



We love juicy and delicious grilled Royal Ranch NY Strip Steaks with this quick and easy miso truffle butter! Add a grilled radicchio salad for a tasty side and you have a perfect hot off the grill summertime meal.

Ingredients:






Prep time: 20 minutes
Cook time: 15 minutes
2 lb. NY strip steaks, 8 oz. each
1 t each salt and pepper
½ c butter, softened
3 T red miso paste
2-3 large cloves garlic, minced
1 T truffle oil (or heavy pinch truffle salt)
1 T each chopped fresh parsley and chives
Grilled Radicchio
Caesar Salad:
2 heads radicchio, quartered into wedges (keep core intact)
2 T extra virgin olive oil
½ cup Toby’s Caesar Salad Dressing
1 cup fresh grilled croutons or toast points
2 T shredded Parmigiano Reggiano



Fresh ground black pepper, as desired
Steps:
• Preheat grill. Season steaks on both sides with salt and pepper.
• Grill steaks to 125F internal for medium rare, approx. 6 min. per side. Remove from heat and rest 5 min. before serving.
• Meanwhile combine butter, miso, garlic, truffle oil and herbs well. Generously top each steak with miso butter.
• Drizzle radicchio lightly with olive oil. Grill just until marked and beginning to char at tips. Serve immediately alongside steaks, with dressing, croutons, cheese and pepper sprinkled over wedges.
