The Heartbeat of Hawai‘i

I The history of these islands will never fit comfortably on paper. It is in the oli, the chant; the mo‘olelo, stories, and in hula. 18

magine that the entire history of your immediate family was passed on in chants and motions, without a single photograph or letter or email. On second thought, make that your extended family. While you’re at it, consider this being done for your entire lineage, all of your ancestors and their ancestors. Actually, let’s just make that the history and traditions of an entire population—kings and farmers, treasured sons and warrior daughters, beloved community elders and miracle babies, major public events and important lineage developments—kept alive solely by chanted word, for hundreds and hundreds of years. This is precisely what the Hawaiians did this until the 1800s. With all respect to the written word, the history of these islands will never fit comfortably on paper. It is in the oli, the chant; the mo‘olelo, stories, and in hula.

There are two types of hula practiced today: kahiko, or ancient hula, and ‘auana, modern hula set to music. Hula auana is lovely, most often danced by graceful ladies of all ages in long mu‘umu‘u, and you’ll enjoy watching it throughout your Hawaiian vacation. But it’s in kahiko that the real story lies … literally. In ancient Hawai‘i, everything was always taught through chanting and storytelling, detailing and cataloging the lineage of a people and all of the events in their personal—and collective—history. Physical motions assigned to interpret and represent the chants are lessons, prayers, worshipping and honoring not only the chants themselves but those who chanted them before. Hula is thus fundamentally an oral tradition, tied to words. The Hawaiian deities manifest themselves in nature, and so the Hawaiians worship nature. Prior to 1820, both men and women danced hula, sometimes together and sometimes apart. Shortly after the missionaries arrived, however, neither performed it in their disapproving presence. One can imagine their shock at seeing, for the first time, Hawaiians in kahiko costume. Deemed by the missionaries as heathen, the hula was actually banned by Hawaiian royalty under their influence. So just as the written word was introduced in the islands, the

Hawaiian practice of hula went underground. For over six decades, it was practiced out of the missionaries’ sight, remaining very much alive, though hidden. The Hawaiian world, after all, rode on the chants and the songs and the hips and feet and arms of the people. It was King Kalākaua, the “Merrie Monarch,” who welcomed hula to center stage once again. At his official coronation in 1883, and three years later at his jubilee, both traditional kahiko and new dances were performed at Honolulu’s beloved ‘Iolani Palace. Missionary frowns had lost their weight. After a shameful interlude, a nation’s voice was heard again. That voice is one you can still hear today.

against a velvety black sky. Crimson is a dominant color throughout our looks, whether in a solid, form-fitting dress (page 29) or in the unexpected animal print and accessories (page 28). Neutrals are anything but boring: a cream strapless maxi covered in pearly sequins paired with a colorful clutch and oversized earrings (page 34) is a look we hope to see replicated nightly in Waikīkī. Mossy greens (page 33) and blacks (pages 32, 35) also played key roles in the fashion palette, creating looks that travel seamlessly from evening cocktails to the main event. >> R Style tip: Pair a shorter statement necklace with a long, lean pendant for two tiers of sparkle.

n her address to the crowd that had gathered for the unveiling of the Royal Hawaiian Center’s extensive upgrade to The Royal Grove and guest service facilities, Dee Jay Mailer eloquently thanked Ke Ali‘i Bernice Pauahi Pākī Bishop for her insight and generosity, without which this place of healing and solace would not have been possible. “Helumoa is about the past and being lifted by the spirits of our ancestors,” said Mailer, CEO of Kamehameha Schools. “It’s filled with the essence of our ali‘i. As you walk through the grove, feel the peace, and enjoy the mana and soul of this place.” Once lined with shops, the grove was partially restored six years ago, as part of a $120 million renovation to transform the Center into more of a gathering venue where visitors and locals could shop while also learning about the area’s rich cultural and historical significance.

“When The Royal Grove opened six years ago, it allowed kama‘āina (locals) and malihini (visitors) to come together,” said Rosalind Schurgin, CEO of the Festival Companies, which manages Royal Hawaiian Center for Kamehameha Schools, addresssing the crowd of about 300 people. “We’re committed to the holistic experience; (the Center) balances retail with Hawaiian culture and hospitality.” The latest upgrade, which took five months, further supports the goal of being more than just a place to shop, dine and have fun. In addition to free lei making, quilting, hula, ‘ukulele playing classes, images and story boards will educate guests about the history. Adjacent to the statue of Pauahi, the new 942-square-foot Helumoa Hale Guest Services & Heritage Room invites guests to see documentaries, tour exhibits and attend 58 i R oyal

talks about the center and its connection to old Hawai‘i. The Grove now also boasts more green space that showcases native Hawaiian flora and fauna. And a larger 30,000-square-foot venue better accommodates Hawaiian entertainment and educational opportunities. The history of Helumoa is one of legends. It is said that a supernatural rooster, Ka‘auhelemoa, had flown to Waikīkī from Pālolo Valley to challenge 16th-century O‘ahu chief Kakuhihewa. But after scratching the earth, the rooster had mysteriously vanished. Kakuhihewa saw this as an omen and directed his men to plant coconut trees in the same area and named it Helumoa, meaning “chicken scratch.” Years after his conquest of O‘ahu in 1795, King Kamehameha I established a home there. In the 1880s, Princess Bernice Pauahi Bishop inherited Helumoa from her royal relatives.

“We need to keep telling the story because it only takes one generation to lose those stories.” “Pauahi loved Waikīkī,” said Mailer, who quipped that she took off her shoes because she felt more comfortable standing on this ground without her heels. “She came here to relax and rest.” These days, people visit the 310,000-square-foot shopping venue to shop at flagship retailers, dine at award-winning restaurants and learn about Hawaiian culture. “This is a place of connectivity,” said the Center’s cultural director Manu Boyd, who was among the grand reopening’s performers. “Helumoa brings back this wahi pana, storied place. hough bestowed on countless arrivers daily, lei are not just for greeting. Giving and wearing lei is a Hawaiian tradition as old as any other. Native Hawaiians used lei for centuries not only for adornment, but also as a way to distinguish class differences and for ceremonies. Non-plant materials such as shells, leaves, seeds, feathers and the bones and teeth of animals were also used. In modern times, lei are given to celebrate milestones and special occasions, like birthdays, weddings, and retirements. (At commencements in Hawai‘i, some graduates can barely see over the piles of lei stacked on their shoulders.) The maile leaf lei, an openended lei woven from the fragrant leaves of a native vine, is reserved for special and formal occasions—it is also used in hula performances. It is one of the oldest styles of lei, going back to the days of the ancient Hawaiians. The lei is an emblem of the aloha spirit that has endured for centuries, and remains a simple way to express the warmth found here in the Islands. Learn to make a lei at Royal Hawaiian Center! Hawaiian 101 an easy glossary

‘Ōlelo Hawai‘i is the indigenous language of Hawai‘i. Along with English, Hawaiian is an official language of the state of Hawai‘i. Here are some Hawaiian words and phrases you will see and encounter at Royal Hawaiian Center, along with a helpful pronunciation guide. Some Hawaiian words have no perfect parallel in English pronunciation, because it’s often difficult to differentiate between the diphthongs ae/ai and ao/au. • Hale kŪ‘ai (huh-lay koo-eye*) Store Royal Hawaiian Center has a variety of hale kū‘ai that range from luxurious to casual. • KAI (like “kite,” minus the “t”) Sea Royal Hawaiian Center is just steps from Waikīkī beach, famous for its white sands, surfing and sunsets. • KALO (kah-loh) Taro The kalo, or taro plant, brought to these islands by the first settlers, was a staple of the Native Hawaiian diet. In the moist uplands where it more commonly grows, rare honeycreepers feed on the nectar from its feathery blooms. A few ‘ohi‘a trees grow in the Royal Grove and are a treasured part of this site.

oa trees are endemic to Hawai‘i, meaning the tree can be found nowhere else on the planet. Known for its variances in hues, which can range from rich red to chocolate brown, the aesthetic properties of koa have been revered in Hawai‘i for centuries. Because of its resiliency, ancient Hawaiians used the wood of the koa tree for their canoes, weapons, paddles, and surfboards. They believed each individual tree possessed a sacred mana, energy; so selecting a tree for use, especially when preparing to build a canoe, was a great spiritual undertaking. In the Hawaiian language the word koa also means “strong” and “fearless, and the highly skilled warriors of Hawai‘i’s past were also known as “koa.” The main staircase of ‘Iolani Palace on O‘ahu, the residence of the former monarchy, is made from hand-carved koa wood. Today, woodcarvers and artisans also create a variety of accents out of koa, such as picture frames, jewelry boxes, bowls, sculpture, ‘ukulele and guitars, and even small goods like watches and pens. A New York Steak House in Paradise

“After 40 Years, a Waiter is the Boss,” read the New York Times headline. It was 2004, the waiter-turned-boss was Wolfgang Zwiener and his restaurant, Wolfgang’s Steakhouse by Wolfgang Zwiener, had just opened in perhaps the busiest and most competitive business executive lunch district in all of New York City: lower Park Avenue. Zwiener had no intention of starting this new phase of his career. Formerly the head waiter and maitre d at Peter Luger’s, a name that for 140 years has been synonymous with the best steak in New York City, he had retired, or he thought he had. But, says Bill Nickerson, general manager of Wolfgang’s Steakhouse in Waikīkī, “people started coming out of the woodwork imploring him to do his own [restaurant]. He incorporated all of the key tenets of Peter Luger and added white tablecloths to make it a little more special.” Then came the article in the Times and, before the word “viral” was part of social lexicon, word spread like wildfire and Wolfgang’s was serving 400 dinners a night. What are these “key tenets to which the best steak houses in the world adhere, qualifying a restaurant to bill itself as a “New York” steak house? “All of the great New York steak houses get prime steak, which is only 2% of all the beef in the Midwest,” says Nickerson, who estimates his weekly order of prime

beef to be $100,000. “We order from the same supplier as Peter Luger and Smith & Wollensky and fly it here on Hawaiian Airlines.” The beef is then dry-aged on the premises for a full 28 days. The entire loin is left untouched to age, while a bandsaw is used to portion off steaks that will be served that day—it can’t get any fresher. “Dry-aging it really makes it a connoisseur’s steak, creating a tenderness and delicate marble that cannot be Royal H awaiian c e nt e r

R Cuisine replicated,” says Nickerson. “It also imparts a nice, earthy flavor.” Steaks are broiled at 1600 degrees Fahrenheit for a perfect crust, and are served sizzling hot. “Being a great steak house is mainly about the quality of the meat, but the service also has to be top-notch,” continues Nickerson, whose own career in the restaurant industry spans three decades. “There’s a hustle and bustle, a metropolitan feel. Our servers have experience with high-volume as well as four-star dining and an excellent grasp of wine.” The wine list, an award-winner, includes the biggest names in big reds: Opus, Caymus, Schaffer. In addition to the best steak in Waikīkī, Wolfgang’s has a full menu of mouth-watering side dishes ranging from the rich and indulgent lobster macaroni and cheese (recipe

Lobster Mac & Cheese (Serves 4) “It’s key to use really good, fresh cheese,” says Chef Jason Zick. “Everything we use is really fresh, including the live, fresh lobster. This dish is really creamy and cheesy.”

Ingredients 14 ounces of cooked, drained elbow macaroni 12 ounces cooked fresh Maine lobster (a large lobster tail) 2 quarts half and half 2 cups parmesan cheese ½ cup white wine 2 tablespoons white pepper 6 ounces fontina cheese 1 pound white cheddar cheese 2 bay leaves 2 teaspoons salt ¾ cup butter 1 cup flour

Oh, and bacon,” laughs Nickerson. “I almost forgot my ‘vitamin B.’” And for the main course, Nickerson says, go with the porterhouse for two. “It’s the best of both worlds,” says Nickerson. “You’ve got the marbled, flavorful rib eye on one side, and the tender, juicy filet mignon on the other. Directions 1. Portion all cheeses into medium diced cubes and coarsely chop lobster. 2. In a large stock pot, add 2 quarts half and half. Bring to a rolling boil. 3. Add salt, white pepper, bay leaves, and white wine, whisking all ingredients together. 4. Slowly add all cheeses, whisking quickly to burning the cheeses on the bottom of the pot. 5. After all cheese has been incorporated into the pot, reduce heat to a simmer stirring frequently. 6. In a separate saucepan, melt the butter. Slowly add flour, whisking consistently, to make a roux. Incorporate this slowly into the cheese sauce. 7. Add cooked macaroni, lobster and heavy cream. 8. Place all contents in an oven safe baking dish. 9. Sprinkle mixture of fresh-grated mozzarella and parmesan cheese atop and broil at 500 degrees until golden brown.

ona coffee is a prized Hawaiian crop, known around the globe as a rare find for true conoisseurs. The coffee is supremely rich in flavor and aroma. So distinctive are these beans that, in order to be “Kona coffee” they must be at least 10 percent pure Kona. (Though purists insist onetenth is not nearly enough.) The narrow “coffee belt” is in the Kona district on Hawai‘i Island. There, on the slopes of two volcanoes, coffee trees luxuriate in perfect growing conditions: volcanic soil, warm weather and many dedicated farmers upholding a centuries-old legacy. Today many of Kona’s coffee farms give tours, and even large coffee house chains are riding the wave of its appeal. Island Vintage Coffee (Building C, Level 2) carries 100-percent, unadulterated, locally roasted Kona beans. Its Peaberry is robust, made from prized coffee cherries (known as peaberries) that make up just one-twentieth of a typical coffee harvest. The shops also offer flavored pure Kona roasts such as mellow Vanilla Mac Nut and nutty Coconut Cream, as well as chocolate-covered beans and gift baskets. At islandwide Starbucks locations, you can find packaged 100-percent Kona coffee, which is a fantastic gift or souvenir.

ho, pronounced “fuh,” is the popular Vietnamese noodle soup known among U.S. mainlanders for its distinctive aroma and rainy day remedies. But with the hundreds of stalls and street vendors in Ho Chi Minh City and all across Vietnam, pho is as habitual for locals as eggs and toast in the morning. Lower your nose into a proper bowl of pho and you’ll realize why its restorative powers beat out any morning cereal. The complexity of smells is from the combination of assorted meat bones and exotic herbs and spices simmered together for many hours to achieve the broth. The modern bowl of pho is served with fresh vegetables and herbs: bean sprouts, Thai basil, mint, lime and peppers. These are garnishes, not meant to interfere with the perfect medley of rice, noodles and meat. Rip up a few leaves of herbs and sprinkle it over and squeeze a bit of lime if needed. Chopsticks in one hand and a soupspoon in the other, allow pho to work its wonder at any time of day. Enjoy a hot bowl at Pho Factory, located in the Pā‘ina Lānai Food Court in Building B, Level 2.
