Everyone knows the number one rule for great barbecue is cooking it “low and slow.” That’s exactly the care these cuts of meat get in fast-paced Las Vegas. “What makes barbecue so special is the time and the care that’s put into the product, and how it’s prepared,” explains Joseph Hamel, executive chef for Caesars Entertainment. At TOBY KEITH’S I LOVE THIS BAR & GRILL at Harrah’s Las Vegas, barbecue fans dig into southern-style dishes like hickory-smoked St. Louis ribs smothered in a sweet and tangy sauce, BBQ rotisserie chicken, fried catfish and a Toby Keith favorite—the fried bologna sandwich. The restaurant also serves up live music nightly, beginning at 9 p.m., and the walls of the large dining area are dotted with the country star’s memorabilia. Another go-to source for southern-style BBQ is VIRGIL’S REAL BARBECUE on The LINQ Promenade. Time and patience are the key to cooking at Virgil’s. The restaurant’s two most popular dishes, the smoked, rub-crusted beef
brisket and Memphis-style pork ribs are both marinated in seasoning for 24 hours and slowsmoked over cherry and hickory wood for several hours. “The secret to great barbecue—first is passion and appreciation for making great barbecue,” says Glenn Rolnick, Virgil’s director of culinary operations. “We smoke low and slow to keep in the moisture and make the meat tender.” And if you’re lounging at Influence, The Pool at The LINQ Hotel + Experience and craving a bite, the entire Virgil’s menu is available poolside.
