Bangkok Airways Boutique Series 2025 will hit the start line at three locations: The Samui Half Marathon on June 21-22, the Trat Half Marathon on August 16-17, and the Sukhothai Half Marathon on September 27-28. Another historical gem is Wat Chamadevi, also known as Wat Ku Kut. This ancient temple, believed to be over 750 years old, is a rare landmark of Mon architecture in Thailand. A TASTE OF THAILAND
Laab Unleashed
Imagine a salad that’s anything but ordinary, packed with spices, herbs and flavours that tell the story of Thai traditions. That’s Laab!
Despite somewhat mysterious origins, the spicy, flavour-packed meat salad known as Laab has secured a treasured status in Thai cuisine. A traditional staple in the North and Northeast, this flavour-packed dish was once reserved for special occasions like merit-making ceremonies, weddings and funerals. Back then, preparing Laab was more than just a solo task, requiring a village-wide effort – starting with the butchering of a cow or pig.
While cherished across the whole of Thailand, the flavours of Laab can vary significantly from one region to another. Laab in the North of Thailand is a bold and intense experience, characterised by earthy aromas from local spices like Ma Kwaen (similar to Sichuan pepper), long peppers and nutmeg. In contrast, the more widely available Northeast version is
known for its balanced mix of roasted rice, spices and a subtle, tangy finish.
These days, Laab appears on menus spanning street vendors and family-owned eateries to high-end restaurants in the glitziest neighbourhoods.
The word “Laab” in the Northern dialect means to “finely minced meat”. True to its name, a good dish of Laab requires the meat – whether chicken, pork, beef, duck, buffalo or even fish – to be finely chopped. Exceptions include a version called Goi, in which bite-sized pieces of meat are blanched and then seasoned. Herbs and greens are essential components of Laab, adding both aroma and freshness. Spring onions, coriander, shallots and lemon balm leaves not only enhance the flavour but also help balance the dish’s meatiness. The seasoning is
where Laab truly shines: a combination of chilli peppers, fish sauce, lime juice, sugar and, in some recipes, a splash of umami from fermented fish sauce or dried chillies. Traditionally, this hearty salad is served with sticky rice and bitter-tasting local greens like Siamese neem, young acacia and wild betel leaves.
Over the years, Laab has inspired numerous spinoffs. Think Laab Nam Tok made with grilled, fatty cuts of meat, or Laab Khua, a gutsy version with boiled offal that is then roasted to perfection. More playful versions like Laab with glass noodles and fried Laab balls have become common sights in Northeastern-style restaurants.
Whether you prefer it fiery and aromatic or tasty-tangy, Laab remains a beloved, versatile dish that continues to evolve and delight tastebuds nationwide.

Also called pitaya, this exotic fruit is known as Kaew Mangkorn in Thai. The most common variety boasts bright pink skin and white flesh dotted with tiny black seeds. The less common varieties have vibrant red flesh or white flash with yellow skins and are often sweeter than the common pink version.
The dragon fruit plant is a type of cactus which prized not only for its fruit but also its ornamental beauty. Its red berries contrast dramatically with thorny green stems, making it a striking addition to gardens.
Native to Central and South America, the dragon fruit was brought to Asia by the French in the early 19th century. Today it flourishes in tropical regions worldwide, with Vietnam, India and Ecuador being the top three exporters globally.
The fruit is typically enjoyed fresh, boasting a flavour profile somewhere between a sour kiwi, sweet pear and juicy watermelon. Just cut it in half lengthwise and scoop out its flesh, or peel off the skin and slice it into bite-sized pieces. Dragon fruit can also be added to salads and blended into smoothies.

The colourful appearance of Bua Loy is achieved using natural food dyes derived from fruits, vegetables, and flowers. The lilac colour comes from steamed taro while the yellow is from steamed pumpkin. Other variations include green from rich pandan juice, orange and purple from steamed sweet potato, red from steamed beetroot, and blue from butterfly pea juice. These natural colourings are mixed into the
dough, which is then shaped into bite-sized balls and boiled to perfection.
Bua Loy comes in many variations, with the coconut milk variety being the most popular and widely found. Other options, like Bua Loy Khai Whan (poached egg in ginger and sugar water) or Bua Loy served in fresh milk with young coconut and ginger water, add to the dessert’s delightful diversity.
With so many ingredients and flavours to enjoy, alternative Bua Loy recipes have emerged, including varieties with fillings. Our recent feast at Kapi Sator was a lip-smacking culinary journey through the rich heritage of southern Thai cuisine. As one of only four Koh Samui restaurants awarded a Bib Gourmand in the Michelin Guide Thailand 2024 and 2025, this unassuming gem tucked away on a quiet road in Bo Phut delivers bold and beautiful flavours that both delight and surprise.
Setting the relaxed tone with her warm welcome was Sureewan Ratchadarak, the visionary behind Kapi Sator. Her and her team’s genuine hospitality nurture an inviting atmosphere that made us feel right at home.
Born from Sureewan’s deep appreciation of southern Thai flavours, Kapi Sator presents authentic regional classics carefully crafted with traditional
techniques and locally sourced ingredients. House-made curry pastes and the freshest seafood caught daily from the island’s waters guarantee that every dish sings with authenticity and exceptional freshness.
Our meal was a symphony of dishes, each with a unique flavour profile. True to tradition of family-style dining, the feast showcased an array of cooking techniques, all coming together to celebrate a perfect balance of sweet, salty, spicy, and sour flavours. The sight of the spread – comprising stir-fries, soup, curry, and a raw vegetable platter with dip – evoked the joy of Thai dining where a different tastes and textures can be enjoyed in one sitting.
