fter saying ‘yes’ to those four little words, the first thing you need to think about is that elusive perfect venue. Typically, you think it’s the easiest decision but usually it ends up being one of the hardest as there are so many factors to take into consideration. Before you start your venue search make sure you have a clear idea on the key wedding factors so you can make the right choice. Key things to consider here include: guest numbers; location – country, city, marquee or a destination wedding, it will help narrow down the search; date – or even just the season; budget – be realistic about what you can and can’t afford to spend. So now you have an idea of when and where you want to get married, how many guests you have and how much you have to spend – let’s get searching. Firstly, the location is an important factor. When considering a venue make sure it has all you need. Does it have rooms for guests to stay in or at least nearby? Most importantly, does it have a bridal suite or room where you can spend your first night as the new Mr & Mrs? If you are having a ceremony at a different place to the wedding reception make sure guests can easily access it and don’t need a huge amount of travel time between the two, you really want to keep the momentum going.

D For larger weddings, if budget allows, a marquee is a good option as you can dictate the design and layout, but they are more expensive than a wedding venue unless it’s already set up at your chosen location.

Make sure the venues you look at can comfortably accommodate all your guests for both the ceremony and reception. No one wants to be standing to watch a ceremony or packed in like sardines for a wedding breakfast.

TIMINGS If you want an all-night party then check the venue has the option to apply for a late license. There is no point looking at a venue where the cut off time is 11pm if you want to be up dancing with your guests and new husband/wife until the early hours.

VIEWING THE VENUE Here are some pointers for things to enquire about when you visit your venue: the minimum

and maximum number of people; timing restrictions; any possible music issues, for example, no amplified music is allowed; exclusivity (as no one wants to see another bride on their wedding day); does the fee include the whole day, as suppliers may need to access the venue for set up very early in the morning? Check this included in the price you have been quoted. I adore weddings! It’s another chance to dress to impress all day long. Though, deciding what to wear is a challenge in itself. We are all creatures of habit, many of us opting for the traditional suit with matching tie for the men,

and pretty floral dresses with matching wide brimmed hats for the ladies. But it’s 2016; it’s time to change things up a little bit!

What is your role? How much will you be required to do? Have you been invited to the whole day or just the evening? Your role will determine your attire. Do you have a long walk to the church or reception? Staying comfortable is just as important as looking great. What is the weather going to be like? It’s impossible to predict the weather at any time of the year, especially in the UK so plan for all eventualities!

Now you have an idea of what kind of event that you are going to, and your role, you can start planning your outfits. Just because the dress code is strict it doesn't mean that you have to shed all your personality: be creative and remain true to your personal style. Never wear yellow in your everyday wardrobe? Then don’t wear it for a wedding! Think about your outfit as a very special extension of what you’d wear to a really nice party. Too many people try to go so far removed from what suits them because of the enormity of the day. Try on everything together; dress, shoes and all the accessories. Seeing the outfit together can avert an on-the-day disaster – you’d be surprised how many people don’t do this.

Like most dress codes these days, the rules at weddings are much more versatile than they once were. Pay particular attention to the cut and material of the suit. A two or three piece suit is the ultimate all rounder. Choose the right fabric – lightweight materials like cotton and linen blends will serve you well for the day through until the evening. Off the peg is fine, it’s all about the fit, as long as you have a well fitting suit you can style it up! Don’t be afraid to wear separates – knowing your shape and style will enable you to choose the correct pieces for the complete outfit. An example of this could be tailored trousers combined with a tweed blazer, shirt and silk tie. Spring and summer weddings, daytime weddings, and those held in tropical locations all demand a dress code that is much less starched, yet retains certain chicness. Much of the change happens in the material and structure of the suit, rather than the style itself. For men, spring is the perfect time to subtly experiment with colour—not too hot for dark hues and not too cold for pastels and neons. Layer brightly coloured shirts under lightweight suit jackets and accessories with slim ties or bold patterned socks. There are so many subtle ways for men to add colour to their looks, so there’s no excuse for a straight black-and-white ensemble. When it comes to autumn, winter and country weddings, a blazer would be appropriate. Team it with a quirky pair of cufflinks and pocket square, it will give a stylish look. A great pair of shoes, like brogues, can complement the entire look so make sure they are a versatile colour and style. Don’t underestimate the effect of mixing and matching textures and patterns – pair a slightly heavier wool suit with a silk tie and don’t be afraid to wear some colour!

Some great alternative looks include using bold colours to your advantage – a bold mid-length skirt with a blouse will work well. Complete the look with neutral accessories for instant glamour. Prefer a retro kinda feel? A knee-length cocktail dress never goes out of style. Love the catwalk look? Choose a simple, showstopping piece like a silhouette dress with a stole and fabulous fascinator. A simple prom-like dress can give a stylish and polished look. Stick to one colour and use accessories in a different hue to add a sassy twist. A fan of floor length gowns? This is one of the most popular looks for weddings; maxi dresses should feel glamorous, with lots of colour and subtle print. Ditch the flip-flops, add a stylish pair of heels, a fab fascinator and a bag. For a perfectly poised, elegant look, a tiered dress will hit the spot. For a summer wedding, light pastel, lace and chiffon fabrics work well with ruffles. Team with a simple bag, matching hat and killer heels. If dresses really aren’t your style, glow with confidence in a trouser suit. Pull off the look with bold prints, stripes, cigarette pants, killer heels and big corsages.

Jennifer Meredith explores the Essex Book Festival – the UK’s only month-long, county-wide convention of its kind s C. S. Lewis once said, ‘You can never get a cup of tea large enough or a book long enough to suit me’. I feel the same way; not just about the tea (you can’t beat a good brew), but when I find a book that satisfies my hunger for otherworldliness, its conclusion becomes a saddening inevitability. To the non-emotionally attached, a simple remedy may be to distract oneself with another book, but with the wealth of literature available at the click of a button on our e-readers, it’s incredibly easy to become lost in a sea of bestsellers. If this sounds like a regular occurrence in your day to day, perhaps it’s time to make the Essex Book Festival an annual event in your

calendar. With over 100 writers, poets, artists, filmmakers and musicians presenting at this month-long occasion, inspiration can be found by even the most picky of readers. Taking place at over 30 venues across Essex, including lecture halls, galleries and libraries, this year’s festival will feature speakers such as Captain Corelli’s Mandolin author Louis de Berniéres and former politician Vince Cable, both of whom will be presenting at the University of Essex. Launching the festival on 29th February is Turner Prize winner Grayson Perry; the Chelmsford-born artist will present a highly anticipated talk at Anglia Ruskin’s Chelmsford Campus. Each speaker will deliver a unique perspective on the world of

literature – perfect for those on the search for a new read. Last year’s line-up saw controversial Suffolk artist Maggi Hambling lead a series of talks on art, Shami Chakrabarti spearheading discussions on human rights, and Richard Madeley interviewing wife and presenting partner, Judy Finnigan, on her second book, I Do Not Sleep. A first for the festival, the Golden Age of Crime Weekend is set to be a gripping event with celebrated crime writers taking the reigns in a series of discussions, film screenings and workshops at Southend-on-Sea’s Park Inn Palace Hotel. Colour Stylist and colour analyst Sarah Jones explores the complexity behind colour

e may not be aware of it but colour has a huge effect on us all. The colour we choose on our walls, the shade of a lipstick, the hue of a handbag, the tone of a tie all have subconscious effects on our mood and optimism. On daily dressing the majority of men and women choose a colour because they are drawn to it. Many of us choose black to slim, bright shades to show joy and navy for professionalism. We naturally want to project a certain image and to look our best. But what if the colours you choose are not helping you to do this? For example, is black actually drowning you, dulling you down?

Colour analysis is designed to identify which colours make the most of a person’s natural appearance. A person’s best colours will lift their features and give them a healthy glow. Of course, you can wear whatever colours you wish; however, when worn close to the face the wrong colours can make the individual look ill, tired and sallow. The correct colours will harmonise with your natural colouring, helping to camouflage imperfections, softening lines and dark areas, lessening the need for makeup. Artists have long known that colours create very different effects when beside a complementing or contrasting one. A dove grey when placed next to lavender appears soft and muted but when placed next to an olive green it becomes vibrant. This is due to the quality of the shade. The same is true with a person’s skin tone. While the outer skin walls may tan and change, the undertone will always stay the same. Depending on the tone of your skin and the depth and clarity of your colouring, each person will fit into one of four seasons. These are named spring, summer, autumn and winter. The next feature is the depth of colouring – the clarity. These are based on how strong or muted your look is. If you can wear a warm bright red then your natural colouring is probably warm and strong. If the

same warm bright red overpowers you and makes you look a little jaundice then it isn’t right. Your colouring is most likely to be cooler in tone and softer. This secondary factor is subcategorised into clear, tinted, toned and shaded. Therefore a person could be a shaded spring or tinted autumn, and so on. All springs are light. Springs range from bright white and golden blondes and people with warm strawberry blonde hair. Some, like Jessica Chastain, are light redheads. Their skin is often peachy and their eyes range from bright turquoise blue to dusty hazel. Those with these features rarely have warm green eyes as the strength of these when paired with their

The thing I love about colour analysis is that this palette is yours for life light, warm colouring pushes the individual into the autumn season. Springs will have a clear, (clear spring) warm (warm spring) or a slightly muted (toned) or deeper look to them, (shaded spring). Springs have nothing deep or dark about them. Other than clear springs, these people should choose a warm navy over black as their natural colouring comes alive with light, warm colours. Summers have a cooler undertone to their skin. Some, like Angelina Jolie, are muted whilst others have more clarity to their look. Summers can have dark or light coloured

hair but there is softness to them. There is always a lack of gold or red in the overall tone. Famous summers include Jessica Biel, Jennifer Aniston and Liz Hurley. Summers look great in soft mauves, cool pinks, blues and greys to name a few. Autumns always have a warm tone to their skin. They can range from vibrant redheads and very light golden skinned people like Gisele Bundchen, right through to those with muted or deep colouring like Julia Roberts. Just like the colours you would naturally associate with autumn, their palette includes moss greens, orange, terracotta and khaki. Winters are very cool with either a clear or a muted quality. They are always deep and are never naturally blonde. Megan Fox, Lisa Vanderpump and Oprah Winfrey are all winters. There is very little warmth to them. Ash tones are more evident than auburn or chestnut and eyes can range from a bright blue to the deepest brown. Blue toned reds and forest greens always make winters look great as do deep mauves and purples. Winters can wear black but due to the coolness of their skin they often look best in brighter cool colours. The thing I love about colour analysis is that this palette is yours for life. As we age our colouring softens so we may be able to borrow from the season closest to us, such as a winter borrowing a summer’s boldest shades, but predominately our colours stay the same. Before qualifying as a stylist and colour analyst I would buy something that I liked regardless of it suiting my style and sometimes even my frame. I would be drawn to a trend or a certain colour because that is what I felt best reflected my taste, but I gave little thought to whether the garment actually made me look good. Most people do the same. We choose pieces that we like but that don’t actually make us look good. The garment is made to standout, as if still on a rail, whist the wearer blends into the background. Then I discovered colour analysis.

Jennifer Meredith talks to horologist and watchmaker, Roger W Smith, about British-made luxury timepieces

wo-hundred years ago, the British watchmaking industry was booming; one would simply have to turn to the likes of Thomas Earnshaw, John Roger Arnold or John Harrison in order to obtain a timepiece of unique beauty and everlasting craftsmanship. Today, however, British horologists are few and far between; options become even sparser when considering the amount of horologists able to craft a watch from scratch. Is it a dying art? Maybe. However, with the public’s renewed interest in British-made goods, one would not be naïve to expect a revival in the near future.

Smith watch is entirely UK-made, a deliberate move by the firm to establish themselves as an honest and genuine British brand. In an open letter to watchmakers and collectors, Roger commented upon the current state of British watchmaking, warning of the damage that dishonesty could do to the industry: ‘what concerns me is the lack of sincerity in British watchmaking; brands must be honest to the buyer, otherwise it’ll destroy the integrity of horologists across the UK. It’ll take a long time for us to recover from the damage already done, but it can be accomplished if brands are prepared to rethink their values’.

over £100,000. He states, ‘my time is split between building one-off timepieces and developing new watches. My work changes almost seasonally as I work on varying projects and collections, but you can usually find me sitting at my bench – it’s where I’m best placed!’ It was George Daniels who inspired him to enter the world of watchmaking. Roger was 17 when George, a visiting lecturer, delivered a riveting talk to his class at the Manchester School of Horology: ‘it was really a pivotal moment for me. He was incredibly charismatic, and very inspiring’. Originally from Bolton, Roger moved to the Isle of Man in 1998 to work with George in his studio, absorbing as much watchmaking know-how as possible, including ‘The Daniels Method’ which involved mastering 32 trades that once traditionally supported the British watchmakers of the past. On being an apprentice of the accomplished watchmaker, Roger states, ‘working with George Daniels was an education; he was a very strong character, but a brilliant teacher, and I soaked up a lot of information from him’. A 30-year age gap separated the two creators; they maintained a professional relationship throughout their collaborative careers, but they were also friends. As Roger explains, ‘he was very willing to advise and support me; he was a very supportive person’. Roger dedicated his time to horology from a young age; he established his own studio and began hiring a dedicated team, and has been

crafting high quality timepieces throughout his working life, so it wasn’t difficult for him to continue George Daniels’ legacy when he passed in late 2011: ‘when I incorporated George’s studio, it was business as usual. I didn’t feel any pressure, I was just happy to continue his work’. It’s a well-known fact that good things take time; producing a standard Roger W Smith watch can take around 11 months, from sourcing the raw materials to placing the finishing touches on the final product. ‘What makes us different from other luxury watch brands is the low volume of products we make (only ten a year), and how we make them,’ Roger explains. ‘We only have seven people working in our studio, in comparison to large factories with hundreds of employees. Everything is handmade with great attention to detail, and so the process of creating a timepiece takes far longer; for example, one dial can take several weeks to manufacture’. One design that Roger is particularly proud of is the Open Dial, a concept that uncovers

the sheer amount of work that goes into building a watch movement. The wearer of a Series 2 Open Dial wristwatch can literally observe time ticking away via the beautiful three-dimensional architecture of the underdial work. He states, ‘I designed this watch because all of the hard work and meticulous detail that goes into a watch movement deserves to be seen’. Expect more exciting innovations from the firm; this year, they will be working on a series of four timepieces, which is fairly unusual for such a small, independent manufacturer. Roger explains, ‘We’ll be building dummy models to display the visual aspects of the pieces, and we’ll also be re-launching the website to tie in with the new collection’. he most common New Year’s Resolution, by a mile, is an iteration of ‘I want to get in shape’. That’s awesome, but we all know how hard it can be to actually do it. Of course, where a lot of you may start is to consider joining a gym, which is a really good idea on paper. Joining a gym allows you to use both cardiovascular and resistance training equipment to get the best of both worlds and truly improve your health and your body composition.

All in all, being active in everything you do is beneficial. Activity, not exercise, is the key to health, longevity and inner happiness, so why not try these five tips in the next few months and make this the year that you own your new year’s resolution and start on the journey to health? Resistance training will improve bone density so you’re far less likely to fall victim to osteoporosis as you age; it will improve muscle tone which not only makes you look and feel better in (and out of) clothes but will also keep you strong. Add to this some good quality cardiovascular training on the rowing machine or bike and you can bulletproof your heart and lungs, keeping you healthier for years to come! But what if the gym isn’t for you? If you’re not keen on the idea of joining a gym or health club, there are still loads of options for you to get active and be healthy. Enjoying exercise is important, especially during the winter months when all you really want to do is curl up with a gingerbread latte and a book. And if the idea of doing push ups in a field sounds more like torture than a fun morning wake up to you, why not start smaller? The Suffolk countryside has some of the most beautiful scenery in the UK, and the cycling trails are there begging to be used. Why not plan an epic bike ride at the weekends, getting the whole family involved for some fresh air and quality bonding time? You could even have a look at one of the many park runs we have if you don’t like the idea of a bootcamp but still want to get outside.

Plan outdoors family activities, including walking and biking. Hike to somewhere nice and have a winter BBQ! Sign up to a bootcamp or a park run, or any other organised group activity where you’ll have a support network of other people becoming more awesome. Buy a pedometer, or use that FitBit someone got for Christmas and isn’t using, and hit your 10,000 steps. Take advantage of a local health club. They almost always have New Year’s deals. Just be more active, day-to-day. It doesn’t have to be ‘exercise’ to be good for you. Gardening is much better than sitting on the sofa!

first thing you notice? The crisp, angular modern architecture of the hotel spa, surrounded by the peaceful grounds of the English Heritage site. The second thing? The noise. Or lack, thereof. This purpose built spa hotel is set on a peaceful 12 acre site in Thorpe-le-Soken. Take a turn off the main road and down the lane before pulling up to the entrance. The

glasses of wine in the friendly atmosphere of the bar or try one of the cocktails if you fancy something a little different. Special occasion? Why not opt for a bottle of Champagne to celebrate before retiring to your room? Wake up to a generous hot and cold buffet in the restaurant or order something from the a la carte menu if you prefer. In the summer the juice bar is in full swing, offering enough fruit and vegetables to set you up for the day in a single glass. We spent our morning enjoying the delights that the wet area had to offer before checking in for our treatments and heading to the waiting area to be collected by our therapists. Beepers indicated our therapists were ready and within moments they were showing us to the treatment rooms, which were warm, cosy and dimly lit. We experienced the Clarins Facials Aromatic Balancer and the Decleor Madagasgar Escape Massage, two 55 minute treatments designed to really unwind the mind and body. Ideal for all skin types, the Clarins Facials Aromatic Balancer is customised to really rebalance the skin and leave your skin glowing. The soothing treatment included cleansing, double exfoliation and lymphatic drainage massage followed by intensive supplements to really perk up the skin and leave it feeling

amazing. Two days later and the effects are even more noticeable, with softer, suppler skin, and products glide on and sit better on the skin. The Decleor Madagasgar Escape Massage was a full body treatment with scented oil – a real treat for the senses. This massage used techniques from all over the world to melt away aches and tense muscles. It started face up with the hands and arms, moving on to the décolletage and neck, legs, stomach and feet. After turning over, the focus was on the back of the legs and the back. The only way it could have been better was if it had lasted twice as long (not that I’m greedy!). S

ome of us shave, some us don’t, but where did it all come from? What did man do with facial hair before the invention of the Gillette Mach 3? Well, shaving hasn’t always been so easy…

age of 21 were required to have their first shave. This signified their official entry into manhood and kicked off their celebration with an elaborate party.

Shaving is thought to date back to the Stone Age, with cave drawings showing that the Neanderthal Man used seashells like tweezers to pluck out hairs from their body. It was the Egyptians, however, who were the ones that developed shaving into a regular daily ritual. Some of the original tools they used to shave included stone, flint and clam shells; they even used pumice to rub the hairs off. Records show that shark teeth may have been used before bronze, iron and copper razors were invented in order to remove hair. Could you imagine shaving with a clamshell now? I certainly can’t! The earliest razors were flint blades from around 30,000 BC. Flint was very sharp, although blunted quickly, so these were essentially the first disposable razors. It is thought that copper razors weren’t invented until 3000 BC, when metalworking came into being; these were hugely popular in India. In 300 BC in Rome, young men of about the

In 1770, the Perret razor was manufactured as an L-shaped wooden guard that held a razor blade in place. It prevented the user from cutting themselves too deeply. It wasn’t until 1847 William Henson created the first hoe

It was the Egyptians who were the ones that developed shaving into a regular daily ritual razor which placed the blade perpendicular to its handle, just like a garden tool. This changed the way that men gripped their razors and provided much more control. In 1895, in the United States King Camp Gillette, a salesman for the Baltimore Seal Company came up with the idea for a new type of disposable razor blade. Over the next

six years this was marketed, becoming a huge success. The 1800s saw a time when Victorian gentlemen were very particular over their facial hair and used all manner of homemade shaving creams and lotions. There were several unsuccessful attempts to market electric razors from the beginning of the 1990s but it was the 1920s when the first electric razors made headway. In 1928 retired Army colonel Jacob Schick patented his own razor design which really took off and soon he’d sold millions. So, what does shaving look like for the modern man? Not only do many of these traditional razors still have a huge collective of users today, there are many modern razors available, ranging from hi-tech electric shavers and handheld razors which vibrate to lift hairs, to the more simple, disposable razors for travelling. We are certainly spoilt for choice. The rise of the beard and mo has made shaving a huge focus this year, with the MOVEMBER foundation sponsoring sales of Gillette razors in many major stores. ith Mother’s Day, Easter and plentiful springtime gatherings on the way (and dare we say it yet – picnics), it’s time to make sure the fridge is well stocked with goodies from the deli. One of our favourite artisan deli food producers in the region is Dan Hull Foods. Based out of its Burnham-on-Crouch farm shop, the company is committed to using only quality locally sourced ingredients for its parfaits, terrines, meats and pies. Dan Hull’s idea of great food is a simple recipe, made with the best quality local ingredients and has been selected as one of the six finalists for the East of England Co-op’s Producer of the Year Awards (winner announced in March). We caught up with owner, Dan Hull, to find out more about what it’s like running a successful food business from Essex.

WHAT’S IT LIKE BEING AN ARTISAN FOOD PRODUCER IN ESSEX? IS THERE A SENSE OF COMMUNITY?

There is an enormous sense of community – we have some fantastic local farmers and producers that I love to work with and use as much as possible. Dan Hull Foods is probably known best for our pâtés and I always source local chicken liver. I also use Marriage’s flour for my short crust pastry to top my pies. That’s really why I partnered with the East of England Co-op – a local, community retailer, which completely fits into my ethos with its Sourced Locally range.

HOW DOES IT FEEL TO HAVE BEEN ONE OF JUST SIX BUSINESSES CHOSEN FROM OVER 130 PRODUCERS FOR THE PRODUCER OF THE YEAR AWARD?

It feels amazing. We have been an East of England Co-op producer for two years now and have attended the Producer of the Year awards, but I don’t think we realised we would be so

lucky to be shortlisted so quickly. It’s such a wonderful way of celebrating and recognising local producers who love what they do. Working with the East of England Co-op has completely transformed our business. In the last 12 months our sales have grown 100% from the previous year, which I think has been largely due to our revitalised packaging, which is the brainchild of Louise Jones, our sales manager. We have also doubled our staff numbers and employed a young apprentice who has now been with us for over six months, as well as investing in machinery and a new van. Overall, it’s been a really exciting year.

WHICH IS YOUR FAVOURITE PRODUCT AND WHY? My favourite product is our chicken liver parfait, which is our biggest seller. It’s really smooth and velvety and my children, for one, absolutely love it and regularly eat it on toast for breakfast. I am also really proud of our terrines. Everything is handmade so it’s a labour of love, but it’s such a great feeling when you slice it through and everything is exactly how it’s supposed to look. We have two terrines that are selling really well at the moment. Our smoked chicken with pistachio is delicious, made with white wine, tarragon and Parma ham; it works perfectly as a snack or starter. The other is our chicken stuffed with chorizo and asparagus, where the asparagus is steamed then blanched so it stays beautifully green, and the flavours marry perfectly.

HOW DO YOU COME UP WITH IDEAS AND FLAVOURS FOR NEW PRODUCTS? I love fresh herbs and marinades so what I make is down to passion and knowledge,

with a tiny bit of experimentation. I wouldn’t go so far as to say it’s trial and error, as I know what flavours and textures go together, but sometimes I spend a little more time on recipes to find that wow factor. Our products are also available in the Selfridges Food Hall in London and both the team there and at the East of England Co-op are honest with feedback, which is really helpful. as no two shops are the same with regards to customer demographics and preferences, but it’s great to have those differences to help improve our products and keep them interesting to each store.

HOW DID YOU START YOUR BUSINESS? I have always been a foodie and studied catering at the Blackpool and the Fylde College, which is part of Lancaster University. I have worked as a chef all my life and trained at the Hilton Hotel in Bath before trying my hand at running a few restaurants. Going self-employed was by chance more than anything else. My father owned the Wrekin Farm shop, near Burnham-on-Crouch, which started as a butchery more than 20 years ago. I started selling a few of my pies there and gradually built up a few successful products before taking over the business five years ago.

HOW INVOLVED ARE YOU IN THE DAY TO DAY? I’m in the kitchen everyday but I have a great

I have bundles of ideas for new products to try and I just want to get out there, meet more people and encourage them to taste our delicious products. I especially want to show people that pâtés are not seasonal. They’re great to have in the fridge all year round to spread on a cracker as a snack, or as canapés at a party. I go to lots of store tastings at the East of England Co-op because I know that pâté is not something people have on their weekly food shop, but I also know that when customers try it they enjoy it and buy it.

ARE FOOD MILES SOMETHING THAT’S IMPORTANT TO YOU AND YOUR BUSINESS? The horse meat scandal in 2013 was a real drive for me to propel the business forward. I just couldn’t believe it was happening when we

have such great farms and meat available not only in our local region, but across the UK. My cousin has a local farm within two miles of our shop and I use his beef when I can to make my pies. We are able to trace each pie to the exact cow and it was this traceability that was attractive to the East of England Coop. I hold this local focus to this day.

WHAT DOES THE FUTURE HOLD FOR DAN HULL? We’re getting a bit big for our kitchen, so we’re looking for new premises near or on Wrekin Farm. We’re also hoping to launch new products, including a spring slaw with bright, herby flavours, definitely more terrines and I’m looking forward to adding a brand new range of freshly made single serve pies. I am a meat-lover, but I’d like to supply more vegetarian options and it’s incredibly important to me that we keep getting the Dan Hull Foods name out there. I’m planning to attend more food shows, enter more awards such as the Great Taste Awards and gain more accolades. I’m also looking into working with the local school in its food technology department, and offering experiences where people have the opportunity to have dinner cooked at home by me. It’s definitely going to be a busy year, but I can’t wait to see what the next chapter brings to the business. FINE DINING Wivenhoe House

e were greeted by Oliver, who lead us through the hotel reception to The Brasserie. The restaurant was really spacious, and had a laid back, family friendly atmosphere. At one end of the brasserie was a bar, and at the other was an open kitchen – it was great to be able to see the food being prepared and hear the hustle and bustle of the chefs. They utilised the space well – you could have a conversation at normal volume without feeling like other people could hear your conversation, and it felt really private for the size of the room. While perusing the menu, our server brought an amuse bouche of quail on a bed of rhubarb, with fresh bread – the special the head chef told us he was preparing earlier. The dark meat of the quail was beautifully cooked with a crispy outer skin, and perfectly tender pink meat underneath. Though teamed with rhubarb, the delicate flavour of the quail still shone through, and the rhubarb gave a good bite. As our server cleared our plates away, I decided on the confit of duck, pickled vegetables, crisp skin and salad leaves, followed by halibut, spiced cauliflower puree and spinach. My dining partner chose soup of the day (spiced carrot), followed by roasted venison, venison pudding and dates, both mains recommended by the head chef. My confit was beautifully presented, with ribboned buds of pickled vegetable, duck skin and segments of mandarin adorning the perfectly symmetrical parcel. The duck was

cooked and seasoned to perfection and the mandarin cut through the salty flavour of the duck wonderfully. We were not disappointed with the soup – light and smooth, with a little peppery kick, this had zingy undertones and a creamy consistency – the perfect warming start to an evening meal. Next we were offered a palette cleanser. The combination of raspberry foam and freeze-

absolute perfection, lovely and pink in the middle. The meat was lean with a strong gamey taste, and warm spicy undertones. The accompanying dates complemented the meat extremely well, offering sweet and sticky flavours. The venison pudding was delightfully rich, the meat sweet and oh-so tender, encased in a suet pastry which was full of flavour, and a brilliant way to display the versatility of the meat. My partner chose the chocolate mousse, chocolate crumb, milk sorbet and milk gel dessert, which came with crispy honeycomb. The mousse was rich and smooth, but not heavy. The chocolate crumb had almost a savoury, bitter flavour, reminiscent of coffee or dark chocolate, and really helped to stop the dish from becoming overpoweringly sweet.

dried chopped raspberries was a delight to the senses, only magnified by the cheeky addition of popping candy! I was very impressed with the halibut, it had a very meaty but moist texture and a mild, sweet flavour. The cauliflower puree was really sweet with a subtle spice – it had a lovely strong smoky flavor. A side of vegetables of the day went down well – you know how home grown vegetables taste just that much better than shop bought ones? The portion sizes were incredibly generous, and the venison main course was cooked to

I settled on poached pear, honey, almond and vanilla sponge with yoghurt and was not disappointed. The sweetness was complemented with delicate spices that felt comforting and familiar. The cake was light and fluffy, with a really strong, sweet flavour, which when teamed with the yoghurt sorbet was a delight! The passion the team have for their food becomes more than apparent in the little touches – the exciting and exotic combination of flavours, the playful presentation of the foods, and the sheer attention to detail. The plating was perfect, a meal for the eyes in itself, portion size spot on, and staff attentive, friendly and welcoming. A must-visit for all foodies, whether you want a decadent evening meal in The Brasserie, afternoon tea or even a private dining experience.

he journey through the countryside to Little Dunmow, home to Daniel Clifford’s and Danny Gill’s new eatery, is a nostalgic one; my granddad played cricket here when he was a boy, and my father stayed nearby during school holidays. This tiny village is the kind of place you went to as a child to visit family friends or your grandparents, spending long, lazy summer days climbing trees in the surrounding fields, catching butterflies or making mud pies by the stream until it got late and you were called in for tea. It’s a place that stands still in time, one that’s forever entrenched in your family history. Well, mine anyway. Talking of history, you may or may not have heard of an old English custom called the ‘flitch trials’. In a celebration that is said to have first taken place in the 13th century, couples are awarded a flitch (side) of bacon if

they are able to swear to not having regretted their marriage for a year and a day. A strange tradition, you may think, but a tradition all the same – and significant enough to lend its name to the village public house. The Flitch of Bacon existed on The Street in Little Dunmow as a traditional pub until its closure in November 2014. Michelin-starred chef Daniel Clifford lived just a walk away from the property and had driven by many times before realising that it would become his next culinary project: a quiet country pub just under an hour’s drive away from his two-Michelinstarred restaurant in the heart of bustling Cambridge, Midsummer House – often referred to as the best restaurant in the city, and one of the best in the UK. With a technically brilliant ten course fine dining menu prepared by a highly experienced

and passionate team, accompanied by a magnificent wine list, Midsummer House is the ultimate luxury destination for refined urban gastronomes. But, Daniel tells me, ‘Flitch of Bacon is different. This is a warm and friendly pub where you can bring along your family, experience good, local food and enjoy great company’. The Flitch doesn’t compromise on food quality in comparison to Midsummer House, but the atmosphere is on a completely different scale; walk into the pub and the first thing you’ll see is a round, wooden bar displaying a variety of spirits and draught beers, in the midst of an open plan dining area arrayed with warm, neutral colours. On a busy evening the pub is humming with activity; as Danny Gill, Chef Patron of the Flitch, describes, ‘you’ll look around the room and there’ll be a family at one table with their kids running around, a young couple at another, a group of people who like they’re from a reality TV program – but no one looks round and questions their company. It’s a very friendly place to eat’. With a name such as Daniel Clifford’s attached to the Flitch, there is no doubt that the pub would easily draw in a crowd. However, the

factor that keeps the customers walking through the doors is, unquestionably, the food. The seasonal menu is the benefit of close relationships with local suppliers, and includes mouth-watering produce such as pot roasted Norfolk black chicken and slow roast loin chop of Great Garnett pork – enough to turn a one off trip to a pub in the countryside into a regular dining experience. As Daniel explains, ‘I’ve had guests come to eat three times a week, and tell me that the pub feels like home. That’s what I was aiming for when we opened up’. As we’re talking, I hear laughter coming from the back of the restaurant. ‘How long has that table been here?’ Daniel asks a staff member who is tinkering away with a coffee machine behind the bar. ‘Five hours,’ he replies, ‘they’re now on their Tia Marias’. I gasp inwardly. The last time I spent five hours in a pub during the daytime was when I got stuck waiting for a train in Settle, Yorkshire; needless to say it wasn’t the most enjoyable five hours of my life, but it sounded as if this table was having a whale of a time. The prices might also have something to do

with this. After discovering the £105 per head menu at Midsummer House, you’d be forgiven for thinking that the Flitch of Bacon is of a similar price range; however, this isn’t the case. Mains range between £14.50 for a beer battered pollock and chips, and £28 for a 36-day aged ribeye, whilst starters and desserts start from £7 – a pleasant surprise, and a compelling reason to order more wine. Having changed hands three times in the last ten years, it’s clear that the Flitch has not experienced the level of commitment that the villagers believe it so rightly deserves, especially with a name that possesses such strong links to village tradition. Daniel, however, guarantees me of his time and efforts regarding the pub: ‘I’m one hundred percent committed – I’ve invested a huge amount of money and time in this. We’ll be here for another 25 years or longer’. We look forward to excellent food from the Flitch of Bacon for decades to come! THE HISTORY During our stay director Tamara Unwin kindly treated us to a grand tour of the venue and let us in on the history behind the business. Stoke by Nayland has been family run for over 40 years with a heritage in fruit growing. The Peake family invented Copella apple juice in the family kitchen, later selling the business to Tropicana for a tidy sum. Though no longer the owners of Copella they own the fruit farm that supplies the fruit for the Copella juices and have recently expanded their fruit output to include Morello cherries (Tamara tells us that

The development of SbN Hotel began in 1972 when Bill and Devora Peake received permission to build a golf course on their acres of arable land having decided to diversify because of the difficulty in producing consistently good rye and barley. warblers resounding through the trees. Essex’s most remarkable natural choral concert is, however, at Fingringhoe Wick, near Colchester, where as many as 40 Nightingales, fresh out of Africa, join the chorus. No bird can sing like the Nightingale: its astonishing song is a melodious mix of whistles, trills, drums and gurgles, toing and froing from high notes to low, delivered in an energetic burst, to a stunning, passionate crescendo. The song is all the more memorable – and mysterious – as it is often delivered in the dark. Essex Wildlife Trust runs guided evening walks to delight in these orchestral manoeuvres in the dark, from late-April until the middle of May.

By August, many bird species have bred; for them, autumn has already begun. Cuckoos have fallen silent, while Nightingales slip back towards Africa with none of the fanfare of their

Spectacular leaf displays adorn trees while, on the floor, remarkable fungi emerge – several Essex Wildlife Trust visitor centres and local groups organise ‘fungi forays’. Autumn’s mellow fruitfulness is a bounty for thrushes, which arrive in droves from Scandinavia. Listen out for the throaty cackle of flighty Fieldfares.

By December, the cycle is complete. The Brents are back in their thousands, flocks of tits forage through our gardens and many species are in hibernation. Or are they? A mild December in 2015 saw many unfamiliar species active, including Hedgehog and Grass Snake, and daffodils in bloom. Otters, which are present on every Essex river but fearfully difficult to see, were spotted in broad daylight on the River Colne. The long hours of daylight in June and July ensure that there is abundant time to enjoy Essex’s wildlife. There are butterflies abound, such as at Langdon, near Basildon, where as many as 30 species have been recorded, including Green Hairstreak, Marbled White and Grizzled Skipper. There are many species of orchids to admire in the grasslands. Elsewhere, look for ghostly Barn Owls at dusk, busy hunting for voles to bring back to hungry young. Talking of voles, summer is a good time to spot elusive Water Voles – famously personified as ‘Ratty’

in The Wind in the Willows – swimming on our waterways or feeding on river banks, before plopping into the water.

ere at EAUX we are big fans of prestigious car manufacturer Morgan Motor Company. After our editor, Victoria, was taken for a spin in a 1940s refurbished roadster en route to a friend’s wedding, she was curious about what it is that has made these charismatic cars stand the test of time. In 1909 Morgan Motor Company was born by Henry Fredrick Stanley Morgan with support from his father in Malvern, Worcestershire, and for more than 100 years they have been creating exciting and innovative sports cars for sophisticated individuals. Now the last remaining family owned, independent British motor manufacturer, Morgan Motor Company are famous for their unique design and quality of craftsmanship and have been named the most honest car manufacturer in the world.

A MORGAN NEVER DIES It has been said that a Morgan never dies; they are traditionally kept for long periods of time and loved like a family member, being passed down from generation to generation. As wear and tear takes its toll, each component can be replaced to sustain the vehicle’s longevity. Owners can re-chassis and

re-body, which makes the cars environmentally friendly and produces little wastage. With such a sterling reputation for durability and sustainability, it’s no wonder Morgan has been labeled as an honest brand. What has contributed to this? Morgan is a family owned business, a tradition which doesn’t just end with the owners; this extends to the workforce, dealers and customers – every person involved in the business is passionate about every single vehicle made. The cars themselves aren’t brash or ostentatious, and the materials used are authentic and reliable, with the main three being aluminium, leather and ash wood. Simple, resourceful and fun, the charm of each and every Morgan is not easily forgotten. Although the materials used add so much to each car, it’s really the skilled labourers and craftsmanship that determines the character. Each car is made with love and attention and this is plain to see.

SKILLED HANDS With less than 200 people in the business, the team is decidedly very small for a car manufacturer. A diverse range of highly skilled people work within the company, ranging

from designers and engineers to fabricators, carpenters, upholsterers, mechanics and painters. It’s common to see people with 40 years of experience – the longest serving employee has been working for Morgan for 54 years – teaching those new to the business, passing on their knowledge and skills by word of mouth. One person is responsible for the chassis, which gives ownership of that particular car and recognises that each car is a combination of a small, skilled team each with their own strengths and speciality. No matter how long each craftsman has been with the company, everyone has one thing in common: a passion for making amazing cars.

FROM CONCEPT TO CAR Each Morgan starts life in the form of concept sketches and designs. After consideration and tweaking by the various teams, the final designs are made into three-dimensional images on a computer in order to visualise the final product. Once the design process is complete, the product requires approval from owner, Charles. Once signed off, production can then begin. Each car is a nod to the classic era of British motoring This allows the chassis to move easily through to the assembly shop, which is where the rolling chassis meets a pre-made body; this body has been through the wood and sheet metal shops to get it to this stage. English Ash is used due to the lack of knots and it also provides high shock absorption. Every piece of wood used is slightly different, which lends itself to a truly unique product and allows Morgan to encourage green manufacturing and sustainable forestry. Once the body is fitted, the front and rear wings and bonnets are incorporated along with the wiring loom before the car goes to be painted, which is the slowest part of the process. To paint the car, it is stripped back down so each panel can be painted individually, yet still in the same paint booth. Volvo Cars’ capable XC60 is available with two 5-cylinder engines and the D4 from the four-cylinder Drive-E powertrain family. The model is available in both manual and automatic to help contribute to a refined drive and excellent fuel economy.

THE STYLING The design team has increased the new XC60’s road presence by emphasising its horizontal lines, which visually connects the car directly to the road. orn in 1978 in Barcelona to a Catalan mother and Peruvian father, Zuzunaga’s rich cultural background instilled in him an urge to discover, explore and create. boundaries in Loughton

ssex practice Clear Architects is pushing the boundaries when it comes to contemporary design – and the results of its latest planning triumph will soon become one of the area’s most distinctive homes.

The design is the work of Melanie Clear of Loughton-based Clear Architects, which has a strong reputation in the area for creating modern homes and extensions that are as cutting edge in design as they are high quality in construction, providing architectural vision that is usually the preserve of London’s most prestigious postcodes.

For an architect, the dream ingredients for a new house are a great site, bold clients who are willing to do things differently (and have the budget to do so), and the support of local planners, who see as much local benefit in building something innovative and unique as the clients do. The planets don’t always perfectly align, but with ‘Dragons’ - a five bedroom unabashedly modern house in Loughton that received planning permission from Epping Forest District Council last December - they certainly have. The design has already been hailed as ‘legacy

Clear Architects just celebrated its 10th anniversary and to Melanie, this project feels both like the culmination of a lot of hard work over the past decade, and a ‘gateway project’ that will cement the firm’s reputation in the local area. ‘It’s a real statement piece of architecture,’ Melanie says. ‘To have clients that want to build it in the first place, and then to achieve planning is just fantastic.’

The owners, Clare and Martin Jaycock, commissioned Clear Architects to create an architecturally bold five bedroom family home, split over three floors. Externally, the square edges, curved glass, sharp lines and large windows are complimented by a light buff ‘MARSA’ stone, providing softness to the building while retaining hard wearing and robust characteristics. The 550 square metre home will be developed on land which currently houses a tennis court, adjacent to but separate from the late Victorian Grade II listed property, renowned locally for its Gothic features, lending to its name: Dragons. An exterior of creamy stone, broodingly dark slate and patina copper, the modern Dragons project is a far cry from the standard notion of a suburban family home – in fact it’s even a long way from the kind of glass-and-whiterender extension that has become such a

abundance - for a new-build home. Located a little away from the existing house, the new Dragons building will be screened from it by a belt of trees. Having sought some initial advice from their local conservation officer about whether such a project would be feasible, the verdict, says Clare, was that ‘although it wouldn’t be a complete no-no to build a house on the site, it should be as different as possible from the original house, rather than a pastiche of it.’ Such a strategy was quite risky, she explains: ‘you can end up feeling like you’re damned if you do and damned if you don’t – if you propose something similar, you won’t be allowed to build it because it’s pastiche, but if you propose something completely different you might be told that it’s out of keeping with the existing street scene.’ In this case, defiantly different won the day. Having lived mainly in period properties all their married life, this was the couple’s chance to do something completely new, tailor-made to their specifications. ‘You see so many ‘executive’ homes and it’s disappointing

popular way to update a property that most people would consider as daringly modern. In short, it’s the kind of landmark house that puts places – and architects – on the map. The Jaycock family initiated the project as a practical solution to moving into a modern home as they got older, without needing to leave the location they had lived in for many years, and without needing to trade character – which the Grade II listed Dragons has in

that people don’t try to push the boundaries more,’ says Clare. ‘We thought, if we’re going to do this, then we want to do something exciting.’ Their brief to Clear Architects was for something light and bright, an advantage they didn’t have in their Victorian house. ‘One thing that really impressed me about Melanie was that she really works with you,’ continues Clare. ‘We were thinking of the house in terms of the accommodation –

practical things such as how we wanted lots of light, an open feel on the ground floor, and a bedroom with a big dressing room and a bathroom – but she is the one who could bring it all together. It is a certainly a very different property. When we saw it, we said, “aha, this is it!”’ Melanie says: ‘It is very brave for Loughton, but the fact that it is so different is the reason we got planning, which is really refreshing. The local committee embraced the fact that this is a signature piece of architecture that it would be fantastic to have in Loughton. It may not be everyone’s cup of tea, but the quality of it is obvious, and I’m confident that we might even win over some sceptics when they see such a beautiful design realised.’ The house is interesting for the way it sits in its setting, with a more ‘closed’ facade on the road-facing side; in fact, it is hardly visible at all considering its size. New landscaping by award-winning designers Aralia will enhance the setting, including a low wall and hedge to replace a scruffy existing fence. The copper central core and large limestone slabs lend the house the kind of monumentality that you might expect on a gallery or similar public building. Inside, the ground floor will consist of a kitchen-diner, utility, snug and WC, with three bedrooms including the master suite and a family bathroom on the first floor and two further bedrooms on the second floor. A feature circular staircase with roof light will fill the space inside the copper core. A curved wall of glass will sweep around a 300-year-old protected oak tree outside, an ever-present reminder of the ancient forest beyond. The new Dragons will easily stand up to its 130-year-old listed namesake, with both properties demonstrating the best of architectural design at their time of building. ‘This level of uniqueness is what I’ve always aspired the practice to achieve,’ says Melanie. ‘It’s the kind of architecture I’d love to be the springboard for next ten years – I want people to see Dragons, then say, “What can you do for us?”. ‘In terms of the local area, I hope that Dragons gives people the confidence to really embrace modern architecture and to push their vision for what can be achieved in leafy suburbs like Loughton. After all, we deserve signature buildings with architectural integrity just as much as inner cities – and it’s exciting to see District planners embrace this too.’

5,000 square meters large and 10 stories high, the Yas Viceroy stands tall above the Formula One racetrack that winds through its centre, teetering over the edge of the yacht marina on its east side. This luxury hotel on the manmade Yas Island in Abu Dhabi is a feast for the eyes, appearing to morph into different shapes depending on the viewpoint thanks to its complex monumental steel and glass lattice grid shell structure, which looks as if it is almost oozing onto the buildings below; at night, this becomes a blanket of coloured light as the hotel’s state of the art, 5,389-strong LED lighting system comes to life. The grid shell enshrouding the development is not simply an aesthetic wonder and an icon of the Abu Dhabi skyline, but also a feat of insulation and environmental consciousness (the design exploits the stack effect, which pushes the hot Middle Eastern air upwards and draws cool air inwards).

Designed by Asymptote Architecture founders, Hani Rashid and Lisa Anne Couture, the hotel comprises two elliptical structures connected by an enclosed free-span bridge from which guests can catch daily glimpses of Formula One vehicles racing beneath them. The bridge was designed using a structural approach called the monocoque, which means that, like an eggshell, the internal load is supported by the bridge’s external layer. Like most contemporary luxury developments in the United Arab Emirates, the Yas Viceroy offers fantastic views over the desert landscape. Investing pensions in residential property Scrutton Bland directors Gary Riches (Independent Financial Advice) and Gavin Birchall (Tax) take a closer look at pension freedoms

S

ince April 2015, many individuals have been tempted with early access to their pensions, with the relaxation for accessing pension funds often referred to as ‘pension freedoms’. £2.5 billion was withdrawn from pensions between April and June 2015 according to the Association of British Insurers. However some of the adverse tax consequences, which are surprisingly high, are less well known. Pensions have been accessed for various reasons, but some of the interest has been with a view to investing in buy to let residential investment property, which currently cannot be held within a pension fund. This interest is generally not due to a desire to become a landlord, but is largely driven by low returns from cash accounts and historically better returns from growth and rental income from property. In general, after payment of tax free cash, the remainder of funds withdrawn is taxed as income, and depending on total taxable income, the cash from the pension fund can be taxed at 40 percent or more. With the loss of personal tax allowance above £100,000, the funds can suffer tax as high as effectively 60 percent. The headline returns from property investment may be high but they may not fully reflect all aspects of taxes and other costs which need to be considered. Taking an example of a £150,000 pension pot, assuming tax free cash at £37,500, the

balance would be taxed as income. Assuming no other taxable income, the tax would be £36,903 and the pension capital, after tax would be £113,097. Assuming a very high buy to let property yield of 7.5 percent, rent would be £8,482 before tax. Comparatively the fund, if left within the pension, would not suffer the tax deduction so would require a yield to provide the same gross income of only 5.65 percent. Other factors to consider are legal and other costs in purchasing the property, possible additional borrowing and borrowing costs and a managing agent may be used, incurring fees which further impact on rental income, as will provision for repairs. As well as costs there are other important tax factors to be considered such as Capital Gains Tax when a property is sold and possible Inheritance Tax on death. The Government have also made announcements regarding taxation restrictions on buy to let property relating to interest on borrowings, further reducing the tax efficiency of property investment for higher rate tax payers. Apart from financial considerations, investment in a buy to let residential property may require the investor to take on day-to-day responsibilities such as property maintenance and rent collection, which may well not be wanted in retirement. The ‘unaccessed’ pension by comparison, will grow free of Capital Gains Tax; a quarter of the fund is available tax free and a lower or zero income tax rate if gradually drawn.

Pension income will be regular and can be guaranteed for life or joint life and unlike property investment would not suffer periods of non-occupation with a loss of rental income. Alternatively pension incomes can be drawn with flexible payments. When a person dies his or her pension funds are often considered to be ‘lost’. This is generally not the case as the pensions can pass free of any tax on death under the age of 75 (meaning no Capital Gains, income or Inheritance Tax). Death over age 75 incurs 45 percent tax until 5 April 2016, reducing thereafter. In summary, with taxation improvements in pensions and the adverse tax position of using pension for property investment, great care needs to be taken when cashing in pension funds. With future reductions in pension tax relief for high earners and reductions in lifetime allowance, it is important to seek advice from an independent financial adviser when deciding upon the type of pension in retirement.
