I missed the first wave of the hobby during the pandemic. With a newborn at home, I had enough on my hands. But when a friend offered me her starter in 2024, I said “why not.”

There are many factors to consider when embarking on a renovation project – outdated style is not at the top of the list!
DETERIORATION
Like the human body, our homes need constant care and maintenance to keep them in good condition. The age of a house can impact the performance of behindthe-scenes systems, which may require some attention or an upgrade to perform their best. Or perhaps you fell in love with a property, but the house was a fixer-upper with sure signs of wear. Or there may be mould that needs remediation. Structural and safety elements, mechanical systems and building envelope upgrades (i.e. sufficient insulation, energy-efficient windows and doors and a solid, waterproof roof) should take priority over cosmetic improvements.
VALUE
Understand the resale value of homes in your area to ensure an investment in your property makes financial sense. Even if you love the location and intend to stay longterm, there are always extenuating life circumstances, and you don’t want to be upside down should you have to sell. Depending on the scope of the renovation, it might make more sense to move into a new home that checks more boxes than your existing one – and you can also sidestep the stress and expense of a renovation.
FUNCTIONALITY
When moving into a new home, it can be tempting to renovate right away; however, remember that renovating is much more involved than refreshing a space with a few coats of paint. There are small-scale updates you can do in the short term so your home reflects your style without committing to a full renovation. Allowing yourself to live in a home as-is (layout-wise) for a while allows you to discover what works and what doesn’t. You will see where the sun hits at different times of the year and people’s favourite spots to sit and congregate. You will learn whether the mudroom functions well, the laundry room can handle the load, the dining room can accommodate your guests, a fireplace enhances the ambience or if that huge tub warrants the square footage it occupies. Taking your time provides the opportunity to determine your priorities. You can create a solid plan (with limited regrets!) when ready to hit go on your big renovation.
AFFORDABILITY
A renovation will likely cost more than you anticipate. It is very challenging for a contractor to provide an accurate estimate at the outset because there are always unforeseen circumstances in a renovation. Therefore, you should always add a contingency to your budget. Avoid the stress of being stretched beyond your means by ensuring you have the financial ability to fund the project.
STYLE
Aesthetic preferences are personal. Living in a home that does not reflect your taste, personality and life experiences doesn’t feel great. When determining your style, don’t neglect to consider the surrounding site and landscape and the home’s architectural integrity so the finished project is a cohesive package.
A full-scale renovation is very involved and can include anything from re-configuring the layout, adding an addition, upgrading structural elements, new mechanical systems, changing out materials, finishes and fixtures and installing new millwork, furniture, window coverings, area rugs, art, etc. There are many things to consider – know when to hire professionals. A solid team adds insurance to your investment and offers the experience and expertise to help you through the process. OH

INGREDIENTS
1 cup grapefruit juice
2 Tbsp lemon juice
Zest from 1 grapefruit ½ cup honey
2-3 sprigs of fresh thyme
Soda water, to serve
INSTRUCTIONS
Combine juices, zest, honey and thyme sprigs into a saucepan. Heat over medium-high heat until the mixture comes to a boil. Simmer for 2-3 minutes.
Let the mixture steep for 1 hour before straining through a fine mesh strainer. Store syrup in an airtight container for up to 2 weeks in the fridge.
When ready to use, combine 1 ounce of the syrup with 8 ounces of soda water. Serve over ice. OH

JH: Staging importance is directly proportional to how strong the market is. In the heated markets of 2017 and 2022, staging took a back seat as motivated buyers were willing to take homes in “as-is condition” and homes were selling overnight with multiple offers. Getting your home on the market “yesterday” was the key then. In the current more balanced market, home preparation and staging are much more important and advisable. Most fortunately, I believe we have one of the best stagers in the GTA and we offer a variety of different options ranging from simple home preparation tips to light accessorizing and ultimately partial to full-home staging as deemed most beneficial. We can even provide turnkey preparation solutions involving declutter, packing and storage experts when required. Making the preparation and selling process as stress free as possible is something we know every seller highly values. OH

When the homeowners first embarked on the renovation of their charming 1954 home in Dundas, their vision was to create a space that felt cosy and inviting. They worked with Brad Robinson of BMR Group Construction, and Laurie Sprague of Sprague Interiors to transform the dated home from retro to ravishing.

SSPRAGUE INTERIORS’ inspiration for the aesthetic was the natural surroundings and colours from the home’s beautiful, forested lot – warm woods, earthy colours and natural fibres that mirror the soothing effects of nature –bringing tranquility indoors.
“This home is a lovely testament to the value of saving special architectural elements while designing fresh updates that are suited to the lifestyle of our clients,” says Laurie. “Tear downs are lovely, but you never get the same character. Even when you try to re-create it, it’s not the same. That’s why I love renovations.”
“The home has a gorgeous property and the homeowners had the foresight to see that it had good bones, but it was very dated on the inside,” says Jennifer Wilson, project coordinator with BMR Group Construction.
On the outside, extensive work included new siding, stonework, landscaping and the addition of an outdoor porch so the family can dine al fresco.
The attention to detail is evident throughout the project. Intent on honouring the home’s original features, Brad and Laurie pored over details like the colour of the mortar on the exterior, creating samples of several colours to find the perfect match to blend with the landscape. They consulted with Jordan Station Design Co. for architectural drawings. Continued on page 58

The result? An update that appears to have withstood the test of time.
Indoors, upon the suggestion of Sprague Interiors, some original features – like the living room fireplace, original terrazzo floors and an antique door – were preserved. The terrazzo floors in the entryway served as inspiration for the home’s colour palette. The homeowners enjoy travel, so Sprague Interiors kept the ornate hand-carved antique door in the living room, which lends to the wanderlust feel.
The wooded backyard with nearby river is a focal point that can be seen from the kitchen, the dining and living rooms, and it inspired the home’s tranquil hues. “Think trees, sky and water,” says Laurie. The blue botanical backsplash in the kitchen adds vibrance. Tile throughout is from Aristocrat Floors and Ciot. “We always like to add a dose of the unexpected, because I think that’s what makes a space feel well-designed.”

update with new waterfall-style treads and risers, and stringers that blend seamlessly into the walls. Portions of the walls were cut away to expose the stairwell, creating a more spacious foyer. “It’s like an art piece, but it does feel like it could have always been there, which is also important to us. We want to honour the house,” says Laurie. A wall that separates the kitchen, dining and entryway was clad in a natural dolomite marble that glimmers in the daylight.
The living room is a multi-use space, with areas for watching television and lounging. The custom sofa was designed with easy-to-clean performance fabric, creating a stress-free living space for the family and their dog. White oak beams draw attention to the vaulted ceiling and match the white oak hardwood flooring throughout. Modern conveniences, like motorized shades, were installed for easy operation.
To honour the family’s love of travel, Mediterranean-style handmade tiles in the powder room add movement and dimension. “We wanted to have a little bit of a worldly feel,” Laurie says. The clients loved the idea of using natural stone, so marble from Rockstella was used in the kitchen, and soapstone in the powder room. Continued on page 60
The rooms on all three floors were taken back to the studs and redesigned. On the upper level, the narrow hallways and tiny rooms were adjusted to feel less compartmentalized. Spaces were reconfigured and built-ins were installed to maximize the use of odd niches and sloping ceilings to create more functional space. A loft library nook was custom crafted in an unused niche at the top of the stairs.
“The primary en suite is a special room with a lot of elevated design elements,” says Laurie. A white oak tongue-and-groove ceiling adds warmth. “We wanted to make it feel cosy.” Dual vanities, a soaker tub, curbless shower and heated floors add a spa-like vibe. To maintain the worldly aesthetic, the stone floor is a natural-coloured tile in varying sizes for an earthy feel.
Custom linen drapes add freshness and honour the natural elements. The primary bedroom looks over a lush forest. “We didn’t want to go overboard with stimulating colours,” says Laurie. “We went with browns, mauve and a little bit of gold. It’s all very tone-on-tone and textured with grasscloth wallpaper.” The drapery fabric is printed with a subtle pattern of trees and animals, which is very fitting.

The clients wanted a Zen-like workout space. On the lower level, a custom yoga studio awaits. A lime-wash plaster finish by Venneri Design Studio was applied to the walls, and soft wabi sabi lighting, warm hues and a custom bench lend to the wellness vibe.
From top to bottom, the project is a wonderful example of how synergy in working relationships can create a beautiful home renovation.

MEDITERRANEAN Chicken Meatballs
Serve these chicken meatballs with a side of herb yogurt as an appetizer, or pair them with fresh vegetables and rice for a healthy, hearty dish.
INGREDIENTS
1 lb ground chicken
1 egg
3 garlic cloves, minced
1 small white onion, diced
¼ cup breadcrumbs
1 tsp dill*
1 ½ tsp oregano*
1 tsp salt
½ tsp ground black pepper
*Herbs can be fresh or dried. If using fresh, double the amount listed.
INSTRUCTIONS
Preheat oven to 350ºF. Combine all ingredients into a large mixing bowl. Mix until well combined.
Using your hands, gently form balls just a bit smaller than golf balls and place them onto a baking sheet. Transfer to the oven and bake for 16-18 minutes or until the internal temperature reaches 165ºF.
Serve warm with your favourite dipping sauces and sides! OH

DAD’S PERSPECTIVE
fFrom the place in the kitchen that gets the most morning sun, the spot right by the coffee maker, I stack two laundry hampers overflowing with clothes ready to be folded and put away. I pause here most mornings to pour myself a cup and leave the laundry in the sunlight for a moment.
Just as there is a cycle of seasons that defines the landscape around me – the trees, the lake, the sky and the sparkling light over the water that peeks inside my kitchen window – there is also a laundry cycle. These cycles continue without ceasing, seeming to obey a powerful and ancient natural law beyond anything yet imagined by humans.
I asked my sons, while I sipped coffee at the old pine table, “When will I get to stop doing your laundry?”
My youngest isn’t shy. He drives a hard bargain. “Never,” he said. Then, he took a bite of peanut butter toast and washed it down with cold milk.
My other son, his older brother, said, “It’s your job, isn’t it, Dad?”
“Right now it is,” I said, “But at some point, this will be your job, don’t you think?”
“Like when we’re adults?” he said.
“No, like, how about tomorrow?” I said.
“Hmm. No, not tomorrow,” he said, “but soon.” Soon is better than never.
As parents, we want to see our children develop independence and gain skills that can help them grow and thrive, but part of what motivates our desire to instill discipline in our children is that we want them to look after their own messes. The proverbial piece of Lego left on the stairs – the one that will no doubt impale an adult human foot the longer it stays there.
However, I do know that when he says “soon,” he means it. Over the past year, he’s
started doing more chores. All three of our kids have. We have our own messes to make and our own messes to clean. It’s time for them to chip in more.
Over a year and a half ago, my wife and I took my son out to dinner for a business meeting away from siblings so we could discuss issues more openly. We had a slick black notebook to take minutes in and a luxury pen I inherited from my grandfather. The intent was to create a professional environment where people and ideas are taken seriously. Chores are serious, after all.
The meeting began shortly after we ordered drinks. As chair of the meeting, I began by setting the agenda. We felt that it was also important for him and his siblings to contribute to household tasks that everyone benefited from but that no one really wanted to do. Cleaning bathrooms, vacuuming, sweeping floors and doing dishes are but a few of the chores necessary to operate a home, and he could make a more sizable contribution.
When it was his turn to speak, he told us about some of the difficult parts of life, like school and dealing with teachers, and his brother trying and succeeding to annoy him. He told us about what he wants to be when he grows up and why it’s a good idea to sort your recycling. Some of these issues get dealt with quickly, and some, like his desire to be a professional athlete, need more discussion.
He happened to mention a fishing rod he wanted to buy. This was an opportunity. We told him that we thought we might be able to help him out a bit with his fishing equipment expenses if he would sign on to become one of our family’s three new vice presidents of sanitation. He ultimately agreed, which made me suspect that the soft drink refills had made him more pliable. Parents, make a mental note.
As many will attest, most meetings are boring, and nothing ever gets decided at them. This one, however, seemed to make a difference. Each day, his duties as VP include making his bed, making his lunch, clearing the table, loading the dishwasher and sweeping the floor. It may not be done to professional standards, but the boy is learning discipline, and, more importantly, now I’m not the one doing it all.
The change wasn’t immediate. Like any tale of growth, there were steps forward and steps back. For instance, standing right next to him while he scrubs the toilet doesn’t make me feel free to do other, more pressing things. The job isn’t that rewarding normally, so supervising someone else doing it while they do it poorly isn’t much better.
You’d think that clearing the table would be self-explanatory. You’d be wrong. I had a foreman on a construction site who used the term “lazy man’s load” when someone would carry too much all at once in order to avoid making multiple trips and, inevitably, drop expensive tools or dent newly finished floors from their hubris and indolence. We’ve had a few lazy man’s loads that ended up with jam on the rug or broken coffee mugs exploding across the kitchen floor like porcelain hand grenades. We soldiered on, though, once more into the breach, dear friends. And while the cycle of laundry continues, so does the personal growth we’d hoped to see in our little helpers.
I stop and wonder as I finish my coffee and pick up the hamper of unfolded, clean clothes that still bask in the morning sunshine. When is our next business meeting? And I’m reminded of my son’s answer. Soon. OH

W“WE LOVE THE ARCHITECTURAL GENIUS OF FRANK LLOYD WRIGHT,” says Marsha, speaking of the American architect and designer known for his organic style, creating buildings that harmonize with their environment. “We also took elements from various houses we’d designed over the years.” Marsha is retired, but for years she was a designer by trade, so the couple knew exactly what they wanted as they took on most of the design work for their new home.
In 2021, Marsha and Ted were looking to relocate from a townhouse in Toronto to the Mineola area of Mississauga, where neighbourhoods boast an assortment of home styles surrounded by mature trees. They immediately fell in love with the half-acre property nestled amongst

parkland and a deciduous forest teeming with life. But the existing house didn’t meet their needs. “The property felt like home,” says Marsha. “We easily envisioned what we could build there.” Their passion was contagious. Peter Giampuzzi of Ornella Homes immediately understood their vision. “Marsha had spent a year cutting out pictures of architectural elements she and Ted liked,” says Peter. The couple had lived in the existing home for over a year, so they had a good feel for the property and area. “They didn’t want the home to feel like a museum,” adds Peter. “They wanted it livable, warm, modern and not showy.” As an award-winning builder, Peter is involved in every stage, helping homeowners with the design process, project management and sourcing high-quality materials. Architect
Richard Kossak of New Age Design brought Marsha and Ted’s vision to life on paper. The designs allowed them to move things around while Peter made suggestions to best meet their lifestyle. The existing house was removed, and the new house was then built from scratch on the property.
The result is 2,900 square feet of contemporary main-floor living and a cosy 2,900 sq. ft. lower level. Soaring windows by WD Craftline Windows and Doors offer sweeping views of the trees while welcoming in sunshine throughout the L-shaped open-concept living, dining and kitchen areas. The ceiling heights range from nine to 12 feet, and a 16-foot tower of windows in the foyer creates a tunnel of light. “We love the open space and how all the glass windows overlooking the ravine make you feel like you’re living in the great outdoors,” says Marsha.
The expansive entrance opens to the glass-enclosed foyer, with an office tucked to the side. The state-of-the-art kitchen is outfitted with discreet, tucked away appliances from Tasco Appliances. Ted and Marsha love to cook and host their family. A double oven and additional small appliances are in the adjacent pantry, keeping everything out of sight from the main living space. A veined, white quartz waterfall island by Aurivia Stone Design provides guests with the perfect gathering spot when the couple entertain. Paired with striking flat-black cabinets, designed and installed by Trevisana Kitchens & Interiors, the kitchen’s elements combine to create a dramatic backdrop in the serene space. “The millwork is amazing,” says Peter. “An automotive paint finish was used on the cabinetry for durability, and every joint was measured to perfection.” The fridge and freezer disappear into the cabinetry and a walk-in butler’s pantry offers lots of open shelving while housing two ovens and keeping smaller appliances out of sight.

“Special events and holidays are celebrated at our house,” says Marsha, noting how the family’s dynamics were important when designing the layout. The couple’s grown children and their families live within walking distance, and the grandkids, ages five to 12 are over often. “We wanted everyone to feel comfortable,” adds Marsha.
The living room wall is complete with custom cabinetry by Trevisana Kitchens & Interiors and 24 by 48-inch porcelain tiles from Ciot – housing a fireplace from Walltek. Nine-inch wide white oak engineered wood flooring on the main floor and carpet tiles that cover the lower-level floors were supplied by Squarefoot Flooring
The main level primary bedroom and en suite are separated by elegant glass doors. The unique light fixtures were found at Robinson Lighting & Bath and Watts Current in Mississauga. The walls, trim and ceilings are painted Benjamin Moore Pure White to highlight the black accents and allow the couple’s stunning art collection to take centre stage. “We’ve been collecting art for years,” says Marsha. “We wanted each piece to make a statement.”
A BTL Railings Inc. stairway leads to the lower level, complete with a laundry room, gym, recreation room and two bedrooms to welcome their grandchildren and guests. A large studio was also included for Marsha, which will convert to a caregiver’s suite when Marsha and Ted are older. Continued on page 84

As the house was designed to accommodate Marsha and Ted for many years, partnering with high-quality tradespeople was vital. “We talked to other builders but we loved Peter’s work ethic and personality,” says Marsha. The couple respected how Peter and his trade professionals do not take shortcuts, ensuring their home doesn’t just look beautiful but lasts for generations.
Outside, Delco Contracting orchestrated the landscaping, utilizing plants and flowers from Dutchmaster Nurseries Ltd. A 12 by 30-foot inground pool completes the oasis.
The entire build took exactly one year. For a couple with a vast amount of design experience, it was a year of creativity and excitement – which is often the case when homeowners have an appetite for design. OH

There’s nothing lovelier than sitting under a large shade tree in the heat of the summer. But many of us don’t have the space to plant a large shade tree like an oak or sugar maple.
Don’t despair! There are several smaller trees, less than 10 metres, that are well suited and very desirable that we can plant in our city or town gardens.
Here is a list of some native and some non-native trees that I think deserve some attention. They are hardy for most of Southern Ontario, have some all-year interest, generally don’t require special growing conditions and still attract pollinators with either flowers or fruit.
You won’t find birches, crabapples, Japanese maples or serviceberries on this list, as they are already well-represented in many of our gardens.
1. Katsura tree – Native to Japan, cercidiphyllum japonicum, “Hanna’s Heart,” grows to eight metres tall and three metres wide. Pyramidal in youth and a more compact growth habit. Heart-shaped green leaves turn apricot yellow in fall and have a wonderful spicy cotton candy odour.
2. Eastern redbud – Cercis canadensis is a native of the Carolinian forest. It is a very versatile tree for small properties. It comes with purple leaves (“forest pansy”), yellow leaves (“hearts of gold”) and upright, weeping and contorted forms with pink or white flowers.
3. Magnolia stellata – “Royal star,” not uncommon, is a hardy shrub or a small tree from Japan, growing up to five metres with a three-metre spread. The upright branches have large, fragrant, overlapping, strap-like double-white flowers. The burst of flowers and fragrance is worth the lack of fall colour! It also has nice bark and fuzzy flower buds for winter interest. There are many smaller magnolias on the market now that are suitable for smaller properties.

4. Purple fountain beech – Fagus sylvatica, “purple fountain,” is the perfect specimen when you need a deep purple colour to offset the rest of the garden. This weeping variety of beech tops out at ninemetres high and three-metres wide, adding architectural interest. Leaves can turn tan and stay on the tree for the winter. Every garden needs a beech tree!
5. Ironwood – Ostrya Virginiana is an eastern native reaching up to 12-metres tall. Has birch-like leaves turning yellow in the fall with interesting hop-like seed pods. Naturally growing as an understory tree, it can take a lot of shade.
6. Paperbark maple – Acer griseum, a non-invasive native to central China, has very cool bark. Curls of cinnamon-coloured bark on this small tree are reminiscent of our paper birch, a plus for winter interest. The green leaves turn brilliant red in the fall.
7. Crusader hawthorn – Crataegus crus-galli var. inermis, (meaning no thorns), “crusader” is an interesting tree for the home garden as it can be as wide as it is tall. So, when you need a horizontal element in the design, this tree will fit the bill. White flowers give over to red-orange fruit enjoyed by the birds, and there is good fall colour as well.
8. Blue beech/musclewood – Carpinus caroliniana is a handsome native from Ontario to Nova Scotia. Often seen in the woods, so it will take some shade. The bark is lovely, grey-coloured and has the appearance of flexed biceps and forearm muscles, hence the name musclewood.
9. Nannyberry – Viburnum lentago is a six-metre small tree or large shrub with flat-topped white flowers followed by bluish-black fruit that birds love. The glossy green leaves turn reddish-purple in the fall. They take some shade as well.
10. Pin cherry – Prunus pensylvanica, one of our native cherries, is only 10-metres tall. It has white flowers and long-lasting red pin-like fruit that the birds and wildlife like. It also has exfoliating bark for winter interest. Cherries have great ecological importance for our environment.
11. Persian spire – Parrotia persica, “Persian spire,” is native to Iran but grows quite well here and needs to be planted more. It is part of the witch hazel family and has very few pests. The leaves turn from yellow to orange to scarlet in the fall. The bark is interesting in the winter, too, as it has a grey, green, white and brown mosaic as it matures.
While the charm of large shade trees is undeniable, numerous smaller alternatives can thrive in urban gardens and provide a wealth of beauty and interest throughout the seasons. With any of these trees, you can create vibrant, sustainable green spaces that enhance your surroundings and support local wildlife and pollinators. Whether you’re drawn to fragrant blossoms, brilliant fall colours, or unique bark textures, these trees offer something for every garden enthusiast.

While neutral tones serve as a beautiful base, they provide the opportunity to create striking contrasts. When Rinaldi Homes began building their community of luxury townhomes in Fonthill Abbey, they envisioned young, urban professionals working from home.

The four-level, contemporary units, with a finished lower level, main floor and two upper floors, were designed to help residents compartmentalize work and home life. The lower levels suit a well-appointed home office, while the upper levels provide an elegant and self-contained after-hours retreat.
A private elevator from Cambridge Elevating Inc. adds to the appeal, making the commute between all four floors a breeze.
But these sophisticated condominium townhomes that evoke the big city without all the bustle have proven infinitely livable for a wide variety of homeowners. Couples with adult children who value togetherness but also need personal space, homeowners who love to travel without worrying about maintenance, and empty nesters looking to downsize and age in place with assisted mobility are also finding their dream living space here.
“It turns out we’re attracting all types of homeowners,” says Danielle Girhiny, Rinaldi’s new home sales associate. “It is somewhere adult children can come and go and feel like cherished guests in an exquisite place. It’s the downsize others hadn’t considered – the structure of home they hadn’t considered – and it catches them by surprise.”

The main level features a den that can function as a home office or guest bedroom. A few steps away is a bathroom with a walk-in shower decked out in stacked tile with a terrazzo aesthetic from Aristocrat Floors, which supplied all flooring and tile in the home.
Access to a double-car garage, complete with epoxy-covered floors by Garage Kings for easy cleaning and maintenance, is a rare find in a Niagara townhome. Rarer still for a new build, the garage door from Yarnell Overhead Door Ltd. opens onto a private drive anchored by a boulevard that’s planted with mature trees from Ziraldo Tree Supply and designed by DeKorte’s Landscaping
“In the summer, the boulevard out back is beautiful. It gives nearly complete privacy between units,” Danielle says.
One floor up, the home’s hub boasts a stunning kitchen and living room. The spaces are separated by a hallway flanked by the staircase and a dramatic slat wall painted Benjamin Moore Tricorn Black that conceals the elevator door and encloses a two-piece powder room.
The galley kitchen features chic contrasting cabinetry by Artcraft Kitchens: sleek white upper cabinets with Savoy doors, rift oak lower cabinetry and a dark base of cabinets under an oversize waterfall island capped with thick quartz.
Quartz from Kirkstone and Quartz Co cover all counters throughout the home. In the kitchen, the counter flows to form a full-
height backsplash. A small servery connects the kitchen to a walk-in pantry with storage for all the staples and small appliances.
High-end Fisher & Paykel appliances from Nickerson Appliances make cooking and clean-up a cinch, thanks to a 36-inch stainless induction range, panel-ready french door fridge and built-in panelready dishwasher. “It’s the perfect house plan for entertaining and small dinner parties,” Danielle says.
The adjacent great room provides a cosy refuge with a low-profile gas fireplace from The One Stop Fireplace Shop that’s surrounded by stacked, silver grain natural rectangular tiles. Built-in benches flank the fireplace, serving as extra seating or storage for blankets and cushions.
The top level is reserved for the primary and secondary bedrooms, each with its own en suite. This delicious dessert combines a tart lemon filling and sweet blueberries for the most refreshing treat!
Ingredients
CRUST
1 ¼ cups graham cracker crumbs
¼ cup melted butter
LEMON PASTRY CREAM
1 Tbsp freshly grated lemon zest
2 cups whole milk
½ cup granulated sugar
3 Tbsp cornstarch
¼ tsp salt
5 egg yolks
1 oz unsalted butter, cubed
2 Tbsp fresh lemon juice
TO ASSEMBLE
½ cup blueberry jam
1 cup fresh blueberries
¼ cup sliced almonds, toasted

Instructions
Preheat oven to 350ºF.
CRUST
In a mixing bowl, combine graham cracker crumbs and butter. Mix well and press into a 9-inch pie or tart pan. Place on a baking sheet and bake for 10 minutes.
Remove the baked graham cracker crust from the oven and let cool.
LEMON PASTRY CREAM
In a medium saucepan, combine lemon zest and milk. Heat until just simmering.
In a heatproof bowl, combine sugar, cornstarch, salt and egg yolks. Whisk for 1 minute until pale and fluffy.
Slowly add warm milk to the egg mixture while whisking constantly. Once combined, add the mixture back into the saucepan and set over medium heat. Whisk for 2-3 minutes until thickened. Take off the heat and add butter. Whisk until melted and combined. Add lemon juice and whisk until combined.
Strain through a fine mesh strainer. Press plastic wrap over pastry cream so a film does not form. Chill in the fridge until ready to assemble.
TO ASSEMBLE
Layer the bottom of the tart with blueberry jam. Top with a layer of pastry cream and fresh blueberries.
Add an extra garnish of toasted sliced almonds and a sprinkle of icing sugar, if desired. OH
