Tuna Fishcakes (makes 4 big fishcakes) 185g tin tuna 1 x large potato - cooked and dry mashed 2 tsp Djon mustard 4 spring onions - finely chopped 50g cheddar - grated salt & pepper to taste METHOD

Gently fry the spring onions in a knob of butter until soft.

Mix the tuna into the potato along with the mustard, spring onions and cheese. Season to taste. Leave to cool down.

Either shape into four fishcakes and shallow fry until golden brown both sides - or for a healthier option, shape into four fishcakes, top with breadcrumbs, drizzle with olive oil and bake at 200째C for 20 mins or until golden brown.

Tuna & Tomato Pasta (serves 2 to 3) 185g tin tuna 1 x 400g tin chopped tomatoes 1 tbsp olive oil 1 x onion - chopped 1 x clove garlic - crushed 150g pasta pinch of chilli flakes (optional) grated cheese to serve basil leaves (optional) salt & pepper to taste METHOD

Heat oil in a large pan, gently fry onion and garlic til soft.

Add tomatoes and chilli, season to taste and let bubble and reduce for 10 mins. Meanwhile cook pasta until al-dente.

Mix tuna into the tomato sauce and stir into the pasta.

Sprinkle with cheddar and basil and serve. Quick and easy.

Warm Tuna & Potato Salad (serves 3 to 4)

500g new potatoes 185g tin tuna 150g green beans 125g ball mozarella - cubed 4 x spring onions 1 ripe avocado mixed salad leaves baby plum tomatoes 4 tsp pesto (any flavour) 2 tsp olive oil salt & pepper to taste METHOD

Cook potatoes until just tender, add beans for last 3 minutes.

Meanwhile prepare salad leaves, halved tomatoes, chopped spring onions and avocado on plates.

Mix olive oil with the pesto. Drain potatoes and beans. Slice spuds in half, put back in pan and add mozzarella pieces, tuna and pesto.

Stir well, season with salt and pepper and add to salad plates.

Serve immediately

Ladies, welcome to Penny’s Boutique....

First of all let me introduce myself. My name is Penny and I am very excited to have been asked by the team at NG Magazines to write a regular fashion page.

I have been buying, selling and dressing ladies in Fashion for quite a while now and I LOVE IT! I had the great pleasure of being the Fashion Advisor at John Lewis, Nottingham and last October opened my own shopBoutique 11 on Plains Road in Mapperley, selling “real clothes for real ladies”.

I not only want to talk about the coming season’s colours, styles and prints but also about how to put that fashion together to suit YOUR particular age, shape and uniqueness.

First of all, I’d like all you ladies out there to start truly believing that age and size are really nothing but numbers. It’s not the clothes that you wear but how you wear them and that’s all down to carefully picking things from current trends that suit your individual shape.

Believe me ...every single one of us ladies has something about our bodies which we hate and complain about. The thing we need to do is enhance our favourite bits and disguise our bad bits!

So here goes................

This coming summer it’s all about colour....lots and lots of colour, from acid greens and pinks to soft blues and yellows.

Bright, bright coloured jeans and skinny trousers are everywhere and when teamed with a lovely simple white top or blouse, can really suit everyone. The trick is to

get the right shape and length of the top to wear with them. Team that with a fabulous brightly coloured loafer and you are good to go.

Dresses are also very, very popular this summer. Lovely feminine “Julia Roberts” style dresses. Just pick the correct shape and length for your own body shape. Again in all sorts of pretty colours and patterns from tiny little daisy prints to huge bold asymmetrical designs.

I love this very feminine look, especially its versatility. It can be made to look a little funky with leggings and a flat ballerina pump or any height wedge. It can be dressed up to be sophisticated with a simple patent court shoe..... Voila a dress that can take you absolutely anywhere.

All I ask ladies is please don’t dismiss any fashion look until you have experimented a little. I have lost count of the number of times I’ve suggested ladies try on something a little different from what they would normally choose. To their surprise they’ve absolutely loved it and say “I feel like a new woman in this” or “I would have never thought I could wear this and I love it” Just remember, enjoy yourselves, try to make buying yourself a new outfit fun and if I can help in any way you know where to find me.

The Lazy Gardener....

Hits the decks

Decking can really add another dimension to a garden. A few years ago we replaced our tired and depressing mixed level concrete patio with a lovely new deck. It was hard work but well worth it. Having it all on one level makes the garden seem so much bigger.

After a couple of harsh winters it now looks very dirty and scruffy and is in desperate need of some TLC. This is a good time of year to get on top of this job - so that it looks gorgeous for all those hot summer days and bbq parties (fingers crossed!)

Now would also be a good time to tart up any tired looking garden furniture. Luckily our small table and chairs are metal and glass so require little more than a good scrub with some soapy water.

One of the key things to bear in mind before you start is to check for a few days of dry weather. You need this to enable the products to dry properly.

There are three main steps to deck maintenance; cleaning, restoring and protecting.

Cleaning - There are loads of cleaning preparations specifically designed for decking. We use Swarfega Decking Cleaner, £9.98 for 5ltrs from B & Q. Most garden centres and DIY stores sell a good selection of branded and own label products.

So there you go - with a couple of days graft, the decking will look like new and you can sit back and enjoy a cold beer and admire your hard work.

Elsewhere in the garden - the runner beans are coming along nicely on the window sill and my mum has kindly donated various other vegetable seeds which will be going into the garden over the next couple of months.

I received a lovely email from a reader recently. Gaynor runs a stall on Sherwood market called Sherwood Specialilty Herbs and Edible Plants. The market is held on the first Saturday of the month through til August from 10am til 2pm. Gaynor will be selling different plants every month. I can’t wait to get along and stock up.

First you need to get the deck clear of debris. We brush and then hoover the deck to get all the old leaves and dirt off.

Then you can apply the cleaner following the manufacturers instructions.

Restoring and Protecting - Once the decking is clean and dry we use Ronseal Decking Oil in Clear, £39.98 for 5 ltrs from B & Q. Decking oil is a special treatment/ preserver that penetrates the timber so as well as looking good it also protects the wood from the elements.

We apply the oil using a large paint brush - which takes a while - after leaving to dry you need to apply a second coat. A 5ltr

“Oh, Yea! Oh, Yea! Oh, Yea!” by Gloria Morgan My dog writes a blog. For those of you who don’t know what that means, it’s short for ‘web log’. It’s a diary typed on the computer that is put out on the internet, otherwise known as the world wide web (or www for short) for anyone to read. If you google ‘Cassie-rescue dog’ you will find Cassie’s blog which she updates once a week.

I have to help her with the practicalities because she’s a bit of a clumsy-paws on the keyboard. Whenever she’s supposed to type ‘good’ it comes out as ‘food’, and ‘sat’ is always ‘eat’; ‘nice’ is transformed into ‘rice’ and ‘wish’ becomes ‘fish’.

Hang on a minute – are you noticing the same pattern emerging here as I am? I think this dog is actually a better typist than I give her credit for.

A couple of hundred years ago, if you wanted the public at large to know something you could arrange to have it ‘cried’, which involved someone walking about the streets shouting out your news.

I once spent the day at the annual Town Crier Festival at Market Deeping in Lincolnshire. There were men from towns all over England, wearing fancy costumes and threecornered hats, ringing hand bells and shouting at the tops of their voices.

They each took a turn on a rostrum in the market square, to see who could do it best. They all started off with “Oh, Yea! Oh, Yea! Oh, Yea!” to get people’s attention and then made their announcement. It was a lovely, colourful, noisy event and great fun to see. But there is a limit to how far even the loudest voice can carry.

Cassie’s blog, I was astounded to see that not only is it popular in the United Kingdom and the USA, but it has a big following in Russia. Her random musings are enjoyed across Europe, Australia and Canada and as far afield as India and Norway. She is even read in Latvia.

I find that mind-blowing. Can you believe that Cassie’s blog is the subject of the same eager discussion in the saloon bar of ‘The Hammer and Sickle’ in Novgorod as it is in, say, the snug of ‘The Nelson and Railway’ in Kimberley?

A hundred years ago the school curriculum was the 3 R’s and the school leaving age was 11. What hopes and dreams would the people living on our local streets then have aspired to, if they had had all the electronic gizmos that we have, literally at their finger-tips?

And what further marvels might we expect to see, in much less than another hundred years?

The futuristic gadget I would like to own is an electronic leash that invisibly tethers Cassie to me via an app on the mobile in my pocket and the microchip embedded in her shoulder.

But what do I know? It’s quite possible that’s already been invented and is the top seller in pet shops throughout Latvia.

Unwanted Goods Given New Lease Of Life Anyone looking to dispose of their unwanted furniture and other bulky items can now give their goods a new lease of life thanks to an innovative partnership between Broxtowe Borough Council and three local charities.

From Monday 16th April, residents contacting Broxtowe Borough Council to arrange a collection of their bulky items will be invited to donate their unwanted goods to their choice of Family First, HOPE (Nottingham) or the Trent Vinyard ‘The Arches’ project.

Suitable items donated to the charities, which may include anything from threepiece suites to electrical appliances, will be collected free of charge by the respective charities and made available for reuse by low income families.

Cabinet member for Environment, Cllr Stan Heptinstall said: “Broxtowe Borough Council is delighted to work alongside these worthwhile causes to encourage residents to donate their unwanted goods to three local charities.

“Reuse is one of the most efficient ways to recycle and it is hoped that this innovative partnership will both reduce the amount of waste the Council sends to landfill whilst supporting low income families who are most in need.”

There is lots of news to share with you, including an ongoing police operation around drugs that is already proving to be successful and work to reduce antisocial behaviour which has yielded significant results.

Officers have been working closely with partner agencies to address issues of nuisance behaviour and one example of this is what we have been doing in Princes Street. Antisocial behaviour in Princes Street was raised as a concern by you, with youngsters congregating, making noise, and impacting on the lives of residents.

In partnership with the local council we set about trying to tackle the issue and in the past week a large miner’s wheel, surrounded by railings, has been installed in the area where people were known to gather. This is not only a nod to the heritage of Eastwood, a tribute to its mining history, but it is also designed to act as a deterrent by breaking up the open space which had been so inviting to the teenagers of the town.

For the past few weeks we have been running an operation aimed at tackling drug dealing in the town and a significant arrest was made recently. Our work to tackle drug dealing and supply is ongoing and I will keep you updated with our progress.

I would like to take this opportunity to remind residents about the importance of ensuring vehicles are left secure with gadgets and other items removed from view.

Four vehicles were targeted in one night in Nuthall, all of which had been left unlocked.

When you leave your vehicle

unattended, regardless of how long for, lock the doors, shut the windows and where possible, activate the alarm.

The same goes for your bicycles.

As it gets warmer outside more people will be dusting off their pedal cycles and getting about on two wheels.

Make sure your bikes are locked to something anchored to the ground, even if you are just leaving it for a minute while you nip inside. In that few seconds and opportunist thief could have ridden off on it.

business & IT COUNCIL INTRODUCES REDUCED CAR PARKING CHARGES Following a review of car parks in the borough, Broxtowe Borough Council has reduced car parking charges in a number of car parks in Eastwood, Kimberley and Stapleford.

From this month, residents can now park all day for only £1.00 in Eastwood’s Sun Inn car park, Kimberley’s Victoria Street car park and Stapleford’s Cliffe Hill Avenue car park and for £1.50 at Stapleford’s Halls Road car park.

Improvements to the council’s website also mean you can find your nearest car park online using the easy to use LocalView mapping facility at www.broxtowe.gov.uk/ locateit The Council’s Scrutiny Committee looks at issues that are important to local residents, reviews and challenges decisions taken by Cabinet and helps develop new policies.

Recommendations made following a Scrutiny Review are backed by evidence and the review also enables the concerns of the local community to be raised with and considered by their elected representatives. A review of four underused long stay car parks in the north of the borough and Stapleford identified areas with parking problems and it is hoped the new charges will increase usage.

Cat fosterers urgently needed!

Animal Accident Rescue Unit was created to provide a free ambulance service for pet owners without the means to travel to the vets themselves. Since then, it has become a badly needed lifeline, also taking in sick and injured animals & birds, arranging for their treatment and caring for them in foster homes until either their owner can be traced or new homes can be found. The Charity is staffed entirely by unpaid volunteers working from their own homes.

We’ve taken in so many cats over the last few months that we desperately need new fosterers who can provide a temporary home for one of our rescued cats. If you think you can help us, please ring our Recruitment Officer on 0115 9563799.

Volunteer Drivers Needed!

Local Nottingham-based charity Animal Accident Rescue Unit are looking for volunteer drivers with their own car who have a couple of hours to spare during the daytime. We really need your help to transport rescued animals to and from vets and foster homes.
