RECIPE OF THE WEEK: Wee Chicken & Waffles with Jezebel-Maple Syrup
Children
commonly like to give their mothers a break from cooking on Mother’s Day. Youngsters may be eager to help out in the kitchen and whip up something that Mom is certain to enjoy. But many recipes can be complicated for younger children or others who might not be so adept with meal creation. However, with a few ingredients that families may already have on hand, it’s possible to craft a delicious Mother’s Day brunch. This recipe for “Wee Chicken & Waffles with Jezebel-Maple Syrup” from Denise Gee’s “Southern Appetizers: 60 Delectables for Gracious Get-Togethers” (Chronicle Books) utilizes commercially available miniature waffles and popcorn chicken bites to create a chicken and waffles dish with a kick. Serve alongside mini muffins, deviled eggs, cheese and crackers, and other brunch dishes that are simple for youngsters and their little fingers to prepare.
Serves 10 to 12, Three or Four Waffles Each Jezebel-Maple Syrup
2 cups maple syrup
1/4 cup pineapple preserves
1/4 cup apple jelly
1 1/2 tablespoons prepared horseradish
3/4 teaspoon ground black pepper
Directions:
1/2 teaspoon salt
40 mini waffles from a 10.9-ounce package, lightly toasted
40 pieces cooked fried popcorn chicken
Finely chopped fresh Italian flat-leaf parsley or green onion for garnish (optional)
Hot sauce for serving
To make the syrup: In a large microwave-safe glass measuring cup with pour spout (one holding at least 3 cups) or a bowl, add the maple syrup, pineapple preserves, apple jelly, horseradish, pepper, and salt; whisk to combine.
Microwave the mixture on high for 35 seconds. (You also can heat it in a small saucepan on low until the mixture is warm.) Stir and taste, adjusting the flavor if desired. Set the syrup aside.
Place the toasted waffles on a large serving platter. Top each waffle with a piece of chicken. Drizzle the chicken-waffle bites with about 1 teaspoon of the syrup. Garnish with the parsley, if desired, and serve with the remaining syrup and hot sauce.

Bethpage Is Now FourLeaf Federal Credit Union
Marking the next chapter in its 83-year history, Bethpage Federal Credit Union is now officially FourLeaf Federal Credit Union. New signs and branding were unveiled today at FourLeaf’s headquarters and all of its branches across Long Island, Queens and New Jersey.
The name change, which is part of a strategic rebranding initiative, comes at a time when the credit union, the largest in the Northeast region, is expanding its presence to even more communities in New York and the Tri-State area.
The new name, FourLeaf, represents the credit union’s commitment to community, prosperity, innovation and purpose, while a new logo – two intertwined infinity symbols – signals infinite possibilities for its members and the communities it serves.
“FourLeaf members will continue to receive the same great service they know and expect, with easy and convenient banking options to meet all of their financial goals and needs,” said Linda Armyn, President and CEO.
“We plan to continuously enhance our member offerings and are thrilled about what the future holds.”
All membership information remains the
same and members will, of course, continue to see their favorite branch staff as well.
FourLeaf remains committed to making a positive impact on the communities it serves through grants, partnerships, and community programs. This includes the annual Air Show at Jones Beach –continuing as normal as the FourLeaf Air Show at Jones Beach – the Turkey Drive benefiting Island Harvest, Voluntary Income Tax Assistance, the Northwell Health Walk, and many other initiatives.
In addition, the Money Like a Woman movement, launched in 2024, will continue to grow under FourLeaf this year, with several new programs inspired by women and designed to benefit everyone.

Did You Know?
Volunteering is a great way for individuals to strengthen their communities, but it also can be a unique way for individuals to improve their own overall happiness. A recent study published in the Journal of Happiness Studies examined 70,000 participants, each of whom received surveys that asked questions regarding their volunteering habits and mental health. The study found that, when compared to those who did not volunteer, people who had volunteered in the previous 12 months were more satisfied with their lives and gave their overall health higher ratings.

Laughter Is The Best
Medicine
There’s some truth to the popular notion that “laughter is the best medicine.” The United States Department of Veterans Affairs notes that laughter has physiological effects on the body that lead to changes in body chemistry and brain function. For example, laughter increases heart and respiratory
rates and oxygen consumption over a short period. These changes ultimately move individuals into a state of relaxation. Additional research has found that laughter can lower levels of the stress hormone cortisol, supporting the suggestion that laughter is an effective and even multi-faceted “medicine.”
