A remarkable woman of ali‘i or royal stature (the great-grandchild or mo‘opuna kuakahi of King Kamehameha I), it was she who identified education as the key to success for her Hawaiian people, who at the time were faced with aggressive westernization in a fast-changing Hawai‘i. And it was she who devoted her estate to the creation of Kamehameha Schools. In fact, her will was signed right here in Waikīkī’s Helumoa Royal Grove. Today, Royal Hawaiian Center honors Pauahi’s legacy by generating revenues that support Kamehameha Schools, which began its noble mission of education three

years after her passing, 127 years ago, and now has three K-12 campuses and 31 preschool programs statewide. The centerpiece of the Grove, makai (seaward) of the towering Kahalaopuna bridge, is an elegant and often lei-draped bronze statue. Its name, Ka ‘Ikena Ho‘oulu a Pauahi, means “The inspired vision of Princess Pauahi.” The statue was created by Sean Browne, himself a graduate of Kamehameha Schools. The grounds look different than they did when Pauahi and past generations of ali‘i relaxed among the some 10,000 coconut palm trees that once swayed here. Still, bubbling waterways, lush landscapes and enduring gentle winds do share the mo‘olelo or stories of this remarkable place. Strolling in either direction on the makai side of

Healing hands mimic the the flow of the ocean, the downpour of rain and the intensity of an earthquake. Hawaiian lomilomi massage applies pressure to the recipient by leaning into them, using tools of the body including lima (hands and arms), ku‘eku‘e lima (elbows) and even wāwae (feet). Spirituality defines many of our cultural practices, especially in the area of healing arts, the most wellknown of which is lomilomi. It has been practiced regularly for generations by all members of the ‘ohana while more intense, specific treatments are left to trained experts. Like other healing arts, the skills and practices are passed from masters to apprentices through formal training and ceremonies. Today, lomilomi Hawaiian massage enjoys international visibility with such other styles as Japanese shiatsu and Swedish massage. e makana ka ‘ukulele mai ka po‘e Pukikī i ke kenekulia ‘umikūmāmāiwa a he kama‘āina ma‘a mau ia i ka ho‘okani mele Hawai‘i mai ia wā aku. The ‘ukulele is a gift from the Portuguese in the late 19th century called the braguinha and has been a standard in Hawaiian music ever since. Resembling a miniature guitar, the ‘ukulele in four-, six- and eight-string varieties is fairly simple to play at a basic level of srtumming and chording and can be lots of fun to learn. Classes at Royal Hawaiian Center are geared towards first-time learners. We maintain a small supply of instruments, but also welcome more experienced enthusiasts to bring their own. Instructors begin with basic chords and strumming techniques, then launch into favorited island mele sung in both Hawaiian and English. In typical performances, the ‘ukulele is both strummed and picked as an accent to the guitar and upright bass. These three instruments with singing musicians comprise the standard Hawaiian trio, although any number of performances may perform ranging from soloists to large ensembles. The Heartbeat of Hawai‘i the art of hawaiian dance By Manu Boyd

H

e ho‘oilina makamae ka hula mai nā kūpuna mai. Wahi a Ke Ali‘i Kaläkaua, ‘o ka hula ka pana pu‘uwai a ka lāhui Hawai‘i. Hula is a treasured and sacred inheritance from our ancestors. According to the “Merrie Monarch,” King David Kalākaua, hula is the heartbeat of the Hawaiian people. Legendary Kumu Hula (hula master) Maiki Aiu Lake would often say, “Hula is the art of Hawaiian dance. It expresses all that we hear, see, smell, taste, touch and feel. Hula is life.” Truly one of the best-known aspects of Hawaiian culture, hula enjoys enormous popularity around the world today, and counts over a million participants in Japan alone. For Hawaiians, hula is a sacred expression of all the myriad and nuanced aspects of life ranging from the sacred and spiritual to the mundane everyday activities of life. Its origin, according to some hālau or schools, lies in the timeless and intriguing saga of the Hawaiian fire-goddess Pelehonuamea and her youngest and favorite sister, Hi‘iakaikapoliopele. Far more than simple steps and movements to be learned and performed, dancing hula is the ultimate interpretive art, giving motion and life to the ‘olelo (stories) and mele (music) — indeed, the history — of Hawai‘i and its people. Today, hula is practiced, performed and enjoyed in both its traditional and modern forms: hula kahiko (ancient, traditional) and hula ‘auana (modern). Hula is considered a way of life for many, not to be treated lightly. Annual hula competitions and performances include the Merrie Monarch Festival in Hilo the week after Easter, the King Kamehameha Hula Competion in late June, and the Prince Lot Hula Festival in late July. For those events, haumāna (students) led by their kumu sometimes practice for hundreds of hours. During hula classes at Royal Hawaiian Center, no audio or video recording is permitted, with the exception of recording the class exclusively for personal use. See page 10 for class schedule.

Food Stars Five-Star International Buffet serves time-tested favorites alongside new and exciting culinary creations.

irst, some important news: there is no corkage fee at Five-Star International Buffet. So pick up a nice vintage and enjoy it with your meal. Alternatively, try their new menu of smoothies. The full bar, however, is closed until mid-year. Just in time for the spring season, Head Chef Ryan Lai’s team has unveiled a new menu. “Some things we’ll never change,” he says. “The prime rib, lobster and snow crab are incredibly popular and we will keep those on the menu for the foreseeable future.” But it’s in a chef’s nature to be creative, constantly reinventing dishes and continuing on the eternal quest for culinary perfection. “The main focus is always on flavor,” says Lai. “My background is in pastries, but I have an amazing team with different specialties. There’s one person who excels with Italian cuisine and another who specializes in Asian flavors.” Together, they collaborate in the kitchen, mixing and matching elements from cuisines all around the world for an array of delicious dishes that is, truly, international. The salad selection as always includes a Caesar, chilled asparagus and tomato, poke salad and tofu sesame salad. New to this section is the green papaya

Returning to the menu is a Japanese favorite called Miso butterfish. “It’s slightly salty, a little crispy and very tender inside.” Mexican flavors are detected throughout a new creation called salsa chicken, which is marinated in seasoning, baked and topped with avocado guacamole and salsa. (Lai, born and raised on Hawai‘i Island, was very serious about the importance of using fresh avocados.)

RECIPE

Garlic Shrimp (Serves 4) “No need to go all the way to the North Shore trucks,” says Chef Ryan Lai. “Our garlic shrimp is all-you-can-eat.”

Ingredients ½ pound peeled, uncooked 31/40 shrimp 4 ounces (1 stick) unsalted butter ½ cup minced garlic 3 ounces sake 3 ounces mirin 3 ounces shoyu 1 ounce sriracha ¼ cup cornstarch ½ cup water 1 tablespoon vegetable oil

Directions 1. In a saucepan, melt the butter and add the minced garlic, cooking at medium-low heat until brown.

Another standout new poultry entrée is Chicken Shangri-La. “Stuffed with spinach and macadamia nuts, coated with coconut and pan-fried, it starts sweet and finishes savory,” remarks Lai. Raw seafood, which has always been a hallmark of this upscale dining room buffet, has new elements—oyster shooters, scallop carpaccio and salmon gravlax—in addition to its extensive selection of sushi, available for both lunch and dinner. 2. Add sake, mirin, shoyu and sriracha, continuing to stir so the garlic doesn't stick to the pan and burn. 3. Combine cornstarch and water with a whisk to make a slurry. Add it the pot and continue to whisk the mixture. 4. Preheat a sautée pan (medium) and add oil. When oil is hot, add all of the shrimp and cook until it begins to gain color. 5. Pour sauce from saucepan into sautée pan and mix carefully to coat all of the shrimp. Cook until shrimp is firm and serve hot.

he two most popular cocktails among visitors to the Hawaiian Islands, the Blue Hawai‘i and the Mai Tai, are well-represented at Royal Hawaiian Center’s restaurants and lounges. The first person to refer to alcohol as “the hard stuff” was definitely not drinking a Blue Hawaii. This mellow, fruity electric blue libation is just a little older than Hawaiian statehood, preceding Elvis Presley’s movie and subsequent hit song by the same name. Slide aside the island garnishes (paper parasol, pineapple, orange wheel or perhaps a big Hawaiian blossom) and experience the liquid version of that melancholy serenade to the tropics, full of exotic pineapple and tart orange notes. There are a many variations on the recipe for this drink—a subject of slight controversy—ranging from light rum to dark rum, and sometimes including Crème de Coconut or coconut rum. Then there’s the age-old dilemma: to blend, or not to blend? Its hue will vary, just like our Hawaiian waters, but the color is always unmistakably blue. Try a Blue Hawai‘i at P.F. In oft-cited cocktail lore, the late Vic Bergeron of Trader Vic’s fame is credited with creating the mai tai. In 1944, Bergeron created a concoction of J.Wray & Nephew 17-year-old rum from Jamaica, fresh lime, orange curaçao from Holland, a dash of rock candy syrup and a dollop of French orgeat for its subtle almond flavor. He added a generous amount of shaved ice and shook it vigorously by hand.He gave the first two to friends from Tahiti. They took one sip and said: “Maita‘i roa a‘e.” In Tahitian this means “out of this world, the best.” (The Hawaiian equivalent is maika‘i/maika‘i loa.)In 1953, Bergeron introduced the mai tai to Hawai‘i at the Royal Hawaiian and Moana hotels in Waikīkī. Trader Vic’s amicable rival, Don the Beachcomber, claimed to have created it in 1933 at his newly opened bar in Hollywood. The Beachcomber’s recipe is more complex than that of Trader Vic’s, calling for two rums, Angostura bitters, anise-flavored liquor and Falernum syrup—a Caribbean syrup which is now difficult to obtain in the United States. Today, the mai tai is served throughout the Islands, and Royal Hawaiian Center’s mixologists have also come up with their own unique variations on this taste of the tropics. Try a fusion twist on the mai tai at Doraku Sushi (Building B, Level 3, 808-922-3323).
