Meet the Faces Behind Your Favorite Meridian Restaurant Pubs Kristy Tost, Co-Owner at The Tavern at Eagle Island The Tavern at Eagle Island is the third iteration of the Tavern brand in Idaho. They are known for their dry-aged meats, fresh seafood, and a diverse selection of Pacific Northwest and local wines. James Thomas, General Manager at Homestead Bar & Grill The “Home of the Mega Bloody Mary,” Homestead Bar & Grill quickly made its mark on the Meridian community as a go-to for pub fare, sports viewing, a substantial tap beer selection, and unique legendary cocktails with a familiar hometown bar feel. Michael Wells, General Manager at Eight Thirty Common Located in the heart of downtown Meridian, Eight Thirty Common has introduced a gastro-pub feel to the Meridian restaurant community. Jaime Deal, Owner at The Harp Opened in 2019, The Harp stays true to its deeply authentic Irish roots and offers the most extensive selection of Irish beer on tap, Irish whiskey, and scotch in Meridian.

Changes, Trends & the Business of Running a Quality Bar What has been the most significant change in the hospitality industry in Meridian? Kristy Tost, Co-Owner – The Tavern: “You have a lot more to-go services like GrubHub to compete with now. If you order a steak through Door Dash - it may not be the same quality by the time it gets to you. We still offer to go services or pick up services, and we might expand into more of a delivery type service, but it’s going to be more on our terms to ensure that we’re upholding the standards that we want.” M AG AZ I NE

James Thomas, General Manager – Homestead Bar & Grill: “Restaurants are focused on making the guests happy the first time. When I first came out here, it seemed like everywhere was kind of like that greasy spoon diner kind of feel. Now, you can go into most mom-and-pop places, and your server is going to ask you about your day - as they care about you as an individual instead of just a dollar amount walking to the door.”

What has been your biggest struggle in dealing with employees? Michael Wells, Chef/General Manager – Eight Thirty Common: “Retaining employees. You need to make it a fun, enjoyable place to come to work every day and show that you care about your team.” James Thomas, General Manager – Homestead Bar & Grill: “Being able to competitively compensate your employees is the number one thing for turnover. The big chain restaurants have less of an issue because they can afford to pay people more. As a mom-and-pop location, we can’t always do that.”

How do you manage difficult situations with customers while trying to balance your vision? Michael Wells, Chef/General Manager – Eight Thirty Common: “I think one of the biggest challenges is to get people to come away from places like The Village. I’ll talk to [the customers at the] table if they’re not happy with something or if they wish we offered something specific. That’s the good thing about not being corporate; we can make quick changes to make everyone happy.” Jaime Deal, Owner – The Harp: “I’ve noticed that when people come into a small business like mine, they want to get the same experience they got at larger restaurants, and it’s just not realistic. Our food is made from scratch on order, not frozen and shipped in bulk – it takes longer to make. We cannot provide that fast turnaround you get at the larger chain restaurants.”

What’s the number one thing you would change about the restaurant industry today? James Thomas, General Manager – Homestead Bar & Grill: “The cost of getting started. It takes $75,000 to $250,000 just to get started, and that can be cost

prohibitive. You have talented people who would love to create their own place, but end up funneling their great ideas through somebody else’s baby.”

Cody Cuccia, Co-Owner – Heritage Hop Haus: “It seems like it’s tough to get a liquor license. It took five years to get our liquor license, and we had to operate as just a beer bar - which doesn’t have very good margins. So, I wish that it was a little easier to expand. I think that it would be good for the Valley.”

your teeth properly. Wait, there’s a proper way to brush? Yep! Hold your toothbrush with the tips of your fingers rather than in your fist. The lighter grip will prevent aggressive strokes (more on that later). Bacteria gather at the gum line, right where your tooth and gum meet, and that’s where disease starts. To fight that plaque hold your toothbrush at a 45° angle and make small circular strokes so the bristles can gently clean between the tooth and gum. Repeat for the inside surfaces of your teeth and don’t forget the chewing surfaces. Use fresh water to rinse your toothbrush and stand it upright to dry. Then floss between each tooth and you’ll have cleaned 100% of your tooth surfaces! Some people think that because enamel is the hardest substance in the body it’s okay, or even better, to brush hard. Hard bristles and a good scrub clean better, right? Maybe for some things, but it can harm teeth and gums. Your teeth have an enamel surface, not diamond, so they are still susceptible to abuse. You’re not going to use a steel brush on a china tea cup, right? Your toothpaste may contain abrasives to help scrub away plaque so the addition of hard bristles can actually cause more harm than good. Use a soft or extra-soft bristled brush. Also, some people really push hard when they brush. This is known as aggressive brushing and it’s not a good thing. If you’re brushing too hard and/or using a medium to hard bristle toothbrush, you may be eroding your teeth and even damaging your gums.

Finally, brush at least twice a day for at least two minutes clean all of your teeth. If you’re still not sure if you’re brushing correctly, or if you have special circumstances, just ask your dentist. It’s all about using the best tools and techniques for the job!

There is something incredibly rewarding about building with your hands. There is an inherent joy in the art of making, in the art of woodworking. And for the Ruperts, woodworking has become so much more than just creating—it’s b ecome a business. Together, they’ve transformed their passions and hobbies into something that they can share with the world.

So how exactly does a homemade gift to your wife become a profitable—and fun—side business? Both born and raised in the Treasure Valley, they each have a deep affinity for the Gem State, prompting DJ to hand-craft a custom Idaho-shaped chair for Ashley, who promptly posted it to her social media account. Almost immediately, they began receiving requests from people that wanted an Idaho chair of their own. And the rest is history! The couple is consistently trying to challenge themselves with new,

Both practitioners then went on to complete an additional post-doctoral certification in functional neurology through the Carrick Institute of Neuroscience and Rehabilitation. Currently, both doctors are enrolled in a certification fellowship program for biomechanical engineering of the spine through the Buffalo School of Medicine. “Anyone with a spine and nervous system may benefit from our services; we specialize in non-surgical spine care. We have a unique education that allows us to view and understand an individual’s health more thoroughly than other providers in this field,” explained Dr. Maria. “Being double-board certified (chiropractic and neurology) and having a fellowship in spinal biomechanical engineering and trauma assures that our patients are getting the best care available. Should a patient need surgery or injections, we have great relationships with some of the very best physicians in Idaho.” Chiropractic neurology varies a bit from traditional chiropractic care. It is a specialization within the field of chiropractic care.

A chiropractic neurologist is a chiropractor who has pursued an additional three-year post-doctoral board certification in neurology. A chiropractic neurologist studies neurology and similar disciplines - just as a medical neurologist would. However, their application of that knowledge is very different. “Instead of using a medication to treat the nervous system, chiropractic neurologists look to diagnosis the dysfunction and provide the proper, specific therapies to improve that function,” said Dr. Maria. She elaborates that traditional imaging like CT and MRI tests only show part of the picture, and that’s where the Sirucek Chiropractic Neurology Clinic can help. “Many people who suffer a concussion, for example, will go to the emergency room where a superficial neurologic examination is performed, and perhaps a CT scan of their brain is done. If there is nothing abnormal present on the scan, the doctor tells them that the CT was normal, and the patient thinks that they don’t have anything wrong,” she explained. “Imaging such as CT and basic MRI tests do not show neurologic function. They are great tools to check for fracture, tumor, infection, or stroke, but they do not provide insight into how the patient’s brain is working. In cases like this, a functional neurologic assessment is needed to get a more comprehensive view. We see great success in our treatments of functional neurologic lesions such as concussion, dizziness, vertigo, and autism, to name a few.” Through education and experience, their goal is to bring a more dynamic approach to overall health through effective spinal care and neurorehabilitation.
