Preparation Cook Pasta in a large boiling pot by adding 1 tbsp of oil and 1 tsp of salt. Allow it to rapid boil for 5 mins. Make sure that they do not turn slimy. Keep stirring occasionally . Once done, drain water and keep them aside. Fry ginger and garlic pieces until raw smell subsides. Add onions and other vegetables. Fry all the vegetables in high flame for 3-4 mins. You need to toss the vegetables but shouldn't cook them to retain the crunchiness of the vegetables. Now add your spices and sauces. Mix all the ingredients well. Cook for 1-2 mins which ensures even combining of the sauces and spices to the vegetables. Add cooked pasta. Mix well to make sure that the prepared gravy coats the pasta. Cook for 3-4 mins with occasional stirring. Transfer the contents into a serving bowl and garnish with Parmesan cheese and spring onion greens.
