Working towards an improved food and nutrition information system in the country

The Food and Nutrition Research Institute of the Department of Science and Technology (FNRIDOST) recognizes the importance of the FNRI Library as the source of Philippine food and nutrition information and data. These data serve the needs of the FNRI staff, policy makers, nutrition and health workers, food manufacturers and entrepreneurs, pharmaceutical researchers, media practitioners, teachers, students and the general public. This library is a convergence of nutrition knowledge where people get the right knowledge at the right time. This knowledge is also accessible in the internet.

As the depository of food and nutrition data in the Philippines, the FNRI library endeavors to be the center of knowledge management of information generated through the researches of FNRI and other institutions conducting food and nutrition research in the country.

It aims to modestly contribute to the Philippine commitment to the Millennium Development Goals in the areas of economic growth, education, and youth opportunity. This is being done through the upgrading of its collection of books, journals, and other research materials, and computer facilities. The objective is to fully utilize the knowledge generated by the Institute to improve research and development (R&D) and create innovative food and nutrition (F&N) technologies. The goal is to lessen, if not eradicate malnutrition problems in the country and at the same time develop technologies that can compete in the global market.

The FNRI library is also the focal point and secretariat of the Nutrition Research Information Network (NUTRINET). The NUTRINET is a network of libraries and information centers linked to establish a

specialized information system in food and nutrition and related fields. Today, the network has 14 members at the national level and 9 at the regional level in Cebu.

The FNRI Library maintains an on-line public access catalogue (OPAC). The OPAC contains a computerized database of F&N research and development materials. These databases include bibliographic description of books and theses done by undergraduate and graduate students in F&N and related fields, published and unpublished materials on Filipino food habits, index to journal articles, and union list of periodical collection. It also has ephemeral files on F&N and related topics in the forms of brochures, pamphlets, leaflets, posters, newspaper clippings, and information, education and communication (IEC) materials. Likewise, abstracts of terminal reports for researches done at the FNRI can be accessed through computer terminals that are accessible for in-house and outside users.

It also contributes to the Philippine e-lib project spearheaded by the DOST. The Institute’s R&D materials and publications are being digitized and can be accessed in full-text as soon as quality assurance and uploading to the Philippine e-lib is completed.

The FNRI Library maintains a memorabilia. It exhibits the historical events of F&N activities in the country and accomplishments of the men and women who have passionately devoted their professional careers in establishing the groundwork and building the foundation of food and nutrition research in the Philippines.

Her journey toward being an academician at UPLB began when she attended pre-school at the Child Development Laboratory, CHE. She spent her childhood years at Maquiling School, made her way to UP Rural High School, and eventually finished her undergraduate studies at the UPLB as a human ecologist majoring in human settlement and planning.

The dean’s high regard for academic excellence did not stop there. She went abroad and pursued higher education. She took her Master’s degree at Michigan State University (MSU), where she studied human ecology major in human environmental design. And to top these all, the dean managed to obtained her doctorate degree as a family and child ecology major, also at the MSU. After all the academic accomplishments and lessons learned, she decided to go back to the Philippines for the unselfish reason of wanting to share her knowledge. She became Assistant Professor in the Department of Human and Family Development Studies, CHE. Aside from this, the dean believed that her “true calling� is in the academe.

Having assumed office only on June 1, 2005, the dean’s primary concern involves internal matters in the CHE, student problems, issues in the college and appropriate action points. Likewise she is working on her vision for the college: “Revitalized Human Ecology� which focuses on human ecology as a discipline and a college as well.

the National Nutrition Council (NNC). Likewise, four colleges of the University of the Philippines (UP) are members of the Network. These include the College of Home Economics (CHE) in UP Diliman, College of Medicine (CM) in UP Manila, Institute of Human Nutrition and Food, College of Human Ecology (IHNF-CHE) in UP Los BaĂąos, and College of Public Health (CPH) in UP Manila.

Digitization is a global trend among libraries and information centers now. The two biggest well-known projects are Google Print in the United States (US) and eContent in Europe. Google is digitizing millions of books from several major university libraries in the US and one in the United Kingdom (UK). eContent is converting into digital media not only books but also music and films. It is disheartening to know that millions of hours of sounds and video that were stored in traditional media such as music and VHS cassette tapes had been lost forever.

Europe is now preserving its rich cultural heritage and scientific researches through digitization. Similar digitization efforts are going on in Asia as well, including the Philippine eLib project, initiated by the Department of Science and Technology (DOST) in 2004. This is now in its second phase and this phase will continue till the end of 2007. The project is spearheaded by the National Library of the Philippines (NLP) with four other government institutions as cooperators, namely the Department of Science and Technology (DOST), Department of Agriculture (DA), the University of the Philippines Diliman (UPD), and Commission on Higher Education (CHED). Under digitization, P 2 million is allotted for each of the cooperating institutions.

These members have already digitized their in-house publications and are now in the process of doing quality assurance before uploading in the e-Lib portal. NUTRINET members who are not part of the e-Lib Project may digitize their publications through the NUTRINET Secretariat upon request.

From the Philippine eLib, farmers will have access to the latest technologies in agriculture, as DA is another major content builder for the Philippine elib. CHED will make available theses and dissertations, and of course, there will be state-of-the-art researches from UP. At present, the NLP is a subscriber of EBSCO databases which offer millions of books, journals, and articles in almost all fields of study.

Indeed, digitization is an enrichment source for research in any field for everyone. Now, more than ever, knowledge is the creator of new wealth and we are fortunate that the digitization trend all over the world is leveraging the wealth-creating mechanism for every Filipino.

With funding from the e-government Program of the Arroyo administration, the Philippine eLib project is also digitizing significant cultural and scientific publications for preservation and easy access by Filipinos from all walks of life: farmers, educators, students, scientists, inventors, entrepreneurs, among others.

The seed of the Philippine eLib Project was planted and nurtured at the Department of Science and Technology through SciNet-Phil formed by the Science and Technology Information Institute (STII) as a member of NUTRINET. This became the major content builder of the eLib. Presently, there are nine NUTRINET member-institutions which are part of the e-lib project namely, Food and Nutrition research Institute (FNRI), STII, Industrial Technology Development Institute (ITDI), Agricultural Training Institute-Department of Agriculture (ATI-DA), and

12.50 per 355 ml bottle. Products are sold in schools and during exhibits, events, and parties and their only means of promotion is personal advertisement word of mouth. With improved packaging and labelling, the Cooperative expects an expanded market.

The Industrial Technology Development Institute of the Department of Science and Technology (ITDIDOST) has once again rendered technical assistance that eventually led to the creation of an enterprise in a remote town of the province of Isabela. The DOST Provincial S & T Officer (PSTO) of said province initially tapped the suppliers of calamansi for the producer of Wagas soap and later introduced the idea of other products like calamansi juice for which the Institute has an enterprise module.

Starting September 2005, the Cooperative, under the Chairmanship of Mr. Pepe Bayodoc, now its Operations Manager, produced 600 one-liter bottles and 900 half-liter bottles. This is based in 3 batches per production schedule. They produce only during the calamansi peak season when cost is as low as Php 75 to 150 per 30 kilogram bag.

The Isabela Citrus Growers' Development Cooperative (ICGDC) of Aurora, Isabela signified interest and thus availed of the sweetened calamansi juice concentrate enterprise module in August 2005.

Said availment consisted of expert advice, engineering services in plant layout, R&D/formulation, good manufacturing practice, as well as manpower training.

The assistance did not end there. Follow-through came in the form of constant communication among the Operations Manager, the PSTO of Isabela and the Food Processing Division Experts led by Ms. Michelle Evaristo of ITDI.

Calamansi costs as much as Php 1,000 plus per 30 kilogram bag during off season. To optimize use of the plant facilities, the Cooperative plans to acquire a chest-type freezer which will likewise enable them to diversify into other product lines such as mango, guyabano, papaya, pineapple juices/puree. To be able to do this, they need funds for which they have made representations with the local government. They also feel the need to upgrade by acquiring other equipment like pulper-finisher, bond sealer, among others.

The ICGDC-produced calamansi juice concentrate turned out to be acceptable and saleable. However, customers preference for ready-to-drink (RTD) type of juice led the cooperative to shift or to adapt to the market situation and thus took a bold step to develop a formulation for this type of drink. They still produce the concentrate (1 liter & 500 ml PET bottles) but have come up with the 500 & 355 ml PET bottles of the RTD juice. In the light of going global, the cooperative designed various label concepts, which they endorsed to the Packaging R&D Center (PRDC) for consultation and further improvement with the brand name Isabela.

Given full cooperation and granted the much needed funds for upgrading, the Cooperative will surely go a long way and will gain further success in the business.

The Institute looks forward to more partnerships of the sort and will continue to nurture clients with the intent and strive to succeed in business.

Take time to enjoy every bite of your meal. Eat small portions of fat and carbohydrate-rich meals.

By eating slowly and consuming moderate amounts of fat, the body has a chance to become full and satisfied on smaller portions. Enjoyment and satisfaction have more to do with the amount of time you spend on the meal than the raw amount of food you eat.

Meals should be savored, enjoyed and appreciated. Eating too quickly makes you fat for two reasons: 1) the “full signal� is delayed, and 2) your appetite keeps adopting to the larger amounts you eat.

Put less food on your plate. Take smaller bites.

Put the spoon and fork down in between each bite.

Chew slowly and savor each bite. Love your food. Do this and you will eat smaller portions and feel satisfied.

Eat meat last. Choose fish first, then chicken, lean pork and red meat last.

Enjoy fresh vegetables and fruits as well as nuts and legumes. When you eat vegetables and fruits, you will be less likely to overeat because these are considered complex carbohydrates which are absorbed more slowly by the body.

Are you dreaming of spreading a delicious thick layer of this on a slice of bread and then you find stopping yourself? You feel a bit guilty that it is too fatty and too rich.

You do not need to feel guilty any more. The Food and Nutrition Research Institute, Department of Science and Technology (FNRI- DOST) has developed Soy-Peanut Spread, a healthy and nutritious product to respond to that craving. Its special ingredient is soybean.

Soybeans are full of phytochemicals called isoflavones that act as antioxidants to help protect cells from damage. These help prevent cancer and cardiovascular diseases. The protein found in soybeans is good for building up the body. The soy protein, when eaten, is known to have a lowering effect on cholesterol, especially on the low-density lipoproteins (LDL) and triglycerides.

Avoid trying to count every carbohydrate and every calorie in losing weight. Moderation is the key in any weight reduction plan or program. The Nutritional Guidelines for Filipinos developed by the Technical Working Group led by the Food and Nutrition Research Institute of the Department of Science and Technology (FNRI-DOST) recommends that eating the right kind and amount of food, together with regular exercise, is still the best way to reach optimum nutrition and having a healthy lifestyle.

Tired of thinking of what else you can do with your vegetables? Why not try to make a vegetable juice?

Vegetables contain substantial carbohydrates which supply most of the energy used to perform work. They have vitamins that control the chemical reactions within the body to convert food into energy and living tissues.

The process of making vegetable juice includes the separation of the vital nutrients and enzymes from the fiber, or pulp. Ideally, it would be best to drink the juice with the pulp since it is high in fiber. Fiber provides important health benefits, from preventing gastrointestinal disorders to promoting normal bowel function. It also promotes satiety, help control serum cholesterol and reduce risk of heart disease.

Also, vegetables contain minerals, which are necessary for the functioning of nerves and muscles and are the building material for some body tissues.

Lastly, vegetables have antioxidants such as betacarotene, vitamin C, vitamin E and selenium that prevent our body from cancer and other diseases.

For people who cannot tolerate the fibrous material of the vegetable juice, there is still a need to eat vegetables, legumes and whole grains in combination with fresh juices. This will ensure that we get the maximum amount of nutritional value from what we eat.

Based on the 2000 Nutritional Guidelines for Filipinos, recommended consumption of vegetables daily is at least two to three servings. A serving of vegetable is equivalent to ½ cup or 40 grams for nonleafy and 1 cup or 25 grams for leafy.

Preparing vegetable juice is as easy as ABC. Make sure the vegetable is fresh and free from spots and bruises. Vegetables should be washed properly before peeling or cutting into workable strips. Preparing juice also depends on the type of juicer used. Juicers usually come with easy-to-follow instructions.

The 2003 National Nutrition Survey conducted by the Food and Nutrition Research Institute, Department of Science and Technology (FNRI-DOST) reported that Filipinos consumed only 110 grams/day of vegetables which was mostly attributed to the intake of non-leafy vegetables like papaya, upo, okra and talong.

Vegetable juice can be stored in the refrigerator for about a day without losing much of its important nutrients. However, it is advisable to drink juice right after preparation. Juice can be prepared by using a single vegetable or combining two or more types. For example, parsley, celery stalks and carrots can make a refreshing drink. Cucumber and malungay leaves can be an exciting alternative to ordinary juices, On the other hand, beet, carrots and parsnip can offer a colorful and healthy thirst quencher.

This amount minimally increased from the 1993 vegetable intake of 106 grams. Its contribution to the total vegetable intake remains almost the same at 12.5% with a difference of only 0.7% points. To make vegetables more attractive and palatable, innovate.

This will help improve the consumption of vegetables.

Why not try to make a vegetable juice!

Our body can absorb nutrients from liquids easier than those from solid foods. A study conducted by the American Association for Cancer Institute suggested that purĂŠe or juice from vegetables results to smaller particle sizes and disrupted plant cells.

Don’t be afraid to explore the tastes of different vegetable-mix juices. Just take note of some vegetables that have strong flavors and let your taste buds be your guide.

brown creamy spread made from soybeans and peanuts. Eating a one-tablespoon serving or 15 grams of this nutritious spread provides 81 kilocalories - a good energy boost during breaktime. It also has 6 gram of carbohydrates, 4 grams of protein and 5 grams of fat. The nutritional composition of this product is stable even after nine months of storage.
