• Our readers would like to know if you're fond of cooking? If yes what is your special contribution to the elaborate menu?

To tell you the truth I use to cook in College in America as a student, but not now!

• Tell us your day-to-day responsibilities?

Everyday is checking the prep in the kitchen, taste the soups and sauces to ensure that they are not off in any way! Also closely examining the hygiene and cleanliness of the front and the back of the house! Furthermore, checking the paper work , getting the feedback from the Managers , Chefs, Purchase Department, briefing the staff telling them what is expected of them...general pep talk!

• Tell us the best & worst part about this job?

The best part is that when I come to Zouk nearly every day it perks me up and invigorates me to do my best!

• How did you come up with Cafe Zouk?

Tell us a little about your journey?

Zouk was based on the American Cafe Concept where large portions were served in individual servings!

• How and Why did you decide to pursue your career in the restaurant business?

I felt that there was a market in Lahore that had not been touched , with the Concept based on the lines of an American Cafe! Mostly Chinese restaurants were prevailed in the city in those days, which were the typical "donga"scene! We tried to cater to all the senses like taste, aroma, sight etc! We were the first to play loud music and generally wanted to give it a night club look and ambiance without the dance floor.

• Congratulations on Cafe Zouk's 22nd anniversary. Do you plan on opening up another branch in Lahore or another city in the near future?

Also the cheerful ambiance contributes to the positive mood! Worst thing is the stress of ensuring that today's operation goes smoothly without any hitches! Also repeating the same instructions to the staff daily for 22 years!

• Do you feel like there is a lot of competition with lots of new restaurants opening up?

Yes these days there is a lot of competition but one needs to stay focused on the daily routine and keep doing your very best to run a successful operation!

• Are you planning to add onto the menu?

We constantly keep adding and subtracting dishes after a few months in the menu!

• Give us 3 tips for running a successful restaurant?

1 Make sure your staff understands what is expected of them and to maintain the set standards laid down!

2 Handling the staff issues, their training, to clear any problems they may be encountering work wise.

3 Closely monitoring purchasing quality, food cost, checking equipment worthiness!

• Our readers would like to know a little about yourself? Where are you most likely to be found on weekends?

I eat Zouk's food often and sometimes bring my desi food from home!

• Any advice you'd like to give to a junior you, who would like to step into the same field?

My advise to juniors is to fully understand the requirements of the restaurant business and preferably to get a Hospitality Degree! I have a Masters degree in Hospitality Management from Florida!

• Lastly, What's next for Zouk? Where do you see Cafe Zouk in another 5 years?

Really just hope we are still around after five years and maybe to open branch or two by then!
