RECIPES FROM KRK croatia


FRITICE (Fritters) Ingredients:

3 tbsp sugar 12 tbsp flour 4 eggs ½ packet vanilla sugar ½ packet baking powder 30 ml rum 2 firm yoghurts grated lemon peel and juice (1 lemon) grated orange peel and juice (1 orange)

Method:

Mix eggs and sugar. Add yoghurt, rum, grated orange, lemon peel, juice and half of the flour (6 tablespoons). Add the baking powder to the remaining flour and then mix shortly all together. Deep fry the fritters and drain before serving.

SMOKVENJAK

Ingredients: 2kg dried local figs 30 dkg chopped walnuts 30 ml homemade grape brandy (or rum) Method:

Cut off the top of the figs, grind them and then add the walnuts and brandy. Mix all together and form into a round shape. Place on a clean board and airdry 15 – 20 days. It is served as a cold winter dessert


INBRIAGONI (COOKIES WITH ANISE) Ingredients: 0,50 kg flour 0,25 kg castor sugar 0,25 lard 2 egg yolks 0,10 l anise pinch of salt Method:

Mix flour, egg yolks, sugar, lard, anise and salt. Leave to rest. Roll out the dough until it is 2cm thick. Use cookie moulds to cut different shapes: round, square, crescent, stars, hearts ‌ Roll the top of the cookies in sugar and place on a baking tray, 1cm apart. Bake approx. 20 min. at 220 C. Be careful the cookies don't burn – they should have a nice light colour, the colour of white coffee.


TUFAHIJE (Bosnian poached apples) Ingredients:

8 medium-sized apples 250 g sugar 100 g hazelnuts 1 lemon 500 ml whipped cream 1 l water 2 packets of vanilla sugar 8 sour cherries

Method:

Wash, peel and core apples. Keep the apple peel. Put apples in boiling water with sugar (100 g), vanilla sugar and lemon slices. Turn apples when half cooked. Leave to cool. Add remaining sugar, vanilla sugar and apple peel to water and cook 5 min. Strain the syrup and leave to cool. Bake the apples shortly.

Filling:

Bake the hazelnuts shortly in warm oven and then peel and grind them. Make firm whipped cream. Add hazelnuts to half of the cream and fill the apples. Decorate with the remaining cream and cherries.

This dessert is very popular in Bosnia and has oriental origin. Like most oriental desserts it is very sweet, simple and inexpensive


BAKLAVA -

30 x 30 cm baking tray

Ingredients: -

1000 gr ready-made phyllo dough

-

600 gr finely chopped (minced) walnuts

-

500 gr sugar

-

2 pcs vanilla sugar

-

2 lemons

-

4 dcl water

-

1 dcl oil

-

80 gr butter

Filling Preparation: In a bowl, put the chopped walnuts, 200 g of sugar, vanilla sugar and lemon zest. Mix together. Grease the baking tray and then lay 3 sheets of phyllo dough in it, one at a time. Using a brush, grease each sheet with a mixture of oil and water. Spread the filling over the pastry. Lay another sheet, brush it with oil and water, then spread the filling. Repeat the procedure until you have two sheets of dough left. Layer up the remaining sheets on top of the nut mixture.Using a knife, cut a criss-cross pattern into the pastry. Brush with oil and melted butter. Place it in the preheated oven for approximately 20 minutes, at 180-200 째C.

Meanwhile, combine the syrup ingredients: water, sugar and lemon slices, bring to a boil. Pour over warm baklava.
