COTILLEANDO 13 Y 14 DE OCTUBRE 2018 13TH AND 14TH OCTOBER 2018

Texto: Guaxara Castañeyra El Cotillo vuelve a convertirse en epicentro de las artes con la tercera edición del Festival Cotilleando, que llenará de gente, actuaciones, música y entusiasmo las calles del casco antiguo del pueblo los días 13 y 14 de octubre. Cotilleando traerá, en su tercera edición, a más de 40 artistas de distintos países entre franceses, ecuatorianos, españoles, italianos, rusos o suizos, quienes, junto con artistas locales, ofrecerán actuaciones y performances de diversas disciplinas, espectáculos de circo, música, danza y artesanía. Las calles del centro del pueblo serán el escenario donde se desarrolla el festival itinerante que promete convertir El Cotillo en el lugar ideal para la diversión, el disfrute de los sentidos y la magia. El evento, iniciativa de Stefy Faga, cumple su tercer año consecutivo gracias al apoyo del Ayuntamiento de La Oliva, del Cabildo de Fuerteventura y de varios comercios de El Cotillo, pero sobre todo gracias a la buena acogida que tiene entre los habitantes del norte y visitantes sensibilizados con las artes escénicas y la participación de casi medio centenar de amantes del arte y el espectáculo.

«POR EL CASCO ANTIGUO VETE PASEANDO, ENTRE LOS PEQUEÑOS CALLEJONES Y EL MUELLE SIGUE BUSCANDO, ARTE Y MAGIA TE ESTÁN ESPERANDO. ¡NO TE LO PIERDAS, ES COTILLEANDO!» La cita arranca el sábado 13 de octubre con el festival itinerante por el caso antiguo del pueblo. Desde las 20:00 hasta las 23:30 horas, el espectáculo artístico llegará a todos los rincones de la zona peatonal gracias a un elenco de protagonistas de primera categoría: Tiphaine Rochais y Daniele Sorisi ofrecerán sus acrobacias en un espectáculo mano a mano; Paolo Locci, en su personaje de Hobo, dejará a todos los presentes asombrados con sus destrezas en el mástil chino; el músico local Domingo Saavedra y el dúo «De Vera Twins», serán los encargados de hacer de las calles del pueblo una delicia para los oídos. Además, el amplio programa previsto para la jornada del sábado incluye los espectáculos de acrobacias en alam-

bre y canto de Manu Annoni, Juan Cabrera —bailarín contemporáneo que funde la danza con el paisaje y este año lo hace acompañado de Denislav Valentinov— y el grupo de danza urbana «The Queens»; las actuaciones musicales con Bass Rules by Aceysele Chacón; las creaciones artísticas de Miguel Ángel Chacón y la magia circense gracias a la payasa Chan Chan Pimienta y Mayte desde lo alto de sus zancos. Incluso podremos disfrutar del arte grafitero en vivo de la mano de Werens. El domingo 14, y como novedad de esta tercera edición, desde las 17:30 horas los jóvenes artistas serán los protagonistas. Exhibiciones acrobáticas, actuaciones musicales y la representación de “Éxodo” —muestra del taller de coreografía y creación de danza contemporánea—, llenarán la zona del muelle de vida y desparpajo. Para terminar, a las 18:30 comienza el espectáculo final Mareas Vivas, una obra inédita donde participarán todos los artistas que forman parte del repertorio de Cotilleando en esta tercera edición. Música, circo, danza y otras disciplinas artísticas se mezclan en un popurrí dirigido por el artista de Circo Sandro Sassi, con el encantador Muelle Chico como escenario, y el atardecer de El Cotillo como telón de fondo. El resultado será fascinante.

La Ampuyenta

y sus ilustres personajes La pintoresca aldea de La Ampuyenta cuenta con un patrimonio histórico y cultural muy representativo de un pasado no tan lejano de la isla de Fuerteventura. El pueblo nos da la oportunidad de, en un pequeño recorrido a pie, descubrir al pasado y conocer una parte importante de la historia de la isla, pues acoge el Complejo Histórico-Patrimonial de La Ampuyenta, en un entorno recuperado y habilitado para su visita, formado por varios edificios:

La Casa Museo del Doctor Mena En esta casa nacía en 1802 Tomás Mena y Mesa, en el seno de una familia muy humilde. Sus padres hicieron un gran esfuerzo económico para darle unos estudios y con la edad de 19 años viaja a la Habana para doctorarse en la Universidad de Medicina en la especialidad de cirugía,

gracias a una pequeña fortuna que su hermano, afincado en la Habana, tenía por disponer de un puesto eclesiástico influyente en esa ciudad. Tomás Mesa y Mena, posteriormente, se instala en París, donde se Doctora en Medicina Tropical en la Sorbona; vuelve a la Habana para disfrutar de su fama como médico y desde allí viaja por los EE.UU. ampliando sus conocimientos. Tanto era su reconocimiento que fue nombrado miembro honorario del Claustro de la Universidad de Cádiz en 1846. Tras un viaje a Cádiz, vuelve a su Fuerteventura natal donde pasará el resto de su vida, administrando su fortuna y dedicado a la investigación. Pero quizás lo más destacable del carácter de este gran hombre es su vertiente social, nunca dejó de prestar sus servicios al prójimo atendiendo a los vecinos en su despacho de forma gratuita. En su herencia dejó al pueblo de Fuerteventura 25.000 pesetas para la construcción de un hospital en el que se atendiera a los más necesitados. Pero, aunque llegço a

construirse sesenta años más tarde de su muerte, «El Hospitalito del Doctor Mena» nunca llegó a funcionar como tal. En la actualidad es propiedad de la Iglesia y contiene la exposición de las andas de las ermitas de Fuerteventura.

El Hospital de Caridad de San Conrado y San Gaspar Se trata del Hospital que mandó construir en su Testamento el Doctor Mena y Mesa, al que bautizó así para honrar a su hermano el eclesiástico. Es un pintoresco edificio construido en tres pabellones unidos entre sí por corredores. Quiso el doctor que se dedicara a la caridad y se construyera en su pueblo natal, pero no llegó a servir de hospital. Actualmente se conoce como el Hospitalito de la Ampuyenta y alberga la exposición de las andas de las ermitas de Fuerteventura, una docena de este tipo de elementos de procesión, además de una exposición fotográfica antigua de las Fiestas de San Pedro de Alcántara. En el exterior, cuenta con un aljibe acondicionado también para su visita.

La casa de Fray Andresito En este inmueble nacía, a comienzos del siglo XIX, Andrés Gracia Acosta, en el seno de una familia humilde de campesinos. Trabajó como pastor de cabras pero en su juventud fue influenciado por los franciscanos y cuenta la historia que cuando acababa sus tareas de campo se rodeaba de niños y les enseñaba religión. Tras el fallecimiento de su madre, decide embarcarse en una expedición de emigrantes a América causada por el hambre y la falta de trabajo por las sequías. Primero se instala en Uruguay y más tarde en Chile donde se vinculó a la orden franciscana, llegando a conseguir —por su labor, sus virtudes y caridad— una gran popularidad en el humilde oficio de Limosnero. Muere en Santiago de Chile en enero de 1853. .6

The House Museum Doctor Mena

Actualmente su casa, humilde y sencilla, es Bien de Interés Cultural en la categoría de Sitio Histórico y Fray Andresito está en proceso de beatificación.

La ermita de San Pedro de Alcántara A pesar de su pequeño tamaño, esta ermita es el inmueble religioso más importante de Fuerteventura ya que contiene uno de los más valiosos y singulares conjuntos artísticos de las Islas. Su arquitectura es de gran sencillez, lo que contrasta con la riqueza que contiene, la más importante colección pictórica religiosa de Fuerteventura. La ermita se fundó en agosto de 1681 con el patrocinio del santo franciscano San Pedro de Alcántara, canonizado en el año 1669. En su interior se pueden apreciar distintas pinturas dedicadas, en su mayoría, a San Pedro de Alcántara, además de otros bienes arquitectónicos. La pintura mural de la ermita de Ampuyenta está considerada como una de las más importantes de Canarias, fechada en la segunda mitad del siglo XVIII. Supone una obra sin comparación en el Archipiélago por la calidad de la técnica ilusionista en la que se mezclan pintura, arquitectura y escultura. Actualmente es también Bien de Interés Cultural bajo la categoría de Monumento y un lugar digno de visitar para apreciar la singularidad de las obras que contiene. La magia de estos edificios antiguos que encierran la historia de personajes ilustres de Fuerteventura, y gracias a las labores de recuperación y restauración del Cabildo y Gobierno de Canarias en los últimos años, La Ampuyenta constituye una parada obligatoria para aquellos que quieren conocer más de cerca un pasado muy presente en esta aldea, un magnífico recorrido a píe por el complejo histórico-patrimonial de La Ampuyenta, visita imprescindible para conocer un poco la historia de la bella Fuerteventura.

In this house, Tomás Mena and Mesa was born to a humble family in 1802. His parents made great efforts to get him studying and at the age of 19 he travelled to La Havana for a doctorate at the University of Medicine, specialty in surgery, thanks to his brother’s small fortune, living in La Havana, who had an influential ecclesiastical position in that city. Later on, Tomas Mena y Mesa moved to Paris and he got a PhD in Tropical Medicine by The Sorbonne; back to La Havana he enjoys great fame as a physician and from there he travels to the US, broadening his knowledge. Such was his fame that he was made an honorary member of the Faculty of the University of Cadiz in 1846. After a trip to Cadiz, he returns to his native Fuerteventura where he would spend the rest of his life, managing his vast fortune and devoted to research. But this great man never stopped providing services to others, ministering to his neighbours in his office for free. In his legacy he left 25,000 pesetas to the people of Fuerteventura for the construction of a hospital where the needy could be taken care of. But although such a building was built 60 years after he died, «El Hospitalito Doctor Mena» never worked as such and it is currently owned by the Church and contains the exhibition of saint platforms of Fuerteventura’s chapels.

The Charity Hospital of San Conrado and San Gaspar This is the hospital that Dr Mena y Mesa ordered to be built in his Will, and to honour his brother, the clergyman, he named it like this. It is a picturesque building built in three pavilions linked by corridors. The doctor wanted it to be devoted to charity and to be built in his home-town, but as we mentioned above it never got to serve its purpose. At present it is known as «El Hospitalito de La Ampuyenta» and it houses the exhibition of the saints’ platforms of Fuerteventura’s chapels, a dozen of such procession items, along with an old photo exhibition of the Festival of San Pedro de Alcantara. Outside, it has a tank which can also be visited.

The House of Fray Andrecito In the early nineteenth century, Andrew Grace Acosta was born to a humble peasant family in this house; he worked as a goatherd but in his youth he was influenced by the Franciscans and history records that when he completed his day-to-day tasks he surrounded himself with children and taught them religion. After the death of his mother, he decides to embark on an expedition of emigrants to America caused by hunger

and joblessness due to drought. First he moved to Uruguay and later on to Chile where he was related to the Franciscan order, achieving —for his work, strength and charity— great popularity in the humble occupation as beggar monk. He died in Santiago de Chile in January 1853. Currently his humble and simple home is of Cultural Interest in the category of Historical Site and Fray Andresito is in the process of beatification.

The Hermitage of San Pedro de Alcantara Despite its small size, this chapel is the most important religious building of Fuerteventura, as it contains one of the most valuable and unique artistic ensembles in The Islands. Its architecture is very simple, contrasting with the wealth it contains, the most important religious painting collection of Fuerteventura. This chapel was founded in August 1681 with the sponsorship of the Franciscan saint San Pedro de Alcantara, canonised in 1669. Inside, you can appreciate paintings, most of them dedicated to San Pedro de Alcantara, along with other architectural assets. The mural painting of the chapel of Ampuyenta is considered one of the most important in the Canary Islands, dating from the late eighteenth century; it’s an unmatched work in the archipelago, due to the quality of the illusionist technique in which painting, architecture and sculpture are mixed. It’s also currently an asset of cultural interest under the category of Monument and a place worth visiting to appreciate the uniqueness of the works it contains. For these buildings, the history of the famous people we have commented on and thanks to the work of recovery and restoration of the Island Council and the Canary Islands Government in recent years, The Ampuyenta is a must-stop for those who want to learn more about a past which is really present in this village, a great walking tour of the historical heritage resort of La Ampuyenta, a highly recommended visit.

Entrevistamos a Simona Raponi propietaria del centro de estética Simo Lime que abrió sus puertas en julio de 2013 para ofrecer a los habitantes de El Cotillo, y alrededores, todo tipo de tratamientos de belleza, faciales y corporales, depilación, uñas, masajes… Simona es esteticista y titulada en varias técnicas de masaje entre los que se encuentran los terapéuticos, orientales y ayurvédicos. Además se mantiene en formación continua, «una nunca para de formarse», nos confiesa feliz cuando hablamos de sus estudios. Simona es una amante de la filosofía ayurveda, la medicina más antigua que se conoce y esa filosofía va impresa en su centro de belleza. ¿Cual es tu objetivo principal en Simo Lime? En mi centro de estética lo que busco es que mis clientes se relajen y disfruten ya que esto es algo que aporta salud y belleza, de hecho cada tratamiento acaba con una infusión ayurvédica para ayudar a mantener esa relajación a la que uno llega con un tratamiento, con un masaje, con un tiempo que uno ha dedicado a cuidarse. Y, sobre todo, lo que más me llena, es encontrar la solución a un problema de piel, son muchas las personas que acuden por acné, flacidez,… todo tiene solución y sobre todo, debe tratarse el problema para corregirlo y evitar que vaya a más. ¿Qué aparatología tienes en Simo Lime para tratamientos de belleza faciales y corporales? Sobre todo trabajo con ultrasonido y radiofrecuencia, tan de moda actualmente, para distintos tratamientos. El ultrasonido tiene infinidad de aplicaciones en belleza, es cicatrizante, ayuda a mejorar la celulitis, varices, nos ayuda a combatir la acumulación de grasa y también ayuda a combatir dolores musculares. Y la radiofrecuencia, actualmente conocida bajo el lema «estética sin cirugía», es tecnología de referencia cuando se busca corregir la flacidez y tensar el tejido .8

en rostro y cuerpo, ideal para combatir el envejecimiento de la piel. Pero ante todo, en Simo Lime se trabaja con las manos, manipulación y masajes, en función del problema a tratar. Lo que tengo muy claro por la experiencia con la cuento, es que combinando las máquinas con la manipulación, es decir, con masajes bien hechos, los resultados son infinitamente mejores. El masaje ayuda a potenciar los resultados. Hablando de masajes, que sabemos que te encantan, el kobido es una de tus especialidades y hace unos años que está muy de moda en belleza, pero ¿qué es, qué efectos tiene sobre nuestra piel? El masaje facial Kobido o «lifting facial», es un masaje de origen japonés famoso por su efecto de estiramiento facial. Bien hecho es ideal para mantener la juventud de la piel ya que activa la circulación, relaja las facciones, tonifica la musculatura de la cara, ilumina el rostro y oxigena la piel. Se trabaja desde el escote hasta el cráneo, durante una hora, y no solo nos ayuda a nivel belleza, también a nivel terapéutico, para gente que sufre de dolores de cabeza, migrañas, bruxismo… Es una técnica idea para relajarse y mantener una piel joven y bella. A la hora de elegir un cosmético ¿qué nos recomiendas? Cada vez me inclino más por la filosofía ayurveda en lo que a belleza se refiere, cuidarnos por dentro y por fuera para encontrar el equilibrio y eliminar toxinas. En este sentido, me inclino por la cosmética natural, todos los productos que se utilizan en mi centro y de venta al públicos son ecológicos certificados y actualmente

tengo una línea cosmética ayurvédica que me encanta, tanto para facial como para corporal, tiene resultados magníficos. Cada persona debe encontrar su cosmético, y ese es uno de mis deberes, hay que estudiar la piel y ver que necesidades tiene, pero siempre mejor con un producto natural, en belleza tratamos de eliminar toxinas, por ello prefiero no ponérselas a la piel. ¿Cuándo hay que empezar a cuidarse? Yo diría que desde bebé, por supuesto con un aceite sencillo y natural, y poquito a poco, según vamos avanzando en edad hay que utilizar otros productos y no dejar de cuidarse nunca. El mejor consejo es tener una rutina de belleza diaria, que comienza con una buena limpieza de la piel diariamente, aplicando después una buena hidratación ya que en esta isla estamos muy expuestos al sol. Comentabas que todos tus tratamientos acaban con una infusión ayurveda, te apasiona su filosofía y te has formado sobre el tema, ¿por qué? La medicina ayurveda es la más antigua que existe, es un tema muy amplio, pero a grandes rasgos viene a decir que toda dolencia, todo problema viene de un desequilibrio; el masaje es la esencia del ayurveda, con él se logra equilibrar el organismo, de hecho con el masaje se logra eliminar las toxinas del organismo; estos masajes se hacen con combinaciones de varios tipos de aceites esenciales, naturales, dependiendo del problema a tratar y de las necesidades de cada persona. En belleza buscamos eliminar toxinas y regenerar la piel. El equilibrio es belleza.

We interviewed Simona Raponi, the owner of the beauty centre Simo Lime that opened in July 2013 to offer all kind of beauty, face and body treatments, hair removal, nail, massage... services to the inhabitants of El Cotillo and surrounding area. Simona is beautician and graduated in several massage techniques (therapeutic, oriental and ayurvedic), apart from keeping up-to-date «one never stops training», she confesses happily when we talked about her education. Simona is a lover of ayurvedic philosophy, the most ancient medicine known at present, and this philosophy is instilled in her beauty centre. What is your main aim, Simo Lime? In my beauty centre, I try my clients to relax and enjoy, as this is something which contributes health and beauty; in fact, each treatment ends with an ayurvedic infusion to help keep this relaxation one reaches with a treatment, a massage, a period of time one has devoted to taking care of oneself. And mainly, the most fulfilling aspect is finding the solution to a skin disorder: they are many the ones who come here because of acne, flaccidity… everything has a solutions and, mainly, the disorder must be treated in order to correct and stop it. What apparatus do you have in Simo Lime for face and body beauty treatments? I mainly work with ultrasound and radio-frequency, so trendy at present. Each person must find their cosmetic, and that is one of my duties, you have to study the skin and see what needs it has, but natural products are always better, in beauty we try to eliminate toxins, so I prefer not to put them on the skin. When should we start taking care of ourselves? I would say that since we are babies, of course with a simple and natural oil, and little by little, as we grow up we need to use other products and never stop looking after ourselves. The best advice is to create a daily beauty routine which starts with a cleansing of the skin, applying then a good hydration, as in this island we’re continuously exposed to the sun. You were saying that all your treatments end up with an ayurvedic infusion, you are excited about their philosophy and you have studied it, why? Ayurvedic medicine is the most ancient one and it’s a vast topic to talk about, but broadly speaking it says that every disorder originates in an unbalance: massage is the ayurvedic essence, with which we get a body balance; in fact, through massage you eliminate toxins; these massages are made with a combination of different kinds of essential natural oils, depending on the disorder to be treated and the needs of each person. Los grandes olvidados de nuestro litoral son los charcos, basta con detener la mirada para descubrir la gran biodiversidad que albergan en su interior. Sin embargo, en Canarias han servido de recurso para el hombre a través del marisqueo desde antes de la conquista como indican los restos malacológicos (concheros fósiles), debido a ello se han convertido en zonas muy frágiles y es importante protegerlas. Además, estos hábitats están cambiando por otras acciones derivadas de la actividad del hombre: la contaminación y el cambio climático. Como ejemplo, algunas comunidades como las praderas de algas han sufrido un fuerte retroceso en la actualidad por la acción de estos. Constituyen algo mucho mayor que una comunidad, son ecosistemas en miniatura que han aprendido a convivir con múltiples condiciones climáticas en un sólo día. La primera es el aislamiento de algunos charcos durante las horas de bajamar. Sólo los organismos más fuertes resisten la concentración de sales por las horas de sol y las altas temperaturas. Estos seres vivos son un reducido grupo de algas (llamadas verdiazules o cianoficeas) que hacen que nos resbalemos cuando .10

caminamos por los charcos, camarones o quisquillas (Palaemon sp.) o algunos burgados. A medida que nos acercamos al mar, los charcos permanecen menos tiempo desvinculados del mar, el agua se renueva, y la biodiversidad aumenta considerablemente, aparecen un sinfin de algas de diversas especies y que podemos clasificar a simple vista como pardas, rojas y verdes. En cuanto a la fauna, dominan peces óseos como los cabosos (Góbidos), perfectamente camuflados con el fondo, y las barrigudas (Blénidos) con sus característicos movimientos serpenteantes. También en los invertebrados (quizás los más abundantes en los charcos) encontramos otros reyes del camuflaje, los pulpos, muy inteligentes y cada vez más escasos debido a la presión marisquera. Las vacas de mar (Aplysia sp.) son comunes ramoneando las algas del fondo, al igual que los erizos. Y en distintos colores podemos diferenciar distintos tipos de anemonas (Cnidarios) uno de los grupos de animales más primitivos. Si algún día estás de paseo por la costa, recuerda poner atención a estos tesoros del mar, siempre con respeto al ecosistema que forman.

Waterholes are quite overlooked in our coast; you just have to look around and find out the biodiversity they harbour. However, they have been a resource- through self-fishing - for men in the Canary Islands since years before the conquest, as shell remains prove (like shellfish fossils). Because of that they have become fragile areas and it’s important to protect them. Moreover, these habitats are changing because of other factors derived from the human activity: pollution and weather change. As an example, some communities like seaweed prairies have fallen sharply at present due to these factors. They make up something much bigger than a community; they are little ecosystems that have learnt to coexist with different weather conditions in a single day. The first one is the isolation of some waterholes during the low tide. Just the strongest organisms resist the concentration of salts due to the high temperatures and sunshine hours. These living organisms are a reduced group of seaweed (called blue-green algae or Cyanobacteria) which make us slip when we walk .12

through paddles: caridean shrimps (Palaemon species) or some Phorcus. As we approach the sea, waterholes remain separated from the sea for shorter periods of time, water is renewed more often and biodiversity grows considerably. Endless algae appear and we can classify them, at first sight, as light brown, red and green. As for the fauna, bony fishes, such as the rock goby (Gobius paganellus), dominate, perfectly camouflaged with the sea bed, and the «barrigudas» (Blenidae) with their characteristic winding movements. Also among invertebrates (perhaps the most abundant in the puddles) we find other kings of camouflage, octopuses, very intelligent and increasingly scarce due to shell-fishing pressure. Sea cows (Aplysia sp.) are very often seen grazing the seaweed of the sea bottom, like the hedgehogs. And there are also different types of anemones (Cnidarians), one of the most primitive groups of animals, in different colours. If some day you happen to stroll along the coast, remember to pay attention to these treasures of the sea, always respecting the ecosystem they form.

Arrecife en Vivo Estrella Galicia The Toy Dolls (5 de octubre), El Columpio Asesino y Clap Your Hands Say Yeah (11 de octubre) encabezan los carteles de la tercera y la última jornada del festival lanzaroteño. La entrada a todos los conciertos es gratuita. Han visto caer presidentes, el fin del vídeo Beta, el principio de la era smartphone. Cuarenta años sobre los escenarios dan para mucho y The Toy Dolls, lejos de anquilosarse, se han convertido en unos históricos del punk rock, con legiones de seguidores en todos los continentes. Su fórmula: el humor, la fiesta y su actitud con el público. Los británicos actuarán por primera vez en Canarias en la tercera jornada del espectacular Arrecife en Vivo Estrella Galicia. Forty years on the stage are a long time and The Toy Dolls, far from stagnating, have become a landmark of punk rock, having thousands of followers all over the continents. Their key: humour, party, their attitude towards the public. The British band will perform in The Canary Islands for the first time on the third day of the spectacular «Arrecife en Vivo Estrella de Galicia». Roasted Aubergine, «Almogrote» (Canary Island’s Paste), Honey and Mint Vinaigrette

• 4 medium aubergines • 200 g. of semi-cured goat cheese • 160 g of «almogrote» * • 120 g of honey and mint vinaigrette * • salt to taste • ground black pepper to taste * Honey and mint vinaigrette, ingredients: • 50 g of old-style mustard • 20 g of honey • 75 g of soft olive oil • 8 ml of sherry vinegar • 10 g of toasted hazelnut • mint to taste (just leaves)

RECIPE BY ISRAEL FRANCO ZUBIAGA Chef in La Bodeguita de Corralejo INGREDIENTES (para 4 pesonas)

*VINAGRETA DE MIEL Y MENTA

*ALMOGROTE:

• 4 unidades de berenjena medianas • 200 g. de queso de cabra semi curado • 160 g de almogrote* • 120 g de vinagreta de miel y menta* • Sal al gusto • Pimienta negra molida al gusto

• 50 g de mostaza antigua • 20 g de miel • 75 g de aceite de oliva suave • 8 ml de vianegre de Jerez • 10 g de avellana tostada • Menta al gusto (solo las hojas)

• 150 g de queso de cabra curado • 1 diente de ajo sin germen • 1 cucharada de pimentón de la Vera • 50 g de aceite de oliva suave • 30 g de pulpa de pimiento choricero • 1 pimiento picante (sin la semilla)

ELABORACIÓN: Lavamos y secamos la berenjenas y las colocamos en una bandeja de horno; añadimos aceite de oliva suave y sal fina por la superficie y horneamos a 180ºC durante aproximadamente unos 30 minutos; depende del tamaño, están cocinadas cuando al pinchar no ofrecen resistencia. Mientras se cocinan elaboramos el almogrote, la vinagreta de miel y menta y rallamos queso curado de cabra que usaremos para gratinar. Una vez cocinadas las berenjenas, las pelamos manteniendo su forma, las cortamos a la mitad y precalentamos el horno a 200ºC, cubrimos las berenjenas con el queso rallado y gratinamos.

ELABORACIÓN DE LA VINAGRETA DE MIEL Y MENTA: Colocamos en un vaso mezclador la avellana, las hojas de menta y el aceite de oliva suave y trituramos; una vez tengamos la mezcla acabamos poniendo el vinagre de Jerez, la miel y la mostaza antigua, volvemos a triturar, ponemos a punto de sal y reservamos.

ELABORACIÓN DEL ALMOGROTE: Trituramos todos los ingredientes con ayuda de una túrmix hasta conseguir una pasta homogénea, excepto el queso que lo rallamos y mezclamos con la pasta con una cuchara; si la mezcla está muy espesa podemos añadir más aceite de oliva para ligarlo; una vez al gusto reservamos.

NOTAS: • El almogrote puedes comprarlo ya elaborado • El queso para gratinar puedes sustituirlo por otro tipo más suave o fuerte, tú eliges. • Para la vinagreta podemos sustituir la avellana por otro fruto seco.

INGREDIENTS (4 people):

EMPLATADO: Una vez gratinadas colocamos sobre un plato y añadimos unos puntos de almogrote y vinagreta de miel y menta con ayuda de mangas pasteleras y a disfrutar el plato. ¡Buen provecho!

* Almogrote, ingredients: • 150 g of cured goat cheese • 1 garlic clove without germ • 1 spoonful of paprika from La Vera • 50 g of soft olive oil • 30 g of «choricero» pepper pulp (dry pepper) • 1 hot pepper(seedless) ELABORATION: We wash and dry the aubergines and place them on a baking tray; We add soft olive oil and table salt on top and bake it at 180ºC for about 30 minutes, depending on the size. They’ll be cooked when they do not offer resistance when pricking them. While being baked, we make the almogrote, the honey and mint vinaigrette and grate the cured goat cheese that we’ll use to grill. Once the aubergines are cooked, we peel them keeping their shape, cut them in two halves and preheat the oven to 200ºC, cover the aubergines with the grated cheese and grill them. ALMOGROTE ELEBORATION: We mix all the ingredients with the help of a blender until we obtain a homogeneous paste, except for the cheese, which we grate and mix with the pasta with the help of a spoon; if the mixture is too thick we can add more olive oil to bind it; once to taste, we set it aside. HONEY AND MINT VINAIGRETTE ELABORATION: Place the hazelnut, the mint leaves and the soft olive oil in a mixing glass and blend; once we have the mixture we add the sherry vinegar, the honey and the old-style mustard, we mix again, add salt to taste and set aside. PLATING UP: Once grilled, plate it up and add some hints of almogrote and a splash of honey and mint vinaigrette with the help of pastry bags. Enjoy the dish. Bon Appetite! NOTES: • You can buy already prepared «almogrote» • The cheese to grill can be replaced with a softer or stronger type, you choose. • For the vinaigrette we can replace the hazelnut with another nut.
