CHOCOLATIERS PUSH CREATIVITY TO NEW HEIGHTS

With roots tracing back to at least the ancient Olmecs in what is now Mexico, chocolate is today a more than $113 billion global industry. It has also oozed into the very fabric of popular culture and society, playing a starring role in everything from books and movies, to most of our holidays.

Many Midlands entrepreneurs are enjoying the sweet taste of success, driven by year-round cravings for the decadent stuff.

While it seems a curious origin story at first blush, Bakers Candies Inc. got its start and continues to be supported by a group of engineers.

“My father, Kevin Baker, first saw the opportunity in gourmet chocolate back in the early 1980s,” said CEO Todd Baker. “Dad was a mass production engineer by trade and what he saw in the chocolate industry– particularly the gourmet chocolate industry –at that time, was a segment of manufacturing nearly untouched by the industrial revolution.”

So, his dad got to work, inventing the automated candy equipment that would in 1987 give Bakers Candies a 100% fully

automated, totally custom, no-recipe manufacturing process.

“This allowed us to reverse-engineer our chocolate, which meant that all of our recipes have been tailor-made to run on the equipment we invented and created (and not the other way around),” Baker explained. “The money we save in labor and production we spend on ingredients and cost savings to the customer (better chocolate for a cheaper price) is a good business formula for guys who hardly know a doggone thing about business.”

Even as the Baker family has watched the “heart” of the modern candy industry migrate to Mexico and Central America, strong consumer sentiment of buying local, quality and safe foods has offset the competitive advantages gained through the likes of cheaper overseas production, according to Baker.

Chocolate as an industry has also proven to be resilient in the face of economic turmoil; Baker points to how sales of chocolate in the Midwest grew by 20% through the pandemic.

“Chocolate is an affordable indulgence that can allow virtually anyone the opportunity to experience a moment of joy in a world

that sometimes seems to offer very few such moments,” he asserted.

“Family,” “Invention” and “Love” are at the center of more than a catchy tagline; Baker indicated these words are what makes the business tick.

As Baker put it: “Family – because this business exists to serve our family (not the other way around). Invention – because it’s at the heart of what we do. And Love – because of our love for chocolate, our love for our customers, our customers’ love for us and then, ultimately, our customers’ love for one another, which results in them giving the chocolate that we love, of course! It all comes full circle.”

A Perennial Favorite

When Erika Jensen got her start in the business in 2006, chocolate had not yet “arrived” in the Midwest – not in the way embodied by the wave of growth in the early 2000s and by renowned chocolatiers like Michael Recchiuti and Larry Burdick on the coasts. She had to hone her craft at “chocolate boot camps” and continuing education opportunities in Canada, Vegas, D.C., and elsewhere.

“Michael Klug of L.A. Burdick Chocolates told me early on I would

never fully understand the beauty of chocolate unless I went to Europe,” said Jensen, who now owns The Chocolate Season. “So, I hopped on a plane the following spring and shadowed in Italy, Switzerland and France.”

Since then, change has been marked by everything from the accessibility of information trickling down to more chocolatiers and market saturation, to the huge price increases over the past couple of years, according to Jensen.

“Chocolate demands have increased, and a broken supply chain is unable to produce and keep up with increasing global needs,” she said. “And, if you’re ethically responsible, you’ll only be choosing to work with chocolate manufacturers that are transparent in their pricing and treatment to those at the bottom of the food chain – the farmers and harvesters that actually manually strip the trees of their pods, and dry and ferment the beans for them to use.”

The industry at present is also characterized by chocolatiers who are having fun with everything from hand-painted or airbrushed colored cocoa butter, to inventive flavors that feature the likes of local whiskey

and beer.

To the former “trend,” Jensen said: “It’s a nod to the chocolatiers of old Europe, there’s something elegant about letting the true color and satiny mouthfeel of chocolate shine on its own, without all the glitz and glamor of luster dust and bright colors. That being said, at [The Chocolate Season] we do dabble in both worlds, caramels, slabbed ganaches, and molded bonbons – so that the consumer can get a taste of everything, and then find their own favorites.”

To the latter trend, Jensen said long gone are the days of flavors that sound like Hobby Lobby oils, just chocolate ganache or ganaches made with extracts.

And, while chocolate is beautiful, satisfying, and indulgent, she said it’s also “approachable.”

“There’s a chocolate for everyone,” Jensen stated. “Even if you don’t ‘like chocolate,’ we even carry chocolate made completely out of raspberries, strawberries, passionfruit, yuzu and almond. There isn’t a limit to what you can create.”

CHOCOLATIERS PUSH CREATIVITY TO NEW HEIGHTS

Chocolate’s Many Charms

“Chocolate” was hands-down Katie Hibbs’ favorite subject while at pastry school in Washington State. However, with chocolatiers being “so rare,” she expected to “observe and learn” when relocating to Omaha – not a job. What she got was a start in packaging and customer service at Chocolat Abeille. Today, she is the store manager and tea hostess.

In the past few years, Hibbs has seen a greater demand for artisanal, natural, “rooted” products – with easily defined connections to both the sourced items and the people who made them.

“There is a desire for a history, not only in the shop and items themselves but also between those things and the customer, building a relationship and having ‘your place,’” she stated.

“Trends” may further be summed up with one word: accessibility.

“Vegan, gluten-free, allergen-free: more and more artisanal shops are catering to these needs,” she explained. “These options were around before, but the flavors and design were often onedimensional.”

Creativity is broadening palates among those restricted to simple and often bland iterations of typically enjoyable desserts.

“As a mother to a child with severe food allergies, I understand the frustration in searching for safe options and the disappointment in the ones available,” Hibbs added. “It’s a change that is sorely needed, and I’m excited that it’s catching on, especially since major brands are taking notice and starting to provide more options as a result.”

Hibbs also noted how some places that claim quite loudly to have “very cosmopolitan food scenes,” are lucky to have just one good confection shop.

“Omaha has such an abundance of adventurous and creative people doing what they love,” she said, while referring to the volume of chocolate shops in the metro.

Hibbs is joined at Chocolat Abeille by Head Chocolatier Joee Fucinaro, who was drawn to the uniqueness of chocolate work while seeking experience beyond culinary school classes at Metropolitan Community College.

In addition to catering to dietary restrictions, she referenced the pandemic-driven popularity of online orders and in-store pick-ups, as well as the upward spike in TikTok videos promoting certain recipes and businesses.

“It’s pretty genius,” Fucinaro said. “I’ve definitely tried a few of the recipes I’ve seen and written down some businesses’ names to visit when I’m in the area. As long as TikTok is relevant, these videos will be as well.”

Fucinaro underscored the many different types of chocolate.

“Outside of being white, milk and dark chocolate, there are so many flavors within those flavors,” she said. “Depending on where cacao trees grow, the beans they produce will have different notes and undertones. Our Ecuador chocolate is a single-origin chocolate from Ecuador and it tastes fruity and nutty. There are so many different flavor profiles, and that’s what makes chocolate alluring to me.”

Drawing Inspiration

Suzi Bonnett had the good fortune of living in Europe for five years. When her family moved back to Omaha, they had a difficult time finding highquality Belgian chocolate. Today, Bonnett owns the Papillion arm of Chocolaterie Stam, a reference to the Stam family of master chocolatiers who has been in the confectionary business since 1816.

In much more recent times, say in the last 13 years, Bonnett has seen more concern about where food comes from and what’s in it.

“There are more food allergies now and people are always looking for small, locally-produced products,” she said. “We know when each of our chocolates was made, what’s in them, and who made them. We also maintain an allergens folder to help people make informed decisions about their chocolate choices.”

She described chocolate as the “ultimate comfort food.”

“No matter your taste, white, milk or dark chocolate, nuts, fruit fillings [and so on], chocolate delivers,” Bonnett said. “Plus, it always makes a great gift for those who have everything.”

Over Valentine’s Day season alone, Chocolaterie Stam dips more than 1,000 long-stemmed strawberries in Belgian chocolate.

Gaylene Steinbach, owner and chocolatier at LuluBee Artisanal Chocolates, owes her passion for chocolate at least partly to watching her mom’s hand-dipped truffle-making talents every holiday season.

“I guess you could say that chocolate runs through my blood,” Steinbach said. “But my real passion for chocolate bubbled up when I received a gorgeous box of artisanal chocolates more than a decade ago. After one nibble, I knew that I’d caught the chocolate bug. So, I dove in.”

Since then, Steinbach said, she’s found that being a chocolatier marries science with the creativity of making flavors – satisfying both sides of her brain.

In recent years, she has also noted a hunger for clean ingredients and exotic flavor combos.

“Just as clean eating has become a popular lifestyle, many chocolate lovers want the same with their indulgent treats,” she said. “As foodies are exposed to different cultures and flavor profiles, they’ve become hungry for more interesting flavor combinations.”

This means small batches of fresh products, with favorite bonbon flavors ranging from brown butter caramel to strawberry balsamic.

She also referred to inclusivity, as “everyone deserves to nosh on our indulgent morsels.” In turn, a variety of bonbons are dairy- and gluten-free.

And, according to Steinbach, the pandemic has led many folks to crave moments of indulgence. Chocolate fits right in, as she described the allure of “lights dimmed, shoes tossed aside, cozied-up in a favorite chair, with Michael Bublé crooning in the background.”

“ … with its creamy texture, complex notes, different mouthfeels, and flavor profiles, chocolate begs you to shut down distractions and simply savor,” she said.

OMAHA RANKS HIGH FOR YPS, YET NEEDS MORE OPPORTUNITIES

Nebraska is well-represented in the most recent, sixth annual SmartAsset study on the “best cities for young professionals.”

In this study, released by the financial resources and analytics hub in July, Omaha and Lincoln both made the top 10 cities for this coveted demographic. Sandwiched between Seattle and St. Paul, Omaha ranked No. 4 on the list. At 10, Lincoln was on the heels of Cincinnati and Kansas City, Missouri.

Notably, the only metro areas in the state with more than 100,000 people “bested” those “peer,” “competitor” and “aspirational” communities, which were previously identified by the Greater Omaha Chamber and its regional partnership. The only market

to make the list, “competitor” Kansas City, was ranked No. 9.

Omaha, specifically, was isolated for its 25th-lowest average rental rates, 14th-lowest unemployment, and 14th-lowest percentage of median earnings (FTEs) going toward housing. These same attributes were highlighted for Lincoln, which boasted the fifthlowest unemployment rate of the 144 communities analyzed and with available data, and the 22nd-lowest affordability (rental rates compared to median FTE earnings).

Business, community and industry leaders offered their takes on the bright spots and the lingering clouds that draw and, conversely, drain top talent from the Husker state and its neighboring communities across the

river.

“First and foremost, Omaha is a unique city,” asserted Veta T. Jeffery, president and CEO of the Greater Omaha Chamber. “Initiatives and partnerships that flourish here would struggle to find momentum elsewhere … you can find unwavering support from a thriving community of likeminded movers and shakers.

“You can connect with a seasoned mentor, and learn from their years of experience. You can find counsel with peers in other industries or similar organizations. And you can find opportunity here to serve others and stretch yourself outside your comfort zone.”

The bottom line, for Jeffery, who brought with her considerable

experience and perspective in diversity, community and economic development throughout St. Louis County in Missouri, is the local YP community is “dedicated to helping others reach their full potential.”

“As amazing as our community is, there’s still room for growth,” she acknowledged. “Programs like the annual YP Summit, YP Day at the Capitol, and our mission-driven YP Council are bold examples of this; however, the time has come for us as a community to stop referring to YPs as ‘our future’ and recognize them as ‘our now.’ YPs possess the ideas that will lead us into tomorrow and the energy to make that progressive new world come to fruition. But our recent rankings notwithstanding, we still have

work to do.”

She spoke to a need for a “renewed focus on developing YPs” that transcend networking opportunities.

“We need their ambitious voices on boards,” Jeffery said. “We need them on planning committees and think tanks. We need YPs running for political office. We need YPs now, not tomorrow.”

She indicated the focus must be on ensuring that YPs feel their “voices matter.”

“Our next step is increased opportunities for growth, as well as expanding opportunities for impact and influence,” Jeffery stated.

A Place to Call Home

NP Dodge President of Residential Sales Jill Anderson, naturally, provided local insights into one of the highlights noted by SmartAsset for Omaha and Lincoln: housing affordability.

In fact, she isolated the Veros Real Estate Solutions 2022 Q3 VeroFORECAST, which projected that Omaha will be the third bestperforming city in the country in 2023.

“Many factors,” Anderson continued, “contributed to this ranking — most significantly, the effect (or lack of effect) rising interest rates have on cities with lower housing costs.”

Beyond the analytics, she also underscored how the 20s and 30s are both fun and exciting as well as foundational.

“As a young professional, you have the opportunity to set a firm foundation for your future, by beginning the process of saving money and making sound financial decisions,” Anderson explained. “One of the best ways to do so is by living in a city with reasonable rent costs, a low cost of living and a low unemployment rate. That way, every dollar you make will go a little bit further, allowing you to save for a down payment on a house, create a savings account, start saving for retirement and simply have a little extra margin for everyday costs.”

In turn, she noted how Omaha blends “big city amenities” with a “small

town feel,” whereby it’s easier and more affordable to get involved in the community and to get to know other like-minded people.

“Commutes to anywhere in the city are in minutes,” she said. “Plus, if you’re a foodie, Omaha has a large variety of new restaurant concepts, breweries and cocktail bars as well as shops and boutiques, parks and trails, live music and entertainment venues, art galleries and other places for young people to meet other young people.”

For Anderson, room for improvement comes in the form of Omaha potentially losing out to larger cities with large venues and sporting events that the metro area does not have. In this case, the central location lauded by the likes of logistics professionals may be considered a “challenge,” due to competition at our borders.

“We don’t have professional sports teams such as football, baseball, or basketball which could give some young professionals pause; however, we do have arena football in spring and summer and professional hockey in the winter months,” she stated. “Our airport isn’t an international airport; and if a young professional travels for work, this could be a deterrent.”

Yet, at the same time, again the central location in the heart of the county can be turned into a positive, too, with Anderson adding: “On the bright side, there are international airports that are a short flight or drive for a connecting flight.”

Lifelong Learning

One can’t talk about issues of oftcited “brain drain” without bringing in the perspective of higher education leadership tasked with empowering those talented young minds, like Tom McDonnell, vice president for academic affairs at Metropolitan Community College. Starting with the positives, he called out the “recession-proof economy,” and an attribute lauded by SmartAsset: the low unemployment rate. Together, these factors, give the “promise of economic stability.”

“Those who are highly skilled can

land a job and move from employer to employer fairly easily,” McDonnell said. “And can often command a higher salary to move from one employer to the other.”

He further isolated the “fairly nonexistent” traffic compared to larger

metros.

“Quality of life is good,” McDonnell stated. “There’s enough nightlife downtown, in Benson and the Blackstone district (to name a few), to make life fun. There are also cultural

events and activities throughout the year if you know where to look.”

He looked forward to the new Kiewit Luminarium, slated to open in April as part of a “reimagined Riverfront.”

“Once you decide to settle down and start a family, Omaha is a very familyfriendly community,” he added.

Efficient and reliable public transportation is McDonnell’s biggest cited challenge to attracting and keeping young talent. And he offered a caveat to the housing attribute: “While housing costs are on the rise, they are still at or below the national average. That said, property taxes are significantly higher in Omaha and all of Nebraska as compared to Iowa.”

McDonnell also shared insights on actions to accentuate the positives; for instance, he suggested channeling the

likes of recent event publicity from the likes of the NCAA Men’s College World Series, which “polish” Omaha’s image on a national front.

“It seems like we try to keep Omaha a secret to the rest of the country,” he said. Regarding challenges, McDonnell suggested that the city look at expanding access. So, public transit covers all of the city – not just midtown and downtown.

“Metro transit bus service doesn’t go everywhere it needs to go, never has,” he said. “The light rail system is a start, but it needs to expand quickly.”

Furthermore, McDonnell describes MCC as an educational resource for the community, with YPs having the opportunity to stay current in their fields via credit or non-credit workforce training courses.

“Additionally, community education courses provide life-enriching content in the arts, in gardening, home repair and much more,” he added.

MCC leadership also alluded to new programs as potential opportunities in the community; its recently opened Digital Express at the Fort Omaha Campus provides free access to technology, meeting spaces, a digital library and learning for the public. Secondly, the college has developed a postsecondary education mobile device repair certification program, MCC Mobile Device Repair Academy, in conjunction with the wireless industry association CTIA and an independent mobile repair shop, iFixOmaha. The academy is slated to launch in the afore-referenced MCC Digital Express spring quarter.

Across the Bridge

Sara Beth Ray further shared her unique perspective as director of finance and young professional engagement at the Council Bluffs Area Chamber of Commerce. When accounting for CB, and other cities such as Bellevue, the population of the metropolitan statistical area shoots up to around 970,000 (from around 490,000 when accounting for Omaha alone).

“Living in Council Bluffs provides young professionals and young families the best of both worlds — they can continue to grow the career they want with access to great businesses and organizations, while raising a family in a safe neighborhood where they can truly know their neighbors and community,” she asserted. “YPs don’t

Ray acknowledged that the area is challenged by “stagnancy.”

“We have the infrastructure to get some really exciting projects and events going, but we need the people to do it,” she said. “We have a great group of community-minded people here, but we always need more. It would be great to see some new faces working on community improvements, and I think tapping the young professional crowd is the way to do it.”

Along those lines, Ray indicated leveraging the unique attributes of CB, its “local, friendly feeling,” along with the easy access to Omaha’s amenities.

“By encouraging community organizations and events, we can attract and maintain the brightest minds in the area,” she said. “Personal involvement in

events and programs, as well as political initiatives, is the best way to encourage growth and development.”

Ray characterized Impact CB Young Professionals as “the first organization that young professionals should join in CB.”

“We open the door to not only CB Chamber programs, but all community connections,” she explained.

And opportunities abound to get involved right away; for instance, its Foodie Friday is held on the third Friday of each month at 11:30 A.M.

“We pick a new Chamber member restaurant every month and meet up there to network and have a great lunch,” she said. “It’s a great chance to try somewhere new in town and to get to know Impact CB members without the pressure of a long program or event fee.”

INCLUDED AMONG BEST CITIES FOR YOUNG PROFESSIONALS

Your 20s and 30s are a fun and exciting time — but also foundational for the rest of your adult life. As a young professional, you have the opportunity to set a firm foundation for your future, by beginning the process of saving money and making sound financial decisions. One of the best ways to do so is by living in a city with reasonable rent costs, a low cost of living, and a low unemployment rate. That way, every dollar you make will go a little bit further, allowing you to begin saving for retirement, create a savings account, and simply have a little extra margin for everyday costs.

Earlier last year, SmartAsset released their list of the Best Cities for Young Professionals. Eight of the country’s 10 best cities for young professionals are located in the Midwest. And even further, two of those cities are situated right here in the state of Nebraska — specifically, Omaha and Lincoln, which ranked as #4 and #10, respectively. These cities provide the lower costs young professionals are after — not to mention, the lifestyle that appeals to Gen Z and young millennials. This means each city has plenty of hip restaurants, lively bars, dog parks, coffee shops, music venues, and more, to create a thriving environment for young professionals to reside.

Page 16 •February 10, 2023

Omaha Named #4 Best City for Young Professionals

At no surprise to us, Omaha was named the #4 best city for young professionals. This was primarily due to the average rent in Omaha being just under $750 per month, which was the 25th-lowest amongst the cities included in the study. This rent makes up just 18.29% of the median earnings for full-time workers in Omaha, which is the 14th-lowest. Plus, unemployment is also low in Omaha — just 2.2%, which is the 14th-lowest across the study. The cost of living in Omaha is $23,767, which includes housing, food, transportation, healthcare and other basic budget needs.

Omaha is an excellent place for young professionals to live, as it has all the big-city amenities with a small-town feel, where it’s easier (and more affordable) to get involved in the community and get to know other likeminded people. The Greater Omaha Chamber Young Professionals council makes it even easier for young professionals to get connected, through programs and initiatives, volunteer opportunities, and annual events.

Plus, Omaha has a variety of new restaurant concepts, breweries and cocktail bars, shops and boutiques, parks and trails, live music and entertainment venues, art galleries, and other places for young people to meet other young people.

than Omaha’s, coming in at $23,419.

As the home of the University of Nebraska–Lincoln, the city is wellequipped for students and young professionals, with a creative culture, incredible restaurants and bars, plenty of coffee shops, amazing parks and trails, and much more. And yet, it remains relatively affordable for those just starting out in their careers. The Lincoln Young Professionals Group provides additional support for young professionals in the city through educational, leadership and networking opportunities. Lincoln YPG has over 2,000 members, which makes it the largest young professionals group in the state and one of the top ten largest in the country! That also means there are plenty of people to connect with in the area.

Data + Methodology

To rank the best cities for young professionals, SmartAsset considered the 150 largest cities in the U.S., 144 of which had complete data. These 144 cities were compared across the following nine metrics:

1. Percentage of the population between ages 25 and 34

2. April 2022 unemployment rate

3. Labor force participation rate for young professionals

4. Average rent, calculated using the average rent of a studio, one-bedroom apartment, and half of the average two-bedroom apartment

5. Estimated annual cost of living, including housing, food, transportation, healthcare and other basic budget needs for an individual

6. Entertainment establishment density, which means the percentage of all establishments in the area dedicated to the arts, entertainment or recreation

7. Median earnings for full-time workers

8. Four-year change in median earnings, which is the percentage change in median earnings for full-time workers from 2016 to 2020

9. Median rent as a percentage of full-time workers’ earnings

SmartAsset first ranked each city in every metric, weighing all metrics equally. They then found each city’s average ranking and used that average to determine a final score. The city with the best average ranking received a score of 100, while the city with the lowest average got a score of 0.

Lincoln Named #10 Best City For Young Professionals

Just down the road from Omaha, Nebraska’s capital city also made it on the list, coming in at the #10 spot. While Omaha was on SmartAsset’s 2021 list, this is the first time Lincoln has made the cut — as this city is consistently growing and improving. Most notably, Lincoln and surrounding Lancaster County have the fifth-lowest unemployment rate (at 1.8%) among the 144 cities included in the study. And the average rent of $763 in Lincoln comprises just 20.04% of a full-time worker’s median earnings in Lincoln, which is the 22nd-lowest. And the cost of living in Lincoln is slightly lower

Overall, the top cities shared one thing in common: affordable rents. The average rent across all 144 cities was $1,130 per month, while the average rent across the top 10 was just $868 per month. This amount made up just 19.91% of full-time workers’ earnings, which is significantly lower than the average of 27.89% across the whole study. Of those places, five cities have unemployment rates that rank among the 10 lowest across the whole study.

The top 10 cities shared another quality: their location in the Midwest. Midwestern cities made up eight of the top 10, spanning from Madison, Wisconsin to Kansas City, Missouri and Cincinnati, Ohio to right here in Omaha and Lincoln.

CHARTING new waters

DIVENTURES EXPANDING TO SOUTHEAST, MID-SOUTH U.S.

Omaha-based Diventures has been making some significant waves via mergers and acquisitions. The company, launched in 2009, has been growing by leaps and acquisitional bounds, purchasing competitors from the upper Midwest to the southeastern seaboard to the mid-South.

In 2022 alone, the firm bought Sub-Aquatic Sports and Services of Battle Creek, Michigan; Scuba Professionals of Arizona/Arizona Dive Shop in Phoenix; The Dive Shop, headquartered in Memphis; and Virginia-based Nautilus Aquatics. These came on the heels of 2021’s additions, New Horizons Diving Center in Lexington, Kentucky; Kansas City-based TD Scuba; Atlanta-based SeaVentures; AQUATREC in Lincoln, Nebraska, and The Playground Dive Shop in Blue Springs, Missouri. All told, Diventures now operates 17 locations in 11 states and employs 200.

Dean Hollis, company founder, said while the new additions have come fast and furiously, the company isn’t finished with its buying spree just yet. He said to look for multiple additions in 2023, possibly as soon as the first quarter.

Growth Mentality

“We’ve identified 35 markets that will allow us to get to just under 70% of the U.S. population,” he said. “We are very strategic in how we grow and where we grow and we want to make sure that the opportunity is there to provide great customer service wherever the demand is.

“We have a process and a methodology: It’s get into the market and then saturate the market. To use Atlanta as an example, getting to Atlanta was a first priority and then we had an opportunity to get another location. We’ll have multiple locations in Atlanta because of how spread out it is.”

Hollis said the selection of potential merger partners has rarely been better as many long-time, independent operators were looking to get out of the market after the pandemic.

“COVID was really a financial hardship for everybody,” he said. “You had people who have been in the business for 30, 40 years and they were like, ‘I’m tired. I’ve been through recessions, I’ve been through economic downturns, and I just don’t have it in me to rebuild my

DEAN HOLLIS, FOUNDER, DIVENTURES.

business anymore.’ In a lot of cases, they would come to us and say, ‘We want to be a part of this.’ That really exploded our growth.”

Location, Location, Location

Acquiring assets is just the start of Diventures’ entry into a new market. Equally important is the buildout of the company’s signature centers, sometimes by remodeling acquired stores but often built from the ground up, to maximize location, visibility and access.

“Divers will drive two hours; we have divers from Des Moines and Kansas City drive to our Omaha facility,” Hollis said. “But Mom’s not going to drive more than 20 minutes to get the kids to swim lessons. So, location is really important to us. We’re following grocery store openings, we’ll follow new schools, we’ll follow new subdivisions because that’s where the young kids are and that’s where the young kids are going to be for many years to come.

“Once we find that geography, we look for somewhere on a main thoroughfare, so we get the drive-by. We want to make sure we have ride in, ride out access and that we design the center so the pool is facing the main thoroughfare. I hear almost every day people say, ‘I drove by that building and was wondering what was in there. It’s just a cool-looking building.’ That’s the location answer.”

The construction model generally includes an 8,000-square-foot, state-of-the-art swim and scuba center featuring an indoor heated pool, retail space, classrooms and a diamond-level scuba service center. Company stores also boast a concierge travel center, providing extensive U.S.-based and international excursions. Hollis noted the travel service has seen particularly brisk growth of late.

“We’ll do 150 trips in 2023,” he said. “If you call me and say, ‘I want to take my family to spring break and I want to go somewhere warm,’ we take care of all that. We also have group trips anywhere around the world, and we also do a lot of local diving.”

Mission-Driven

Hollis said the company views its growth strategy as mission-driven every bit as much as a business move.

“Teaching people to swim is a very important part of our business economically and emotionally,” he said. “Twenty-two people are going down today and tomorrow and the next day, and 11 of those people are going to die and half of those deaths are going to be kids. That’s a pretty compelling reason to say we’ve got to grow, and we’ve got to get to where the families are so we can teach kids how to be safe around the water.

“Water safety really drives our expansion. Our passion is to help as many people as possible be safer and have fun around the water. The business opportunity comes along with that.”

New Year Call to Action

THE SPECIAL SUPPORT OF SARPY CHAMBER GROUPS

There’s a particular energy at the start of a new year. It brings the kind of clarity that comes from reflecting on the past while looking ahead with openness. The Sarpy Chamber W.O.M.E.N. took advantage of this special time of year by kicking 2023 off with their “Call to Action” event.

Standing for “We Optimize, Mentor, Elevate, & Network” the Sarpy Chamber W.O.M.E.N. group is a resource for everyone interested in supporting women as they navigate the unique challenges and opportunities in the workplace. The annual “Call to Action” event offers a space for guests to gather over food and drinks with guided and thought-provoking discussions. This year’s event was hosted by Hail Varsity Club in La Vista and dozens of attendees each had the chance to share their perspectives on their career journeys, managing personal and professional lives, supporting the upcoming generation and more.

“I decided it was time to realign my life around my values,” one woman shared as she discussed leaving a corporate job to start her own business. “Understanding my own values is what prompted me to trust myself to make the switch.” The afternoon was filled with similar leapsof-faith stories. Many were led to big career changes after evaluating and prioritizing personal passions. “Lean into the fear. Do it even if it scares you,” another shared about the chance she took in changing careers to better suit her life goals.

Leaning into fear and making big, positive changes can be a hard move to make, but communities like the Sarpy Chamber W.O.M.E.N. make it just a little more possible. This supportive space also opened up conversations on creating healthy work cultures, handling unrecognized bias as women in male-dominated industries, and the importance of mentorship. The group was made up of many different ages, backgrounds, industries, and professional journeys, but common threads of empowerment and understanding wove the group closely. “I’m so proud of you,” one guest directed to another who had shared her story of career re-invention.

Of course, W.O.M.E.N. is not the only Sarpy Chamber

After acquiring the Little King franchise operation in 2021, Lockwood Development is announcing that the firm’s first Omaha Little King store opened to the public on November 1, with a Grand Opening featuring the Creighton Volleyball team scheduled for Saturday, November 5. The store, located at 8602 West Dodge Road, represents a step forward for both the brand and its footprint in the Omaha area. “Our new store is very close to where the very first Little King store was located when it opened in 1969,” said Chip James, president and CEO of Lockwood Development. “That’s no coincidence. We’re truly inspired by the roots of this historic franchise, and we look forward to carrying that spirit forward to loyal Little King customers, as well as a new generation of Omaha residents.” The 1500-square-foot store combines modern design and an inviting dining area with classic Little King branding and artwork. Customers can expect to order from Little King’s beloved menu featuring subs and sandwiches made with bread baked in store and fresh-sliced meat, as well as soups and desserts, while taking advantage of a variety of conveniences, including a drive-thru. Day to day operations at the 86th and Dodge location, as well as the operation of Lockwood Development’s subsequent stores, wil be overseen by Mark Edwards, an Omaha native who grew up in the fast-food business. “It’s an honor to merge the industry I’m passionate about with a brand that means a great deal to me and so many families in Omaha,” said Edwards. “Little King has more than 50 years of rich history in our area, and now we get the opportunity to move it forward, modernize it, and highlight the very best of what it has to offer.” The new store is the first in a series of new locations James, Edwards, and the team at Lockwood Development plan to open in Omaha and Lincoln. About Little King Founded in Omaha in 1969 by Sid Wertheim, Little King Deli & Subs is known for its deli-style sub sandwiches, made with bread baked fresh on site and meat sliced to order. In 2001, Wertheim’s son Bob took over the company before its sale to Lockwood Development in 2021.
