It is so amazing to me how fast our season starts, and how fast it starts to wind down. For us, we end the 29th of this month! It has definitely been an interesting season. Events were Up and Events were Down! We have found over the years that on an Election Year, we see what we call a “Roller Coaster,” as people tend to tighten their belts once again!
Scholarships are being announced this month! How exciting to once again be helping out a College Student with Books, Room, Board, or anything else they may need. It is inspiring to see the anticipation and appreciation of those receiving a Scholarship from NICA! We have worked hard to put the NICA Foundation Board together over the years to arrive where we are today. We are giving out $52,000 in Scholarships to such deserving individuals in our Industry! Remember, if you are a NICA Member and you have an employee or a child who is seeking to go to College or a Trade School, please make sure you encourage them to apply in 2025!
As we start to finalize our 2024 NICA Marketplace “Together!” event, we would like to announce that our Keynote Speaker is Jim Teece, President and CEO of Project A, and he will speak on tomorrow’s infrastructure, technology, connectivity, and more. Our schedule also features a NEW ServSafe Manager Class planned for Sunday, November 10th at $70 per person (down from $145), thanks to a generous sponsorship from the NICA Foundation. Class size is limited, and will include instruction, lunch, and a test. For a look at the many other exciting things taking place November 10-13th in Las Vegas, NV at the

We have an exciting schedule planned so far and are excited to see you all there!
Watch for upcoming information on the formation of NICA’s Next Generation Committee, Generation Forward, soon. Nathan and Rebecca Wells will be working with Rey O’Day, our Executive Director, to form a group to brainstorm ideas that are different from the Old Generation. We are always seeking new ideas, food combinations, and many other things, and this Younger Generation is ready to start producing new ideas for our future.
I would also like to announce that we have extended Director Nominations until September 20th, so if you or someone you may know would like to run for the Board and have their voice heard, I encourage you to make the leap!
September brings some of our busiest events of the Fair Season! Many of us are gearing up for the season to come to an end, and as we wind down, we gain a focus on cleaning up Trailers and Equipment that may have broken over the season. We make sure we have winterized everything, tuck it away, and begin preparing for a fabulous 2025.
With approximately five months left as your NICA President, the best is yet to come! I hope to see all of you at NICA Marketplace “Together!” and the IAFE Convention this Fall, along with wherever else this Industry takes us before the end of the year. In the meantime, I hope you have a safe end of the Fair Season and arrive home safely, wherever that may be. ▲

Hi there! I am writing to you from Allentown, PA. Many of you know that when I was 19 years old, I toured six Fairs in the Midwest as a singer/ dancer with Perry Como. The first place of that tour was The Great Allentown Fair, serving up FUN since 1852! I am here for the first time since that engagement. Last night I sat in the audience, and today I will step on the stage. What a cool trip down memory lane.
My dear friend, Beverly Gruber, CFE, is the CEO. If you know Beverly, you know what it means to be a knowledgeable, generous, hard-working, and fun hostess. She insisted that I see my first, live Grape Stomp. A half wine barrel full of grapes has five people (one at a time for a minute each) stomp on the grapes; a spigot in the barrel delivers the liquid into a jar. For each participant it is a full-on minute of full-on aerobics. It was a “barrel of fun” to watch and cheer on. The “Media” team beat the “Political Movers and Shakers” team. Beverly also played the Boom-Ba with the local polka band for us. All this is to say that at 80, Beverly is a force-to-bereckoned-with and an inspiration for all of us!!
We are all privileged to be in an Industry doing work of which we can be very proud. This week the NICA Foundation (that is all of you) sent the first Scholarship Awards to our 31 (up from 26 last year)

commendable Scholarship Recipients. See page 18 to begin learning about NICA’s young people who will become our future world leaders. Benjamin Franklin said, “An investment in knowledge pays the best interest.” We are investing $52,000 this year, and with that we are providing a means by which our younger generation can build rewarding lives and become more interesting people. As Colin Powell said, “A dream doesn’t become reality through magic; it takes sweat, determination, and hard work.” Now making the dream into reality is in their court; let’s cheer them onto success!!
This is the time of year when I am thinking about what NICA wants to be presenting as topics during our Winter Conventions and Conferences. The most common one for all of us is simply “Sticker Shock,” or how much everything costs at every level! I personally experienced this when I wanted to replace an 8’ by 8’ set of two windows and a sliding glass door with something that would keep more heat out of my house. Why? Because my electric bill last month was $800. (I have always laughingly said, “I work to pay my air conditioning bill.”) The bid to replace them started at $22,000 and with promotions it became $15,500. Needless to say, I politely asked the window salesman to leave without an order for new windows. Instead, I turned the AC up to a higher temperature and only paid $700 this month!
But, our Fair Guests are feeling the same “Sticker Shock” on the products that they come to the Fair to enjoy. For that reason, many Fairs and Concessionaires are trying promotions to soften the shock. One of my favorites was a $5 item served up before 4:00 PM every day. The Fair’s goal was to move more Guests into arriving earlier in the day and the Concessionaires’ goal was to introduce Guests who had never bought before to at their stand, or to try a new product that they might buy in the future. For both entities it was a chance to create value.
As a Guest, I decided to participate in the promotion. I knew that under most circumstances a $20 bill could go quickly on an item and a drink, so I decided to take the same $20 bill and spend $5 at four stands where I had never bought before. It was FUN and FILLING!! Now I have three new stands that I would visit again to buy an item at full price, and one that I went back to on that day to eat again. WE talk about engaging our Guests through experiences… this was a very positive way to do it.
Speaking of promotions, what happened to the community days when we brought cans of food, or school supplies, or slightly worn shoes as an incentive for a lower admission price? After COVID,
everyone was very eager to get out of the house, but we have become busy again and that mood has passed on. Now we need to be creative again about ways to bring Guests back to the Fair and that includes multiple visits. Promotions can be risky, but the biggest risk of all is not taking one.
We all know that every time a Fair opens, the biggest possible risk and disruptor is the weather. Last week the Minnesota State Fair was pounded with storms that closed it early and opened it late on the day before and day of our NICA Gathering. Happily, no one was injured, damage was cleaned up by capable crews, and Nate and Stephanie Janousek, Fun Biz, cooked a terrific prime rib dinner for the NICA Gathering of 50 people. (Thank you, Sysco, for the sponsorship). On the other hand, the Iowa State Fair had the most perfect weather that anyone can remember. See the next issue for coverage on our Midwest events. When it comes to weather all we can do is pay attention and count our blessings, things we do well.
Our staff is very busy working on NICA Marketplace “Together!” We have 14 educational sessions with Fair and Vendor, Thought Leader Panelists; a Trade Show of Manufacturers, Commercial Exhibitors, and Service and Product Suppliers; 10 “How To” Sessions; a rousing list of Roundtable Topics; 2 Lunches; 2 Happy Hours; 2 General Sessions; and a Sysco Tour with Chef Presentations and Lunch ALL for $139 (Member Early Bird Special) at the beautiful Tuscany Suites and Casino! It is a great place to network, enjoy friends, and celebrate the end of the season. Don’t miss out! Sign up right now!
My favorite media quote this month is from ME journalist Chris Sedenka: “Quite possibly the most popular thing about Fairs is the cuisine. Who doesn’t love gorging themselves on food that is breaded, fried, sauced, and probably on a stick? The diet takes a backseat when it comes to Fair Season. It’s a free pass to consume as many calories as possible.”

Our Sincere Condolences to the Potillo Family
We are very saddened to report on the recent passing of Patricia Potillo, mother of NICA Past President Joe Potillo. Our thoughts and prayers are with their family, who shared the following:
On May 5, 1958, a beautiful bundle of joy named Patricia came into the world. This baby girl was a blessing to the union of Joe Sr. and Virginia Potillo
She spent her early formative years in Easton, PA. It was there that she attended school in the Fall and assisted her parents in the Summer in their Carnival Business. In the early 70s, Patty relocated with her family to Yalaha, FL where she spent her time with her Great Uncle and Great Aunt, Jerry and Mary Kennedy, while her parents worked and continued to grow their business.
She spent her time active in school and attending the church she loved for life, The Church of God by Faith. After graduation she attended college, but one year later, she left to join her father at the Florida State Fair. She would often tell the story of her father simply saying, “I need you!” She was a “Daddy’s Girl” and she excelled in the Carnival Business. She worked hard with her family, running crews, operating financial and clerical duties, and anything needed to keep things going. Her pride and joy was giving job and travel opportunities to young people!
For the last several years, she became the full-time caregiver for her mother. She had a generous, loving, tough, personality. She had a heart for her community, family, and friends alike. Everyone loved “Ms. Pat.” To cherish her memories, she leaves her two sons, Joseph (Daija) Potillo and Michael (Jaffna) Potillo; her loving mother, Virginia Potillo; brother, Curtis Walters; sister, Latasha Williams (Joe); grandchildren: Michael, Jr., Amelia, and McKinley Potillo; Godchildren: Deena, Mahogany, and Airel; a loving family of cousins, nephews, nieces, nephews; and the Yalaha Community. ▲
Concessionaires at Dutchess County Fair Donate to Food Pantry
A great group of Concessionaires supported Dutchess County Fairgrounds 4-H Youth Livestock Sale in August. With the money raised, they purchased the Grand Champion Hog, and the meat will be donated to a local food pantry. With the funds left over, they’re donating to their 4-H Scholarship for next year and to a local food bank. There are a few who are missing from the photo, but overall a terrific job by everyone. On Friday, August 16th, Concessionaires and Fair Staff gathered at Grapes and Hops on the Erie County Fairgrounds for a NICA Membership Rally, organized by Jessica Gottsche, East Council Coordinator Thank you to Steve Jankiewicz, S&K Concessions, for hosting and breakfast, along with speakers Jessica Underberg, CFE, Erie County Fair, and Marty Biniasz, James E. Strates Shows. We gained two New Members and passed out many Member Applications, showcasing the New Member Summer Sale. 2024 Scholarship
The NICA Foundation is pleased to announce the selection of the 2024 NICA Scholarship Recipients. After a thorough, confidential, and anonymous review of the many applications received, the NICA Foundation is proud to award 31 scholarships (up from 26), for a total of $52,000 (an increase of $7,000), to our commendable Scholarship Recipients this year.
Three anonymous members within the Fair Industry were selected to be the Scholarship Readers. The copies that they received were redacted so there is no evidence of who the Applicant might be. The Readers work individually on each entry, allotting points for eight categories. Afterwards, they submit their results to the NICA Office where they are tallied, averaged, and ranked
by average score. All of our Recipients received a score of 80 points or higher on a 100-point scale.
The NICA Foundation was created by NICA to oversee and administer an Academic and Vocational Educational Scholarship Program, foster Development Opportunities and Training Services, and provide a Travel Stipend for First Time Convention Attendees. The NICA Foundation has awarded over 250 Scholarship Recipients since the program’s inception in 1996!

25th Anniversary Scholarship
Taylor Coffman
Brigham Young University
Taylor Coffman, from Wabash, IN, is the son of Jared and Marie Coffman and grandson of Sam Coffman, Coffman Concessions. He is the recipient of the $4,000 NICA 25th Anniversary Scholarship and will be continuing his education at Brigham Young University to earn his Bachelor of Science Degree in Biophysics, with Minors in Chemistry and Business.
Taylor has worked for his grandparents in the Fair Industry in one capacity or another since he was young, when he was “ecstatic to be paid in old coupons and loose change.” He shared, “What I have learned in the last thirteen years, however, was how to work. While it may not have been fun at the time, I now recognize the benefits it has given me outside of Fairs, for which I am grateful. Though there are always tough customers, long days, and unhappy people, I know that through the time spent working with customers I can deal with anyone and keep the situation positive and fun. Through doing difficult things, it puts everything else into perspective and helps me to accomplish anything that comes my way.” His current workload in school certainly puts his skills to the test: “Whether it is buckling down after a long day and cranking out an assignment, or spending 12 hour shifts on my feet, the ability to simply buckle down and do all of the work that needs done stems from working Fairs and absorbing their culture of work.” Taylor’s current goal is to earn his Bachelor of Science Degree in Biophysics, with

Minors in Business and Chemistry. After graduation, he will attend Medical School, where he will later choose his specialty. He stated, “While I doubt I will be making Dough or mixing Cinnamon Sugar in a hospital, the work ethic and soft skills learned from making Elephant Ears will be crucial going forward in my education and career. I believe my record can show too that I have the drive and ability to reach those goals and make that change in the world!”
Taylor keeps very busy in his Sophomore year as both a Teaching and Certified Nursing Assistant, earning a spot on the Dean’s List and supporting his community. He is defined as a “dedicated and capable individual” who demonstrates a “strong work ethic and a great ability to think outside the box.”
Marcus Family Scholarship
James MacPherson
California State University LB
James MacPherson, of Long Beach, CA and son of Lisa and Schuyler MacPherson, Ten Pound Buns / SDM Concessions, LLC, is receiving the $4,000 Marcus Family Scholarship. He is entering his second year at California State University Long Beach to pursue his Bachelor’s Degree in Criminology and Criminal Justice.
James shared that his involvement with the Fair Industry began when he was born. Although he started at “the bottom of the totem pole,” he has worked his way up to assisting his family in “all sorts of ways.” He said, “The experiences and memories formed over the years have shaped the person I am today and continue to strengthen my character as I mature.” He has learned many important lessons including how to balance accounts, plan and prioritize workloads, and build positive experiences for others: “The skills I’ve learned are invaluable to me, and working at the Fair has taught me the type of employee, co-worker, and leader I want to be in life. In today’s ever-changing society, it has been extremely meaningful to gain experience on how to lead a diverse workforce and lead multiple different perspectives to work towards a common goal.” James believes these lessons will assist him in his plans to earn his Bachelor’s in Criminology and Criminal Justice, before attending Law School for his Juris Doctor Degree. He hopes to eventually become a Criminal Prosecutor, Court Judge, and even District Attorney. He explained, “I want to be a Prosecutor because I want to help people. All my life I have always strived to better my community and give back in some way. I want my community to know that they can count on me to be the leader they’ve come to expect, as they do with my family and as I grow into my professional career. I love my community and I want to do something that helps as many people as possible.”
James graduated first in his high school class, currently serves as a Scout Leader, and is active in other extracurricular activities such as Debate Club. According to others, James has a “deeply-seated value for community, governance, and justice” and a “natural aptitude for leadership and teamwork.” His “pursuit of academic excellence has been resolute, consistent, and disciplined.”
Coca-Cola CCE Scholarship
Sarai Viveros
Loyola University
Chicago
Sarai Viveros, from Santa Ana, CA, is the daughter of Frida Viveros and employee of Gigi Horowitz, CCE, Fun Time Foods. She is the recipient of a $3,000 Coca-Cola CCE Scholarship and will be attending Loyola University Chicago to earn Dual Master’s Degrees in Social Work and Public Health. Sarai’s adventure in the Fair Industry started only six years ago. She shared, “My job at Mom’s Bakeshoppe was one of the first jobs I ever had!”
She has worked with them every Summer and Winter since, where she has developed a list of valuable skills. Sarai said, “The biggest skill I learned was customer service. I interacted with customers for only a few minutes, but I learned to make sure every interaction was positive and that we were left with a satisfied customer.” Due to the Fair’s fast-paced nature, she also had to learn to be quick on her feet and swiftly find solutions, even in tense situations: “That has helped me tremendously already in my work in the Healthcare field and will continue to help me in my future work.” After completing her dual degree programs at Loyola University, she plans on being a Healthcare Social Worker to help low-income and veteran populations navigate the healthcare system and ensure they receive the best care possible. She added, “I have always known I wanted to work in healthcare, but I was unsure what path would be impactful and allow me to focus on these certain populations. I volunteered, studied hard, and have taken every job as an opportunity to grow as a professional and prepare for my future career. All the skills that I apply to those situations began with my experience at the Fair.”
Sarai is active in her Church Choir and has participated in various programs to better her community over the years. She is said to be “always willing to take on new challenges and responsibilities,” a person of “integrity, compassion, and resilience,” and someone who demonstrates “exemplary leadership qualities, outstanding academic performance, and a genuine commitment to the community we serve.”
Hall of Fame Scholarship
Emma Rhoden
Emma Rhoden, from Dade City, FL, is the daughter of Jack and Misty Rhoden and is an employee of Lisa and Michael Chambers, American Food Service. She is receiving the $3,000 Hall of Fame Scholarship, in honor of Bill and Linda McKinney, CCE, and is attending Oklahoma State University to pursue a Bachelor’s Degree in Animal Science.
Emma was raised around showing Livestock at local and major Fairs from a young age, along with having a behind-the-scenes look into the Fair Industry by working for a Concession Business. She shared, “It has been an
invaluable opportunity for me! I have come to realize the significant impact of these skills on my life.” These skills include time management, public speaking, financial management, and knowing how to interact with a diverse range of customers. She added, “While the business aspect of the Fair Industry has equipped me with valuable skills, the livestock husbandry side of it has also educated me in more ways that I realize. Most importantly, throughout every aspect of the Fair Industry, I have learned how to effectively work with others.” Emma is studying Animal Science with the goal of becoming a Veterinarian. She said, “I’ve often been reminded that I like to ‘burn the candle from both ends’ and while it may get overwhelming or difficult at times, I was always raised to finish what I started. The NICA motto ‘Together We Can’ resonates with me, and I believe it takes collective effort to make any Event, Fair, or Livestock Show successful. I’ve made numerous connections in the Industry and aspire to embody this motto as I pursue my dream.”
Emma graduated in the top 5% in high school and has served on the Livestock Show Team and as an Agriculture Ambassador while in college. Emma is known as an “amazing woman” who is “hard-working, reliable, and responsible” and “meets challenges head on” with “strong leadership characteristics.”
Regional Councils’ Scholarship
Kylie Kastl
Arizona State University
Kylie Kastl, of Casa Grande, AZ, is the daughter of Frank and Kay Kastl, Kastl Amusements. She is the recipient of the $3,000 Regional Councils’ Scholarship and is continuing her education at Arizona State University to pursue a Bachelor of Science Degree in Aerospace Engineering and Astronautics.
Kylie grew up in the Fair Industry, spending her entire childhood “surrounded by Carnival Rides and an ever-changing setting that revolves like a Carousel.” She added, “My life on the Carnival made me into who I am today; without it, I would have never developed the qualities that made me motivated and successful.” Although she mostly works as a Social Media and PR Manager for the Family Business, she also has her hand in their Ride Operations. Kylie said, “By combining my experience as a manager and my continued management of the social media accounts for Kastl Amusements, I have developed a diverse skill set that encompasses leadership, customer service, technical knowledge, and marketing expertise. These qualities, nurtured from a young age in a unique and unpredictable environment, have shaped me into a motivated and successful individual ready to excel in my future endeavors. All of which is a direct result of my involvement in the Fair and Concession Industry.” Kylie is working hard towards her future as an Aerospace Engineer at NASA, SpaceX, or Space Force. She said, “I want to love what I do every day by using my problem-solving skills and my natural talent for working with my hands in my projects. While working in the Fair and Concessions Industry alongside my family, I have acquired valuable practical skills and firsthand experience, which I aim to leverage as a future Engineer. I want to be a part of the future!”
Kylie graduated high school as the Salutatorian, and has been on the Dean’s List and served in Student Government, among other activities, while in college. She is described by others as a “natural leader” who approaches challenges with a “problem-solving mindset” and is “consistently demonstrating great leadership and responsibility.”
Leadership Scholarship
Ashton Coffman
Brigham Young University
Ashton Coffman, from Wabash, IN, is the son of Jared and Marie Coffman and grandson of Sam Coffman, Coffman Concessions. He is receiving the $3,000 Leadership Scholarship and is beginning his education at Brigham Young University for a Bachelor’s in Business Management.
Ashton started his journey in the Fair Industry and the Concession Business at the age of eight. He admitted, “My personal involvement has been extensive!” From interacting with customers and handling transactions to managing inventory and ensuring food safety standards, over the years he’s gained a comprehensive understanding of the details of running a successful Concession Business. He shared, “It has been an invaluable experience that has greatly shaped my work ethic, honed my salesmanship abilities, and equipped me with the skills to survive in high-stress, fast-paced environments.” This experience will be useful with his future career in Business Management. He explained, “I aim to secure a position as a high-level manager, where I can utilize my education and leadership abilities effectively. My long-term career ambition is to become a CEO, leading a company towards innovation and success.” Ashton still cherishes what his upbringing contributed to his education. He reflected, “Overall, my journey as a Concessionaire has not only provided me with practical skills and knowledge, but it has also given me a passion for delivering exceptional service and exceeding expectations. I am confident that the lessons I’ve learned will continue to guide me toward success.”
While in high school, Ashton was active in sports and numerous extracurricular groups. According to others, he is a “bright personality” who “stands out amongst his classmates” and demonstrates an “exceptional level of commitment and professionalism in all aspects of his work.”
Berk Brands Visionary Scholarship Megan Miley
Megan Miley, out of Leesport, PA, is the daughter of Edward and Georgine Miley, Mrs. T’s Pierogies, and is the recipient of a $2,000 Berk Brands Visionary Scholarship. She will be entering her Junior year at Alvernia University to receive a Bachelor’s Degree in Forensic Science.
Megan has been in the Fair Industry from a young age, learning a variety of useful skills such as attention to detail, working on a team, being aware of her surroundings, and leadership. She explained, “As the daughter of someone in the Frozen Food Industry, I have been to many Fairs and helped to run many Concession Stands. I have learned a lot about how the Fair Industry and Concession Business runs from being around them for so long.” Megan hopes to one day work as a Forensic Investigator or Analyst for the FBI. She plans on applying the valuable lessons she has learned
to her future career: “In my career choice I would need to be extra careful and aware of my surroundings, as to not tamper with any evidence or disturb the crime scene before it has been fully processed. I have also learned that doing things as a team makes tasks so much easier and quicker. It takes many people to process and analyze a crime scene, so ‘teamwork makes the dream work’ in such scenarios.”
In college, Megan has been active both on the Lacrosse Team and as a High School Lacrosse Coach while continuing each year to volunteer at her local Harvest Moon Festival. She has been defined as an “exceptional individual” who is “very engaging, responsible, and personable” and has an “insatiable thirst for knowledge and a remarkable work ethic.”
What are Named Scholarships?
You may have noticed our Named Tier of Visionary Scholarships. This category of Named Scholarships allow individuals or companies to create a scholarship fund with a specific name, often associated with the donor’s company or in honor of a person or group they wish to recognize. Donors have the opportunity to establish a scholarship fund by committing to donate $2,000 annually for a period of three years. This commitment reflects a desire to support education and empower deserving students. Named Scholarships not only provide financial aid to students but also leave a lasting legacy for the donor or the person being honored.

Alys Huffman Visionary Scholarship

Lauren Distad, of Roseville, MN and daughter of Diane Holmgren and Rick Distad, is an employee of Stacey Pittroff-Barona, CCE, Giant Ride
She is the recipient of a $2,000 Alys Huffman Visionary Scholarship and is currently attending George Mason University to earn her Bachelor of Science Degree in Biology, with a Minor in Data Analytics on a Pre-Med track. She started her career in the Fair Industry with the Giant Slide at the Minnesota State Fair in 2017. She shared, “It was one of my first real jobs and I began to learn a lot as I started to get older! After a few years working at the Giant Slide, I was shifted to work at their Lemonade and Cheese-On-A-Stick. Working in the Fair Industry has taught me how to work with a team of diverse individuals, communicate appropriately with others, and even to stick up for myself and handle situations with grace. Having this experience gave me the confidence to believe in myself and to trust my ambitions.” Once she graduates, Lauren plans on attending Medical School to become a Pediatric Physician, utilizing skills she learned on the Fairgrounds. She shared, “Growing up and developing myself as a person through the Fair Industry has allowed me to translate professional skills into my everyday life at school as well as in my future profession. I have my job at the Lemonade Stand to thank for the skills I will be utilizing every day.”
At George Mason University, Lauren is on the Division 1 Women’s Lacrosse Team and the Student Athlete Advisory Committee, and is a volunteer in her local community. Others have said that Lauren “holds all the great characteristics of a leader” and “works hard to maintain high standards and success.” She “exhibits a level of dedication and ambition that exceeds that of her peers.”
Hummel Group Visionary Scholarship
Kennedy Tutak
Hamline University
Kennedy Tutak, from Faribault, MN, is the daughter of Chancy and Kelly Tutak, and granddaughter of Brad Schroder, Schroder Concessions, Inc. She is receiving the $2,000 Hummel Group Visionary Scholarship and will be continuing her undergraduate education at Hamline University. She plans to earn a Bachelor’s Degree in Neuroscience.
Kennedy has been in the Concession Business since she was “young enough to remember.” She shared, “My involvement in the Fair Industry has always been a fact of life. This is inevitable since my grandparents own a Concession Stand!” Although she was first interested due to her love of Corn Dogs, Cotton Candy, and her family, her involvement “evolved with age” and she started working as a teenager. Kennedy has learned many valuable lessons as a result, including communication, teamwork, problem solving, flexibility, and time management. She explained, “When working in a Food Stand, you have a team of people and need to learn how to work with and coordinate with them to make the stand run
as efficiently as possible.” After graduation, Kennedy plans to obtain her PhD before going into research or possibly becoming a professor. She stated, “The lessons I’ve learned while working in the Fair Industry have helped better prepare me for my desired career in research. I have no doubt that I will continue to strengthen these skills in the future as I continue to work in the Fair Industry and go further into my field.”

McConnell Family Visionary Scholarship

Josephine DiPaola, of Kingston, NY, is the daughter of Mario DiPaola, and employee and niece of Vincent Nelson, CCE, Vinnie’s Fine Foods. She is the recipient of a $2,000 McConnell Family Visionary Scholarship and is attending Siena College to earn her Bachelor’s in Adolescent Education.
Josephine has been involved in the Fair Industry her entire life as a Fourth Generation Concessionaire. She shared, “I would spend most of my Summers at Fairs in the Concession Stand working with my Uncle and Grandmother. When I was really young one of my first memories is handing out water at the Ulster County Fair.” After earning her degree, Josephine’s dream is to enter the education field as an Adolescent Math Teacher. She related, “You might be asking yourself right now, ‘Why would you want to be a teacher?’ The answer for me is passion. I truly believe that if we can teach the younger generation math, they can do anything!” She credits reaching her goals to her experience at the Fair. She said, “As anyone in this Industry, I learned the value of hard work very fast and use it in my everyday life. A degree can only get me so far—it’s my work ethic that will make me successful. I have always been able to adapt and not allow my circumstances to get in the way of me becoming a teacher. This is something I learned from growing up in the Fair Industry, and something I will continue doing for the rest of my education.”

Mellowship Entertainment Visionary Carmela Palmieri
Carmela Palmieri, from Phoenix, AZ, is the daughter of Dominic Palmieri, CCE and Kim Palmieri of Odyssey Foods, LLC, and is receiving a Mellowship Entertainment Visionary Scholarship for $2,000. She will be continuing her education at Bastyr University to earn a Doctorate in Naturopathic Medicine. Carmela was raised in the Fair Industry and has been working in her parents’ Concession Stands as a manager at nine Food Stands throughout school. She shared, “My personal involvement in the Concessions Business and Fair Industry has been a constant learning and growth experience. I am the person I am today and carry the values that I do because of what
I have learned in this business. During my career as a student, I have always worked part-time in the Concessions Business for my parents. This was no easy task juggling school and work, but when it came to helping out my family, I was always there! It has taught me so many lessons, values, and instilled in me many personal traits.” Carmela is continuing her post-graduate education to become a Naturopathic Doctor. She said, “My journey to become a doctor has been fueled by my passion for the holistic medical approach, my persistent work ethic, and my desire to serve my community. I have seen firsthand what it means to be an Industry changer from my family, and I hope to continue this legacy in my career as a doctor.”
While completing her degree, Carmela has served as a member of Alpha Chi Omega, both President and Treasurer of Italian Club, and most recently with Medical School Clubs. Others noted that she is “committed to excellence,” has “unwavering work ethic,” and demonstrates “admirable leadership skills.”

Eva Tutak, from Faribault, MN, is the daughter of Chancy and Kelly Tutak, and granddaughter of Brad Schroder, Schroder Concessions, Inc. She is the recipient of the $2,000 Pittroff and Barona Family Visionary Scholarship and is attending University of Minnesota Twin-Cities to pursue a Bachelor of Science Degree in Health and Wellness.
Eva has worked at a Concession Business for the last nine years for her Grandfather, shaping who she is today. She said, “While working you will usually see me up front talking to the customers and completing orders. I have learned from the Concession Business that hard work pays off! The Concession Business has also taught me resilience, patience, and diligence in everything that I do. A problem may present itself and your response to it determines the result of the situation.” Additional skills that Eva picked up include problem solving, communication, and perseverance. According to her, they will prove valuable in her future goal as a Physician Assistant in Dermatology: “These skills are essential in achieving my goal! In my academic journey, I have always had a clear goal set for myself and have been able to achieve it. All of the important traits I have developed are from working for my Grandfather for so many years!”
While in high school, Eva was a member of National Honor Society, Students Against Destructive Decisions, and many other student and community organizations. Eva is known to demonstrate “a level of resilience, curiosity, and openness to learning that far exceeds what many students bring to their education,” and her contribution to her classes is highlighted as “invigorating and illuminating.”

Trevor Molnar, of Yucaipa, CA, is the son of Bryan and Charity Molnar and nephew of NICA Member Amber Coleman, Dee’s Concessions. He is receiving a $2,000 Norma Jean and Edgar Sivori Visionary Scholarship and will be attending Pepperdine University for a Bachelor’s Degree in Sports Medicine and Pre-Med.
Trevor yearns for the Summertime, when he gets to spend time at the Fair. He shared, “Growing up, my family would shuttle my siblings and me in the car and make the three hour drive to visit my Great-Grandmother Dee Coleman every week at the Del Mar Fair.” As the years went on, it was finally his time to work: “When I visited the Fair each Summer, I begged to work at the counter for my stay or to at least roast the Corn. When I turned 14, it was time for me to stay with my Aunt and Uncle and work each day. Each Summer I grew in my knowledge of the Fair, our family’s past, and other Fair Concessionaires.” He now works as a manager, and his time at the Fair has taught him “endless lessons”
about customer service, leadership expectations, and how to handle stressful moments. He values the “relationships between Concessionaires and the relationships that grow within each business” the most. After Trevor graduates, he plans to enter Medical School and focus on Trauma Surgery. He related, “All of the lessons I have learned during my time at the Fair has led me to enrich my knowledge in many areas that will apply to my future in the medical field.”
Outside of his studies, he is actively involved with volunteer and service opportunities in his neighboring communities. Others have said that Trevor is a “remarkable individual” with a “genuine heart” whose “work ethic and dedication to his goals set him apart from other students.”
Entrepreneurial Scholarships
Ella Brick
Fordham University
Ella Brick, from Rhinebeck, NY, is the daughter of Jeffrey Brick, Universal Concessions. She is the recipient of a $1,000 Entrepreneurial Scholarship and will be attending Fordham University for a Bachelor’s in Finance.
According to Ella, she has been involved in Fairs since she was born. She shared, “I began working for my Dad when I was little, but I started actually ‘working’ the day I turned fourteen. This is a business that I grew up working for, spending my Summers at Fairs. I have learned so much in terms of people skills and I think that will be applicable for a career in Finance where you’re communicating and working with other people. I also learned how to manage money, so that will be extremely useful as well!” Ella intends to major in Finance and pursue Investment Banking as her eventual career. She explained, “I see myself working at a company like Goldman Sachs or JP Morgan, and eventually opening my own company. I have always wanted to learn more about investing and the economy. I definitely have the entrepreneurial gene from my Dad and I intend to use what I have learned from the Fair Business to succeed in life.”
While in high school, Ella graduated Summa Cum Laude and was on the Varsity Golf and Track and Field Teams, served as a Student Council Secretary and a Hunter Mountain Ski Racer, and was an active member of the Art Club and National Honor Society. Ella is defined as a “well-rounded individual” who is “reliable, hardworking, kind, and thoughtful” and serves as a “role model for other students and youngsters.”
Chloe Cockerham
Arizona State University
Chloe Cockerham, out of Chandler, AZ, is the daughter of Mark Cockerham and employee of Sherry Brown, Danny Brown Amusements. She is receiving a $1,000 Entrepreneurial Scholarship and will be attending Arizona State University to obtain a Bachelor of Arts in Global Studies. Chloe comes from a long line of people in the Concessions and Fair Industry through both sides of her family, opening up her eyes to the diverse qualities of those around her. She shared, “I have been able to witness and work with people from all areas of the world! Being able to meet these people and understand their cultures has provided an opportunity to learn and properly respect their culture and politics. Having witnessed other cultural activities that people at the
Fair do, along with other employees, I have already provided myself with the knowledge needed for the future.“ Although she is pursuing a Bachelor’s in Global Studies, her long-term goal is to be a Lawyer, specializing in Sport and Entertainment Law: “I want to be able to understand and practice all areas of Law needed within the Carnival Business, too. I know that there will always be a part of me that will not leave the business, so I will always actively help my family and others in the Industry, especially in instances that involve other cultures and backgrounds.”
Chloe has participated in many nonprofit organizations, as well as volunteering for local schools, while in college. She is known as an “outstanding young leader” and “hard worker” who shows “remarkable talent” while staying “passionate about her work.”
Jade Elomina
Florida State University
Jade Elomina, from Hillsdale, MI, is the daughter of Holly Elomina and granddaughter of Tom Hodson, CCE, The Thomas Hodson Company. She is receiving a $1,000 Entrepreneurial Scholarship and will be attending Florida State University to pursue a Bachelor’s in Criminology and Criminal Justice.
When Jade was little, she would visit her grandfather over the Summer with her mother when he was out on the road. She shared, “The sense of pride my Grandfather had in his product, the cleanliness of his trailers and stands and his work ethic was something I admired very much and continue to admire to this day. I loved watching him work in the stands and would always beg him to let me help him, even though I could barely see over the counter.” She also loved the sense of family that she experienced: “My Mother always loved to get back up there and see the kids she grew up with every Summer when she worked with my Grandfather. She was always so proud to show my Brother and me around and introduce us to everyone she grew up with on the road.” She plans on majoring in Criminology and either Minoring or Double Majoring in Psychology. She said, “I believe that whatever my chosen path is with Criminology, I will have a very strong work ethic, be the best I can be, and always take pride in my work. My Grandfather taught my Mom and Uncle these important lessons and traits and they have definitely resonated with my Brother and me.”
While in college, Jade has been active in the Phi Theta Kappa Honor Society, Criminal Justice Club, and community service organizations. To those who know her, she is as an “amazing young woman” and “excellent student,” who has an “innate brightness that illuminates every task she undertakes.”
Gavin Glushakow
Gavin Glushakow, of Hebron, MD, is the son of Andrew and Christy Glushakow, Phat Boyz Catering. He is the recipient of a $1,000 Entrepreneurial Scholarship and will be on his way to earning a Bachelor’s in Pre-Med at Pennsylvania State University. For Gavin, growing up with both of his parents being in the Concession Business and Fair Industry been a “pivotal part” of his life: “It has helped create the individual that I am today!” He has always helped with the Family Food Stand at many different Fairs, Festivals, and Catering Events, which has allowed him to be in open communication with others in both positive or negative situations. He shared, “I have been able to grasp problem-solving abilities along with perseverance, time management, multi-tasking, health and safety awareness, and many other life skills. These lessons that I have learned help me in every aspect in my life, whether it’s in the sports that I am playing, in the classroom, or having a dayto-day conversation. I will use all of the qualities that I have learned in college to help me excel in all of my classes and be the best student that I can be.” After he graduates, his plans will take him to Medical School Pennsylvania State University
and eventually to the nation’s top hospitals: “I have honed my skills and developed a clear vision of how I can contribute to this field with the leadership skills that I have acquired from helping the Concession Business.”
While in high school, Gavin was active in National Honors Society, Mu Alpha Theta, and was both the MVP and Team Captain of Track and Field. He has been described as a “natural leader” who possesses “energy and focus unparalleled in other young persons his age” and is “always trying to do the right thing.”
Tate Hinkemeyer
Northeastern University
Tate Hinkemeyer, from Inver Grove Heights, MN, is the son of David and Kelly Hinkemeyer, and grandson of Mary Wagner, Treat Truck, Inc. He is receiving a $1,000 Entrepreneurial Scholarship and he will continue his work towards earning a Bachelor’s in Criminal Justice and International Affairs at Northeastern University.
Tate has grown up in the business, working at the Minnesota State and County Fairs as long as he can remember. He shared, “Being in the Concession Industry runs in my family, as my Grandmother began by selling Concessions with the Treat Truck many years ago. Her enthusiasm for making people happy was passed on to my Mother, who then gave it to me. I love interacting with the customers, getting to know them, and seeing the joy on their faces when they’re handed their Dippin’ Dots, even though the days can sometimes get stressful and hectic. It’s been a great experience that taught me life skills like the value of money and how to interact with a wide variety of customers.” Tate will apply his Fair experience to his future career as a Lawyer. He said, “To fulfill my desire to help people, I believe that working in the Concession sector has positioned me for success in the legal profession. I will continue to work to ensure that everyone receives the joy in life they deserve, whether at a Fair or in a Courtroom.”
While in college, Tate has been a member of Phi Alpha Delta and participates in charitable programs that send books to prisoners all over the country. According to others, he is an “extraordinary young man” who is “brimming with potential” and will “take on any role.”
Kalista Kastl
Arizona State University
Kalista Kastl, of Casa Grande, AZ, is the daughter of Frank and Kay Kastl, Kastl Amusements. She is the recipient of a $1,000 Entrepreneurial Scholarship and is continuing her education at Arizona State University to pursue a Bachelor of Science Degree in Business Management.
Kalista was raised in the Industry and works for her family in the Concession Business each Summer. She recalled, “Through this experience I have learned to be friendly and efficient, making sure customers were happy even when we were super busy. This taught me how to handle people well, which is important in any business. I also learned how important it is to work with others, since we had to communicate and support each other to keep things running smoothly. This showed me how important teamwork is! I also experienced what it is like to run a Concession Stand, completing tasks like managing inventory and setting prices, which gave me a basic understanding of how businesses operate.” Her time in the Fair Industry directly influenced Kalista’s career goal to become a successful leader in Business Management: “I aim to work for a company where I can use my skills in planning, leadership, and organization to help the business grow.”
While earning her degree, Kalista has been a member of community service groups including the Alpha Delta Pi Sorority and Ski and Snowboard Club, while volunteering as a tutor for ICAN. Others have been impressed by her “dedication and enthusiasm” and have said she is a “remarkable individual” who has the “qualities and drive needed to succeed.”
Gage Morgenstern
Southern Illinois University
Gage Morgenstern, from DuQuoin, IL, is the son of Douglas and Marsha Morgenstern, Fare Foods, and is receiving a $1,000 Entrepreneurial Scholarship. He will be attending Southern Illinois University as a Senior, working towards his Bachelor’s Degree in Business Economics.
As long as he can recall, Gage has been attending his local Du Quoin State Fair. He shared. “There is a sense of pride I can feel from seeing my hometown and its Fairgrounds be put to such a beneficial use during the Summertime months, when everyone comes together with the common goal of making sure everyone has a good time. I have seen firsthand the hard work, dedication, work ethic, and all of the moving parts that must fit together perfectly to keep a Fair Operation running smoothly and in a timely manner to satisfy the Fairgoers.” His personal involvement and the things he has learned in the Concession Business and the Fair Industry mainly come from traits passed down from his father: “He works at Fare Foods, which has contributed to many Fairs nationwide by providing their delivery services.” Gage is on his way to finishing his Business Economics Degree, which will assist him either in earning his MBA or directly in the business field. He eventually would like to become a business owner himself. He added, “These traits I learned from the Fair are all attributes that can be used in my future once I have graduated college.”
Gage graduated high school as the Salutatorian and has been an active volunteer in his community. He is known by others as an “exceptional student,” a “true joy,” and someone whose achievements are a result of his “academic drive” and “commitment and dedication.”
Lilly Underberg
Oklahoma State University
Lilly Underberg is from Springville, NY and is the daughter of Mark and Jessica Underberg, CFE, Erie County Fair. She is the recipient of a $1,000 Entrepreneurial Scholarship and is continuing her education at Oklahoma State University where she will earn a Bachelor’s in Agriculture Education. Lilly has worked in different aspects of the Fair Industry since she was young, including the Concessions Department, Agriculture Discovery Center, and the Agriculture Department at the Erie County Fair. She said, “While working at the Fair I have learned many lessons such as having great communication and teamwork skills. I also have learned how to have data analysis and adaptability skills.” She has been showing Livestock since she was eight, which directly led to her love of educating others: “These experiences not only deepened my connection to the community, but also reinforced my belief in the importance of giving back.” When Lilly graduates, she plans on using her experience to become an Agriculture Educator at a high school with a great agricultural program: “When it comes to agriculture, many people are just not educated on many of the topics involved. This is where I found my passion for educating the next generations. All of these lessons will help me with teaching my students and trying to run a great classroom environment.” While in college, Lilly has been active on their Livestock Show Team, in the President’s Leadership Class, and within groups such as the Aggie Club, Phi Theta Kappa, Oklahoma Collegiate Cattlewomen, and Agriculture Ambassadors. She is known for her “integrity, ethics, and shiny personality,” and as a “natural leader, a compassionate individual, and a relentless advocate for the causes she believes in.”
Inspirational Scholarships
Dylan Bohannon
Central Washington University
Dylan Bohannon, of Camas, WA, is the son of Crystal and Jay Bohannon, Camas Concessions. He is receiving a $500 Inspirational Scholarship and will be attending Central Washington University as a Sophomore, pursuing his Bachelor’s Degree in Political Science.
During Dylan’s time working as a Concessionaire and a “breaker” within his family’s stand, his leadership abilities progressed to a high level. He shared, “I was able to successfully direct and command people who were older, stronger, faster, or even who I disagreed with, while still managing to be empathetic and kind. I was able to listen to the concerns and opinions of my employees, coworkers, and superiors alike.” After graduation, he is planning for a career in politics, where he believes his “fundamental skills will translate perfectly.” Dylan explained, “With leadership, empathy, and dedication, I am certain that I will be an excellent representative of the blue-collared and hard-working people of this nation for our government. I wish, above all, to measurably improve the lives of as many Americans as possible by working within our government to improve and repair it from the inside.”
While in high school, Dylan was active in sports such as Baseball, Football, and Wrestling, as well as A Cappella and Choir. He is known by others an “exceptional young man” and a “fast learner,” whose “passion for the Amusement Industry is truly inspiring.”
Gracie Hunter
Ivy Tech Community College
Gracie Hunter, of Anderson, IN, is the daughter of Mark Hunter and Kristi Worm-Hunter, Indiana Ribeye, and is the recipient of a $500 Inspirational Scholarship. She will be attending Ivy Tech Community College to earn an Associate’s Degree, studying Dental Hygiene.
Gracie has been active in the Concession Business ever since she was younger, influencing the person she is today. She related, “My experiences with the Concession Stands and the Fair Industry have helped me build a lot of my character as a person, and it will help me in my future career path as well. I have met many different people of many cultures and languages because of this, and it has helped me become a better leader and take charge.” After she earns her degree, she will dedicate her time to advancing in the world of Dentistry: “I am currently a Dental Assistant, but my goal has always been to become a Dental Hygienist. I will be able to take the skills that I learned in the Fair Industry, such as working hard, dealing with customers, and overcoming challenges, to help me get there.”
Gracie was homeschooled during high school, focusing on the Family Business and her local missionary work, volunteering for her neighborhood paper, and donating her time to charitable causes. She is known to have a “positive personality,” a “sound character,” and a “great sense of ambition.”
Gianna Palmieri
Gianna Palmieri, from Phoenix, AZ, is the daughter of Dominic Palmieri, CCE and Kim Palmieri of Odyssey Foods, LLC, and is receiving a $500 Inspirational Scholarship. She will be starting her first year at Southern Methodist University for a Bachelor of Arts Degree in Advertising.
At only seven years old, Gianna was already working in one of her family’s Food Concession Stands. She said, “I bagged piping buttery hot Popcorn and made countless flavorful Snow Cones that every kid dreamed of having.“ Since then, she has grown to manage hundreds of employees across eight different stands: “Being part of a large workforce for so many years has taught me a lot about different people and how we converge our ideas, how we live our lives, how we perceive work ethics, and actually how different we all are. I now realize that I have had that sense since I was seven.” With Advertising, Gianna hopes to create networks that she can rely on in her future. She explained, “I will be a part of something bigger that will foster ideas, talents, and relationships that can make a difference!”
While in high school, Gianna was an active member of the Computer Science Honor Society, Key Club, and Ski Committee. She is described as an “exceptional and dedicated student” who is “self-motivated,” having “learned the responsibilities of work at a young age.”
Harley Pickett
Harley Pickett, of Phoenix, AZ, is the daughter of Benjamin and Joy Pickett of Trinity Concessions. She is the recipient of a $500 Inspirational Scholarship and will be attending Southern Methodist University for a Bachelor’s in Entrepreneurship, with a Minor in Psychology.
Harley’s journey in the Concession Business and the Fair Industry has been “hands-on” her whole life, from managing her own Food Stands to assisting her Mom with hers throughout the season. Harley added, “This past year I have also had the opportunity to work alongside my Dad on Rides
and further extend my knowledge.” Through this experience, she has honed invaluable skills such as time management, customer service, work ethic, adaptability, problem-solving, maintaining quality control, leveraging technology, and effectively leading her team. She said, “I have developed a profound appreciation for the unique blend of skills and experiences that this field cultivates.” After school, she plans on pursuing a career in the Fair Industry: “Studying entrepreneurship is giving me insight into the Industry and how to be successful Showperson. I am committed to further my education, pursue my professional aspirations, and make meaningful contributions to the Fair Industry and beyond.”
Harley has been active in Advertising and Business Clubs while in college, volunteers with local organizations, and is certified as a Dive Master and Lifeguard. She is described as a “delightful young lady” who is “passionate about the Industry” and shows “maturity and professionalism beyond her years.”
Sophia Pulaski
Brandeis University
Sophia Pulaski, hailing from West Linn, OR, is the daughter of Alex and Mica Pulaski, La Familia Mexican Food, and is the recipient of a $500 Inspirational Scholarship. She will be continuing her education at Brandeis University for a Double Major in Business Administration and Economics. Sophia has many fond memories of growing up in the Fair Business. She recalled, “I would watch my parents and older siblings work while I played on my Mom’s phone in the trailer. As I grew older and could handle more responsibility, I was slowly integrated to the front of the booth where I began as a helper, handing out sodas and food. I eventually progressed to a lead cashier and began helping my Mom with anything she needed, from cooking to looking at financial statements. Although it is a grueling and tiring business, it has taught me the value of hard work, good customer relations, cooperation, and leadership.” Sophia intends on building her own business once she graduates: “I’ll use the skills I learned in the booth in the working world!”
In college, Sophia stays active on the Swim and Dive Team and serves her community as a member of Hands Helping Hands. She is praised as a “dedicated and diligent student” who is “very professional,” a “great ambassador for the Fair Industry,” and a “leader amongst her peers.”
Gage Smith
University of Dubuque
Gage Smith, out of Stratford, IA, is the son of Chad and Liz Smith, Smith’s. He is receiving a $500 Inspirational Scholarship and will be attending the University of Dubuque to earn a Bachelor’s Degree in Flight Operations.
Gage was born into the Industry, and has enjoyed it ever since. He shared, “At just two days old, I was sitting on the counter of our Food Stand while my family was hard at work. This is the life I have always had, whether I liked it or not! Over the past seventeen years, I have experienced firsthand the trials and tribulations of the Carnival and Concession Industries, from running an Ice Cream Cart with my older sister and now helping run my family’s Food Stand at the Iowa State Fair to experiencing my grandparents’ retirement from owning a Carnival. Many of the experiences I have gone through have helped change me as a person for the better, by helping grow my leadership, communication, and citizenship skills along the way.” Although he plans on being a Commercial Airline Pilot, he would like to eventually take over his family’s Concession Business. Gage said, “I am blessed beyond words to have grown up in this family and I am proud to call this Industry a way of life.”
Throughout high school, Gage has been an active member of his local FFA chapter, served as President of the 4-H Club, and played Golf, all while giving back to his community. Others have said he is a “dedicated Concessionaire” who is “selfless” and displays “characteristics of being a great leader.” ▲

Having successfully completed LA County Fair, San Diego County Fair, and opened OC Fair, the West Council wanted to once again gather to celebrate and enjoy each other’s company, echoing OC Fair’s theme for 2024: “Always a Good Time!” West Council Members Brandy Arredondo, CCE, Gigi Horowitz, CCE, Ryan Long, CCE, and Albert Valadez organized the event to take place bright and early on Thursday, August 8th at Chuckwagon According to Gigi, “It was a great success!”
Attendees of the gathering were treated to warm greetings from OC Fair Staff and NICA Leadership, learned about the upcoming NICA Marketplace “Together!” event, updates, and benefits, enjoyed a delicious breakfast, handed out door prizes, and honored Drew Ammerman, Sysco, and his team at Sysco-Riverside, led by President Saul Adelsberg, for their longtime, professional, and dependable service as Food and Beverage Suppliers to OC Fair Concessionaires. Dominic Palmieri, CCE, Past President, shared,
“It is magnificent when an organization has the opportunity to celebrate our Suppliers and Business Partners that always help to make our lives easier and help us to be better at what we do. Drew has been a champion for us for years and it was nice to finally thank him and Sysco for their service!”
