Dear Readers,
Hello, July! What a joy it is to finally feel the warmth of summer settle into the Mohawk Valley. After a busy June, this month gives us all a chance to catch our breath, slow down, and savor everything the season has to offer.
I’m especially excited to share Mohawk Valley Living’s first Restaurant Issue — a celebration of the incredible dining scene we’re lucky to have right here at home. From iconic spots to hidden gems — including the newly restored Beeches Manor — this special edition highlights the chefs and restaurants that give our communities their unique flavor. Whether it’s a special night out or a quick bite with friends, I hope this issue inspires you to eat local and savor every moment.

July is also a time to recharge and spend a little extra time with some furry friends. In this month’s Giving Back section, you’ll hear about my visit to Anita’s Stevens Swan Humane Society, where I spent time with their adorable kittens and a sweet pup named Peanut Butter while learning about the important work they do to

support our local animal population. I’m also planning a trip to Spring Creek Lavender for some goat yoga — because sometimes, the best way to slow down is to breathe deeply, connect with nature, and share a few lighthearted moments with animals who always seem to make us smile.

Save of the Day Foundation Continues to Make a Difference
The Rob Esche Save of the Day Foundation brought back its epic Golf Outing and the event sold out once again, while well exceeding their goal of netting $100,000. The funds directly support children facing lifethreatening illness, veterans, law enforcement, and local families navigating difficult circumstances across the Mohawk Valley. Over the past two decades, the Foundation has raised more than $3 million and helped over 300 families, all of it staying right here in the community to make a real, lasting difference. Foundation Director, Erica Hagan shares, “The success of this year’s golf outing reflects the strength and love of our community’s commitment to making a meaningful difference. The generosity of our participants and sponsors directly supports Save of the Day Foundation programs that create lasting impact for those we serve. As someone who moved from just outside New York City, I was excited to discover that the Mohawk Valley had its own kind of Broadway magic—right here at home. One thing some people don’t know about me is that I was a theatre kid. I loved the stage—from playing Rizzo in Grease to Cecily in The Importance of Being Earnest, it was where I found confidence, creativity, and community. From Les Misérables to Wicked, Mamma Mia to Rent, I’ve been fortunate to see many Broadway shows that have stayed with me for years. Each one

Beeches Manor Reimagined
Offering elevated dining in a setting where timeless elegance meets modern hospitality

Beeches Manor has been a beloved Rome landmark for more than a century. Originally built between 1915 and 1924 by Frank Potter, inventor and head of the Rome Wire Company, the Verona stone mansion was designed by Harry Sternfeld, architect of Philadelphia’s City Hall. With ornate ironwork, hand-painted ceilings by Carlo Ciampaglia, and sweeping countryside views, the property quickly became one of Central New York’s most admired private estates.
In 1949, the Destito family ushered in a new chapter, converting the estate into La Taverna restaurant and later adding an inn and banquet facilities. For decades, Beeches Manor became synonymous with milestone events — weddings, anniversaries, proms,
and celebrations that generations of families still cherish.
“The restoration of Beeches Manor came from a passion to save a beloved Rome landmark while giving it a new purpose that fits today’s community needs,” explains Kate Rolf, President & CEO of Nascentia Health.
“We saw a chance to keep its history alive while turning it into a hub for senior living and community-focused healthcare.”
In 2021, Nascentia Health acquired the property, launching an ambitious plan to restore Beeches Manor while transforming its 72 acres into the Nascentia Neighborhood — a model for aging in place and integrated community care.
“For decades, Beeches Manor was the heart of celebration in the region—a tradition Nascentia Health is now honoring through the restoration and redevelopment of the manor,” says Kate Rolf.

“Our vision is to bring the stone mansion, other facilities and its grounds back to their glory days as a top event venue, while transforming the 72-acre property into a welcoming spot for active aging,” says Rolf.
Plansareunderwayforthe Inn tobe redeveloped into 48 senior apartments, with future plans for patio homes, duplexes, and townhouses — all supported by healthcare services, wellness amenities, and social activities.
The restoration perfectly aligns with Nascentia’s mission as a not-forprofit dedicated to compassionate, high-quality, community-based care.

The broader vision includes walking trails, pickleball and bocce courts, a primary care clinic, fitness center, spa, guest accommodations, and expanded event venues. The project also allows Nascentia Health to sustain its mission during challenging times for nonprofit healthcare providers.
“This project lets us meet Rome’s senior housing needs while doing what we do best: supporting people in their homes,” adds Rolf.
The community contributions go beyond offering housing and events, Rolf notes, “the revamped Manor is already making waves, running a restaurant and hosting events like weddings and fundraisers that create jobs and boost the local economy ”
Even as Beeches Manor evolves into a full-scale senior living neighborhood, it remains firmly rooted in the tradition of hospitality that first made it famous.

Beeches Manor’s newly refreshed restaurant has quickly become a favorite destination for both locals and visitors, offering a casual yet upscale dining experience. The menu balances refined classics with casual comfort food, offering something for every guest — whether it’s a special occasion or a simple night out.
The summer menu features “a mix of seasonal favorites and signature dishes, with something to please every palate.” It truly reflects the casual warmth and open arms of the Beeches Manor.

1 Nicky Doodles
We started strong at Nicky Doodles, where the Nacho Sundae stole the show. This isn’t your average sundae—it’s a custard base (yes, custard!), loaded with caramel, peanut butter, and hot fudge, all crowned with waffle cone pieces. It was sweet, salty, melty, and crunchy all at once. A full-on flavor explosion. If summer had a signature dish, this might be it.
2 Kayuta Drive-In
Next up was Kayuta Drive-In, where we shared a s’mores sundae and a salted caramel sundae with pretzels—and it was, without question, one of the most delicious things we’ve ever tasted. Salty, buttery, thick, and rich, the caramel clung to the ice cream like it knew it belonged there. We kept asking each other: Is it the pretzels? Is it the caramel? The truth is, it’s both—and something more. We even felt a little bad for the s’mores sundae, but honestly, this one was unbeatable. Thank you, Emily — that salted caramel sundae was life changing.
3 Tasty Treat
At Tasty Treat, we mixed things up with a pistachio and black raspberry swirl and a pair of mini caramel sundaes. The caramel was warm when it hit the cup, slowly thickening into a chewy ribbon that paired perfectly with the cool, creamy ice cream. The pistachio and black raspberry were light, refreshing, and unexpectedly elegant together—a grown-up twist on a childhood classic.
4 Kookie’s Q
Kookie’s Q brought bold flavor with a rich Peanut Butter Pie Ice Cream that was thick, creamy, and packed with just the right balance of sweet and salty — almost like eating a frozen slice of peanut butter cheesecake. Every bite was decadent without being too heavy, and we found ourselves scraping the bottom of the cup. Then came the Pineapple Sundae, which instantly transported us to a beach somewhere—bright, fruity, and totally unexpected. The fresh pineapple was sweet and juicy, cutting through the richness of the ice cream with a little tropical tang. For a moment, it didn’t feel like we were in the Mohawk Valley at all — just sunshine, pineapple, and pure summer.
5 Bonomo’s
Next we stopped at Bonomo’s, a spot that knows how to do nostalgia right—and had to call in the reinforcements: the kids. They ordered two scoops of cotton candy ice cream topped with whipped cream and a cherry, and a towering soft-serve twist in a waffle cone, dipped in chocolate and covered with rainbow sprinkles. Classic, colorful, and the perfect throwback to summers past.
6 Cremeria
Just when we thought we couldn’t fit in one more bite, we made a final stop on day one at Cremeria in Clinton—because when in Clinton, you must. There, we went a little more grown-up with an affogato: velvety gelato drenched in hot espresso. It was creamy, bold, and absolutely divine—dessert and caffeine in perfect harmony. The kind of indulgence that makes you close your eyes for a second and imagine you are in a piazza in Italia! Just pure espresso deliciousness.
The sun was out, and the next leg of the MVL Ice Cream Tour was officially underway. With each stop, we keep thinking: how many incredible ice cream spots can one region hold? Turns out—plenty.
7 Mr. Shake
First up was Mr. Shake in Richfield Springs, where we ordered the Unicorn Cup — partly so you could see the kid-favorite, but truthfully, we enjoyed it just as much. Birthday cake ice cream swirled with cotton candy ice cream, topped with marshmallow whip, whipped cream, mini marshmallows, and a little extra sweetness for good measure.
Over-the-top? Absolutely. But every bite felt like a little celebration. While we were there, we couldn’t pass up their Hot Fudge Peanut Butter Sundae. This one was pure comfort: creamy vanilla ice cream, rich hot fudge, smooth peanut butter, whipped cream, and a cherry on top. It was classic and completely satisfying — the kind of sundae that makes you remember why sundaes became a thing in the first place.

Woody’s Ice Cream Place
From there, we headed to Woody’s Ice Cream Place in Herkimer, where RoAnn went for her favorite — the Pineapple Flurry Sweet and refreshing, the bright pineapple blended perfectly with the soft serve, giving just enough tartness to balance each bite. Simple, but one of those flavors you keep thinking about long after the last spoonful.
9 Ice Cream Factory
Next up was the Ice Cream Factory in Chadwicks, where they’re not afraid to play with flavors. The Peanut Butter Banana Soft Serve Twist was smooth, creamy, and perfectly balanced between the nutty and sweet. And of course, we had to try the Root Beer Float — a cold, fizzy classic that pairs soft serve with bubbly root beer. Sometimes you just don’t mess with perfection.
10 SweetsSam’Z & Eats
The final summer stop at Sam’Z Sweets and Eats in Rome had something for everyone. RoAnn went for the Pineapple Flurry — tropical and delicious. The kids mixed it up with Cotton Candy, Chocolate Lover’s Chocolate, Pumpkin Ice Cream, and Panda Paws. Sam’Z delivers the kind of variety that keeps everyone happy on a warm Mohawk Valley night.

Step inside one of Michael Uvanni’s showrooms in Rome, and you’ll immediately understand why “just looking” is almost impossible. With a designer’s eye and a collector’s instinct, Uvanni curates furniture and home décor that blend timeless style with irresistible originality. His pieces—ranging from classic Adirondack to striking Art Deco—aren’t just furnishings; they’re statements. Uvanni has an uncanny ability to find pieces that surprise and delight. He told me a story about a chandelier he admired at market, one he praised so highly that it sold out before he could secure one for a client. While restoring his showroom on Court Street, Uvanni unearthed the building’s long-forgotten cellar and discovered what can only be described as artifacts: a delicate parasol, personal items, and a pair of eyeglasses dating back to around 1805—believed to belong to the home’s original owner. These relics offer more than just a glimpse into the past; they reflect a time when this corner of New York was still shaping its identity, just beginning to thrive along the Erie Canal.

Green Filo Pie

In July, when the farmers market finally hits its stride, and farm stands are overflowing with appealing produce, it’s easy to overbuy in a moment of enthusiasm. I’ve devised a number of strategies over the years to deal with wilted, slightly past-prime veg that has languished in the fridge too long, and this pie is my favorite solution. Filo-encased dishes abound in the Balkans and around the Eastern Mediterranean, and this pie takes its cue from these traditions, without any claim to authenticity. It’s meant to be accommodating, and is an easy and elegant way to use up whatever is at hand. Bought carrots, turnips, or radishes with their tops? Add those to the mix. Odds and ends of random cheeses? Toss them in. Really, most green vegetables that need to find a home would be suitable here — it would not be out of bounds to add finely chopped broccoli or grated, salted, and drained zucchini. The combination of greens, alliums, herbs, and cheese is endlessly delicious and practically foolproof.
Recipe Ingredients
• 1 pound of greens, carefully washed and roughly chopped
• 1 large onion, any kind, diced
• Additional alliums: 2 to 3 cloves minced garlic, a bunch of chopped scallions, 1 to 2 leeks, or a handful of very finely chopped garlic scapes
• 1 bunch dill, finely chopped
• 1 bunch parsley, finely chopped
• 2 eggs, beaten
• 8 ounces feta, crumbled
• Filo dough, defrosted
• Salt and pepper to taste
• Sesame seeds (optional)
For the filling: Blanch the greens in salted boiling water. Chard needs about a minute, carrot, radish or turnip tops need two to three minutes, and kale should be boiled until it appears to soften, after about four minutes. The exception here is spinach, which does not need to be blanched before sauteing. Drain the greens thoroughly, let cool, then squeeze out excess liquid in a clean tea towel.
Heat a generous glug of olive oil (about two tablespoons) in a Dutch oven over medium heat. Sauté the onion and additional alliums with a pinch of salt and a few grinds of pepper for about ten minutes, until they’re very fragrant and soft. Stir often.
Add the blanched greens to the pot and cook for another ten minutes, until the mixture has
softened even more. Remove from heat and stir in the chopped herbs and crumbled feta. Season with more salt and pepper to taste, then add the beaten eggs, stirring quickly to incorporate.
Preheat the oven to 375°F.
To assemble: Drizzle one tablespoon of olive oil into a 12” cast iron skillet. Lay one sheet of filo lengthwise across the skillet, allowing it to drape over the sides. Lay a second sheet crosswise. Repeat with two more sheets (one lengthwise, one crosswise), so the pan is evenly covered. Scrunch a fifth sheet into the bottom to create a base without overhang. Add the filling and smooth it out.
Repeat the filo layering on top with five more
sheets (four draped, one scrunched). Drizzle with another tablespoon of olive oil and, if desired, sprinkle with sesame seeds, za’atar, or your favorite spice blend.
My oven runs cold, so I baked this for 45 minutes at 375°F for a perfectly bronzed top and thoroughly cooked interior. If your oven runs hot, cook at 350°F for 45 minutes, checking at 35 minutes to make sure the top isn’t browning too quickly. If it is, cover it with foil or a baking dish so it doesn’t burn, and continue to cook for another ten to fifteen minutes. Let sit for an hour before serving, and it’s even better the next day.

Supporting Anita’s Stevens Swan Human Society
This month, we’re shining a light on Anita’s Stevens Swan Humane Society and the incredible work they do for the animals—and animal lovers—of our community. From longtime residents like Smokey (the shelter’s longest-staying cat, since 12/17/24) and Pepe (their sweet pup since 2/5/22), to the newest cuddly kittens in the front room, the team at Anita’s is working every day to ensure every animal receives the love and care they deserve.
A big highlight this summer? The Paws & Pages program—a thoughtful new initiative that invites children to read to adoptable animals, helping both kids and pets build confidence and connection. The ribbon-cutting ceremony is just around the corner, and we’ll be there to celebrate.

A Stronger Future for Cornhill
At the heart of Utica’s Cornhill neighborhood, a powerful transformation is underway. The Cornhill Empowerment Center, now under the leadership of the Community Foundation of Herkimer and Oneida Counties, is the first of many investments in a neighborhood reclaiming its future.
Part of the $77 million Cornhill Revitalization Project, the center is one piece of a much larger plan—one that includes two future Impact Centers on West and James Streets, bringing over 100 new apartments, community gathering space, a grocery store, wellness and media studios, and a business incubator to the neighborhood.
The vision? To restore access to resources and opportunities that many in Cornhill have lived without for far too long. Residents asked for solutions—and this project delivers, with collaboration, equity, and community voice at the center.
“There’s so much hope in that neighborhood now,” said Kayla Ellis of the Community Foundation. From hosting services and celebrations to inspiring new leadership, the Cornhill Empowerment Center is only the beginning.
Honoring the Forgotten at Clinton’s Old Burying Ground
The Clinton Historical Society is raising funds to restore and memorialize the historic Old Burying Ground on Kirkland Avenue—final resting place of the village’s earliest settlers and veterans of the Revolutionary War, Civil War, and more.
Thirteen Revolutionary War soldiers, including village founder Moses Foote, lie in unmarked graves. The initiative also aims to honor three Native Americans and six African Americans buried there— individuals whose stories reflect the inclusive history of this uncommon cemetery.
