WHAT I LOVE MOST

about this season is the familiarity that ushers it in. The rest of the year can be unpredictable, but I always know what December will look like. The start of winter brings many traditions for my family, and we look forward to them all year long: decorating the tree, watching Christmas movies, visiting family and ringing in the new year with our friends.

Year after year, winter arrives with lots of fanfare. Among all the festivity is classic décor that never goes out of style. No matter which trends have been popular in the previous months, this is the season we adorn our homes with metallics and pops of red, greenery and twinkling lights. We revisit these looks time and time again and never seem to tire of them.

It’s rather serendipitous that timelessness is a recurring idea in this issue. In both our feature stories, the homeowners began their renovation and new build projects by looking toward the future. Rather than embrace current trends, they asked their designers to help them create spaces they’ll continue to love as the years go by.

Everyone puts their own twist on classic or timeless design. Some interiors are rooted in traditional style, while others are modern or contemporary. In a world where new styles come as quickly as they go, it can be daunting to create a look that endures through the ages. But through the years, I’ve gotten lots of tips from the talented designers who appear in OUR HOMES, and I’ve learned it’s possible with the help of seasoned professionals. However you style your home, I hope you find lots of inspiration in this issue.

TRENDS to try

Are current design trends right for you? It’s important to approach trendy design elements critically to evaluate if you like the trend enough to live with it for a while and whether it can be integrated successfully with your existing design, furnishings, architecture and site. For example, curved archways became very popular but were sometimes incorporated into spaces incongruent with the existing architecture, which caused a visual disconnect.

Here are some current themes in the industry – discern for yourself whether you’d like to give them a try.

MICRO/SECONDARY DWELLINGS

There are different reasons you might consider a secondary dwelling (if your property allows it). Affordability is a primary motive, as rental income can help pay your mortgage. Another popular arrangement is independent, intergenerational living – whether due to health circumstances or lifestyle choices. There are many creative designs to maximize efficiency in a small footprint.

BROWN

Possibly in response to environmental issues and sustainability or the cycle of design, shades of brown have seen a resurgence. Varying from camel to deep

chocolate, the rich, earthy hues offer a grounding, comforting and calming effect in a space. You can incorporate the colour through freestanding furniture, upholstery pieces, hardwood flooring, millwork or wall coverings and paint.

TERRACOTTA TILE

We’ve been seeing the return of terracotta tile for a while. Perhaps one could argue that it is best suited to Spanish and Mediterranean architecture. However, the earthy palette is versatile enough to integrate successfully into farmhouse and cottage styles. Terracotta tiles were traditionally handmade and sun-dried, known as “baked earth,” but even contemporary versions add instant old-world charm to a space while imbuing natural character.

CHUNKY GROUT

Grout lines are often minimized to avoid scrubbing and cleaning. However, some tiles, such as terracotta, should be installed with substantial grout lines to look authentic. Thicker grout lines are also used to create visual interest in custom tile layouts, where a larger band of grout delineates horizontally or vertically. The options for a unique pattern are endless, as long as your installer is on board!

TRIM & DOORS

There is a shift from white painted trim and doors. You will see a lot of solid-wood trim and doors stained to match the hardwood flooring. This is a classic and timeless approach and can be achieved successfully in modern and traditional spaces. An alternative is to paint trim and doors in a contrasting colour to the walls. A few years ago, we began to see subtle versions of this where light walls were paired with trim and doors a few shades darker in a greige hue. As more and more interiors are moving away from the all-white palette into more colour, contrasting trim is a way to add personality and impact, and we are seeing full-blown colour on mouldings, trims and doors. Tip: Try it in one room to see if you like it before you commit to a larger open-concept space!

TEXTURED WALLS & CEILINGS

The application/installation of Venetian plaster, lime wash, Roman clay, woven wall coverings and wood cladding adds interest to walls and ceilings instead of plain, painted drywall. It is important to have a professional installer for some of these materials and finishes (or a seasoned DIYer) – for example, hanging wall coverings on the ceiling is no simple task!

ARTISANAL

A downfall in design over the past couple of decades has been the homogeny of developments, easily replicated viral “of the moment” looks and the availability of mass-produced items. Although there are benefits to the above, the result can be that homes lack differentiation and look the same as the next. However, there is a real focus on personalization in design and this can be achieved by sourcing artisanal goods. Skilled craftspeople use traditional means and methods to create bespoke pieces in small batches or one-offs. This adds character and charm to your space while supporting the good people preserving uniquely human skills. OH

cinnamon stick

½ cup white cranberry juice

¼ cup orange liqueur

1 Tbsp honey or agave syrup

Ice cubes for serving ½ cup club soda

2 sprigs fresh rosemary

In a large pitcher, add apple slices, cranberries and cinnamon stick to the pitcher. Pour in white wine, cranberry juice, orange liqueur and honey. Stir well to combine.

As the days grow shorter and the temperature drops, there’s nothing quite like transforming your home into a warm, inviting winter haven. 1. Make An Impression With Your Entryway

Set the tone for the rest of your home and greet your guests with warmth from the moment they arrive on your doorstep. Extending the cosiness to the outside with a welcoming wreath or swag, a seasonal doormat and a few decorative touches can make a big impression.

2. Incorporate Natural Elements

Embrace the beauty of winter by bringing the outdoors in. Pine cones, evergreen branches and berries make for stunning and simple centrepieces and decorative touches. Display these natural elements in vases or as part of a table arrangement to evoke a sense of seasonal charm and warmth.

3. Create A Cosy Nook

The dining area is somewhat of a conundrum. In many newer homes, it has been swallowed up by the open-concept main floor, with cooking, dining and living combined. Meanwhile, in older homes, the formal dining room often goes unused except for the occasional birthday, anniversary or holiday, when it gets dusted off and dressed to impress. I love the indulgence of a dedicated, stylish dining area, both in terms of the space itself and all that it brings. Whether yours is a dedicated room or a designated nook, here are some tips to ensure it’s ready for company, both during the holidays and every other day of the year!

DINING ROOM LAYOUTS FOR A FUNCTIONAL AND FABULOUS SPACE

A great dining area starts with the layout, to ensure the room can handle the hustle and bustle while still providing a comfortable and inviting atmosphere. If yours is an open-plan home, position your dining table in a way that naturally flows from the kitchen or living area. This setup allows for easy movement between cooking and socializing, ensuring you can stay engaged with guests while preparing meals.

In homes with separate dining rooms, focus on creating a balanced space. Place the dining table centrally, allowing enough room around it for chairs to be pulled out comfortably. Ensure there is ample space to accommodate traffic, especially if the space will include a buffet or serving area.

A rectangular or oval table can accommodate more guests, while a round table can create a more intimate setting. If you frequently host large gatherings, consider an extendable table or add a second smaller table to accommodate extra guests.

A sideboard or buffet table along one wall can serve as a dedicated area for food and drinks. This keeps the main dining table clutter-free and allows guests to help themselves without disrupting the flow of conversation. And when you’re not hosting, it serves as storage space. Place chairs or benches around the table with a mix of seating options to cater to different preferences and to create a more dynamic and inviting arrangement. If space allows, create a separate seating area with comfortable chairs or a small sofa for guests to relax before or after the meal.

FOCUS!

A well-chosen focal point not only draws the eye but also sets the tone and mood, making it a more enjoyable place for meals and gatherings. It can help define the style and personality of the space, whether it’s modern, traditional or eclectic. To create an effective focal point, start by identifying the most prominent area in the room, such as the wall facing the entrance or the ceiling above the dining table. Consider adding a bold piece of art, which is a wonderful way to add non-committal colour and a dramatic effect. Simply swapping out the artwork can transform the entire room’s ambience when you’re ready for a change.

I love the element of surprise in a room, so think beyond the usual, like a bold ceiling. Draw the eye upward with an eye-catching colour or a graphic paper to add texture and dimension. Incorporating architectural elements such as coffered ceilings, exposed beams or tray ceilings can also add a sense of grandeur and elegance.

Balance is key, so ensure that the focal point complements the overall décor without overwhelming it.

LIGHTING

Lighting has a three-fold purpose in the dining area: to illuminate for function, to act as a focal point and to set the mood. In this space, it can be bright and joyful, warm and romantic, dark and dramatic, or it can alternate between all three, depending on the function. For this reason, dimmers and layers of lighting are a must.

A statement chandelier or pendant light above the dining table serves as a focal point, adding a touch of elegance and festivity. Wall sconces or floor and table lamps can provide additional illumination, highlighting different areas of the room and adding depth. Candles or string lights added to the tabletop or buffet create a cosy, enchanting atmosphere.

This six-bedroom home in South Woodslee beautifully expresses the style and personality of those who live here. Each room combines unique design elements and cherished family heirlooms to create a warm and inviting space.

Arches, curves and circles are repeated throughout the lighting, furniture and accessories in the bright and spacious great room.

I“IT’S A LOVELY, GRAND HOME,”

the homeowner tells us. “We’ve really made it our own with lots of personal touches.”

She and her husband previously lived in the Belle River area until last June. They were searching for a bigger house and fell in love with this spacious, multi-level home on a two-acre property. “It checked most of our boxes and is only 10 minutes away from family,” she recalls. Boasting bedrooms with en suites, a large sunroom and finished basement, it had plenty to offer their growing family. A home theatre and pool also make it ideal for entertaining.

The couple were drawn to attractive features like 12-foot coffered ceilings, elegant wainscotting and a custom kitchen. But they also saw room for improvement, so they enlisted David Burman, president and creative director of Mister HQ Group, to help them personalize the décor. “Sometimes, you need an outside perspective,” she says. “We wanted a warm, timeless look, and David brought that to life. He was very easy to work with and always made us feel heard.” Continued on page 38

The backsplash extends to the ceiling and adds texture to the kitchen. The space originally had open cabinets. During the renovation, doors were masterfully crafted to match the existing cabinetry.

David and his team always prioritize their clients' practical needs, while also encouraging them to explore bold, creative design. “The home was very large with little to no character,” says David. “It was important to ensure it didn’t feel too cold or open. We also wanted to show their personalities and create spaces that are usable.”

They began by repainting the whole house and bringing in Nussio Electrical Ltd. to install designer lighting. “We changed all the light features on the main floor, which were very builder-grade looking. We also added brass and glass accents to warm the space,” the homeowner tells us.

The overall ambience, which David describes as livable luxury, is apparent as soon as you step through the front door. The entranceway is a dramatic contrast of dark and light. A cow print hide, dark door and complementary credenzas offset polished

porcelain tile. A white bubble chandelier is an elegant finishing touch. The homeowners were pleased with the trades that worked on their home, including JM Solutions, Urban Glassworks Ltd. and ANR Concrete Studio

The kitchen and dining area is anchored by a striking custom wine wall that displays the homeowners’ prized wine collection. The floor-to-ceiling glass cellar features brass trim and artfully showcases their vintages. “We love wine and wanted a place to display our collection,” the homeowner says. “I wanted something that looks like it was built with the house. Darius Ghib (D.C.G Corporation Inc.) did a great job of matching it with existing cabinetry.”

island that offers ample space to cook or hang out. The design incorporates Zellige tile backsplashes, provided and installed by Marquis Tile Inc. “They’re classic but still clean and modern,” says David. Benjamin Moore White Dove lightens the space, while gold hardware and warm hardwood floors add contrast.

In the living room, the homeowner’s Sid Dickens decorative tile collection skirts the window. “My mom collected these plaques for me every holiday when I was young,” she recalls. “I wanted a space where I could display all of them.” The space is furnished with comfortable sofas and chairs, which are covered in durable, easy-care fabrics. “We have children and lots of company, so we live in our house. I want it to be beautiful but also functional and comfortable, so we can enjoy our space,” says the homeowner.

The wine cooler is paired with drink coolers to create a beverage centre. The homeowners love to entertain and this area is well utilized.

Upstairs, the four bedrooms are individually styled with their own distinct décor. In her daughter's room, cherished pieces of the owner’s childhood furniture create a sense of nostalgia, while her son’s room exudes a rustic cabin feel. Warm wooden tones and nature-inspired accents evoke a cosy woodland retreat. Vaulted ceilings, covered in bold black-and-white plaid paper by wallpapermaster.ca, pair perfectly with brown and green highlights, creating a balanced, earthy contrast.

In the children’s playroom, a safari theme springs to life with palm tree wallpaper, a striped throw rug and whimsical plush animal heads adorning the walls. “The wallpaper adds personality while still keeping the design timeless so they don’t grow out of it,” David says. Continued on page 42

The homeowner’s favourite room in the house is a large terrace, which was originally an open porch. A bank of windows drenches the space in natural light. “It’s like being outside. We eat dinner in here every day,” she tells us. With a gas fireplace, television and heated floors, it is a comfortable place to spend time. And thanks to a barbecue, sink, counters and bathroom, it’s also ideal for welcoming friends and family.

She and her husband both come from big families and often host large gatherings. “We put a lot of love into this place and are so happy to have a warm, inviting space to entertain,” the homeowner says. “We took a beautiful house and made it our dream home.” OH

10 Daily Habits For Your Health

The new year always feels like a good time to reflect on your health and decide what’s working, and what’s not. If you’re looking to make small changes that can have a big impact on your physical and mental health, consider some of these daily habits.

You might already be doing some, or most of these, which is great! If you’re starting from scratch, pick one or two habits to focus on at first and build from there.

1. LIMIT SCREEN TIME

Staring at a screen for prolonged periods has no positive effect. Try to find time in your day to step away from the screen and replace it with another activity.

2. GET OUTSIDE

Yes, even in the dead of winter, get outside at least once a day. Sunlight and fresh air benefit your mental and physical health.

3. FIND A NEW HOBBY

Hobbies are a great way to get out of your comfort zone, flex your creative muscles and have fun! Plus, depending on the hobby, you might naturally embrace some of the above habits.

4. DAILY MOVEMENT

Find an activity you enjoy and do it daily. Walking, running, yoga, skiing, pickleball – it doesn’t matter what it is, as long as you find something that prevents you from having a completely sedentary day.

5. HYDRATE WITH WATER

Your body is 50 to 60 per cent water, making it the fluid of choice when you’re thirsty. If you find water boring, try adding a sugarfree flavouring or infuse it with fruit. If you forget to drink during the day, try setting reminders. And invest in a water bottle to carry with you when you’re at work or on the go.

6. INCREASE YOUR FIBRE

If there is one nutrient to focus on in 2025, it’s fibre. Most people don’t get enough in their diet, and fibre does much more than keep us regular. It keeps us feeling full and supports blood sugar and cholesterol levels. Try to add a fibre-rich food at every meal and snack.

8. EAT BREAKFAST AND REGULAR MEALS

We’ve all heard the saying that breakfast is the most important meal of the day, but honestly, there is some truth to it. Breakfast, especially one that’s protein-rich can keep you feeling full longer, help control your appetite during the day and reduce cravings. Breakfast is important, but don’t forget about other meals and snacks. Try not to go longer than four to six hours without eating.

9. PRIORITIZE SLEEP

Getting enough quality sleep is highly underrated. Poor sleep, even if it’s shortterm, can impact our immune system, food choices and overall health. For adults, 7-9 hours is suggested. Try to create an evening routine and sleeping environment that will promote good sleep.

Winter can be as long as six months in parts of northern Ontario or four months in southern Ontario. Either way, winter takes up a good portion of our year, so it’s good garden planning to incorporate elements that add winter interest.

CREATE GOOD BONES

Good bones in a garden are important at any time of year, but especially important in the winter when the structural elements of the garden take centre stage. Without the distraction of lush foliage and beautiful flowers, the garden’s design becomes more apparent. This makes it crucial to focus on the layout and form of the garden. Pathways, stone walls and garden ornaments should be strategically placed to guide the eye and provide focal points.

The foundation of any winter garden lies in the careful selection of plants that are either evergreen or have striking winter interest. Evergreens, when grouped or used as hedging, can define spaces, create microclimates and shelter your feathered friends. Height is another important consideration. Incorporating vertical elements, such as tall shrubs or small trees, adds dimension to the garden. Evergreen plants, such as cedar, pine, boxwood and yew retain their foliage throughout the year, providing muchneeded colour and structure. Deciduous trees and shrubs with interesting bark, branching patterns or perennials with interesting seed pods are good candidates for a winter garden. The red or yellow stems of dogwood provide a stark contrast against the winter snow, while the peeling bark of birch or Paperbark Maple adds texture and visual intrigue.

GRASSES & LIGHTS

Ornamental grasses can provide great winter interest not only with their form, but they create the element of movement as the wind blows through them. With the shorter days and longer nights of winter, lighting plays a crucial role in the winter garden. Wellplaced twinkle lights can transform the garden, highlighting key features and creating a magical atmosphere. Solar-powered lights are an energy-efficient option, though their effectiveness can be limited in areas with prolonged overcast skies or a lot of snow. LED lights, on the other hand, provide a reliable source of illumination, don’t use a lot of energy and are available in a range of colours to suit different garden styles.

Don’t forget winter containers. With some evergreen branches, colourful twigs, dried seed pods and a set of twinkle lights, you have a miniature winter landscape in a container at the front entrance to provide beauty and light every time you enter your house.

MAINTENANCE

Maintaining a winter garden requires less effort than a summer one, but it is not without its tasks. Regularly clearing pathways of snow and ice is essential for safety and to keep the garden accessible. Pruning should be done judiciously, particularly for evergreens, to maintain their shape and encourage healthy growth. If your area is subject to heavy snow loads, tying up cedars will help prevent them from splaying open. You also might need to shake off the snow from weighted-down branches. Mulching around the base of plants can help protect roots from extreme cold and frost heave.

VISITORS

Winter gardens are also an opportunity to attract wildlife. Bird feeders and water features can provide food and hydration when natural resources are scarce, making your garden a haven for local wildlife. Look for a small water heater in your birding or online store that keeps water in a birdbath from freezing.

A winter garden offers beauty and interest during a season when most gardens are in hibernation. By carefully selecting plants, focusing on structure and form, incorporating thoughtful lighting and maintaining the garden with care, you can create an outdoor space that remains vibrant and inviting year round. Classic & Cosy DESIGN

Finding a place for a custom home sometimes happens by chance. The owners of this home have lived in the county for most of their lives. But it wasn’t until their furry family member wandered away that they discovered the perfect spot to build their forever home.

O“OUR DOG GOT OUT and my husband went to look for him,” the homeowner tells us. During the search, he ended up on farmland near Tecumseh that was up for auction. The couple initially hoped to renovate the existing house on the property, but after winning the auction, they realized it would be easier to tear it down and start from scratch.

The plan was to build a house their growing family could call home for the long haul. They enlisted a team of design professionals for the project, which included custom residential designer Phil Fernandes of Philip

Fernandes Design and Lisa Vardai of Studio V Interiors

The process began with a tour of one of Phil’s past projects, where the homeowners drew inspiration from seeing his work in person. “They were enamoured with the French Normandy architecture –particularly the limestone bays, chimneys, and a formal entrance,” Phil recalls. The couple wanted a one-storey home, so he incorporated these elements into a linear floorplan. “We also included luxurious features like a stately porte-cochère, direct access into a walk-in pantry from the garage, and a convertible terrace with bifold doors.” Continued on page 59

The homeowners travelled to a quarry in Owen Sound to personally select stone for the fireplace surround and the exterior of the home. Phil’s design combines elements of European architecture with a modern, open floor plan that’s fit for family living. To bring these plans to life, the homeowners hired Randy Gray of Gray Development Group to build the sprawling 6,000 sq. ft. home. When it came time for finishing touches, the homeowner turned to Urbanhome Interior Design. She visited their showroom to shop for furniture and décor, and ended up finding everything she wanted to turn their house into a home. “I loved their showroom and saw so many things I really liked,” she recalls. She made an appointment with interior design consultant Philip Chouinard and hit it off with him during his first visit to the house.

The design direction was simple: create classic, elegant spaces that outlast trends. The homeowners prefer clean, uncluttered design, but it was important for their home to be livable, too. They have a young

family, so nothing could be too precious. Because they had already purchased some furniture, Philip was also tasked with incorporating existing and new pieces into one cohesive look.

The main floor features a large kitchen with cabinetry from Joe's Woodcraft, a grand living room with cathedral ceilings and an impressive fireplace from Forest Glade Fireplaces. A showstopping focal point of the room, the fireplace, is surrounded by limestone that soars to the ceiling. The homeowners had already brought in reclining leather sofas, whose modern look needed to be married with the European facade of the fireplace. Philip added an oversize coffee table to fill the space, and two swivel chairs for extra seating. The fabric of the chairs add a layer of texture, while their leather backs reference the sofas. Scale was an important consideration when adding accessories and art. “This place is so big that you don’t want to bring in anything tiny,” Philip explains. “People tend to gravitate towards smaller accessories, but large-scale pieces look grand.” He worked with the height of the fireplace by introducing a trio of statement vases on one side, adding accessories on top of a credenza on the other side. A vase paired with greenery and a mirror with a geometric pattern fill the vertical space and draw the eye up.

Philip is always up for the challenge of working with existing spaces and furniture. “It’s easy to start from scratch,” he tells us. “But I really love the idea of taking something that’s already good and making it better. I like to add character to a home by incorporating elements of the client’s personality.”

In rooms that required new furniture, Philip’s clever design ensures the spaces flow nicely with the rest of the home. The office is a departure from the main floor with wood walls and a dark live-edge desk custom made by Mike DiFazio of Michael DiFazio Reclaim Artistry. Philip completed the room with a pair of curved white sofas to bring softness to the space and highlight the organic movement of the desk and the property’s natural surroundings. A black cowhidecovered coffee table and round pillows finish the look. Continued on page 62

The family spends much of their time in an enclosed terrace that showcases views of the land. To encourage comfortable lounging, a cosy sectional sofa large enough for the whole family was brought in from Urbanhome. A pair of armless side chairs are covered in Sunbrella outdoor fabric, which are hardwearing and serve as perfect seats for those coming in from the pool. Continued on page 64

Swivel chairs are a versatile choice in the most utilized room of the house. These armless chairs sit opposite a large, plush sectional and can be turned to face the fireplace (Forest Glade Fireplaces) and TV or the pool behind them.

An adjacent bathroom provides a convenient space to shower or change after being outside. The room needed a few finishing touches, and Philip decided to inject fun through bright wall art and accessories. The ocean-themed artwork references the pool and inspired the colours of the sculptural orbs. Tile for the home was sourced at Palazzi Tile. “I don’t just use art to accessorize a room,” he says. “It’s important to mix it up and bring in texture too. We’ve repeated elements like the round shape in the light fixtures. This is something fun for the kids, because design should include all the people who live here, not just the adults.”

The homeowner is pleased with Philip’s thoughtful design, and the way he infused their home with charm and character. “I felt very comfortable working with Phil, he is amazingly talented, and I’m in awe of the finishing touches he brought in,” she says. “Philip made this house our home. It was a fun, enjoyable process, and our end result is amazing.” OH

As we bird through the fall and into winter, we have diminishing returns for our efforts. Summer’s bounty of birds has migrated to many points south – to the southern U.S., across the warm Caribbean isles, to the neotropics of Central America or even further as the ambitious, long-distance migrants head for South America.

Coincidentally, many humans take this as a cue to do the same. We’re known as snowbirds – Canadians who travel south to warmer climes in the winter. Whether you’re a snowbird or a real bird, the aim is the same – fly away south to escape the rigours of our winters.

But where to? Well, if you’re a travelling birder, there are endless options. So, let’s wing our way out of winter’s cold grip, meet up with some of our familiar summer birds in their winter vacation spots and get acquainted with an ever-increasing number of species that choose to permanently reside in the warm, southern environs.

FLORIDA

You don’t have to travel far to find our summer songbirds – robins, red-wings, swallows and other familiar species. The Sunshine State is perhaps the most popular destination for Canadian snowbirds, but the birders’ bonus is you’ll also encounter birds that don’t occur in Ontario. Florida is where we get our first taste of subtropical birding.

Florida is home to over 350 commonly occurring, native bird species, bolstered by an additional 200 or so strays and accidentals. Plus, due to the inviting subtropical climate, a range of exotic birds – often escaped or released colourful caged birds such as the Monk, Nanday and Roseringed Parakeet, and several others – give Florida an even more tropical vibe. All this, combined with excellent parks, birding trails and the surrounding seas, makes Florida a terrific birding destination.

THE CARIBBEAN

Just off the Florida Keys, there’s a place called… Let’s put on some tunes to get in the mood for some tropical birding. From Florida, we’ll take a quick trip to the islands of the Caribbean archipelago. These tropical oases abound with birds and many have their own special, one-of-a-kind endemics. Endemics are prized among birders, especially the listers, as they are species that exist in only one place and nowhere else in the world. Virtually each island, with its geographical isolation from others in the Caribbean, has their own endemics. Cuba has the Cuban Tody, the Bee Hummingbird and 23 more! Jamaica has the Red-billed Streamertail and 26 additional endemics. The Bahamas have the Bahama Woodstar… and on it goes. These rarities, along with the many other birds of the islands, make for a birder’s paradise wherever you might land.

TEXAS

We’ll make a quick stopover in Texas before heading further south. Texas is a top destination for birders working on their North American life list, as more species of birds are found there than in any other U.S. state (California and Alaska are close seconds, but we’re staying our course south, not west or north). Texas is home to just over 600 species. There are three reasons why Texas has so many birds – location, location, location. Texas is home to eastern Atlantic coastal species, but due to its central location in the U.S., it also attracts a mix of species from north-central and western states, as well as birds from Mexico. Mexican species pay no heed to the

border crossing restrictions and regularly fly into Texas. Southern Texas, or the “Texas Tropics,” is a hotspot of subtropical rarities such as Green Jays and Chachalacas. Famous birding destinations in Texas are numerous – High Island, Bolivar Flats, Santa Ana, Laguna Atascosa, Big Bend and Aransas, among other places. For birders, Texas holds many highly sought-after avian specialities, with perhaps the best-known being the Whooping Crane. Once critically endangered and down to only 15 birds, conservation and protection has helped the species replenish to a few hundred. This remains, however, an incredibly low number in population stability terms, and one good hurricane could wipe them out again. So, why wait to see this iconic symbol of endangered species? Go birding in Texas!

The Neotropics

MEXICO

Although Mexico is a little off course with its westerly orientation, its Yucatan Peninsula juts significantly into the Caribbean Sea and is worth a quick stop. The Yucatan is the most bird-rich part of Mexico so this is a fitting place to touch down as we continue our flight south. Mexico is among the top 10 most biodiverse countries in the world, and the birdlife is part of the reason. Here, from your oceanfront eco-tourist lodging, you’ll find flocks of Flamingos in the shallows, Pelicans skimming the waves and magnificent Frigatebirds soaring high overhead. There’s so much more to discover in Mexico, but we are heading for the big bonanza of birding destinations and must get going.

CENTRAL AMERICA

We’ll get there fast and then we’ll take it slow… Now we’re making our way through the string of small countries that connect North and South America. We’re deep in the tropics now, complete with its jungles, rainforests, cloud forests and birds –beautiful, colourful, amazing birds. Each country more than makes up for its size with an abundance of birds, ever-increasing

in numbers. Belize features around 600 species, Guatemala 700, Honduras and Nicaragua almost 800, Costa Rica about 900, and Panama, the last link to South America, an amazing 1,000 species. Wow!

And such birds! They come in a kaleidoscope of colours – golds, greens and emeralds, crimsons, scarlets and saffrons, azures and violets, olivaceous and ochraceous and more. These are the Euphonias, the Parrots, Manakins, Toucans and Trogons – whole new families of birds unlike anything you’ve seen before. Their colours correlate to latitude – the further south we go, the more colour is infused in the birds’ plumages, attributed partially to the need to be seen in the deep, dark jungles. Their names equally captivate and intrigue – Resplendent Quetzal (perhaps the most beautiful bird in the world), Lovely Cotinga, Shining Honeycreeper. The list goes on.

Take your pick of birding in any of these bird-rich countries, you can’t go wrong.

South America

Give me a tropical (bird) contact high… For the last leg of our journey, we’ll take a transcontinental flight to discover a sampling of South American birds, or, as it’s famously known amongst birders, “the bird continent.” South America hosts more species of birds than any other continent in the world.

COLOMBIA

Take, for example, Colombia, a country roughly the same size as Ontario. Colombia is considered the birdiest country in South America, and arguably, the world! It is home to more than 2,000 species. By comparison, Ontario’s official bird list, according to the Ontario Field Ornithologists, stands at about 300 regularly occurring species. To be fair, there are an additional 200 or so accidentals, strays and vagrants, but these species are only seen once, or less than 10 times over 10 years.

And what about the dizzying diversity of species. The birdiest country in the world has a dazzling 150-plus different

species of hummingbirds alone! Ontario has one member of these iridescent, wee birds – the Ruby-throated Hummingbird. And Tanagers – Ontario has basically one of these beautiful species, the Scarlet Tanager. Colombia has more than 80!

Tropical Treats

Now that’s where you wanna go… Birding takes you to places you would never think of visiting otherwise – from coastal wetlands to towering, tropical cloud forests, through jungle trails and up to mountainside ecolodges. It’s mind-boggling, mind-blowing birding far away from the snow. And you really should go!

But for now, we’ve reached the end of our virtual winter birding vacation. Spring is coming, and the lengthening daylight hours are triggering the migration instinct in our overwintering birds. Soon, they will head north again on another incredible journey. We should get back home to greet them. OH

Make Your Holidays STRESS-FREE

The holidays are a busy time. Hosting a party or dinner can exacerbate an already stressful season. Whether you’re new to hosting or a seasoned pro, everyone can benefit from helpful tips to make the whole thing less exhausting and more enjoyable.

GET THINGS DONE IN ADVANCE

Do as much advanced prep as possible. A few days before the event, make a to-do list. Start by finalizing your menu, then create a prep list based on the components and what needs to be done. The day before the event, you can wash and cut produce, marinate meats, make salad dressing/ sauces/soups/dips and dessert (depending on what it is). If you have the time and don’t need the space, you can also set the table.

PRO TIP: Make sure the dishwasher is empty before your guests arrive. This will make cleaning up quick and easy.

BUY SOME PRE-MADE ITEMS

Not everything on the menu has to be made from scratch. If buying something pre-made makes your life easier, this is a judgment-free zone and your guests probably won’t even notice. Breads, dips, soups, sauces and desserts are all things you could easily purchase pre-made without compromising your personal touch to the menu.

KEEP IT SIMPLE

If you’re new to hosting, there is no reason to over complicate things. Keep the drinks, appetizers, menu – everything – simple. It’s better to do a few things really well rather than many things poorly.

HAVE GUESTS CONTRIBUTE

When your guests inevitably ask what they can bring, you might be tempted to say “oh, nothing.” But if you truly want to reduce your workload, take them up on the offer. Delegating appetizers, salads or dessert still allows you to tackle the main course and frees up some time to focus on smaller tasks that might otherwise get overlooked.

SERVE FAMILY STYLE

If you’re hosting a dinner, serving food in large platters or dishes rather than plating each person’s meal individually, can help reduce your stress twofold. Firstly, guests will serve themselves and take as much or as little of something as they like. Secondly, it’s easier to get everything to the table and served at the correct temperature.

USE A TRIED AND TRUE RECIPE

If there is one tip to take away from this list, this is it! When you’re hosting people for dinner or a party, do not try a new recipe for the first time especially if it’s the star of the show. Navigating a new recipe is stressful enough and you don’t need the added pressure of cooking for an audience. Choose recipes that you’ve made before and feel very comfortable creating. Even if you’ve made it for this group of people before, a successful recipe repeat is better than a recipe failure. OH

When it comes to hosting overnight visitors, a guest bedroom should be more than just a place to sleep. It should be a haven of comfort and warmth that makes your guests feel pampered and welcome. Here’s how you can create a guest bedroom so cosy and inviting your guests will find it hard to leave.

Creature Comforts

The bed is the focal point of any bedroom, especially in a guest room where comfort is paramount. Start by investing in a quality mattress that provides the perfect balance of support and softness. Even if your mattress is on the firmer side, a plush mattress topper can add a layer of comfort that feels like sleeping on a cloud. When it comes to bedding, think layers. Start with high-thread-count cotton sheets, as they are breathable and soft against the skin. Add a lightweight blanket or quilt, and top it off with a cosy duvet or comforter. Create the Right Ambience

The secret to making anyone feel at home is to make everyone feel at home. Neutral colours and finishes go a long way in creating serenity for many.

Lighting also plays a crucial role in setting the right mood. I start with a soft, warm overhead light for general illumination. Supplement this ambient lighting with table lamps on the nightstands or install wall-mounted sconces on either side of the bed. These provide focused light for reading without being too harsh. Choose lamps with dimmers, which allow your guests to adjust the light to their liking. A small nightlight can also be a thoughtful addition, helping your guests navigate the room in the dark.

Thoughtful Staples

Take a cue from a memorable hotel stay, and strive to pamper your guests. Outfit the room with some basics: fresh towels and washcloths, placed either in the room or in the adjacent bathroom. Extra pillows and blankets should be easily accessible, perhaps stored in a decorative basket or ottoman. Consider adding a pair of cosy slippers or a plush robe for your guests to use during their stay. These small touches can make a big difference, especially on cold mornings. A water carafe and glasses on the nightstand, along with a few snacks can make visitors feel at home when they’re staying at yours.

Engage the Senses

A lightly scented candle or an essential oil diffuser can fill the room with calming aromas like lavender, vanilla or sandalwood, which are known to promote relaxation and sleep. A charging station for phones and other devices is a modern convenience that will be appreciated. Personal touches like a framed photo or a small piece of artwork can make the room feel more like home. Chocolate Hazelnut TART

THIS CHOCOLATE HAZELNUT TART COMBINES A CRISP, NUTTY CRUST WITH A LUSCIOUS CHOCOLATE GANACHE FILLING, ALL TOPPED WITH TOASTED HAZELNUTS. THIS DESSERT IS PERFECT FOR COSY GATHERINGS OR A SPECIAL TREAT ON A COOL EVENING.

Ingredients

HAZELNUT CRUST

1 cup chopped unsalted hazelnuts, toasted

1 cup all-purpose flour

2 Tbsp sugar

½ tsp salt

½ cup unsalted butter, cold and cubed

3 Tbsp ice water

FILLING

12 oz chocolate (I used a mix of milk and dark chocolate)

1 cup heavy cream

¼ cup butter

Instructions

PREPARE THE CRUST

Preheat oven to 350ºF.

Toast hazelnuts in a pan on the stovetop.

Using a food processor, add ¾ cup of toasted hazelnuts, flour, sugar and salt. Pulse together until reaching the consistency of coarse meal.

Add cubes of cold butter and pulse until mixture turns into pea-sized crumbs.

Transfer mixture to a large bowl. Using a silicone spatula or wooden spoon, slowly stir in ice water. Add only enough water to bring the dough together.

Using floured fingers or the bottom of a flat and lightly floured measuring cup, press the dough evenly into a 9-inch tart pan.

Bake with pie weights for 18-20 minutes.

Remove from oven and place on a wire rack to slightly cool as you prepare the filling.

PREPARE THE FILLING

Roughly chop the chocolate and place in a medium heatproof bowl.

In a pan, heat heavy cream and butter on medium heat until steaming.

Carefully pour cream and butter mixture over the chocolate. Stir to melt.

ASSEMBLE THE TART

Pour chocolate filling into the tart shell and smooth the top of the tart.

Decorate with leftover chopped hazelnuts (optional).

Let cool in the fridge for 1-2 hours, until firm. OH
