Weight, Don’t Tell Me... Social media posts from the fat side of the moon MAY 1: I just finished my first day of P90X-3. I can’t wait until 89 days from now, when I can look back and think, “What an incredible workout I had two days in a row three months ago.” #readyforaburger‬‬‬

MAY 4: P90X-3, Day 4 — Pushups and pull-ups. Dude on video says to write down how many I do, so I can remember next time. For the first round, I write “2.” After the second round, I choose not to write “1.” That’s the kinda shit I can remember. #gravitysucks

MAY 2: P90X-3, Day 2 — My wife gave me two scoops of workout-accelerator powder before I went into the garage/gym/kid’s playroom. Second worst 30 minutes of my life. (The first worst was yesterday.) Now, my fat hurts. Far from ripped; closer to ripping open a Snickers. #myscaleisanasshole‬‬‬

MAY 6: P90X-3, Day 5 — I insert the DVD and start trying to be “X-like,” as per the fitness zealot’s commands. Twenty-five minutes into the 30-minute workout, Simone walks into the garage and points out I’m doing the wrong routine. Turns out there are two workouts per disc, and I’ve been doing Synergistics instead of CVX, whatever that means. I’ll probably grow breasts on my back. #effthis

MAY 3: P90X-3, Day 3 — Yoga (in my case, for stiffs). Tony, the instructor on my birthday DVD set, says it’s okay not to touch the floor; toes are fine. I touched a knee. Recovery drink: two ounces Bulleit Bourbon, one packet Stevia, bitters from the grand opening party at Kettner Exchange, ice. #downwardfacingjew‬‬‬

MAY 7: P90X-3, Day 6 — How do you pack 60 minutes of exercise into half-an-hour? The answer is to do two things at the same time: jumping jacks and shoulder presses, lunging and curling, crap like that. My new sweatpants make me feel pretty snazzy. Struggling to keep 10lbs. over my head while squatting doesn’t. I prefer eating and drinking… all simultaneous-like. #stillfat MAY 8: P90X-3, Day 7 — They say Rome wasn’t built in a day. They also say Earth was built in six days (not counting the previous 15 billion years). “And on the seventh day, he rested.” To get this heavenly body back in shape will take the full 90 days, and then some. Today was Dynamix. I did a pigeon stretch and pulled a love handle. #godhelpme MAY 9: P90X-3, Day 8 — Didn’t happen. However, a big dinner at Oceana Coastal Cuisine (the new restaurant at Mission Bay’s Catamaran Resort) did. I guess I’m looking at P107X. #checkplease JUNE 21: P90X-3, Day 32 — I should be on day 52, but I threw in 20 “skip” days for good measure. Arnold Schwarzenegger once said, “If it jiggles, it’s fat.” Then he stopped pumping iron and started pumping the housekeeper. We don’t have a housekeeper. Back to the garage. #downanddirty JUNE 24: P90X-3, Still Day 32 — I missed the last three days in a row. Tonight is deadline night for this BODY ISSUE of PacificSD, so I’m drinking advertisers’ beers and looking for commas instead of working out. “Dad bod” is trending. I look like I ate a dad bod. I had hoped to be ready to be shirtless by July 4. #maybenextyear

t’s the Fourth of July, the time when we ’Mericans celebrate our independence by having barbecues, drinking too much and trying not to blow our fingers off while playing with fireworks from Mexico. But do we take enough time to celebrate where that independence comes from? I’d say no. Our unsung heroes, those who serve in this nation’s military, die for the cause. The give their lives to keep our independence alive, and we’re unimaginably lucky to live here. The term “hero” gets thrown around quite a bit these days. I’ve even heard it used to describe Caitlyn Jenner. While I believe she does serve as inspiration to those who go through similar identity issues, I prefer to use the term “hero” more sparingly. Our brave soldiers don’t get cover stories, high-paid interviews or reality TV shows. They barely get recognition. We give more TV time to terrorists conducting beheadings than we do to celebrating the brave men and women who keep those terrorists off domestic soil. San Diego is a military town. While we’re rejoicing our freedoms and dancing around at pool parties in star-spangled bikinis, let’s consider our neighbors — the families of our fallen heroes — some of whom are mourning the loss of their loved ones. Cheers to America’s heroes. We can party here because they never stop fighting for our rights.

his year’s theme, “Liberty and Justice for All,” commemorates the growing acceptance of the LGBT community and how San Diego’s Pride Parade has been at the forefront of this progress. Over the years, attendance has broadened, making Pride one of San Diego’s biggest events, with more than 100,000 people expected to attend. “Pride is for everyone. It’s a place for everybody to feel free to express who they are and to celebrate each other,” says San Diego Pride Executive Director, Stephen Whitburn. “It’s a party for all people who believe in equality.” This year’s Grand Marshall is not a single person, but rather the transgender

community at large, which marks the first time in Pride’s history that the distinction is being given to a group of people versus an individual. Projected to draw a crowd in excess of 40,000, Pride Music Festival will showcase live performances by more than 120 artists (see below) on five stages in Balboa Park on Saturday (11:00 a.m. to 10:00 p.m., following the parade) and Sunday (11:00 a.m. to 8:00 p.m.). Carmen Electra will host the Main Stage during Saturday evening’s festivities. In addition to the performance stages, the festival includes a wedding expo, the Leather Realm experience, an

he 2015 Comic-Con International sold out faster than Superman can strip down to his spandex — all 130,000 tickets to the four-day fan fiesta were scooped up in one hour. That may not be faster than a speeding bullet, but it is 30 minutes faster than last year, and a record-breaking rate for this signature San Diego event. Local artist shows strokes of genius By Sarah Pfledderer

cclaimed San Diego body painter Lana Chromium isn’t just another pretty face… nor does she create them. Chromium is among a dozen contestants appearing on Skin Wars Season Two, a Game Show Network (GSN) reality TV competition aimed at finding America’s best body painter. The show, which premiered June 10, features host Rebecca Romijn and celebrity judge RuPaul. Having painted for most of her life, Chromium changed her medium in 2010, four years after relocating to San Diego from Russia. She had been getting restless in graphic design and decided to dust off her airbrush from college. “I was ready to try something new and fresh,” she says. “I saw body painting not like face painting or fast work for money. I saw the highest form of this fine art, painting with details and meaning like you would on a canvas.” Fast-forward five years, and now Chromium’s vying for a $100,000 cash prize, an all-expense-paid trip for two to the World Body Painting Festival in Australia and a custom brush collection. “Body painting is a limitless art form,” she says. “It has so many styles and interpretations. I love them all.” Chromium is currently in the midst of making a short film about body painting with her fiancé, who’s also a body painter (she says they don’t practice on each other), and appears to be painting a bright future for herself. Fitness-world superstar grabs headlines, flexes entrepreneurial muscle

aige Hathaway is a body in motion. And, as Sir Isaac Newton’s First Law of Motion reminds us, a body in motion will tend to remain in motion unless acted on by an outside force. But it’s hard to imagine any outside force that could possibly slow the momentum of the dynamic and personable Hathaway, a self-described fitness entrepreneur and motivator. Hathaway, 27, began what she calls her “fitness journey” only about three years ago. In that short span, she has vaulted to prominence in the health and fitness industry. Along with doing media interviews and appearing on the covers of various fitness publications, she’s also the face of Shredz and travels extensively to promote the company’s line of dietary supplements.

he problem with me is I just want to do it all. You know, fitness and getting healthy really changed my life, and I’m very passionate about it. So, I just want to do so much and really touch a lot of people,” says Hathaway, who estimates that her eye-popping photographs alone have attracted about five million followers across the spectrum of social media. Do It Rite Fitness in Oklahoma City was the improbable launching pad for Hathaway’s meteoric rise in the fitness industry, which began when Scott Do, a personal trainer and the proprietor of the small, private studio, first approached her. “He said he would train me for free, and that sounded like a spectacular deal because I was working three jobs just to pay rent,” Hathaway says. “I just fell in love with the gym, and it kind of became like my outlet from my struggles in life.” Hathaway’s struggles included a life divided between her impoverished mother in a singlewide trailer in tiny Madelia, Minnesota, and her father, an Army veteran, in Mustang, Oklahoma. She was emancipated from her parents at age 16 and subsequently earned a high school diploma online.

The 5-foot-6 Hathaway weighed just 100 pounds before starting her workout regimen. She’s now a healthy and toned 130 pounds. “I work out five days a week,” she says. “I like to do highintensity workouts where I’m not in the gym for very long. I’m only there for about an hour, but don’t take a lot of rest in between my exercises.” Hathaway recently started a dietary program called “If It Fits Your Macros.” “You count the macronutrients you put in your body, so that your count is the number of proteins, carbs, fats and also fibers,” she says. “I check those numbers every day using a tracker app on my iPhone. So I can basically eat whatever I want – healthy, obviously – but you just have to hit those numbers.” Helping others to live a healthy lifestyle is a primary focus for Hathaway. She preaches her fitness gospel via personal appearances, on radio talk shows, in specialty magazines and on her website (paigehathaway.com). A dedicated YouTube channel is in the works, as well, she says. “I also have an online training program so that I can work with clients one-on-one,” she says. “And I also have a subscription website [$5 monthly], which is really neat because I wanted to make it very, very inexpensive so that anyone could sign up.” Due to her hard work and perseverance, the future is shaping up nicely for Paige Hathaway. “You know, I got turned down a lot trying to make it in the fitness world, but I never gave up,” she says. If [one thing] didn’t work, I’d try something else. And sooner or later, doors just started opening, and here I am today.”

From an NFL cornerback who tackles the biggest players in the game to a deep-sea diver who dismantles unexploded bombs to a sign language student who lets her fingers do the talking, many San Diegans get physical to get paid. Here are seven such citizens who embody their professions in more ways than one.

Age: 29 • Body of work: San Diego Chargers cornerback PacificSD: How does it feel to have tens of thousands of fans cheering for you? BRANDON FLOWERS: It’s the best feeling in the world. At that one moment, you know everyone is watching just you, cheering for you and your team. It’s kind of weird, because no matter how loud everyone is yelling and cheering, it gets dead silent when you’re about to make a play. How does it feel to win a game? It’s the best feeling in the world. It’s kind of like you always wanted to try your favorite dish on Pinterest, and then you find someone who can finally put it together, and it tastes perfect because all of the preparation you put into it has paid off. That’s what it’s like on the field. So much preparation goes into it during the week that a lot of people don’t see. Hours and hours spent in the meeting room,

a lot of practice, watching films, studying your opponent. And when you get that accomplished on the field, there’s no better feeling. And to lose? It’s tough because you feel like everything you studied for was a waste. We put so many hours — so much blood, sweat and tears — into the game, so when you lose you feel like you let your team down. I judge myself pretty hard, so even if I have the best game I’ve ever had, and we lose, I still feel like there was something more I could have done to help my team. How do you prepare for game? I wake up and make sure I get a good meal in, and I really like to relax. I might listen to slow jams and just calm my body before the storm. Once you hit the field, it’s a hundred miles per hour — fans

screaming, everything. So, I tend to just calm my body and sit with a towel over my face; I almost meditate. What’s the all-time best moment you’ve had on the field? My all-time best moment was my rookie year. I got two interceptions from Brett Farve and I returned one for a touchdown for about ninetyfour yards. And it was in their stadium. So, me being a Brett Farve fan growing up and appreciating everything he has done in the game, and to get my first two NFL interceptions that game, it was just such a great moment. Who most deserves to be tackled hard and why? Any quarterback in our division on a rival team. That’s how we make the playoffs. Everyone on D-line needs to tackle those guys hard any chance they can get.

What do you want to accomplish next in football? I want to win a Super Bowl. That has to be the greatest feeling ever. Every Super Bowl I watch, I wish I was there. Seeing that those guys are that close to fulfilling their childhood dreams; that has to be a special moment. Playing in the NFL is said to take ten years off of your life. If that’s true, has it been worth it? It’s worth it. I was fortunate enough to get some great contracts in this game, and it’s the game I love to play. I wouldn’t trade it for the world. I feel like I was able to financially have my family stable. They don’t have any needs. I can set my daughter up for her future, and her college is paid for. If it takes ten years off of my life, then I had a great life. Let’s just hope that’s a myth, though. july 2015 • PACIFICSANDIEGO.coM

Age: 34 • Body of work: kayak instructor PacificSD: Where do you most like to kayak? DUKE JARBOE: Right here in La Jolla. Even on days off, I take the kayaks out and go as far as I can. We go into the cave, and it’s really cool. There’s a huge sea lion colony right here at the caves. The males can be assholes; I’ve had one poop all over me inside the cave, which was so disgusting. But they are the only colony where the pups are born on the mainland, so they’re really used to being around us humans since they’re about the size of a football. They don’t really bother you, unless you have fish. If you go spear fishing in the cove, then a lot of times they will gang up on you and take your fish. Do you encounter many sea creatures while working on the water? We interact with a lot of sea creatures — sharks, garibaldi fish, turtles, shovelnose guitarfish, sharks and then tons of sea lions, seals, dolphins and whales. The most insane experience I’ve had was a baby sea lion that jumped into one of my client’s kayaks. That was cool. I’ve had a baby grey whale come up and rub right along my kayak. Recently, I got to do a joint venture with another company where we went out and tried to find blue whales, and I got to touch a blue whale right as it surfaced next to my kayak.

Brittany Johnson Age: 21 Body of work: American Sign Language interpreter

PacificSD: What should people who don’t use sign language understand about people who do? BRITTANY JOHNSON: Facial expression is actually part of the grammar, so if you see someone signing and they have a weird face, it’s part of what they are signing. Are there things you can you express more clearly through signing than through speaking vocally? Any story is so much easier to explain using sign language. It’s more direct, but also it’s more visual and really condensed. Instead of saying “there’s a three-car pile up,” you can sign it by using the gesture for car crash and holding up three fingers. For people who don’t sign, what’s another good way to communicate with someone who is deaf? They are very cool with writing it down and passing notes. Or you can also use the notepad on your phone. I know a lot people who do this when they go to order something at a restaurant or a fast-food line. Technology has made communication for everyone, deaf community included, so much faster and easier. Do you ever sign when you’re alone? I catch myself signing all the time. I’ll be in my car and I’ll be signing the lyrics while singing the songs on the radio. How do you envision your career in signing progressing? My ultimate goal is to move to D.C. and specialize in the legal setting, to interpret in the courts there.

Age: 32 • Body of work: Explosive ordnance disposal (EOD) diver — formerly Navy, now defense consultant PacificSD: What’s it like to work on the ocean floor? JASON TEUTON: Depending on where you are diving, it’s either the most beautiful place in the world or the scariest place in the world. Diving off the coast of Hawaii, for instance, is absolutely beautiful; there are a lot of tropical fish and coral reefs to look at. When you’re EOD diving, though, oftentimes you are in deep ocean, where it’s really deep and really dark. What’s the coolest thing you’ve seen underwater? It’s really cool to see the aftermath of explosions underwater, because crabs come out of the sand in masses, and it looks like the ocean floor is moving. What’s the scariest thing you’ve seen down there? I’ve seen a lot of big sharks and eels. Sometimes when you’re resting on a reef, an eel pops its head out next to you when you’re least expecting it and catches you off-guard. But I think the scariest thing is when you are diving at night, and it’s pitch black, and a sea lion decides he wants to play with you. He will pull on your fin or bump into you, and you don’t know it’s a sea lion. Plus, if they want to, they can bite.

Age: 26 • Body of work: boxer PacificSD: What does it feel like to win a fight? MARISA MCELROY: Winning is great. I want to win so bad, because there’s nothing that compares to that moment when the ref lifts up your arm, and everyone is cheering for you. Having a goal and accomplishing it… it’s just a really good feeling. What does it feel like to lose? Losing has to be one of the hardest things, because it hurts. You just feel like you’re letting other people down — your team, your coaches and the people by your side the whole journey. It’s a bummer feeling and hard on the ego a little bit. You go in there and lose it’s like, “Man, what did I do wrong?” It’s a wave of transitions: you’re sad, and then you’re mad, and then you want to get back in there and kick her ass again. Who really needs to be punched in the face? Kanye. He doesn’t smile enough for living the life he lives. His marriage, he has a beautiful daughter, he can fly all over the world and do all these cool things — but he doesn’t smile. He should at least be happy and try and spread some positivity around.

Age: 26 • Body of work: go-go dancer PacificSD: How much of a workout is it go-go dance all night long? MELISSA VILLALOBOS: It’s definitely a workout. You always have to be focused not only on your dance moves, but also on the way your face looks, because everyone is looking at you. Any battle scars from go-go dancing? There was a drunk guy one time and he was hitting on me while I was dancing on top of a bar. And he just kept wanting to get my attention no matter how many times I told him that I was working and he needed to give me some space to dance. He ended up knocking over his drink all over the bar, which caused me to slip and fall into a trashcan. Like, in the trashcan. That was the only time I’ve ever fallen off the thing I’m supposed to be dancing on. Where’s your favorite place to perform? I like to do events like EDC and Nocturnal, all of those huge Insomniac events. I love the outfits that they put together for us to wear, because they are very over-the-top. Also, being on the stage in front of hundreds of thousands of people is really exciting. If you could dance in front of an audience at any time in history, when would that be? It would definitely be the 1920s, during the flapper days. I just like the style and the way they danced. Who’s your favorite dancer to watch perform? Britney Spears’ backup dancers. Age: 21 • Body of work: fitness model and bodybuilder PacificSD: How did you get into modeling? JERDANI KRAJA: I was a Marine and I would always see other people in magazines or winning shows that I felt like I had a better body than. One day, I showed up to the biggest fitness show of the year and took first place out of fifty participants. From there, photographers spotted me, and I started shooting with the top photographers in the world. Do you have any scars, tattoos or other identifying marks on your body? I have a tattoo on my butt. It’s the hand signal for the word “gnarly” and it actually says “gnarly” on the wrist. My buddies and I used to go wake boarding a lot on the lake and we liked to moon other boaters. So we all got them — me and six buddies. We were 16 or 15 at the time. Now I use it as an icebreaker. What’s the strangest modeling gig you’ve been offered? Five grand to do a [pornographic] video. People want to me to do porn all the time. I never would. It would affect my future as a model… and my job as a future fireman. Is that what you see yourself doing after modeling? Yes, I want to be a firefighter; that’s what I’m currently going to school for. Or else I would go be Magic Mike. You would strip but not do porn? Yep, my mom gave me the green light on that. That’s how Channing Tatum was found.

very restaurateur would love to be able tell her team to manor woman-up because a rush is coming, but at most eateries, there’s no guaranteeing a crowd will show. It’s different at The Local, a local favorite since 2003. On the mid-May Monday in

question, Desiderio and her crew faced a countdown to the first lunch service since the place shut down some months earlier for a complete remodel and a major expansion. The upsizing took the restaurant into adjacent premises on Fourth Avenue and on C Street. Now substantially larger, The Local is even local-er. And it’s got beer.

What Desiderio calls “an incredible lineup of beers” is highlighted by a list of draft lagers, Pilsners, wheats, blondes, ambers and reds (there’s also a quartet of quality wines on tap). The Local now has a brewery on the premises, a separate company that is a partner in hospitality but operates on its own liquor license. “The brewery will be called

Resident Brewing Company,” says Desiderio. “We’re two companies. I teamed up with a buddy who was about to open a brewery and said, ‘Why don’t you open in the back of The Local?’ I was kind of kidding, but here we are today.” The brewery’s five partners include brewmaster Robert Masterson, who created the popular Coconut IPA for Stone Brewing. Resident Brewing will open late summer in the former Octopus clothing store on C St. and in The Local’s spacious basement. A glass wall reveals the brewery’s works to sippers in the Resident tasting room, essentially a back bar next to The Local’s shiny new kitchen at the back of the restaurant. “We’ll be using our license

to pour Resident’s products,” says Desiderio. “This is a shared space between The Local and the brewery, and I don’t know if there’s another like it.” The craft draft that will foam from the taps inspired yet another idea. “We have an entertainment license and we’ll have DJs,” says

Desiderio, but there won’t be a dance floor. Instead, she says, The Local will present what she calls Craft Beats, a combination of craft beer and craft music. The menu, titled “Grub,” takes downtown nutrition cross-border. The “street fries,” for example, head south with garnishes of carnitas, cheese, a cilantro cream,

salsa and fresh jalapeños. From over the country’s northern border, the brisket poutine pours beer-enriched gravy over slowcooked beef, cheese curds and a pile of fries. e remembers the precise, curving stretch of the Coronado bridge he was driving on when he had a Eureka! moment and asked himself, “How about a teppanyaki place like Benihana’s?” His extravagant answer opened mid-May as a palatial yet somehow downhome Japanese steakhouse at 126 Orange Ave., just a block from the Ferry Landing, the bay and a soaring vision of downtown San Diego. There’s not a scrap of view from inside, and that’s the point: Shima is a world of its own — a fantasy of a restaurant with amazing décor; a cooking style that verges on performance art; and a mood designed to be welcoming, relaxing, entertaining and fun. “‘Shima’ means ‘island,’ and we’re on an island,” Aaron says. “When I was considering what to build here, I wondered what would bring out the families from

Coronado and San Diego.” While the hibachi menu distinguishes Shima, its sushi and inventive specialty rolls are also a powerful draw. Two vast rooms house a total of nine teppanyaki (cook-top) tables and a sizable bar and lounge. A smaller back room dedicated to private parties and corporate events houses two additional tables and a private sound system primed to play whatever the client desires. “I had all the say-so on the design,” says Aaron, who invested much thought as well as major bucks. Of the glass wall that separates the host desk from the main teppanyaki room, he says,

“You come into the lobby and look through the glass, where I tease you with the sight of a guy cooking on the other side.” Under a lighted-fromabove acrylic ceiling printed with a very Japanese pattern of leaves and branches, the cooks — who rotate among the tables — double as entertainers, juggling sharp knives, creating flaming alcohol “volcanoes” on the flat grills and narrating the action as they slice and flashcook choice cuts of steak, shell and finfish, chicken, and vegetables. price-wise from the $31 Balboa, which pairs teppan-cooked New York steak and chicken breast, to the Coronado King, a $55 feast of prime Wagyu steak and cold-water lobster tail. In the lounge, lifelike potted Japanese cherry trees in full pink bloom hang from sandblasted rafters above a walkway that separates more teppanyaki tables from a bar backed by glowing nature scenes projected from behind seemingly thousands of strips of LED lights. “It looks so close you could get poison oak,” Aaron says. Now, the aspiring restaurateur isn’t noodling around with his ambitions. A second Shima is already in development in Burbank, Calif., a TV capital that attracts lots of tourists, and Aaron hopes for an Aloha! moment by opening a third in Honolulu. “When I got my vision for the place, it was overthe-top, and now I want to build more,” he says. aced with two secret ingredients, fish sauce and sugar, they’re packed with deep, umami flavor and flecked with green bits of fresh basil. The fish sauce lends a salty, meatiness to the burgers without imparting a fishy flavor. The sugar balances the fish sauce. Stacked with lettuce, tomato, mayo and ketchup, the finished product packs an herbal punch with a satisfying savory finish. Ideally, these burgers should be made with ground turkey thigh that includes fat. Thigh meat is tastier and fattier, which means a juicier burger. Ground turkey sold in grocery stores is mainly made from white meat, so ask the butcher if thighs are available (try Whole Foods). Let the butcher grind the meat or grind at home using a food processor. Here’s how: 1. Cut turkey into 1-inch chunks. Transfer chunks to a parchment-lined baking sheet, making sure they aren’t touching each other. 2. Transfer baking sheet to the freezer for 20 minutes. This will help the food processor cut the meat more cleanly. 3. Remove from freezer. Add 1/3 of the partially frozen turkey cubes to a food processor and pulse until the desired consistency is reached. 4. Repeat Step 3 two more times with the remaining turkey. 5. Pick through the ground turkey to see if any larger chucks remain; regrind those pieces. 6. Use the turkey immediately or freeze until ready to use.

Basil Turkey Burgers Ingredients 2 lbs. ground turkey (preferably freshly ground turkey thigh with some fat) 1/4 cup + 2 tbsp. finely chopped fresh basil 2 tbsp. fish sauce 2 tsp. sugar Kosher salt Freshly ground black pepper Vegetable oil, for brushing Toasted buns, for serving Toppings: lettuce, tomato, ketchup, mayonnaise Process Burger Blend. To a large mixing bowl, add ground turkey, basil, fish sauce, sugar and several turns of freshly ground black pepper. Season with 2 or 3 pinches of salt. Using your hands or a set of forks, gently mix the meat until everything is evenly incorporated. Do not over-mix

here as that will result in tough burgers. If unsure how much salt to add, fry a tiny test burger to check the seasoning. Add more salt if needed. Form the turkey meat mixture into 4 patties (1/2 pound each). Fire It Up. Preheat a gas or charcoal grill over medium-high

heat. Brush the burgers lightly with vegetable oil. Also brush the grill grates with vegetable oil to prevent the patties from sticking. Grill the patties directly over the heat for about 4 minutes per side or until cooked through. Let rest for a few minutes before building the burger. I like to cook the burgers to 155°F, and the temp

goes up to 160°F as they rest. Assembly Required. Stack the burger as follows: bottom bun, mayo, burger patty, tomato slice, lettuce, ketchup, top bun. Enjoy immediately!

Brewmaster, Prodigy Brewing Company wo years ago, Dean Rouleau left San Diego Brewing Company’s brewhouse — which he had helmed for years, collecting myriad awards in the process — to launch his own venture, Prodigy Brewing Company. Now, although it’s been a long time coming (and his new place still doesn’t include a tasting room),

Rouleau’s first drafts are finally trickling out to premier craft beer venues across the county. Brandon Hernández: What will Prodigy bring to the San Diego brew scene? DEAN ROULEAU: Authenticity. I’m ready to do my own thing and unleash the flavors I have had in my mind of minds. I believe that personal relationships are much more important than financial gain, and that sustaining the earth is more important than building soulless empires. What direction will Prodigy follow from a brewing perspective? I pride myself on creating gold-medal-winning, hop-forward beers and I’ll continue in that direction. But I don’t want to pigeonhole our brand identity to just hoppy beers. We’ll produce other varieties, focusing on a couple of very well thought-out ales. I’d rather focus on making a couple of superior products than 10 to 12 beers that are just OK.

You have big oak tanks at your brewery. What are they used for? We are in love with our oak foudres. They’re infused with red wine that came from an exclusive, members-only Northern California winery, and we’ll use them to create highly complex, Old World sour beers. You’ll be mentoring young brewers, a practice that inspired your project’s name. Please expand on that. Mentoring has always been a part of Prodigy’s vision. It’s not just about making beer or fabricating equipm ent, but getting people to reach new heights and personal achievements via craft beer. We want others to learn this craft and, by doing so, create a vast network of great brewers. We have created our own tank fabrication shop that will enable us to custom-build brewing equipment right here in San Diego. Our goal is to teach brewing, provide brewing systems and mentor new businesses.

PacificSD: Where are you from? MARINA: I was actually born and raised in San Diego. I come from a long line of San Diegoraised women. My mother and grandmother both grew up in PB.

What do you love about working at PB Shore Club? What’s not to love about my job? I have awesome customers, get to look at the best view in town all day and I get to work with my best friends.

How did you get started in the shake-and-stir biz? It was about six years ago, and I was looking for a job that best suited my outgoing personality and quick wit. So, when the opportunity presented itself, I jumped at it.

What do you most hope to see on the new deck? The new deck has already brought such a great energy to Shore Club. I really hope that everyone can come out and enjoy a Red Bull/vodka slushie or two and catch the awesome sunsets.

What’s the last thing you’d want to see? The last thing I want to see is people forgetting their sunscreen and getting a funny-looking base tan. So let’s remember that SPF. What’s your least favorite drink to make? Honestly, it’s the canned beer. Opening them breaks my nails. What’s the worst pickup line that’s been dropped in your presence at work? The first one that pops into mind

is, “Do you know how much a polar bear weighs? Enough to break the ice.” Pretty smooth. You’re on a desert island with only three ingredients to make a drink. What are they and who are you with? I think I would have to say some tequila, pineapple and oranges. Yum! A simple and tasty treat for me and my companion. I think the only other person who would be as clumsy as me to get stuck on a deserted island would be my best friend, Kia.

ANASTASIA: I love to get outside and be active, whether that be ocean paddle-boarding amongst dolphins or finding cool hiking spots around San Diego. Returning to Earth, the love connection takes root

fter a high-flying hour at Mesa Rim, Anastasia and Jerdani jump back into the limo and head downtown to Rustic Root, the new Fifth Avenue restaurant acclaimed chef Antonio Friscia calls home. When they arrive, they walk inside hand-in-hand and grab a private booth, where they sip craft cocktail shots and look over the menu. Over the course of the next hour, plate after plate arrives at the couple’s table. The array of cuisine and the décor create a feast for the eyes — elk chops jumping off the menu, a metal deer sculpture emerging from an enchanted wall. When dessert is served, Jerdani goes in for a sweet kiss. Then, with the taste of cheesecake and each other on their lips, the daters return to the limo for ride north to Pacific Beach for a nightcap at the all-new Firehouse. Before heading inside, they’re split for mid-date debriefings.

PacificSD: How’s it going so far? ANASTASIA: It’s going really good. It’s a lot more fun than I expected. I’m having a blast, actually. I’m really stoked on it. JERDANI: Great. Better than I expected. What were your first impressions? ANASTASIA: I thought that he was really good-looking. He’s very well spoken. He’s only 21 but he doesn’t act or seem like it. JERDANI: Beautiful, well dressed. She seemed nervous, a little shy. She thought it was cute that I got her flowers and knocked on the door. Is this the type of person you would normally date? ANASTASIA: Probably not. It’s the kind of person I’d like to date. JERDANI: Yeah. I don’t really have a type. I just like what I like: cute, intelligent, attractive. (cont. on page 124)

It was definitely a cool way to break the ice on a first date and do something different. I would definitely go back there. JERDANI: It was more tiring than I thought it would be. It was challenging but it was cool because we got to go through the challenge together and be there for each other. How was dinner at Rustic Root? ANASTASIA: Rustic Root was awesome. We got to meet the

chef and everything. It’s only been open for three weeks, but the menu is incredible. JERDANI: That was one of the best places I have ever eaten at. What did you have to eat and drink there? ANASTASIA: I got the ravioli, and it was delicious. We had the special house whiskey shot with lemon, and then we also had a Moscow Mule. JERDANI: I had the New York steak, the mac ‘n’ cheese, the meatballs, a bite of her raviolis and the cheesecake. I sipped on a Long Island and the signature shot. It was really good. What’s the most attractive thing your date has done so far? ANASTASIA: So far, the most attractive thing he’s done is open the car door for me, hold my jacket, make sure I’m doing okay

— just paying attention. He’ll just pause and look at me and tell me that I’m beautiful. I haven’t heard that in a while. JERDANI: Physically, I like when she bites her lip or when she gets nervous. Once they’ve settled in by the fireplace, the magazine crew finally leaves the couple alone to enjoy the rest of their evening away from the camera. A couple days later, we call to see what we missed. PacificSD: How was Firehouse?

ANASTASIA: Firehouse was a cool venue. The wine was also killer, so I definitely will be back. JERDANI: It was really classy, really cool. What did you do for the rest of the evening after the magazine crew left? ANASTASIA: We had our own cozy section by the fireplace downstairs, so we stayed there pretty late. JERDANI: We continued our conversation at Firehouse pretty late into the night.

When did you get home? ANASTASIA: I got home around 12:30 a.m. JERDANI: I got home around 2:30 a.m. Was there a kiss or romantic exchange? ANASTASIA: Yes, there was a kiss. I couldn’t help myself. JERDANI: There was. How and when did the date end? ANASTASIA: The date ended after Firehouse when the limo took me home to my house in

Pacific Beach. JERDANI: The limo dropped her off at her place and I went back to my house around 3 a.m. What’s the funniest thing that happened during the date? ANASTASIA: The funniest part of our date was when we were taking photos outside the front of Rustic Root. The photographer started telling passers-by that we had just gotten married, and that’s the reason we were taking romantic photos together. The funniest part is I

think some people believed it. JERDANI: Her holding my butt while rock climbing. What was the best part of the date? ANASTASIA: The best part of was trying new things like rock climbing and checking out a rad new restaurant I probably would not have known about otherwise. JERDANI: I think dinner was the best part of the date, because we got to be a little more serious and form a deeper connection.

What was the worst part of the date? ANASTASIA: The worst part was waiting for my date to arrive. I was so nervous with the fact I had no idea who my date was and if we would have fun. JERDANI: I think the way to her house, because my nerves were starting to kick in. Will there be a second date? ANASTASIA: There actually will be. We plan on going to see a movie later this weekend. JERDANI: There’s already been

one. She’s really great. AFTERMATCH: Anastasia and Jerdani rose to the occasion at Mesa Rim, where they scaled indoor cliffs by using (and squeezing) their best assets. They smooched at Rustic Root, made out in the Epic Limo and kept the heat going at Firehouse and beyond. This hot summer romance left little to the imagination, except, of course, what happened in the two-or-so hours between when Anastasia got home and Jerdani got home.

Hmmm… where could he have gone? (Insert inappropriate “root” or “rim” joke here.) Date update: The kissing continued a week after their blind date, when Jerdani and Anastasia arrived together at Jerdani’s photo shoot for this magazine’s feature story (see “Body of Work,” page 70).
