INTERVIEW WITH K AROLINA Z YKOVIC RESTAURANT MANAGER FOR OAKS AND CHINO LATINO IN NOTTINGHAM How long have you been Restaurant Manager in Nottingham? I was part of the original opening team for OAKS. I started as Assistant Manager in May 2015, was promoted to Restaurant Manager in May 2016 and to Restaurant Manager for Nottingham this May, (May is my lucky month!)

manager who gave me lots of guidance and opportunity. I gained a lot of hospitality experience working for busy chains. I loved the front of house role and the focus on customer service but I wanted to work for a company who focused on the product - who prided themselves on preparing everything in-house, taking the time and effort to create great quality food. OAKS seemed different to others the restaurant wasn’t open when I applied but something about the look and feel captured me. It was a very cool brand with individuality and the freedom to tailor each guests' experience.

How did you get into this career? I came to the UK aged 18 on a gap year and then was meant to study acting but I picked up my first job as a waitress in London. At first I was very bad at it! It’s thanks to my first

had the menu tasting and the dishes created by our Executive Chef, Werner Seebach are out of this world. We’re offering one of a kind Pan-Asian, fine dining in Nottingham. The service is very attentive, and they’re very knowledgeable - guiding guests through the menu, helping them find dishes that best suit them. They know the food inside out, which is a big part of the experience and concept.

What do you think makes OAKS special and makes people return? We have a lot of locals who come again and again because they know the butchers we use and they come to drink the Castle Rock Brewery beers that we have on tap. We’re trying to bring great quality casual dining that’s affordable and appeals to everyone’s tastes. We focus on burgers and steaks but we do have options for fish lovers, vegetarians, vegans and we cater for allergies and intolerances.

What would you say is the most interesting thing about your job? I’m involved with reinventing menus - it’s great to be contributing, creating new things that are then on the menu and coming up with things that become part of the brand. Is there anything about your job that you think people would be surprised to hear about? At home I don’t cook at all - my partner would probably only let me in the kitchen to grate cheese! But I love food - all types of cuisine, trying new things, eating out and abroad. Food and wine are the best things in life.

What can we expect from the menu and dining experience at Chino Latino? We’re going through a very exciting phase at the moment where we’re about to introduce a new menu. We’re keen to keep up with trends and entice people with new dishes. We just

Roll up Roll up The circus is 250 years young this year and Park Plaza London Waterloo is playing homage to this historic and spectacular show, which first took place right next to where the hotel now stands.*

THE SECRET LIFE OF...

THE DIRECTOR OF PROCUREMENT JAYNE DAVIS How long have you been in your role at PPHE Hotel Group? I joined in 2014 when PPHE had grown to a size where they needed a professional procurement structure and process. My first procurement role was in 1990 for a company called Jarvis Hotels where I was doing a lot of fire alarm lift maintenance contracts and toilet roll deals! Could you describe what your job might entail on a day-to-day basis? The difference between Purchasing and Procurement is that Purchasing order and buy things - Procurement go out and find things, analyse and review what the market is doing, what competitors are doing and how we can do it better. I look after Procurement across Europe for Park Plaza Hotels & Resorts and art’otel - identifying opportunities to increase quality across all products and get better value for money. We’ll create minimum quality standards (like having amazing hair dryers and 400 thread count fine linen - better quality than

any other hotel group) but we don’t standardise all the products so that every hotel keeps its identity and has local flexibility. What would you say is the most interesting thing about your job? Its diversity - we currently have 62 projects on the go between five people - from waste management to reviewing new guest amenities and hotel refurbishments at Park Plaza

“I BUY 2.3 MILLION TOILET ROLLS A YEAR.”

Sherlock Holmes and County Hall in London, Nottingham, Leeds and Amsterdam. We just put 1646 new TVs into Park Plaza Westminster Bridge London. Is there anything about your job that you think people would be surprised to hear about? Other than that I buy 2.3 million toilet rolls a year?! We are very aware of cultural differences between the hotels - the Dutch drink apple juice, hardly any orange juice and the Germans love their beer and don’t drink much wine or Champagne. What do you enjoy most about your job? We procure everything (china, glass, cutlery, uniforms, towels, baked beans...) and manage all supplier contracts. Therefore we have complete interaction with all departments, levels and absolutely everyone in the business - with no exception, everyone knows our team. We are actively involved in lowering energy consumption and our carbon footprint (we reduced our active suppliers from 2000 to

under 700). We recycle all of our old linen, duvets and pillows - laundered, folded and fresh - to homeless charities and hostels or for ragging and pulp - none goes to landfill. What’s the most unusual thing that you’ve encountered whilst working as Director of Procurement? People probably think my office is quite unusual and definitely the messiest. Depending on what we have in development at any one time it might be full of different types of cushions, bed linen samples, sofa beds, chairs, teddies - I can barely get in it although it seems to be very busy when there are biscuits, gin and wine to be tested! I recently had to order 40,000 new dressing gowns so we had dressing gowns everywhere, with team members of all different shapes and sizes trying them on and washing them 100 times to make sure they were robust. 19

As a heralded epicentre of freedom and diversity, you’ll be hard-pressed to find a better city than London to experience the much-anticipated Pride Festival, which celebrates the LGBTQ community and their army of allies. Taking place from the 9th June, building to a spectacular finish with ‘Pride Day’ on Saturday 7th July, there are a huge number of vibrant events going on across the capital this summer, all of which have been meticulously planned for all the family to enjoy. 1. Hampstead Heath LGBT+ Summer Picnic (Sunday 24th June) There’s nothing quite like a summer’s day at Hampstead Heath and Pride in London will once again be hosting their annual picnic where you can chill out with your friends, take in some of the organised events and, of course, take a dip in the gorgeous Hampstead Ponds.

2. V&A Museum LGBTQ Tours (selected dates throughout Pride month) In the spirit of celebrating all things LGBTQ, the formidable V&A Museum have curated specialist tours which will guide you through a selection of items in their impressive collection, all relating to gender and sexual identity. 3. Celebrate Pride: Gallery Tour, National Gallery (Friday 6th July) The National Gallery have also gotten in on the action and in honour of Pride London they will be hosting a free event that will showcase the paintings in their collection which tell the fascinating stories of same-sex relationships and desire.

Pride Day Parade (Saturday 7th July) If you’re looking to immerse yourself in the inspiring spirit of the LGBTQ community then the world-famous parade lies at the heart of the movement, seeing thousands of elated revellers travel together on foot from Portland Place station, ending up in Trafalgar Square. 5. Trafalgar Square Concert (Saturday 7th July) It’s no secret that the Pride Day Parade is one of the most uplifting events that London has to offer and it was therefore a no-brainer when the organisers decided to put together an all-singing, all-dancing concert to carry on the fun afterwards in Trafalgar Square. 6. Golden Square Family Stage, Hosted by Olly Pike (Saturday 7th July) Last year, Minions Jerry and Dave were on hand to party with hordes of families and festival-goers and this year you can expect nothing less from the Family Stage, with a fun-fuelled show hosted by Olly Pike. Not to mention the bouncy castles, entertainers, face-painters, and much, much more. 7. Women’s Stage, Leicester Square (Saturday 7th July) Last year the Women’s Stage took up residence in the lively hub of Leicester Square and it is back once again with a jam-packed line-up of the world’s most talented and inspirational female artists. 8. Cabaret Stage, Dean Street (Saturday 7th July) Who can really say they don’t enjoy a bit of cabaret? Even if it isn’t normally your cup of tea, we can wholeheartedly say you haven’t lived until you’ve watched some of the spectacular acts on the Pride Cabaret Stage, located in the heart of Soho.

9. Community Village, Soho Square (Saturday 7th July) Playing host to the most footfall on Pride Day, you’ll struggle to find a more welcoming, relaxed environment than Soho Square. Here you’ll be able to set up a picnic, peruse the 30+ charity and activity stalls, all whilst taking in some outstanding street performances. 10. Pride in the Park (in Collaboration with UK Black Pride), Vauxhall Pleasure Gardens (Sunday 8th July) As the only event put together exclusively by people from the Black LGBT+ community, Pride in the Park has become one of the most sought-after Pride in London events, delivering a host of the most exciting musical talent in the industry.

YOUR GUIDE TO WIMBLEDON 2018 The oldest of the four global tennis Grand Slams, Wimbledon, at the All England Lawn Tennis and Croquet Club, starts on Monday 2nd July. Here’s everything you need to know about watching or going to SW19 in 2018. DATES The first rounds start on Monday 2nd July. The Ladies’ Singles final is scheduled for Saturday 14th July and the Men’s on Sunday 15th, both beginning at 2pm.

WHO ARE THE FAVOURITES? Roger Federer will return aiming to claim his ninth title and Andy Murray, who has taken a year out nursing a chronic hip injury, is desperately hoping to be fit in time. Serena Williams is also hoping to recover in time after pulling out of the French Open. Garbine Muguruza will defend her title after defeating Venus Williams last year in straight sets.

TENNIS? HOW TO GO ON THE DAY If you don’t already have tickets you can still go to Wimbledon for the day, either queuing for a Ground Pass and the smaller courts or Court 2, Court 1 and Centre Court tickets (depending on how early you’re prepared to start queuing!) Ticket prices range from £8 (for a Ground Pass on the last Sunday) to £145 for Centre Court tickets on the last Wednesday (Centre Court tickets are not available at the turnstiles for the last four days).

WEATHER It’s currently looking to be hot and pretty dry for the two weeks of Wimbledon with some occasional showers. It’s always exciting when the rain starts anyway to see the Centre Court retractable roof come into play. PRIZE MONEY Winners of the Men’s and Women’s singles will pocket £2.25m each.

What has been your best gig to date? I played Wembley Arena once! That was pretty phenomenal.

What is your favourite cocktail? Porn Star Martini, without a doubt! What has been the craziest moment of your career so far? I played a festival to 20,000 people once and I started my set by telling everyone to “jump”. It was one of the most overwhelming moments seeing 20,000 people jumping up and down to my song. I was buzzing so much after I couldn't sleep that night!

How would you describe your music? Soul and pop. I love to tell a story with my songs, most of them are written about my personal experiences. Who inspires you and why? I’m not gonna lie, I love old school music - Sam Cooke, The Drifters, The Eagles. I think Bruno Mars is probably one of my favourite current artists though, he's fantastic live. I was lucky enough to see him six years ago at the Camden Roundhouse and Ed Sheeran was supporting him! The best gig I've ever witnessed.

What are your favourite songs in your set? I'm very much looking forward to my opening night in the new Piano Bar at Chino. It’s been awesome rehearsing for it and trying out songs that I wouldn’t normally sing, or creating new arrangements of songs I already love to sing. I think my favourites are 'Hotel California', 'Dancing Queen' and definitely 'Creep' because it reminds me of a recent trip to LA as my friends out there love that song! Who have you had the pleasure to work with? Amir from Rudimental, MNEK, Example, Devlin, probably more but I can’t think right now! What else have you got coming up? I’m headlining a show at The Pheasantry in Chelsea on 12th June and intend to release my debut single in the next few months.
