearing. But it isn’t really like that and it certainly doesn’t happen everywhere. Yes, we work long hours and it’s hard work, but we respect each other, we’re a family.

What do you think makes Park Plaza Westminster Bridge London special and makes people return?

Because of our focus on high quality. We only use top quality ingredients and are always trying to be better than everyone else - more innovative and ahead of the game. This makes people return. If you’re behind, people will go elsewhere to try and find something new and exciting.

What do you cook for yourself at home?

I let my wife cook! One of my favourite things is the smell of fresh pasta with butter and garlic.

TERRIFIC PLACES TO WATCH THE NEW YEAR'S EVE FIREWORKS IN LONDON

London’s New Year’s Eve fireworks are, without a shadow of a doubt, up there with the best in the world. If you want to watch them from the packed Thames Riverside, you’ll need to buy £10 tickets from the Mayor of London’s website soon as they’re sure to sell out fast.

Alternatively you can enjoy them for free, in absolute luxury, or from a bit further away at these London locations: 1. Hampstead Heath Renowned for its amazing views of the capital all year round, Hampstead Heath and Primrose Hill are great spots to watch the fireworks from.

Wrap up warm, take a picnic and a bottle of fizz, or book to have dinner first at a one of the lovely local pubs or restaurants.

2. Book a room with a view And maybe even a private balcony at Park Plaza London Riverbank, Park Plaza Westminster Bridge London or Park Plaza County Hall London, to overlook the main event in unequivocal comfort and style.

3. Party from the 20’s through to the 90’s Every year the Royal Festival Hall hosts a huge vintage New Year’s Eve party with five pop-up nightclubs, a hair and beauty salon, walkabout entertainment and photo studios. It also overlooks the River Thames for stunning views of the display. Their final release of tickets are now on sale from the Southbank Centre website.

4. On one of London’s famous bridges Not all of the riverside is ticketed for the fireworks, so if you head a little further away and get there early you can get a great spot on one of these bridges to see the fireworks in all their glory Southwark Bridge, Tower Bridge, Vauxhall Bridge, Lambeth Bridge or the Millennium Bridge.

5. Down South Hilly Fields in Brockley are a bit further out but a quieter option for spectators. For a drink nearby, head to the Ladywell Tavern or The Talbot.

1. Carnaby Street

Swiftly taking over as the most anticipated Christmas lights in the city, the guys at Carnaby Street love nothing more than wowing their fellow Londoners with their gloriously colourful displays.

After last year’s carnival theme you can expect a showstopper at the big switch-on, which takes place on Thursday 8th November.

3. Regent Street

Just because Oxford Street gets slightly more attention it would be a huge mistake to underestimate the splendour of Regent Street, situated just around the corner. Last year’s captivating angel display was a magnificent sight to behold and so popular that it will be returning for 2019!

4. Seven Dials

For those seeking a more intimate Christmas lights setup, Seven Dials has gained more and more popularity in recent years. This is largely thanks to the endearing installations that light up each of its gorgeous streets to make your shopping experience all the more magical.

2. Oxford Street

It may come as no surprise that one of Europe’s top-ranked shopping locations plays host to some of the most jaw-dropping Christmas lights in the world. Every year Oxford Street get lights bigger and better with 2018 being no exception.

5. Covent Garden

There are few European destinations that rival the beauty of the cobbled piazza in Covent Garden. Add to this the renowned flare of its beloved Christmas tree and astounding festive light installations mesmerising your whole famiy.

THE DIRECTOR OF MEETING & EVENTS PLANNING

CRAIG ROBERTSON AT PARK PLAZA WESTMINSTER BRIDGE LONDON How long have you been working at Park Plaza Westminster Bridge London?

I’ve been working here for two and a half years. I used to go past it on the bus every day on the way to my last job, watching it being built was like seeing a phoenix rising from the ashes.

a hotel daily meeting at 9.30am and then my day will vary depending on what we have in. I could be showing clients around, planning my portfolio of events or attending internal meetings. I pop down at key moments of the day to temperature check the meeting rooms and I might end up staying until 10pm if one of my clients has a dinner.

How did you become a Director of Meeting & Events Planning?

I’ve always worked in hotels, previously in Edinburgh and then I came to London as a Duty Manager. I got into Events at my last hotel, The Royal Lancaster. It wasn’t planned but I found that I really enjoyed the buzz of it.

What would you say is the most interesting thing about your job?

The variety of events that we have at the hotel. Some hotels can be meetings led, or

Could you describe what your job might entail on a day-to-day basis?

I generally get into work about 8am if I can, earlier if I have an event. I’ll check my emails to see if anything has come in overnight. I then take a walk around the meeting and event spaces, check in with my team, the Chef, the operations team, and my clients. We have

weddings led, but we have the full spectrum in limitless variations conferences with exhibitions, external caterers, awards dinners, car launches, big charity events, the list goes on. We could have a meeting for six people or an event worth millions.

Is there anything about your job that you think people would be surprised to hear about?

Lots of very surprising things happen when there are hundreds of people and alcohol involved. It’s funny seeing a room just before everyone enters, looking beautiful with the candles lit and thinking this is the calm before the storm! I think people can also assume that working in Events is very glamorous. They see us having coffee with clients and doing menu tastings but don’t know about all the hard work that goes into it.

What do you enjoy most about your job?

Definitely the people - I really enjoy having contact with the team and the clients. I meet

people from lots of different cultures and I love gaining understanding and getting a little window into how different cultures celebrate. I still keep a portfolio of events to plan so that I have that direct client contact, understand the systems, and the challenges that my team might face. There’s real satisfaction from completing an event. You enabled it to happen and also get a sense of closure when it’s finished.

What’s the most unusual thing that you’ve encountered whilst working as a Director of Meeting & Events?

We get all manner of requests and ideas from clients. I was organising a big Italian family wedding once and they requested for doves to fly out from inside the wedding cake after it had been cut (indoors). I managed to convince them that it probably wasn’t the best idea!

The event will take place on Friday 2nd November, where Group Executive Chef Werner Seebach will take guests on a culinary journey with his Latin American influenced dishes with touches of Mexican ingredients and flavours.

As part of the celebrations, Chino Latino will have jawdropping brightly coloured floral skulls hanging from the windows of the restaurant, giving the interiors a real wow-factor for the festivities.

The first course of the menu will include Jalapeno Maki Rolls made with avocado, truffle aioli and creamy spicy sauce in addition to Lobster Taquitos with Aji Amarillo, avocado and lime and Ceviche of calamari, shrimps, sea bass and avocado.

The second course will feature Red Snapper with mango and gruyere cheese empanadas, and Bacon Wrapped Dates with Linguiça sausage and mustard mayonnaise. Guests will enjoy a third course of Churasco Grande, sirloin beef skewers and chorizo, Corn and Artichoke Tamale with Huancaina sauce. In true Day of the Dead style, the dessert will be a Passion Fruit Skull decorated with edible flowers.

In the past these boxes have contained a ‘partridge in a pear tree’, sesame prawn crackers, toad in the hole, and a small turkey with all the trimmings. by Maurilio Molteni, Head Chef at TOZI Cotechino is a large sausage that is boiled, sliced and served with braised lentils. Usually it is eaten on New Year’s Eve in Northern Italy and it’s said that if you start the new year by eating these legumes it will bring you prosperity. I still remember my grandmother cooking it twice a week at festive times, and my mother after her. Obviously as a five-year-old kid it wasn’t the best dish to eat but she used to convince me with, “Maurilio, if you eat it you will get lots of presents.”

It is still a very strong tradition in the north of Italy and my recipe uses the very best lentils and is finished off with salsa verde which helps cut through the richness of this dish.

(Serves 4 people) 1 cotechino pre-cooked (you can buy it at Gastronomica at Borough Market) 400g castelluccio lentils soaked in water overnight (they come from the Umbria region, simply the best lentils you can find) 1 onion diced 1 garlic clove 1 bay leaf 2 carrots diced 2 celery stalks diced Olive oil Salt and pepper 1 tbsp tomato puree For the salsa verde 1 handful of capers 1 handful of fresh mint 1 handful of fresh basil 2 handfuls of fresh flat parsley 2 anchovy fillets 1 tbsp Dijon mustard 2 tbsps white wine vinegar 6 tbsps olive oil Cooking instructions Simmer the cotechino (still in its pouch) in hot water for 30 minutes.

Heat a pan with the olive oil and start to cook the celery, carrots, onions and garlic.

Drain the lentils from the water and add them to the vegetables, adding the bay leaf and tomato puree. Cover with water and cook gently until tender and then season with salt and pepper.

For the salsa verde put all the ingredients into a blender and blend fast until smooth.

To serve Remove the cotechino from its pouch, slice and serve on a plate on top of the braised lentils, with a spoonful of salsa verde on the side. Buon Anno!

Over the past few years, Park Plaza's hotels have become the South Bank’s hottest spots to enjoy great food, cocktails, and to listen to live music. PRIMO Bar and Chino Latino have free live music every day and Florentine Restaurant & Bar is the place to be at weekends for a mouth-watering brunch whilst the DJs spin some tunes. GABRIELLE DUCOMBLE What has been your best gig to date?

Performing at the Royal Festival Hall with the Aurora Orchestra was incredible.

How would you describe your music?

A combination of sounds from jazz, chansons, tango, folk and Latin rhythm.

What’s your craziest moment in your career so far?

Being dressed from top to toe in sparkling pink singing 'Je suis une poupée de cire' (I'm a wax doll) with catwalk models on stage at the Goodwood Revival Fashion Show this year. A very fun experience I'll always remember!

Who inspires you and why?

Astor Piazzolla for the passion in his music, Michel Legrand for the beauty of his melodies, Melody Gardot for the elegance in her delivery and voice tone, Whitney Houston for the perfection in her magnificent voice, Claude Nougaro and Joni Mitchell for their words of poetry.

What are your favourite songs in your set?

‘Where is Home’, the most recent song I wrote which appears on my new album 'Across the Bridge'.

What’s your favourite cocktail?

A margarita.

What do you have coming up?

I’m currently on tour in the UK promoting my new album. Next I’ll be touring France and Belgium and next year I will perform for the Jazz Divas series on 14th June at the Pheasantry.

NEW YEAR’S DAY PARADE If your head isn’t too heavy on New Year’s Day, get 2019 off to a great start by getting into town and seeing this spectacular street parade. It starts at noon from Piccadilly.

BURNS NIGHT IN LONDON They’ll be celebrations at various places across London of the life and poetry of 17th century Scottish poet Robert Burns. It’s a great excuse to get out your bagpipes, drink some whisky, put on your kilt, grab a haggis, and ceilidh on down.

Friday 25th January

CHINESE NEW YEAR London’s Chinese New Year celebrations are the biggest outside Asia and will take place close to 5th February (likely to be Sunday 3rd February) across Chinatown and the West End. They’ll be food, performances, parades and floats, music and martial arts to celebrate the Year of the Pig. Tuesday 5th February 54
