Welcome to the Adventure Capital of the Caribbean Windsurfing burst onto the scene in the 1980s as one of the most popular watersports. Canadian windsurfer Jean Laporte was on the hunt for a destination closer to home than Hawaii and his travel agent suggested checking out the Dominican Republic. After spending some time exploring the country, Laporte caught wind of the north coast, happened upon Cabarete Bay, and quickly realized that this virgin spot had the perfect conditions he had been searching for. He set out for a solo session, much to the amusement of the locals, and then proceeded to write a magazine article that got the world’s windsurfing community interested in Cabarete. The rest is history! For over 30 years, Cabarete has lured watersports enthusiasts from all over the world to enjoy the perfect combination of calm waters and steady on-shore winds. Over the years, many of the locals have picked up the sport and have become world champions. However, it wasn’t until 2010 when the Mariposa DR Foundation began, that local girls could be seen shredding waves, windsurfing, and catching big air kite boarding. Through the generous support and encouragement of many local and international businesses, local girls are now taking up space and leading the charge in their own community.

THE BEACH CLUB, SEA HORSE RANCH The Vibe: Spectacular oceanfront restaurant with panoramic views and one of the best settings for sunset dining in the area. The Beach Club was recently renovated with a sleek modern Caribbean feel, one of the best al fresco dining experiences in town. The menu has multiple influences from around the world fused with Caribbean flavors for eclectic twists on classic dishes. Best For: Beautiful, friendly and relaxed, The Beach Club is a solid bet for a casual meal or a special occasion. The restaurant hosts live music events with local and international artists, and is a favorite for spending holidays like Thanksgiving, Christmas and New Years. At The Beach Club, you’ll feel right at home. Favorite Dish: The Beach Club offers a nice selection of fresh salads, pasta, seafood, pizza and Dominican specialties, however one of the favorites is the classic Angus burger, arguably the best in town. The Beach Club is also a favorite spot for drinks, with a colorful and delicious cocktail and “mocktail” menu!

BLISS, CALLEJÓN DE LA LOMA, CABARETE The Vibe: Unassuming from the busy street at the entrance of Callejon de La Loma, come through the doors of Bliss restaurant and you’ll be personally welcomed by the owners into a cozy poolside sanctuary. Tranquil and romantic, Bliss is a true European dining experience in the heart of Cabarete. Best For: Open only for dinner, Bliss is a great pick for date night. Enjoy fresh seafood, pasta, homemade desserts and other Italian specialties in a candlelit poolside oasis. BLUE MOON, LA MINA The Vibe: Sitting atop the foothills in the small village of La Mina, about 20 minutes east of Cabarete, Blue Moon is a unique Indian-Caribbean fusion restaurant, well known for feasts of up to 30 guests in an open-air thatched roof kiosk. Guests are instructed to remove their shoes and get comfortable on floor pillows where they will be served family style with banana leaves as plates and will use their hands as silverware. Reservations are a must and arrive just before sunset to take in the spectacular hillside views. Best For: Families and groups looking for a fun, out of the box dining experience. Favorite Dish: The typical feast features vegetable pacoras, tandoori chicken, spicy vegetable curries, homemade chutneys, fresh salads, rice, a refreshing tropical dessert, coffee and tea. An experience you don’t want to miss! CABARETE COFFEE, BAHIA DE ARENA The Vibe: Run by the nonprofit organization, The Mariposa DR Foundation, this spot is your friendly neighborhood coffee shop with great food, air conditioning, and lots of information! The best thing - every dollar spent here goes directly to programs educating and empowering local girls. Best For: Working remotely? Set up a satellite office while sipping organic shade grown Dominican coffee and have a good old American breakfast, sandwich or salad while enjoying the air conditioning and free wifi. Looking for some local insight on what to do in town or more information on local organizations doing good? The friendly, knowledgeable staff at Cabarete Coffee is your best bet. Also a great place to pick up some unique souvenirs and support a great cause! Favorite Dish: The Mexican Omelette made with farm fresh eggs and served with avocado, pico de gallo, homemade salsa, potatoes and French bread is a must-have. We also love the gluten-free waffles, topped with homemade whipped cream, which are the best on the island. And it goes without saying that the organic coffee is worth a stop on its own!

CHEZ ARSENIO, OCEAN PALMS, ENCUENTRO The Vibe: Tucked away in the newly renovated Ocean Palms property at Encuentro Beach, Chez Arsenio is a longstanding Cabarete restaurant in a new location! With lots of new development, Encuentro beach is rapidly growing into a friendly and popular neighborhood, just outside of downtown Cabarete. Best For: Fresh seafood options and a change of Cabarete scenery. Great for groups and relaxed nights out. Favorite Dish: The daily selection of fresh fish is always great here, but don’t miss out on the filet mignon.

Best For: Grabbing a quick bite on your lunch break, a business meeting or something fresh, fast and filling before an afternoon on the beach! Favorite Dish: Fresh Fresh’s signature bowls are surely the most popular. An order-at-a-counter-style Mexican restaurant featuring fresh, local ingredients has something for the whole family. Sharing outdoor dining space with neighboring sushi restaurant, Yamazato, it’s also a great choice for families or groups who may be craving different things with two options right there! Best For: Simple, fresh, fast and delicious Mexican food. Great for families and groups in a casual setting. Whether you’re looking for a relaxing beachfront breakfast, quick bite in between windsurfing sessions or beach volleyball, an authentic Cabarete dining experience with your toes in the sand or a happy hour cocktail before a night out, Serenade has it all. Favorite Dish: The menu at Serenade is quite large but they have the best daily breakfast buffet in town. You also don’t want to miss Wednesday night’s Mongolian Grill and live music. It is safe to say that Yamazato is the best Asian restaurant not only in Cabarete, but on island! In collaboration with The Mariposa DR Foundation, the United World College (UWC) developed a summer short course - Sustainability as Social Justice: Investing in Girls and Mother Earth. For 2 weeks, high school age girls from all over the world and the local community, come to Cabarete for full cultural and project-based learning immersion. Students participate in service, excursions, discussions, readings, films and more, putting brilliant young minds together in solving some of the world’s most pressing issues related to climate change and extreme poverty. When we started The Mariposa DR Foundation ten years ago, we immediately knew we were onto something that would be transformational for the entire community. After years of educational work in Cabarete and beyond, we knew that we had to create something exclusively for girls. We knew that girls weren’t reaching their full potential because of domestic responsibilities, early marriage and childbirth, and all the hurdles put in their way while growing up in extreme poverty. We knew that they were being overlooked, left out and missing out on many of the unique and rich experiences that make their community of Cabarete so wonderful. We knew that we had to do something different. We knew that if we could figure this out, we could change not only her life; we could change her family’s, her future family’s and her entire community’s life as well. We knew that she was the world’s most powerful force for change.

While we knew all those things, what we didn’t know is HOW to affect that change. We didn’t know at the time how critical sports would be to our success. When we started, we didn’t have our own space. We depended on our community to provide safe places for us to convene. From the public schools, to local restaurants, hotels, tour operators and sport companies and instructors, a world of resources opened up to us and the vision started to become clearer. With access to all of these amazing new experiential learning opportunities, girls who were conditioned to believe that their individual hopes and dreams didn’t matter, began to see new possibilities for themselves and understand that they had agency in determining their futures. With all these new possibilities came the need to seek out more ways of building confidence. Sports became the outlet for many of them and ten years in, we continue to be amazed at the results. We have all seen the research or experienced first hand that education and sports go hand in hand. Studies have proven over and over again that sports simultaneously improve memory, concentration, and learning skills- all of which are tools for an advantage in the classroom. That playing sports produces higher states of psychological well being and self-esteem. While this is important for all children, it’s game changing for girls, especially girls thriving in extreme poverty. Girls who never believed that they were allowed to want certain things are now setting goals, working in teams, managing stress and anxiety, building skills to deal with success and failure, becoming leaders on the field, in the classroom, at home and in the community, and truly learning that “practice makes perfect” because of sports.

Ten years ago, before Mariposa, it was extremely rare to see any Dominican and unheard of to see a Haitian young woman participating in sports in Cabarete, especially watersports. Although we live in a beachfront community, local girls are often never taught to swim and grow up fearing the water. Imagine growing up on the ocean watching local boys and foreigners find joy in surfing and kite surfing and being in the water, and not knowing how to swim! The very things that make Cabarete unique and amazing were the things that most held the girls back from feeling like they were allowed to participate in and take up space in their own world. In 2013, we purchased a dilapidated property that was originally built as a hotel. In the center of the property was a pool. In developing and discussing the plans for fixing up and building out the space to create The Mariposa Center for Girls, the question of “what are you going to do with that pool?� kept coming up. In fact, many people had opinions that it was a frivolous expense to have a pool on our property and that we shouldn’t invest resources into providing such a luxury. We saw it differently. We saw that pool as the heart of everything we were trying to do at Mariposa. We saw an opportunity to level the playing field for girls in Cabarete and create the conditions to be active citizens. We saw it as the most important thing to have on the property to show the girls that they matter. We had to have that pool. 46 | CABARETE GUIDE 2020

HERE WE ARE, TEN YEARS LATER AND THAT POOL CONTINUES TO BE OUR CENTER AND HAS CHANGED SO MANY LIVES. Every girl at Mariposa has access to swimming lessons and thanks to our many community partners, has the opportunity to try and pursue all kinds of land and water sports. This has changed everything. The girls are not only feeling confident in learning new skills, they are making empowered decisions, trying new things – playing basketball, tennis, swimming, surfing, dancing, doing yoga, kite surfing, stand-up paddling and much, much more. Not only are they leading active and healthy lifestyles but they are walking taller with balance, grace and poise. The Mariposa girls are perfect examples of how sports are beneficial in every aspect of their lives. As we look forward to the next ten years on this journey, we still have a lot to learn but we surely know one thing - that sports will continue to be an integral part of everything we do. 48 | CABARETE GUIDE 2020

MEET OUR COVER GIRL!

Nina comes from a family that is no stranger to water sports. The youngest sister of world kiteboarding champion, Ariel Corniel and Olympic Medalist Adeuri Corniel, Nina, unlike many other local girls, grew up kiteboarding with her brothers. At the age of 14, she was training for the junior Olympic kiteboarding team and just four days before the finals, she was injured in a freak kiting accident, resulting in her losing the tips of 3 of her fingers. The accident was extremely traumatic and her confidence suffered. Nina spent months at home, falling into a deep depression and became the victim of so much bullying that she even had to change schools.  In 2019, we started the Mariposa Kite Team as we realized that this sport is incredibly intimidating and isolating for the only young women of color doing this on the entire island. Nina, who is no stranger to hardship, emerged as the perfect candidate to take a leadership role coaching other local girls interested in pursuing the sport. When Nina joined the Mariposa team as the kite team leader, everything changed. Not only did Nina take back her power and regain her own confidence, she began to play an integral role in helping to build confidence and change lives of other local girls in the program just like her. With Nina there to mentor and support Mariposa girls, they have banded together and formed quite the team of brave, fearless young women. Nina is incredibly kind and thoughtful and the girls truly look up to, adore and respect her. A shining example of leadership in her local community, we’re proud to share Nina’s success story with the world and incredibly grateful to have her on our team. theguidecabarete.com | 53

Most of what we see when learning about the history of the Dominican Republic begins in 1492 when Christopher Columbus landed in the new world on the island of Hispaniola, but what about the indigenous Taíno people - the original people who lived in this beautiful paradise? Before the Europeans, this island was home to an estimated 3 million Taíno people who settled here in the 7th century AD. The Taíno were the principal inhabitants of Puerto Rico, Cuba, Jamaica and Hispaniola, establishing the rich culture, agriculture, economy, political organization and ways of life that are still prevalent today. The most legendary Taíno was Anacaona or “Golden Flower”, the female chief of the Xaragua kingdom who ruled equally alongside her brother. She was strong and highly respected and when Columbus and the conquistadors arrived on shore, she negotiated trades with the foreigners but stood her ground when the Spaniards tried to gain control of her land.

WHO WERE THE TAÍNOS? When Columbus returned to the Americas in 1503, Anacaona set forth to negotiate a peaceful trade, however upon arrival she realized that they had no such intentions, rather to conquer and dominate. A reception of over 80 Taíno chiefs was ambushed by the Spaniards where they removed Anacaona, barricaded the remaining leaders inside and set the venue on fire. Anacaona was given an ultimatum – become the concubine to the Spanish newly-appointed governor or die. Standing her ground, Anacaona refused to submit and was hanged at the age of 29. She continues to be heralded as one of the Caribbean’s greatest heroines and one of the few women in history who has always been recognized as a fearless and powerful leader.

Researchers estimate that as much as 90% of the Taíno population were wiped out either in battle or from newly introduced diseases, nearly reaching extinction. However, the few that did survive, their descendants in the Caribbean and the United States continue to reclaim and celebrate their rich heritage. During the last 50 years or so, there has been a movement to find Taíno descendants and to revive their culture. Modern-day Taíno are gathering and celebrating their rich history.

When Columbus came to the New World in 1492, his ships anchored right here in the Dominican Republic, which is when Spanish, the official language of the country, arrived. As the indigenous Taíno population was wiped out by epidemics and brutal working conditions, African slaves replaced them as laborers and brought their language, which can still be heard in many words, intonations and colloquialisms.

The Taíno population diminished significantly with Columbus’ arrival. However, part of their language still lives on today. Many of their words were adopted by the Spanish and passed into English and other languages. Here are some that you might recognize. BARBECUE Derived from “barbacoa”, a particular method of cooking meat on a raised platform CANOE Originally meaning a dugout like those used by Tainos, it comes from the word “canoa” HAMMOCK Spanish colonists learned about hammocks from the Taino, who protected themselves from critters while sleeping with fishing nets called “hamaca”

Few people know that back in 1965 when elected president Juan Bosch overthrew acting president Donald Reid Cabral, the coup led to a brief Dominican Civil War, and allegations of foreign support for the rebels led to an American intervention in the conflict. Some popular English phrases and product names became part of the local Dominican lingo, and can still be heard today in many homes or while shopping at a local grocery store. CONFLÉ Comes from “cornflakes”, means “cereal” JIPETA Comes from the word “Jeep”, means SUV PAMPER Comes from the brand Pampers, means “disposable diaper”

HURRICANE Huracán is the Taino word for “god of the storm”

“The Bread Of The Indies”

CASABE The knowledge of how to make this flatbread has been passed on through generations from the Taíno people and spread to where descendants have settled in what is now modern-day Dominican Republic, Puerto Rico, Haiti, Cuba and Venezuela. When the Spanish first arrived in the Americas, they learned that this food – which they called “the bread of the indies” – had advantages over their traditional European bread in that it does not go stale or moldy. Up until a few decades ago, casabe production was a dying tradition in the Dominican Republic, as the process to produce it used to be only by hand making it labor-intensive and was difficult to increase volume of production. 58 | CABARETE GUIDE 2020

Casabe (Cassava Bread) is one of the oldest dishes in the culinary heritage of the Dominican Republic and the basis of the Taíno diet. A crispy flatbread made from cassava (yucca), still a popular food in modern Caribbean households.

Several entrepreneurs in the 1970’s developed machinery to produce the product on a much larger scale and today it is widely distributed in local colmados and supermarkets around the country as well as internationally. This ancient bread is fat-free, rich and in fiber, always grown organically and despite being preservative-free, has a shelf life of up to eight months! As with conventional break, it’s commonly eaten at any meal, served with coffee, as an accompaniment for soups and stews, like tortilla chips or crackers for dips and a myriad of other ways.

hroughout the planet, women and girls are disproportionately affected by climate change. Living under the most vulnerable conditions; we know that what affects their environment directly affects their lives. Though women of color are the most affected by these changes, they are often the least represented in climate justice advocacy. As quoted in an article written by Kaitlyn Hodge in The Daily Californian, “As those most impacted by climate injustices — people of color, marginalized genders and people from low-income communities — who are also advocating for climate justice are seemingly eclipsed by the attention we pay to activists who have more privilege than others.” At The Mariposa Center for Girls, we are changing this paradigm by putting girls of color at the forefront of environmental change that affects our community directly. Our environmental laser focused programs are mobilizing a community and a generation of girls to take action.

The Mariposa Center for Girls has been leading the environmental sustainability example for years; inspiring other organizations and community leaders. In 2016, Cabarete Coffee decided to stop selling water bottles, and instead began offering all clients free, filtered water. Though there was an economic loss, the significant environmental impact was worth any money lost in sales.

Did you know that when the Mariposa Environmental Activism group did a tally of plastic bags used in a local grocery store, we found that 11 single-use plastic bags were given out per minute, translating into 7.5 million bags a year? Understandably, we were shocked at these results and what it means for the children and the future of Cabarete. We have turned these grim statistics into motivation. As we consistently work more and more towards sustainability in our projects and community, we are excited to announce the launching of our “De Uno en Uno Salvaremos el Mundo” campaign. This campaign is focused on decreasing the consumption of single-use plastic bags in our community by motivating community collaborators and influencers (schools, small business owners, and restaurants) to begin to be committed to make a sustainable change in their reduction of single-use plastic bags.

THE MARIPOSA CENTER FOR GIRLS HAS ALSO SAVED OVER AN ESTIMATED 14,000 OF SINGLE-USE PLASTIC BAGS BY UTILIZING THE UPCYCLED SHOPPERS FOR ALL OF OUR PURCHASING NEEDS.

Lastly, an exciting component of this campaign will be to have each commitment campaign member tick statements that their small business does in becoming a true eco champion in our community. By May of 2020, all businesses who can prove their commitment will be featured in an article in our Cabarete Responsible Investment and Sustainable Tourism Guide for the 2021 year! We are thrilled to be the leaders of a more conscious ecologically friendly future for Cabarete and look forward to celebrating with our local eco business champions, in solidarity for the protection of future generations of Cabarete! We have no doubt that… De Uno en Uno Salvaremos el Mundo!

Each participating business will be visited by our Environmental Activism group, given a survey tool and will sign an environmental commitment to the future children of Cabarete. All businesses who sign the commitment will be provided with some of our amazing Mariposa Upcycled shoppers (reusable bags made with upcycled sails that are sewn by Mariposa girls and women in the community; providing jobs, less trash and generating income for our environmental programming) with absolutely no cost, and solely with the commitment of using the bags instead of single use bags when making purchases. Also, we will be offering up to 20 eco ideas to each business and will be checked in on a monthly basis to register their progress and to better understand their needs.

riginally from Chicago, I first came to Cabarete on a college spring break trip back in 2003. I immediately fell in love with everything about this town and kept finding my way back. I lived here full time for five years when we started Mariposa back in 2009 and it continues to be a huge part of my life. I’m grateful to call Cabarete my second home. With the challenges of being a busy social entrepreneur and business woman who travels often, over the years I learned to prioritize my wellness and self care and have become passionate about helping others do the same. Carnaval is celebrated all over the country and the perfect opportunity to experience the true Dominican spirit. Bursting full of color and tradition, Carnaval is celebrated for an entire month with events and parades all over the Dominican Republic. MASTERS OF THE OCEAN The world’s only water sport quadrathlon! Four water sports, one master – international masters come together to compete for the title in kitesurfing, windsurfing, surfing, and stand up paddle boarding. A signature Cabarete event for almost 15 years!

THE BUTTERFLY EFFECT The Butterfly Effect is a worldwide movement to inspire and encourage women everywhere to participate in surf sports all while creating and nurturing connections with the community. Since its first event in 2007 on Maui, Hawaii with a dozen women, The Butterfly Effect has grown to over 50 different non-competitive events in 19 countries and with thousands of participants.

MARIPOSA SURF CONTEST Before the Mariposa Center for Girls started a surf program, it was rare to see a local Dominican or Haitian girl out on a surfboard. The local nonprofit organization educates and empowers girls through many different programs with sports being an integral part of the offerings. Local girls come out to show off their skills, support each other and have a major presence in the surf culture here in their community. PABLITO GUZMAN’S CABARETE CLASSIC It is the largest gathering of windsurfers on the North Coast. The event is held over two days where competitors take part in race categories and in “freestyle” of all ages and abilities. More than 80 competitors from all over the world have joined this event in Cabarete, from countries such as Australia, USA, France, UK, Switzerland, and Venezuela.

OCTOBER PAUHANA SURF CONTEST

A youth-focused surf competition with many different categories including peewees, mini junior and junior, this fun local competition brings out the spirit of Cabarete. Local participants get the chance to win cash prizes, holiday weekends, special gifts and more!

NOVEMBER D.R. JAZZ FESTIVAL

The Dominican Republic Jazz Festival is the longest running jazz event in the country with stops in several cities. This multi-day free event brings critically acclaimed international and local jazz artists to perform every year for incredible concerts right on the beach!

Ryan, a JetBlue pilot, Tessa, a marine biology teacher and their two daughters, Cameron (11) and Makena (9) spent a year preparing for their family adventure - getting certified as lifeguards, taking spanish lessons and soliciting donations for The Mariposa Center for Girls. They raised over $7,000 for the organization and in August 2019, packed a few suitcases filled with snorkel gear, stand up paddleboards and other donated items for Mariposa and set out on the trip of a lifetime.


Ryan, Tessa, Cameron and Makena spent 4 months in Cabarete, volunteering with Mariposa, teaching girls all about ocean conservation, marine life, river systems and more - guiding groups through the lagoon and river on stand up paddle boards. They created a family blog to document their experience and to create a school assignment for their children.
