Tips For Planting Fall Vegetables
Tendingto backyard vegetable gardens can fill many hours of enjoyable downtime in the great outdoors. What’s more, the bounty produced by such gardens provides healthy, fresh foods to gardeners and their loved ones.
Although spring and summer are widely seen as the peak of the gardening season, the mild temperatures of autumn can be a prime time for planting vegetables as well. Certain late-season treats like carrots, kale, spinach, and turnips can thrive in fall gardens. Many different foods are quick crops that can go from seed to table in about six weeks. When sown in early fall, these vegetables will be ready to put on the table for mid-October feasts. Beets, green onions, broccoli, and cabbages can be planted in late summer for fall harvest. Gardeners who live in hardiness zones eight through 10 (the southern portion of the United States) can plant fall vegetables as late as December. Many plants can tolerate light frost, which may even help sweeten the vegetables. A handful of unique factors need to be taken into consideration when planning fall vegetable gardens.
• The summertime location of the garden
may still be adequate but be sure to choose a location that gets eight total hours of sunlight per day.
• If using an existing garden site, remove any detritus from summer plants and any sprouting weeds. If you are planting a new garden, remove any turf before tilling the soil.
• Amend the soil with sand, compost, manure fertilizer, and any other nutrients needed depending on the types of vegetables you intend to grow.
• While fall vegetables can be grown successfully from seeds, it may be more time-friendly to work from larger transplants, advises the Texas A&M AgriLife Extension.
• Some plants may need a little protection as they grow if temperatures begin to dip. Cover with a blanket, cardboard box, or plastic tunnel to insulate.
Remember to water according to the vegetables planted and to keep an eye on readiness for vegetables. Turnips, beets, rutabagas, and carrots can be dug out when the roots are plump and crisp.

of fall know that few things can beat October's crisp, sunny afternoons. The early days of the month bring with them comfortable temperatures and beautiful vistas. Summer’s heat and humidity often are things of the past, and time spent outdoors, whether raking leaves or tailgating at a football game, can be quite pleasant.
Early October is home to two holidays: Columbus Day and Indigenous Peoples’ Day, which fall this year on October 9th. That means following the first full week of the month people in the United States have a chance to enjoy a three-day weekend to soak up all fall has to offer. Here are a few ideas.
Camping And Hiking
Take in the awe of fall foliage up close and personal by visiting a rural area or park a short drive away from home. New York City residents, for example, can head to the Catskills, while Chicagoans can head to White Pines State Park. Different regions of the country will show off their fall colors at different times, and while foliage may be past peak, these two to three-hour drives are highly enjoyable.
Fall Festivals
Check out the Chamber of Commerce or Visitors’ Bureau websites of various cities and towns to see what is being offered relatively close by. Many will put on community fairs, festivals, and the like. Columbus Day also
presents a chance to celebrate Italian culture in many places, so Italian food and cultural festivals may be on the docket for those looking for such an excursion.
Skiing Towns
When the last of the summer
tourists depart from ski resort towns and the lull sets in before the winter ski season heats up, visitors to Colorado cities like Aspen or Telluride or the Vermont city of Stowe can find great deals on hotel stays and dine out at relatively empty restaurants.
Warm Weather Culture
People who are not ready to part with warm weather can head to Miami. Miami often puts on a huge festival on Columbus Day and people from all over the world come to enjoy it. There’s fun for all ages, and guests are welcome to arrive in costume.
Indigenous Cultures
Individuals looking to learn more about Native Americans may want to travel to the states with the highest populations of Indigenous peoples. These include Alaska, Oklahoma, New Mexico, South Dakota, Montana, and North Dakota. It’s likely celebrations will be held in these areas highlighting their distinct culture and heritage.

The Origins Of Oktoberfest
Oktoberfest
is a celebration that transcends geographical boundaries. Much like people in various pockets of the globe celebrate St. Patrick's Day and Cinco de Mayo even if they have little or no connection to Ireland or Mexico, respectively, Bavarian heritage is not a prerequisite for participation in Oktoberfest revelry.
According to Oktoberfest.de, each year millions of people are attracted to the festival of Oktoberfest. It's not hard to see why so many people attend Oktoberfest, which is synonymous with fun, food, music, and, of course, beer. But the chance to engage in what might be best characterized as living history undoubtedly is part of the appeal of Oktoberfest as well. Oktoberfest is indeed steeped in tradition, and understanding the history of the beloved festival can make the celebration even more enjoyable.
The first Oktoberfest occurred as part of a wedding. Kronprinz Ludwig of Bavaria, who later became King Ludwig I, was set to marry Princess Therese
of Saxe-Hildburghausen on October 12, 1810. The couple's nuptials were deemed a cause for great celebration, and a horse race was held in their
honor on October 17. The inspiration for the races and the subsequent celebration of Oktoberfest remains a topic of debate. But there's no debating that Ludwig's decision to invite the people of Munich to join in the festivities had a lasting effect, inspiring many of the city's wealthiest residents to decorate the city. But even the less well-todo joined in the celebrations. In fact, according to Oktoberfestguide.com, 32,065 buns; 3,922 pounds of swiss cheese; 400 kilos of mutton; 8,120 cervelat sausages; and 13,300 pairs of smoked sausage were distributed for free. Alcohol and music also featured prominently during the inaugural Oktoberfest, as 232 hectoliters of beer and four hectoliters of Austrian white wine were served during a celebration that also featured 150 musicians.
Though the festive atmosphere of Oktoberfest is known across the globe, the celebration has not been without its tragic moments. For example, Oktoberfest 1980
was shaken by a bomb that exploded at the festival entrance on September 25. Thirteen people were killed and more than 200 were injured, and the bombing remains under investigation more than 40 years later. World wars also affected the beloved festival, which was suspended between 1914 to 1918 due to World War I and then again from 1939 to 1945 due to World War II. The years immediately following both wars also featured toned down events that were not characterized as Oktoberfest but rather autumn celebrations. Celebrations in 2020 and 2021 were canceled due to the COVID-19 pandemic.
Oktoberfest remains a popular celebration more than 200 years after the inaugural event. Though devotees insist nothing can match the annual celebration in Munich, those who can't make it to Germany can likely find some Oktoberfest festivities close to home, wherever that home happens to be.

Fun Facts About The Month Of September
Septembermarks a return to the norm for millions of households. School is back in session, summer vacation season has ended and fall begins. Routines take shape and life once again becomes more structured in September. As that transition takes place, individuals can consider these fun facts about September.
1. Though Latin is no longer widely spoken or taught, plenty of words, including September, trace their origins to the language of ancient Rome and its empire. “Septem” is the Latin word for “seven,” and September was originally the seventh month of the Roman calendar.
2. Though the autumnal equinox, which marks the official beginning of fall, does not occur until later in the month, the unofficial end to summer occurs on the first weekend of September. Americans celebrate Labor Day, and Canadians celebrate Labour Day on the first Monday in September, and millions of people in both countries consider that weekend the last hurrah for summer relaxation and revelry.
3. Labor Day is not the only holiday to be celebrated in September. Rosh Hashanah, a Jewish holiday that is often referred to as the “Jewish New Year,” also is celebrated in September in many years (the holiday occurs 163 days after the first day of Passover, so in certain years it is celebrated in early October.) The Jewish holiday of Yom Kippur also can be celebrated in September or October, and Constitution Day, which commemorates the adoption of the United States constitution in 1787, is celebrated on September 17. Patriot Day also occurs annually on September 11 and is a day to remember the people killed in the terrorist attacks on the United States on September 11, 2001.
4. Though its name might suggest otherwise, Oktoberfest begins in late September. Modern Oktoberfest celebrations,
particularly those outside the Bavaria region of Germany, may have little to do with a marriage, but the festival traces its origins to the marriage of Kronprinz Ludwig to Princess Therese of SaxeHildburghausen on October 12, 1810. Citizens of Munich were invited to attend the festivities, and more than two centuries later that jovial atmosphere dominates the city and countless others across the globe, during Oktoberfest.
5. Football fans circle the month of September on their calendars, as the month marks the return of the National Football League regular season. The reigning champion Kansas City Chiefs will host the Detroit Lions in the NFL Kickoff Game on September 7, and the rest of the league will take to the gridiron on September 10 and 11. That’s a big deal for millions of fans across the country, as the NFL remains wildly popular. An analysis by the Sports Business Journal found that per-game attendance averaged 69,442 fans in 2022, which marked the second-largest figure in 19 years.
Fall Is A Great Season To Spend Time In The Yard Gardening
enthusiasts recognize that fall is not a time to rest on their laurels. In fact, fall is a great season to spend time in the yard. The Center for Agriculture, Food and the Environment at the University of Massachusetts Amherst indicates fall is the ideal time to improve the soil for next season. Amending the soil in the fall allows it to react accordingly over time and reap the benefits in spring. UMass suggests getting an accurate soil test to see what is needed in the garden. Samples should be taken from various areas. Avoid doing so when the soil is very wet. At-home kits can test for nitrogen, potassium, and phosphorous and determine the soil’s pH. Gardeners should till the soil and add compost or manure, which will counteract many nutritional deficiencies. Worm castings also are good to add, particularly for summer vegetable gardens. The gardening company Park Seed says that worm castings are high in minerals and effective at holding water — so much so that they even can be used alone in place of potting soil. Crushed egg shells, coffee grounds, and banana peels also can be added in the fall, even if they are not part of a compost pile. The nutrients will break down throughout the fall and winter, and be available just in time for summer plantings.

Roasted Pork Chops and Peaches
Serves 4
1 10-ounce package couscous (11/2 cups)
1 tablespoon olive oil
4 bone-in pork chops (3/4 inch thick; about 2 pounds total)
Kosher salt and black pepper
2 peaches, cut into wedges
1 small red onion, cut into thin wedges
3 tablespoons white wine vinegar
1/2 cup fresh basil leaves
Directions:
Heat the oven to 400 F. Cook the couscous according to the package directions.
Meanwhile, heat the oil in a large ovenproof skillet over medium-high heat. Season the pork with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until browned, 3 to 5 minutes per side. Transfer to a plate.
Add the peaches, onion, vinegar, and 1/4 teaspoon each salt and pepper to the skillet, and cook, tossing, for 1 minute. Return the pork and any accumulated juices to the skillet.
Transfer the skillet to the oven and roast until the pork is cooked through and the peaches are tender, 8 to 10 minutes. Serve with the couscous and sprinkle with the basil.

3⁄4 cup cashew flour
1⁄4 cup coconut flour
3 tablespoons arrowroot flour
1⁄4 cup maple sugar
1⁄4 cup coconut sugar
1⁄4 teaspoon fine sea salt
1⁄2 cup chilled ghee, or palm shortening
1⁄2 cup shredded unsweetened coconut
3 pounds baking apples
Finely grated zest of 1 orange
Finely grated zest of 1 lemon
1 teaspoon freshly squeezed lemon juice
1⁄4 cup pure maple syrup
1 teaspoon ground cinnamon
1⁄2 teaspoon ground nutmeg
1⁄4 teaspoon ground allspice
Whipped cream (dairy or non-dairy), optional
Directions:
In a large mixing bowl, mix together the cashew flour, coconut flour, arrowroot, maple sugar, coconut sugar, and salt. Mix the ghee into the flour mixture using a pastry blender or two knives, until the mixture has the texture of coarse sand. Add the shredded coconut, and use your hands to toss and squeeze the mixture until large, moist clumps form. Place the bowl in the freezer to chill while you prepare the filling.
Peel and core the apples, then cut them into large wedges. In a 2-quart baking dish, combine the apples with the orange zest, lemon zest, lemon juice, maple syrup, cinnamon, nutmeg, and allspice. Remove the topping from the freezer and scatter it over the apples. Place the baking dish on a baking sheet and bake for 1 hour, until the top is brown and the sauce is bubbling. Serve warm with whipped cream on top.

1⁄2 cup finely chopped onion
1⁄2 cup finely chopped fresh mushrooms
1⁄4 cup finely chopped celery
2 garlic cloves, minced
2 1⁄2 teaspoons olive oil
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
1⁄4 cup crumbled Gorgonzola cheese
4 boneless skinless chicken breast halves, 6 ounces each
1⁄4 teaspoon salt
1⁄4 teaspoon pepper
1 egg white
1⁄4 cup ground walnuts
Directions:
In a small skillet, saute the onion, mushrooms, celery and garlic in oil until tender. Stir in spinach and cheese; remove from the heat. Cut a lengthwise slit through the thickest part of each chicken breast; fill with spinach mixture. Sprinkle with salt and pepper. Place egg white and walnuts in separate shallow bowls. Dip one side of chicken in egg white, then in walnuts.
Place in an 11-inch x 7-inch baking dish coated with cooking spray. Bake, uncovered, at 350 F for 25 to 30 minutes, or until chicken juices run clear.

1 pound Gulf lump crabmeat, picked
1⁄3 cup red bell pepper, diced small Juice and zest of one lemon
1 scallion, thinly sliced Aioli or mayo, just enough to combine
1 pinch Old Bay seasoning
Couple dashes of hot sauce (Louisiana or Cholula)
Salt and pepper to taste
Directions:
1. Place all ingredients in metal ring, or loosely form into a patty. Place in hot cast iron.
2. Flip once until browned on both sides. Serve immediately. Garnish with grilled lemon and either tartar or remoulade.

For fall birthdays or other special occasions, skip the celebratory cake for something even more eye-catching: an elaborately decorated pie! Not too many people can resist the tart flavor of fresh apples and the buttery, flaky appeal of a delicious pie crust. Turn a storebought or homemade pie into an artistic masterpiece with these directions for “Flying Unicorn Pie” from “Pies are Awesome: The Definitive Pie Art Book” (Quarto) by Jessica Leigh Clark-Bojin.

Flying Unicorn Pie
Makes 1 pie
Ingredients:
Egg wash (or almond milk if making a vegan pie)
Brown gel food color
Vanilla extract
Assortment of sanding sugar, sprinkles, and small Sixlets or dragées
Gold and pearl luster dust
Vodka or any clear alcohol or extract to mix with the luster dust
1⁄3 cup raisins
1⁄3 cup chopped walnuts
Supplies:
The pie pan of your choice
Baking sheet
Parchment paper
Food-safe precision knife
Pastry brush
Food-safe artist brushes
Ramekins or small containers to mix color and hold egg wash
Fondant sculpting tool (or toothpick)
Directions:
1. Roll out the dough of your choice onto parchment and cut out all the Flying Unicorn template pieces with a sharp knife. Cut out as many “rays” as you like. Don’t worry if they look long; they’ll shrink in the oven! (Purchase the cookbook for the template or use clip art to create your own template.)
2. Coat all the pieces in the egg wash using a pastry brush.
3. Paste the pieces together using the egg wash as “glue.”Smooth out the joints with the back of your fingernail or a fondant sculpting tool. If you have any trouble lifting the pieces, just pop your work in the freezer for 2 minutes, then use a spatula to lift the bits. Score some feather lines in the wings with a fondant sculpting tool.
4. You can either paint the unicorn now with gel colors or just give it a quick vanilla wash. Make sure you choose colors that will stand out from your background. Bake the pieces at 400 F (200 C) for about 8 minutes, or until golden brown. Every oven is slightly different so keep an eye on it. Set the baked pieces aside to cool while you make the base pie. If you are making your base pie, add a decorative crimped edge of some sort to fancy it up.
5. Once the base pie has baked, place your cooled “ray” pieces evenly around the top of the base pie with a spatula. Let the pie fully cool and then add the edible bling of your choice (This is the fun part!).
6. For the final step, place a dab of jam, chocolate, sugar glue, or leftover filling in the center as glue, and place your unicorn with a spatula. You can add some luster dust mixed with a bit of vodka now if you feel like it needs a bit more fabulousness.
Tip: Since you are going to be coating the top of this pie in sanding sugars, select a filling that is not overly sweet — maybe something tart — don’t put any sugar in the crust. You can use any flavor of filling you like and the dough of your choice. You can also use a store-bought pie.

Natureenthusiasts are known to say that spending time in the great outdoors has a positive effect on their mental and physical well-being. Such an outlook is more than mere speculation, as it turns out that spending time in nature provides a host of health benefits that might surprise even the most devoted outdoors enthusiasts.
Nature And Cognitive Health
A 2010 study published in the American Journal of Alzheimer’s Disease & Other Dementias found that engaged persons with dementia in horticultural therapybased (HT-based) programming solicited higher rates of participation than traditional activities (TA) programming. In addition, a separate 2013 study in the journal Dementia found that exposure to a therapeutic garden had a positive impact on the quality of life of people with dementia. And it’s not just dementia patients who can experience the cognitive benefits of time spent in nature, as the Hagley Museum and Library report that numerous studies have found exposure to nature improves cognitive function.

Given the aforementioned health benefits related to spending time in nature, it’s easy for even non-scientists to conclude that being outdoors has a profound impact on overall well-being. But non-scientists can rest assured that recent research has confirmed such conclusions. A 2019 study published in the journal Scientific Reports found that individuals who spent at least 120 minutes a week in nature were significantly more likely to report good health and psychological well-being than those who spent less time outdoors. Though the authors of the study cautioned that the exposure-response relationship was under-researched and therefore likely needed to be studied more extensively, in the meantime individuals, after a consultation with their physicians and confirmation that it’s safe to get out more often, can aspire to spend at least 120 minutes in nature each week. The results may speak for themselves.
As the days become shorter and the weather cools down, a new crop of allergy symptoms can arise, turning the autumn season into one marked by sneezing, scratchy throats and itchy eyes. Medications can alleviate such symptoms, but allergy sufferers may want to investigate some natural ways to beat allergies. According to the American College of Allergy, Asthma & Immunology, ragweed is one of the more common triggers of autumnal allergies. Ragweed contributes to “hay fever,” which is a term to describe allergic rhinitis that occurs as a symptom of ragweed pollen in the air. Ragweed releases pollen in mid-August, and it can continue to be problematic until a deep freeze arrives. Other sources of fall allergies include leaf mold and pollen that is present on fallen leaves. This gets circulated when people begin to rake or blow fallen leaves. Classroom pets and chalk dust in schools (although chalkboards are largely a thing of the past) are other autumn allergens.
The good news is that many natural remedies work just as effectively as over-thecounter medications in regard to combatting ragweed and pollen problems. Here’s how to beat the fall allergy blues.
• Stay Away From Pollen. Stay away from pollen and prevent it from being tracked indoors. Remove shoes when walking through the door. Take off clothes worn outside and launder them promptly, showering to wash pollen off of the body. Use an air conditioner or keep windows closed when the pollen count is high.
• Increase Omega-3 Fatty Acids. It is well documented that fatty acids are good for brain health and cardiovascular wellbeing, but these acids also may help with allergies. A German
study linked foods high in omega-3 fatty acids with the ability to fight inflammation, which is a hallmark of allergy suffering. Foods that are high in fatty acids include walnuts, flax, eggs, and cold-water fatty fish.
• Rinse Off Pollen. Use a mild cleanser to rinse the eyelids and eyelashes of pollen, as this is where it tends to congregate after being outdoors. Use saline spray to clear nasal passages of excess pollen as well.
• Take Natural Supplements. A study published in the journal Clinical and Experimental Allergy found participants who used tablets of the herb butterbar showed significant allergy relief after only one week. Select herbs from reputable manufacturers who certify them.
• Use Eucalyptus Oil. This oil is great to have in the house to help clear up sinuses and provide nasal congestion relief. Mix a small amount with coconut oil and rub onto the chest. There also is some evidence that adding a few drops of eucalyptus oil to cleansing products can help kill dust mites around the house.
• Wear A Mask. When doing housework or yard work, wear a mask to reduce the inhalation of specific allergens.
