CHEZ LEON

COCINA DEL MUNDO CON UN TOQUE FRANCÉS EN LAJARES Muriel y Pascal Landreau son los propietarios de Chez Leon, un restaurante de cocina del mundo que hace año y medio abrió sus puertas en Lajares.

Hace 4 años que llegaron a Fuerteventura atraídos por la forma de vida que nuestra isla ofrece tras haber pasado unas vacaciones en Canarias. Muriel y Pascal son franceses y en su país trabajaban en el sector de la alimentación; ella es ingeniera de calidad en alimentación y él técnico superior en alimentación. Antes de llegar a Fuerteventura se dedicaban al asesoramiento alimenticio, tanto a grandes como a pequeñas empresas, dando apoyo a la hora de elaborar platos, lanzar productos nuevos, formación,... En su restaurante de Lajares tienen un amplia variedad de platos que cocinan cada día, a base, únicamente, de productos frescos, con la idea de preparar platos no tan tradicionales como en otros locales de la isla. Se trata de una variada cocina de carácter internacional, sobre todo sana, que no esta basada en productos industriales, congelados o alérgenos. Dentro de su oferta gastronómica hay una gran variedad de platos veganos y vegetarianos, que cambian cada día, al igual que la oferta de carne y pescado, todo preparado al día para ofrecer una gran variedad de platos diferentes. Aunque cada semana la temática de su cocina cambia, asiática, marroquí, europea,… hay platos que preparan diariamente, como las riquísimas croquetas de papas y parmesano o sus salchichas de cerdo caseras, que ellos mismo elaboran y cocinan a la plancha. También los gratinados de verdura y los canelones con espinacas y queso de cabra, están prácticamente presentes todos los días porque son platos muy populares. Otra de sus especialidades es el pollo fresco asado de Gran Canaria, muy recomendable. De cara al verano ofrecerán un concepto de cenas, ya no se tratará de elegir entre la gran cantidad de platos que han preparado a lo largo del día, si no que harán cocina fresca cocinada al instante. Otro de los puntos fuertes de Chez Leon son sus desayunos, muy diferentes a lo que podemos encontrar en Lajares, en los que ofrecen bizcochos caseros, yogur con fruta fresca, bocadillos…

CUISINE OF THE WORLD WITH A FRENCH TOUCH Muriel and Pascal Landreau are the owners of Chez Leon, a restaurant of cuisine of the world that opened in Lajares one and a half year ago.

Además Chez Leon ofrece servicio de catering para distintos alojamientos (surfcamps, apartahoteles,…) y para eventos (seminarios, bodas, cumpleaños,…) Y como buenos franceses, en su bodega de vinos encontramos una amplia variedad de vinos del sur de Francia y, por supuesto, muy buen champán. Así es Chez Leon, un restaurante que ofrece una gran variedad de platos que varían cada día y que puedes disfrutar en su local o llevártelos a casa.

They got to the island 4 years ago, attracted by the way of life in the island after having spent their holidays in The Canary Islands. Muriel and Pascal are French, and they used to work in the food sector in their country: she’s a food quality engineer and he’s a Food Technologist. Before arriving in Fuerteventura they were food advisors for small and big companies, supporting them when it came to elaborating dishes, launching new products, training… They cook a wide variety of dishes in their restaurant in Lajares every day, only made of fresh products, and their idea is to cook less traditional dishes than other local restaurants in the island. It’s all about an international and varied cuisine, healthy above all, not based on industrial, frozen or allergen products. There is a wide range of vegan and vegetarian dishes in their gastronomic offer, which they change every day, as well as their offer of meat and fish, everything prepared daily, to offer a great variety of different dishes. Although themed dishes change every week (Asiatic, Majorcan, Moroccan, European…) there are also some dishes they prepare daily, like their delicious potato and parmesan croquettes, or their home-made pork sausages, which they elaborate and grill. Also, their «au gratin» vegetables and their cannelloni with goat cheese, offered every day because people like them so much. Another of their specialities is their fresh roast chicken from Gran Canaria, highly recommended. In Summer they’ll offer a new dinner concept. It won’t be about choosing among the many dishes they have prepared along the day, but they will make freshly cook dishes. Another strong point of Chez Leon are their breakfasts, very different to what we can find in Lajares. They offer home-made sponge-cake, fresh fruit with yoghurt, sandwiches… Moreover, Chez León offers a catering service for different lodgings ( surf camps, apart-hotels…) and for events (seminars, weddings, birthdays…) And as good French people, we find a great wine variety of the south of France in their cellar and, of course, an excellent champaign. That is Chez Leon, a restaurant offering a wide range of dishes that vary every day and that you can eat in or have them taken to your home.

ANDREA BUCH PLANTADA, 16 AÑOS. BARCELONA. 3 AÑOS EN LA ISLA. Andrea es de las grandes promesas del surf en Fuerteventura. Nadie que la haya visto surfear niega que su estilo y técnica la llevarán lejos. Lleva 3 años viviendo en la isla y en tan solo 2 años y medio surfeando ya tiene 7 podios en su haber incluyendo 2 primeros puestos en campeonatos nacionales, uno en la categoría sub 18 y el pasado abril en la categoría sub 16 femenino en el Circuito Canario de Surfing Junior, Bodyboard y Femenino Playa El Socorro 2018, en Tenerife. Y es que vivir aquí es una suerte que no se le escapa a nadie y mucho menos a esta nueva generación de surfers cuyo plan es irse al agua después de clase. Andrea, se apoya mucho en sus hermanos, Pipo y Christian, y sus amigos para seguir mejorando: Matilda, Alani, León, Tim… Asegura que le encantaría llegar a profesional y haber empezado antes en este deporte – «sin dejar de estudiar, pero hará lo que se proponga»–, apostilla su madre sentada frente a ella durante la entrevista. Describe el surf como «una sensación única» y su objetivo es viajar y competir por todo el mundo: Costa Rica, Sri Lanka y California, son destinos con los que sueña. De los spots de la isla, no tiene uno favorito, más bien colecciona momentos,

«como aquella vez en El Hierro al atardecer con mis amigos, fue perfecto». Lo que tiene claro es que no lo habría conseguido sola, «no lo habría hecho sin la ayuda de Rayco Galván, mi entrenador, quien me motiva a mejorar un poquito cada vez y que me lleva a todos los campeonatos. Más que mi entrenador es mi ejemplo a seguir». Siente total admiración por Rayco y todos cuantos la ayudan a mejorar: Lazi, Alfonso, Saioa, Robby y también la escuela Riders y la marca El Niño. Practica también skate: «me gusta ir al Extreme Park de Lanzarote, me estoy motivando bastante con el skate y el carver. Es bueno practicar y entrenar también fuera del agua». Andrea representa la nueva generación de surf majorero, jóvenes que disfrutan del mar, lo respetan y crecen concienciados con el medio ambiente; que como ella se guardan en el «chaque» los plásticos que encuentran en el mar para luego tirarlos donde corresponde y que tiene la inmensa suerte de vivir en este paraíso y haber hecho de este deporte su forma de vida. Aprovechamos la ocasión y echamos un vistazo al panorama local de mujeres surferas. Otra generación anterior a Andrea que, como ella, también llegaron a la isla y se enamoraron del surf.

Andrea Buch Plantada, 16 years old. Barcelona. 3 years in the island. Andrea is one of the big promises of the island surf. Nobody who has seen her surfing can deny that her style and technique will take her far away. She’s been living in the island for three years, and after two and half a year surfing she has already reached 7 podiums and 2 first positions in national championships, one in the category under 18 and the other one last April, in the Under 16 category of the Junior Surfing Canary Island Circuit, Bodyboard and Female El Socorro Beach 2018, in Tenerife. Everybody is aware that living here is really lucky; the new generations of surfers always plans going for a surfing session after the lessons. Andrea looks for her brothers’ support, Pipo and Christian, and her friends’ —Matilda, Alani, León, Tim...— to keep improving. She assures that she would love to become a pro and to have began before to practise it - «Without dropping out of school, but she will always achieve everything she wishes», her mother adds, sitting opposite her during the interview. She describes surf as a «unique sensation» and her target is to travel and compete all over the world; Costa Rica, Sri Lanka and California are her dream destinations. She has no favourite spot in the island, she just collects moments, «like that evening in El Hierro with my friends, it was perfect». What she knows is that she wouldn’t have got it on her own, «I wouldn’t have done it without Rayco Galván’s help, my instructor, who always motivates me to improve more and more and takes me to all the championships. More than my instructor he is my model to be followed». She looks up to Rayco and all those who help her improve: Lazi, Alfonso, Saioa, Robby and also Riders School and the brand El Niño. She also practises skate: «I like going to Extreme Park, in Lanzarote, I’m motivating quite a lot with skate and the team. It’s also good to practise and train out of the water too». Andrea stands for the new generations of the Canary Islands’ surfers, the youth who enjoy and respect the sea and grow up aware of the environment and pick up the plastic they find in the sea, like herself, to later on throw it away in a plastic container, being lucky to live in this paradise and having made this sport become their life style. We take advantage of the occasion to have a look at the local panorama of surfer women, other generation previous to Andrea who, like herself, arrived in the island and fell in love with surf.

Surfera a la que admires: Tyler Wright por supuesto, aunque admiro a Stephanie Gilmore por ser la madre del flow. Tu mejor ola: quizás en la isla, quizás en Indonesia... pero en concreto recuerdo una en Lobos que me enamoro. Un lugar para surfear: Indonesia, sin duda. Un sueño por cumplir: aprender a hacer tubos y viajar mucho más. Un consejo para nuevas generaciones: aprender a escuchar y ante todo a disfrutar, ¡el surf es vida!

Un sueño por cumplir: viajar mucho con mi familia, «sobris» incluidas. Un consejo para nuevas generaciones: que no paren de surfear nunca, que son un@s afortunad@s por disfrutar de este estilo de vida desde niñ@s y que cuiden las playas y los océanos.

Tres palabras que definan el surf para ti: juego, libertad, amigos. Sola o acompañada: acompañada, que jugar solos no mola nada. Amanecer o atardecer: a mi pesar, ya que me encanta dormir, los mejores baños al amanecer • Spot favorito en la isla: soy «puntagordera» fiel, pero me encanta surfear en cualquier spot, si no hay mucha gente. Soy surfera no stress... Surfera a la que admires: en la isla mi amiga Pili, de Fuertetribu. Cuando aún no la conocía personalmente me quedé encantada viéndola surfear con gracia y potencia a la misma vez y ¡siempre con esa sonrisa! Tu mejor ola: cada una que conseguí surfear en mi vida. Un lugar para surfear: como en casa en ningún sitio, pero flipé en Maldivas. Un sueño por cumplir: más que un sueño es un deseo que tengo. Elegí vivir aquí porqué me enamoró la isla al instante y luego vino el surf. Espero con todo mi corazón que no se pierda el alma de Fuerteventura, la de verdad. ¡Hay que cuidar de nuestra islita! Un consejo para nuevas generaciones: entrenar duro y creer en vuestro potencial. Valorar vuestras raíces y la suerte que tenéis de vivir en este paraíso.

Favourite spot in the island: I’m a regular of «Punta Gorda», but I like surfing in any spot if it’s not too crowded. I’m a surfer, no stress... Surfer woman you admire: My friend Pili, from Fuertetribu In the island. When I didn’t know her yet, I loved watching her surfing with such a style and power at a time, and always smiling! Your best wave: Each one I have managed to catch in my life! A place to surf: Nowhere like home, but I really went crazy in The Maldives. A dream to reach: rather than a dream I would say a wish: I chose to settle here because I fell in love with the island the moment I saw it. Then, surfing came…. What I wish from the bottom of my heart is Fuerteventura never lose its spirit, really. We must look after our island! An advise to new generations: training hard and believing in your potential. Appreciating your roots and being aware of how lucky you are to live in this paradise. .12

Surfera a la que admires: Stephanie Gilmore por su estilazo y buen rollo y Laura Enever por el tamaño de sus ovarios y su buen rollo, me gusta el buen rollo… Tu mejor ola: fue en Nicaragua, en la playa Santana, cerca de Popoyo, donde estaba de surftrip con mi amiga Marie. Era el último baño de las vacaciones y el mar estaba totalmente glassy. Alrededor había mantas rayas y una pegó un salto enorme en el aire dejando a todos boquiabiertos y a continuación llego una serie guapísima: pillé una izquierda larga y la surfeé como si fuera la última ola de mi vida, lo último igual fue fruto de mi imaginación, (risas). Un lugar para surfear: ¡cualquier pointbreak! Ahora me voy para Maldivas, sin duda un lugar para surfear… Un sueño por cumplir: el de todos ¿no? Estar de surfari con tu pareja y/o tus amigos y encontrar una ola secreta con agua caliente, sin viento y ¡mantenerla secreta! ¡Ah! y donde haya tortugas y delfines y ya puestos una barca-bar donde puedas relajarte y tomar una cerveza bien fría. Your best wave: It was in Nicaragua, Santana Beach, near Popoyo, where I was on a surfing trip with my friend Marie. It was the last bath of our holidays and the sea was totally glassy. There were rays surrounding us, and one of them leapt on the air leaving us all speechless and then another beautiful series came, I caught a long left and I rode it as if it were the last wave in my life. A place to surf: any breakpoint! I’m travelling to The Maldives; no doubt, a place to surf. A dream to reach: One shared by many, isn’t it?: going on a surfing trip with my partner or friends and finding any secret wave in warm waters, with no wind and keep it secret! Ah…. And where we can find some turtles and dolphins and, why not, a ship with a bar where you can chill out and have a cool beer. An advise to new generations: enjoying the whole journey: life is beautiful!

SONIDOS LÍQUIDOS UN FESTIVAL CON ENERGÍA VOLCÁNICA Y SABOR A MALVASÍA

Sonidos Líquidos es un festival único que combina lo mejor de la música independiente, los vinos de Lanzarote y su gastronomía, todo en un entorno único como es La Geria y sus bodegas. La temporada de conciertos comienza con la primavera. Desde mediados de marzo el festival florece con su formato más pequeño e íntimo denominado «Malvasía Volcánica Experience». Este año Morgan y Rufus T. Firefly protagonizaron las primeras dos experiencias con absoluto éxito en Bodegas La Florida y El Grifo, respectivamente. Ángel Stanich Band cerrará el ciclo de conciertos en pequeño formato el 27 de mayo para dar paso al gran final de temporada: el «Malvasía Volcánica Weekend». Este fin de fiesta se desarrolla en un espacio natural y protegido formado por volcanes, lava, cenizas y la peculiar forma de cultivo de la vid en Lanzarote con hoyos y muros de piedra volcánica como protagonistas. Ese paisaje inverosímil se convierte en un «escenario utópico» por un día y ha sido capaz de sorprender a todos los artistas que lo pisan, incluyendo a los mismísimos Vetusta Morla o Love of Lesbian, entre otros. Se trata de un evento con personalidad propia que ya se ha ido convirtiendo en una cita ineludible en el calendario de festivales españoles por su apuesta tan innovadora.

Sonidos Líquidos is a unique festival combining the best of independent music, the wines of Lanzarote and its gastronomy, everything in a unique environment as it is La Geria and its cellars.. BIODIVERSIDAD DE FUERTEVENTURA

CAPÍTULO 1:

LOS VISITANTES DEL INVIERNO CANARIO Por: Alberto Sarabia Hierro

El archipiélago canario y las aguas que rodean a éste albergan una gran biodiversidad gracias a la sinergia de múltiples factores como son la latitud, la oceanicidad y la insularidad. La proximidad al continente africano permite que aguas muy frías y cargadas de nutrientes lleguen a nuestras islas donde crece, formando auténticas explosiones de vida, el plancton vegetal y animal. Cerca de nuestra isla, en el espacio denominado espacio oriente y sur de Fuerteventura y Lanzarote, se crea un auténtico corredor para varias especies migrantes de cetáceos que utilizan nuestras aguas como zona de alimentación y descanso durante sus largas travesías. Es por ello que durante los meses más fríos del año, es normal la observación de especies como el delfín común de hocico corto (Delphinus delphis) o el rorcual común (Balanenoptera physalus). El delfín común puede ser muy gregario, formando grupos de varios cientos de animales y se alimentan de peces o pequeños calamares. Su área de distribución es muy amplia por los mares fríos, templado-cálidos y tropicales del planeta, con picos de gran abundancia en ciertos lugares (como el archipiélago canario) en los meses de invierno y primavera debido a sus amplios movimientos. Se reconoce por su característica banda en forma de «reloj de arena» con la parte próxima al ojo en color crema y el segundo tramo en color blanco hasta el pedúnculo caudal. El rorcual común es el segundo animal más grande del planeta tras el rorcual azul. Posee una longitud media de 18 metros aunque algunos machos alcanzan hasta .18

los 19 metros y llegan a pesar 90 toneladas. Los rorcuales (Balaenopteridae) pertenecen a una familia distinta a las ballenas (Balaenidae), diferenciándose por la presencia de aleta dorsal en los rorcuales y la ausencia de ésta en las ballenas, siendo un error común el denominar como ballenas a ambos grupos. Se alimentan de pequeños invertebrados (crustáceos como el krill) y peces muy pequeños y son cazadores muy activos, encontrándose en los niveles más altos de las redes tróficas marinas. En algunos momentos es posible observarlos durante la caza en superficie, haciendo embestidas con la boca muy abierta en las que invierten mucha energía y engullendo grandes cantidades de alimento que quedan retenidos en sus barbas. ¡Tienen que reponer todo ese gasto energético! También es común observar en las islas a otras especies estacionales como el delfín listado (Stenella coeruleoalba), que destaca por sus múltiples listas blancas por el cuerpo, el hocico largo y las aletas pectorales cortas y puntiagudas. En ocasiones pueden formar grupos mixtos de caza junto al delfín común. Y finalmente, otra especie de carácter estacional, pero poco frecuente, es el rorcual norteño o boreal (Balaenoptera borealis) de menor tamaño y difícil identificación. Éste pequeño texto es sólo un capítulo que resume la gran biodiversidad marina que tienen nuestras islas y que es importante no sólo conocerla, sino también respetarla y protegerla. Seguiremos relatandola a lo largo de las próximas ediciones de Macaronesia. ¡Hasta la próxima historia del gran azul!

CHAPTER 1:

WINTER VISITORS OF THE CANARY ISLANDS By: Alberto Sarabia Hierro

The Canary Islands archipelago and the water surrounding it host a great biodiversity thanks to the synergy of several factors like latitude, oceanicity and insularity. The proximity to the African continent allows that really cold waters and full of nutrients get to our islands, where plankton grows, creating authentic explosions of life: vegetal and animal plankton. Near our island, in the so called oriental and southern space of Fuerteventura and Lanzarote, it has been created an authentic corridor for several migratory species of cetacean, using our waters as a feeding and rest area in their long voyages. This is why, during the coldest months of the year we can usually watch species like the short-beaked common dolphin (delphinus delphis) or the fin whale (Balanenoptera physalus). The common dolphin can be very gregarious, forming groups of several hundreds of specimens, and they feed on fish or little squids. Their distribution area is very wide on the cold, warm and tropical seas in the planet, being really abundant in some places (like the Canary Islands) in the months of Winter and Spring, due to their great migratory movements. It is well known for its characteristic stripe in the shape of a sand clock and the cream and white-coloured eye area up to the caudal peduncle. The fin whale is the second biggest animal in this planet, after the blue whale. Its average length is 18mts, although some males can reach up to 19mts and weight around 90 tons. Fin whales (Balaenopteridae) belong to a family different from whales (balaenidae), and it is the dorsal fin (which is present in balaenopteriadae and absent in balaenidae ) that makes them different, being a common mistake to call «whales» to both species. They feed on little invertebrate (crustacean like the krill) and very little fish, and they are very active hunters, being found in the highest levels of the marine food webs. Sometimes it’s possible to watch them while they are hunting in the surface, attacking with their mouth wide open, investing a great deal of energy and gobbling down large quantities of food that keep hanging from their beard. They must replace all their energy output! It’s also common to observe other seasonal species in The Islands, like the striped dolphin (Stenella coeruleoalba), outstanding because of its multiple white stripes around its body, its long snout and short and sharp pectoral fins. Occasionally it can create mixed hunting groups together with the common dolphin. And finally, another seasonal species but not very usual in our Islands, is the Sei whale (Balaenoptera borealis), of smaller size and difficult to identify.

This little text is just a chapter which summarizes the great marine biodiversity in our islands and it’s important not just to get to know it but also to respect and protect it. We’ll be talking about it in the next Macaronesia issues. See you in the next chapter of the big blue! 19.

Don Ceviche Canario RECETA DE ISRAEL FRANCO ZUBIAGA

Jefe de Cocina de El Patio de Lajares y La Bodeguita de Corralejo

Ingredientes para 4 personas: — 460 g de cherne sin piel y espina — 1 cebolla roja — 80 g de boniato — Cilantro — 1 pimienta picante — Leche de tigre* — Pasta de pimienta picante* — Sal marina fina

ELABORACIÓN DEL CEVICHE: Ponemos agua fría en una cazuela con el boniato entero, dejamos cocer durante unos 25 minutos; para ver si está en su punto pinchamos el boniato con un cuchillo y no debe de ofrecer resistencia. Una vez cocido lo cortamos en dados de 1x1cm aproximadamente y reservamos.

Notas: — En lugar de cherne puedes usar lubina o lenguado perro. — Si no encuentras o no te gusta el boniato puedes sustituirlo por calabaza.

PASTA DE PIMIENTA: Ingredientes: — 100 g de pimienta picante — Media cebolla blanca (piacada fina) — 2 dientes de ajo (sin germen) — Aceite de oliva suave (0,4 de acidez) Ponemos un chorro de aceite de oliva en un cazo para sofreír la cebolla, lo rehogamos y añadimos la pimienta picante, lo dejamos al fuego unos 5 minutos, añadimos el ajo y lo dejamos unos 10 minutos más. Una vez sofrito lo pasamos por la túrmix hasta conseguir una masa homogénea que reservamos en el frigorífico hasta el momento del montaje del ceviche.

LECHE DE TIGRE PARA AÑADIR AL CEVICHE: Ingredientes: — Leche de tigre, ingredientes: — 16 g jengibre — 1 diente de ajo (sin germen) — 4 ramas de cilantro — El zumo de 8 limas — Pasta de pimienta picante (a gusto) — Sal Cortamos fino el jenjibre, ajo y cilantro, mezclamos todo con el zumo de lima, menos la pasta de pimienta. Removemos con una cuchara y dejamos macerar unos 10 minutos, lo pasamos por el colador en un bol y añadimos sal y la pasta de pimienta a gusto. Mantenemos la mezcla en el frigorífico hasta su uso en la receta final. Puedes añadir un poco de miel para rebajar la acidez de las limas; y si te gusta mucho el picante puedes añadir un poco de tabasco para potenciarlo

Lavamos la cebolla, la cortamos en rodajas y la dejamos 5 minutos en remojo en agua helada. La escurrimos bien y la extendemos sobre papel de cocina para que absorva al máximo la humedad y la reservamos en el frigorífico. Así la cebolla quedará menos fuerte y más crujiente. Cortamos el pescado en tiras uniformes de unos 3x2 cm. Cortamos la pimienta picante en aros finos para usar en el emplatado; picamos el cilantro para espolvorear al final. Ponemos el pescado en un bol grande, añadimos sal fina y removemos con suavidad con una cuchara metálica; la sal abrirá los poros del pescado. Lo dejamos reposar unos 2 minutos y añadimos la leche de tigre, unos 200 ml. Añadimos la cebolla, los aros de pimienta, el cilantro y el boniato al pescado. Mezclamos bien los ingredientes con la cuchara y rectificamos de sal y leche de tigre. Repartimos bien el ceviche en 4 boles y lo servimos enseguida.

Ingredients for 4 people: — 460 g of skinned and boned «cherne» — 1 red onion — 80 g sweet potato — Coriander — 1 hot pepper — Tiger’s milk* — Hot pepper dough* — Table salt

Notes: — Instead of «cherne» you can use sea bass or halibut. — If you don’find or like the sweet popato you can use pumpkin instead.

PEPPER DOUGH: Ingredients: — 100 g hot pepper — Half a white onion (thinly chopped) — 2 cloves of garlic (seeded) — Soft olive oil (0,4 acidity) We spill some olive oil in a saucepan to stir-fry the onion. We sauté it, add the hot pepper and we leave it for 5 minutes. We add the garlic and we leave it for 10 more minutes. Once the stir-fry is made we blend it until getting an homogeneous dough that we’ll set aside in the fridge until plate decoration.

TIGER’S MILK TO ADD TO THE CEVICHE: Ingredients: — 16 g ginger — 1 clove of garlic (seeded) — 4 coriander sprigs — 8 limes (juice) — Hot pepper dough (to taste) — Salt We chop the ginger, the garlic and the coriander very thinly. We mix everything, except the pepper dough, with the lime juice.We stir it with a spoon and let it macerate for about 10 minutes. We strain it in a bowl and we add salt and the pepper dough to taste. ELABORATION OF CEVICHE: We spill some cold water in a saucepan with the whole sweet potato and we let it boil for 25 minutes; to see if it’s done we prick it with a knife and it shouldn’t offer any resistance. Then we dice it in cubes of about 1x1 cm and we set it aside. We wash the onion, slice it and soak it in freezing water for 5 minutes. We drain it well and we spread it on a piece of kitchen paper so it soaks up as much water as possible and we keep it in the fridge. That way the onion will be less strong and more crunchy. We cut the fish into strips of about 3x2 cm. We chop the hot pepper into fine rings to use them in the plate decoration. We chop the coriander to sprinkle at the end. We place the fish in a big bowl, we add table salt and stir gently with a metal spoon. The salt will open the fish pores. We let it stand for two minutes and we’ll add the tiger’s milk, about 200 ml. We add the onions, the pepper rings, the coriander and the sweet potato to the fish. We mix all the ingredients with a spoon and we add some more salt or tiger’s milk to taste. We spread the ceviche into four bowls and serve immediately.
