Talk us through your background. I grew up in Mumbai, but from the age of 10, I would travel to the UAE almost every year, so I’ve always felt rooted in both places. I studied in London for my undergraduate degree, but I made the decision early on to return and pursue the family business. It wasn’t a conventional choice, but it felt right. This is what I’ve always been passionate about, building on our legacy and shaping the future of Shama. Fragrance has been in the family for generations. My grandfather started the business, my father entered it at 13, and I stepped in at 20. My father taught me how to understand oud, not just as a product, but as a craft – that training shaped everything I do today.

Your fragrances blend Indian attar traditions with Arabian preferences. How do you preserve authenticity while creating something new? We honour both traditions, without

diluting either. Indian attars and mukhallats are subtle and complex; Arabian perfumery is bold and expressive. The key is to stay rooted in the fundamentals, traditional techniques, proper extraction methods, and the highest quality raw materials. At the same time, we stay aware of what today’s customer values – versatility, convenience, and modern formats. That’s why we continue to express our perfumery through newer formats like perfume sprays, body sprays, and oils, products that speak to a younger generation while staying true to our roots. You’ve called your Abu Dhabi opening “more than expansion.” What makes this boutique such a defining moment? After having our head office in the UAE for over 10 years, finally opening a retail location that truly reflects who we are as a brand is incredibly meaningful. Our first ever store in the

UAE was nearly 35 years ago in Al Ghurair Centre, Dubai – so in many ways, the roots were planted long ago. Now, we’re expanding again, this time with intention, starting with the capital. Abu Dhabi feels like a full expression of Shama: the space, the experience, the design; it’s all aligned with how we want people to feel when they engage with the brand. We’re excited to grow our footprint slowly but meaningfully across key cities in the UAE.

How do you balance sustainability with your craft? We’ve always worked in small batches with a focus on natural ingredients, so in many ways, sustainability was already part of our process. We’re conscious of our sourcing, packaging, and footprint, but we’re not here to claim perfection.

Your work blends Indian artistry with Arabian design, how do you balance these two rich traditions in your creations? India gives us the soul – the oils, the rituals, the philosophy behind scent. Arabia gives us the finish – the opulence, the ceremony, the boldness. We don’t try to force a balance. We let each element speak where it naturally fits. When both are respected, they work beautifully together. From guided scent styling to curated tea stations, you come up with personalised experiences. Why is engaging all the senses such a key part of the Shama experience? Because scent isn’t isolated; it’s part of a moment, a memory, a ritual. We want every Shama space to feel layered and thoughtful, not transactional. Engaging the senses helps people slow down and connect with the brand on an emotional level. That’s where loyalty, hospitality and impact are built.

With a stronger presence now in the Gulf, what’s next for Shama in terms of innovation, collaborations, or new markets? We’re deepening our presence across the GCC with new flagship stores coming up end of 2025 and start of 2026. Participating in key fragrance exhibitions like Scent Arabia and Sharjah Oud & Perfume. Exploring collaborations with both private and government partners to tell our story on a larger stage. We’re also looking into product extensions that reflect how scent can live beyond the bottle, in space, ritual, and design. This is the Fall/Winter 2025 issue – how would you best describe your style? Polished, intentional and unique, I prefer clean lines and classic silhouettes that feel timeless. But I do like to add a pop of colour, texture or element when it feels right, a detail that catches the eye without being loud. I’m constantly inspired by my travels, especially local designers and boutique finds that carry a story or a sense of place. For me, style isn’t just what you wear, it’s how you carry yourself, how considered your choices are, and how you express yourself.

Rather than rushing to solutions, we took the time to refine our approach. Santoni’s success has always been built slowly, step by step, through a deep commitment to quality and craftsmanship. This approach has helped us weather tough times and emerge stronger. Each challenge is simply another opportunity to evolve and strengthen our foundation.

What is the secret to scaling without compromising on quality? The secret to scaling without compromising on quality lies in constant monitoring and refinement. We

maintain the highest standards by regularly re-evaluating our supply chain, not just in response to challenges, but as a proactive effort to uphold our core values.

A key element in this process is our adoption of Lean Manufacturing. Being in business has taught me a lot about myself, but one of the most important lessons is that I’m not afraid to take risks, even when everything feels like it might fall apart. I trust my gut, even when it doesn’t always make sense, because it’s brought me to where I am today. I’ve also come to realize that it’s okay to be imperfect, what matters most is how you bounce back, learn from your mistakes, and keep moving forward.

You’ve invested in the Middle East with retail stores- why is a physical still so relevant? Despite the growth of online shopping, physical stores remain incredibly important to us. They allow us to build a true relationship with our clients, offering something that goes beyond what a screen can provide – personal connection and trust. A tailored experience in-store allows us to engage with customers on a deeper level, guiding them through our collections and ensuring that every detail meets their expectations. If you could give one piece of advice on building a business and one on life, what would it be? Stay focused on what you believe. In the face of challenges, distractions, or even doubts, holding on to your vision and values is what will guide you forward and keep you grounded.

Unveiling Parmigiani Fleurier’s Toric Petite Seconde

Venturing down the rabbit hole of the watch world would most definitely leave you in awe most of the time. That feeling is brought to life by the clear passion that watchmakers fuel their craft with. Believe me when I say that even though a watch may make your jaw split in wonder, making you think you’ve surely seen it all, in the watch world, however, – that is just another day.

The Parmigiani Fleurier Toric Petite Seconde is one such watch whose execution, particularly the dial execution, is so unique it makes one think: ‘How did they conceive that?’ It was as if all the dialmaking methods that existed in main-

stream watchmaking were simply not going to suffice for this timepiece.

So, what did Parmigiani do? They revived a historic dial technique called ‘Grenage’, a method once employed in antique marine chronometers and table clocks. This shouldn’t come as a surprise, as Michel Parmigiani, the brand’s namesake, was a master watch restorer. This background exposed him to many classical watchmaking techniques, much like the one meticulously applied here.

The exquisite dial of the Toric Petite Seconde is achieved through a laborious process. A paste is created from tartar cream, sea salt, silver, and demineralized water. This paste is then spread evenly over the solid 18K rose gold dial. Following this,

a combination of specialised brushes, both hard and soft, are used to rub the dial in continuous circular motions. This repeated action first imparts a leaden hue and gradually develops a finer, whiter, grained texture. As the brushing continues, resistance builds, facilitating the silver particles to bind to the surface through textural friction and a mild chemical reaction. The result is a profoundly unique, grained matte finish that shimmers distinctively as light interacts with it.

Why undertake such an intricate process, one might ask? Well, how else would one achieve something so unique and exclusive? It’s a testament to the passionate nature of watchmakers, who thrive on being challenged. If they ever discover a material, process, or chemical reaction that holds even the remotest chance of complementing their pursuit of exquisite watchmaking, rest assured they will not only attempt it but strive to perfect it in the process.

Beyond the dial, the entire execution of the Parmigiani Fleurier Toric Petite Seconde is elevated by the deliberate use of 18ct rose gold. This watch features a manual winding movement with gold elements, an 18ct rose gold case, a gold “chevé” dial, gold indexes and hands, a gold crown, and a pin buckle that secures the meticulously hand-stitched alligator leather strap in grey celadon. The movement itself, the manual winding caliber PF780, boasts a 60-hour power reserve.

While some might be new to the name Parmigiani, it is crucial to understand the substantial weight and reputation it carries. Michel Parmigiani is a master watchmaker dedicated to exploring new avenues for the craft, consistently bringing forth stunningly beautiful pieces for us to admire and, for some, to make their own. Even though the price tag will keep most at arm’s length, one cannot deny the profound allure of its existence.

In an age where technology threatens to render traditional craftsmanship obsolete, a quiet revolution is taking place in the world of haute horology. At its forefront stands Louis Vuitton, whose Watch Prize for Independent Creatives has become a beacon for those who believe mechanical watchmaking remains the ultimate marriage of art and science. The maison just announced the latest edition of the competition’s 20 semi-finalists, which reveals not just extraordinary technical mastery, but also the unfettered imagination of creators who treat each timepiece as a blank canvas for innovation.

The significance of this initiative cannot be overstated. The competition was established in collaboration with La Fabrique du Temps Louis Vuitton – the Maison’s state-of-the-art watchmaking facility in Switzerland. The philosophy behind the initiative nods to preserving the soul of watchmaking. As Jean Arnault, Louis Vuitton’s Watch Director, observes: “An important aspect of watchmaking lies with independent creators who transform a singular vision into mechanical artistry. This new generation of watchmakers is remarkable not only for their talent, but above all for daring to create truly original instruments of precision that are also works of art.”

What makes this year’s selection particularly compelling is its global diversity and technical ambition. Consider Anton Suhanov’s St. Petersburg Easter Egg Tourbillon Clock – a breathtaking fusion of Russian decorative arts with Swiss precision mechanics. Or JN Shapiro's Resurgence, which reinterprets classic American watchmaking through a contemporary lens. From David Candaux’s avant-garde DC6 Titanium to Petermann Bédat’s poetic Seconde Morte, each semi-finalist demonstrates that true innovation often flourishes outside large manufactures.

The judging process reflects the Prize’s top standards. This fall, a committee of 65 experts – including master watchmakers, designers, and engineers – will evaluate entries across five criteria: design, creativity and audacity, details and finishes, complexity and technical innovation. The depth of assessment ensures that only the most deserving progress to the final round in December, when five finalists will be announced.

For the winner, the rewards extend far beyond the €150,000 (Dhs647,280) grant. The year-long mentorship at La Fabrique du Temps offers access to the Maison’s centuries of savoir-faire and its network of artisans. This symbiotic relationship – where Louis Vuitton’s heritage nurtures independent creativity – may well produce horology’s next groundbreaking invention.

The finale is set to take place in March 2026 at La Fondation Louis Vuitton, where the winner will be announced. In supporting them, Louis Vuitton reaffirms its commitment to excellence while ensuring that mechanical watchmaking’s next chapter will be as thrilling as its glorious past.

What do the first 30 minutes of your day look like? Well, I’d love to say I start with quiet introspection, mindful meditation, or a perfectly optimised morning routine. But the truth is, most mornings begin with one of our kids as nature’s alarm clock – jumping into bed with some urgent question or deciding it’s the perfect time to start practicing piano. It’s always some version of beautiful chaos: breakfast negotiations, backpack packing, uniform hunting, and trying to get everyone out of the door on time. The one thing I’ll always do is grind my 18 grams of freshly roasted coffee beans and press myself a double espresso on my Rocket machine. Post school run, I try to make it to a morning yoga session one or two times per week. That’s usually the first real moment of calm in the day. That said, I do check my biometrics first thing (HRV, sleep score, resting heart rate) from my Oura Ring, it has helped me improve sleep hygiene immensely. What inspired you to launch meta[bolic]? It was personal. My grandfather passed away from complications related to diabetes. Both of my co-founders have fathers who are diabetic. So we all understood firsthand, the emotional and physical toll of living with metabolic disease.

But beyond the personal stories, there was a very rational angle. This was back in 2019, and I had just sold my first company, Amana Healthcare. For the next chapter, I was looking for a systemic problem in medicine worth solving – one with massive scale, immense societal impact and under-leveraged data. Diabetes stood out. It’s a condition that generates more daily data per patient than almost any other chronic illness. And yet the way it’s treated globally is still fragmented, reactive, and reliant on sporadic appointments and outdated protocols. So clearly, whatever we’re doing – it doesn’t

work. At the same time, wearables were becoming more sophisticated, straddling the divide between wellness and clinical relevance. So, we found ourselves in a world that’s becoming increasingly data rich but insight poor. meta[bolic] was built to flip that paradigm, to turn data into insight, insight into action, action into outcomes – and to do that at scale. We set out to make care continuous, proactive, and deeply human.

Meta[bolic] powers two platforms –GluCare.Health that looks after primarily our Diabetic population, and Zone.Health that has evolved to be our healthspan offering (including medicated weight loss, hormone replacement therapy, men’s health and TRT, perimenopause and women’s health).

GluCare.Health is the first ICHOM-accredited metabolic clinic – why does this matter to patients? The International Consortium for Health Outcomes Measurement (ICHOM) is a non-profit organisation, founded out of Harvard and the Boston Consulting Group, transforming the global health care system by developing and promoting standardised, value-based healthcare frameworks. These are clinical and quality-of-life guidelines that place patients at the centre of care, prioritising quality and efficiency.

It matters because ICHOM focuses on what patients actually care about: outcomes that affect their lives, not just what shows up in lab results or billing codes. It holds us accountable not just for delivering care, but for delivering results. And in our

domain, results are very easily quantifiable – weight loss, ALC reduction, improved energy, reduced medication dependence. But there’s a deeper issue worth addressing here. The single biggest impediment to value-based care in insurance-driven markets is the 12-month contract model. Insurers have no real incentive to invest in long-term health outcomes if they might not retain the member next year. That forces short-term thinking – treating symptoms, not systems. Our model challenges that. We’ve proven, for example, that by closely monitoring a patient’s glucose, sleep, diet, stress, and movement in real time, we can help them achieve incredible outcomes. That’s the power of continuous care. But it requires a new kind of commitment from both the care provider and the system around them.

How does meta[bolic]’s real-time wearable data drive better outcomes than traditional care? Traditional care is episodic – you show up to the doctor’s office once you have a problem, explain what’s been going on, and likely walk out with a medication prescription and a “see you next year!” Once you leave that doctor’s office, they’re blind to what’s happening to you, and if you’re making any progress. It’s reactive by design. And it’s always behind the curve.

Patients at meta[bolic] are supported by a dedicated care team that includes a physician, dietitian, and lifestyle coach. This team monitors their progress in real time through our app, which integrates wearable tech like continuous glucose monitors (CGMs) and the Oura Ring. These devices track everything from blood sugar and sleep to stress and physical activity, giving both the patient and care team a full, upto-date picture. This hybrid model blends digital monitoring with hands-on clinical care, making it possible to intervene early and adjust treatment as needed.

How do you break the stigma on taboo topics at meta[bolic]? By naming them directly. The moment you bring something into the light – whether it’s sexual health, emotional burnout, metabolic dysfunction – it stops being taboo and starts being clinical. We strip shame from the equation by grounding everything in data and science: our model is built on data-driven care and continuous monitoring, which means we’re constantly engaging with real, lived experiences.

We’ve also benefited from a broader cultural shift. You now have credible voices like Dr. Peter Attia and Dr. Andrew Huberman talking about these topics in depth, with science-backed nuance.

Where are you placing your next big healthtech bet, and why? We’re building a health credit system – what we call Longevity Credits. It will be designed to give payers

a reason to invest in long-term health, not just short-term fixes. The big idea is to align everyone in the healthcare ecosystem, including patients, insurers, and employers, around the same incentive: prevention. That means developing infrastructure that can verify real outcomes (based on biomarkers, not just behaviour), and create financial rewards for staying healthy. It’s ambitious, but inevitable. Because if we don’t start financially valuing prevention, we’ll keep paying dearly for treatment. What does success look like to you now, personally and professionally? Once you become a father, your kids become a mirror to your soul, and success on the most fundamental level means raising happy, healthy and well-adjusted kids that go on to contribute positively to society. So, success, for me, lives in legacy – not in what I’ve built, but in what it inspires. In a world where your digital footprint now lives forever, I want that history to show that I improved people’s lives in a meaningful way. Professionally, it’s about building systems that scale without losing their integrity. If meta[bolic] becomes the reference model for real metabolic and preventive care globally, then we’ve done our job.

What’s the biggest challenge you’ve faced, and how did you overcome it? Getting expelled from medical school (three times in total!) was a defining moment. It wasn’t about academics; it was about being a square peg in the round hole of a rigid, hierarchical system. As president of the student body, I challenged some of the deep-seated governance failures at the school. That didn’t sit well with the leadership, and it taught me a swift, hard lesson: power dynamics can be ruthless and unfair. At the time, it felt like a catastrophic failure. In hindsight, it was the best thing that ever happened to me. It forced me onto an unknown path and taught me resilience from first principles. That experience gave me grit, but more importantly, it taught me to have gratitude for adversity.

What’s a “health hack” you swear by that most CEOs wouldn’t expect? I call it the pragmatist’s approach to longevity. It’s not glamourous, costs nothing to do, but it will change your life: treat sleep like a job, eat whole foods, walk often, especially after meals, lift heavy (to failure), manage stress and maintain strong relationships. Also, wearing a CGM (continuous glucose monitor), even if you’re not diabetic, is eyeopening. You begin to understand how your body actually works, not in theory, but in real time. People obsess over food and exercise, but if your sleep is poor, you’re metabolically compromised. Full stop. I treat sleep as a cornerstone, not a luxury.

What’s a disruptive health trend you’re skeptical about? Any trend that equates health with optimisation for its own sake. I’m cautious around the obsession with biohacking as performance theatre, endless supplements, exotic devices, and extreme routines. A lot of it feels like an expensive distraction from what really works: movement, sleep, quality food, strong relationships, and context-aware medical care. What’s one lesson you’ve learned about yourself through building meta[bolic]? That urgency and patience can live together. You can

build fast while thinking long. But maybe the most important lesson? Anything meaningful is inevitably messy. The systems we’re trying to change weren’t built for transformation, they were built for inertia. You have to keep showing up, again and again. Where do you see meta[bolic] in the next 5 years? As the gold standard for metabolic care globally – not just in clinics, but as a platform that underpins how prevention is delivered at scale. We’re expanding into the US and UK, launching new programs that go far beyond diabetes, and integrating AI more deeply into the care experience. meta[bolic] should always feel personal, intelligent, and grounded in science, no matter how big it gets. And the only thing that really matters is the agency that we give our patients to become better versions of themselves.

Kasser is redefining recovery for the modern man with Elite Osteo, setting out to restore your body to a pain-free state of balance and optimal function

Talk us through your background? As a teenager, I developed a strong interest in the gym, which led me to want to learn more about the human body; our anatomy, physiology, and recovery. I’d spend hours reading fitness forums where people shared their workouts, injuries, and nutrition advice. It was on one of these forums that I first came across osteopathy. A member had injured their back and, after trying several different practitioners and treatment methods, it was an osteopath who was finally able to help him. That caught my attention. What appealed to me most at the time was that it was a physically active job where I’d be helping people improve their health and performance. I was especially intrigued by the idea of learning to do adjustments, or “crack” people, as it’s commonly known. Inspired by this, I enrolled to study osteopathic medicine at the University of Surrey. It was a five-year degree, and I graduated with my Master’s in 2014. I’ve now been practising as an osteopath for 11 years, during which I’ve developed my own unique treatment system called the Kasser Method. What are the most common issues you see in high-performing men – both athletes and executives? In executives, poor posture is one of the most common issues I see. Long hours spent sitting at a desk or travelling often result in muscular imbalances, tension, and reduced performance, both physically and mentally. In athletes, the most common complaints are shoulder pain, followed closely by lower back issues. It’s often sport dependent, of course. Sports like tennis, combat, swimming or cricket – anything that involves repetitive or overhead movement – tend to come with

shoulder problems. Lower back pain is especially common in weightlifters, golfers, and runners, where the spine and hips take a lot of load and repetition.

What role does posture play in long-term health and performance? Posture influences more than just how we look. It affects our breathing, digestion, hormone balance and nervous system function. When posture is poor, the body has to work harder to compensate, which can lead to chronic pain, fatigue and poor movement patterns over time.

Good posture supports everything from mobility and performance to recovery and even confidence. But it’s not about holding a single “perfect” position it’s about having the strength and mobility to move freely and adapt to whatever life throws at you. Maintaining good posture is key, remember you don’t get a second chance to make a first impression What are the go-to treatments you deliver at Elite Osteo? The key treatments we offer are our Posture Correction sessions as well as pain relief. We specialise in lower back pain, sciatica and shoulder complaints. At Elite Osteo, we take a holistic and functional approach to treatment. This includes osteopathic adjustments, soft tissue work, joint mobilisation and movement-based rehab. Is there a particular philosophy or method that defines your approach? Yes, I developed my own unique treatment system the Kasser Method. I always put function first. I start by looking at how the body is moving as a system, not just focusing on where the pain is. The goal is to restore balance, improve function and build resilience. I’m also a firm believer in collaboration. Treatment isn’t just passive, it’s a partnership. I want to educate my clients and give them the tools to take control of their own health, whether that’s through movement, mindset, or bespoke aftercare exercises. How can ice baths, infrared saunas, and the whole biohacking wave impact? They’re useful but only when the fundamentals are in place. Ice baths, red light, infrared saunas – they all have solid benefits backed by science, from reducing inflammation to improving recovery and nervous system regulation. But they shouldn’t be treated as magic fixes. If you’re sleeping well, eating right, training smart and managing stress, then tools like these can absolutely enhance your results. But they’re just that, tools. They work best when they’re layered on top of a solid foundation. What are your tips to maintain a good posture, especially after long hours at a desk? The key is movement. The best posture is your next posture – meaning, don’t stay in one position for too long. Aim to stand, stretch, or walk around every 30 to 60 minutes. Even small shifts throughout the day can make a big difference. From a strength perspective, focus on building the posterior chain – your glutes, upper and mid back as well as the hamstrings. Keep mobility high in the hips and thoracic spine. Simple changes like raising your screen to eye level, supporting your lower back, or taking short movement breaks will help keep your posture in check.

How do you see AI and smart technology shaping the future of home fitness equipment? We are pushing to ensure we move in lock step with the growing intelligent parallels in our space. Our mission to is ‘Innovate or Die’, a serious and dedicated position on persistent progress, both from a brand perspective and from a personal health perspective.

How does WalkingPad incorporate sustainability into its products? We are focused on always finding more ways to better improve our shared environment. One small example is the limited use of aerosolized micro-paint chemicals. Limiting spray painting and replacing it with advanced molding processes further limits the exposure of toxins in our air.

What’s your key piece of advice for entrepreneurs entering the health-tech space?

Be true to yourself. You have a life of experiences, connections and motivations for a reason. Find those foundations within yourself and don’t stop searching for projects and products that let you be true to them.

How Hasan Elsayed, founder and director of Nowhere Studio has become Dubai’s new creative vanguard

Talk us through your background. In 1977, my parents moved from Egypt to the UAE. I was born and raised in the city of Al Ain in 1995 alongside 3 sisters. My father always had a camera in our house and made sure we took it on any family trip. He would even document random moments like a school day morning with us posing in front of the car. I think the exposure to the camera, regularly seeing my dad’s interest in printing and creating those family albums, sparked an interest in me. And it turned into a passion after getting my first single-use film camera and developing those first photos when I was 9 years old. I really loved watching movies of all kinds, even horror, with my older sisters and, luckily, one of my best friends, Khalil, who lived in the same neighborhood, had the same love for movies. We both had the dream of directing our own movie in the future. In 2006, we began creating and sharing short stories on YouTube. We hired our friends as actors, who were paid with snacks. From there, I never stopped taking photos and making videos, even going as far as ceasing my engineering degree to pursue filmmaking as a career. I came to that conclusion while editing a passion project at the time and realised that I had lost track of time working on it. I felt like filmmaking was what I wanted to do for the rest of my life. What inspired you to launch Nowhere Studio? I wanted to create a limitless space for people to bring their artistic vision to life. A space where the focus is story and not restriction. And building the space that can achieve that took us around a year and a half of planning and execution. The interior design theme combines brutalism and minimalism to create functionality, and a sense of calm. free, invite-only community club that connects local/international creatives and opens more doors to collaborations. How do you tailor your services to meet the unique needs and visions of each client, especially in the luxury sector? The solutions we work on either in studio rental or production are always centered around quality and efficiency, and with that hopefully making the process of any creative endeavor enjoyable. One of the concepts we are developing is the ability to build your required set out of pre-made pieces that interlock to create rooms of any kind with customisation options, making it more accessible.

How do you maintain a balance between the artistic and commercial aspects of running a business? Striking a balance between both roles can be challenging but having a good understanding of where you stand in each is crucial and having a strong, reliable team keeps everything running smoothly. One thing that often helps me unlock my artistic mindset while working is listening to music, sound is a very powerful tool for me.

Where do you see Nowhere Studio in the next five years? Our plan is expanding with multiple spaces that offer different innovative solutions in the creative industry. The studio will be producing films, original concepts and broadcast shows.

Since its 1968 debut in London’s Knightsbridge, Mr. Chow has defined Chinese fine dining, blending authentic Beijing traditions with contemporary flair. The Dubai menu honours this legacy, featuring signature dishes like hand-pulled noodles – prepared with mesmerising tableside theatrics – and the legendary Beijing duck, carved with precision. THE AMBIENCE

The staff here are cool, making interacting when you dine fun and educational. They're well-informed on the hero dishes, and onhand to make expert reccommendations. With a distinctive aesthetic, Mr. Chow’s in DIFC has all the design details you’d expect

from the coolest new restaurant opening in town, from the iconic from Flos lamps to monochrome furniture. The attention to detail is second to none, making it the ideal location for a special date night or private event.

You need to try the crab claws, the shrimp on a cloud of egg whites (a house special) and the house dish of deep-fried shrimp with chili dressing- the perfect amount of heat.

How chef Jovani Manalo of 3Fils is reinventing modern Asian cuisine in the UAE’s capital

Talk us through your background. I began my culinary journey in 2013 as a kitchen helper in an authentic Korean restaurant in my hometown, Batangas City in the Philippines. My days were spent washing dishes and prepping ingredients, sometimes peeling up to 100kg of garlic and onions daily. It was tough, but it laid the foundation for my discipline and resilience in the kitchen. My first opportunity abroad came with an offer to work in Dubai, and I took it without hesitation. I started out as a cook in a fast-paced Chinese fast food kitchen, where I learned to work under pressure and stay sharp. Over the years, I pushed myself to explore different cuisines like Latin American, Italian, and various Asian styles, so I could master the fundamentals and build a strong, versatile base. In 2020, right in the middle of the pandemic, I joined 3Fils and it was a turning point. I kept pushing, learning, and growing. And today, I’m proud to serve as the head chef here at 3Fils.

What are the hero dishes? There are some classic OG dishes of course, such as Salmon Carpaccio, Dragon, Spicy Tuna, Seaweed Salad, African Powerhouse, and my personal favourites are the Otoro Foie Gras Nigiri, Gyu Grab, and finally the Salmon Nori Tempura. How would you best describe your approach to cooking?

My approach to cooking is deeply influenced by the ethics of Japanese cuisine that I have learned over the years. Rooted in simplicity, precision, and respect for ingredients while embracing a bold, borderless mindset that encourages constant innovation and creative freedom. You’ve brought 3Fils’ bold DNA to the capital, what was your personal vision for the Abu Dhabi menu? I’m focused on incorporating more local produce into my dishes, refining my broader cooking style, and staying true to my philosophy of making the complex simple, always.

How do you balance innovation with consistency, especially when 3Fils already has such a strong identity? For me, it’s really about investing in the team, building them up and learning how to delegate with the right guidance. Consistency doesn’t just happen; it’s a balance of commitment and discipline, and that’s something we aim for every single day. Innovation naturally follows. It’s inspired by the 3Fils team itself; from our culture to the techniques we explore. We’re not swayed by trends, instead, we stay grounded in who we are. That focus is something we put a lot of energy into, and you know what? The team picks it up instinctively. It becomes part of how we move forward.

What’s your secret weapon in the kitchen, the one ingredient or technique that always delivers? The fire inside has to stay lit. That’s something I remind myself and the team all the time. I make sure we stay inspired, always open to new ideas and moments of creativity. We have pep talks every day, and whenever someone needs a boost. At the core of it all, we’re driven by pure passion. How do you deal with creative blocks, especially when perfection is the baseline? Creativity has no limits, there’s always something new to explore. For me, perfection isn’t a final destination; it’s about constant improvement. It’s the mindset of “Kaizen” always refining, always evolving.

How would you describe Dubai’s ever-evolving food scene? Dubai embraces the world’s cuisines and cultures. It’s a place where flavours collide, and ideas evolve. It’s experiential, dynamic, and rooted in fusion, constantly pushing the boundaries of global culinary innovation. This is The Fall/Winter Issue – how would you best describe your style? I’m a punk rock kinda guy. You’ll probably catch me wearing my favourite metal band tee all year round, not just a season. It’s just who I am, and that energy shows up in the kitchen too in the most raw, real and bold form.
