RECIPE OF THE WEEK: Charred Green Beans with Lemon Verbena Pesto

Fire Up The Grill For Fresh Veggies

Vegetables are more versatile than many people may know. Steaming or sautéing vegetables might be among the most popular ways to cook veggies, but grillmasters know that it’s not just main dishes that taste great when cooked over an open flame.

As the following recipe for “Charred Green Beans with Lemon Verbena Pesto” from Karen Adler and Judith Fertig’s “The Gardener & The Grill” (Running Press) can attest, grilled vegetables make for simple yet satisfying side dishes.

Serves 2 to 4

1 1⁄2 pounds slender green beans

2 teaspoons olive oil

Lemon Verbena Pesto

1 cup fresh lemon verbena leaves (substitute fresh lemon balm leaves)

2 garlic cloves

1⁄4 cup grated Parmesan cheese

1⁄4 cup pine nuts or English walnuts

1⁄2 cup olive oil

Fine kosher or sea salt and freshly ground black pepper to taste

Directions: Prepare a hot fire in your grill.

Toss the beans with olive oil and place in a perforated grill basket or wok set on a baking sheet.

For the Lemon Verbena Pesto, combine the lemon verbena, garlic, cheese, and nuts in a food processor and pulse to puree. Slowly add the olive oil with the processor running until the mixture thickens and emulsifies, about 1 minute. Season to taste with salt and pepper. The pesto will keep in the refrigerator for 7 to 10 days, or it may be frozen for up to 3 months.

Place the grill wok or basket directly over the fire and stir-grill, tossing the beans with wooden paddles or grill spatulas until crisp-tender, about 5 to 8 minutes. Transfer the grilled beans to a large bowl and toss with about 1⁄4 cup of the Lemon Verbena Pesto or to taste.

Town Partners With Special Olympics New York And Plainedge School District To Bring Spring Games To Plainedge High School

On Saturday, May 3, 2025, the Town of Oyster Bay partnered with Special Olympics New York to host the prestigious Spring Games of the Special Olympics at Plainedge High School. The day-long event featured approximately 600 competing athletes, supported by 300 coaches and hundreds of volunteers. The games represent months of training for an Olympic-style competition by individuals with intellectual disabilities.

Boater & PWC Safety Certification Course

New York State Assembly members Michael Durso (R-Massapequa Park) and John Mikulin (R-East Meadow), in coordination with New York Boating Safety, will be holding a NYS Safe Boating and PWC Safety Certification Course on Saturday, May 17th from 9:00 a.m. to 5:00 p.m. at the Massapequa Public Library – Bar Harbour Building located at 40 Harbor Lane in Massapequa Park.

Reservations are

The fee for this course is $75.00 and registrants must be a minimum of 10 years of age. Upon successful completion, participants will be issued a New York State Safe Boater Certificate.

Residents Invited To Submit Photos For Town Publications

Oyster Bay Town Councilman Tom Hand invites residents to submit photos taken in the Town of Oyster Bay to be considered for future use in Town publications.

“We accept photos year-round submitted by our residents which depict people, places, community events and scenery throughout our Town,” said Councilman Hand. “We accept photos for the calendar, as well as

other Town publications, including our website, social media pages and brochures.”

Councilman Hand noted that photos should be taken within the confines of the Town of Oyster Bay. Digital submissions are preferred, but high-quality photos may also be submitted. Emailed photos should be sent to photos@oysterbayny.gov. Printed photos can be submitted to the Town’s Public Information

Office, 54 Audrey Avenue, Oyster Bay NY 11771. Residents should make sure their name, address, phone number and brief description of the photo are included with their submission. The photographer is responsible for the correct spelling of the names and subjects in the photos, as well as notifying subjects they may appear in a Town publication.
