SOUTH EDISON - An Evening of Fine Dining and Entertainment by Sue Giustino

As the world slowly returns to somewhat normal conditions, it almost feels like pre-covid days. A Thursday evening dinner and show at South Edison was a wonderful step in that direction. As usual Head Chef/Owner Frankie Fuschetto, runs a seamless operation with welcoming staff and exceptional food. With Ally behind the bar, our cocktails were perfect: the Jan-Doey cucumber jalapeno margherita, the Pickle My Pepper Martini- a must for spicy pickle lovers-, the gin and ginger beer Red Head, and the smokey mescal Better Decision.

This season’s menu has a few new items and some of the old favorites, while others have a bit of an ingredient change. Arranged with a mix of small plates as well as full meal dishes, it’s diner’s choice to mix and match as desired. We chose a wonderful variety while also enjoying the entertainment of the Assassins. The lively singing, dancing drag show; along with the smells and tastes of the kitchen, it made for a fun evening activating all of our senses! Starting with a salad and a few small plates, we discovered the chef’s creativity with delightfully

blended flavors and textures. The Whipped Goat Cheese Salad with spigariello kale, creamy goat cheese, aged-balsamic, sweet pears and walnut halves for a little crunch is a perfect example of this balance. The lightly coated crisp Fried Olives with Meyer lemon goat cheese presented in a copper art deco tin were bursting with delightful flavors. Also with light crisp panko topping, the South Eds Clams with herbs, Meyer lemon and Reggiano parmigiana were a perfect blend of flavors- and one of my favorite dishes. Pan seared cauliflower spears with buffalo sauce and a side of coconut-avocado puree was a unique and spicy Buffalo Cauliflower dish. The Fluke Sashimi was tender and tasty perched upon a delicate stack of watermelon, radish, spring onion, harissa-chili jam, and crispy shallot. As the show continued on around us, we sipped a delicious Malbec, laughed, sang, and applauded the dancers who seemed to have endless energy and were obviously glad to be able to perform again. When dinner arrived, we realized our eclectic choices including fish, pasta, shrimp and pork, although abundant, were perfect. Have a Happy and Safe Grilling Season! by Stefan Lonce

I don’t know about you, but I don’t wait until Memorial Day to start my grilling season. It happens every year...usually in early March I buy a couple of nice steaks and put them in my freezer awaiting the first warm, sunny day of the season. But first, there’s work to be done and some things of which you should be aware. In 2013-2017 outdoor grilling caused an annual average of 10,200 home fires, according to the National Fire Protection Association. Gas grills caused more home fires than charcoal grills, the association added. Regardless of the type of grill you own, here are some safety tips that will keep you and your home safe for the grilling season: 1. Grill outside and away from any structures: Charcoal and gas grills are designed for outdoor use only. However, NFPA reports that more than one-quarter (27%) of home fires started by outdoor grills began in a courtyard, terrace or patio, and 29% started on an exterior balcony or open porch. Pay attention to overhanging tree branches when you set up your grill. 2. Make sure your grill is stable: Only set up your grill on a flat surface and make sure the grill can’t be tipped over. Consider using a grill pad or splatter mat underneath your grill to protect your deck or patio. 3. Keep your grill clean: Remove grease or fat buildup from both the grill and the tray below the grill (See #4). If you are using a charcoal grill, allow the coals to completely cool off before disposing of them in a metal container.

4. BEWARE THE WIRE BRUSH: If you use a stainless steel or brass wire brush to remove stuck-on food from grill grates, be aware of this surprising downside: Small, sharp bristles can break off as you’re cleaning and get stuck to your grill’s cooking surface. The next time you grill, those stray bristles may adhere to food and be accidentally ingested. (This happened to my brother! He ended up in the emergency room with a wire bristle lodged in his throat! My nephew told me he was quite the celebrity in the ER that night...all the doctors wanted to see it.) As a matter of fact, an estimated 1,700 Americans went to the emergency room between 2002 and 2014 after having ingested wire bristles in grilled food, according to a study published in 2016 in the journal OtolaryngologyHead and Neck Surgery. Consider using a pumice stone or a coil-shaped bristle-free brush. I use a home-made brush...a wadded up piece of foil held with a long handled pair of tongs! After heating your grill, use the foil to scrub off the grates. 5. Check for propane leaks on your gas grill: Before the season’s first barbecue, check the gas tank hose for leaks by applying a light soap and water solution to the hose and then turning on the gas. If there is a propane leak, the solution will bubble. Other signs of a propane leak include the smell of gas near the barbecue or a flame that won’t light. 6. If the flame goes out, wait to re-light: If you are using a gas grill and the flame goes out, turn the grill and the gas off, then wait at least five minutes to re-light it. 7. Take care around the grill: Never leave a lit grill unattended. Don’t allow kids or pets to play near the grill. Never try to move a lit or hot grill, and remember the grill will stay hot for at least an hour after use.

8. Be careful with charcoal starter fluid: If you use a charcoal grill, only use charcoal starter fluid. If the fire starts to go out, don’t add any starter fluid or any other flammable liquids to the fire. Consider using a charcoal chimney starter, which uses newspaper to start the fire instead of starter fluid.

9. Wear the right clothing: Loose fitting clothing is NOT ALLOWED! Clothing can easily catch fire, so be sure your shirt tails, sleeves or apron strings don’t dangle over the grill. 10. Be ready to put out the fire: Have a fire extinguisher nearby...and check that it is charged and ready to use! A fire extinguisher should be purchased at the time you purchase your grill! If you can’t afford a fire extinguisher, you can’t afford a grill. Never use water to put out a grease fire, it will just spread it. As the guys were teeing off that morning, I was on the way to meet with Capt. Jon Scott at Neiberts' Fishing Resort. The place turned out to be an unassuming, small fishing resort with a cool, rustic bar, located at Creek Side on the outskirts of Sebring, with a young Captain waiting for this late arrival. I was placed in the hot seat next to the handsome Captain with two couples in two rows in front of us. Let me say right here that this was going to become the wildest airboat ride of my life, with up-close looks at gators of all sizes. This was above and beyond what I expected but the highlight of our ride was when Jon pushed the airboat with full power up on a small, sandy island. Just when I thought I had recovered from the shock that we were now like a fish out of water, he rode that airboat with a big splash back down into the water. The Bird Feeder This is the story of a robin, blue jay, cardinal, crow, a little chickadee, dove, and a little black squirrel. One bright, beautiful, sunny, spring morning, the robin, bluebird, cardinal, and little chickadee were set to enjoy a sumptuous meal of seeds, oats, and nuts from my recently filled bursting bird feeder. The dove,

who was a little out of shape and the squirrel who could not reach the perch 5 feet high waited patiently on the grass below noshing on seed and nuts that fell to the ground. Not much, however, made it to their eager mouths. The blue jay, the robin and the cardinal were busily pecking through the holes of the feeder but were very stingy and let little fall. Only the little chickadee let the fair fall to the dove and the little black squirrel but, like the chickadee, it was a small portion. The dove and the little black squirrel were hungry, so the determined squirrel climbed the skinny pole of the bird feeder three times only to slide slowly down every time. The little squirrel gave up and blinked at the morning sun. The dove chased the little chickadee away but was too fat and out of shape to stay on the perch. Dejected, the dove flew onto a tree branch and looked around but mostly at the feeder. The little chickadee flew back onto the perch and pecked at the delicious seeds but, not for long. The crows flew in, flapped their wings, and chased all the birds. The robin,

blue jay, cardinal, dove, the little chickadee, and the black squirrel were not happy. The little chickadee was very observant and saw that the crows struggled to stay on the perch and eat at the same time. The little chickadee had enough! It sang a song, and 3 more relatives flew in. They began to sit on the perch just long enough for the crows to flap their wings and chase them, but the crows tired quickly. First one crow coasted to the ground totally exhausted and then 3 more joined the first tired crow. The perches were empty! The blue jay, cardinal and the robin flew back to the feeder but learned their lesson. They were having a sumptuous meal and happily shared with the dove and the squirrel. That, however, is not the end of this story! The crows now tired and hungry took turns on the ground and dined with the dove and the squirrel. One very savvy crow stood on top of the bird feeder and shook it so all could enjoy the beautiful day. True story The Montauk Sun ~ May 2021 ~ 45
