A Tennessee native, Bolton Smith is an undergraduate student at the University of Mississippi, pursuing a degree in Integrated Marketing and Communications with plans to graduate in the spring of 2027. Passionate about fashion, she founded and operates Buttoned by B, a local sports button business. When she isn’t studying or working, Bolton enjoys spending time with friends and playing pickleball.

The Driskell family’s covid renovation A Grand (Oaks) Adventure

When Brooke and Mitchell

Driskell and their two sons moved from their first family home near the square to Grand Oaks in August of 2020, during the height of the COVID pandemic, they traded the convenience of Square living for the gift of space for a growing family and proximity to neighbors and friends for their children.

“I had moved into our square home in 2002 and renovated it for my needs as a single law student,” said Brooke, “When Mitchell and I married, he moved in and we started our family.

With the help of architect Jonathan Mattox, the Driskells had renovated theentire house, added a master suite,

playroom, laundry room, and a basement forstorage and a new side entry with mudroom.

“We took our 1960s ranch and modernized it to work for our growing family. We enjoyed the ease of getting to the square and campus, but as our boys were getting older, they wanted to live in a neighborhood with friends,” she said.

Over the course of a few years, the Driskells toyed with the idea of moving to Grand Oaks, but had not found the right fit. In June 2020, a home on Majestic Oaks became available, but the uncertainty of the Pandemic left them wondering what the Oxford real estate market would be like in the

coming months. “Not knowing if anyone would even want to go into someone else’s house to look at it, we took a gamble and listed our square home with real estate agent Paige Davis right before the July 4th holiday,” Brooke said. Their gamble paid off, and their home sold within 3 days.

After the speedy sale, things moved very quickly, and within weeks, they were moving into their new home and beginning the process of making it their own!

“We moved to Grand Oaks the weekend before school started in August and immediately began renovations,” Brooke said. Their new Grand Oaks home, built in 1997,

provided them with the perfect amount of space and was in their desired neighborhood. However, the home wasn’t exactly the clean and updated aesthetic that the Driskells were looking for. The space was full of dated colors and patterns, and felt disjointed due to the variety of flooring throughout the home.

Brooke’s vision was to update the space by introducing a more neutral color palette. She prioritized unifying the flooring throughout the main living areas. The very dated kitchen needed an overhaul. However, the Driskells opted to work with other existing elements as much as possible, especially since they were living in the home during the renovation. They worked with Kizer Flooring to select an old reclaimed oak from federal buildings in Cleveland, which helped create a more cohesive vibe in the main living spaces.

All of the walls in the main living areas of the house were painted a warm Dove White, chosen to match the existing plantation shutters and also to provide a neutral backdrop that highlights Brooke and Mitchell’s colorful artwork collection and numerous photographs of their children.

Brooke said, “ I particularly love the boys' portraits over our sofa from a recent trip to the beach. Dianne has photographed them since our oldest was one, so she knows just how to capture their personalities. It is such a gift!”

The kitchen renovation was their most significant project. “We gutted the kitchen and opened it up to make it more family-friendly,” Brooke said. The Driskells had new custom cabinetry installed, painted in the same dove white as the home’s main walls. A white oak island provided a warm, earthy tone, and the oversized brass pendants, which Brooke found at Magnolia Lighting, draw your eye right to the beautiful wood and provide the perfect amount of eclectic interest.

“One of my favorite parts of the kitchen is the Calcutta Michelangelo Italian marble that runs from the counter up the backsplash. While still neutral, its veining incorporates both greys and brown tones, making it very versatile,” Brooke said. “Now that the trends are leaning toward warmer tones, I feel like it will easily make that shift.”

Deviating from the neutral walls that dominate the majority of the house, the dark navy dining room provides a dramatic moment and contrast to the

otherwise neutral downstairs area. The dark walls create a cozy and intimate backdrop for her traditional dining room furniture, reinforcing the home's transitional vibe. Updating the lighting made the space feel fresh and inviting.

Growing Pains and Patience

Home renovations are never as easy as homeowners hope they will be, but the circumstances during the Driskells’ renovation were extra challenging. “Renovating during Covid was challenging. Some days, necessary workers didn’t show up because they had been exposed or were concerned that they had contracted COVID,” Brooke said.

Once again, the Driskells had enlisted Jonathan Mattox to design the new kitchen layout and hired Herrington Jones Interiors to help with other decisions and furnishings.

“We all had to be so patient, Brooke said, “Mary Kathryn and Lauren were a wonderful resource. I knew I wanted a mostly blank pallet to highlight artwork and rugs. This home has much higher ceilings and the rooms are larger than our previous home’s, so we did need to order quite a bit of furniture and rugs.”

her team had to be creative in sourcing items, often making choices based on availability. Luckily, designer Lauren Jones had just returned from an antiquing trip to the Round Top Antique Show in Round Top, Texas, and had brought back several vintage rugs that worked perfectly in the space.

Brooke was also able to get several new items from Sara Sells, a monthly pop-up furniture show in Memphis, eliminating the long lead times that many vendors were experiencing. However, after falling in love with a beautiful green velvet sofa, Brooke learned that some things are worth the wait.

“One of my favorite pieces, a green velvet sofa, took many months to come in, but it was so worth it,” Brooke said, adding that “In hindsight, the delays probably were a blessing. We were not rushed to make selections and had time to live in the space and figure out what we wanted.”

Patience paid off, and the Driskells have updated another space to meet their family’s needs! “We have enjoyed Grand Oaks. Some of our best friends live within four houses of us. Our boys have lots of friends in the neighborhood, and snow days are extra fun with all of the hills!”

Amanda Carper, a Southaven-based creative, understands what it means to love Oxford beyond the surface.

to Oxford: the starting point of her love for art and photography.

“Oxford is where I first began to see the world through an artistic lens,” she says. “There’s a story in every front porch, every brick wall, every quiet street.” To Carper, Oxford is more than just a town—it’s home. Its foundation holds stories that she aims to capture; holding the feeling of comfort that can be cherished by viewers for years to come.

With nearly two decades in visual art, photography, and design, her journey has been an ongoing evolution as she branched into her artistry. Drawn to Photography on her artistic journey, Carper was taught the importance of how to frame a moment; telling a story without the use of words. She states that her turning point came

when blending photography with digital painting spoke to her. The merging of her practices reimagined familiar scenes from Oxford in a more expressive, personal way. The fusion of her techniques helped define a more precise artistic style that spoke to Carper, allowing deeper interpretation, rather than just documentation.

Through her lens and palette of colors, Carper hopes her art brings a sense of warmth, connection, and nostalgia— whether it’s a painting of a landmark or a photo of a quiet moment. “My goal is to create work that resonates with others, that sparks a memory or emotion,” Carper states. “[As well as work] that honors the deep sense of place we’re so lucky to have here.” She desires to remind people of the places they hold dear and the stories tied to

them, especially within the Mississippi communities that have shaped her own story and artistic lifestyle.

At the heart of every media piece created is an element of the town’s character. With her lens or her brush, she admires everything from the changing seasons to personal memories, complete with familiar landmarks, and the sense of nostalgia that certain places bring. Her deep desire to capture the living is what draws her to share her craft, illustrating the deep emotion and emotional stories woven into the place that many are lucky to claim as home.

Nancy Opalko’s Art: Weaving Vine to Vision

Across the southern states of America, an invasive species of vine weaves its way through the natural brush. Native to Japan, the sprawling “vine that ate the south”, kudzu, creeps and climbs on everything. From telephone poles, forests, and abandoned homes, the plant blankets them in green. Whilst threatening to the indigenous species of Mississippi, basket weaver Nancy Opalko sees the beauty and the chance to create from these vines.

Originally from coastal South Carolina, Opalko has always been drawn to the natural world. Whilst vastly different from northern Mississippi, she enjoyed her time amongst the beach searching for crafting treasures: shells punctured by natural erosion and driftwood worn by the lapsing waves. She recalls her childhood to be filled with immense passion that drew her to drawing and crafting, setting her on an artistic journey conjoined with the elements of the living

world.

Opalko has been settled in Oxford, Mississippi for 33 years now, following her time at Graduate School at the University of Mississippi with her husband where she received a masters degree in English. Conveniently, the married couple found jobs in the charming college town, where Opalko retired in 2018. With more time on her hands, she began turning her attention back to her artistic roots: weaving,

writing, reading, drawing, painting and so forth. Opalko realized that with her passion for both artistic expression and her admiration for the Oxford community she could give back by sharing her creativity with others.

To Opalko, “Kudzu is Mississippi and Mississippi is kudzu.” Her studio is nature right outside her backdoor, where the local woods supply her with the vines necessary to weave her baskets. She indulges in the quietness of her surroundings that highlight the sounds of nature, creating a sense of oneness with her earthly place of work.

The aroma of the splitting plant and the touch of its tendrils lie at the heart of why Opalko weaves. She believes kudzu has a mind of its own; no two baskets are identical. Time and time again, she is drawn to the vines’ potential to become a beautiful creation of her own doing. “I

hope people can see that even though kudzu is an invasive plant species,” says Opalko. “ It can be used to create beautiful and useful objects.”

She pulls her inspiration from the lushness of Mississippi, fueling her creativity to bend its environment into something to be admired and shared with its inhabitants. Connecting back to her place of lineage, Opalko also admires the craft of the sweet grass basket weavers who practice amongst the coast of the Carolinas. Albeit a different style of weaving, she is inspired by the technique and dedication that their work involves.

Outside of basket weaving, Opalko is one of Oxford’s most beloved Children’s Librarians, well known for her puppeteering at the Lafayette County & Oxford Public Library. After discovering the support and opportunities offered by the Yoknapatawpha Arts Council, she

received a grant that allowed her to invite kudzu artist Mark Barnes to teach a workshop at the library. Barnes returned several times, sharing his skills with both children and adults in the community. The opportunity to weave with him became a major influence on Opalko’s artistic journey—a turning point in both her teaching and creative life.

Opalko feels truly supported by both the community and YAC. Teaching classes— whether in basketry, writing, or puppetry— has helped her build confidence in her craft and develop meaningful connections from her work in Oxford.

Oxford’S New-Music Scene Surges

Golden Teacher Society and others lead the charge in a new local music scene

One of a handful of young bands regularly playing around the Oxford Square this past year is Golden Teacher Society, a four-piece rock band made up of Ole Miss students, half local and the other from Jackson, MS.

After doing some open mics at Rooster’s Blues House, guitarist & singer Thomas Turner and bass guitarist Henry Primos Smith finally settled in with Aiden Chapman on lead guitar and Joe Wells, the most recent addition, on drums.

Thomas recalled meeting Aiden in his economics class because he mentioned that his outfit looked cool, and then, “He just so happened to play guitar.”

After working with several drummers, Thomas eventually connected with Joe in a similar fashion, in front of The Lyric Theater, while complimenting his durag.

“Interesting little moments got us all together,” he said. “Clearly, it was not me doing the connections, but someone up above. It’s pretty great how we all got together just around music and loving people, and wanting to spread our energy with others.”

Henry described their sound as “Alt surf rock,” as they are deeply influenced by classic California bands like the Grateful Dead and Sublime, plus new ones like Sun Room, who gained huge

“Those cats are putting down similar tunes to what we’re about,” said Thomas, regarding the essence of the band’s music, which he calls “high energy.” Although the sound draws from surf rock, a “very simplified” version is how he described it.

Being enormous fans of both reggae and classic rock artists, Thomas likened the band’s sound to when you might “mix the two together.”

As a result of a contest held on April 1st, Golden Teacher Society headlined the second annual Local Music Night at Proud Larry’s, held by the University of Mississippi’s student-run station 92.1 FM, Rebel Radio.

Not only was the show GTS’s first headliner at the renowned Oxford music venue since they first played in January 2024, but the performance also solidified Henry’s role as the band’s steady drummer, moving forward

towards springtime.

“It was just a lot of new-music energy,” Thomas said. “That was a great show.”

Besides Proud Larry’s, they also regard Hal & Mal’s, Jackson, MS’s cornerstone music venue, as home turf, and the band had a great turnout for a holiday show in December 2024.

Although GTS loves to honor their musical influences on stage, they have also incorporated several staple originals in the set. Earlier this year, they dropped a debut EP, Release 2: ELECTRIC BOOGALOO, on all of the digital streaming platforms, which is the follow-up to the April 2024 single, Beast Of The Concrete.

The EP starts with the dynamic Belcourt, featuring nicely layered background vocals on the choruses, harking back again to California influences.

Also a band-favorite, the affectionately

titled Suzie Badass (aka Suzie B.)which honors a dear friend named Suzie Brown, and the lyrics of the song refer to her as an “angel from above.” Suzie B. has not only become a staple in the band’s live set, but has also proven to be an easy draw for folks to the dancefloor.

Another work in progress for Turner is the song Wildflower, which was written about a distant love affair. “My guitarist came up with a great riff and that really set the tone,” he said, and that the song exceeded his earliest expectations.

“This one definitely gets people to dance,” said Thomas, which is the overall goal of most of the band’s repertoire. “Making people smile and dance. I think that’s really what the tune does.”

another hard-working young local rock band.

In the coming months, GTS is looking to tighten its sound, create new setlists, and book local gigs, all while working on releasing live material. They are also developing about a dozen original songs currently on the drawing board.

Additionally, the band would like to expand its audience and focus on booking a larger number of fraternity and sorority events.

Also, pursue festivals in Jackson, where they aim to maintain their tight fanbase. Plus, hopes are to pursue a collaboration with The Weeks, another hardworking rock band from that area.

“The fact that Oxford has been so supportive of the arts - that is something that has really inspired me as a musician to make music in Oxford,” said Thomas. “I think Oxford is the place to be.”

According to Turner, the local music scene is finally coming alive. “We have such a well of great artists that come through here, and that are from here. I’m really happy to see the change - even within the past year. Just how much people are willing to support local music in Oxford. That’s something that both as a musician and as a local, I am really proud of.”

Oxford author Michael Farris Smith launched his eighth novel, Lay Your Armor Down, on May 27th at Off Square Books, where he was in conversation with John T. Edge, who is always great with the audience.

From there, Smith hit the road, but this time with a guitar. His second book talk was at Cathead Distillery in Jackson, MS, hosted by Lemuria Bookstore, and was followed by a live set from his rock band The Smokes, who also joined Smith on his 2024 debut album, Lostville.

Another nice touch to the event was a signature cocktail inspired by Lay Your Armor Down, called The Southern Grit, which was mixed by Maeve Bradley, Consumer Experience Manager at Cathead Distillery.

“Appropriate and fantastic,” said Smith about the beverage theme.

Some book events are over and done within a half hour, but at Smith’s June 12 talk in Meridian, MS, there was a screening afterward of his recent short film Chasing

Rabbits, which also played at Oxford Film Fest.

“I decided at the beginning of this tour that I wanted to have a little fun and do something different, which I think bookstores and venues have really appreciated,” he said.

In his powerful latest book, Smith delivers a stirring, lyrical study on

several broken individuals bound by violence, memory, and the desperate hope for redemption, while trying to outrun danger’s dark grasp.

Rich in spiritual undertones and Southern gothic atmosphere, the story begins with an elderly woman, riddled with dementia, wandering barefoot through the woods in the middle of the

night, confused and anxious with a head full of broken memories.

Also, with the discovery of a brutal carnage scene at a church, by two men - Keal, a young dream-plagued drifter, and Burdean, a seasoned enforcer. Then, unexpectedly, in the basement, the men come upon a mute, mysterious, wide-eyed girl who may have supernatural abilities.

Dementia-ridden Wanetah is at the core of the novel, as her confused mutterings are given depth and empathy, and not just looked down on as a medical condition, but also as a symbolic unraveling of time, identity, and purpose.

Smith said the first scene of the story gnawed at him until he finally put it to page. “As a writer, it was fertile ground, her with dementia. I had this kind of blend of what’s real and what’s imagined

that I could lean into.”

He called her running aimlessly in the dark woods “beautiful and scary at the same time.”

The scene eventually got the story rolling for Smith, and the circumstances made him “scared for her” and have “empathy from page one,” he said. “I was worried about her and wanted to see what would happen to her.”

This was a perfect blend, making it “layered right out of the gate,” Smith said. “I was already in love with the character. That’s always a sign to me that it’s a story I need to follow.”

Wanetah’s erosion brings a sense of obligation to those she comes in contact with - particularly Cara, a woman stricken with grief since losing her daughter. Cara is drawn to her in a way that eases her emotional crisis.

As the characters gradually fall deeper into a whirlwind of danger, with sinister men in pursuit, they are forced to reconcile with their own haunted pasts. They all find themselves attached to

the mysterious child and fading woman, while each is forced to figure out whether to keep bearing their burdens, or at long last lay their armor down.

At its core, Lay Your Armor Down is a raw, redemptive meditation on what we carry, what we let go of, and how even in ruin, there still could be a chance for grace.

It’s the smallest cast of characters yet in a Smith novel, so of course, interactions between Burdean and Keal are central. So much so, that he said their banter “could have filled maybe a hundred more pages,” jokingly.

“When I sat them down at that truck stop in the middle of the night across from the table from one another, I had the feeling this was going to be the dynamic kind of relationship I always look for,” he said. “You have two guys out in the middle of the night up to no good, but at very different stages of their lives.”

Imminent danger lurks behind every corner of the story, and it comes in a very vague form. “The faces behind the real

darkness remain largely off the screen, which I think makes it feel more tense, uncertain, and scary. To me, the things that cause the most distress are those you can’t quite put your finger on. Like, you know there’s something out there, you know there’s somebody who is wreaking havoc and is a threat, but you’re not exactly sure who or where they are,” said Smith. “That’s very tough to deal with. I think uncertainty is the thing we all deal with in our lifes every day.”

It’s clear that the little girl rumored to control the weather in his last book, Salvage This World, is the same being hidden and hunted in Armor - showing the author’s inclination to tie stories together subtly.

Keal and Burdean are tasked with wrapping their heads around what’s going on because they can’t seem to pinpoint much of anything. “So, how do you traverse through trouble like that? It becomes exponentially greater to deal with,” Smith said. “I think the reader can participate as well - trying to make sense of it all.”

Whiskey Ranch Blazes a Trail on the Oxford Square

IIn January 2025, David Grayson’s Backwoods Hospitality Group opened ‘Whiskey Ranch’ in the old ‘Burgundy Room’ / ‘Summit Bar’ location, and with occasional use of the downstairs, formerly ‘Venice Kitchen’/’Secret Grilled Cheese,’ under the name ‘1929 Speakeasy’ during busy weekends like Double Decker. But Grayson has visions beyond just filling the void left by these classic Oxford institutions.

When Venice Kitchen closed its doors a year ago, it was the end of an era, led by Jim Bulian at the 1112 Van Buren location on the Square – the closing of “secret grilled cheese bar” and Old Venice Pizza Company, (most recently Venice Kitchen), as well as a student-favorite bar upstairs (Burgundy Room, then the Summit). Bulian’s restaurants occupied the location since the mid-90s, and while other locations remain open, the Oxford location shuttered at the end of 2024.

Enter David Grayson. Grayson is excited to infuse a new flavor of restaurant into the Oxford food scene, but he’s not new to the restaurant business. Having grown up in Hattiesburg, MS, and a long-time friend of Robert St. John, he spent many years working in and opening bars and restaurants in H-Burg. Grayson has a long-term plan to build concepts that can be scaled to any college town.

“I have lived in Oxford now about fifteen years,” said Grayson, “and you know, one of the things I realized that

was kinda missing is that there was not really a true country-themed concept in Oxford or nearby. The opportunity to start one in Starkville came up, so we originally put a Whiskey Ranch in Starkville.”

Grayson opened Whiskey Ranch in Starkville, MS in June 2024 with partner Zack Collier, who manages the food service/back of house operations. Collier will also manage the operational aspects of the Oxford location of Whiskey Ranch and Grayson’s continual evolution of ‘Speakeasy 1929’.

Venice Kitchen is being transformed into a new fine dining restaurant, named Estelle’s. Many literary aficionados and Oxonians will note that 1929 was the year William Faulkner married his wife, Estelle. Locals will have to wait until August 2025 for the new restaurant to open it’s doors. With the opening of ‘Estelle’s,’ Grayson seeks to expand on the allure of Faulkner’s Alley and a time gone by. Estelle’s will be a fine dining establishment showcasing what Grayson describes as “southern French cuisine, but with good, simple, locally sourced food, and a focus on impeccable service.”

Those looking for a taste of Collier’s food here in Oxford can explore the limited menu upstairs in the meantime. Whiskey Ranch currently has a food menu and cocktail menu, which may see some changes after Estelle’s opens in August. The current menu contains classics like chicken tenders, fries, sausage and cheese plate, and a chicken Caesar salad. Drinks are a fun twist on cocktail classics such as the Cattleman’s 75 and new pleasers such as the Whiskey Round-up, Tequila Trailblazer, White Chocolate Wrangler, Tea Time, and Cowboy Coolers. Grayson and Collier have plans to later expand the upstairs bar menu offerings, and test out a late-night menu, as well as offer catering for special events.

The menu at the Oxford and Starkville locations are driven by Zack Collier, Grayson’s business partner. “He is the ‘voice,’ the maestro of the kitchen,” said Grayson about Collier. “I tell everybody if Zach says ‘Let me cook for you,’ you should just say ‘yes!’ and enjoy it, because it will be amazing!”

“Our goal here at Whiskey Ranch is to be a casual country bar,” said Grayson. “We’re not going for cowboy hats, cowboy boots. It’s just more casual country theming.” The Starkville Whiskey Ranch location boasts karaoke, bingo, and music, which are all things the Oxford location may see offered in coming months. Birthdays, fraternity/sorority parties, and more are now all options with Whiskey Ranch open for private events.

Grayson has another concept in Water Valley, called Courthouse Café. It was originally a coffee shop, but now boasts a breakfast and lunch menu, and a few nights with a dinner option (i.e. Taco Tuesdays). Courthouse Café stays open late some nights with wine and other beverages, providing a much-needed third-place option in Water Valley.

“I really want to bring the next level of service to Oxford and something different,” said Grayson.

Grayson’s years in the restaurant industry have given him a focus and attention to certain aspects of fine dining, which he feels he can take up a notch with Estelle’s from what is currently offered in Oxford.

“I believe people come to a restaurant for the experience, so we will have a high focus on that.”

Bremma’s is a family endeavor through and through. The name combines Brooke and Emma, Laurabeth’s daughter, who became best friends while working together. “Brooke

would work all day at Fergndan’s, then go home and bake because she loves it so much,” Laurabeth recalled. “That passion is why we opened Bremma’s and why there are two girls on our logo.”

The decorated cakes at Bremma’s are also showstoppers, thanks to a talented team of four main decorators, including Brooke, her sister Heather, and gifted artist Christopher Schove. Kelli Russell, the former owner of The Cakery, helps out on weekends, along with her cousin Patricia, who also makes all of the bakery’s beloved bars. “We love to exceed our customers’ expectations with the amazing designs we can do on our cakes!” Laurabeth said.

Regents fourth-grade teacher Tracy Knox said winning Best Teacher K-12 is just a little more special this year. Knox, who is beginning her 13th year at Regents and her 43rd year as an educator, announced that this school year will also be her last before retirement.

Knox, an Ole Miss graduate, always hoped to return to Mississippi, and said the recognition feels like “a nice kind of gesture on my way out.”

Before joining Regents, Knox taught at several private schools in Memphis. Since arriving in Oxford, she has dedicated her time exclusively to teaching fourth grade and has been a steady presence during the school’s growth. Fall Recipes

Tomato Tart

Filling Ingredients

‣ 2 pounds heirloom tomates

‣ 3 medium tomatoes

‣ 1 handful of cherry tomatoes

‣ 1½ tbsp egg white

‣ 1 tsp Dijon mustard

The Crust

‣ ½ cup parmesan cheese, grated

‣ 8 oz goat cheese (herbed is nice)

‣ ¼ cup fresh basil leaves

‣ 1 tsp olive oil

‣ 1 tsp honey (optional)

‣ black pepper to taste

1. Preheat oven to 350°F. In a bowl, mix flour and salt. Add olive oil and 3 tbsp water to the center. Gently mix, adding more water as needed until a soft dough forms. (Mix as minimally as possible to avoid activating the gluten which can produce a tough textured crust.)

2. Roll out the dough (or press it into the tart pan). Transfer to a 10" tart pan and poke holes in the bottom with a fork.

The Filling

1. Cut the tomatoes into 1/4-inch slices. Lightly salt each side and spread them out on a rack. Leave to drain for 30 minutes

2. Assemble: Make sure the crust is cooled. Crumble the goat cheese over the crust. Tear basil leaves over the top. Blot the tomatoes of excess moisture. Arrange them on the tart. Drizzle olive oil and honey (if using) over the top.

Crust Ingredients

‣ 2 cups all purpose flour

‣ 10" tart pan with removable bottom

‣ ½ tsp salt

‣ ½ cup olive oil

‣ 3-4 tbsp water

3. Bake for 10 minutes, poke any bubbles, then bake for 15 more minutes. Whisk egg white and Dijon mustard. Brush over warm crust, then sprinkle with parmesan. Bake 5 more minutes.

4. Let the crust cool. Increase oven temp to 425°F.

3. Sprinkle with black pepper.

4. Bake at 425 F for 25-30 minutes.

5. Garnish with basil leaves and flowers.

This tart is best served within a few hours of baking, but leftovers are still good! Heat them up in an air fryer or toaster oven.

Blackened Fish Taco Bowls

Blackened Fish:

‣ 4 filets of white fish (tilapia, cod, mahi-mahi)

‣ 1 tbsp olive oil

‣ 1tsp smoked paprika

‣ ½ tsp cumin

‣ ½ tsp onion powder

‣ ½ tsp salt

‣ ¼ tsp black pepper

‣ ¼ tsp cayenne pepper

‣ juice of 1 lime

Instructions

Taco Bowl Base

‣ 2 cups cooked white or brown rice (or cauliflower rice for low-carb)

‣ 2 cups shredded lettuce

‣ 1 cup black beans, drained & rinsed

‣ 1 cup corn (fresh canned, or grilled)

Toppings:

‣ 1 avocado, sliced or mashed

‣ ½ cup pico de gallo

‣ ¼ cup chopped fresh cilantro

‣ ¼ cup crumbled cotija cheese

1. PREPARE THE SPICE BLEND: In a small bowl, mix together smoked paprika, chili powder, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

2. SEASON THE FISH: Pat the fish fillets dry with a paper towel. Rub each fillet with olive oil and coat both sides evenly with the spice blend. Squeeze fresh lime juice over the top for extra flavor.

3. COOK THE FISH: Heat a large skillet over medium-high heat. Once hot, add the fish and cook for 3-4 minutes per side until blackened and flaky. Remove from heat and set aside.

Creamy Sauce:

‣ ½ cup Greek yogurt or sour cream

‣ 1 tbsp lime juice

‣ ½ tsp garlic powder

‣ ½ tsp chili powder

‣ ¼ tsp salt

4. MAKE THE CREAM SAUCE: In a small bowl, whisk together Greek yogurt (or sour cream), lime juice, garlic powder, chili powder, and salt. Adjust seasoning to taste.

5. ASSEMBLE THE TACO BOWLS: Divide the cooked rice into four bowls. Add shredded lettuce or cabbage, black beans, and corn. Place a blackened fish fillet on top of each bowl.

6. ADD TOPPINGS & SERVE: Top each bowl with avocado slices, pico de gallo, cilantro, and crumbled cheese (if using). Drizzle with the creamy sauce and serve with lime wedges.
