Traditional Caribbean Red Kidney bean soup – served with boiled dumpling. Butterfly Prawns – tossed in scotch bonnet peppers and garlic served with sweet chilli sauce. Duck Breast Pancake Rolls – dressed in rich plum sauce. Fried Yam Balls – topped with salt mackerel paste. Tender pieces of Jerk Chicken – laid on a bed of mix leaf salad. Vegetable fritter balls – served with mango chutney. Callaloo pancake rolls – dressed in sweet and sour sauce.
MAINS
Braised oxtail in onion, scotch bonnet pepper, thyme and butter bean sauce served with rice & peas. Succulent slice of boneless chicken with the original jerk sauce, served with rice & peas. Curry Goat an authentic dish of boneless meat, highly seasoned, simmered in its marinade for full fiery flavours, served with rice & peas. Ackee tenderly sautéed with spring onion, tomato and scotch bonnet pepper, served with rice & peas. Steamed fillet of Sea Bass served with mash potato and spinach. Boneless Jerk Chicken salad chicken breast serves with mix leaf salad and cherry tomatoes, finished with a touch of homemade vinaigrette. Brown Stew Chicken served with Chef Brown’s stew jus and rice & peas.
DESSERTS
Chef Brown’s signature Rum, Cognac and Almond sponge cake with infused cream. Strawberry and Mango Coulis with vanilla ice cream. Banana cake served with custard Mango cheesecake.
