INGREDIENTS
•1 cup sushi rice, such as Nishiki brand
•½ tsp. sugar
•¾ tsp. fine sea salt
•2 ½ tsp. seasoned rice vinegar
•1 recipe Lightly Salted Savory Seeds
Furikake (see recipe below)
•1 can Patagonia Provisions Smoked

Mackerel, drained
•½ tsp. tamari or soy sauce
•½ tsp. mirin, plus more to taste
•3 green onions, thinly sliced on the diagonal
•1 sheet Japanese nori, cut into 1-inch-wide strips (optional)
FOR FURIKAKE
•¾ sheet Japanese nori seaweed (about 8 by 8 in.)
•2 pouches Patagonia Provisions Simply
•Salted Savory Seeds
•¼ tsp. sugar
•½ tbsp. toasted sesame seeds
•1 tbsp. fine-cut bonito flakes (optional)
wine vinegar
•2 tbsp chili flakes
•2 tsp salt
Toast the nori over a gas flame or in a hot frying pan for a few seconds. With scissors, cut the sheet into 1-in.-wide strips. Stack the strips, cut in half crosswise and stack again. Cut across the short end to make slivers. In a glass jar, shake nori with remaining ingredients to mix.
Store in the freezer for up to 2 months. Makes about ½ cup (it’s good on noodles, too!).
INSTRUCTIONS
1.Rinse rice in 2-3 changes of cool water, vigorously swishing it around with your hand, until the water is mostly clear. Drain. Bring rice and 1 1/3 cups water to a small pot and bring to a boil, covered. Turn heat down to low and simmer until all the water is absorbed, about 20 minutes. Let sit 30 minutes, covered. Or use a rice cooker to cook the rice.
2.Meanwhile, put sugar and salt with rice vinegar in a small bowl and stir to dissolve.
3.While rice is still warm, turn out onto a rimmed baking sheet and, using a spatula, gently cut and fold vinegar seasoning into the rice. Sprinkle with furikake and fold in evenly. Let cool to room temperature.
4.Make mackerel filling: With a fork, mix mackerel with the soy, mirin, and green onions, breaking fish into flakes in the process. Taste and add more soy and/or mirin if you like.

5.Make rice balls: Dip your hands into a bowl of warm water as you work—this keeps the grains from sticking to your skin.
6.With wet hands, divide rice into 8 portions. Working with one portion at a time, scoop half of it into your non-dominant hand, shape into a disk in your palm, and push a divot in the center. Fill divot with about 2 tsp. mackerel. Cover with the remaining half-portion of rice and firmly (very firmly!) squeeze into a ball with your other hand.
7.Repeat with remaining rice balls and filling, packing them tight. Wind strips of nori around each ball if you like.
8.Eat right away or chill up to 1 day without nori (add the nori right before eating to keep it from getting soggy).














Strawberry Lemonade Fizzy

A refreshing mocktail perfectly enjoyed poolside, at picnics or your next outdoor bbq!
INGREDIENTS
• 1 cup strawberries
• 2 lemons
• Sparkling lemon water
• 2-3 tbsp maple syrup
• 1 Strawberry Lemonade
GoodPop

INSTRUCTIONS
1.Hull the strawberries and puree in a food processor until smooth.
2.Squeeze lemons into the food processor and add maple syrup, pulse to mix well.
3.Add ice to a glass and fill 1/4 of the glass with the mixture, then add sparkling water to fill halfway.
4.Dunk the Strawberry Lemonade GoodPop, garnish with additional lemon and enjoy!













Frozen Fruit Bark
18 ounces plain Greek yogurt




⅔ cup honey
1 teaspoon vanilla extract
¼ teaspoon sea salt
6 ounces blackberries, halved
2 large ripe peaches, sliced
½ cup granola



½ teaspoon chia seeds

1 Line a small baking sheet with parchment paper and set aside.
2 In a mixing bowl combine yogurt, honey, and salt; whisk until thoroughly combined.
3 Spread mixture evenly into the prepared baking sheet.
4 Top with fruit, granola, and chia seeds. Tap pan a few times to set the toppings.

5 Freeze for two to three hours, or until firm.
6 Cut into pieces and serve. Store in freezer.

Watermelon Trio Layered
Electrolyte Slushie
INGREDIENTS
• 2 scoops (or 2 sticks) Ultima
Replenisher Watermelon flavor
• 2 scoops (or 2 stick) Ultima
Replenisher Lemonade flavor
• 2 scoops (or 2 sticks) Ultima
Replenisher Blue Raspberry flavor
• Fresh, small seedless watermelon
• Fresh raspberries for garnish
• Water
INSTRUCTIONS
1. In a shaker bottle, shake up 2 scoops or stickpacks of Ultima Replenisher Watermelon flavor powder with 16 oz of water. Pour into an ice cube tray. Repeat for the other two flavors so you have three separate ice cube trays each filled with a different Ultima flavor. Put the trays into the freezer and let set (about 2-4 hours depending on your freezer).

2. When you are ready to make the slushie, first, take a small, seedless watermelon and cut in half. Scoop out the center with a small ice-cream scoop and set aside 1 cup of fresh watermelon for this recipe. (Freeze the rest for use later.) Keep the two halves of the watermelon to serve your slushies in.
3. When ice cube trays are completely frozen, remove the watermelon flavor first and add to a blender along with 1 cup of watermelon chunks. Blend until you have a slushie consistency. Using a plastic spatula, pour contents into one side of the watermelon bowl.

4. Next blend the Lemonade flavor and add to your watermelon bowl and finally blend the Blue Raspberry flavor ice cubes and add to the watermelon bowl. Now you have a beautiful trio of flavors. Top with fresh raspberries and serve. Enjoy!
