They are also rich in iron, specifically heme-iron, which is more easily absorbed by the body compared to non-heme iron found in plant-based foods. They have essential nutrients such as zinc, vitamin B12, vitamin B6, niacin, phosphorus, and selenium.

In addition, dry-aged steaks have:

• Increased Nutrient Density: The concentration of flavors in dry-aged steaks is accompanied by a concentration of nutrients, including protein, vitamins, and minerals.

• Healthy Fats: Dry-aged steaks often contain higher levels of mono- and polyunsaturated fats, which are considered heart-healthy and beneficial for overall well-being.

• Improved Digestibility: Dry aging helps break down collagen and connective tissue in the meat, making it easier to digest.

Remove from Refrigerator 20-40 Minutes Before Cooking. Allowing the steak to come to room temperature before grilling helps to tenderize the meat and results in a juicier, more flavorful steak. In addition, it’s easier to control the cooking process when the steak is at room temperature.

Turn Your Grill

Up to High Heat.

If you’re using a gas or propane grill, then you’ll want to turn it all the way up to high. However, if you’re using a charcoal grill or a Green Egg®, then you’ll want to get your charcoal white hot and create a direct heat zone for your steak.

Apply Oil. One way to ensure a perfectly grilled steak is to apply a thin layer of oil on all sides of the steak before cooking. This will help prevent the steak from sticking to the grill, and it will also add a bit of flavor. When choosing an oil, go for something with a high smoke point, like canola, grape seed or avocado oil.

Season the Steak. When it comes to grilling steak, salt and pepper are the perfect seasoning duo. Salt helps to bring out the flavor of the beef, while pepper adds a bit of heat and spice. Don’t be shy with the amounts – sprinkle both seasonings generously over the steak before cooking.

The Grill is hot. Place the steaks on the grill, cooking for 4-5 minutes until slightly charred. Then, turn the steaks over and continue to cook for the following times to achieve desired temperature:

• 3-5 minutes for medium-rare (135 degrees F)

• 5-7 minutes for medium (140 degrees F)

• 8-10 minutes for medium-well (150 degrees F)

Use your meat thermometer! When you remove your steak from the grill the internal temperature will continue to rise, so cook it to a few degrees under your desired temperature.

Rest! It’s time to remove your steaks from the grill. Tent them loosely with foil on your cutting board. Let the steak rest for 5 minutes before slicing. Resting allows the juices to redistribute, ensuring that the steak is evenly cooked and juicy.
