Monthly recipe from CAFFI FLORENCE Cheat’s Cassoulet One of our October workshops was ' Cooking for a family on a budget using locally sourced food'. We visited some of our local farm shops to find the best local, seasonal ingredients and put them together to create a well balanced menu of family meals for a week. One of the dishes we created on the workshop was this cassoulet which is a variation on the traditional French Cassoulet but using a simpler range of ingredients and taking less time and effort to prepare. We used Welsh Dragon sausages from Swan's Farm shop in Treuddyn. They are a very tasty, spicy sausage that works perfectly in this recipe. We served the cassoulet with baked potatoes that can cook in the oven at the same time and some steamed savoy cabbage. 500g sausages 150g puy lentils 3 carrots 2 large onions 3 cloves of garlic 2 sticks of celery 450g tin tomatoes (chopped) 2 tbsp olive oil 500ml stock or hot water Heat oil gently in oven proof dish. Chop sausages into 2 or 3 and add to oil, brown slightly and remove from dish. Add onions and soften. Add remaining vegetables, diced into chunks and cook for about 5 mins. Add lentils and stir in. Return sausages to dish. Add tomatoes and stock and place in oven for about 1 hour at 170C gas 3.

Llanferres Parish Gardening Club The meeting held on Monday October 11th had as guest speaker Anthony Norman who gave a very informative and detailed talk about propagation projects for the autumn. From collecting and sowing seed from our gardens, to taking various cuttings from plants and shrubs and putting in pots, frames, greenhouses or even in the garden. Each of the samples which Mr Norman produced was passed around for members to examine. Members were impressed by what could be done at this time of year and were encouraged to take home seeds and plant material for their own use. Llanferres / Colomendy Art Group wish to say thank you for all the support and encouragement given, yet again, by our community during our fifth art exhibition at the Loggerheads Country Park. The event was highly successful, with almost four hundred people voting for their favourite painting. This years winner is Mrs Pat Armstrong with her pastel of a Border Collie entitled ‘Is Lunch Ready Yet?’. Mrs Janet Jones’ Snow Scene gained second place and ‘Buttercup’ the cow third. Pat has chosen Diabetes Research and Wellness as her Charity. They will receive a percentage of all sales together with a donation from the group. Pat will enjoy tea for two at

Caffi Florence, kindly donated by Jane Clough. Mrs Betty Cook again organised a fund raising stall and the proceeds of this will also be donated to Diabetes research. The raffle ticket winning numbers were: 1st – Green Ticket 455, 2nd – Pink Ticket 611, 3rd - Pink Ticket 572 and 4th – Pink Ticket 509. The Teddy’s name was ‘Tudr’. The whole event was most pleasurable and we would like to thank the large numbers of our community who yet again, supported us. We really appreciate your interest and encouragement. Thank you.

Photography Tips The first in a regular series of seasonal photographic tips from our local professional

Autumn is a wonderful excuse to take some time out to go for a local walk with your camera. The combination of the low sun in the sky and vibrant oranges and browns as nature sheds her summer growth, makes the next month or so unmissable. You don't need a special camera and big clunky lenses either. With a few tips you can take great nature and landscape shots with any camera. The first, and most important thing to do, is to be in the right place at the right time. For photography, this means soon after sunrise and the hour or so before sunset. So check the weather, pick a clear day and head off early in the morning (sunrise does not mean the middle of the night at this time of year). Know where you want to be in advance and get there, well wrapped up, in plenty of time to catch the light. I love the view over Loggerheads at this time of year, the colourful autumn trees can feel like a mini New England on a misty morning! Pop into the woods above Loggerheads from the signed path just down the road from Cadole. David is a local landscape and commercial photographer, who runs photography workshops for anyone who wishes to learn more about using their camera to its full advantage and exploring their creativity in photography. www.davidwhitestudio.co.uk

Llanferres Badminton Club The A team have started their promotion charge in Division 2 with 2 wins and a disputed draw. The opening fixture away to Rossett came down to the last match with the result still to be confirmed by the league after much controversy. The first home game against Flint was a tight game, with Owen Hall stepping up into the A team and partnering the ever-present Dave Clough in the 1st Men's pairings. The game went to 3 with Dave and Owen narrowly missing out. The Ladies pairings of Jane Givelin and Claire Halestrap along with Sue Clarke and Eli Clough won both of their matches helping Llanferres to a 2-6 victory. The 3rd match paired Llanferres with the strong Denbigh B team on the slippery court at Denbigh Leisure centre. Peter Williams was up against his former club but, came through his mixed match with Claire Halestrap comfortably. The new 2nd men's pairings of Kev Littlewood and Tom Givelin made a fantastic comeback with some superb play from Tom to win their games. Despite some of the games going to the third deciding set, Llanferres came out 0-8 winners, an excellent result. Special mention must go to Sue Clarke who played in 2 very close matches, winning in 3 with Kev Littlewood in the 4th mixed, and an exciting 17-14 victory in the deciding set with Eli Clough in the 2nd ladies........ well done Sue! Llanferres B team have been on the crest of a slump, not having registered a league win since the 2008-2009 season. After sacking last year’s captain Sue Clarke, the newly appointed Kev Littlewood rallied the troops ready to go into battle. With several new members joining the club, the competition for places was fierce. The first match was away to Holywell, a strong and organised

team. Several games were taken to 3 sets, however Holywell were too strong and took a 4-0 lead from the mixed matches leaving an uphill battle for a draw. Things started well as Eleri Davies and Ffion Roberts battled out a fantastic win in the first ladies match. This momentum sadly could not be maintained, as new club members Aidan Giles and Daniel Williams tasted their first defeats in the men's matches. Despite battling hard, June Healy and June Lovell just missed out in the second ladies and the B team headed home on the end of a 7-1 defeat. Match 2 at Home to the recently relegated Wynnstay Arms promised to be a tough match and that proved to be the case. Graham Harvey and Eleri Davies won their mixed match but that was the only thing the team had to smile about in the first round of matches. Cheered on by a partisan home crowd (who had basically gathered to eat the beef wraps and crisps) the men's pairing of Kev Littlewood and Owen Hall pulled off a fantastic win in the men's 1st pairings, followed by another victory for Moira Bonar and Jenny Evans which pulled the scores level, however the team couldn't quite cross the finish line, eventually losing 5-3. A respectable result considering the opposition. The wraps really were fantastic and the team would like to thank Graham Harvey for the catering ;0) Next Month see's the first round of the Cup, the draw yet to take place. This year due to lots of members, Llanferres has entered 3 teams into the competition, of which the A team are defending their title as last years champions. Watch out for next months updates and results !

MS Challenge A BIG THANK YOU! For the second year running a team from Llanferres and Maeshafn have entered and successfully completed the gruelling MS Challenge! The object of the Challenge is for a team to navigate the demanding course over about 10 kilometres using orienteering type instructions, taking with them a person who has Multiple Sclerosis in a wheelchair. This gives the person with MS the chance to enjoy the sort of fun which is not normally available to them, while raising money for the Chester MS Support Centre which is based in Saltney.

Roberts, Lindsay Turner, Jonathan Turner, Andy Williams and not forgetting our most important team member, our passenger, Lindsays’ dad Phil Greenlees.

Well, that’s the ‘official description’ but it doesn’t mention the hills, midges, bogs, swamps, tears or tantrums! Or, what a fantastically fulfilling and uplifting experience the Challenge is.

This year’s fancy dress theme was “Pirates” and with plenty of aarghs, ‘shiver me timber’s, splice the main brace (not to mention the double entendres!), a tiring, fun and rewarding time was had by all. This year’s total amount raised by our team was a fantastic £2,276 (the most raised on the day by any team) – Wahey!

Our team entered under the name of “The Lambs” and comprised: Paddy Carney, Alys Devine, Nick Hawk, Nick Lennon, Roger Llewellyn, Gary McKay, Gary Myles, Luis Prtak, Barry

Running costs at the Centre are approximately £210,000.00 a year, and the Centre is dependent on fund raising events such as the MS Challenge. Multiple Sclerosis is

Moel Famau Jubilee Tower 200 The 200th anniversary of the laying of the foundation stone of Moel Famau’s Jubilee Tower was celebrated in spectacular style on Sunday 24th October. Many local people braved the cold and joined what was rumoured to be a crowd on nearly 4,000 people at the top. The reward was a fantastic firework display, plus laser show and some interesting drumming and horn blowing. We all thought the queue at the bottom was for the fireworks, but it turned out to be the queue for Caffi Florence’s refreshments, which were in huge demand - we suspect the Clough's slept well that night! Although Jane was rumoured to be still serving coffee at a little past 3a.m. Nobody expected a surprise visit from the ‘Baa-de Mine’s a Chinese’ terrorist sect

Dr Christine’s trip to Malawi - September 2010 I had an excellent week teaching 40 fourth year Medical students with the help of a visiting Dutch urologist, who took them to the wards to check their history taking and physical examining skills, whilst I plodded on with lectures. The results of the exam on the last afternoon were very pleasing - 38 passed and 3 got 95%! During our stay we went to an Ethiopian restaurant, I chose the mildest food and found it amazingly hot and also to an Italian bistro, prices here high due to the cost of importing stuff. The price of petrol is the same as the UK. The Raven food compares very favourably!

Pumba amongst the elephant dung very loudly 30 yards only away. One night an elephant decided to come to eat the tree just by my lodge. I prayed it would not come in as the sides of the lodge, which are only made of netting! The day before, an elephant charged a couple from Harrogate on the walking safari about 10 metres away. It came from around a bush unexpectedly, the guide with great composure shot in the air above its head and after some consideration it turned around.

I went to the Liwonde National Park, on the Shire River which runs from Lake Malawi to the Zambesi and there is an abundance of crocodiles, hippos, warthogs, many elephants, monkeys and various deer. I have fallen for the warthogs who are all called Pumba; they are organised, feisty, never stop eating, walk by the side of the crocodiles and are so ugly they are attractive. There are also some fantastic birds - but I don't know the names! We Female elephant munching, which they saw a hyena family in the do 20 hours a day night drive. I have never seen one before and so close up as well - surprisingly quite cuddly! Our rooms were separate lodges, on stilts, above an inlet where crocs were basking by day and snoring

Nature Notes Although fungi can be found throughout the year, autumn is the peak time and the present damp spell of weather will favour them. One of the most numerous in the local woodland at the moment is the greyish coloured Clitocybe nebularis - the Clouded clitocybe or in some books the Clouded agaric. Smokey-grey in colour, sometimes tinged brown, with a paler rim it grows up to 15 or even 20cm in diameter. Found in most kind of woodland it often forms 'fairy rings' and I came across one ring of about ten metres diameter. Another feature of autumn and winter is the winter gnat which is seen in dense swarms on sunny days. Present throughout the year, but mostly in woodland, they are most numerous in autumn and winter when males form dense swarms and 'dance' to attract females. Eggs are laid in woodland fungi or decaying wood and the larvae feed on the fungi or decaying matter and emerge as adults in springtime. Walkers sometimes find them a bit of a nuisance but they are harmless and cannot bite, being more closely related to crane flies than mosquitoes. Insects tend to become scarce as the temperatures fall, yet I watched jackdaws, swirling and diving in a large flock recently, which were obviously feeding on flying insects. One sometimes sees gulls doing likewise. I assume the prey to be flying ants, although it is rather late for them, as this phenomena usually occurs in July or August. It is when the newly hatched queens and males emerge from the nest and

fly high in huge mating swarms. All the colonies in the district erupt at the same time, triggered by suitable temperature and humidity. This allows for cross fertilisation between different colonies. After mating, the queens return to earth, bite of their wings and go into hibernation ready to start a new colony next year while the much smaller males, their duty done, all die. Why this should have occurred so late in the season this year is open to debate or perhaps it was not ants the birds were feeding on but, if not, I'm afraid I do not know what else it could have been. In 2006 I wrote about the proliferation of Himalayan Balsam along our local water courses and warned of its effect on native wildlife and the likely loss of land to farmers. Since then our local volunteer group has spent many Sunday mornings pulling out young plants of Balsam before they had a chance to flower and seed and this year has shown the fruits of our labour, as most watercourses in our 'patch' have seen vastly reduced numbers. Himalayan Balsam has not been eliminated yet and it will be necessary to monitor the watercourses for a few more years but the group can feel proud that they have done a good job. Unfortunately, the same cannot be said for some other districts, such as the Conway Valley, where Himalayan Balsam has taken over large tracts of countryside and nobody appears to be doing anything about it.
