Chef Les Eckert has an MBA with an emphasis in Hospitality Studies, is a Certified Executive Pastry Chef, Certified Culinary Educator and a member of the American Academy of Chefs. Eckert has over 25 years of foodservice experience, 13 years in higher ed, and over five years in higher education management. New to NMC in June 2019, Eckert now calls Traverse City home.

NMC: How did you discover your passion for Culinary?

I discovered my passion through my mom in her kitchen and watching Julia Child on TV. NMC: If you could only share one tip with newbies, what would it be? Invest in at least one good knife and keep it sharp.

Digital Audio Workshop Join Peter Payette, Executive Director of Interlochen Public Radio (IPR), for this full-day digital audio workshop where you will learn to craft a compelling audio interview. Learn essentials including interviewing, recording equipment, editing and more.

Great interviews can be captured and produced with as little as a smart phone and a free app, and details will be provided one week prior to the course to help you prepare. Also, part of the class involves conducting an offsite interview that you have arranged in advance. You will need your own transportation for the offsite portion of the day. The workshop is open to all, and is the first step in becoming part of Red Pine Radio, a group of community members who are learning to craft their own radio stories. Class will break for two hours to conduct your offsite interview and have lunch on your own.

Fundamentals of Fundraising

Fund Development Cohort Offered Annually NMC and NorthSky are proud to offer a Fund Development cohort for experienced fund development professionals each year in January.

The 2020 cohort is already full, but you may look for the 2021 cohort to begin taking applications next fall.

Working together over 6 weeks, this cohort will review, discuss and apply fundraising fundamentals to the issues and situations you and your organization are currently facing. Content is customized based on topics most useful to the participants, but includes: prospecting; long term relationship building; solicitations; board engagement; stewardship; communication flow; time management and writing compelling case statements. Rotary Charities cares deeply about the continued development of nonprofit organizations in our region and has underwritten a significant portion of this course, reducing the cost from $599 to $349.

We are excited to host Fundamentals of Fundraising, an Association of Fundraising Professionals (AFP) course.

The seven modules are designed by experienced fundraising professionals to meet the real-world needs and challenges nonprofit organizations face every day. This 2-day immersive includes case studies and projects for groups and individuals, making the learning experience substantive and enjoyable. It provides an overview of skills, techniques and program components for individuals with 0 to 4 years of fundraising experience.

The modules include: an Overview of Fundraising; Developing an Integrated Fundraising Program; Marketing for Ongoing Success; Building and Sustaining Relationships; Securing the Gift; Volunteers—Partners in Fundraising; and Management and Accountability. Full participation in the course entitles you to 16.0 points of CFRE Credit in Category 1.B – Education of the CFRE International application for initial certification and/or recertification. FAA Remote Pilot (Drone) Test Preparation

FAA Remote Pilot (Drone) Test Preparation – 2-Day Classroom Version

Could the use of drones assist you in your business endeavors? This selfpaced online course prepares you to take the FAA Part 107 Remote Pilot written exam, which upon successful completion will certify you as a Commercial Drone Operator. This license is required by the FAA for conducting drone operations such as aerial photography, industrial inspections, emergency response, agriculture monitoring and more. Work at your own pace (approx. 25 hours online); but complete by April 12, 2020.

Your instructor is available via email, phone or office visit. Fee does not include cost of the FAA test (around $150). Register by Jan. 27; course will begin shortly after that date. For more information call (231) 995-2925.

Get paid to fly a drone! This 2-day in-person classroom training will prepare you to take the FAA Part 107 Remote Pilot certification written test.

This certification is required by the FAA to legally conduct commercial operations utilizing a Drone. Learn about drone regulations, weather, aeronautical charts, airspace, emergency procedures and more. After completion of the course, you will be ready to take the FAA written test to become certified. The test is typically around $150 and can be taken at any FAA testing center. The NMC testing center is at the Aero Park Campus.

Drone Photography and Videography The creativity and new perspective of a “bird’s eye view” is everywhere in contemporary photography and videography. Experience and learn about aerial photography and videography utilizing drones. Work with NMC Instructor, Coreene Kreiser, to understand digital camera operations, basic photography and videography principles, and practice using editing software (Photoshop and Premiere).

Aviation staff will walk you through specific photography and videography flight techniques. NMC Drones will be used but feel free to bring your own drone if you have one.

Bring a flash drive if you would like to keep your photos. Some prior drone piloting experience is required.

Wilderness First Aid Wilderness First Aid (WFA) provides introductory medical skills to individuals working or playing in remote environments, whose primary responsibility is not emergency response.

Learn to make informed medical decisions when definitive care is hours away. Gain skills and confidence as you work through scenario-based problem solving. The WFA includes short lectures, interactive labs, and realistic practice scenarios that help participants master the central concepts of remote medicine and effectively respond to emergencies.

Wilderness First Responder Certification Hybrid Course Format Wilderness First Responder (WFR) training is rapidly growing as an important credential for anyone who works outdoors. Recreational outfitters, guides, trip leaders, outdoor educators, forestry and park personnel and anyone working or playing in remote areas. The Remote Medical International Wilderness First Responder emphasizes decision-making, hands-on skills, and the theoretical knowledge necessary to function in remote areas. The certification is a combination online and onsite course that requires approximately 20-30 hours of pre-course instruction in an online learning environment and five days of class/field coursework.

Children experience grief in many different situations, and sometimes, we may be unaware. In death, divorce, a move or any number of other events, we can empower children with positive, effective methods of handling loss. GRE Test Preparation (Online) Applying to Graduate school usually means taking the Graduate Record Examination (GRE) General Test, which has three sections – analytical writing, verbal and quantitative. This online course, in partnership with the Center for Legal Studies, covers all sections: • The Quantitative part of the course features a math review and techniques for tackling the discrete quantitative and data interpretation questions that make up the math section of the GRE. • The Analytical Writing and Verbal part prepares you for the three types of questions in the verbal section – reading, text completion, and sentence equivalence – and the two essay tasks.

History of the Anishinabek The history of our region gets its roots from the Odawa Anishinabek who settled here many, many years before Traverse City, Suttons Bay, Northport or other towns were established. But what do we know of these people and their influences on the region?

Join JoAnne Cook, former Grand Traverse Band of Ottawa and Chippewa Tribal Council member, as she shares the history of the Anishinabek people from the Grand Traverse Region. The tribe is one of the three recognized tribes of Odawa peoples in Michigan.

JoAnne believes tradition and culture are vital to the Anishinabek way of life and highlights her learning of the 3 Fires people. Learn about the native culture with teaching, philosophy and stories, and discover cultural changes that have evolved over time.

Dan will share his photos and experiences during two years of Army Flight School including details about learning to fly the AH-64D Apache Attack Helicopter and UH-60A/L Utility Helicopter. Then he will explain the process and experience of deploying to Camp Taji, Iraq in 2010 and 2011 and conducting combat missions in the vicinity of Baghdad, Iraq.

As we humans cozy up to the woodstove and burrow under down comforters, the nonmigratory animals that call the woods and waters of northern Michigan home must endure the brutal cold outside for months. Learn about the fascinating and diverse adaptations that allow our animal neighbors to survive this harsh time of year, including changes in behavior and physiology. Discover the details of how the most well-known method – hibernation – works, and also learn about lesser-known phenomena like honeybees huddling for warmth, frogs manufacturing their own “antifreeze,” and beavers stockpiling food and surviving the winter locked inside their ice-bound lodges. Grow Your Own Oyster Mushrooms

Signs of River Otters and Other Elusive Animals

Understanding Northern Michigan Rivers

Oyster mushrooms are the easiest cultivated mushrooms to grow, and they grow on waste materials. Their taste is mild and delicious, and oysters are healthy for you to eat. Come learn about the oyster mushroom and its cultivation. You will receive a specially-designed bag of growing medium, inoculated with mushroom spawn to take home with the knowledge to grow your own mushrooms! This course qualifies toward the Naturalist Certificate.

River otters are active and healthy at Grass River Natural Area. Join a naturalist to learn the natural history of river otters and how to spot signs of these elusive and fun indicators of water quality. On the trail we will look for signs of other elusive animals, like bobcat, mink or black bear. This course qualifies toward the Naturalist Certificate and takes place at Grass River Natural Area near Bellaire.

While the bays and Great Lakes define our region, these bodies of fresh water depend upon a complex system of rivers and streams to supply them.

Gain important understanding of the vital role that rivers play in maintaining water quality. Explore the riparian environment as you learn about stream ecology, sampling methods and testing protocols in the classroom on day one. Then put your newly acquired skills to work as you participate in a stream-side sampling expedition on day two from Noon-5 p.m. We end by analyzing the collected data and the story it tells on day three. This course qualifies towards the Naturalist Certificate.

Birding by Ear—A Sequel

When the robins head south and the chickadees huddle in the evergreens, explore the fascinating adaptations of Michigan’s birds in the comfort of the science lab. Using the incredible NMC collection of over 100 specimens, you will examine a broad variety of birds up-close and in your hands. Compare different groups like ducks, hawks, songbirds, owls and woodpeckers to see how they are well suited for their environments.

This course qualifies toward the Naturalist Certificate.

Add a new dimension to your enjoyment of local birds by learning to recognize them by their songs. Begin in the classroom as naturalist, Alice VanZoeren shares photos, recordings, and tips about how to listen to distinguish one bird song from another. For session two, we will head to Sleeping Bear Dunes National Lakeshore to listen and look for returning spring migrants (field trip meets 8-10:30 a.m.)

This course qualifies towards the Naturalist Certificate. Bring binoculars and dress for the weather. The morning field trip details and carpooling will be arranged at the first session.

Once you have been introduced to over a dozen local birds in the previous class, you are ready to fly a little further. Learn to identify more birds by behaviors, sight, and song through a media-enhanced classroom session and field trip. The classroom portion prepares you for a Leelanau County outdoor morning (8-10:30 a.m.) birding experience to apply what you have learned. This course qualifies towards the Naturalist Certificate. Bring binoculars and dress for the weather.

Grief Recovery Learn to employ The Grief Recovery Method®, an action program for moving beyond loss, providing partnerships and guidance to support moving forward in life free from the emotional pain that accompanies the grieving experience. This class will attempt to treat this question through a close reading of Plato’s most beautiful work, the Symposium, a dialogue in which the finest minds of ancient Athens meet to nurse their hangovers and address the hardest of all problems. We will also look at interpretations of Plato’s philosophy of love in the work of the psychoanalyst Jacques Lacan and contemporary philosopher Alain Badiou.

What was Psychoanalysis and What Does it Mean Today?

Nag Hammadi and the Gospel of Thomas— Insights and Controversies

No twentieth-century thinker exerted a more powerful influence on the way we speak about our problems than Sigmund Freud, the founder of psychoanalysis. Yet today, his work is almost universally dismissed or ignored by professional psychologists and psychiatrists. Why has this happened?

And what was Freud’s contribution to thought? This class will examine some of Freud’s most important discoveries and teachings - the unconscious, the formation and splitting of the ego, desire and its repression, the transference, and the drives – in an attempt to answer the question, Can we do without Freud?

In 1945, deep in the Egyptian desert, construction workers digging a foundation stumbled upon a stone jar containing ancient texts. Those books are known today as the Nag Hammadi collection. There are twelve separate books that contain fifty-two tractates among which was the now famous Gospel of Thomas. Examine that amazing find and the impact it is having on the Christian Bible, with special emphasis on the remarkable Gospel of Thomas. Recommended text is Elaine Pagel’s Beyond Belief.

Water policy experts discuss regional issues – see page 25 On Liberal Democracy One thing about our current politics: they call upon us to consider some basic issues that we have long taken for granted. At the end of the cold war, it was widely believed that open, democratic societies were the model for the future. Old divisions and issues, it was said, would give way before prosperous and open democratic societies. Obviously, it has not quite turned out that way. In fact, today one hears questions about the viability of democracy. This course lays out the key institutional and cultural features of democracy. Then we will discuss the leading challenges to democratic politics and government of the current moment.

Individual Freedom and the Common Good: Can We Get the Right Balance From the beginning, Americans have embraced seemingly conflicting political goals. The Declaration of Independence emphasizes Americans’ “inalienable [individual] rights.” The Constitution sets as one of its purposes “To promote the general welfare.”

Historically public policy issues have been typically not either/or, but rather what balance? In fact, throughout US history, finding the ‘right’ balance between individual freedom and collective good has guided policy making and has fueled political debate.

When war or some other external threat appears, Americans have come together, but in ‘normal’ times we tilt heavily toward our own narrower interests. Today, Americans seem especially skeptical of government programs aiming at any sort of common purpose. Does that matter? And if so, what might be done to restore a more fruitful balance between narrow and broader interests?

Photography Understanding Your DSLR Camera Digital Single Lens Reflex (DSLR) and the newer mirror-less cameras are far more complex than ordinary point and shoot cameras. Learn how to identify and adjust the most commonly used functions of your DSLR camera. Gain understanding of exposure basics and clarify many of your camera’s settings such as exposure and focus modes, how your camera “thinks,” adding lenses, the basic computer skills required to get the most out of your camera, and much more. Bring your digital SLR camera with a fully charged battery, a memory card, your user manual, and your questions. Not suitable for point and shoot cameras.

Beginning Studio Photography and Off-Camera Lighting If you are new to off-camera lighting, it can be a bit overwhelming. What is a modifier? How do I know what modifier to choose? How do I set my camera? Can I use a flash, or do I need a strobe light? In this class you will learn to build a basic studio lighting set up, settings and modifiers for off-camera lighting, and tips to start building your own studio kit. Bring your digital SLR camera and a tripod.

This class is appropriate for intermediate level photographers and above.

Composing Landscapes in Oil Winter Watercolors: Snow - Forests - Wetlands Use watercolors to paint a beautiful winter scene. Just because the leaves have fallen from the trees, it doesn’t mean Northern Michigan is devoid of color! Artist/instructor Glenn Wolff is passionate about the art of printmaking. Register for one of his classes and experience it yourself.

For both beginning and continuing students. Printmaking I is an introductory survey course that introduces the student to a wide variety of print media. Assignments include demonstrations and explorations of relief printing (linoleum and wood), intaglio (including etching, drypoint engraving, and aquatint), solar prints, and embossing and monotype. Students will gain knowledge of the history, conception, production, editioning and presentation of fine art prints.

Beginners and artists with some printmaking experience are welcome.

Printmaking II, offered for the student who has completed Printmaking I, delves deeper into the mediums with multicolor reduction relief prints, multi-plate color etchings, and stone lithography. Materials are included with the exception of printing paper.

Printmaking: Open Studio

Join renowned artist, Glenn Wolff, to gain the fundamental workings of a printmaking studio. Learn how to prepare a block and plate for print, etch a metal plate, print an etching and do block printing on a press. Explore inks and papers used in printmaking and basic studio etiquette. Plus enjoy access to the NMC Art Department print drawers of past work to examine various techniques that may inspire your designs. Open to anyone 16 years and older.

We are pleased to offer you access to the NMC Fine Arts Building printmaking studio! This “class” is for the experienced printmaker that would like to use our presses and facilities. There will be a studio assistant present that can offer limited assistance, but there will be no formal assignments or instruction. Use of the facilities includes black ink, tarlatan, etching baths for zinc and copper plates, and a limited number of stones for lithography. Artists must supply their own intaglio plates, paper and any other colored inks. There is a mandatory orientation session on the first day of class (Jan. 14, 2020). Instructor approval or completion of an approved NMC Printmaking course is also required.

Printmaking Immersion You have tried your hand at printmaking, you love it, now take it to the next level! Printmaking Immersion is a studio class for the budding printmaker who would like to gain more experience to use the NMC Open Printmaking Studio. Explore further the techniques of Monoprint, Intaglio, and Relief Prints, which are introduced in the Printmaking Explorations class. Rigid Heddle Weaving Are you curious about handweaving? Rigid Heddle looms are easy to use, portable and less expensive than a multi-harness loom. With some experience and an experimental attitude, these looms can also do some very complicated weaving tricks. In this three-week extended class, you will become familiar with weaving vocabulary, finishing techniques, and make a plain weave scarf. Additionally, you will learn how to design a second project and warp your loom for a second time. Open to beginners and experienced rigid heddle weavers. Returning students will have the opportunity to work on their own projects and ideas. A supply list will be mailed before class. You will need your own rigid heddle loom. Beginning Tapestry Tapestry is among the oldest forms of fine arts. Originally for cathedrals and castles, they were used to insulate big stone halls, illustrating battles, parables and metaphors. While the techniques have not changed for centuries, the imagery has. Today’s smaller, portable, personal size looms make it easier for more people to enjoy this art form. Learn how to warp a tapestry loom and explore different ways to create shapes using slits, interlocks and other types of joins.

Then learn finishing and mounting techniques. Students who have woven tapestry before may explore advanced techniques. Bring a tapestry loom with a ten-inch wide weaving width (minimum), a notebook/sketch pad, drawing utensils, scissors, and a kitchen fork (used to pack in wefts). Conversational Spanish II

Open to community members and college students, the NMC Jazz Band is a course for the performer with a focus on big band jazz ensemble techniques and styles. A wide range of jazz styles are covered including swing, be-bop, ballads, rock/ fusion and Latin. Some improvisation is explored, and always encouraged, though it is not the main focus.

A minimum of one concert will be performed each semester and all members are required to attend and participate in all scheduled performances. Details for rehearsals and performances announced in class.

Mother, Mother: Researching Your Maternal Line Finding information for your maternal line, in terms of people, can be tricky.

Mitochondrial DNA tracking is great for tracing your maternal heritage, but that doesn’t put names or faces to the ancestors you are trying to document.

We will look at the various sources amenable to our search upstream of our mothers, in this hands-on internet research class. Birth and baptismal records, marriage and divorce records, death and burial records, wills, land transaction records – these are where to look for our mothers of generations past. Training the Mind: Buddhist Practice and Meditation

Preparing for a Peaceful Passing: Insights from Buddhist Teaching M o s t p e o p l e avo i d e ve n t h i n k ing about the subject of death even though it is something we will all experience. Some avoid this topic because they feel there is nothing they can do about it; however, in the Buddhist view, there is a lot that can be done to prepare. Explore traditional Buddhist teachings on impermanence, preparing for the moment of death, the dying process, the intermediate state (bardo), and rebirth.

Techniques will be offered to alleviate fear now and in the final moments of life and to make the transition as easy as possible with the best outcome for what will follow.

Just as we have to train our physical body to keep it healthy, stable and strong, so must we also train our mind to be able to deal with the difficulties we all experience in life. From the Buddhist point of view, happiness and suffering do not fundamentally depend on external circumstances, but on the mind itself. Only training the mind allows us to eliminate suffering and establish genuine and lasting happiness. Explore topics of karma (cause and effect), disturbing emotions (anger, jealousy, pride, etc.) and learn techniques to create more happiness and peace in our lives and the lives of those around us.

Baby and Me Ballet (Adult & Child Age 18-24 Months) Baby and Me Ballet is the perfect class for introducing little ones to movement, rhythm, spatial awareness and exploring creative expression. 18-month to 24-month babies and caregivers will learn to dance together, move with props (ribbons, balls and more) and interact with music makers (clapping hands, snapping fingers and more). Continuing Yoga The next level after Yoga: Beginning and Beyond, builds strength and provides motivation for your own personal practice. Be guided in ways that break the circle of stress, balancing the body’s energy flow with holding poses and vinyasa. This is a rigorous practice, building inner fire while developing flexibility and endurance, including sun/moon salutations, inversions and advanced asana.

The Original Hot Yoga Looking for a more intense workout?

Do you wish to develop strength, flexibility, tone and balance, along with your cardiovascular workout? In every class, you will experience the original Hot Yoga: 105 degrees, 26 poses and two breathing exercises. Meets for 90 minutes per class on a flexible schedule. Yoga for Teens: Developing an Antidote for Stress (Ages 13-17)

Many teens and young adults face an overwhelming load of stress; from academics, sports, activities, friends, and more. Some are not getting enough physical exercise, and in some cases, such as varsity sports, some may be physically overworked.

Finding inner peace and a happy medium is what yoga is all about at Yoga for Health Education. Designed for youth in good health who want to have fun and be challenged in a noncompetitive, confidence-building and peace-building setting. No prior yoga experience necessary.

Pilates Fusion fuses Yoga and balance training with traditional mat Pilates. Work your entire body without heavy weights, high impact jumping or extreme movements that can irritate your joints. Pilates is known for promoting intense core strengthening, while Yoga sculpts and stretches your body and mind. Both promote balance and alignment of major muscle groups. All fitness levels are accommodated during this fun class. Bring a yoga mat, water and hand towel.

Wellness Walk without Pain or Injury Walking is a great way to stay active and healthy. This interactive class will help you walk easier and without injury by identifying proper movement patterns and common causes of foot and leg injury. Better Bones Improving bone health is an important part of fall prevention. Navigating with Electronics An America’s Boating Club (ABC) course. At its simplest, marine navigation is the art and science of finding your way on the water. Used for centuries to get from point A to point B, historically sailors navigated by the stars and constellations. To navigate today, boaters can use GPS to have a safe afternoon on the water. Be introduced to GPS technology from the most basic receiver to chart plotter systems. We will demonstrate the process of navigating by establishing waypoints and routes and then running the planned courses. Examine electronic charting software for the desktop computer, with creation of waypoints and routes on the desktop and subsequent download to an on-board unit. America’s Boating Course An America’s Boating Club (ABC) course. Learn the fundamentals of safe boating in this core America’s Boating Club course. Successful completion qualifies you for personal watercraft operator certification in Michigan. Topics include: boat components and safe operation; the rules and regulations as they apply to boating in the USA and state of Michigan; boat navigation; and communication.

Discussion includes how to deal with a boat in adverse conditions and how to operate boating equipment such as a boat trailer and personal water craft (PWC), and how to tie knots that are essential to safe boating. Must attend each day to achieve certification.

Important information: Those born on or after July 1, 1996, may operate a boat legally only if they have been issued a boating safety certificate and have it on board the boat. Traversing the TART One Step at a Time Explore the Rails to Trails TART Trail in Grand Traverse County. This is a great way to walk the east to west corridor of the County in both directions.

This wellness activity contributes approximately 6,000 steps to your daily goal of a minimum of 10,000 steps as recommended by health experts. This is about movement without running, stepping outside, grounding yourself, and enjoying the sights and sounds of nature. It is also a great way to learn more about finding your way around Traverse City. Bring water, wear walking/hiking footwear, and dress for the weather. We meet each week at a different site as we progress.

(Overture is a musical term meaning “a musical introduction”) Kindergartners - no audition required. Overture is NMCCC’s introductory program for Kindergarten students. This nonauditioned group meets one evening a week for an eight-week session.

Young singers learn about their voices and learn basic singing techniques in a friendly, nurturing environment.

(dohl’-chay - Italian for ”sweet”) Primarily 2-3 graders - no audition required. Dolce is NMCCC’s introductory choir for young children with little or no prior musical experience.

Singers rehearse Tuesday evenings plus a few Saturday afternoons. Singers build their foundational music skills in a fun, interactive learning environment, learning recognizable folk-based repertoire appropriate for beginning singers. Dolce performs in NMCCC’s Winter and Spring Concerts.

Those age 62 and over who are residents of Grand Traverse County qualify for the LIFE Discount and can register by phone, mail, fax, or in person to receive the discount. LIFE Discounts may be applied to almost any class (except online courses). Call 231-995-1700 to learn more and receive the discount price.

• If the college stays open, but an individual class is canceled, we will contact the affected students by phone or email.

Refund Policy Refund Policy 1. If NMC cancels a course, you’ll receive a 100% refund.

2. If you must drop a course, call 995-1700. Refund amount is determined by the date of the request. For a full refund contact the EES office at least three business days prior to your class start date.

3. If you are unable to attend and have missed the refund deadline, you may request up to a 50% credit toward a future class by calling the office (995-1700) before the start of the course.

4. Academic courses taken as noncredit are subject to academic refund policies.

Enrollment in an Extended Education course does not confer upon the enrollee admitted student status in NMC’s degree or certificate programs.
