PRESIDENT’S MESSAGE Kim Barr, CCE, President With NICA Marketplace “Together!” completed, we are excited to report a successful convention with over 45 (yes, 45!) Fairs from all across the United States attending this year, along with many Commercial Exhibitors and Concessionaires. “Together We Can and We Did!” come together and learn from each other. That is what this Industry does best! Learning from each other teaches us different dynamics of this Great Industry. Our Next Generation did an amazing job of Selfie Stations, new to our Marketplace this year. We are so happy to have them onboard to expand our horizons.

We had Jim Teece, Jackson County Fair Board Member and President/CEO of software company Project A, speak at our Opening General Session, as well as Mike Bradley, MHB Productions, and Gene Cassidy, CFE, The Big E, at our Closing General Session. All wonderful topics! NICA awards CCEs, Certified Concessionaire Executives, at almost every convention we hold. This award is only given to those members who fill out the application and have enough points to qualify for this important award. It is about what we do for our Industry as well as our Community! This year, we awarded seven well-deserved CCEs—our largest group at one time! Our Sessions and Workshops were at their fullest again this year. Many topics such as DOT, Safety, Technology, Guest Experience, Pricing, Commercial Exhibits, and many more! Our Roundtable Discussions are always a favorite, too.

So much to share and talk about!

I hope you all had a wonderful Thanksgiving with Family and Friends. I know we did! Alan and I celebrated our 30th Anniversary in Barbados before coming home to have family over for Thanksgiving. I am so very thankful for my Husband, Kids, and Grandkids! Our family is a tad spread out over the Western US, so our Dinner was small this year. Having Turkey fixed by my sweet Hubby is always amazingly good! Ham, Green Beans, Sweet Potato, Homemade Cranberry Sauce, Rolls, and wonderful Pies. I love it when we go

Together We Did It! around the room and express what we are thankful for, and as always, our Thanksgiving prayer!

Immediately after Thanksgiving, we headed out to the IAFE Convention to witness Marla Calico’s last convention before retirement. She has been a huge support to us, along with IAFE as a wonderful sister organization. We work together well! We are always excited to attend their many sessions and their Trade Show. IAFE is where we also have an in-person Board Meeting, and a wonderful Advisory Committee Luncheon with other Fair Managers, having great conversations together.

When we returned home from IAFE, we put up the Christmas tree to get ready for Christmas. Al and I are super excited this year to Celebrate not only the Gift of Christ, but with our Family, too. Can you believe it, our Grandchildren are teenagers!

Adan is 17 and graduating next May, Kylin is 15, and Hailee is 14. Blake is also 14, while Laci is 7, and Lo is 5. We will be surprising the four older ones with what Papa and I call our last HOORAH before they get jobs, Girlfriends/Boyfriends, and we are what we would say Chopped Liver!

(NOT REALLY.) We will surprise them with a trip together with the two of us, and we will leave later this month on a cruise to Belize; Cozumel, Mexico; and Roatan, Honduras! We will return home in early January. We hope to make many more fun memories with them! We have been so blessed to have them work in the business with us and love, love, love how well they do it.

Wherever you may be during the Christmas Season, may you celebrate the Reason, and spend it with the ones you love and cherish. It’s truly not about the gifts, it’s more about the time we spend together with each other.

In February we will be having our Business Expo in Tampa, FL, close to where the NICA Office is located. The dates are February 10-12, 2025.

Fare Foods does a wonderful job of putting on this great event! During this time, I will be Passing the Gavel to the Incoming President.

Everyone have a wonderful December and I hope we ring in 2025 with Joy in our hearts as we start preparing for our 2025 Fair Season! ▲ December 2024 NICA News 5

‘Tis the season—the Holidays are now upon us!

I hope this last year was as successful or more so than your 2023 season. Like many others, my season has ended for the 2024 year. While some of us are taking a well-deserved rest after 6-9 months of State and County Fairs, Festivals, Sporting Events, Rodeos, Concerts, and other special and seasonal events, others are very busy working their holiday events. Holidays are special to me and my family.

It gives us time to interact with one another, sit side by side at those delicious meals we think about, and those kids and grandkids; they sure grow up in a blink of an eye.

This season gives me time to evaluate the past year and think and plan for the upcoming ones. Now is the time to look over our blue benefit booklet to refresh our minds on what NICA has to offer its members. See what you could have used, but didn’t, and resolve to remember to use them in 2025. Whether it is Electrical Supplies, Auto Parts, RV Supplies, Restaurant and Concessions Equipment, Graphics, New Vehicles, or Tires on your existing vehicles, stretch those dollars as far as possible to still stay afloat in the new year.

I want to take this time to mention one important benefit that is as old as NICA itself; one that many of us don’t even realize or utilize to its fullest extent and is free: camaraderie, friendship, and networking! I have utilized it more than any other benefit and feel it is one of, if not the most important, benefit NICA has to offer.

Topics included DOT Safety, Locating and Training Temporary Labor, What’s New at the Point of Sale, Staying Organized on the Road, Laying Out the Fair Space, ServSafe Certification, Understanding Vendors Are Your Customers, Chasing Profits, Moving Equipment, Knowing When Legal Help is Needed, Too Much or Too Little Insurance, and Being Commercially Relevant in a Changing World. I’d also like to mention that 45 Fairs were in attendance this year! Being able to interact one on one with your Fair or a potential Fair was beneficial to both parties.

If you weren’t there, YOU MISSED IT! Don’t worry, NICA Marketplace will be back next year with even more for you to explore and learn. Save the Date for next year: November 10-13, 2025.

I want to wish each of you a Very Merry Christmas and Prosperous New Year. Oh, by the way, NICA Business Expo and Fare Foods Food Show will be February 10-12, 2025 in Tampa, FL at the Sheraton. And this year, it’s “Baaaaaack!” The Fare Foods hosted Super Bowl Party will return on Sunday, February 9th. Congratulations to the Ross Concessions Family We are pleased to report that AJ and Carolyn Ross, Ross Concessions, welcomed their daughter Eleanor Jean Ross last month on October 8, 2024 in Erie, PA. She weighed 6 lbs. 4 oz. and measured 18 3/4” in length. According to Grandparents Jeff and Kathy Ross, CCE, they are over the moon and can’t wait to spoil her! They added, “Mom and baby are doing well, and Eleanor’s first event was the North Florida Fair in Tallahassee, FL. Hall of Fame Nominations Extended Until January The NICA Hall of Fame award honors distinguished achievements and outstanding contributions by any individual to the health and well-being of NICA. This process is open to all NICA Members in good standing who have identified with NICA and the Fair and Event Industry for a minimum of ten years, and have supported NICA through leadership, education, legislation, technical service, and/or outstanding service to the associated industries and organizations serving the Fair and Event Industry. Member’s Voice Amy Powers, Sweet & Salty Concessions The greatest part of NICA is the membership!

The Member’s Voice influences where the organization is headed and what it can improve.

The NICA Office has been continuing their survey of responses from Renewing Members.

This season we spoke with NICA Member Amy Powers of Wilmington, NC. She has owned and operated Sweet and Salty Concessions with her family for close to 30 years, traveling a route up the East Coast. She first joined NICA in 1999, utilizes the Pepsi benefit regularly, and attends the NICA Business Expo and Fare Foods Food Show in Tampa, FL. As their name suggests, Amy’s business specializes in a variety of Fair Favorites: “We have three Concessions specializing in Funnel Cakes, Ice Cream, Popcorn, and Cotton Candy!”

According to Amy, she met her husband Ed all the way back in grade school, before eventually dating him in high school. Little did she know, he was Fourth Generation in the Fair Business with Powers Great American Midway. Amy shared, “After I went to college I had to make a choice!”

She is now a First Generation Concessionaire, herself, and is now raising the Fifth Generation: “I remember when I was young and I was all about eating healthy, so I had a great idea: ‘What about a soup, salad, and sub stand?’ My husband’s family looked at me like I had ten heads! I found out that most people come to the Fair to ‘pig out’ and eat food they couldn’t find anywhere else.

It’s true—that’s what pays the bills!”

Since then, many things have changed in the Industry. Amy said. “Prices have skyrocketed!

It’s hard for us to adjust our price to make up for what the Food Suppliers are charging us.” She has also seen her share of trends in that time: “Like they say, don’t change a good thing. That’s true!

I was the first to sell Deep Fried Oreos and the S’Mores Funnel Cake when we were with Powers Great American Midway. They were hits! In 2015, we started our own show, Powers and Thomas Midway Entertainment with my brother-in-law and sister-in-law, Ron and Tracy Thomas.” Despite these changes, Amy still loves seeing new people and the smiles on their faces at each event.

With the Next Generation getting older, Amy’s business has now started to pass the torch. She said, “This year we sold our Pizza Trailer to my son Shane and his girlfriend Alaina. I just wanted my son to have an opportunity. This season, one kid even said it was the best Pizza he ever had!

That made them feel good. My daughter Jordan graduated ECU and helps us as often as she can!”

I have thought about this and I am wondering if I can be said to have a philosophy. At 84 years old and with well over 40 years of experience in Concessions, I am set in my ways. While others are figuring out and adjusting their style, I have done, seen and experienced so much that there is no way I can even categorize even a small part of my experiences and ways of doing it. I am lucky in that I have a son, daughter-in-law, and grandkids who are still willing to listen to an old man. They let me have input and help direct, so in that way, I guess I do have a philosophy. But rather than being simply communication and management, it is teaching and passing on a lifetime of knowledge and experience to the next two generations.

Without them I would have been off the road years ago and unable to pass on my legacy. It can be said when you reach a certain age it is no longer a management style or philosophy; it is passing a legacy to the next generations and helping them avoid all the mistakes I have made by sharing my knowledge with them. (I know I am capped at so many words, but this is where being old is nice...

I get to go over that!)

Communication and Management in our Industry is truly different from any other Industry.

We are a multi-generation, multi-billion dollar Industry. If we are lucky and we did our job and communicated right, we get to pass on the torch to the next generation. In my case and in the case of many of us, we get to see that torch passed on yet again to the grandkids. If we stop communicating, we will not be able to do that. It took a long time for me to see that communication and simply talking are different. When we talk, we only pass information out, but we get feedback, and if we are lucky, we manage to learn a bit as well. No matter if I have been involved in NICA meetings, Fair Board meetings, or simply out back of the 12 December 2024 NICA News

booth chatting with Fair Managers, Employees, or the Next Generation, it’s a fine balance we need to have so that not only is the business running smoothly, but that the experiences and knowledge we pass from one generation to the next isn’t lost as well. For we are not just managing a business, we are managing, growing, and ultimately shaping a multi-generational legacy. ▲

Communication and Management are far from separate topics—they are one and the same for us. For too long, our Industry has been looked down on and we have been relegated to the simple description of “Carneys,” when we are the driving force behind a multi-billion dollar Industry that is at the forefront of events worldwide. And without communication, we let not only ourselves down, but the Industry as a whole.

Communication is such an integral part of my management style and the style we have used for over 45 years. It’s one that I learned from my father as well as the various groups and organizations I belong to past and present. Whether it is communication with Fair Boards, appearing on TV, training new staff, or daily meetings with

current staff and managers, running Concessions revolves around communication as much as it does logistics. It’s simply too easy to fall into a pattern of only looking at things from a single point of view (your own). If you incorporate communication, make sure it’s a two-way street.

If a Fair Manager needs or sees a way for you to improve to better fit their Fair or an Employee finds a new way to cut waste or improve upon a weak spot in your operation, they will feel not only comfortable coming to you, but you can evaluate their advice and act on it if it’s needed. ▲

My philosophy on Communication and Management is fairly simple and straightforward.

I am not good at public speaking, nor was I good at communication when I started in this business.

I quickly found that my voice, not only as an owner but as a woman in this Industry, is just as valuable and important as others. While working with my father-in-law and my husband at the same time,

it is easy to have that voice drowned out simply because it is not the loudest in the room. However, now I have found that by sticking to my guns and making them pay attention when I speak has had a dramatic effect on both of them and the business as a whole. I may speak less and quieter than the boys, but when I do speak they both stop and listen to me. This quiet and direct approach has also given me a voice with Fair Managers and Boards, as well as with my entire staff, who know (after I have drilled it into them) that a failure in communication is also a failure in every aspect of the business. ▲

Their biography and nomination statements are below, along with each Candidate’s answers to four important questions regarding challenges facing Concessionaires, their solutions to these challenges, and NICA’s future:

Michelle Allen, CCE

H&M Funnel Cake Express • Paradise, CA My name is Michelle Allen, CCE and I am a Third Generation Concessionaire.

In 2012, my husband and I decided to make Concessions our full time life, so we packed up our three daughters and moved from Utah to California to be part of our family business. We currently play approximately ten Fairs throughout CA. After falling in love with Concessions all over again, I chose to join NICA’s West Council in 2023. In 2024, I became the Ex-Officio for the West Council. I would like to continue to help Concessionaires, Commercial Exhibitors, and all the current and future NICA Members. I hope to be one of your next Board Members! “Together We Can!”

What is the most important challenge facing Concessionaires today?

I believe the single most important challenge facing the Concessionaires right now is inflation. We all want our prices to stay reasonable for our guests joining the Fair.

As a Board Member, how would you help overcome this challenge?

I believe we need to have better communication with Fairs and I am hoping to join in conversations that everyone can accept.

Where do you see NICA in five years?

I see NICA growing in the next five years. We currently are adding more and more Commercial Vendors and Fairs. My hope is to see the membership double.

What would you plan to help NICA get there?

My plan to implement this is to continue to share with others the benefits and amazing opportunities that NICA has for everyone.

Maverick Concepts • Escondido, CA My journey began with my first job at the San Diego County Fair when I was just seventeen. I hold a degree in economics from UCLA, and I believe the phrase “failing forward” best describes my experiences in this dynamic Industry.

With over twenty years in the Concession Business, I play Fairs on the West Coast and in the Midwest. I balance my professional life with a loving family, including my wife and three kids, who inspire me to continually grow and adapt.

What is the most important challenge facing Concessionaires today?

I believe the single most important challenge facing Concessionaires today is the convergence of rising food costs, labor shortages, and compliance issues, compounded by price increase fatigue among consumers. With the cost and availability of labor becoming increasingly unpredictable, many Concessionaires struggle to maintain quality service and to meet regulatory requirements while keeping prices manageable for patrons. This environment has created a ripple effect, impacting Fair Partners and Suppliers who each face similar pressures.

As a Board Member, how would you help overcome this challenge?

As a Board Member, my focus would be on strategies to enhance profit margins for Concessionaires and programs providing guidance on navigating regulatory and compliance issues.

Where do you see NICA in five years?

In five years, I envision NICA with an increased membership base and a strengthened role in regulatory advocacy. By expanding reach, influence, and resources it can better represent the interests of Concessionaires and help shape policies that support their success.

What would you plan to help NICA get there?

To help NICA achieve this vision, I would strive to maintain NICA’s history of assisting Concessionaires in overcoming obstacles. It seems clear that NICA’s continued growth is a result of the sum of all the great things it offers its members: support services, offering tailored resources, fostering partnerships and bulk purchasing programs, advocacy, knowledge sharing, and collaboration.

I would work to ensure that NICA remains a vital resource in navigating the evolving landscape of the Concession Industry.

Trent Wilkes

Wilkes Concessions • Linton, IN My name is Trent Wilkes, owner of Wilkes Concessions / The Baker Man. My wife Katie and I live in Linton, IN with our four-year-old daughter Finn Hadley. We are employed full-time with our Concession Business. We work approximately thirty locations a year across Indiana at several County Fairs and Fall Festivals including the Indianapolis 500 and the Indiana State Fair. I grew up working for close family friends (who basically were adopted grandparents) in their Cinnamon Roll trailer. At the age of 15 I started on my own selling Canned Soda and Popsicles out of a tent. The next year I graduated to a small trailer and the rest is history. We pride ourselves in being a Family owned and operated business.

What is the most important challenge facing Concessionaires today?

Like many NICA Members, this business is my family’s livelihood. As inflation increases, that bottom line and profit margin decreases. I have seen one of my main products (fish) go from $60 a case to $104 a case in 10 years. Meanwhile my sandwich cost has only increased by $3 in that 10 years. At the same time, credit card volumes have gone from 10-15% to 60-75% in some cases. I want to be able to maintain family friendly prices for my customers, but at the end of the day I want to keep my lights on at home. I see that challenge growing constantly!

As a Board Member, how would you help overcome this challenge?

Networking with fellow Concessionaires, sharing ideas and ways to increase profit margins, and December 2024 NICA News 15

keep prices reasonable is the number one way to overcome the inflation challenges as well as trying to provide resources for Independent Concessionaires.

Where do you see NICA in five years?

I can’t help but notice that there is not a great abundance of Independent Concessionaires, such as myself, doing this for full-time household income with a young family at the age of thirty. My hope is to get more younger people involved so NICA can be just as strong in five years as it is now and for many years after that.

What would you plan to help NICA get there?

I would like to help promote all of the benefits of NICA to fellow Independent Concessionaires who are currently non-members.

The East Council wants to extend our thanks to the many NICA Members who joined us at our recent first-time event at Drive Shack on October 15th in Raleigh, NC, prior to the opening of the North Carolina State Fair. “Insurance… Too Much or Too Little?” tackled the complexities of insurance coverage for businesses in the Fair Industry. Moderated

by Kim Barr, CCE, President, the discussion featured Panelists Jacqueline Bradbury, CCE, Director; Annie Shugart and Mike Tomaro, McGowan Allied; and Phil Teague, Hummel Group, who provided insights into reviewing policies to ensure alignment with your needs, ensuring peace of mind and financial stability.

As the first “How To” Workshop of the day, “How To Use Fiserv / Clover and APEX” gave attendees a hands-on guide to leveraging advanced technology for their operations. Angie Ray and Steven Wrobel, Fiserv / Clover, led the workshop, introducing the process for seamless integration between equipment and software.

After an exciting and educational morning, over 250 attendees gathered for Roundtable Discussions, moderated by Jessica Gottsche,

East Council Coordinator, and Donna Ruhm, San Diego County Fair (retired), while enjoying boxed lunches, courtesy of gocashless. This varied group discussed important topics such as “Charge Backs and Other Card Fees,” “Commercial Exhibit Booth Space,” “Enhancing the Guest Experience,” “Fair RV and Campground Standards,” “Payment,” “Disposable Products,” “Move-In/Move-Out,” “New at Fairs,” and more.

Monday afternoon’s Educational Sessions began with “Chasing Profits,” which addressed the vital topic of improving profitability in today’s challenging landscape. Led by Moderator Vincent Nelson, CCE, Vinnie’s Fine Foods, the panel included Sarah Hartzog, Sysco; Lisa Immel, Wisconsin State Fair; Todd Patrick, Entegra; Stacey Pittroff-Barona, CCE, Giant Ride; Audrey Poole, Fare Foods; and Jim Swain, Swain’s Pizza on a Stick. Panelists shared how NICA’s collective buying power can reduce costs, while emphasizing the growing importance of unique Food and Beverage offerings that can attract more customers and media buzz.

Tuesday’s “How To” Workshops kicked off with “How To Adopt Tipping Protocols” with Brandy Arredondo, CCE, Noel’s Foods, and Jessica Gottsche, East Council Coordinator.

Vendors and Guests. “How To Stay Organized and Enhance Productivity While on the Road” was led by Jan Gary, CCE and Karen Gary, Leap of Faith Productions; Sandy Class, CCE, Tavern at the Park; and Stacey Pittroff-Barona, CCE, Giant Ride, who shared practical strategies for maintaining organization and productivity on the road. Attendees discovered mobile productivity hacks, tools, and apps to streamline operations and reduce stress efficiently.

“Locating and Training Temporary Labor” was moderated by Jessica Gottsche, East Council Coordinator, and featured a detailed presentation by Dan Dooling, MAC Associates, with Guest Speaker Jacqueline Bradbury, CCE, Sweet Cheeks. This group identified the challenges of recruiting, training, and retaining temporary labor in the Concessions and Commercial Sales Industries with key insights including effective training methods, employee engagement strategies, and updates on legislative efforts like the CARE Act HR 1787 and RIDE Act S4040, which address the vital role of seasonal H-2B workers in the Fair Industry.

At the close of the workshop, attendees were led to the Trade Show Floor for hands-on product demonstrations. This led into the second day of the Marketplace Trade Show, accompanied by a Tailgate Lunch for all in attendance.

Closing out the afternoon, “Using Interactive Technology and Marketing to Drive Customers to Your Location” was moderated by Jessica Gottsche. This session featured insights from Borjan Jaksic, Boki Food Service; Anne-Alise Pietruska, Mellowship Entertainment; and Jason Warrenburg, San Diego County Fair. TOP 5 TYPES OF INTERVIEW QUESTIONS Dan Dooling, MAC Associates Hiring the right people is one of the most crucial decisions a business owner can make. As I pointed out during my presentation at NICA Marketplace “Together!” in November, “Locating and Training Temporary Labor,” we’ve all made hiring mistakes—but the real test lies in learning from them and refining our approach. Interviews should resemble auditions, providing insight into how potential employees will perform on the front lines.

To reduce the risk of a bad hire, you can never underestimate the importance of a structured and thoughtful process, including the use of a “pattern interview” approach. This involves five distinct types of questions—Behavioral, Situational, Personal, Competency-Based, and Cultural—that can help uncover whether a candidate has the skills, mindset, and alignment to deliver not just service, but a memorable customer experience.

By integrating these question types, you can make informed, consistent hiring decisions tailored to your team’s needs. Let’s explore these five question types and their practical applications.

Select two in each group that best fit the position.

Behavioral Questions Below, you’ll find six behavioral questions (also known as performance-based questions) you can use to assess a candidate’s past experience and performance.

1. Describe a time when you faced a significant obstacle at work. How did you overcome it?

2. Can you give me an example of an ambitious goal you achieved?

3. Tell me about a time when you made a significant mistake that impacted your team.

How did you handle it?

4. Have you had to juggle several important tasks under tight time constraints in the past? How did you prioritize them?

5. Share an example of how you were able to motivate a coworker and help them improve their performance.

6. Tell me about a time when you had to provide loyal opposition to a supervisor. How did you approach the situation and what results did you achieve?

Situational Questions Below, you’ll find four examples of situational questions you can use to see whether candidates are able to think quickly on their feet and come up with solutions to situations they might encounter at work.

1. How would you handle a situation where your manager gives you a task that you are prepared to tackle?

2. Imagine a coworker gives inaccurate information to a customer. What would you do?

3. How would you lead or influence coworkers if you were not given authority over them?

4. What would you do if you were not able to complete your portion of a task on time?

Background & Experience Questions While experience is not everything, it’s worthwhile to ask candidates targeted questions based around past roles to make sure they’ll be able to handle the challenges of the position that you’re hiring for.

1. What skills have you acquired in the past year that are particularly relevant to this job?

2. What was the toughest work challenge you’ve faced in the past? How did you overcome it?

3. What do you consider your most significant working achievement?

4. Can you tell me about a time when you took initiative to solve a work-related problem?

Personal Questions Obviously, the next set of questions aren’t truly personal; the goal is to gain a better understanding of what motivates applicants to succeed, what their professional goals are, why they chose this Industry, and how they see their strengths and December 2024 NICA News 29

weaknesses. Here are five personal questions that you can ask during interviews:

1. What are your long-term career goals?

2. How do you define success in this role?

3. Which is more valuable to you: one-to-one positive feedback or group recognition?

5. What work related achievement are you most proud of? Why?

In closing, refining your interview process by incorporating these five types of questions— Behavioral, Situational, Personal, CompetencyBased, and Cultural—can significantly improve your ability to identify the right candidates for your team. Remember, every hire contributes to your business’s success, reputation, and the experiences you deliver to customers, both on and off the Fairgrounds. Not every question will produce the same answer, but I encourage you to take what you’ve learned and evaluate your current approach to hiring. Are you asking the right questions? Are your interviews more like auditions? Start by creating a “pattern interview” tailored to your needs, and commit to using it consistently. The next time you hire, aim not just to fill a position but to bring on someone who enhances your team’s potential.

In 2024, NICA added the Commercial Exhibits Council, hosted and participated in over 40 gatherings and events nationwide, produced the annual NICA Business Expo and NICA Marketplace conventions, and continued their support of the CARE/RIDE Act. We will always sustain and develop more programs for the benefit of our membership and ensure our mission continues to thrive. The NICA Board of Directors looks to drive leadership within the organization to continue our Voice in the Industry and further develop our NICA Regional Councils across the country. By extension, the NICA Foundation will maintain and grow our academic annual scholarship awards, while providing scholarships for first time convention attendees.
