Spicy Southwest Crustless Quiche Servings: 6-8 Ingredients: • 8 large eggs • 3/4 cup heavy whipping cream • 3/4 cup milk • 1/2 teaspoon each salt and pepper • 12 ounces bulk pork sausage, cooked and drained • 6 ounces jalapeno jack cheese (pepper jack), shredded (1 1/2 cups) • 1/2 cup chopped green pepper • 1 medium jalapeno pepper, seeded and sliced

Directions: • Heat oven to 350°F. • Whisk the eggs, cream, milk, salt and pepper in a large bowl. Stir in the sausage, pepper jack and bell pepper.

• Pour in a greased 9-inch deepdish pie plate. Top with jalapeno pepper.

• Bake for 40-45 minutes or until center is set and a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.

June is National Dairy Month NATIONAL DAIRY MONTH started out as National Milk Month in 1937 as a way to promote drinking milk. It was initially created to stabilize the dairy demand when production was at a surplus, but has now developed into an annual tradition

that celebrates the contributions the dairy industry has made to the world After the National Dairy Council stepped in to promote the cause, the name soon changed to “Dairy Month.”

National Dairy Month is a great way to start the summer with

MEET THE FARM FAMILY

Hawk High Dairy to host Monroe County Dairy Hawk High Dairy in rural Norwalk will reprise its role as Monroe County Dairy Breakfast host Saturday, June 4.

Owners Connie and Bob Radke first hosted the breakfast in 2000, when they milked 250 cows. Now, the third generation — Walker Rynes, Zoey Rynes and Tanner Rynes — will offer the public an updated view of the farm and the 650 cows they milk today.

Wa lker Ry nes, t he farm manager, was only 3 1/2 when his grandparents and parents, Mike and Andi Radke-Rynes, hosted the dairy breakfast in 2000. His sister Zoey was a toddler, and his brother Tanner hadn’t been born.

All three later graduated from Brookwood High School, and Walker and Zoey obtained bachelor’s degrees from UWPlattev i l le, majoring in ag business and dairy science, respectively. Walker also had a stint as an ag intern at Wisconsin Bank & Trust.

The three grandchildren now work at a farm that has changed considerably from when their grandparents hosted the 2000 dairy breakfast.

Then consisting of 335 acres with 465 rented, the farm has grown to 580 acres with 1,050 rented.

The family’s origins with the farm occurred in October 1990, when the Radkes became one of t he f irst four fa milies to sign a lease purchase agreement with the Wisconsin

Farmland Conservancy, a nonprofit that helped beginning farmers who lacked capital to get into farming. Eugene Hansen had owned the dairy at the time, and, wishing to retire, had contacted the conservancy about a possible sa le. The

conservancy purchased the farm and sold it to the Radkes, who began their Hawk High career with 55 dairy cows and a few head of young stock.

(Continued from page 8) first trust farmers to move into full ownership in 1993.

At that point, they were milking 78 cows and had 50 head of young stock.

Farm improvements began in 1991, when they built a new barn roof. In 1992, a plate cooler and automatic washing system for the milkers was installed, and then, in 1994 and 1995, upgrades consisted of a TMR (total mixed ration), fans and an air ventilation system.

Also in 1995, the Radkes purchased on a land contract 105 acres with 65 tillable from Roy and Mary Montividus.

In 1997 Bob and Connie added a new 200-cow, curtained, free-stall barn, and a double-eight herringbone milking parlor was built into the existing stancion barn. The rest of the barn was converted to a holding area, maternity pens, utility room and office.

To facilitate the transition of ownership from one generation to the next, the dairy became a limited liability in July 1999.

Hawk High Dairy’s next major expansion occurred in 2008, when it added another 250 cows in a free-stall barn that was connected to the existing free-stall barn. At that point, they were able to milk 450 cows a day.

At the start of 2015, the 1997 barn was demolished and replaced with a new one that could accommodate the same number of cows, but also added a fresh-cow pen, maternity pen, and a pen for dry cows.

Then, in 2016, Hawk High Dairy got a new DeLaval double-12 parallel parlor containing a utility room, direct ship room, office and employee breakroom.

With this expansion, they were able to milk 650 cows in about 5 1/2 hours, with some downtime between shifts.

Hawk High Dairy sends its milk to Grassland.

2017 U.S. census data shows a 16% increase in the number of female farmers in Wisconsin, just over 38,500; women make up 35% of all producers in the state.

Number of Wisconsin dairy cows: 1,273,000 Fontina and Herb Crescent Rolls

Ingredients • 1 tablespoon minced fresh oregano • 1 tablespoon minced fresh rosemary • 1 tablespoon minced fresh thyme • 1 tube (8 ounces) refrigerated crescent rolls • 2 ounces Fontina cheese, finely shredded (1/2 cup) 1 large egg, lightly beaten Cooking Instructions • Heat oven to 350°F. Line a 15 x 10-inch baking pan with parchment paper.

• Combine the oregano, rosemary and thyme in a small bowl.

• Unroll crescent roll dough; separate into eight triangles. Top each with 1 tablespoon fontina and 1/2 teaspoon herbs.

• Roll up each from the wide end. Place rolls point side down 2 inches apart on prepared pan. Brush with egg wash. Sprinkle with remaining herbs.

• Bake for 12-14 minutes or until golden brown. Serve warm.
