COLORADO DINING REACHES THE STARS

olorado may not rank high on the list of destinations for foodie travelers— but it should. Newly listed in the Michelin Guide for 2023, several restaurants in the Rocky Mountain State have been recognized by the famous French guidebook, and several have earned star ratings, meaning that they are deemed to be dining experiences that are noteworthy.

Three restaurants in Denver were recognized with a Michelin Star, but only one—Brutø (1801 Blake St.)—also earned a Michelin Green Star, meaning the restaurant was successful in minimizing its environmental impact. The menu varies based on what’s available at the market that day, but one thing is consistent—fresh baked bread made with Colorado-raised grains milled inhouse, fired in a hearth that is a focal point in the kitchen.

Brutø is also noted for its interesting wine and cocktail pairings available with the six-course omakase tasting menu —including a spirit-free cocktail tasting menu that’s helpful for nondrinkers, or just those who want to limit their consumption as they grow accustomed to Denver’s elevation.

During a recent visit, the restaurant’s commitment to reducing food waste was also on full display. The dessert served showcased a squash cooked three ways, but the byproduct of the trimmings of the squash weren’t thrown away—they were instead pulverized and baked into a crispy cracker garnish.

For a more casual atmosphere, Mister Oso (3163 Larimer St.) earned a Bib Gourmand designation from the Michelin Guide, meaning the cooking is good quality and good value. Here one finds hearty tacos and ceviches served family style, and a habit-forming coconut milk rice served sizzling in a skillet. It’s rich, but subtle—the perfect accompaniment to a richly simmered mole or braised meat taco.

Visitors can take their ease at the new Thompson Denver (1616 Market St.), walkable to several of the city’s top restaurants and Union Station. Comfortable guest rooms (just try getting out of those fluffy beds) and capable but not-overly-formal service conspire to make for a memorable stay—or maybe it’s just the magic of watching the first rays of the sunrise illuminate the Front Range from one of the upper-floor guest rooms.

For a bit of local history, visit Molly Brown House Museum (1340 Pennsylvania St) to learn about the indomitable Margaret Tobin Brown (the “unsinkable” Denver resident of Titanic fame). The Museum is well-known in Denver, but less so among visitors, and is a fascinating look into the life of this early Western socialite, suffragist, and community leader.

Up the road in Boulder, nestled in the

foothills of the Rockies, are two unbeatable entries in Colorado’s gastronomic annals. Frasca Food & Wine (1738 Pearl St.) focuses its craft on a very specific region of northeastern Italy—Friuli Venezia Giulia (they’ll help diners pronounce it). It’s an intimate space where the staff love to engage in a bit of storytelling about their chosen region and the constantly rotating tasting menu, which, like the region, is equal parts Mediterranean, Alpine, and Balkan. There’s also a prix fixe here, for diners whose constitutions may not require a multihour tasting menu.

Bramble & Hare (1970 13th St.) is certainly more eclectic in décor, and has earned a Michelin Green Star for being literally farmto-table—much of the produce, meat, and herbs come from the owners’ own farm. And at $68 for a three-course menu, it’s one of the more modestly priced Michelin-recognized restaurants in the Colorado survey.

Heading west up the slope, toward Aspen, a good place to break a road journey is in Glenwood Springs, Colorado, for two types of hot springs experiences. The Yampah Spa & Vapor Caves is a naturally heated underground cavern—like a natural steam room (709 E 6th St). There are also spa services, and visitors can choose to soak in the mineral waters in a private room with a tub. The use of the vapor caves dates back to local Native American peoples long before European contact.

Next door is Glenwood Hot Springs (401 N River St), a historic hot springs bathing pool dating back to the 19th Century. Here, guests can buy a day pass and take a dip in the mineral hot springs in a pair of expansive hot and warm pools surrounded by the spectacular views of the surrounding mountains and foot of the scenic Glenwood Canyons—a good place for a travel-weary group to spend a few hours resting before continuing their journey.

There are plenty of luxe places to dine in Aspen, but Bosq Aspen (312 S. Mill St.) handily earns its Michelin star with a sumptuous tasting menu. There are plenty of premium items on the menu (Oscietra Caviar, Japanese A5 Wagyu), but Bosq is most famous for its foraging program—and a great deal of the produce comes right out of the mountains in season. A favorite on the menu is the Forest Broth—a lovingly simmered brew of charred local oak bark, porcini mushrooms, juniper berries, and spruce tips—and yes, it does taste like you’re drinking the forest itself, because you quite literally are.

There are also lovely wine pairings (diners can opt for the standard pairing, or the “fine and rare” pairing. Guests who happen to get a table by the door in the winter shouldn’t fret—there are cozy blankets at your disposal.

Also Michelin-recognized is Mawa’s Kitchen (305 Aspen Airport Business Center Unit F). Mawa herself was born in Cote d’Ivoire and grew up in France, so her cooking has a decidedly Gallic air (the decadent burger comes on a brioche bun with a generous slab of boursin cheese) but it was the slightly griddled banana bread with fruit compote that really got our attention.

The main restaurant at The Little Nell (675 E Durant Ave) is Element 47, an upscale-butapproachable dining room that sits in tranquil seclusion just steps away from the slopes. The menu here is a fine gathering of locallyraised meats and locally foraged produce (the mushrooms may inspire fond memories long after the meal).

There are also high-end niceties to add on, like Golden Kaluga caviar or truffles—both White Alba and Black Perigord can be shaved over any dish, but they’re particularly satisfying over the expertly roasted local chicken breast.

For higher-energy slope-side action, pop next door to the W Aspen (550 S Spring St) and head up to the Wet Deck, the hotel’s rooftop, for front-

row seats to the action on the slopes. Here, guests will find the heated pool, hot tubs, fire pits, and bar. When the weather is inclement, it’s just as fine to dine downstairs at 39 degrees, taking in the full weight of the hotel’s whimsical architecture—the vibe is completely Alpine—it looks like it’s straight out of Verbier.

Across Colorado, there are plenty of ways to please the palate, and it needn’t necessarily be at a Michelin-recognized restaurant to make for a memorable experience. But for visitors, simply knowing that the state’s restaurants are being recognized by the guide for “notable cooking, worth a stop” is testament to the innovative cooking and marvelous natural bounty the Rocky Mountain State has to offer traveling gourmands.

hile many think of Chinese food as being a takeout staple, iconic restaurant brand Mott 32 has been elevating fine dining Chinese cuisine for a decade. The first location opened in Hong Kong in 2014 where It quickly became a must-visit dining destination. In that decade, the brand has blossomed to include eight total locations in the entire world. The Dubai location was even mentioned in the 2024 Michelin guide. There are only two locations in North America. The Vegas location is currently the only location of the storied brand in the United States.

Curious about the name? Here’s the backstory: The restaurant takes its name from Mott Street General Store in New York City that opened its doors in 1891. The store is credited for kickstarting the city’s vibrant Chinatown. It closed down in 2003. And much like the convenience store it’s named after, Mott 32 has a rich, long legacy.

Mott 32’s first U.S. location opened in 2018. Located on the casino floor of The Venetian Resort on The Strip, Mott 32’s design feels lavish. Think a statement chandelier decked out in a feather boa, a table made out of a vintage roulette wheel, a handful of blue neon signs shaped like a paper crane for a dash of Vegas flair and mostly muted, neutral colors in the floor, chairs and tables.

The vast food menu is influenced by Cantonese, Beijing and Szechuan cuisines. According to a statement from the restaurant, “This combination of the contemporary coupled with a respect for tradition makes Mott 32 so spectacularly unique.”

The dim sum and fresh seafood are both notable. Dim sum comes in nine different varieties. Diners can dig into dim sum options like the signature crispy sugar-coated charcoal pork buns, soft quail egg siu mai and hot and sour Iberico pork. The stir-fried Shanghainese noodles are a Vegas exclusive. Diners can order these with their choice of prawns, beef, pork or vegetables. Another popular option? The signature 36-month, acorn-fed barbeque Iberico pluma char siu pork that is tender and savory.

But the real crown jewel on the entire menu filled with them is the 42-day Apple Wood Roasted Peking Duck. This dish must be preordered 48 hours in advance due to the time it takes to prepare. It’s even cooked in a custom industrial duck oven. The duck is served fresh for diners and is cut in such a way as to lock in the juices. This is a dish that was intended for royalty and every part of its preparation suggests so. The duck is served with steamed pancakes, sliced cucumber, scallions, raw sugar and a house-made hoisin sauce. For an extra fee, guests can also enjoy Bjork caviar for a truly decadent celebration.

Be sure to order in advance if you’re looking to try this signature dish. The menu says it’s intended for three to four guests. Due to the size of a dish like this, it’s best to dine here with a large group so you can sample plenty of plates.

Chef Alan Ji leads the kitchen, and the Peking duck is the dish he recommends first-time diners order first. Much like the Mott 32 brand, Ji has an impressive culinary history. He was part of the opening team at the Michelin-starred Hakkasan in Miami. He stayed with the brand for years and opened the New York locale in 2011, the Vegas spot in 2013 and the Beverly Hills location in 2014 where he served as the executive chef. In 2016, he was hired as chef de cuisine at Wing Lei at the Wynn Las Vegas before he took over at Mott 32.

“Chinese cuisine is one of the world’s most marvel-

ous culinary cultures,” says Ji on Mott 32’s Vegas website. “Our goal is to provide a new, modern twist on authentic Chinese cuisine, and we hope to express this through our food to all the customers at Mott 32 Las Vegas.”

The restaurant is also very well known for its vegetarian and vegan Chinese cuisine—considered somewhat of a rarity at fine dining Chinese restaurants. Veggiecentric plates include the mushroom spring rolls, braised tofu served with Morel mushrooms and wok-fried flat rice noodles topped with sliced vegan “beef” and bean sprouts. Craving dumplings? Try the Shanghainese Soup Dumplings that are filled with minced “pork” and tofu. Another stand-out plant-based entrée includes the crispy “chicken” with Szechuan red peppercorns, dried chili and crunchy cashews.

Seafood is another specialty here. The signature smoked black cod is a moist flaky white fish that’s perfectly seasoned. Guests can also order grilled cod served with a sweet miso sauce, Alaskan king crab casserole, whole Dungeness crab served with golden garlic and chili in addition to the restaurant’s signature lobster ma po tofu, which has a nice, spicy kick to it.

Mott 32’s menu lists just three desserts, each with a fresh, Chinese twist. Guests can sink their spoons into rose and Valrhona white chocolate panna cotta served with raspberries and lychee sorbet, four pieces of almond and chocolate Oolong tea Xiao long bao and a refreshing pomelo, grapefruit, honeycomb and coconut ice cream.

The wine menu is 31-pages long while the drinks menu is 24-pages long. Craft cocktails are on the first two pages. Guests can look forward to flavorful, dynamic libations. These include the Jade Apple, a blend of Ketel One Grapefruit and Rose, sour apple honeydew and cherry tomato tanghulu. The It’s Five O’Clock in Hong Kong is a concoction of vodka, rose liqueur, lemon orange sherbet, strawberry jam and orange bitters. The Duke of Suffolk features Hendrick’s gin, hot sweet tea and cold cream float. One of the most unique takes is the Peking Duck Old Fashioned that’s made with duck fat wash brown sugar.

The menu also lists a variety of spirits, wine and sake. Finally, guests who don’t drink can enjoy both house and deluxe Chinese teas that come in flavors like Dragon Ball Jasmin and Chrysanthemum. Diners also can order refreshing mocktails called Mottails. For instance, The Stonecutters is a blend of passion fruit, miso honey, lemon verbena and plum.

To cap off a meal at Mott 32, guests can finish the grand experience with a glass of Brut rose or a few other Champagne choices. We can’t think of a better ending. When you’re raising your glass, consider cheers-ing to one of the finest restaurants in the world that has truly shown diners just how stellar Chinese cuisine can be.

Tour Fatigue

With the fissure of the men’s golf tours, fans’ interest in the professional game seems to be waning

he reason? For the past two years, men’s professional golf has been fractured. It occurred after the introduction of the Saudi-backed LIV Golf Tour, which syphoned away many of the PGA Tour’s and DP World Tour’s top players with obscene amounts of money. The back and forth between the established tours and LIV Golf has been a tiresome song to golfers. And although the quality of play on the PGA Tour, for example, might be as good as ever, perception is that the product is diluted.

Many of the stars who might have moved the needle -- Jon Rahm, Brooks Keopka, Bryson DeChambeau, Dustin Johnson, and even Phil Mickelson -- can now be found in relative obscurity on the CW network.

Fred Ridley, chairman of Augusta National, acknowledged that golf viewership is down while it’s up in some other sports. During the Masters, for example, the NCAA Women’s Final Four outdrew it. (Of course, thanks in large part to Iowa phenom Kaitlin Clark, it also outdrew every World Series game from 2023 and last year’s NBA Finals.)

“You can draw your own conclusions. Certainly the fact that the best players in the world are not convening very often is not helpful,” Ridley said. “Whether it’s a direct cause and effect, I don’t know. But I think it would be a lot better if they were together more often.”

Also, while core golf fans certainly tuned in, Scheffler, as classy a champion as you will find, is somewhat vanilla, and hasn’t captured the public’s imagination yet.

But most of all, golfers and golf fans have grown tired of barbs being thrown back and forth between tours. They don’t think PGA Tour Commissioner Jay Monahan has done a good job navigating these choppy waters, which includes a particularly pesky Shark -- AKA, Greg Norman who heads up the LIV Tour.

The plan, it seemed, was to find a way to unite the tours. But an investigation by the U.S. Department of Justice into the possible alliance with the Saudia Arabia Public Investment Fund (which backs LIV) could take a year and half or more to conclude, meaning these players will compete on rival tours well into 2025 and beyond. How much damage is being been done?

Many of my golf friends said they didn’t even watch the Masters. One former sportswriter and avid golfer said the LIV Tour has ruined golf.

“I’m just not interested anymore, especially lately,” said Richard Croome, who now lives in Hot Springs Village, Ark. “This is starting to remind me of what happened in boxing with all these different associations. You can’t keep up with it. And I really don’t want to.”

Most players will tell you that the way it is now isn’t sustainable. Rory McIlroy, who rejoined the PGA Tour’s Policy Board earlier this year, was one of the most vocal critics on the LIV Tour. But now he says for the good of the game, they need to find common ground. Before the Valero Texas Open, McIlroy voiced concern about PGA Tour ratings, which are down at least 20 percent from the previous years. And because of the pressure of the LIV Tour, prize money on the PGA Tour has increased significantly. That’s put a big strain on sponsors, some of which are beginning to bow out.

“I just think with the fighting and everything that’s went on over the past couple years, people are just getting really fatigued of it and it’s turning people off men’s professional golf, and that’s not a good thing for anyone,” McIlroy said.

One of the most polarizing figures in all of this has been Phil Mickelson. (A couple of recent books -- Alan Shipnuck’s “Phil - The Rip-Roaring Biography of Golf’s Most Colorful Superstar, and Billy Walters’ “Gambler: Secrets from a Life at Risk” -- reveal much.) He helped launch the LIV Tour with Norman, and he concedes that professional golf is going through a tough time, but claims that when the dust settles -- aka, the LIV Tour and other tours figure out how to work it out -- professional golf will be better than ever.

“I think it’s going to be in a much better place where we bring the best players from the world, and it’s going to open up more opportunities for manufacturing, course design, for players in different parts of the world to be inspired and enter the game. I think it’s going to be in a much better place,” Mickelson was quotes as saying in an article on ESPN.com earlier this year. “But right now, we are in the disruption phase, so we are in the middle of the process. And when it’s all said and done, it’s going to be a lot brighter. But while we go through it, it’s challenging. But we’ll get there.”

Rahm, in the same article, said he agrees with Mickelson.

“Every time I get asked a question like this, I say the same thing: I think there’s room for both. It’s as simple as that,” Rahm said. “I think we have the opportunity to end up with an even better product for the spectators and the fans of the game.

A little bit more variety doesn’t really hurt anybody. So I think, properly done, we can end up with a much better product that can take golf to the next level worldwide, and I’m hoping that’s what ends up happening.”

Again, though, golf fans aren’t seeing that. While some don’t blame tour players from the taking the hundreds of millions of dollars to play the other tour, many believe those players sold out, that they are just in it for the money.

The LIV Tour currently plays 54-hole events, the players can wear shorts, there are team aspects, and music is played during competition, which commences with shotgun starts. For many golf fans, it’s a little much. When and if these tours finally come together, it’ll be interesting to see how all of this reconciled.

Most recreational golfers, however, don’t care. They just want to play more golf.

Walking away with a par instead of a bogey or double, or as I would say, “it’s a one-day event,” so take out the big guns and pray that you hit the fairway. Overall success at Rio Secco hinges on course management and strategy, rewarding those who can navigate its intricacies with skillful shot placement.

Another notable aspect of Rio Secco is its tiered and undulated greens. These greens are demanding and require a skillful golfer who knows how to read and navigate them.

To conquer the greens at Rio Secco, I suggest looking from both sides of the hole and the surrounding areas to determine the

slope. The 18th green is one of those greens where you can certainly walk away with a three or four putt if you don’t give it the respect it deserves. If the pin is located centerright and your ball is below or above the hole, it breaks another 2-3 feet more than you expect; the right side of the green on 18 can really fool you. Although I walked away with a par, I had a 7ft putt to save par. If you can keep the ball in play and avoid three and four putts, you are bound to have a great round on one of the most challenging golf courses I’ve ever played.

It wasn’t the golf I was thinking about on my way to Big Sky Country last fall. It was more about scenes from the TV show, “Yellowstone.” Not the ones where Cole takes some unfortunate soul out to the “train station,” but more about the grandeur of riding the range with those magnificent Montana mountains in the background.

So naturally, while golf would play a prominent role in this excursion to Mountain Sky Guest Ranch just north of Yellowstone National Park in Montana, my thoughts ventured toward one of the nongolf activities on the itinerary -- horseback riding. I haven’t been on a horse in two decades. How would I do?

Would I get saddlesore? But most of all, what was it going to be like riding along the trails on this largely unspoiled wilderness? I would have to wait until the last day of this three-day trip to find out. It would turn out to be the perfect send-off from an experience I’ve certainly never had before on a golf trip. And yes, playing at the ranch’s Rising Sun Golf Course was remarkable, too.

The Mountain Sky Guest Ranch feeling

While the golf is enough with all the vistas, solitude, and outstanding holes and practice facility, I can’t see going up Mountain Sky Guest Ranch just to play golf. Although I highly recommend playing as much golf as you can when you’re there (the majority of the guests are not golfers). You’d be cheating yourself if you didn’t take in at least one or two of the other ranch experiences, too.

Mountain Sky Guest Ranch is a premium experience. Located on 10,767 acres around the Yellowstone River in Paradise Valley, the ranch is owned by Arthur Blank, the billionaire who co-founded Home Depot, and also owns the NFL’s Atlanta Falcons, and Atlanta’s United FC of Major League Soccer. Blank also owns PGA Tour Superstore and loves golf, so he commissioned Johnny Miller to design a course for him. The result is arguably one of the most intriguing and scenic layouts in Montana.

Again, golf is just part of the equation there. There’s fly-fishing with expert guides, clay shooting, the aforementioned horseback riding, a spa, fitness center, and even excursions to nearby Yellowstone Park.

There’s not a TV on the property, and you can only get internet (cell signals are pretty much nonexistent) at the Main Lodge. So it’s amusing right before breakfast to see everybody catching up on their email, texts, and feeds there as they get ready for a hearty meal that will help them get through a day of adventure.

Dining varies between gourmet plates, buffets and meal rides. The guests all eat together, sort of like a working ranch. The meals are on a schedule, but unlike most working ranches, this is high end. Even the simple stuff like eggs, muffins, and bread are incredibly tasty and fresh. Despite an intentionally limited menu, the meal choices are diverse and even include vegetarian and pescatarian options. Although the steaks, as you might imagine, were among the best I’ve ever had. Breakfasts

and lunches are both buffet style, while dinner is pre-ordered and is usually a three- to fourcourse dining experience that includes dessert. The bonus in this experience is you get to know the other guests, many of which have been there before. And as you take it all in, you can understand why they return.

Let’s talk about Rising Sun Golf Course

Again, though, if you’re a golfer, you have to play this course. The first nine holes opened in 2012, but Blank was so enamored with it, he added nine more. It’s only open to resort guests, so you can basically play as much as you want, whenever you want. I definitely felt like we had the course to ourselves during the rounds I played there.

Rising Sun meanders through the rolling hills and grassland of Paradise Valley. Views of the Absaroka and Gallatin mountain ranges surround you. The par-72 course has five sets of tees, ranging from 5,017 yards to 7,130 yards. Every hole is different, and a few of them are pretty difficult, but super interesting. You’ll want to be in the bluegrass fairways off the tee, and they are generous enough to find if you’re in control of your game. The course has lots of bunkers, both in the fairways and around the built-up greens complexes. And there are a few water features, too, like streams crossing the fairway or ponds (like on the 18th), in front of the green.

The No. 1 handicap hole is the 563-yard par-5 dogleg left second, which will require three well-placed shots if you play it conventionally to a green tucked in behind three bunkers. The par 3s are all varied, ranging from 165 yards to 211 yards from the back tees. The course ends with a nice variety of holes — a short par-4 and birdie opportunity on 16, the 207-yard par 3 17th, and the 588-yard par-5 18th, which finishes with a green well-protected by a large pond.

In addition to the course, however, the practice facilities are also top notch. They include a really fun par-3 course located right next to the intimate, but well-stocked clubhouse.

Getting to and around Mountain Sky Guest Ranch

Probably the best way to get to Mountain Sky Guest Ranch is to fly in Bozeman. From there, you can rent a car or use the ranch’s shuttle service. The ride out to the

ranch takes about an hour and a half or so. Once you get there to check in, it’s off to a cabin, which is best described as rustic luxury. Unlike a bunkhouse, the beds are super comfortable, and it’s well-furnished with decks so you can soak in the beauty of the landscape and listen to the sounds of wildlife.

Of course, as referenced earlier, this is a premium destination. Most guests stay a minimum of a week. Packages start around $3,000 and go up to $15,000 depending on the size of the accommodations. Of course, the activities are included.

I got to enjoy a superb, serene massage in the spa. I embarrassed myself one night after dinner at the weekly dance night in the main lodge. Let’s just say my two-stepping skills could use a little work, but I got lots of help from the staff and even other guests, who didn’t shun me even after I stepped on a few toes.

But, again, the icing on the cake was hitting the trails on horseback. Led by an expert wrangler (they saddle your horse for you and even provide a boost to make it easier to mount), we took off for about two hours the morning of our departure day. This was more than your typical trail ride. After a briefing and some instruction, you take the reins and you’re off, through brooks, around bends, along mountainsides, all while taking in views that can pretty much only be seen off the paved road. It’s a natural adventure most will never realize.

And when it was over, I wasn’t sore or even tired. Just simply inspired.

Here’s my proposition: You’ve got four days to play golf on a trip that basically revolves around Scottsdale, Ariz. Cost isn’t a consideration, but the golf courses have to be open to the public. Where would you play? Where would you stay?

hat was pretty much my assignment for a recent trip to the Valley of the Sun. First off, there are obviously lots of good choices when it comes to golf in Scottsdale and the neighboring communities and cities. It’s not hard to find some good ones. But we wanted the great ones. So, I put together a dream itinerary.

The best part about this is that anyone can do it since all these courses are open to the public. And while it can be pricey, here’s a tip: If you don’t mind the heat so much, do it in the summer or fall before overseeding. You can find some incredible deals on these courses -- which can run a couple hundred dollars or more in peak season -- if you play them during the hotter months. Just play early, drink plenty of fluids and save the afternoons for the pool, and the evenings for one of the great eateries I’m about to mention.

With that said, here’s the itinerary:

Day 1: Fly into PHX, play TPC

The Phoenix Airport is one of the busiest in the country and offers direct flights to lots of locations. So, it’s easy to get to. If you take an early flight from the eastern part of the country, you can get there in plenty of time to make a late-morning tee time. With the price of rental cars these days, you might want to consider just taking rideshare services everywhere. It’s less hassle, generally costs less, and will get to the course quicker, which was my first goal.

My first golf course was the TPC Scottsdale Stadium Course, which is a great way to kick off a golf excursion. Home of the WM Phoenix Open -- the craziest event on the PGA Tour schedule -- this is a fun golf course with a dazzling finishing stretch. Unless you play here right before the tour event or right afterwards, you won’t get the same feel for the stadium par-3 16th when the stands are up, but you can still go for the par-5, 15th island green in two, try to drive the 17th green (if you play the proper tees) and see if you can close it out on the challenging par-4 18th, which brings a large lake into play on the tee shot. Bottom line: It’s always fun to play a tour course because you know the holes, and you expect great conditioning. The other course at the TPC Scottsdale, the Champions Course, is fun, too, and priced a lot less.

After golf, it was off to the DraftKings Sportsbook at TPC Scottsdale. With lots of choices in drinks and local beers on tap, it’s hard to go wrong. The food is pretty good, too, and yep, you can bet on sports

here. No need to go to Vegas or even do it over the Internet. It’s a fun setup with dozens of huge screens to watch just about any game. I highly recommend the Margherita pizza.

After winding down for a long day, it was time to settle down in a luxurious room at the Fairmont Scottsdale Princess, which is right next to the Stadium Course. The 65-acre AAA Five Diamond resort has pretty much anything you want -- a great spa, terrific dining, more than 300,000 square feet of meeting space, and excellent customer service. In all, there are 750 rooms, 102 of which were added in a 2016 renovation. It’s a great base for any Scottsdale golf vacation.

Day 2: We-Ko-Pa, and a great new dining venue

After a quick breakfast at the Ironwood American Kitchen at the Fairmont, it’s off to one of my very favorites in the Southwest -- WeKo-Pa Golf Club, which is in nearby Fort McDowell. There are two courses there, and they are both incredible. The Saguaro Course is a beautiful and strategic Bill Coore/Ben Crenshaw layout that will keep you engaged the whole time you’re out there.

We played the Cholla Course, no doubt one of local architect Scott Miller’s finest designs. I can’t say that it’s my favorite of the two, nor can I say Saguaro is, though the latter is generally ranked higher (both are in the top 10 of Arizona public golf). While they are both classic desert golf, they are very different and fun in their own right. Both have those sensational views of the surrounding mountains, desert plants and wildlife, and the contrast of bright green turf against the desert sand and flora. Cholla probably looks more intimidating than it really is, with a few forced carries and quite a few doglegs. But it’s

very playable if you choose the right tees. There are birdie opportunities out there as well as pitfalls to drive up your score.

After a fun round on Cholla, a quick lunch at We-Ko-Pa’s wonderful clubhouse restaurant -- which also takes advantage of the views -- included some Sonoran Nachos and a local hazy IPA. Then it was back to the Fairmont Scottsdale Princess to get ready for dinner.

This time, I got to try The Americano, a newer restaurant near the Fairmont. Headed by chef Scott Conant, it’s an Italian inspired steakhouse that will impress you not only with its menu but its really cool vibe as well. Unique pasta dishes and appetizers, including both west and east coast oysters, can be combined with the finest American Wagyu beef. We tried the 10-ounce filet, which was as tender and flavorful as anything I’ve had in a decade or more. There are also more than 200 varieties of wine. I went in with high expectations and wasn’t disappointed. It’s a great dining experience.

Also cool, a new speakeasy called “Tell Your Friends,” Which features imaginative cocktails and live music, just opened up underneath The Americano.

Day 3: Off to Troon North, premium Mexican food

After another quick breakfast, I caught an Uber ride over to Troon North, where arguably you’ll find the area’s best 36 holes open to the public, which is saying a lot considering how good We-Ko-Pa is. I’m always torn between which course I like better at Troon North -- Monument, which opened in 1990, or Pinnacle, which debuted six years later. Both were designed by Jay Morrish and Tom Weiskopf (same as TPC Scottsdale Stadium). On this day, I squeezed in both.

A few years ago, the layouts were rerouted to make them work better logistically. The Monument front was unchanged, but the back nine now is what used to be holes 2 through 10 of the Pinnacle Course. That leaves almost all the original back nine holes of both courses on the Pinnacle Course, and some make the argument that Pinnacle got the best holes. That might be true, but there aren’t any bad holes on either one of the courses, and the

Monument -- with its namesake rock formations -- might be the slightly easier and more playable of the two. With the outstanding conditioning and contrast between the green grass and brown desert, both courses have a great “wow” factor.

“We’re very fortunate because of the land,” said PGA director of sales for Troon North, Mike Friend. “You’ve got all these rock outcroppings, boulders, and elevation changes. There are forced carries in certain spots, dogleg lefts and dogleg rights. Every hole really does have a different look.”

I played Monument first, and I admit I might have run out of gas a bit on Pinnacle. All of it worked up a pretty good appetite, so it was back to the Fairmont for a special dinner at La Hacienda, which might be the best Mexican food restaurant I’ve ever experienced at a resort. It started with a special Passion Fruit Margarita and incredible fresh guacamole. My group sampled several entrees, including ribeye and lobster tacos, pescado zarandeado (sea bass), and the best mole cheese enchiladas I’ve ever had.

With a mid-afternoon flight out, there was one time for one more round, which should ideally be near the airport. Fortunately, there’s a good golf course just a couple miles away from PHX, Papago Golf Course, a municipal that was renovated a few years ago (Phil Mickelson had a part in this) and now serves as the home course for the Arizona State University golf teams (their practice facilities are incredible).

I really like what they did with the golf course, building up the greens complexes and enhancing the bunkering of this William Francis Bell design that first opened in 1963. As it was, the incredible Papago Buttes the course is known for has always been a draw. Plus, the course, which like the TPC Scottsdale isn’t a desert course, is a terrific challenge with a great variety of holes, especially at 7,300 yards where the slope/rating is 130/75.0.

But as much as I like the course, I love the vibe of the whole place. The addition of the Lou Grubb Clubhouse can be nearly completely opened up to its outdoor surroundings. Lou’s Bar & Grill, with its tempting menu and wide selection of craft beer and drinks, is a great place to hang out even if you’re not playing golf. In fact, it’s a great spot for practice, and there’s live entertainment on certain evenings. Of course, when it’s getaway day, you only have time for one or two beverages to cap off a great four days. Then it’s back to reality.

The State of Golf Instruction

I spend a good portion of my time studying the golf instruction industry and have come to some alarming conclusions on how many avid golfers are taking golf lessons. Less than 10% of golfers who play 12X a year seek instruction individually or in a group setting. Golf schools are dwindling at a record pace, why? Is it too expensive? Is it too difficult? Did you have a poor experience? Would prefer to buy a better game? Or does improvement really matter?

Here are some interesting facts about the statistics. Of the 10% of those who are taking lessons, half of them are serious/ competitive players or participating in tournaments. That means regardless, of age or gender, these golfers understand that golf is a multi-faceted sport requiring instruction to skill sets in mental game, nutrition, course management, swing, short game, trouble shots and blending all the above from experts. This requires dedication, passion, financial commitment and support from many.

So this leaves us with the other 5% that are beginners or

might want to just play with their spouse or friends without embarrassing themselves, or maybe just the challenge to go from a 25 to a 19 handicap. How about just having more fun!! What’s disturbing is that half of these give up instruction far too soon and never fall in love with the game, therefore falling back int o the other 90%.

The reality is that since the pandemic, golf is growing. There are more people playing but are there more people learning? We know from the people watching, viewership is way down, including this years Masters. How can great historians and thousands of golf professionals come together for the common good? Can we make the game less complicated, less expensive, and less time consuming in this millennial age of change? Yes, we can!
