turmoil is temporary during a home build or renovation helps homeowners endure the process. During construction, homeowners often have to live in less-than-ideal accommodations and deal with the inconveniences in the work zone.
Homeowners who have completed their projects all say it’s worth it in the end to see their vision come to fruition.
Carole Lavoie and Jonathan Hackett of Midland lived in a 1940s wooden cottage on their own property while the bungalow they purchased on Little Lake was going through a major renovation. Now they have everything they need on one floor and a huge deck with an unimpeded view of the lake.
After they moved into their beautiful, spacious home full of art, they took on another project. They rebuilt the decayed wooden cottage on the same footprint and created a modern two-bedroom cottage they now rent out short-term.
Lori and Joe Bailey moved into their basement, turning their laundry room into a make-shift kitchen, while Crayon Design worked in the couple’s Barrie home. Staying in place but adding luxurious new features was important to the Baileys because they’ve tended their backyard garden for the past three decades and didn’t want to start over. The garden is a wonderful habitat for nature with multiple bird feeders and baths. Joe has his hobby shed. Lori has her garden shed. And they have a vegetable and herb garden.
Designer Kaitlyn Cruickshank got to live at her own home while building a spec model home for a proposed in-fill subdivision in Barrie. That gave her full freedom to design the luxurious two-storey home around an outstanding kitchen that is open to both the family and dining rooms, with a nearby bar.

COLOURS for WELLNESS
We all know that paint is one of the most cost-effective ways to transform a space, but did you know that colour is also a powerful tool that can affect your energy level, feelings, and overall well-being? Welcome the wellness movement into your home with the strategic use of colour to reduce stress and anxiety and create a peaceful atmosphere.
Understanding the psychological associations of various colours and the impact of colour combinations can help you decide what colours to integrate into your home to create a desired atmosphere – a restful bedroom, a comforting kitchen, an inviting gathering space or a serene spa-like bathroom.
Colours are broadly categorized as either warm, cool or neutral. Warm colours like yellow, orange and red are energizing – they can stimulate appetite, increase heart rate and promote creativity. Cool colours like blues, greens and violets are restful, stabilizing and soothing and can slow the heart rate, lower blood pressure and calm the nervous system.
Colours can also appear to either advance towards you or recede away from you, making items and rooms of the same size appear larger or smaller. Warm hues and/or intense colours typically advance towards the eye. Walls painted in a warm colour will decrease the apparent size of the space, which can help create a cosy atmosphere. If you want a space to feel more expansive, painting the walls a cooler or more muted colour will give the appearance of the walls receding. A large sectional sofa upholstered in a warm hue will appear visually more substantial than the same sectional sofa upholstered in a cooler-toned fabric.
The simplicity of a monochromatic scheme (one dominant colour) tends to be very harmonious, whereas a complementary scheme (two colours opposite on the colour wheel) provides more contrast, which can stimulate the senses – so mix in moderation if your goal is to create a calm environment.
Also, be aware that different sources of natural and artificial light can affect how colour is perceived. A north-facing room with less direct natural light will feel quite different than a room drenched in warm natural light with a south-west exposure.
Here are some colours you can use in your home to help promote wellness:
WHITE
White represents purity and freshness and is airy and calming. Imagine a landscape covered in a fresh blanket of snow. There is a reason white is a go-to wall colour as it offers a calm canvas for the other elements in the space.
BROWN
Picture the rich, peaty hue of a freshly ploughed field. Earthy and organic with a certain honesty, brown can help create a space that is grounding and comforting. Worn oak floorboards are a great anchor for a space.
GREEN
There is a reason green saw a resurgence during the pandemic. People spent so much time indoors that they were drawn towards the harmony of nature and healing. Houseplants are a great way to integrate the symbolism green offers into your space – renewal, growth and balance.
BLUE
Blue is another dominant colour found in nature. The blue expanse of the sea and the sky on the horizon evokes feelings of tranquility, calmness and freedom. If you hope to create a soothing atmosphere, consider a soft, muted blue tone.
YELLOW
If you’d like to create an uplifting, inviting, and happy space, incorporate a warm, pale yellow (be careful because a bright or intense hue can be too energizing and not at all calming). Like the sun, yellow is warm, cheerful and optimistic.
As with any home improvement project, the purpose is to create a space that feels good to you, so begin by identifying what that looks and feels like. Your home is your sanctuary and should contribute to your overall well-being, regardless of what colour theory may suggest. OH

BLOOD ORANGE Sour
This vibrant Blood Orange Sour cocktail combines tangy blood orange juice with smooth bourbon, a hint of lemon and a touch of sweetness for a refreshing, autumninspired drink.
INGREDIENTS
1 oz fresh blood orange juice
2 oz bourbon
½ oz simple syrup*
¾ oz fresh lemon juice
Ice
Blood orange slice or peel, for garnish
Maraschino cherry, for garnish (optional)
*Simple Syrup: Combine 1 cup sugar and 1 cup water in a medium saucepan over medium heat. Bring to a boil, stirring until sugar has dissolved. Allow to cool. Pour into a clean jar and seal. Store in the refrigerator for up to one month.
DIRECTIONS
Add blood orange juice, bourbon, simple syrup and lemon juice to a cocktail shaker.
Dry shake until the mixture is combined. A dry shake is when you shake the drink without ice. This will create a good layer of foam over the drink. Add ice and shake until chilled. Strain the cocktail into a glass. Garnish with a slice of blood orange or a twist of blood orange peel.

It’s a day reserved for gratitude, togetherness, and of course, my favourite, delicious food. As someone with a passion for home entertaining, I’ve learned that being the ultimate Thanksgiving guest is an art form in itself. It’s not just about showing up; it’s about making a lasting impression while contributing to the joy of the occasion. So, from one guest to the next, here are some of my go-to tips to help you stand out as the ultimate Thanksgiving guest.

RSVP EARLY AND ARRIVE ON TIME
Starting off with my most important piece of guest advice – be on time. There’s nothing worse for a host than uncertainty about guest numbers. Be courteous and RSVP promptly, and when the big day arrives, aim to arrive on time. Punctuality shows respect for the host’s efforts and starts the festivities off on the right note.

WWhen you add designer Kaitlyn Cruickshank , you get a result that is unique and cosy. Kaitlyn is the principal designer of Kaitlyn Amelia Jean Design (KAJ)
Kaitlyn’s space planning, design and decorating at this home on Barrie’s Codrington Street serves as inspiration and a conceptual model home for a builder’s proposed in-fill development of 38 residential lots on nearby Cook Street. Kaitlyn is doing the design work for the subdivision of single-family homes and townhouses.
“I don’t like building standard homes,” says Kaitlyn while standing in the new two-storey home with 10-foot ceilings and
open-concept space. “I like taking it to the next level. That’s what we do as designers.”
Kaitlyn worked with residential designer Justin Sherry of Justin Sherry Design Studio to design the layout of the home and she completed every aspect, right down to the furnishings. Kaitlyn has a sales office and studio in Barrie.
Kaitlyn has been working on renovations, new homes, multiresidential projects and cottages, mostly in Barrie and Muskoka, since starting her own business in 2013.
“I think the kitchen is the heart of the home,” she says. “It definitely needs to work. You start there and then you build it out.”
In this home, Kaitlyn decided to change a planned main-floor office beside the dining room into a bar.
It is self-contained with a counter, shelving for glassware, bar fridge and sink, so it's separate from the kitchen. That comes in handy when you are entertaining so guests can self-serve beverages without bumping into the chef, says Kaitlyn. All windows and the front door are from DeCola Windows + Doors
To keep a consistent streetscape, the home is all brick. Located on a busy corner, Justin and Kaitlyn designed the home so that the attractive front of the home faces Codrington, while the driveway and garage are on the side street, making it safer to drive in and out. Continued on page 45

Instead of upper cabinets in the kitchen, there is plenty of storage in drawers around the perimeter and within the island. Live-edge shelves provide a space to display beloved items.
From the entrance, the family room and kitchen are visible in the airy space with lots of windows and walls painted Benjamin Moore Swiss Coffee. Separating the entrance from the family room, a console gives people a place to drop keys.
The front hall closet is maxed out with sections for long and short coats plus drawers and shelves. “We do this for all our closets,” Kaitlyn says.
The kitchen by Perkinsfield Kitchen & Bath features an extra-large island with a walnut butcher’s block at the end and lower open shelves. The stools at the island are wood with wicker caning, adding to the natural appeal.
The kitchen cabinets are painted Benjamin Moore Westcott Navy. The only uppers are over the fridge but there is abundant storage in pull-out drawers.
The island is topped with HanStone quartz, paired with a custom range hood that’s finished in a durable Marrakech paint, bringing a warm texture to the space. All plumbing fixtures are from The Ensuite Kitchen & Bath Showroom Barrie.

The family room has a huge sectional sofa and comfortable leather chairs. The Napoleon Home Comfort fireplace has a white painted brick surround with a frame TV above.
The main floor laundry/mudroom has a window that brings in natural light. It features stacked laundry machines, a counter, sink, room to hang clothes, hooks for coats, and a bench.
“It’s a room that covers it all,” Kaitlyn says.
There are four bedrooms and three bathrooms on the second level.
“I like the layout,” Kaitlyn says. “Each bedroom has a lot of privacy. The primary is almost a whole wing. None of the bedrooms are touching,” she says.

Kaitlyn says home projects often take a year or more so she really gets to know her clients.
“I feel like my clients become friends; not always when they hire you but at the end.”
The projects are complex and often stressful for everyone as a home represents the largest investment people make, but it’s worth it, says Kaitlyn.
“Seeing it all come together is really satisfying,” she says. “You look back and say ‘that is a beautiful home and I was a part of it.’ ” OH

ECO-FRIENDLY PRACTICES FOR FALL GARDEN CLEAN-UPS
Gone are the days when, after a fall garden clean-up, there wasn’t a stick of anything left. All leaves were blown out, raked up and put at the curb, leaving the garden as clean as a sterile vacant lot. For some of us, this is how it was done way back when, but that was a long time ago.
Now, the most difficult thing is to change the mindset. Leave the garden messy, as people may say. Leave the Echinacea and Rudbeckia up so their seeds are a food source in the winter for birds. Leave hydrangeas up because they look so pretty with snow on their dried flowers. There are lots of other perennials that have great form in the winter garden too. Not only does it make for a more interesting winter landscape, but you are doing a wonderful thing for the soil in your garden.
Leaving the leaves to overwinter in your beds is one of the best gifts you can give to your garden. The fallen leaves provide a natural mulch, helping to moderate soil temperature and keep in moisture. When the leaves break down, they add back to the soil the very nutrients your trees, shrubs or perennials took out and they play an important role in maintaining a healthy soil food web. Beneficial microorganisms like bacteria, fungi and nematodes release nutrients, making them available for plants.
The leaves also provide a habitat for beneficial insects. Spiders and ladybird beetles will have a place to overwinter. Praying mantises lay their eggs on plant stems, and garden beetles eat everything from snail eggs to caterpillars, just to name a few.

What To Cut
Some perennials such as hostas or peonies can be cut back as they tend to go to mush after a good hard frost. Any plant that is diseased should be removed from the garden and put in the garbage, not composted.
Generally speaking, leaving plant stems up adds protection against recent wild weather swings. The stems are more likely to catch the snow, and create a blanket of protection. As we know, the snow is a great insulator and when we cut everything down in the garden, there is nothing left to catch and keep the snow in place. When the soil is bare, the roots of all plants can be subject to frost heaving. It’s when we don’t have a good snow cover that we see a lot of winter kill in the spring.
While you don’t want a heavy blanket of anything on the grass for the winter, leaves on the lawn can be mowed over so they are mulched and left to enrich the lawn if there aren’t too many. You could always use the mower to mulch the excess leaves and shoot them into the garden!
Clean Your Tools
Eco-friendly practices for fall clean-ups also include taking good care of your tools before you put them away for the winter. Make sure all rakes, hoes, spades and shovels are cleaned and oiled. Better quality secateurs can be taken apart and cleaned, oiled and sharpened. Your tools will last a good long time when they are well cared for.
Less is more in terms of fall clean-ups. You do less work, use less fossil fuel and resources, reduce your carbon footprint and improve the biodiversity, all while making your garden healthier and more beautiful at the same time!

DIRECTIONS
Prepare the icing by mixing icing sugar and 5 tablespoons of water. Dip the bottom of the marshmallow into the icing and place on top of a cookie.
Spoon the icing on top of the marshmallow, letting it drip down the sides. Let icing dry until hardened.

BIRD-FRIENDLY WINDOWS
Every year millions of migratory birds die in collisions with windows, representing one of the leading causes of death among migrating avian species.
Birds can’t see glass. Instead, they see whatever happens to be reflected in its mirror-like surface. Often, this is open sky or trees –an extension of their environment – so rather than altering course, they keep flying straight ahead, oblivious to the danger until they crash into the window, often with deadly results.
Additionally, birds might be attracted to interior lighting, or even plants, and strike a window while flying toward the light or object.
Flap Canada and the American Bird Conservancy estimate as many as a billion birds die in window collisions across North America annually. The loss of so many birds is a tragedy. Birds play a critical role in ecosystems and economies around the world through pollination, controlling pests, enriching the soil, and other vital functions. Their contribution to the natural order is immense.
Window manufacturers are taking heed and stepping up to address the problem by creating bird-safe window options.
“Bird safe isn't new but continues to gain traction year over year,“ says Adam Mitchell, marketing manager at Collingwood architectural glass manufacturer AGNORA. “Toronto and New York City paved the way with bird-friendly glazing. There’s a fairly wide variety of bird-friendly glass solutions. They differ in cost, size, and visual considerations, but all these products are designed to effectively deter birds.”
Adam says there are, broadly, three main types of core birdfriendly glass available.

These windows have an ultraviolet coating. The coating is invisible to humans, but visible to birds, as they can see into the ultraviolet spectrum. Benefit: The lowest visual impact on the dwelling. Drawback: High cost. Maximum Size: 102 by 144 inches.
2. PRINTED OR LAMINATED DOT PATTERNS/VISUAL PATTERNS
These windows are covered with two-by-two-inch or fourby-four-inch dots or designs, breaking the reflectivity of the glass so birds don’t fly into it. Benefit: A cost-effective option. Drawback: Visible to humans as well as birds. Maximum Size: 130 by 300 inches.
3. ACID ETCH DOT PATTERNS/ VISUAL PATTERNS
Similar to above, except that the dots or patterns are etched into the glass rather than printed or laminated onto the surface. Benefit: Also cost effective. Drawback: Visible to humans. Maximum Size: 96 by 130 inches.
This past spring, Ontario NDP MPP Chris Glover (Spadina-Fort York) announced legislation (The Bird-Safe Windows Act, 2023) that would protect migratory birds by implementing bird-safe measures into Ontario’s building code, noting: “As we continue growing as a province, we need to ensure it is innovative and sustainable – bird-safe building legislation is long overdue in Ontario.”
Currently, all new low-rise residential, mixed-use low-rise, institutional and public buildings in Toronto require birdfriendly glass.
The legislation would extend this mandate province-wide. It would not impact single-family homes; whether a homeowner elects to use bird-friendly windows would remain entirely their choice.
The bill, should it pass, will impact cost of construction on new builds and renovations. How much?
“Depending on the bird-friendly product used or specified, the price can vary. A safe estimate would be 30 to 100 per cent higher than standard glass,” explains Gin Benner, project manager at AGNORA. “However, as an industry, this is actively being worked on to have more affordable offerings for our feathered friends and prices will likely decrease in time.”
But, as Adam points out, there are ways to mitigate costs. “The goal is to ‘break’ the reflectivity of glass in fly-through zones, essentially the areas where birds live and nest,” he explains. “For that reason, the need to employ bird-friendly glazing above a certain height becomes unnecessary.”
In addition, there are tangible benefits to these windows beyond the knowledge that we are preserving biodiversity. Bird-friendly solutions can be combined with high-performance coatings to provide thermal insulation and solar control properties to the glazing, thereby reducing cooling and heating costs.
Bird-friendly windows play a vital role in the preservation of valuable bird species, and by extension the preservation of our threatened ecosystems. As a result, their use is destined to only grow in the years ahead. OH
ADVICE FOR HOMEOWNERS
What can you do?
One would think that most bird collisions are with high-rise buildings, but studies suggest that a great many happen with residential homes and low-rise commercial buildings. So, there is an opportunity for homeowners to play a role in reducing bird mortality.
Even if you are not switching out the windows on your home anytime soon, there are still some steps you can take to ensure that your windows don’t pose a threat to flying birds. These include:
1. Place bird feeders either close (1.5 feet or less) to your windows – it will make birds slow down as they approach – or well away from the home.
2. Keep curtains or shades drawn during the day to reduce reflection.
3. Move houseplants back from your windows, as they may attract birds.
4. Install a screen or net a few inches outside of your windows, to lessen the impact.

WHO’S BUYING?
Adam says 99 per cent of his clients are interior designers, architects and interior decorators. A variety of styles are being requested –modern, contemporary, farmhouse, Japandi and more. “We do see more demand for modern styles,” he says. “We are also seeing a shift in wood tones. Light wood tones like white oak and ash have been popular the last few years but a shift is happening where darker tones are coming in. We are staining light wood dark or using dark wood like walnut. Lastly, there is a movement to combine materials, such as using stone for the tops of furniture rather than just using it on countertops. This new trend has been a lot of fun for us to incorporate into our work.” OH

MIXING METALS in your home
Mixing metals in your home is an artful way to add depth and sophistication to any space. To achieve a harmonious look, start by choosing a dominant metal. This primary metal will set the tone for your design and should be used with the majority of your fixtures and fittings. Apply the 60-30-10 decorating rule to the metals as a guide – 60 per cent of your home in the dominant metal, 30 per cent with the secondary metal and 10 per cent with an accent metal.
Secondary metals should complement your dominant choice without overwhelming it. For instance, if your primary metal is brushed nickel, you might introduce copper or matte black accents to add dimension. Balancing the placement of metals is key to achieving a cohesive look. Spread the different metals evenly throughout the room rather than clustering them in one area. This approach ensures that your design feels intentional and well thought out. Excessive metal mixing can make a space look chaotic and cluttered. A good rule to remember is to mix one to two metals in small rooms and no more than two to three
metals in larger rooms. In a small powder room, for example, sticking to no more than two metals helps maintain a cohesive look. Considering the finish of your metals is also very important. Combining various finishes like polished, brushed or matte can add texture and richness to your design. Ensure there is a common element tying them together, whether it’s the colour tone or the style of the pieces. When in doubt, remember that matte black and grey iron are considered neutral metal colours that go with just about any other metal.

JONATHAN HACKETT AND CAROL LAVOIE, married for 51 years, are the new owners of the cottage, originally built by the Shewfelts. Jonathan and Carol have an almost 170-degree view of the lake facing southeast, south and west. Continued on page 70
“We are happy,” says Carol, a set decorator who is working with a local theatre group. “We’ve only been here for three years but I’m totally in love with it. We feel like we’ve won the lottery so we’ve named our property Windfall.”
Part of that joy comes from the view over greenery as the shoreline is protected by the Severn Sound Environmental Association (SSEA), giving the urban lake a wild feeling. The couple is working to naturalize their shoreline and protect Little Lake with the assistance of the SSEA.
Since purchasing the two-acre property in 2020, Carol and Jonathan have transformed the 1997 tired brick home and the 1940s cabin into comfortable, modern accommodations.
The couple lived in a rental in Midland during the first winter and planned
the total renovation with IHD Design Build principals Jacob Lalonde and Brad Hauser. They are extremely happy with IHD’s work.
In the spring of 2021, the home’s interior was gutted and the couple moved into the old cottage.
“It was perfect because we were on site, or I was on site all the time,” Carol says.
Jonathan, a recently retired movie and television producer, was working in Winnipeg while Carol was training a new puppy, Otis, and overseeing the renovation.
“The goal was to make a really comfortable main-floor living space, so we could live all on one level,” says Jonathan.
“We spent a long time talking about what would happen in our really old age,” Carol adds.

Opening up the space meant taking down the wall between the kitchen and the dining room to create a large kitchen with an 11-foot island covered in tiger maple.
“What we really wanted was a contrast between the modern painted cabinets and the traditional wood on the island,” Jonathan says.
The kitchen windows overlook both the lake at the back and the west side of the house, which is green space. Barrie Trim & Mouldings provided all finishing materials and interior doors.
A major change to the home was the addition of a 15 by 30-foot deck across the back with glass railings, giving the couple almost 500 square feet of outdoor space overlooking the lake. Continued on page 72

“When we sit in the living room, we just look at the water,” Jonathan says. “You’ve got a completely clear view of Little Lake with no obstruction.”
The living room is also an open space with a gas fireplace, surrounded by charred Japanese cedar.
“We use the living room a lot,” Carol says. “There is no TV but we love to read there and have the fire in the winter time. It’s very comfortable.” Furnishings in many rooms were sourced at Simply Home Furnishings

The homeowners made clever use of colour throughout the home, without overdoing it, and the place is full of art, much of it of the human form in sculpture and framed work.

“We are definitely shower people,” laughs Carol. “We like clean, modern lines with nice tiles on the floor and Italian tiles on the wall.”
There’s a guest bedroom downstairs and a
second bathroom with a shower and a sauna. There is also a TV area, a library with lots of natural light by the walk-out sliding glass doors and a home gym/yoga studio.
The transformed exterior features a modern look with a wide front deck and cedar posts from Trans Canada Wood Products. A new front door and windows are from DeCola Windows + Doors. The exterior was painted blue by Spray-Net Northern Ontario
The couple moved into the home in November 2021 and in March 2023, Carol broke her ankle. She gives the home a thumbs up to its livability when she had to use a walker.

The cottage on the property was rebuilt in 2023 in a style similar to the home. The couple began renting out Windfall Cottage on Airbnb as a “calming retreat” this spring.
The home and guest cottage was featured on the 2023 Showcase of Homes Tour, a fundraiser for North Simcoe Big Brothers Big Sisters.
“We’ve always been a supporter of Big Brothers and Big Sisters. It was lovely to meet the group here in Midland. They asked and we said, ‘Yes of course.’ ”
‘’We are so happy to be here in Midland,” Carol says. “It’s such a thriving, happening little town with so many talented people. We’ve only been here three years but I just love it, love it, love it.” OH

The POWER of COLOUR
Colour is a wonderful thing, and it’s a common bond between people, despite the sheer volume and preferences. Scientists estimate that the average person can distinguish more than one million colours, and despite the many varieties, most of us are able to narrow down our favourites to a select few. That’s incredible.
What’s behind our attraction to certain colours, and dislike of others? We can circle back to science on this one. Colours have been shown to elicit emotional responses, with different hues and shades triggering a variety of moods and even physical reactions. Talk about power!
Colour holds a special place in my heart as a designer, yet when faced with making decisions, many of my clients get lost in the whirlwind of paint chips and fabric swatches. I advise them to take a step back and consider colour from a base perspective. Then, go from there.
COLOUR BASICS
If you’re hesitant to dive into a pool of vibrant hues, don’t worry – you don’t have to. Most colour palettes are built on a simple formula of three: a dominant colour, a secondary colour and an accent colour. Overcomplicating your space with too much colour can create visual chaos. Generally speaking, working with a threecolour plan is a manageable starting point for most people. Find your inspiration and allow it to steer your colour choices. If you’re drawn to nature, let yourself travel the path of forestor ocean-inspired hues. Of course, there are countless other sources of inspiration – art, culture, even food. What colours stand out to you?

APPLICATION OF COLOUR
Now that you have your trio of colours, apply the 60-30-10 rule to your space. This approach to decorating holds that the dominant colour should occupy roughly 60 per cent of the visual area of your space, like walls and flooring. This selection is often a neutral colour, but it doesn’t have to be. The secondary colour accounts for 30 per cent of the space, taking its place on mid-size elements such as sofas, armchairs and accent walls. Finally, the accent colour takes the remaining 10 per cent and, in many of my designs, is a bold choice that becomes a focal point, often through artwork and accessories.
Remember that the secret to a well-designed space is balancing, and this includes your colour proportions. Factor all you see into your interior palette: walls, ceilings, trims, floorings, furnishings, window treatments, artwork and accessories. The goal is for consistent colour distribution across all these elements.
HAVE FUN!
Colour can’t be taken too seriously. At the same time, it can be a commitment, depending on the chosen colour and its application. For example, a small feature wall can be changed relatively easily and at a low cost, but it’s a different story when you’ve painted all the walls in your open-concept, double-height living area in a tone that didn’t quite hit the right note. Also consider that trends come and go, and your tastes will likely change. But there’s a simple solution for that: go neutral for your dominant colour and give it life with a bold or trending hue.
Many of my designs lean into a classic cream or black-and-white palette, with a pop of sunny yellow art and accent furniture, or a daring, coral-coloured door. The mainstays –that is, large-scale and expensive items such as flooring, built-in elements and furniture – retain their versatility and longevity, made possible through their neutrality.

8 UNDERRATED FOODS
You Probably Don’t Have In Your Kitchen, But Should
Have you ever found yourself in a food rut? You buy the same foods and make the same meals every week. It can get boring! What if I told you that you might be overlooking some pretty spectacular foods that could really spice up your nutrition and culinary game? These eight underrated foods don’t get the attention they deserve, but they offer so much from a nutrition standpoint or culinary perspective (or in the case of some, both!) that they shouldn’t be ignored.
How many of these underrated foods do you have in your kitchen?
GROUND/MILLED FLAXSEED
This is first on the list for a reason. It’s a nutritional powerhouse high in fibre and omega 3s and can be added to just about anything to boost nutrition – yogurt, oatmeal, overnight oats, granola, baked goods and smoothies.
DATES
Fruit from the date palm tree, dates are incredibly versatile and nutritious since they’re high in fibre and antioxidants. Turn them into a paste to use instead of white sugar in some recipes. Add them to sauces, marinades or blend into smoothies. And since they’re sticky, they act as a binder in baked goods like bars, squares or cookies.
NUTRITIONAL YEAST
This is an inactive form of yeast with a cheesy or nutty flavour profile. Likely already a staple if you’re plant-based, nutritional yeast is a flavourful addition to creamy sauces and dressings or can be sprinkled on pasta or popcorn. It’s also high in vitamin B12 and a source of protein.
MISO PASTE
A staple in Japanese cuisine, miso paste is made from fermented soybeans and can be light white or dark red, depending on the length of fermentation. A flavourful addition to sauces, dressings, stews, marinades or baked goods.
PRUNES
A food you may not have thought about in years, this dried fruit is making a comeback. They’re high in fibre, potassium, antioxidants and other nutrients, which make them a must-have from a nutritional standpoint. They can also be easily incorporated into meals to boost the nutritional value. Try adding them to baked goods, savoury stews, granola/ trail mix or make a prune butter/jam.
DIJON MUSTARD
The perfect addition to salad dressings, marinades, egg or potato salads. Mustard is an emulsifier, which prevents the vinegar and oil in your vinaigrette from separating.
POPCORN
I’m referring to the kernels of popcorn that you pop and season yourself. Popcorn is an underrated snack option. It’s a great source of fibre, low in calories and offers some protein and other micronutrients. Try sprinkling some nutritional yeast on top.
HEART OF PALM
Classified as a vegetable, heart of palm is the core of certain palm tree varieties. Usually found canned or jarred, it has a mild taste that’s similar to artichoke hearts. Try adding it to salads, dips or eating it on its own, or get creative and use it as a seafood/meat replacement. OH

MODERN FAMILY
Nature, as they say, never ceases to amaze, and is full of surprises. Take a commonplace species – the Canada Goose for instance – and think, what could be intriguing about it? They appear to do nothing more than graze on golf courses, park lawns or your lawn, and otherwise just loaf on lakes or in fields. However, I recently had a chance to look deeper into the everyday lives of a pair of Canadas, and discovered all was not as humdrum as you might think.
THE CANADA GOOSE
Canada Geese, as we all know, are our most familiar and abundant waterfowl, found virtually everywhere across Ontario. Their numbers have proliferated in sync with the proliferation of big, lush lawns, grassy golf courses and pastoral public parks, which provide them with the perfect combination of both their favourite food and openness, which offers predator protection. These human-made habitats are so suitable that in some areas, the geese stay year-round instead of migrating as nature intended. Canada Geese are known to mate for life. Goslings stay with their parents throughout their first year. Come fall, families group together socially at reliable food sources. Nice, but nothing too glamourous here.
THE SNOW GOOSE
The Snow Goose is another abundant, though lesser-known goose species. These hardy geese breed above the tree line in the Canadian Arctic and migrate in a blizzard of whiteness by the thousands through eastern Ontario in autumn to southern wintering destinations. But each year, if you are looking, you’re bound
to notice a handsome pure white goose with black wing tips mixed in with a flock of Canadas. Although Snows and Canadas don’t migrate together and tend to not associate where their breeding grounds overlap, a few stray Snows inevitably end up off-course and will then accept Canadian company until they get back on track.
A GAGGLE OF GEESE
So, this brings us to a day last fall when friends alerted me to sightings of a greyishwhite goose at our local waterfront park. I found it easily in the lake and waddling onshore to nibble on the park grass. Its colouration was not the snowy white of an adult Snow Goose, but rather, its white feathering was mixed with greys. This plumage aged it as a young, first-year Snow Goose, hatched somewhere in the arctic in the spring.
Its location made for an easy study, particularly as it was on our daily walking route. Interestingly, after a few days’ observation it became apparent that the Snow was exclusively associating with two Canada Geese. They were a gaggle! Well, not exactly a gaggle, but a definite threesome.
They stuck together, despite the presence of other Canadas in the park. They didn’t mingle. They maintained a tight unit together while foraging on land or in the water. They interacted as a typical Canada Goose family unit, swimming or on land with the juvie Snow always between the two adult Canadas in goose-family protective style.
As other Canadas flew in, fed and flew out of the park on a regular basis, I was expecting the trio to disappear with them at some point soon; geese being very sociable in the fall and October being their prime migration time. But they didn’t. In fact, after watching this interaction several times, it became clear that the trio would actually slowly separate themselves from any group that landed around them, and then keep at a distance, away from the others.

NIBBLING ON NIBLETS
The three geese had quite an affinity to the park. Still-green grass was abundant, and the weather was unseasonably mild. They were there every day through October and November. However, one stormy, wintry December morning I looked out my window and found the trio seeking shelter from the storm on the shoreline in front of my place. Resisting my usual rule to not interfere with nature, I went to the freezer and found a bag of Green Giant corn niblets, spreading them on the beach. It was not long before the birds found the niblets, devouring them with great geese gusto. They returned the next day, then continued to show up over the next week. As the niblets ran out, a bag of feed-corn was purchased, (justified so that I could continue this “behavioural research study,” of course)! The Canadas took to it the first time I replaced the soft niblets with this hard corn, but the Snow picked up kernels and actually spit them out! Ptooey! It took him/her a few days to acquire a taste for these harder kernels.
GROUNDED
Again, after a few days’ observation, I realized the Canadas appeared daily at the corn by paddling, not flying, from the park. The young Snow would often be alone on the beach first thing in the morning and despite fresh corn being spread out, it would not start to forage. Instead, it would take to the air, fly towards the park, return, only to fly off again. After several such flights, the two Canadas would come paddling in. It seemed
that the Snow had to keep connected to the Canadas and check on their progress as they paddled along. Or maybe encourage them to hurry it up?
It was interesting that I never observed the Canadas in flight. They simply paddled from the park. Why not fly, I pondered. A bit of research suggested a late moult, which renders geese flightless for a bit of time, but this flightlessness was now well into winter. Unexplained behaviour indeed.
After a week or two of this pelagic paddling commute, the three geese relocated. They would be walking on my beachfront expectantly, in the dark before dawn, waiting for corn to appear. After breakfast, they would rest and preen on the groynes, forage a bit in the shoreline shallows, or paddle around out on the lake, always returning for their four o’clock feeding.
FOSTER FAMILY
By now I was convinced, based on these observations of their tight bond, and a little research, that the trio was a family group. Adoption of unrelated and extra-species offspring is known to occur in geese. Canada Geese have strong pair-bonds and both male and female are highly attentive parents. This makes for good qualifications for being adoptive parents.
However, with geese it’s been shown that adoption usually occurs when the geese have a gosling brood of their own, which is relatively same-aged as the orphaned adoptee. It seems one more isn’t noticed. But this particular adoption by
an adult pair with no existing brood didn’t follow this norm. What accident of nature separated the Snow from its biological parents? How did it happen that a broodless pair of Canadas accepted it? What instinct was at play here? Trying to discover clues to this strange circumstance kept the corn coming…
FLY, FLY AWAY
Whatever brought these three together, they were a bonded modern family through October, November and December. In January however, the Snow began taking frequent short flights away from the Canadas. As days passed, the flights away became longer. Research noted that such flights are indicative of “migratory restlessness.” However, despite the Snow’s restlessness, the Canadas remained firmly flightless.
But inevitably, sometime after their morning corn in mid-January, the geese weren’t loafing about throughout the day. They didn’t paddle up for their four o’clock dinner and the next day no geese were staring up expectantly in the early dawn. It seems the Canadas had finally given into the Snow’s urge to move on.
They left me wondering. Geese return to the same migratory stopover year after year. Has their prolonged stay on Georgian Bay imprinted this location on them for future stopovers? Will I look out one morning next spring or fall to see my Snow Goose, transformed in sparkling white adult plumage, staring up from the shoreline in hopes of another gourmet meal of those soft corn niblets? Fit for life
hHomeowners Joe and Lori Bailey decided it was time to simplify their lives and they realized their home was just about everything they wanted. But it needed some work.
So, they sold their cottage, which wasn’t getting as much use, and focused on making their 3,400 sq. ft., four-bedroom home in Barrie fit their lifestyle.
This was going to be, we hoped, our forever home,” explains Lori. “We love our yard, we love our location. We wanted to make it more universally friendly for our lifestyle.”

of Barrie’s downtown. And the mature backyard reflects three decades of therapeutic gardening, with walkways wending through gardens leading to a fun shed that the grandkids now use, another functional garden shed, an outdoor shower they use after the couple’s regular bike rides and a hot tub under the deck.
While the views are stunning from the decks, the Baileys wanted to enjoy the view from inside the house as well. They
were also keen to finally have the range hood vent outside.
In came Crayon Design to give them what they wanted. Just about everything on the main floor was removed. A wall was taken out by Springwater Construction, opening the kitchen to the former dining room, which has since become a music area where they can enjoy Joe’s extensive record collection. It extends on the other side into a dining and universal area. Continued on page 106

The kitchen by Pure Kitchens, featuring natural Brazilian quartz counters and backsplash, boasts a large garden window above the sink, making dishwashing with the backyard view a more enjoyable task. An awning window from Balm Beach Windows and Doors opens to vent warm air out of the kitchen. The counter space accommodates a secondary plant sink behind the regular sink, custom designed to bring a taste of what lies beyond the window into the house.
“It’s just a re-thinking of how to use the space,” says designer Sean Renon of Crayon Design. “At the end of the day, the plumber ties in another sink.” Continued on page 109

By eliminating the formal dining room and shifting the kitchen, they were able to include a desk area in the kitchen, a chopping block island as well as a coffee bar with a pantry, all complemented with new lighting. Inlaid tile is flush with the new flooring.
The Baileys liked their custom furniture, but felt the yellow oak needed updating. So almost all of it, including the “everything table,” hutch, chopping block, two cabinets and stereo cabinets were refinished to match the new look of the main floor. They were fitted with new knobs. The cabinets and table were also cut down so everything is now the same height.
Carpeting was removed and replaced with hardwood flooring. The staircases were updated from the yellow oak, with a new post at the landing, new spindles and railing to allow for a more natural flow.
Sliding pocket doors hide the coffee nook and pantry, allowing easy access to a variety of coffee-related and other daily use implements. It, too, is equipped with a sink and a faucet that provides instant hot water, which is handy for a quick tea or lemon water.

fireplace with a gas insert was replaced with a more modern installation that has been getting regular use since the renovation. The stippled ceiling was also scraped flat.
The front entranceway also underwent an overhaul. A larger door with a glass side panel that opens replaced the original door and static side panel. A ghost screen on the porch door easily rolls out of view when not used and cedar lines the porch ceiling.
The project took about five months. Everything was pre-planned right down to the specifications to ensure an adequate budget, but it did take some time to secure contractors, given it was at the tail end of the pandemic when contractors were quite busy.

“It was a fairly large main-floor renovation,” says Sean. “We basically gutted the whole main floor. Other than some furniture that was existing, everything that came out was replaced. The biggest challenge, typically, is making the new space tie into the old space. It still has to resonate with the balance of the home while still being new.”
For the Baileys, it all works. “We love our new space,” says Lori. OH

Book clubs are experiencing a revival! You may have noticed celebrities creating popular online literary communities and now independent bookstores and even bars are jumping on this trend with in-person events. Hosting a reading group at your house is the perfect way to embrace spending more time indoors during the fall and winter months. Here’s how to make your next book club meeting a real page-turner.
SETTING
Create a cosy atmosphere for your guests the moment they arrive. Chances are you’ll be chatting for a couple of hours, so give your furniture a fluff and add some extra pillows and throws for comfort. Lighting candles or igniting your fireplace will provide a relaxing ambience to your space. Cue the soft background music.
Add an element of surprise with a curated collection of thoughtful accessories. An assortment of plush reading socks in a basket at the front door and a bowl filled with extra reading glasses, book lights, magnifiers and bookmarks will help your gathering garner good reviews!
Cultivate the feeling your book club members will get when they experience your unforgettable menu featuring signature beverages and bites. It’s easy to lean toward novel ideas like a Tequila Mockingbird cocktail, but there are plenty of other ways to set the tone using food.
Non-alcoholic options have become increasingly popular. A hot chocolate bar with all the fixings and a side of sweets will complement your comfortable setting. Serving the cocoa in a literary-inspired mug is a cute idea for clubs that meet in the afternoon.
If the storyline of the book you’re discussing features an international destination, opt to serve drinks and snacks from that region. Similarly, if the book is set in a certain time period, search online for recipes that reflect the style from that era. PLOT
Organize the sequence of events ahead of time so your meeting is always entertaining. After socializing for the first 15 minutes, launch into the book’s topics by breaking the ice with a round of trivia about the story. Ask guests to perform a reading of their favourite chapter, try choosing a book by a local author and inviting them to lead your discussion or guide engaging conversations with a list of discussion prompts. Topics don’t always have to be about the selected storyline. You can ask broader questions based on themes to personalize your chat.
Everything you talked about to this point will surely spark some open conversation, which you’ll want to leave time for toward the end of your get-together. Before the meeting concludes, introduce next month’s host and book.

CRISP ON THE OUTSIDE, CREAMY ON THE INSIDE, THESE FRIED GOAT CHEESE BALLS ARE PERFECT FOR FALL GATHERINGS. SERVE WITH A DRIZZLE OF SPICY HERBED HONEY.
INGREDIENTS
GOAT CHEESE BALLS
(Makes 8 1 oz cheese balls)
8 oz goat cheese, chilled
½ cup all-purpose flour
2 eggs, beaten
1 cup panko breadcrumbs
½ tsp garlic powder
½ tsp dried thyme
Salt and pepper, to taste
Vegetable oil, for frying
HOT HERB HONEY SAUCE
½ cup honey
1 tsp crushed red pepper flakes
1 tsp fresh thyme leaves, chopped
1 tsp fresh rosemary leaves, chopped
DIRECTIONS
GOAT CHEESE BALLS
Divide the goat cheese into small, bite-sized portions and roll into balls. Place them on a baking sheet and chill in the refrigerator for at least 30 minutes.
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, garlic powder, dried thyme, salt and pepper.
Roll each goat cheese ball in flour, then dip in beaten eggs and coat with the breadcrumb mixture. Repeat this twice to ensure they are well coated.
Heat about 2 inches of vegetable oil to 350°F in a deep frying pan or pot. Fry the goat cheese balls in batches until golden brown and crispy, about 2-3 minutes per batch. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.
HOT HERB HONEY SAUCE
In a small saucepan, combine honey, crushed red pepper flakes, thyme and rosemary.
Heat over low heat, stirring occasionally, until the honey is warm and the herbs are fragrant, about 5 minutes. Remove from heat and let the sauce cool slightly before serving.
TO SERVE
Arrange the fried goat cheese balls on a serving platter. Drizzle the hot herb honey sauce over the top or serve it on the side for dipping. OH
