Letter from the Chief Operating Officer

Palmetto Bluff Members,

This November and December, our community comes alive with gatherings that capture the magic of the season— inviting you to slow down, savor special moments, and create lasting memories with family and friends.

We begin the month with the May River Classic Horse Show on Saturday, November 1, a tradition that showcases the beauty and talent of our equestrian community. From there, the calendar fills with activities for every age and interest—PBGO After School adventures, creative art workshops, and hands-on experiences at the Farm and on the water. Sip & Savour weekend returns, promising great dining and beverage pairings. Thanksgiving brings cherished traditions like the Turkey Trot 5K, Thanksgiving Supper, and the joyful Lighting of the Village.

In December, enjoy family favorites like Breakfast at the Barn, the Holiday Boat Parade, and the Holiday Farmers Market. Children can delight in holiday-themed PBGO events from ornament making to cookie decorating and even the Polar Express Experience, while adults can enjoy the Member Holiday Party on Friday, December 12.

The year ends with our New Year’s Eve Celebration: Countdown & Confetti, where coming together with fellow Members marks the start of a bright new year.

Join us for the fourth annual May River Classic Hunter Jumper Show as you cheer on riders showcasing their best skills! With a nationally acclaimed judge, food trucks and equestrian vendors, this is an event you wouldn’t want to miss. Complimentary for spectators.

Get ready for an action-packed event where copying is the key to victory. Kids will take part in games where the goal is to copy someone or something as closely as possible to win! $40 per child; Ages 5-12. Reservations required.

Celebrate the taste and bounty of the Lowcountry at the Palmetto Bluff Farmers Market! Hosted at the Palmetto Bluff Farm, the market will showcase diverse offerings of the Bluff’s very own homegrown produce, as well as bread and bakery items from our talented culinary team. Each market will feature a rotating selection of area farmers, local growers, and artisans.

Recharge and relax while we entertain your tots with a joyful morning of supervised play, crafts, and interactive learning activities appropriate to your toddler’s age. $15 per child; Ages 18 months-4 years old. Reservations required.

WEDNESDAY, NOVEMBER 5

n Shark Tooth Island Fossil Hunting 11:30am-4:30pm | Wilson Landing

The Savannah River has been dredged since the 1800s. One of the spoil sites, Shark Tooth Island, is a fossil hunters paradise and can only be visited at low tide. Our Wilson Landing Captains will educate you on how to search for fossils and comb the shore for shells and other treasures. You will get dirty and find fossils if you’re lucky! Must be capable of climbing off the bow of our open vessel onto the shoreline in water ankle to knee-deep. $50 per person. Reservations required.

n PBGO After School: Master Mixers 4-6pm | PBGO Loft

At this deliciously fun event, kids will step into the role of mini mixologists as they create their very own specialty mocktails using a variety of colorful and tasty ingredients. All ingredients will be safe, noncaffeinated, and kid-approved. $40 per child; Ages 5-12. Reservations required.

n Around the Table: Harvest 6–9pm | The Farm

Experience an autumn evening at the Farm, where the table is set with the season’s best. Our chefs will present a multi-course menu inspired by Farmer Shane’s harvest, paired with flavors from local growers, makers, and artisans. Gather with friends and neighbors for a night of farm-to-table dining, seasonal pairings, and the timeless charm of fall at Palmetto Bluff. $170 per person. Reservations required. Ages 21 and older. Shooting a target can be hard enough — how about shooting that same target while your heart is racing and your breath is labored?

Participants will run their way through a course, performing exercises at various checkpoints, and having to shoot targets using different types of weaponry at each checkpoint. $20 per person. Reservations required.

n Kids Night Out: Lip Sync Battle

6-9pm | PBGO Loft

This event is the perfect mix of performance and imagination, where kids will compete in a Lip Sync Battle, then try their hand at making their very own tunes using all the cool materials in the PBGO Loft. Dinner is included. $65 per child; Ages 5-12. Reservations required.

Knack Studio is bringing their ceramic oyster plate workshop to PB! We’ll be making and decorating half-dozen oyster plates using real oyster shells. Participants will arrange real shells, drape clay slabs, and decorate with colored slips. Enjoy a wine that pairs with oysters, release your inner artist, and have fun making a one-of-a-kind piece. Learn how to incorporate paint and texture into your own expressive piece. Arun Drummond will add Sweetgrass to finish the piece. Kick up your heels and raise a glass at Moreland Landing for an unforgettable Boots & Bourbon experience! Celebrate the spirit of bourbon while enjoying the best of Southern flavors and hands-on fun. The evening begins with an interactive tasting led by a representative from the Sazerac portfolio, featuring select pours from E.H. Taylor, Eagle Rare, Blanton’s, Weller Antique 107, and Elmer T. Lee. Afterwards, indulge in Nashville hot chicken, classic Southern favorites, and bourbon cocktails crafted to keep the night lively. In celebration of the season, this special workshop will focus on creating one-of-a-kind ornaments inspired by Arun Drummond’s Southern roots and symbol-rich style. This Thanksgiving season, kids can create a fall-themed bouquet to celebrate and appreciate the special people in their lives. Using colorful autumn flowers, leaves, and festive decorations, each child will design and assemble a handmade bouquet, add a personal touch with a thank-you tag or note, and take their bouquet home to gift to a teacher, neighbor, friend, or family member. $40 per child; Ages 5-12. Our chefs will also serve buttermilk fried chicken, slow-smoked brisket with house barbecue sauce, and comforting sides like stone-milled cheesy grits and cheddar jalapeño cornbread. The Farm

As the air turns more crisp, the Farm is buzzing with activity and community spirit. From hearty harvest celebrations to hands-on workshops and markets, we have a full lineup of events to carry us from fall into the holiday season. Here’s a look into what’s going on at the Farm.

Harvest Dinner

We’ll host the annual Harvest Dinner at the Farm on Thursday, November 6. Join us as we gather around the table to celebrate another fruitful season. Our annual Harvest Dinner is all about community, gratitude, and the joy of good food. We’ll share a meal made with the freshest ingredients from the Farm. This evening is always a highlight!

Strawberry Planting

For the first time, we’re planting strawberries! In the first week of November, our team will be laying seeds into the soil. While it’ll be several months before they’re ready to harvest, we can’t wait to see these sweet berries ripen in early spring.

Fermentation Workshop

Fermentation is one of the oldest and most rewarding ways to preserve the harvest. Join us in collaboration with the Fitness & Wellness Team for a hands-on workshop where you’ll learn the basics of fermenting vegetables, explore the science behind it, and go home with your own jar of fermented goods.

Sugar Cane Event

Experience the simple joy of turning cane into syrup. Come watch the process, taste freshpressed juice, and learn about this age-old craft.

Farmers Markets and Holiday Market

Our bi-weekly Farmers Markets will continue through November. Sweet Potato and Pumpkin Casserole

Recipe by Registered Dietitian, Lindsay Ford

PUREE:

- 3 SWEET POTATOES, LARGE, BAKED AND SKIN PEELED/REMOVED

- 1 CUP PUMPKIN PUREE

- 3 T. BUTTER, MELTED

- 1 EGG, LARGE

- 1 TSP KOSHER SALT

- 1 TSP CINNAMON, GROUND

- 1 TSP NUTMEG, GROUND

Preheat the oven to 375 degrees.

TOPPING:

- 1 CUP WALNUTS, WHOLE

- 1 CUP PECANS, WHOLE

- 1 T. BUTTER, MELTED

- 1 T. BROWN SUGAR OR SUGAR OF CHOICE

- 1 TSP KOSHER SALT

Place the sweet potatoes on a lightly oiled baking sheet or parchment paper. Bake the whole sweet potatoes until they are roasted and cooked through, 45-60 minutes. Set aside to cool.

In a large food processor, pulse the walnuts and pecans until you get a breadcrumb texture or the texture of your choice. Pour the nuts into a separate bowl then toss with the butter, brown sugar and salt. Set aside.

Carefully peel the sweet potatoes, ensuring they are cooled enough to touch. Place the peeled sweet potatoes in the food processor. Pulse or puree until mostly smooth.

Add pumpkin puree, melted butter, egg and seasonings to the sweet potato puree and pulse or puree until smooth.

Lightly oil or butter a 13x9 casserole dish. Spread the sweet potato and pumpkin puree into the dish.

Sprinkle the pecan mixture on top of the puree. Bake at 375 degrees for 20-30 minutes or until the center is hot and cooked through (bake times vary due to type of oven).

This year’s last installment of Clay Camp will include 50 rounds and clays in a super sport format on the Member’s Oak course. A super sport course is designed to provide a greater variety and challenge by utilizing three traps at each station to launch a combination of singles, report pairs and true pairs. For single targets, you have full use of gun, where if the first shot is missed, a second shot may be taken to break the clay. $50 per person. Reservations required.

Conservancy Educator, Aaron, will review each submission to ensure the photos meet all requirements. Approved entries will be sent to the Conservancy team to be judged in a blind judging.

Prizes

Each month, the 1st place winner will receive a prize from the Conservancy. Our top three participants will also receive raffle tickets (3 tickets for first place, 2 tickets for second place, and 1 ticket for third place) that will go into a pot for the chance to win a pair of Burn Fest tickets.

Rules:

1. Submitting a photo to the Palmetto Bluff Conservancy photo contest gives the Palmetto Bluff Conservancy permission to use the photo for posts, publications, products, and advertising.

2. Each participant may submit one photo per month related to that month’s theme. The photo does not need to be taken within that month.

3. All images must be taken in the South Carolina Lowcountry.

4. All photos must have complete information attached, including subjects, dates, and locations.

5. Animal and plant photographs must be wild; no captive animals or planted specimens.

6. The animal must be alive, and the photo be taken under natural conditions and in an ethical manner that places the welfare of the subject above the photographer’s desire to obtain an image.

Play with fire with encaustic visual artist Pam White! Based in Bluffton, South Carolina, Pam uses encaustic wax, which allows her to mix natural elements of the Earth into each piece. She paints water using fire and manufactures her interpretation of what she sees. The unpredictability of the encaustic wax medium is a constant inspiration and challenge for her, which in turn inspires and helps her continually challenge herself to grow as an artist.

Each quarter, a new artist will be featured in the lower dining section of Octagon, bringing the beauty of the Lowcountry’s fields and waters to life. As you dine on dishes inspired by the region, explore the artist’s work and let their creations tell the story of this natural landscape that is rich in culture. For the months of October – December, as we focus on our Community, we are pleased to host local artist Amiri Geuka Farris, who celebrates the spirit of the Lowcountry through his work. In this exhibit, named Reemergence: Color and Community, Amiri invites viewers to explore themes of cultural identity, connection, and renewal. Created exclusively for Montage Palmetto Bluff, this dynamic body of work blends abstract forms, figurative silhouettes, and collage to explore his Gullah Geechee heritage through a contemporary lens. Each canvas bursts with energy, echoing the rhythms of community, the spirit of resilience, and the beauty of the Lowcountry. Reemergence celebrates color as a powerful force for unity, storytelling, and shared humanity. Amiri’s work has been featured in over 50 solo exhibitions nationwide, including at the United States Capitol. Named Artist of the Year by the Penn Center in 2008, he continues to garner international acclaim for his inspired and diverse body of work.

Spotlight on Service Brewing Company Octagon, Buzz, River House, & Hush Montage Palmetto Bluff restaurants are proud to carry Service Brewing Company products—during Veterans Month, and year-round. A West Point graduate and former Army commander, Kevin Ryan was ready for a new mission—one unexpectedly sparked by a Valentine’s Day gift. When his partner, Meredith Sutton, asked him about his interests, craft beer topped the list. Instead of a six-pack, she gave him home brewing supplies, igniting a hobby that quickly grew. In 2014, Kevin and Meredith launched Service Brewing with the help of nearly two dozen investors, most of them Army, Navy, and Marine Corps veterans. Kevin still leads the company, continuing to develop recipes and research the craft. Meredith, a SCAD graduate, designed the stunning Savannah tasting room based off of the stories Kevin told about his military experience and has creatively built the brand to pay homage to American military history. With the help of an eager and thirsty community, Service Brewing has helped raise tens of thousands of dollars for local, regional and national organizations that assist our veterans and first responders.

Artistry in Octagon celebrates the vibrant connection between local art and cuisine. Each quarter, a new artist will be featured in the lower dining section of Octagon, bringing the beauty of the Lowcountry’s fields and waters to life. As you dine on dishes inspired by the region, explore the artist’s work and let their creations tell the story of this natural landscape that is rich in culture. For the months of October - December, as we focus on our Community, we are pleased to host local artist Amiri Geuka Farris, who celebrates the spirit of the Lowcountry through his work. In this exhibit, named Reemergence: created exclusively for Montage Palmetto Bluff, this dynamic body of work blends abstract forms, figurative silhouettes, and collage to explore his Gullah Geechee heritage through a contemporary lens. Each canvas bursts with energy, echoing the rhythms of community, the spirit of resilience, and the beauty of the Lowcountry. Reemergence celebrates color as a powerful force for unity, storytelling, and shared humanity. Known for combining artistic expression with environmental storytelling, Amiri’s work has been featured in over 50 solo exhibitions nationwide, including at the United States Capitol. Named Artist of the Year by the Penn Center in 2008, he continues to garner international acclaim for his inspired and diverse body of work.
