Combine sugar and water in a saucepan over medium heat. Stir until sugar dissolves.

Add your flavouring ingredient For herbs, a handful is sufficient; for citrus zest, use the zest of one fruit; for vanilla, one bean; for ginger, about an inch, peeled and sliced.
Bring to a simmer and then remove from heat Let the mixture steep for 30 minutes to 1 hour depending on how strong you want the flavour.

Strain the syrup to remove solids and store in a clean bottle or jar. Refrigerate for up to a month

Heat the vinegar until warm but not boiling, then pour it over the flavourings in the jar
Let the mixture cool, then seal and store in a cool, dark place for about 2 weeks

Tell us about your alcohol free journey…
6 years ago, when I stopped drinking (ironically in between Christmas and New Year) everyone was asking me what was wrong! I’m a Yorkshire Lad and people couldn’t understand it Back then, when I went out, people were trying to force drinks on me, but I stood my ground and refused them. Then after a year of saying no, people were more accepting and started to tell me that they envied me and wished they could give up. They saw that I was still the same person without the booze! I still go out and have fun, but it’s a different kind of fun now, but people are more respectful and even my drinking mates are curious and will often partake in an alcohol free tipple with me too. I’ve met some new friends as part of my sobriety too!
What traditions do you have that make the Festive Season special to you?
I work with children in care, often with no family, so I love to go visit them and share a mince pie and hot chocolate with them! I’m also famous for making my special recipe chill & coriander pickled onions apparently Christmas wouldn’t be the same without them!
Have you got any AF drinks stashed for Christmas?
I was lucky enough to get one of the Wise Bartender advent calendars, so I’ve been stashing some of those! I can’t wait to open Day 24 in front of my log fire with some chilli chocolate, my chilli & coriander pickled onions and a big wedge of pork pie! (not sharing not sorry!)
What other alcohol-free tipples will you be enjoying over Christmas?
Whatever anyone buys me! It’s become a bit of a thing with people…they love to buy me any weird and wonderful AF drinks they spot! I’ve got a few favourites though that I will be stocking up on…Gunners Light, Little Rick CBD for when the stress levels increase, a few Big Drop Beers and the Lyre’s American Malt!
We know you’re an outdoorsy kind of person and like to take an alcohol free drink with you on your travels…What’s the weirdest place you’ve cracked open an AF drink?
Well, there’s been a few weird places…top of mount Snowed was an interesting one! We bumped into Matt Baker the TV Presenter on our way down and enjoyed an alcohol free beer with him! I’m also partial to an AF drink on my paddle board and in my ice tub!
Which alcohol free drink feels particularly Christmassy?
I had a Kasteel Rouge Original in York at the weekend and that felt very Christmassy!
What do you always look forward to eating on Christmas Day ?
Pigs in Blankets and I don’t know why but I’m banned from the Sprouts!
If things get stressful over the festive season, how do you wind down?
With an ice bath and an AF drink…of the CBD variety if I’ve got one!

For us, it’s a quirky blend of classic English winter vibes and laid-back Aussie summer fun, thanks to 20 years living in London. Prepping the Christmas dinner the night day before with my sister and mother, building and decorating a gingerbread house with my son, and nicking a little bit of the turkey just before it goes on the table

Living in Stockholm we have really cold winters, so I would really welcome a cozy pair of socks and a plane ticket to anywhere warm

Well, I’m a one woman band, so I don’t have work colleagues to celebrate with. But I do meet up with some fellow solo entrepreneurs and celebrate with a nice meal at a restaurant and enjoy a non alcoholic cocktail or two

The inspiration behind Soruhl comes from Sorrel, a Jamaican Christmas staple that's typically served cold over ice. But we are far from the caribbean climate, during Christmastime here it can be served hot, with a cinnamon stick, some orange peel and maybe star of anise, just like glögg or mulled wine on those cold winter nights.

Preheat the oven as per the ham’s cooking instructions
